YTL Hotels’ The Gainsborough Bath Spa launches new Malaysian Fusion menu, paying homage to its asian roots

Luxury five-star city sanctuary in the heart of Bath, The Gainsborough Bath Spa by YTL Hotels is a modern icon of luxury wellness, combining the rich history of the thermal waters in Bath with the YTL brand’s Malaysian heritage to offer a unique wellness experience in its Spa Village.

Now, The Gainsborough Bath Spa is paying homage to the brand’s heritage through its food, with the launch of a new ‘Far East Meets West’ dinner menu.

Including irresistible dishes from the brand’s sister restaurants both in Malaysia and Japan, this delectable new menu is not to be missed for both locals and overnight guests alike and is available to book in the elegant Gainsborough Brasserie.

Aiming to showcase the best of Bath’s local produce whilst fusing both modern and diverse cooking techniques from Malaysia, the new fusion menu uses common Malay ingredients such as chilli, citrus fruits and saffron.

Gourmands will be transported to the Far East when savouring these heartwarming age-old recipes where each ingredient is the freshest of the season.

Starters include the signature dish, the Dancing Prawns coated in a secret housemade citrusy aioli emulsion as well as the Char-grilled Satay skewers, cooked fresh over a coal fire and coated in a spicy chunky peanut sauce.

For mains, why not tuck into the Roti Cani with Lentil Curry, a light and fluffy grilled flatbread served with a spiced lentil curry or the Free-range Chicken Rendang, a fragrant turmeric and chilli coconut dish.

To complete the hotel’s perfect fusion of Malaysian and European cuisine, the hotel will also be offering a menu of speciality pastas such as a Miso Lobster Linguine, a spicy miso-marinated dish or the Yukibana Creamy Sashimi Pasta.

Alongside this, The Gainsborough Brasserie menu will also feature European favourites such as a Classic Caesar Salad or Cream of Wild Mushroom for starters, traditional English Market Fish and Potatoes or a Charred Beef Short Rib for mains as well as Pappardelle Angus Ragu as part of the speciality pasta dishes.

Diners can also make a night of it and book a stay at one of The Gainsborough Bath Spa’s sumptuous suites, boasting a period design and contemporary features, or

enjoy sampling the exotic menu paired with experiencing the treasured mineral waters of the hotel’s Spa Village as part of a revitalising spa break.

New GM at DoubleTree by Hilton Bristol City Centre

Adam Flint has been named the new General Manager of the DoubleTree by Hilton Bristol City Centre, bringing more than 20 years’ experience to the business.

It’s his first position with Focus Hotels Management Ltd, which has operated the hotel for more than a decade, and he said it’s a very exciting time to join the Focus family. He said: “Focus Hotels is a small-tomedium-size business with big ambition and is currently investing in the infrastructure for growth. It’s a very good time to be joining Focus.”

Despite coming from a family which has spent five generations in dentistry, Adam was bitten by the hospitality bug early and has never wanted to do anything else. He came through Marriott’s fast-track management graduate programme and has worked at that group’s hotels in Regents Park, Heathrow, Swindon, Leicester and Birmingham.

He has also worked for EQ Hotels and Hilton and then the Doyle Collection, a private Irish business.He won a prestigious Acorn Award in 2003, which annually recognise the 30 brightest under-30-year-old prospects in the hospitality industry, which he said was a “big moment” in his career.

While his brother and cousin have kept the family dentistry tradition going, Adam said it was the variety of roles and experiences that drew him to hospitality.“I enjoy having to be a ‘jack of all trades’, getting involved in everything from accounting to sales, marketing to food, the hospitality industry has enabled me to dip my hand into so many different areas as well as to move all around the country.”

It has now brought him to the DoubleTree by Hilton Bristol City Centre, which earlier this year celebrated its 50th anniversary, and which was the city’s largest hotel when it first opened.

Adam said: “We are looking to build upon our strong ESG credentials and do everything we can to make this hotel the preferred place to stay in Bristol. We’re in an excellent location, with Temple Meads rail station on our doorstep and the historic harbourside just a ten-minute walk away.”

Smiths Of Smithfield welcomes Head Chef, Tim Dela Cruz, to its Restaurant

Farringdon favourite, Smiths of Smithfield, welcomes new Head Chef, Tim Dela Cruz, to the stoves at the Young’s city pub.

With a wealth of experience working in an array of London restaurants, Cruz brings an elevated menu to Smiths second-floor restaurant, with a focus on sustainable, British produce, blended with flavours of his heritage.

Specialising in wood-fire cooking, Tim first discovered his love of cooking from an early age whilst watching his mum and aunt operating a hole-in-the-wall restaurant in his hometown in Manila. Honing his craft in kitchens across London, including Caravan and Bonnie Gull, led Tim to the position of Sous Chef at Jason Atherton’s The Social Company, before taking the role of Head Chef to open the Pig & Palm in Cebu, Philippines. Most recently, Tim held the position of Head Chef at Anatolian restaurant, Skewd Kitchen, in Cockfosters.

Bringing his creative flair to the upstairs restaurant, menus will focus on elevating the best of seasonal, British ingredients, blended with classic French cooking techniques and a splash of flavours inspired by his heritage. Hospitality expert predicts key bar and restaurant trends for 2024

The world of food and drink is constantly evolving, with new trends emerging every month.

In this year alone we’ve seen a whole spectrum of new crazes, from the TikTok famous “girl dinner” trend to hot and spicy cocktails. We’ve also seen a variety of longer-term trends continue to rise in popularity, such as plant-based dishes and alcohol-free beverages.

Any restauranteur or bar owner understands the importance of keeping up to date with the latest industry trends. Not only can they help your business appeal to a large customer base, but they also allow your chefs or bartenders the opportunity to try something new and get more creative in their roles.

To help you get ahead of the curve for the year that lies ahead, bar and catering equipment supplier Mitchell & Cooper are here to share five food and drink trends they predict to take 2024 by storm.

1. Health-conscious diners

Over recent years we’ve seen more and more diners searching for healthier dining experiences, with many consumers becoming increasingly health conscious since the pandemic. This trend is set to stay prevalent in 2024, as we continue to find new ways to take care of our health.

One particular diet which looks set to rise in popularity next year is the anti-inflammatory diet. This type of diet can reduce the amount of inflammation in the body and, as anti-inflammatory foods tend to be rich in vitamins and minerals, can come with a number of other health benefits too. This diet has already gained some traction, with #antiinflammatorydiet on TikTok already having 182.1 million views and counting.

Whole Foods Market has made a similar prediction, claiming that anti-inflammatory ingredients like buckwheat and cacao are going to be prominent in 2024. With the

new year’s health kick just around the corner, now is the perfect time for food and drink establishments to find a way to incorporate this trend into their 2024 menus, whether this is in the form of an anti-inflammatory soup, salad, or smoothie.

2. Caribbean cuisine

When it comes to the key cuisines of 2024, we expect Caribbean to be the one to watch. One survey has found that while 22% of consumers already eat the cuisine, double this amount (44%) haven’t tried it yet, but are interested in doing so. On top of this, the first ever UK Caribbean Food Awards was launched in 2023, showing us that the love of this cuisine is expected to grow even further over the coming years. Outside of the major cities, Caribbean dishes can be hard to come by in the UK, so it’s no surprise that people are interested in trying something new in the new year.

Caribbean food is all about bold flavours and takes inspiration from cuisines across the globe, from North, South, and Central America to Europe and West Africa. Common ingredients include rice, beans, peas, peppers, plantain, and a whole array of herbs and spices, including thyme, ginger, and allspice. There are plenty of fantastic drink pairings for Caribbean dishes as well, including a variety of flavourful rum-based cocktails, such as a piña colada or a dark ‘n’ stormy.

3. Turmeric-based dishes

One ingredient we believe is set to be all the rage in 2024 is turmeric. Google trends data shows that searches for this colourful spice are on the rise, and as the ingredient is an anti-inflammatory, we may see an increase in turmeric consumption based on its purported health benefits. We can see the popularity of this spice increasing across the globe Restaurants

too, with turmeric sales worldwide expected to increase by 5.5% by 2033 (Future Market Insights).

The great thing about this emerging trend is that it can be used in both food and drink. As well as being a prominent ingredient in many curries and soups, it can also be used in drinks in the form of turmeric lattes (otherwise known as “golden milk”), teas, and smoothies. The spice can even be used to add an earthy flavour and deep orange hue to a range of sweet dishes too.

4. “Little treats”

Anyone who has scrolled through TikTok will likely have heard the phrase “little treat” before. In fact, the tag already has 63.7 million views on the social media platform. This Gen Z trend is all about treating yourself little and often and is becoming an increasingly popular way to spend for young adults.

This is an already popular trend, but we predict it could become even more prominent in 2024 as the continuing cost of living crisis may encourage consumers to opt for these small and inexpensive everyday treats rather than larger purchases. We predict this trend to become a more popular way of dining in

the coming year too. This may be in the form of diners treating themselves to starters, side dishes, or desserts, rather than a full threecourse meal.

This is a great opportunity for tapas-style restaurants to take advantage of, perhaps by offering more deals based on smaller plates.

5. Orange wine

Rosé soared in popularity in the 2010s, and now orange wine looks set to replicate this success in the mid-2020s. Orange wine, also known as amber wine, traces its roots back to ancient winemaking methods. The wine is made with white grapes with their skins still intact, imparting a rich amber hue to the final product. While orange wine has been around for centuries, it is starting to sharply rise in popularity and looks set to become even more popular in the coming years, with the global market predicted to increase from $40 million in 2022 to $67 million in 2032 (Fact.MR).

If you’re looking to attract a new group of diners or drinkers, serving orange wine could be a great way to do this. This is especially the case if you’re looking to broaden your appeal to the Gen Z and Millennial

demographic, as consumer research has found that drinkers under the age of 40 are looking to try different styles of wine (The Drinks Business).

Pan-Asian Restaurant UBA to launch in Shoreditch this April

The team behind Soho’s Sucre and the recently opened CLAP London, is bringing a new Pan-Asian dining concept to Shoreditch with the opening of UBA on 2nd April.

The 275 sqm space is located on Great Eastern Street and forms part of the Hart Shoreditch Hotel. It features a 105-cover restaurant plus a private dining room seating 12.

Interiors by architecture and interior studio, Verhaal, take inspiration from the culture and mythology of Asia with a palette featuring the traditionally auspicious colours of red and gold.

A statement marble bar, offering counter dining for up to 14, takes centre stage. Furniture includes red velvet banquettes and lava stone tabletops with antique mirrors, decorative lighting, illustrative artwork and Asian ceramics completing the vibrant picture.

Behind the menu is Executive Chef, Paul Greening (Aqua Restaurant Group, Novikov, Harrods, Australasia) who has taken inspiration from his extensive travels across Asia.

Signature dishes will include Spicy salmon tartare with Japanese herbs, salmon roe and Nori rice crackers served on an ice plate; Thai-inspired Wok-fried Monkfish with kaffir lime, sweet chilli and oyster glaze; and an Angus beef gyoza with onion ponzu, tomato miso and a charcoal veil.

The restaurant will open daily for lunch and dinner with the bar serving a selection of perfectly paired cocktails, wines and spirits inspired by the team’s personal travels through Asia.

The drinks list will offer a selection of muchloved favourites with a twist, as well as some exceptional signatures unique to UBA.

Not just about the food and drink, UBA will offer an up-tempo vibe through a carefully curated soundtrack that changes as day turns to night along with regular DJ sets.

Lolly kicks off 2024 with three ISO accreditations

Software house leads the way in quality assurance, information security and environmental management

Lolly, the hospitality software house, is proud to announce that the company has recently achieved three prominent International Organisation for Standardisation (ISO) certifications with the British Assessment Bureau.

The first ISO9001 Quality Assurance certification is a set of five management system standards that help organisations ensure they meet customer and other stakeholder needs relating to products or services. Meeting this standard confirms that Lolly will continue to improve its processes.

The second Information Security ISO27001 Management certification details the requirements for businesses to securely manage information assets and data to an internationally recognised standard.

It demonstrates that Lolly provides a robust approach for managing customer and employee details, intellectual property, financial information and third-party data.

ISO14001 is the internationally recognisedstandard for environmental management

systems, providing a framework for companies to design and implement an EMS and continually improve their environmental performance.

30 Euston Square announces successful Year

30 Euston Square, the award-winning conference, meetings, and events venue, announces it is up 17.3% in revenue after an exceptional year in event bookings across the venue.

Since the start of 2023, 30 Euston Square has hosted 1,056 events with 43,000 guests, seeing a booking increase of 13% in comparison to last year. The venue attributes its success to the pent-up demand for events, with an increase in large conferences and events being booked by international companies looking to expand their market in the UK and Europe.

The Ashford Arms reopens for first time since the Pandemic after a spectacular £1.6 Million refurb

The Ashford Arms, an iconic 17th century country pub in Ashford-in-theWater, near Bakewell, has reopened after a substantial £1.6 million refurbishment. Bakewell Mayor and local hero, Alyson Hill, cut the ribbon on 8 March with the pub opening to the public the following day.

The historic pub had been an integral part of the local community for 400 years but the pandemic forced the doors to close in 2020. Rob Hattersley, owner of independent hospitality business, Longbow Bars & Restaurants, took on the lease in 2023 and has brought it back to life.

The ground floor, nine hotel bedrooms, gardens and kitchen have been completely transformed. They reflect the style that the Longbow pubs and hotels have become renowned for – cosy yet sophisticated, with a nod towards the building’s extensive local heritage.

“When The Ashford Arms became available, we leapt at the chance,” shared Rob. “It is right at the gateway of the village, and has been popular amongst locals and visitors alike for hundreds of years. We couldn’t let that slip away. It is wonderful to see it warm and full of people again. We have been packed to the rafters every day and night since we opened, and have had some fantastic feedback. People from the area are pleased that The Ashford Arms has been rescued and turned into something that we can all be proud of. Those from further afield have said that they are excited to have another high-quality dine and sleep option for exploring the Peak District.”

The menu has been carefully designed by executive chef, Adrian Gagea, who was trained by Raymond Blanc. Multi-awardwinning chef, Chris Parker, has stepped into the role of head chef.

The premium pub menu features pub classics with a modern twist alongside dishes inspired by the team’s travels and world flavours. Menus will change according to the season, and what is being grown nearby, with ingredients supplied by local farms, heritage brewers and artisan producers.

Amongst other desserts, the menu also features a homemade Bakewell tart, which supports two local charities. For each Bakewell tart sold, The Ashford Arms donates £1 to Blythe House Hospicecare and Helen’s Trust Charity.

“Our food is fuss-free and simple – you won’t find any foams or gels here – but it is done extremely well, every time,” explains Adrian. “We are also uncompromising when it comes to using the best, fresh, local produce. We’re proud of our roots in the

Peak District, and we’re passionate about playing our part in the local economy. It shines through in the taste and quality of our dishes.”

Rob founded Longbow Bars & Restaurants shortly before the pandemic hit, selling his house to fund his first venue, The Maynard in Hope Valley. He had a rocky start, which saw him on the brink of bankruptcy, due to the nationwide lockdowns, but he has quickly established himself as a rising star in the Peak District hotel, pub and restaurant industry.

The Ashford Arms will join The Maynard, which has won numerous awards as a wedding venue, restaurant, and hotel, and The George, an award-winning historic bar, restaurant and hotel in Hathersage, which was once frequented by Charlotte Brontë.

DesignLSM Announces Retirement of Co-founder Simon McCarthy

DesignLSM, the multi-disciplined strategic design agency, announces the retirement of co-founder Simon McCarthy, who alongside Steve La Bouchardiere, established the company in 1988.

McCarthy’s departure marks the end of an era for DesignLSM, while also signaling an exciting new chapter ahead with Holly Hallam, Managing Director, and Rachel Pratt, Studio Director, consolidating their leadership roles and joint ownership of the company.

Simon McCarthy and Steve La Bouchardiere founded DesignLSM over three decades ago, driven by their shared passion for hospitality, creating aesthetically pleasing spaces that were renowned for being commercially successful.

The company’s name, DesignLSM, is derived from their initials, symbolising their collaborative spirit and vision. Throughout their 36-year tenure, Simon, Steve and the wider team have garnered numerous international accolades for their outstanding work, establishing DesignLSM as a leader in the industry.

From one of their first projects with Rolling Stones’ Bill Wyman delivering the Sticky Fingers restaurant, to landmark endeavors including the master planning of the 97,000 sq ft food market at The Well in Toronto and the delivery of 150 Carluccio’s restaurants both in the UK and internationally, their legacy of excellence is undeniable.

Tragically, the passing of Steve in February 2023 marked a poignant moment for DesignLSM. His infectious enthusiasm and kindness left an indelible mark on the hospitality industry, and his absence is

deeply felt by all who knew him. Simon’s contributions to DesignLSM extend far beyond his experience of delivering remarkable design projects. His energy, drive, and commitment has shaped the careers of countless designers. As a mentor, Simon’s guidance and wealth of knowledge has inspired his colleagues to reach new heights in their profession.

Looking towards the future, Holly Hallam and Rachel Pratt, who have been integral members of the DesignLSM team for years, are poised to lead the company into its next phase of growth. Both Holly and Rachel have demonstrated exceptional leadership qualities, and their on-going joint ownership of DesignLSM underscores their dedication to honoring the legacy of Simon and Steve. Under the stewardship of Holly and Rachel, DesignLSM is set to continue building upon its reputation of excellence, with a focus on expanding its global footprint.

Exciting projects on the horizon include the development of numerous luxury hotels in Central London and Europe. Additionally, the company is continuing to make its mark in the Middle East with a collection of resort hotels and restaurant projects underway, as well as continuing successful relationships with F&B brands such as Gaucho, The Alchemist and North Audley Cantine.

Rachel and myself, but also as an invaluable business partner for the last three years. We both are extremely grateful to have had him by our side to navigate through the COVID period and to then move on to celebrate our strengths and successes; ensuring a smooth transition in ownership, equipping us to forge forward, continuing the legacy of DesignLSM – creating our new chapter. Simon will continue to offer his support with all our future endeavors. We are fortunate that he is not just our business partner, but also someone we greatly respect and admire who will remain our friend in his retirement. Accor Accelerates Growth for its Premium, Midscale and Economy Brands across Europe

A strong line-up of hotel openings and brand launches expected FROM THE GROUP in the first part of 2024.

Accor, a world-leading hospitality group, continues to expand its portfolio of premium, midscale and economy brands across Europe with an array of new hotel additions and a strong line-up of openings slated for the first part of 2024.

At a Premium, Midscale & Economy (PM&E) divisional level, the growth plan builds on Accor’s strong foothold in the region, which includes approximately 3,000 PM&E hotels in more than 40 countries.

In the first several months of 2024, Accor has already welcomed a host of new properties such as TRIBE Milano Malpensa, the first entry of the design-led brand to Italy and Mercure Tirana, the brand’s first property in Albania, while continuing to expand the ibis family of brands with new economy hotels in France, the UK and Romania. Across the Group’s premium network, Swissôtel has recently launched in Montenegro and Georgia.

The growth trajectory for Accor’s Premium, Midscale and Economy division is set to continue with additional openings expected in the first part of 2024, across several brands and destinations in the region. Accor introduced a new divisional structure

in 2023 including a dedicated Premium, Midscale and Economy division, to help bring more focused expertise, accelerate growth, further improve performance, and deliver the highest possible levels of service for owners and guests.

Its growth plan centres on cementing its leading position in key countries, expanding in leisure and Mediterranean destinations, as well as elevating its premium footprint.

The Group has robust development plans for its premium hotel portfolio, with the expected opening of Mövenpick Resort & Spa Karpacz and Mövenpick Wrocław, both marking the launch of the brand in Poland, and the debut of the Pullman brand in Montenegro and Hungary, in addition to a new Swissôtel property in Romania.

In the New East, Accor is continuing to expand in sough-after destinations in Georgia, with the upcoming opening of Novotel Tbilisi Center and ibis Styles Batumi,

as well as the addition of Mövenpick Winter Park Baku in Azerbaijan. Philippe Bijaoui, Chief Development Officer Europe & North Africa for Accor’s Premium, Midscale and Economy, added: “The growth of our Premium, Midscale and Economy portfolio is testament to the recognition and trust consistently shown by our guests and hotel partners in the region.

In the first few months of 2024, Accor completed several new development signings, including the launch of its first Pullman hotel in Hungary with a flagship property in Budapest, as well as the launch of the Handwritten Collection brand in Bucharest.

Some of the upcoming premium, midscale and economy openings that are expected in the first half of 2024 include:

Maison Hamelin Hotel –Handwritten Collection (France):

The first hotel under the Handwritten Collection brand to open in Paris will be located in the chic 16th arrondissement of the capital, between the world-renowned Champs-Elysées and the Galliera Museum. The hotel is set to welcome its first guests in

early June and will showcase French savoirfaire through its cozy 65 rooms, a lively bar and a spa.

Mercure Roma Cinecittà (Italy):

Designed with an industrial style themed around cinematography, the hotel is slated to open in June 2024 and will offer 126 rooms, a lounge bar, a restaurant, a fitness room and four meeting rooms.

It will be located only 300 metres away from the Cinecittà Studios with convenient transport links into Rome’s city centre and its popular attractions and monuments.

Mövenpick Wroclaw (Poland):

Housed in a 100-year-old building in the heart of Wroclaw, the hotel will offer 179 comfortable rooms, a large restaurant and a sky bar in thoroughly designed interiors blending modern and elegant features.

It will boast a modern and functional conference space and is expected to open over the summer.

Novotel Tbilisi Center (Georgia):

Located in Avlabari, a historic district in Tbilisi’s old town, the 176-room new build is slated to open in Spring 2024 and will feature modern design, a rooftop pool and bar, amongst other amenities, as well as a versatile conference centre for up to 600 guests.

ibis Styles Batumi (Georgia):

Marking Accor’s first opening on the Black Sea coast, the hotel is slated to open in Summer 2024 and will feature various sportthemed elements, comfortable guestrooms with the brand’s signature Sweet Bed™ by ibis, as well as event and entertainment space with special attention to family with kids.

Swissôtel Poiana Brasov (Romania):

Located in the Transylvania region of Romania, it will feature 64 well-appointed rooms and will be the perfect getaway for skiers, hikers and bikers who will be able to walk to the nearby slopes.

After a day spent in nature, guests will be able to indulge in the relaxing spa or the on-site restaurant. The hotel is expected to open in May 2024 and will offer conference and event facilities for business travellers.

TRIBE Manchester Airport (UK):

The second TRIBE property in the UK is set to open in Spring 2024.Located within walking distance of the terminals at one of the UK’s most popular airports, the nine-storey, 12,300m2 hotel will feature 412 rooms and suites, a restaurant and bar, a fitness centre, and even a crew lounge for airline staff.

greet Brussels Airport Zaventem (Belgium):

The first greet hotel to arrive in Benelux, it will be located at one of Belgium’s busiest airports. Expected to open in Spring 2024, the new hotel will provide 68 comfortable rooms and will be situated just moments from the terminal with equally good connections into Brussels’ city centre.

Novotel Hamburg Central Station (Germany):

Set to open in late March 2024, the hotel will feature 227 beautifully designed rooms and suites, a Nordic inspired restaurant concept, a bar and lounge, a fitness centre as well as meeting and event spaces, with a prime location next to the city’s main railway station and the shopping district Mönckebergstrasse.

TRIBE Riga City Centre (Latvia):

Opening in April 2024, the hotel will be the first TRIBE property in the Baltic States and will be located in the Art Nouveau district of Riga city centre. It will offer 81 rooms, a bar and restaurant, a fitness area, steam sauna and jacuzzi, as well as conference facilities.

ibis Styles Reykjavik (Iceland):

Located in the capital of Iceland with excellent connection to the city centre and the international airport, the new hotel will feature 57 rooms and will open in May, following an extensive renovation project as part of the conversion. Beyond the premium, midscale and economy segments, Accor’s

Luxury & Lifestyle division is also preparing for an exciting period of growth in 2024.

3. Add Talisker whisky and ice cubes, stir well until chilled

4. Double strain into a rock glass, filled with fresh ice cubes

5. Garnish with orange, rosemary, and coconut flake, add a few drops of whisky and torch it to give a touch of smoke

Great Plains’ Zarafa Camp, Botswana:

Botswana’s first Relais & Chateaux property, Great Plains Zarafa Camp is an exquisite camp located on the private 130,000-hectare Selinda Reserve. Great Plains Zarafa Camp’s Front of House Supervisor, Bee, is delighted to share the secret recipe for his famous Zarafa Sunset cocktail, the perfect pick for those who like their whiskey on the wild side. Originally crafted for guests of the Zarafa Dhow Suite, a 2-bedroom villa separate to the main camp where guests enjoy complete privacy and their own dedicated team, the cocktail was inspired by the colours of the sun setting over the Zibadianja lagoon, along with the dark wooden interiors of the camp itself. • 1 tot of red wine

2. Pour your whiskey and fresh orange juice over ice

3. Top with red wine

4. Add garnish of orange peel and a mint sprig

Uga Residence, Colombo, Sri Lanka:

Nestled between leafy Park Street and the lakeside temple of Gangarama, Uga Residence is a unique boutique hotel in the heart of Sri Lanka’s business capital city of Colombo.

Ingredients:

• 60ml Maker’s Mark bourbon

• 2 drops bitter chocolate

• 2 drops Peychaud’s bitter

• 1 bar spoon lemon juice

• 1 bar spoon maple syrup

Method:

1. Mix all the ingredients and pour into a flask

2. Using a smoke gun, infuse the drink with the aroma of applewood

3. Serve the drink with apple and chocolate flakes to balance the flavours

4. Theatrically pour the drink at the tableside while the smoke billows all around

Ever enjoyed a whiskey after a barbecue? Worldwide recall is a memory-in-a-glass designed to bring you back to that very moment.

• 30ml bacon-infused Four Roses whiskey

• 15ml Montelobos mezcal

• 15ml Tio Pepe sherry fino

Method:

1. In a saucepan, heat the whiskey without bringing it to the boil. Pour in the bacon fat and let it melt

2. Once melted, let it cool in a jug to room temperature

3. Once cooled, let it rest for 8 hours in a freezer, so that the whiskey takes on the flavor of the bacon and the melted fat recomposes on the surface

4. After the necessary time, filter the mixture with a bag and a cloth napkin (double filtering)

5. Combine the bacon-infused whiskey with all other ingredients into a mixing glass, stir and pour into an old fashioned glass, before serving with a giant ice cube, fresh smoke and a slice of bacon.
