A new addition to the Palé Hall Estate, where motoring heritage meets modern Welsh hospitality
Marking a new chapter for the Palé Hall Estate, The Bryntirion Inn has opened its doors at the gates of the five-star Palé Hall Hotel in Bala, North Wales.
Brought to life through a £1 million refurbishment by owners Anthony and Donna Cooper-Barney, the new gastropubwith-rooms reflects their ongoing vision to expand the estate’s presence and deliver something distinctly local for both guests and the community. With a warm welcome (Croeso!), The Bryntirion combines the character of a classic village pub with thoughtful dining to welcome locals, travellers, and road-trippers to linger, dine and explore.

Dating back to 1695, The Bryntirion has been thoughtfully restored, preserving its history as a village pub while reimagining it as a place to eat well, drink locally, and stay in comfort. Inside, the inn is divided between a relaxed dining room with 60 covers and a characterful bar area framed by original stone walls, exposed beams and cosy fireplaces. The bar remains a popular
spot for locals, while the dining space sets the tone for a warm, welcoming atmosphere and a menu shaped by seasonality and local provenance.
Adding a distinctively personal touch, Anthony Cooper-Barney has curated a remarkable display of classic car and motorsport memorabilia from his private collection throughout the inn, making The Bryntirion a must-visit for car enthusiasts exploring the breathtaking Welsh roads of Eryri.
Heading up the kitchen is Head Chef Tristan Fitt, whose pedigree includes Raymond Blanc’s Le Manoir aux Quat’Saisons, Lords of the Manor Hotel in the Cotswolds, Wheeler’s Oyster Bar in Whitstable and The Westbury, Mayfair.
Tristan works closely with local producers to create elevated pub classics, championing the finest Welsh ingredients. All vegetablesfrom the tenderstem broccoli to the Sunday roast trimmings - are supplied by local grower Keith Jones, at Ty Uchaf Farm, while
eggs come from Caepant Eggs, both just five minutes down the road in Llandderfel. All meat is sourced from respected Bala butcher TJ Roberts, including 28-day aged Welsh Black ribeye and local pork chops, which take pride of place on the grill. Tristan’s menus offer comforting, ingredientled dishes that reflect the landscape and larder of the region.
The à la carte menu highlights this seasonal approach and local provenance, featuring signature dishes crafted by Tristan such as:
- Delicate Chicken Liver Parfait with plum gel, infused with Asian notes of lemongrass and Umeboshi plums
- Comforting Chicken Pie with baby vegetables, garlic and herb-infused pomme purée, and rich tarragon sauce
- Desserts include a layered Opera-style Tiramisu with espresso ice cream and Tia Maria gel, alongside a nostalgic Bryn Strawberry Trifle with vanilla custard and sherry
Sunday Lunch at The Bryntirion is a standout occasion, with choices such as Crispy Pork Belly with pig in a blanket, apple and sage; Roasted sirloin of Welsh Beef with horseradish; and a handcrafted Nut Roast Pie, all served with cauliflower cheese, crisp roast potatoes, seasonal vegetables and Yorkshire puddings.
Those stopping for a more casual bar experience will find tempting plates including Black Pudding Sausage Roll with homemade brown sauce and Crispy Salt and Szechuan Pepper Squid with roasted garlic aioli. A Welsh cheeseboard is thoughtfully curated in collaboration with Harvey & Brockless, featuring Perl Wen organic Brie, Garwydd Caerphilly, Perl Las Blue and Golden Cenarth, served with homemade apple, pear, and saffron chutney.
The drinks selection champions Welsh craft drinks producers, supplied by Stori an independent bottle shop, tap room and distributor in Bala. Expect regional beers and ciders on draught, local spirits as the house pours, plus a considered low and no alcohol range. While the wine list, overseen by Palé Hall’s Head Sommelier Garry Clark, balances familiar favourites with lesserknown discoveries, including some Welsh wines, all chosen to complement Tristan’s menus.
The Bryntirion also welcomes guests to stay, offering six individually styled bedrooms, each named after a Welsh mountain and displaying striking landscape photography of its namesake in each room. Designed for comfort and character, all rooms are equipped with a flat-screen TV, tea, and
coffee-making facilities, and luxurious Penhaligon’s toiletries. Rooms are priced from £140 per night, including breakfast, served as a generous continental-style hamper delivered to the room each morning. Family-friendly options include a dedicated children’s menu and a spacious family bedroom. Dogs are warmly welcomed in the restaurant and bar areas, as well as in the bedrooms, making the inn a relaxed and inviting retreat for couples, families, and four-legged companions alike.
Speaking about the launch, Anthony Cooper-Barney said: “We are thrilled to introduce The Bryntirion Inn as the latest part of the Palé Hall Estate. This project is especially close to my heart – it has given me the perfect place to share my classic car collection, while creating a true village pub where locals can feel at home. With Tristan leading the kitchen, we are proud to offer a food and drink experience rooted in local produce and quality. The Bryntirion is about genuine hospitality, great food, and celebrating everything that makes this part of Wales so special.”
Prominently positioned on the edge of Eryri National Park, The Bryntirion offers a relaxed base for walking, hiking, climbing and cycling, as well as fishing and water sports on Bala Lake. The private car park to the rear, along with outside seating, makes it a perfect pitstop for classic car owners, supercar drivers, and those embarking on motoring holidays across North Wales. Baristas, roasters, chefs and coffee shop operators will come together for four days in May to celebrate and showcase the capital’s vibrant and diverse coffee culture
From Thursday 15 to Sunday 18 May, East London’s Truman Brewery will be filled with the aromas, tastes, sights and sounds that make The London Coffee Festival a mustattend event for the hospitality industry. This year’s festival will feature more than 260 artisan coffee and gourmet food brands, demonstrations from world-class baristas, interactive workshops, competitions, street food, coffee-based cocktails, music and exhibitions.
Thursday and Friday are dedicated industry days and will have a focus on the trends, opportunities and challenges faced by operators and suppliers in the hospitality trade. Free entry is available on these days to those working in the trade, excluding suppliers and distributors.

A key element of the festival is The Lab, where professionals and enthusiasts can learn from, and be inspired by presentations, debates and workshops. Here are just a few tasters from the packed timetable:

This is a 45-minute journey through the world of coffee, featuring hands-on sessions that are perfect for anyone interested in exploring the rich flavours and artistry of the drink.
Masterclasses and interactive sessions will also feature in the Latte Art Live zone, where visitors will be able to learn from leading coffee creatives. This zone is sponsored by plant-based milk alternatives supplier Sproud, barista equipment specialists WPM, under-counter espresso machine supplier Modbar, matcha tea brand OMGTea and ceramics brand Loveramics.
Visitors can also gain invaluable insight
from exhibitors on the trends shaping the industry. For example, the continued growth of matcha will be reflected by exhibitors including Blendsmiths, Matcha and Beyond, GoMatcha, MoyaMatcha, Koyu Matcha and OMGTea.
Sustainability becomes more important to the industry every year and, for the first time ever, all single-use cups at the festival must be fully compostable. Packaging supplier Decent is providing compostable single-use Decent x LCF branded PLA Hot Cups for exhibitors and consumers. The supplier has also teamed up with reusable cup brand Huskee, which will enable visitors to borrow a cup for use on the second floor of the festival and return it to a Huskee ‘Borrow Bin’.
A key reason for visiting The London Coffee Festival is to taste some of the best drink and food that the capital, and places much further afield, have to offer.
Sponsored by coffee machine supplier La Marzocco, the Roasters Village will bring together many of the best roasters in Europe to serve their unique coffees.
The True Artisan Café is a pop-up rotating coffee shop that has been created by La Marzocco to give independent operators the opportunity to showcase their brands and engage and educate the general public on their work and skills.
Visitors can explore Chinese coffees as Lujiazui Coffee Festival, China’s largest outdoor coffee event, is showcasing Chinese brands under the theme Meet China. Premium coffee beans and advanced coffee machines will give visitors a taste of China’s distinctive coffee culture.
The Hyde Park Bar is the perfect place to relax and sip expertly crafted coffee cocktails while enjoying curated DJ sets from artists such as Arveene. With so much to see and do, festival attendees are bound to build up an appetite, and The London Coffee Festival Food Court brings together a host of exciting food concepts. These include ‘king of sandwiches’ Doms Subs, savoury and sweet waffles specialist Utter Waffle and Lebanese street food from BeyRoots.
Visitors can also indulge in delicious Swedish cakes and pastries from Fika Bakery, and exceptional coffee from the Kaffe Bar, which are brought to the festival by Swedish roastery Löfbergs.
For a lighter option, visitors could opt for an affogato made with barista blends from Califia Farms, the festival’s official plantbased milk sponsor. Califia Farms will also
be offering tastes of its brand-new flavours before they hit the shelves.
Competitions are a big part of the festival, and this year is no exception. The fast-paced Coffee Masters knockout competition will take place across the four days, with 16 baristas showcasing their skills head-to-head across seven disciplines.
New for 2025 are The London Coffee Festival Awards - a celebration of the vibrant and thriving specialty coffee scene and the people that work in it. Through a combination of an independent, expert judging panel and consumer and trade voting, the awards recognise and reward the best coffee shops and influencers in categories including Best Community Coffee Shop, Best Sustainable Coffee Shop and Influencer of the Year.
Held in the Latte Art Live zone, the LCF x WPM Latte Art Throwdown will put baristas through their creative paces across a series of heats leading to a final on Friday that will determine the 2025 LCF Latte Art Champion.
And, on the subject of art, the 2025 festival’s Artist in Residence, professional illustrator Mandy Johnson, will be selling her incredible artwork (with a coffee twist) at the festival.

This is a significant move for the business as it takes on its first-ever sake brand and further strengthens its Japanese drinks offering.
Founded in 2016 by husband-and-wife duo Tom and Lucy Wilson, KANPAI London Craft Sake Brewery holds the distinction of being the UK’s first-ever sake brewery making them a pioneer of British sake.
Inspired by their experiences initially in Kyoto, and across Japan, Tom and Lucy began home-brewing sake before formalising their skills at the Gekkeikan brewery school in Japan. Their commitment led to the creation of a microbrewery in Peckham, London, where they produced award-winning, artisanal and modern sakes using traditional Japanese brewing techniques. In 2023, the brewery relocated to Bermondsey to increase production and introduce an enhanced visitors’ experience.
KANPAI – meaning “cheers” in Japanese – handcrafts each expression using low interventionist brewing methods, allowing the natural characteristics of each ingredient to stand out.
Five expressions will join the distributors’ portfolio:
