Baja Rolls Ingredients: (1 serving)

1 organic flour tortilla (or use rice paper wrap for a gluten-free alternative) ½ avocado, mashed 10-12 fresh spinach leaves ¼ cup organic carrot, shredded 1-2 slices of organic, deli turkey breast, thinly sliced 1oz. raw cheddar cheese, shredded (optional – or for a dairy-free option use Daiya vegan cheese)

Spread mashed avocado over 2/3 of the tortilla or rice wrap. Place spinach leaves over the avocado. Place turkey slices over the spinach leaves. Place shredded carrot over the turkey slices. Sprinkle with cheese (optional). Roll up tightly and slice crosswise. Serve with fresh salsa or guacamole.
