By the numbers, it’s been quite a ride:

Of all spiritual practices, faith is not top on my list of things I do well. I admire people with great faith, whether demonstrated in their church as faith leaders who believe God will supply resources to complete the building project debt-free — or whether they’re watching their kids play baseball with belief the kids will not strike out a second time. Each demonstration of faith in God is phenomenal because the essence of faith is being able to believe and trust when we don't have all the answers, yet we know everything will work out in the end. No matter the number of advances in technology, travel and economics, there will always be a need for faith.
It’s like the familiar story of Joseph that begins in Genesis 37 when he is sold into slavery by his brothers, held in captivity due to a false accusation, and later rises to be second in command in Egypt. Many problematic aspects of Joseph’s story cause readers to question relationships of all kinds, but the most consistent reassurance in the story is Joseph’s trust and faith in a God who is not only above his circumstances, but who is also journeying with him. This type of faith is ancient, and it reminds us of a New Testament illustration of faith in 2 Corinthians 5:7 CEB, "We live by faith and not by sight.”
So, why is ancient faith important and relevant in the modern world? That is a great question. I attended a workshop about AI (Artificial Intelligence) and the church. During the presentation, the facilitator shared some of the overall philosophy and value of AI and how our modern-day world is enhanced and supported through technology. The presenter also shared the varying AI technology tools that can be helpful in local churches, such as supporting communication and the volunteers. With all the takeaways I received during this excellent presentation, I also learned that as powerful and as advanced as technology is and will continue to be, there is always a necessity for the presence of humanity in the midst of evolving technology
In other words, humans are essential—even in the presence of advanced technology. This is the same truth with faith. No matter the number of advances in technology, travel and economics, there will always be a need for faith. This is best demonstrated in the relationships between humanity and our Creator. Faith is essential in everything we do. It is our faith that allows us to trust in AI or trust that a chair will hold us when we choose to sit in it. Faith enables us to trust that the person with whom we are in a relationship has our best interest at heart.
Faith is in all aspects of our lives; without faith, it is difficult to live a life of hope, joy and optimism. The essence of having ancient faith in the modern world is that we have a foundation grounded in our belief that God is our Creator and that when God created our world, God did not take a break and leave us on our own. Rather, God is concerned about us—as one songwriter said, “God knows our names.” Having a God who shows up in our world and shows up for us individually and collectively is one of the greatest foundations of faith a person can have. This foundation, like the mountains you may view in the distance, is from everlasting to everlasting.
Not only is ancient faith a foundation, but it is also an assurance. One of my favorite hymns is “Blessed Assurance” by Fanny Crosby. When I think about her journey and how she lost her physical sight as a young person, but was always able to see the goodness and hope of God, I am truly inspired. The assurance she wrote about in her famous hymn is an ancient faith that gives assurance
that we are not alone. Even though life does not always work the way we had hoped, we can still believe and have assurance in God as the hymn encourages us to do. Whether we are Joseph in Genesis or Fanny Crosby writing hymns to bless generations, we always know through our ancient faith in a modern world that God is keeping and protecting us at all times.
The final and most important aspect of having an ancient faith is hope. One of my favorite scriptures 1 Corinthians 13:13 CEB, “Now faith, hope, and love remain—these three things—and the greatest of these is love.” I truly believe love is the greatest, but it is grounded in hope. Throughout my life in times of difficulty and victory, my hope has kept me moving forward and reminded me, through faith, that God loves me and cares about me. When I was a pastor and entered what seemed to be impossible situations where families had experienced devastation and loss, it was hope connected to a deep faith that made the difference and transformed what was impossible into possible. Ancient faith never disappoints us because it is grounded in hope that surrounds us with the belief that God is in control. Even when I don't know or understand, God knows and understands.
It is true, “We live by faith and not by sight.” Although our lives are enhanced by many advances in technology, transportation and travel—without faith, we could never fully trust and enjoy the advances of our modern world. Just as AI will always need the human element, a life lived well will always need the faith element.
In our modern world, we continue to enjoy all the wonderful and creative gadgets and advances of science, but we should never forget that some things never change—and one is our ancient faith. Keep the faith!

RIPE READS BOOK REVIEWS BY SANDY LOWE
Have you ever tasted a restaurant dish and loved it so much that you had to recreate it at home? Then welcome to your new favorite cookbook by Celestina Blok—Cowtown Comfort: Fort Worth Recipes, Places and Food Traditions. The foodie volume oozes deliciousness from 60 recipes provided by local Fort Worth chefs, restaurants, bartenders, bakers and food artisans, claiming to be the first cookbook of its kind for the city. The high profile contributing chefs include Joe Bonnell, Tim Love, Blaine Staniford, Juan Rodriguez, Felipe Armenta, Molly McCook, Gigi Howell, and many more.
Blok draws the reader/cook/eater in with the introduction offering just enough Fort Worth history to set the stage for the dining experiences to come. She answers regional questions such as: Why is Fort Worth called “Cowtown?” Where did biscuits and gravy come from? How did Tex-Mex originate? Who opened Fort Worth’s first hibachi restaurant in 1975, and then later introduced the city to sushi in the 80s?
A spread on special tools, ingredients and terms preps the home cook for
success by explaining how these items are used in restaurant kitchens and what the home cook really needs to replicate the dishes.
Chapters include Cocktails, Steakhouse and Fancy, Burgers and Barbecue, Tex & Mex, Beyond Borders, Home Cooking in Cowtown, Let’s Brunch and Sweets. In addition to plenty of comfort food choices like Chicken Fried Steak, Buttermilk Pie and King Ranch Chicken, this cookbook also provides recipes for a variety of global dishes from Paella to Yakisoba.
Many of the recipes include notes with tips for sourcing or substituting ingredients, making portions in advance as well as suggestions for timing and seasoning. Vibrant, full-color photos of each dish make you wish you were sitting down to eat it right then and there. This cookbook would make a great gift for newlyweds, enthusiastic home cooks or neighbors new to the area. And for when you don’t feel like cooking, don’t worry. Blok encourages you to patronize these restaurants whose chefs and owners provided their recipes out of the goodness of their Texas-sized hearts!
ABOUT THE AUTHOR: Celestine Blok is a born-and-bred Forth Worth native, raised on chips and salsa, chicken fried steak, and her grandmother’s homemade flour tortillas. As a thirdgeneration Fort Worthian, Celestina still calls her hometown home, where she proudly cheers on her TCU Horned Frogs and gets giddy over local traditions like daily cattle drives in the Fort Worth Stockyards and sipping salt-rimmed margaritas at Joe T. Garcia’s. She’s a food and travel writer, culinary school graduate, fitness instructor, wife, and mother. Her love for her city is evident in her first two books, Lost Restaurants of Fort Worth and 100 Things to Do in Fort Worth Before You Die. In Cowtown Comfort, her passion for food and Fort Worth come together for a delicious dive into the city’s culinary culture.

BENEFITING STEPPING STONES FOUNDATION
The GCS Moms League members and their esteemed guests all delighted in a divine evening at The Great Gala: The Queen’s Ball. The gowns sparkled, music enchanted, and the generosity? Astoundingly splendid. It is my pleasure to report that thanks to the benevolence of our most noble gathering, this year's gala has raised a record-breaking $136,501 in support of the Stepping Stones Foundation—a sum that shall undoubtedly leave a lasting mark on those who need it most. Of course, such a regal affair could not have taken place without the most notable of patrons: Our Queen’s Court Sponsor, MobilTech, whose support reigns supreme. Our Band Sponsor, Methodist, who kept the ballroom alive with music fit for royalty. And let us not forget a dreamlike setting brought to life by our Landscape & Décor Sponsors, Landscape Systems and The Queen's Table, who transported us straight into a Regency garden dream. To our Violet and Lavender Sponsors, your contributions were the true foundation of the affair. As always... Lady Whistledown sees all, and your impact shall be forever noted.

Lauren Jackson, owner of Renata Salons in Grapevine, was recently crowned Mrs. Texas International, on March 10, 2025. Lauren has been a stylist for 25 years and her journey continues to amaze us. She’s always up to something fun and trendy with fashion and hair. But it doesn’t stop there. In 2018, she was diagnosed with an autoimmune disorder called alopecia areata and later lost over 75% of her hair. She was very transparent about her struggles and her victories with the disease. She later opened a special section in her salon to help people with the same types of issues. She now offers a full, private salon with similar amenities of a regular salon where she caters to clients who face hair loss—offering wigs and other services. Her clients leave feeling renewed, rejuvenated and rejoicing to feel confident again. The Mrs. International® showcases married women from 21 to 56 years old. It celebrates accomplished women who are dedicated to their families, marriages, and communities—and our very own Lauren Jackson embodies all of that and more.

Fort Worth’s legacy as the largest livestocktrading center in the Southwest led to its nickname of “Cowtown” in the late 1800s, a moniker that’s stuck ever since. With a food scene largely driven by beef, Fort Worth’s four basic food groups could be considered steaks, burgers, barbecue and Tex-Mex (with a platter of sizzling beef fajitas at the top of the last category). But food-loving locals know Cowtown cuisine spans beyond brisket, tacos and ribeye. In her first cookbook, Cowtown Comfort, author and Fort Worth native Celestina Blok aims to showcase her adoration for the chefs, pitmasters, bakers, and makers whose beloved creations—from top shelf margaritas to Texas sheet cake—define her hometown. Across 60 Fort Worth–based recipes, readers will find home versions of some of Fort Worth’s most beloved dishes—many served with a heaping side of history. Think Paris Coffee Shop biscuits and gravy, Reata Restaurant’s carne asada, H3 Ranch’s chicken fried steak, and even Heim Barbecue’s bacon burnt ends. Some readers might be surprised to find global flavors, from dishes like bœuf bourguignon from Paris 7th Restaurant Français, or yakisoba from Tokyo Cafe, homemade pasta from Emilia’s, and paella from Magdalena’s. Chapters like “Cowtown Cocktails” highlight important libations like grapefruit-infused paloma and a local take on the classic old-fashioned. Brunch and desserts are covered, as are “Fort Worth fancy dishes” like crab cakes with remoulade from Winslow’s Wine Cafe and Texas shrimp and grits from Bonnell’s Fine Texas Cuisine. Start planning your next dish with Fort Worth flavors in mind.

Heroes on the Water nonprofit provides free outdoor programs for U.S. active-duty military, veterans, law enforcement officers, first responders and their families.
Heroes on the Water is on a mission to bring wellness and community to our nation’s heroes and their families through the calming, restorative experience of kayak fishing and the great outdoors. Their vision is a future free of barriers — where every hero and their loved ones can access the healing power of nature. Through participation or volunteerism, individuals become part of a powerful movement that’s transforming lives. With 95% of participants reporting better stress management, 90% experiencing increased self-confidence, and 91% seeing improvements in personal relationships — the impact is both measurable and meaningful. Through nature, activity and community, they’re changing lives and restoring hope. They invite supporters to foster healing, resilience and connection — one paddle stroke at a time.
CASTING AWAY THE WEIGHT:
How Kayak Fishing is Healing America’s Heroes
FOUNDED IN 2007, HEROES ON THE WATER NON-PROFIT PROVIDES RECREATIONAL WELLNESS EXPERIENCES. THEIR PRIMARY MODALITY IS KAYAK FISHING — WHICH HAS PROVEN COGNITIVE AND EMOTIONAL BENEFITS. THESE PROGRAMS INCORPORATE STRUCTURED ACTIVITIES IN A PRESSURE-FREE ENVIRONMENT, CREATING OPPORTUNITIES FOR COMMUNITY BUILDING, PERSONAL HEALING, PLUS SOME MUCH-NEEDED CAMARADERIE AND SUPPORT.
It starts with a paddle and a quiet ripple across the surface of still water. There are no ranks out here, no sirens or salutes—just the steady breath of nature and the pull of the line. For many veterans and first responders, this is where the healing begins. Welcome to Heroes on the Water, where kayak fishing isn’t just a hobby—it’s a lifeline. And for many it has come just in time to help them heal.
Heroes on the Water is a 501c3 nonprofit that provides no-cost therapeutic kayak fishing experiences to veterans, active-duty military members, our first-responders, and their families. Their volunteer-led chapters hold regularly scheduled events that improve lives while supporting our heroes. They proudly provide support that honors the invaluable contribution made by all those who serve or have served our nation. Heroes on the Water provides their kayak fishing experiences at no-charge to their participants, and are only able to do this through your generous donations. Paddle. Fish. Heal. It’s more than just a tagline, it’s what HOW does. It’s a simple solution to a complex issue.
When Heroes on the Water (HOW) was founded, the concept was refreshingly simple: get active-duty military and our veterans out on the water with a fishing pole and a kayak. Let nature do the rest. What began as an occasional escape quickly blossomed into something far more profound. The peaceful rhythm of paddling, the focus of casting a line, and the camaraderie among fellow heroes became the building blocks of recovery.
Participants began reporting what the organization calls “Ah Ha!” moments— sudden, almost spiritual breakthroughs that came from the calm and connection found on the water. These were not isolated experiences. They became the foundation for a national movement.
Heroes on the Water began in 2007 with a simple, yet powerful vision: to help heal veterans through the peaceful rhythm of
kayak fishing. It started with one man, Jim Dolan—a retired Air Force veteran with a passion for the outdoors and a heart for service—who inspired a small group of like-minded individuals to turn that vision into something extraordinary.
What began as a grassroots effort has since blossomed into a national nonprofit with a profound impact. Those who knew Jim remember him not just as a founder, but as a man of deep compassion and humility, with an unwavering dedication. “He has left a legacy that will shine forever,” wrote one supporter. Others recall his quiet determination and the emotional stories he shared about wounded warriors finding peace on the water. Today, Heroes on the Water stands as a living testament to Jim’s dream—a place where healing, connection, and purpose flow with every paddle stroke.
In the sterile world of hospitals and clinics, many veterans recovering from injuries or trauma often feel disconnected from life as they once knew it. That’s exactly what was happening at Brooke Army Medical Center in the early days of HOW. Many patients hadn’t been outside in months— let alone immersed in the wild beauty of a lake or river. Outings with HOW gave them a different kind of treatment plan— one not measured in prescriptions or appointments, but in moments of peace,
laughter, and the natural world. For some, it was the first time they’d smiled in weeks, months or even years. “There’s something deeply restorative about being on the water,” said one participant. “It’s like nature absorbs the weight we carry.”
In 2018, the mission broadened. HOW officially opened its programs to include first responders and their families—law enforcement officers, firefighters, EMTs, and paramedics—those who rush toward danger so others don’t have to. These professionals face daily trauma that can quietly accumulate, becoming a silent burden few outside their circle truly understand. Now, thanks to HOW, they too have access to the same peaceful sanctuary.
While the emotional stories were all very powerful, HOW knew that to fully support their mission, they needed data—hard science to back what everyone already felt in their bones. So in 2021, they launched Operation Early Impact—a comprehensive study designed to quantify the program’s benefits.
This wasn’t just any feel-good survey. The study used validated psychological assessments specifically designed for military populations and was reviewed by experts in both recreational therapy and military health. An Internal Review Board
(IRB) ensured research met the highest ethical standards. The results? Striking.
• 95% of participants reported better stress management
• 90% felt a noticeable boost in self-confidence
• 91% saw improved relationships with friends and family
..................................................................
In scientific terms, those numbers are staggering. In human terms, they mean someone got out of bed. Someone reconnected with their kids. Someone found a reason to smile again.
Operation Early Impact research focused on three central pillars of well-being:
1. STRESS MANAGEMENT: Kayak fishing allows participants to disconnect from the hyper-vigilance of their daily lives. The natural setting and meditative qualities of the activity significantly reduce anxiety and promote long-term relaxation techniques.
2. SELF-EFFICACY: Feeling capable— especially after trauma—is a crucial part of recovery. Through simple victories like learning to fish, steering a kayak, or just showing up for an event, participants reclaim confidence in their abilities.
(continued)
3. RELATIONSHIPS - Whether it’s bonding with a stranger over a shared military background or reconnecting with a spouse during a family-friendly outing, the social fabric of Heroes on the Water is one of its most healing elements.
Let’s be clear: this isn’t a fishing club. It’s a nationwide network of people who believe in the restorative power of nature, community, and shared experience. Events are hosted by volunteers who plan each detail with care—from gear preparation to water safety to post-paddle meals. No one needs prior experience. No one brings their own equipment. Everything is provided, free of charge. Because for HOW, accessibility isn’t a perk—it’s a promise. There are two main types of programs:
These grassroots communities are spread across the U.S., offering consistent, local support. Veterans, first responders, and their families can join recurring events close to home, building relationships and support systems that extend well beyond the water.
These specialized sessions are developed in collaboration with the VA and Department of Defense. Designed for military personnel undergoing medical treatment, they work hand-in-hand with licensed
recreational therapists to meet clinical recovery goals. Both programs serve a shared purpose: empowering our heroes to find peace, resilience, and connection.
You might wonder—why kayak fishing? The answer lies in its unique blend of physical engagement and mental calm. The act of paddling provides gentle exercise that improves fitness and endurance. Meanwhile, the focus required to bait a hook, watch the water, or simply stay afloat forces participants into the present moment. In that mindfulness, stress begins to evaporate.
“You’re so focused on the rhythm of the paddle or whether the fish are biting, there’s no room left for anxiety,” said a
longtime participant and veteran. “It’s like therapy disguised as a hobby.” The natural surroundings add another layer. Studies show that immersion in nature—particularly near water—has profound effects on mental health, including reduced blood pressure, cortisol levels, and heart rate.
Heroes on the Water is open to all United States veterans, active-duty service members, and first responders. From the newly retired firefighter to the Gulf War veteran, everyone has a place here.
Plus, the events are inclusive of all physical abilities, backgrounds, and any family dynamics. Whether someone shows up alone, with a service animal, or with their entire family—there’s space on the water and around the campfire.
The stress shouldered by our nation's first responders can often go unseen. Every 911 call, every crisis, leaves a mark. Heroes on the Water's first responder programs create a space where these everyday heroes can let go—at least for a few hours.
Family-focused events ensure that healing doesn’t happen in isolation. Kids can fish alongside parents. Spouses can paddle together. The shared experience creates memories that matter—and relationships that help to heal.
give back, Heroes on the Water has a place for you. You don’t need a medical diagnosis or a combat story. You just need a willingness to show up—and maybe, to cast a line.
90% REPORTED INCREASE IN SELF EFFICACY 91% REPORTED

Volunteering is also a core part of HOW’s ecosystem. Many participants eventually become volunteers themselves, finding healing not just in receiving support, but in giving it. Friends, family members, and even corporate groups can get involved in hosting, guiding, or simply supporting events behind the scenes. It’s proof that sometimes, the best therapy is knowing you made someone else’s day better.
Healing takes many forms. For some, it’s a quiet conversation on a dock. then for others, it’s paddling into the morning mist with a new friend. For all, it’s knowing they are not alone.
Whether you’re a veteran searching for peace, a first responder in need of a break, or a civilian who simply wants to
VOLUNTEER:
No fishing experience needed— just bring a heart for service.
DONATE:
Your contributions help keep all programs free and accessible.
SPREAD THE WORD:
Share their story. Every hero deserves to know they’re not alone.
In a world that often moves too fast to notice the silent struggles of those who serve, Heroes on the Water stands as a gentle, powerful reminder that healing doesn’t always come in a hospital or therapy room. Sometimes, it comes in the form of a paddle slicing through morning fog, a fish tugging at the line, or a laugh shared between strangers who suddenly feel like family. For nearly two decades, HOW has created space for veterans and first responders to reconnect with themselves,
with nature, and with each other—without pressure, without pretense, and always without cost. It’s not just about fishing— it’s about belonging. It’s about reminding our heroes that they are still part of something meaningful, still worthy of peace and joy, and still supported by a community that sees them. In every ripple on the water, there’s a story of resilience. In every cast, a step toward healing. And in every shared moment, the quiet but unmistakable truth: they are not alone.
So next time you see a kayak gliding across the lake, remember—it’s more than a boat. It’s a vessel for healing, for hope, and for heroes. See you on the water.

FEATURING OVER 350 ARTIFACTS FROM TITANIC AND SISTER SHIPS, THIS EXHIBITION VIVIDLY BRINGS TO LIFE THE DRAMATIC STORY OF THIS ICONIC VESSEL
It’s an almost implausible story. An unsinkable ship on its maiden voyage, carrying some of the wealthiest and most prominent people in the world—sinks—killing two-thirds of the passengers on board. Over a century later, we remain intrigued by its story and the fate of people on board. Over two decades after captivating the Dallas audiences at Fair Park, Titanic: The Exhibition is making its triumphant return. This time, it’s not just an exhibition, but an immersive experience that stirs your emotions. With original artifacts, stunning ship recreations, and a VR journey to Titanic’s final resting place, you’ll feel like you're part of the story. Get ready to embark on an interactive tour with vast, jawdropping recreations of the ship’s interior and exterior.
Visit the dock where the Titanic first sailed. Explore the galleries and the boiler room and take a look inside a millionaire’s suite. Stroll the exterior promenade deck under a starry night sky and see the Grand Staircase with your own eyes! This exhibition, produced by Imagine and Fever and creatively produced by Mark Lach, allows you to step inside recreations of the Titanic’s interior and immerse yourself in the stories of its passengers. Tom Zaller, President and CEO of Imagine, says, “One of the first Titanic exhibitions I was a part of was at Fair Park in Dallas in 2000. It’s been more than 20 years since I’ve presented a Titanic exhibition in the Metroplex, and I’m extremely excited to be returning. Our exhibition is designed to immerse the visitor in the history of the Titanic in a new way, with incredible media experiences and recreated environments that bring the story to life.” This narrative journey sheds light on the tragic fates of the passengers and crew aboard the sinking ship. It will feature over 350 relics, including china, menus, personal items, and more, as well as props and costumes from the beloved James Cameron 1997 blockbuster film Titanic
Once “aboard,” visitors will receive a boarding pass corresponding to a passenger on the ship, allowing each guest to follow the story of an individual passenger as they explore the first-, second, and third-class galleries with their corresponding artifacts. The stories of love and loss culminate in the final galleries, showcasing personal effects and individual anecdotes surrounding a tribute wall where each passenger’s fate is revealed. The exhibition also features a striking and informative film that offers an in-depth look at the latest forensic research related to the collision, sinking, and subsequent breakup of the Titanic. Award-winning underwater photography of the Titanic lines the walls of the Discovery Gallery in a stunning display of the ship’s current state on the seafloor. Creative Producer Mark Lach says, “Titanic: The Exhibition connects visitors to the moving human stories of the Titanic’s passengers and crew.” As a member of the last team to dive to the Titanic wreck site to recover artifacts, I saw firsthand the awe-inspiring scale and significance of the ship. Of course it was exciting, but also very emotional as well. Through the passengers' stories, immersive recreations, and authentic artifacts, we’ve brought that sense of wonder and discovery to our guests, allowing them to step back in time and experience Titanic’s legacy like never before. Over 25 years ago, right after James Cameron’s blockbuster film hit theatres, Mark Lach, a stage producer, received an unexpected call offering him the chance of a lifetime. He was hired to utilize his stage talents to transform a Florida-based exhibition into a first-class event, featuring jaw-dropping recreations and set designs. All that was needed were the artifacts from the ship’s wreckage. In 2000, Mark Lach entered a Russian submersible. On a bright, sunny day, he descended 2.5 miles into the ink-black abyss of the North Atlantic. Once the submersible reached the ocean floor, the lights were switched on, and suddenly, before his adjusting eyes, the larger-than-life image of the Titanic’s bow appeared.
Q: What was the first thing you saw when encountering the wreck of the Titanic? I was thrilled to see the bow where Captain Smith steered the ship. In his last voyage, he promised his wife that he would retire, but the White Star Line persuaded him to postpone retirement for one final journey to sail the rich and famous across the Atlantic. Looking out the small porthole, we then went right by Captain Smith's cabin. Looking into the doorway, I could see his brass bed and cast-iron tub. Knowing he was right there, thinking about his life and how he must’ve felt knowing that his ship was going down with no rescue and not enough lifeboats on board. That personal connection with Captain Smith was both intense and significant for me.
Q: What was your most fantastic find?
A simple leather satchel, bound by two leather strings. Examined in the boat’s lab, we discovered a collection of 64 glass vials, no larger than a small finger, with corks inside the tubes and paper labels still perfectly preserved. This was likely due to the tanning process used on the leather that day. The vials were still filled with liquid, and all of a sudden, this beautiful fragrance filled the room. Looking closer at the labels, we saw that ‘lemon, lavender, and all these fragrances’ were labeled on the glass vials. Stamped on the satchel was the name Adolph Saalfeld. To see the glass vials, the preserved labels, and to smell the perfume, that was pretty special.
side note: Adolph Saalfeld was a chemist, a perfumer, and a first-class passenger. He was on his way to New York to sell his collection of perfumes when the Titanic hit the iceberg. In his haste to disembark, he left his samples in his room and followed the other passengers into a lifeboat. Adolph Saalfeld survived the sinking of the Titanic.

texas travel and beyond
Fredericksburg is a charming town that has earned its reputation as a premier destination for those who want to experience wine tasting. Known for its picturesque landscapes, Fredericksburg not only boasts some of the most scenic views in the Lone Star State, but is also renowned as one of the most prolific wine regions in the country. As you journey along the famed 290 Wine Trail, you’ll discover an array of the best wineries in town.
With so many incredible wineries dotting the Texas landscape, you might find yourself wondering, “Where do I even start?” I have got you covered! I’ve scouted out the spots that truly shine—places where each glass tells a story and every visit feels like a little taste of Fredericksburg’s heart and soul. But hey, don’t forget—there’s a whole town beyond the cork and bottle. Make some room in your Fredericksburg wine tasting tour for a little detour—and soak up all the fun things to do in Fredericksburg. But first a few commonly asked questions answered:
Q: How much do wine tastings cost in Fredericksburg, Texas?
When you’re out tasting wines in the Fredericksburg area, you’ll be happy to hear it won’t break the bank. Wine tasting fees range from $10 to $20. Each winery has its own style, so you might get a few different wines to try at one place and a whole bunch at another. Plus, a lot of times, they’ll give you a cool wine glass with their name on it to take home. Here’s a handy tip: if you end up buying a couple of bottles, like three or more, some wineries are cool enough to not charge you for the tasting at all. It’s like getting a little thank you for loving their wine. And if you really go for it and buy a whole case, you might get a sweet discount. So you can taste great wines, have fun, and even save a bit if you stock up on your favorite’s during your Fredericksburg wine tasting adventure. There are also great winery experiences at different Fredericksburg wineries, such as going on a wine tour at Pedernales or doing a chef-driven scratch kitchen seasonal wine tasting at Khulman, Signor, Baron’s Creek, and other vineyards.
Q: What specific kind of wine is Fredericksburg known for? Frankly, it is pretty famous for a variety of wines, but the ones that really get people talking are the ones that love the Texas heat, like the smooth and peachy Viognier and the bold and spicy Tempranillo. These two are kind of like local stars in the wine world here. In Texas, we grow all sorts of grapes, from the types you might find in fancy French Bordeaux to ones that feel right at home by the Mediterranean Sea. That means on top of Viognier and Tempranillo, you’ve got a whole lineup including grapes like Syrah, which is great for a juicy red, and Marsanne and Roussanne, which make some really nice whites. And that’s just the start— there’s also Tannat, Picpoul, Cinsault, Petite Sirah, Sauvignon Blanc, Malbec, Cabernet Sauvignon and Sangiovese. Each one’s got its own flavor and style, and they all help make Fredericksburg a go-to spot for trying out a whole world of wines right here in Texas.
Food & Wine Pairings at Kuhlman Cellars
Not only does Kuhlman Cellars have fabulous wines, but a fun way to take your Fredericksburg winery experience one step further is with their tableside food and wine pairing. They offer different pairings based on seasons, but it’s always a mixture of great items like crostinis, salami-wrapped cheese, and other delicious items. On top of the wine, one thing you cannot miss is their herb almonds. People drive in to get these delicious almonds, which are the perfect addition to any wine and cheese platter. Plus, there’s nothing like frolicking through the vineyards with your girls with a glass of wine in hand. Katie-Rose Watson of The Rose Table and I had so much fun!
Pedernales Cellars: Drink Wine Straight from the Barrel
Getting exclusive access to the behind-the-scenes of wine production is a real treat for any wine lover. At Pedernales Cellars, they offer just that, taking you beyond the regular tasting room experience right into the heart of where their wine begins. You can see how the grapes are harvested, learn about the wine-making process, and see all of the intricate details of everything that goes into making wine. You get to learn all about the steps that go into creating a delicious bottle of wine, like their special Rhone-style wines. We went during the end of summer when they were just getting the grapes in, so we even got to see fun additions like the grapes going through the press. The best part is getting to taste the wine straight from the barrel. Most wines take time to age and are blended with other wines, so you get to try the unfinished product, which is delicious nonetheless. Afterwards, you can grab a seat on their patio and enjoy a glass of wine overlooking miles of views as Pedernales Cellars sits on acres of land with views of rolling hill country.

A Taste of Tradition at Becker Vineyards
Becker Vineyards is not just one of the top spots for wine in Fredericksburg—it’s also one of the oldest around. When you see the barn, with its cool Texas-German style, you get a real feel for Fredericksburg’s past. Stepping into their tasting room is like walking into a wooden wonderland, with beautiful wooden details everywhere you look. But there’s way more than just the tasting room—the whole estate is huge! They’ve got a big winery, an underground cellar for aging their wines, acres of grapevines, fields of lavender, a place for hosting events, a sweet outdoor area with a verandah and pavilion, and even a cozy log cabin from the 1890s. And then there’s the wine—oh, it’s so good. Becker Vineyards has all sorts of wines to try, whether you like your whites dry or sweet, a refreshing rosé, or all kinds of reds. There’s something for everyone, and that’s what makes this place really stand out.
Somewhere between 80–85% of Texas grapes are grown in the Texas High Plains, so even when you are visiting a Fredericksburg Winery, the grapes are most often coming from much farther away. However, Pontotoc Vineyards has done what few other Fredericksburg wineries have done: create all of their wine using 100% Texas Hill Country-grown grapes. Their warehouse is conveniently located in downtown Fredericksburg, in the oldest building in town! It’s the perfect place to end your day and relax with friends!
Visit Tuscany in Texas at a Fredericksburg Winery
Make all your friends envious of your “Italian” adventures when you are, in fact, at Grape Creek Vineyard—also lovingly known as Tuscany in Texas. With nonstop views of vineyards as you drive in and beautiful Italian-themed architecture, you’ll wonder if you’re still in Texas. Heath Family Brands includes Grape Creek Vineyards, Heath Sparkling Wines, Invention Vineyards and Kuhlman Estate each including an operating vineyard and winery with a total of six tasting room locations across the Texas Hill Country. [flip to page 62 to learn more about their brands]
Savor the Scenery at Barons Creek Vineyards
Barons Creek Vineyards is a really cozy spot just outside of Fredericksburg where you can kick back, relax, and enjoy some good local wine. It’s a pretty place, with vines stretching out over gentle hills—the perfect backdrop for chilling out with friends or family. When you swing by, you’ll find that everyone’s super friendly, and the wines have that rich Texas flavor that makes you want to savor every sip. They’ve got this great patio where you can hang out, often with live music setting the vibe. It’s not just about the delicious wine here—it’s about feeling like you’re part of the place, soaking up the easygoing vibes, and just having a great time. So if you’re in the area and want to taste what Texas wine is all about, Barons Creek is the spot to be.
Experience the Rustic Charm of Signor Vineyards
Signor Vineyards really stands out in Fredericksburg, not just for its top-notch wines but also for the slice of French countryside feel you get the moment you step onto the property. . Owned by a fifth-generation Texas family, this place might be in the heart of Texas, but it whisks you away to the charm of rural France. There are a couple of lovely ways to soak up all Signor Vineyards has to offer. One is to just relax with a bottle of their wine paired with some delicious gourmet snacks under the shady trees. It’s laid-back and perfect. Or, if you’re in the mood for something a bit more fancy, sign up for their elevated wine tasting. You’ll get to taste different wines, learn about the grape types they use, and learn about all the care that goes into making each bottle. And of course, there are tasty bites to go with each wine, making it a learning experience that your taste buds will thank you for.
Beyond the typical winery experience, Fredericksburg is becoming just as much about the attractions as it is about the wine. For instance, in Fredericksburg, you can now pet a rhino at the rhinory while sipping a glass of wine and promoting rhino conservation— go on a safari where you get to meet different animals, such as camels, at Grapetown Vineyards, and even meet a giraffe on a wine tour with Absolute Charms Wine Tour. It’s not just about animals, though. You can have wine in a castle at 290 Wine Castle.
If you’re looking for a wine tasting with a fun twist, check out Safari Winery in Fredericksburg. A family who loves to share wines from all over the world runs it. When you step inside, you’ll feel like you’ve been whisked away on a mini safari adventure, with cool decorations that add to the vibe. They’ve got all sorts of interesting wines, some of which you might not find at the other local spots. It’s a cool place to try new flavors and feel like you’re on a little wine world tour without ever leaving Texas.
Foyt Wine Collective stands out among Fredericksburg’s many wineries for its unique blend of racing heritage and exceptional wines. Named after the legendary auto racing family, it offers a thrilling experience to both wine connoisseurs and racing fans. The tasting room, adorned with memorabilia from the Foyt family’s illustrious racing history, provides an atmospheric backdrop to the tasting journey. Their selection of wines, ranging from the robust reds to the crisp whites, is crafted with precision and passion, reflecting the family’s dedication to excellence both on the track and in the vineyard.

The Rhinory offers a unique opportunity to blend wine tasting with wildlife conservation. It’s an innovative establishment where visitors can sip exquisite wines while also interacting with the gentle giants of the animal kingdom, the rhinos. The purpose of this unique venture is not merely entertainment; it’s a conscientious effort to promote rhino conservation, creating awareness about the threats these magnificent creatures face due to habitat loss and poaching. Every glass of wine you enjoy at the Rhinory contributes towards making a difference in the lives of these endangered species, making your wine-tasting experience all the more meaningful and memorable.
For the ultimate experience along the Texas Hill Country Wine Trail without burning a hole in your pocket, aim for a weekday visit to Fredericksburg. You’ll find that hotels and B&Bs are often much more wallet-friendly these days, with potential savings of $100–$150 per night compared to weekend rates. Plus, you’re in for a treat when it comes to the wine destinations themselves.
The crowds thin out, giving you a much more intimate and more personal encounter with the winemakers and sommeliers. When we went, the knowledgeable staff member was able to take the time to discuss what tannins are, help us pick out flavor profiles, and make us feel like true wine experts.
Did you know visiting the 290 Wine Trail actually runs through the cities of Johnson City, Stonewall, Hye, and Fredericksburg? Since Stonewall is right in the center of the 290 Wine Trail, it’s perfectly situated to visit all of the Fredericksburg wineries. We stayed at Stonewall Motor Lodge which was just minutes from multiple wineries. It made the perfect home base for a weekend of wine tasting and exploring the heart of Texas Wine Country. Plus, being centrally located meant we could easily relax between tastings without spending too much time on the road.
When you’re hitting up the wineries, especially in a place filled with as many good spots as Fredericksburg’s urban wine trail, it’s best to stick to visiting just four in a day. Trust me, any more
than that, and it’s easy to lose track of how much you’ve actually had. Each tasting can be about a glass of wine. So, by the time you’ve been to four wineries, you’re looking at four glasses or possibly even a couple more. Keeping it to four lets you really enjoy what each wine destination has to offer without overdoing it. Sip and savor the experience—but please enjoy the Urban Wine Trail responsibly. Plus, you’ll actually remember the wines you liked the best! And let’s be honest—wine always tastes better when you’re not rushing. Taking your time means better conversations, more relaxed vibes, and a fuller appreciation of each winery’s unique character.
When it comes to savoring the best of Texas Hill Country, hitting the wine road should be all about relaxation and enjoyment, not worrying about driving. That’s where wine tour companies like Cottonwood Tours come into play. They specialize in winery tours and are a fantastic option for those who want to indulge without the hassle of driving. They even offer pickups from as far as San Antonio. By leaving the driving to the pros, you’re free to immerse yourself in the wine tasting experience—moving from one delightful pour to the next, all part of an unforgettable Texas Hill Country wine tour. So sit back, sip on, and savor the journey responsibly!
It’s been a real treat to share with you the spots where the best wines are more than just a drink—they’re a true expression of Texas’s heart and soul. Here, wine isn’t just poured into a glass... it’s poured from a place of passion, history, and deep-rooted pride. This little slice of wine heaven is more than a destination— it’s a feeling, an experience, and hopefully, an inspiration to pack your bags and see it for yourself. Whether you’re a seasoned wine enthusiast or someone who simply enjoys a good glass with good company, Fredericksburg offers something magical. Each winery we visited had its own personality, its own story to tell. From bold reds to crisp whites, and everything in between, the wines reflect the richness of the Texas Hill Country and the people who pour their hearts into every barrel, bottle and tasting room. There’s a rhythm to wine country life here—slow mornings, scenic drives, golden afternoons, and starlit evenings with a bottle uncorked and shared among friends. You’ll find more than flavors—you’ll find connection, tradition, and that warm Texas welcome that makes every visit unforgettable.
So when you’re dreaming up your next getaway, don’t forget the heart of Texas wine country. Come for the wine, stay for the charm, and leave with a story in every sip. Here’s to new discoveries, lasting memories, and raising a glass together again someday in beautiful Fredericksburg. Cheers to good wine, great times, and the road that always leads back to the vineyard.

It’s the perfect blend of luxury, leisure, and laid-back Hill Country hospitality. “Anyone can enjoy tastings and tours at our properties, but joining the club of any Heath Family Brand unlocks the amenities that truly make this a unique oasis for wine explorers,” admits owner Brian Heath, who purchased Grape Creek Vineyards with wife Jennifer in 2006. “If you want to enjoy exemplary wine in a serene European setting, Grape Creek Vineyards is the place for you.”
Heath Family Brands winemaker Jason Englert (pictured above) is the most decorated winemaker in the state of Texas, having achieved over 1,000 medals from the most prestigious wine competitions in the country and over one hundred and ninety 90+ scores on his wine. Jason has been with Grape Creek Vineyards since 2004, helping the wine program grow from 2,500 cases to 80,000 cases produced across all Heath Family Brands. Jason’s focus is making wines from the highest quality selection of grapes and letting each wine create their own path to the bottle. Jason and the winemaking team blend traditional wine-making practices with innovation.
Also on the Grape Creek Vineyards property is Heath Sparkling Wines, the first tasting room solely dedicated to sparkling wine in the area. The premiere food and wine tasting takes guests on a culinary journey with gourmet chefprepared bites. Tastings change with each season and offers serene vineyard views in a large, air-conditioned space, making this tasting room the absolute perfect place to cool off from the Texas heat with refreshing bubbles all summer long.

The Heath Family Brands Texas portfolio now includes not only the Grape Creek Vineyards and Heath Sparkling Wines, but also Invention Vineyards and Kuhlman Estate boutique winery.
Invention Vineyards is lauded for its incredible wine, historical landmark, and relaxed atmosphere. Invention Vineyards’ 25,000 square foot, state-of-the-art wine production complex includes, the crush pad, plus 50 stainless production tanks providing 65,000 gallons of capacity, barrel cellar, and multiple bottling areas.
Kuhlman Estate, the most recent vineyard to join Heath Family Bands, is currently undergoing renovations to add even more comfort and shade to its beloved outdoor area. The indoor and outdoor renovation is expected to be complete by June 2025, but Kuhlman Estate is open during the transformation.
Owners, Brian and Jennifer Heath (on right)) are dedicated to wines from their home state of Texas. Heath Family Brands exclusively contracts over 250 acres of Texas vineyards in addition to 68 acres of estate vineyards in Fredericksburg. While Grape Creek, Heath Sparkling, Invention Vineyards and Kuhlman Estate brands represent over 90% of wine produced, Heath Vineyards and Jenblossom Cellars wines now offer different terroirs to enjoy.
Last but certainly not least in the portfolio is Jenblossom Cellars—an incredible selection of ultra-premium AVA-driv en red wines. Guests of Grape Creek can enjoy this special tasting on Saturdays. These bold Cabernets and Pinot Noir are sourced from growers in the Napa Valley region, but crafted in their Texas cellars at Grape Creek Vineyards.
The inspiration for Jenblossom Cellars began at Jennifer’s birthday dinner in 2016, when she and Brian were browsing the wine list and Brian remarked, “I bet Jason could make a wine for us to share with staff, friends and family that’s as good—or better—than most on this list, but it would have to be scary good!” That sparked the idea for Jenblossom Scary Good—inspired by Brian’s affectionate nickname for Jennifer. Before dessert
arrived, Brian was already texting winemaker Jason Englert to find a “scary good” vineyard in a world-class AVA. The brand’s butterfly icon holds personal meaning as well, drawn by Jennifer’s daughter for Mother’s Day and inspired by her connection to her grandmother. Today, that same butterfly graces every bottle in Jenblossom Cellars’ portfolio— a limited production crafted to be shared and savored with those who matter most.
They like to say, “At Heath Family Brands, when you’re a member anywhere, you’re a member everywhere.” This dedication to the club members provides access and benefits at all Heath Family Brands locations. It has led to a loyal membership who value the member-focused approach.
Not only are the Heaths committed to supporting the Texas wine industry, but also dedicated to investing in the Heath Family Brands team and the community. Heath Family Brands has grown from an original five employees to now 150 through competitive pay, healthcare and company-funded retirement plans. Heath Family Brands are innovative and often pursue directions that others don’t. So, what’s next for Heath Family Brands? Who knows. One thing’s for sure—there’s always something new and exciting fermenting just on the horizon .
If you want to travel to Tuscany without spending 10+ hours on a plane, Grape Creek Vineyards is the next best thing. One sip of Grape Creek’s 2021 Bellissimo by the fountain overlooking the vines and you’ll feel like you’ve been transported to your very own Italian vacation.

In a charming nod to the beloved fairy tale, I hosted a Snow White–inspired tea party that brought the storybook to life with a whimsical woodland twist. I styled a small table in the iconic colors of her gown with a yellow cloth and blue runner, then filled rustic birch vases with red and yellow roses, blue hydrangeas, and snapdragons. Woodland touches like pine cones, a bird’s nest, and ceramic birds added fairy-tale charm—though, unlike Snow White’s, mine didn’t clean the house! Each place featured china plates, red napkins, honeycrisp apples, and name cards. I wore a yellow skirt, blue top, red headband, and apple necklace. We enjoyed tea sandwiches, scones, and whimsical desserts, all served with tea from a vintage Snow White teapot gifted by a Rose Table reader.
I’m officially obsessed with this chicken salad. With lemon zest, Dijon mustard, diced red apple, fresh thyme, dried cranberries, sliced almonds, and green onion, this easy chicken salad is bursting with flavor. I absolutely love the use of apple here, both in the salad and in the serving suggestion. The apple adds great moisture, flavor, and crunch. The combination of apple and dried cranberries is a fun twist on a classic chicken salad, which typically has grapes and celery. You can use roasted chicken or rotisserie chicken here. You can of course serve this apple chicken salad as a sandwich but I thought it was adorable to serve this salad on apple slices for my party. It’s also a low-carb option if you’re into that sort of thing!
1) Whisk together Greek yogurt, zest and juice from a small lemon, Dijon mustard, salt, ground black pepper, and fresh thyme in a large bowl.
.................................................................................................................................................
2) Stir in shredded chicken, diced apple, sliced almonds, dried cranberries, and green onion. If desired, serve chicken salad on apple slices.
2 pounds chicken, cooked and shredded
1 cup plain Greek yogurt
1 small lemon (zest and juice)
1 tsp Dijon mustard
1 tsp salt
1/2 tsp freshly ground black pepper
1 Tbsp fresh thyme leaves, chopped
1 cup finely diced red apple
1/2 cup sliced almonds
1/3 cup dried cranberries
2 Tbsp green onion, sliced
My Snow White Tea Menu included, Gooseberry Jam, Black Forest Ham, Cucumber Radish and Apple Chicken Salad Tea Sandwiches. Snow White bakes a gooseberry pie in the original movie but alas, we don’t have gooseberries here in Texas so I primed myself some Wilkin & Sons Ltd green gooseberry preserves that pair beautifully with havarti. Then, Black Forest ham is paired with Muenster cheese and Dijon mustard for a quick and easy German tea sandwich. And every tea needs a cucumber sandwich. It’s an unspoken rule. Here I gave the classic tea sandwich an updated twist with an open-faced herbed cream cheese sandwich with thinly sliced radish and a bit of fresh dill. What screams Snow White more than an apple? This delicious chicken salad not only has diced apple in the recipe, but also is served on apple slices for a bit of extra Disney magic.
It wouldn’t be a tea party without scones. If you’ve never had my old fashioned buttermilk scones, you’re in for a treat. They’re sweet and tender. I served these delicious scones with clotted cream and raspberry jam. You’re not going to think these are going to work. You’re going to be plagued with doubt. Trust the process! They look craggly. They look like they’re going to be dry. They’re not. In fact, they stay soft and tender for days!
INGREDIENTS
Makes 9-12 scones
3 cups flour 1/2 cup sugar
4 teaspoons baking powder
3/4 teaspoon salt
1/2 cup butter at room temp
1 cup buttermilk
1 large egg
1 tsp vanilla extract
.................................................................................................................................................
(1) Preheat oven to 400 degrees. Lightly grease two cookie sheets.
.................................................................................................................................................
(2) In a medium-sized mixing bowl, whisk together the flour, sugar, baking powder and salt.
.................................................................................................................................................
(3) Incorporate the butter into the dry ingredients using a pastry blender or spatula. Mix until well-combined. (Some lumps are okay.)
.................................................................................................................................................
(4) Whisk together the buttermilk, egg, and vanilla. Add the wet ingredients to the dry ingredients, stirring gently until just combined. (Don’t beat the mixture or your scones will be tough.) If needed, add another tablespoon or two of buttermilk just until mixture comes together.
.................................................................................................................................................
(5) Using a 1/4-cup measuring cup, scoop dough onto two lightly greased/parchment-lined cookie sheet. (The rounds should look similar to large cookies about to go in the oven.)
.................................................................................................................................................
(6) Bake for 15-18 minutes or until they’re golden brown. Serve warm with butter and jam.
This has got to be one of the quickest and easiest desserts I’ve ever made! A fool is basically just whipped cream and fruit. Here I’ve used that same delicious gooseberry jam with a shortbread cookie garnish for dessert in less than five minutes. In the original Disney movie, Snow White bakes a gooseberry pie. Well, sadly we don’t have gooseberries in Texas, but I was able to prime myself some incredible gooseberry jam from a company who’s been making it since the 1800’s (Wilkin & Sons Ltd green gooseberry preserves) and y’all, it is delicious!
1) Beat heavy cream with a metal whisk in a metal bowl until it starts to thicken.
2) Add powdered sugar and vanilla and continue to beat until soft peaks form. Do not over mix! Gently fold in jam. .................................................................................................................................................
3) Garnish with a shortbread cookie and cookie crumbs.
1 cup heavy whipping cream
1/4 cup powdered sugar
1 tsp vanilla
1/4 cup gooseberry jam
Optional: shortbread cookies for serving
If I learned anything from queen Ina Garten, it’s that you don’t have to make everything yourself. I ordered these stunning custom apple cakes from Le Rêve Gelato & Patisserie. Owner and Pastry Chef Andy Pham is known for his incredibly realistic cakes that look like something else. These cakes really added some magic to my tea party.
CAKE INGREDIENTS
1/4 cup powdered sugar
4 eggs, separated
1/2 cup granulated sugar plus 1/3 cup , divided
1 tsp vanilla extract
1/2 cup all-purpose flour
1/3 cup dark cocoa powder
(I love Hershey’s special dark)
1/2 tsp baking powder
1/4 tsp baking soda
1/8 tsp salt
1/3 cup water
Optional: Kirsch liquor
ALMOND WHIPPED CREAM
1 cup heavy whipping cream
1/4 cup powdered sugar
1/2 tsp almond extract
CHERRY SAUCE
2 cups frozen black cherries
1/3 cup sugar
1/3 cup water + 2 Tbsp, divided
1 Tbsp cornstarch
1/4 tsp almond extract
(or 1/2 tsp vanilla)
Black Forest cake is the ultimate German dessert. Seeing as our inspiration Snow White, or Schneewittchen, is a classic German fairytale, it seemed fitting to serve gorgeous Mini Black Forest Cakes for dessert. One taste of this cherry sauce and it’ll be love at first bite! .................................................................................................................................................
(1) Heat oven to 375°F. Grease 15.5×10.5×1-inch jelly-roll pan, line with parchment paper. Grease paper. Spread thin towel on counter and sprinkle with a handful of powdered sugar. .................................................................................................................................................
(2) Carefully separate eggs. Beat egg whites in large bowl until soft peaks form. Gradually add 1/2 cup of granulated sugar, beating until stiff peaks form. In a stand mixer, beat egg yolks and vanilla on medium speed about three minutes. Gradually add remaining 1/3 cup granulated sugar — continue beating for two additional minutes.
.................................................................................................................................................
(3) Whisk together flour, cocoa, baking powder, baking soda and salt in a small bowl. Add to egg yolk mixture alternately with water, beating on low speed just until batter is smooth. Gently fold beaten egg whites into mixture with a spatula just until the batter is uniform in color. Spread batter evenly in prepared pan.
.................................................................................................................................................
(4) Bake 12-15 minutes — until top springs back when touched lightly in center. Immediately invert onto prepared towel or parchment paper and peel off paper. Cool completely. .................................................................................................................................................
(5) Cut 20 circles from the cake using a 2.5-3″ round cookie cutter. If desired, brush rounds with a tablespoon or so of kirsch liquor.
.................................................................................................................................................
(6) Top 10 circles (or squares/rectangles) with whipped cream and cherry sauce. Add another cake layer on top, then add more whipped cream and cherry sauce. Top with shaved chocolate. Refrigerate until ready to serve.
ALMOND WHIPPED CREAM
................................................................................
(1) Beat whipping cream in a chilled metal bowl with a metal whisk until soft peaks form.
................................................................................
(2) Whisk in almond extract and powdered sugar. You want it nice and pillowy; don’t over whip it.
CHERRY SAUCE
........................................................
(1) Bring cherries, 1/3 cup sugar, and 1/3 cup water to a boil in a medium saucepan.
........................................................
(2 Whisk together 2 Tbsp water and 1 Tbsp cornstarch until smooth — stir into cherry sauce. Return to a boil and cook for one minute or until thickened.
........................................................
(1) Remove from heat. Stir in almond extract. Let cool for 15 minutes before using or store in a jar in the fridge for up to a week.

REVIEW BY JENNIFER SLOAN
Sweet Paris Crêperie & Café has brought a slice of Parisian charm to Southlake with the opening of its newest location in Southlake Town Square. This expansion marks the brand’s first foray into the DFW area, introducing locals to delectable sweet and savory crêpes, along with other French-inspired delights. Situated in the space formerly occupied by Rockfish, the café is transformed to be trés chic while staying cozy and inviting guests to savor their meals and linger a little longer. The exterior exudes a bright and lively Parisian sidewalk bistro ambiance with a spacious patio that sets the perfect backdrop for romantic dates and plenty of people watching.
Founded in Houston in 2012 by husband-and-wife duo Ivan and Allison Chavez, Sweet Paris has rapidly grown, boasting 18 locations across Texas, Florida, Minnesota and even Mexico. The Southlake café is the result of a partnership with the Hymes family—Edward Sr., his wife Cynthia and their son Edward Jr.— who have plans to open four more locations in the Dallas-Fort Worth region. Before they were owners, they were loyal customers and they just knew Sweet Paris was the Instagramworthy culinary destination Town Square never knew they needed. The menu at Sweet Paris offers a diverse selection of crêpes to satisfy various palates. Savory options include the Chicken Alfredo, featuring grilled chicken, parmesan, mozzarella and alfredo sauce. For those with a sweet tooth, choices range from a classic Nutella crêpe to the indulgent Apple
Cinnamon Crème Brûlée, which combines torched vanilla cream with caramelized apples and cinnamon. The options appear endless and if you’re having difficulty choosing, I suggest the Truffled Caprese, with mozzarella, tomatoes, basil and a drizzle of truffle oil. It’s simple, yet decadent. Vegan and vegetarian crêpes are also available.
Beyond crêpes, the café also serves waffles, omelets, salads and paninis. Equally diverse as the food selection, Sweet Paris offers a healthy beverage menu, including mimosas, wines and an assortment of espresso-based drinks. My not-to-be-missed item from “Le Bar” is the “Cannes”— a raspberry-mango frozen mimosa, sprinkled with tajin. This is sure to be a go-to summer cocktail—sweet, a little spicy and totally refreshing.
With its blend of authentic French cuisine, inviting atmosphere and easy location, Sweet Paris Crêperie & Café is already a cherished destination for locals and visitors alike. So much so that you can expect a bit of a wait during peak times. But I tell you this only to say that it is well worth the wait. I almost considered leaving with my party of five when it seemed like the wait for a table might be too long, but we decided to stay— and we would absolutely do it again.
Whether you’re in the mood for a slow, savory brunch, a quick coffee pick-me-up, or a decadent evening indulgence, Sweet Paris delivers a delightful escape that feels like a stroll through the heart of Paris.
