Parents voice concerns Some worry about plan mixing younger kids with older ones

DIXON – When Danielle Reed learned of the possibility of her fourth-grader attending Reagan Middle School with junior high schoolers, she didn’t like it. “No. No way,� the mother of three said.

A proposal was made at Wednesday’s school board meeting to close Lincoln Elementary School, but no action was taken. More discussion is expected in the next 2

weeks.

Before board members vote, a public meeting is set for 6:30 p.m. Oct. 30 at Reagan Middle School for people to voice concerns and ask questions.

District administrators say something needs to be done to cut spending, before district funds are depleted after next school year.

The proposed closure would shuffle around students, transferring the district’s fourth- and fifth-graders at Jefferson Elementary School to the former Madison School portion of Reagan, and second- and third-graders at Lincoln to Jefferson.

Bringing the younger

students into Reagan was the No. 1 concern among parents picking up their children from Lincoln on Thursday. Lincoln houses the district’s secondand third-graders.

Parents, many of them hearing of the plan for the first time, worried about possible bullying and bad influences from having fourth- and fifthgraders attend with the older students at Reagan. “I don’t think my fourth-grader is mature enough to be with junior high schoolers,� Reed said. “There’s going to be way too many kids going there. I’d like there to be a little more separation between the older kids and the younger ones.�

One parent, in disbelief, said the closure would “never happen,� while others still are sour on the move from neighborhood schools to what are known as attendance centers, where all students in a certain grade go to one school.

Decline in enrollment expected Paula Portner, mother of a Lincoln student, said the district needs to stop moving students around. “I’m not happy,� she said. “I live three blocks away, and my student only comes here for 2 years? Now the people on this side of town won’t have a school, period.�

Some parents interviewed by Sauk Valley Media questioned if the schools would become overcrowded and whether busing students around town would become too costly.

Board member Jim Schielein was concerned Wednesday about the logistics of dropping off and picking up students at Reagan with the addition of about 400 students, noting the situation already is hectic for parents.

Moving prekindergarten and early childhood programs from Reagan to Washington Elementary School is expected to make enough room there for fourth- and fifthgraders, Superintendent Michael Juenger said at Wednesday’s meeting.

Projections show a 1 to 2 percent decrease in enrollment in the next 3 years, he said.

The building is equipped to handle 1,300

to 1,400 students, and the proposed move would bring attendance to 1,000 to 1,100, said Kevin Schultz, district building and grounds supervisor.

The fourth- and fifthgrade portion of the school would be selfcontained in one portion of the building and have its own gym, office, and principal.

Physical education and lunch periods would be separated, meaning the only interaction fourthand fifth-graders would have with the middle school students would be before and after school, Juenger said. “The administration feels we can fit our enrollment comfortably in four schools,� Juenger said. ‘I really worry about overcrowding’ The question of busing came up Wednesday, and the administration said it still is working on those plans. “I can’t tell you now if we’re going to save money or lose money,�

Juenger said. “What I will say is that it can be done, and we’re always looking at that and ways to reduce costs there.�

Some of the finer details, such as the procedure for dropping off and picking

up students, still need to be worked out, Juenger said.

Closing the elementary school and reconfiguring grade levels is expected to save a minimum of $316,000 annually. The district is uncertain what it will do with the building.

The proposal is in response to a projected $1.47 million deficit in the education fund for the 2013-14 school year, leaving a fund balance of $1.44 million in the district’s largest and most critical fund, responsible for teachers’ salaries and educational programs.

If the district does not reduce its expenses for the 2014-15 school year, the balance in its education fund would be depleted, meaning it would be forced to set up a budget-reduction plan with the state.

With that said, closing Lincoln will not balance next year’s budget, Juenger said. It is just one area the district is looking to cut expenses. “It’s really sad that it’s coming down to that,� said Jessica Mattson, who has two daughters in Washington. “I really worry about overcrowding.�

draft didn’t have some permit details finalized, including the fee, how long it is valid, how far in advance an application must be submitted, and the square footage allowed per display.

Nicholson said there were “very few� people objecting to the Nativity scene last year, but in accordance with the First Amendment, anyone should be allowed to apply for a permit for a display. “You can say, ‘You can’t put the Nativity scene up.

You can’t put the menorah up. You can’t put anything up,’� Nicholson said. “[We] didn’t want to do that.�

The resolution, which would take effect immediately if approved in November, will ensure that the parameters for a Nativity scene would be the same for any other display – religious or not – he said.

If he buys the building, he plans to divide it into two units, with the Jimmy

John’s in a 1,600-squarefoot space and another tenant in a smaller space, Arellano said.

The Rock Falls location could allow for some deliveries into Sterling, potentially to an area including CGH Medical Center and Sterling High School, Arellano told Sauk Valley Media in August.

IN BRIEF Biker arrested for going 140 mph PEKIN (AP) – A motorcyclist who authorities say was driving his bike at speeds that reached 140 mph told central Illinois police he was rushing because he needed to use the bathroom.

Adam Lester, 26, was arrested Tuesday night after a Pekin officer clocked him going more than 2 1/2 times the speed limit over a Tazewell County bridge.

The speed limit in the area is 55 mph. Lester was cited for reckless driving and faces misdemeanors for trying to elude police.

Hot dogs taste like heaven Eatery draws foodies from near and far

HICAGO – Doug Sohn has made an art of the traditional Chicagostyle hot dog, replete with mustard, onions, pickle relish, dill spear, tomatoes, celery salt, and sport peppers. (No ketchup!)

But if you stop your order there, you’ll miss much of the joy of eating at his Hot Doug’s restaurant on the city’s northwest side. Because what really draws the crowds – and foodies from afar – is Sohn’s menu filled with rare sausages curated to offer up spicy and sweet, ethnic and American, and all served for about $10 or less.

It’s what earns Hot Doug’s the title “The Sausage Superstore and Encased Meat Emporium.� Things like smoked and spicy alligator sausage with crayfish etoufee mayonnaise and smoked blue cheese drizzled with honey; or apple, pear, and port wine elk sausage with cherryapricot mustard, double cream brie and pate de campagne; or even red mole turkey sausage with chipotle Dijonnaise, queso asadero, and fried tortillas.

Sohn has a rotating stockpile of about 100 recipes he’s created and gets his meats from about dozen sausage makers. He says he knew he hit it big when the sausage companies start-

So there are two menus, the basic hot dogs, Polish sausages, bratwursts, and corn dogs. That menu doesn’t change, though the names of the dishes do. For example, a hot link is now known as an Anna Kendrick (previously Britney Spears, Jennifer Garner, or Keira Knightley).

The other menu lists the gourmet dogs, and it changes week-to-week, based on inventory, and has about a dozen dogs

on it. “There are new ones coming on and off the board all the time,� Sohn said recently.

He also serves fries made in rendered duck fat, but only on Fridays and Saturdays. Foie gras is on the menu, too. This got Sohn into some trouble a few years ago when Chicago banned the goose and duck liver delicacy. He was fined $250 when he refused to stop serving it. The city later

repealed the ban.

It’s no surprise that the line into Hot Doug’s can stretch along the side of Sohn’s brick Chicago two-flat before his 10:30 a.m. opening, and sometimes down the block. He’s got fans. His book, “Hot Doug’s: The Book,� features pages filled with people who have Hot Doug’s tattoos.

Inside, the walls are decorated with hot dogthemed pictures, posters, and memorabilia,

including “Critical Links: A History of Encased Meats.�

Sohn said his clientele include tourists, mostly on Saturdays, but also mothers and children, police officers, and construction workers. You

can tell it’s important that he not only be seen as a gourmet hot dog connoisseur. “We’re a classic Chicago hot dog stand,� he said. “To me, it’s really still this classic Chicago restaurant.�

hether you call it starved, famished, or ravenous, most of us know what it feels like to be really hungry. Your stomach is growling, you might feel a little dizzy or lightheaded, you have trouble concentrating, and may even experience a headache or stomachache.

You must eat to sustain life, and hunger is the way that your body naturally prompts you to seek food, but extreme hunger

can be disastrous for those of us who are trying to watch our weight.

How do you avoid reaching that state that has you reaching for whatever food is at hand?

Don’t skip meals This seems like a nobrainer, but skipping meals is one of the best ways to guarantee binging later. Breakfast is important, but so is lunch, and supper, and a snack or two if you need them. Eating regular meals keeps your metabolism humming along and keeps extreme hunger in check.

Have protein with each meal It takes your body longer to digest protein.

Include a little protein with each meal to keep you satisfied longer and help to control blood sugar spikes. Meat and beans are good sources.

For breakfast it might mean an egg, some Greek yogurt, peanut butter on your toast, or a handful of nuts in your oatmeal.

Fill up on fiber; limit sweets and refined carbs

Keep healthy snacks handy One of my mottos is “Never go anywhere without food.� Prepare for longer periods between meals by bringing a bag of nuts, some trail mix, or unsweetened cereal.

Stay hydrated Some people can mistake thirst for hunger and reach for something to eat when what they really need is fluids.

We need carbohydrates for energy, but the wrong kind can spike blood sugar. What

Preparation presented little problem for me unless you count the cloud of cooking spray I created in the kitchen while coating the bread.

That was more “butter�

than I’ve had near me in 6 months.

Making the sandwiches: 1. Heat a large, nonstick skillet over medium heat.

Coat pan with cooking spray. Break 1 egg into a small custard cup; carefully pour egg into pan.

Repeat procedure with remaining 3 eggs; cook 3 minutes. Turn eggs over; cook 1 minute.

Note: The custard cup didn’t help me control my eggs. The good news is when they’re in the bread, no one can tell.

2. Place 1 egg on each of 4 bread slices. Thinly slice and arrange 1/2 tomato over each egg; top each with 2 tablespoons cheese and a bread slice.

3. Coat both sides of sandwiches with cooking spray. Place sandwiches in pan; cook over medium-high heat 3 minutes on each side or until bread is toasted and cheese melts. Serve immediately.

The recipe adjusts easily to serving less or more than four.
