Chinese Chicken Salad For Dressing: ¼ cup Sunflower Oil (organic, unrefined) or Usana Optomega Oil 3 TBSP Seasoned Rice Vinegar 2 TBSP Organic low sodium Tamari (wheat-free soy sauce) or Coconut Aminos (www.coconutsecret.com ) 1 TBSP Sesame Oil 1 tsp raw honey (or coconut/palm sugar) OPTIONAL ½ tsp dry mustard For Salad:  Use shredded lettuce (romaine works well)  Add some spinach leaves if desired  Shredded Organic Chicken (baked or boiled) 3 oz per salad  Sliced avocado (1/4 per salad)  Sliced raw almonds (optional)  Sunflower seeds

Variations: You can also substitute baked salmon pieces or other protein (tempeh, turkey, grass fed ground beef, black beans, etc.)
