Coconut Mango Chicken Ingredients: (4 servings)
4 each, 18â€? aluminum foil squares 2 Tablespoons organic coconut oil 8 thin slices of Jicama 4 Tablespoons lime juice 4 boneless-skinless, organic chicken breasts (4 oz. each) 1 teaspoon red pepper flakes 16 slices peeled green (unripe) mango 4 Tablespoons chopped scallions 8 Tablespoons shredded organic coconut (unsweetened)
Preparation: 1. Preheat grill. 2. On work surface, arrange 4 foil squares. 3. Divide 4 chicken breast halves and place on top of each foil square. 4. Mix red pepper flakes, peeled green mango slices, lime juice, coconut shreds, scallions and coconut oil and spread evenly among the foil packets. 5. Fold foil over chicken and crimp packets tightly. 6. Grill 7-10 minutes or until chicken is cooked through.
Variation: ď‚ˇ This can also be cooked on the grill in a stainless steel grill skillet. If using a grill skillet, cover the chicken or close the grill top.
