Supplier Relationships One of my main responsibilities at RED is managing the relationship between our vendor partners, foodservice and equipment supplies manufacturers and our affiliates, restaurant equipment dealers. At RED, we have approximately 75 vendor partners representing over 100 brands that are distributed through our 32 dealers. The manufacturers rely on the RED dealers to effectively inventory, promote, and market their products to foodservice operators throughout Canada. The relationship between manufacturer and dealer is continually being tested by demanding market conditions. The same can be said with the relationship between the dealer and the restaurant operator. It is essential that each party in the supply chain – manufacturer, dealer, and operator clearly understand the role and benefit each has within the channel. Let’s take a close look at the investments and services provided by the RED dealer. • Showrooms and test kitchens that allow operators to view and test products • Qualified and trained personnel that provide extensive product knowledge on equipment and supplies • Commercial kitchen design and consulting services • Inventory availability that allows operators to obtain product in a timely and economical fashion • Delivery and installation • Credit on select purchases Manufacturers understand that these services are necessary in order to allow the seamless and cost effective sale of their products to the operator. Operators need to be aware that these services are available through RED dealers and that final selling prices reflect the costs associated with these services. Traditionally, the supplier / vendor relationship has been characterized as adversarial considering that “winning” essentially implies that there is a “losing” party. AT RED, we value our vendor partners and we embrace a “win – win” approach with honest and open dialogue. Please take the time to read the article “Seven ways to enhance your business and leverage your supplier relationships” by Neil Lester. I believe it will provide some valuable insight into strategies that you can explore to improve supplier relationships, create additional value for your business, and build a stronger lasting partnership with your suppliers.

Four refreshing tips for marketing to modern beer drinkers By Roger Mittag

Cold, refreshing, thirst-quenching and sociability have, for quite some time, been the catch phrases used in the marketing of beer. Throughout much of the 20th century, beer has been seen to be the blue-collar drink of the masses, but this antiquated image is quickly dissipating. Beer is now being given its rightful place at the dinner table, and the complexity and variety of beer is becoming a desired attribute. In the past, brewers were able to lure the consumer to specific brands by creating an emotional attachment by showcasing people enjoying beer at parties or at social events. Beer drinkers were loyal to a fault to certain beers throughout their entire life, and marketing and advertising campaigns centered on solidifying the bond between consumer and brewer.

We are now entering a vastly different world of marketing – one that centers on local, fresh, quality and new beer styles. New generations of beer drinkers are departing from the old loyalty concepts and are quickly driving toward beer experiences which include trying a variety of different beers. The sociability aspect of beer is taking on new meanings – it’s no longer about volume

but rather the beer drinker is searching for novel ways of sharing stories over a beer. BEER AND THE RESTAURATEUR These new-age beer drinkers are actively looking for places to enjoy beer. Marketing for the on-premise operator is taking on new meaning. Social networking is one of the keys to reaching out to these folks as well

drinkers along with foodies are embracing local foods and beers. It is a well known fact that the beer experience is better closer to home. Any beer produced in Canada is fresher than imports and therefore tastes different (some would say better). There are many great imported beers, but it is obvious that local beers have a huge place in the hearts and throats of our guests. • Marketing tip #2 – Talk about your local beer selection as well as your local foods. Go a step further and start matching local beers up with food menu items that are grown locally. NEW AND INNOVATIVE For far too long, we have had a limited option on styles of beer available. This is no longer the case! Brewers are now creating innovative beer styles that are attracting the interest of beer consumers. The cycle of change is driving the industry now, and it’s in your best interest to take advantage of that. • Marketing tip #3 – Use one of your taps for a rotating selection of local beers. Then, let everyone know that you will be featuring new beers on a regular basis. This allows you to attract new guests while keeping your existing clientele coming back for more. GLASSWARE Beer is enhanced by the design and development of proper glassware. Not only does it figure strongly in delivering aroma and flavour to the guest, it serves as a tremendous marketing tool. Even if you choose not to use brewer-supplied glassware, you still have the option of choosing the right glass to enhance your guests’ beer experiences. • Marketing tip #4 – Create a space behind the bar for your glassware. The display of glassware serves to showcase your brands as well as highlighting the fact that you respect the way beer is poured and served. Go a step further and create your own branded glassware that guests can purchase for use at home. These new-age beer drinkers are willing to invest in a great beer experience, and your excellent marketing strategies can bring them to you.

SEVEN WAYS to enhance your business and

The traditional supplier relationship is often viewed as being adversarial and predictably results in a win/lose outcome. The restaurant business requires effective management of the two primary input costs, food and labour. Together these can account for 60% or more of sales so it follows that management should allocate a significant portion of their resources to keeping these costs in line. The effective management of costs is a high return activity as long as your ability to continue to build sales is not impacted by your decisions to reduce cost. Reducing portions, cutting back on service staff or changing specifications to lower quality may well produce less profit in the long run if these decisions result in diminished traffic. Certainly reducing costs effectively can have a dramatic impact on your profitability. The direct one to one relationship that exists between cost reduction and profit improvement is one that should be leveraged whenever possible. Today’s restaurant environment demands both razor-sharp cost efficiency and the highest customer satisfaction to continue to build sales and profit. Your suppliers represent a hidden resource beyond

the obvious relationship to your cost structure. They should also be your strategic partner in assisting you in building your sales. They benefit directly when your sales increase so they have an indirect investment in helping you achieve that mutually beneficial goal. Another benefit from having your supplier partner with you on building sales can be increased rebates and further volume discounts. Taking the narrow view of a supplier as simply another cost input positions them as an adversary not a business partner. The battle of who can squeeze each other the most to the exclusive benefit of only one of the parties to the relationship is counter-productive and stressful to say the least. Instead, we should look to explore ways in which we can create a win/win outcome and strengthen our supplier relationships over time. Supplier relationships must evolve from the traditional view of simply a purchasing or procurement function to viewing the entire supply chain or value chain associated with the product. The difference


here is a process that encompasses all the stakeholders in the supply chain and a degree of collective and individual collaboration for the good of all participants. Leveraging your supplier relationships can produce immediate and long-term results in your restaurant. Here are seven ways to further enhance your business by leveraging your supplier’s resources to help build sales and profits for you and your suppliers. 1) Ask your key suppliers if they have access to new product development, menu design or an R&D kitchen that could be used to help you with new menu additions. 2) Your suppliers often have access to research on industry trends, consumer behaviors and restaurant news that you could tap into to better forecast your business trends. 3) Do you share as much about your customers and business trends with them as they do with you? This can encourage a more strategic relationship and promote the expansion of your business innovation beyond your four walls. Sharing your issues and challenges can result in mutual solutions that help both the restaurant and the supplier if it can lead to more sales.

A supplier agreement to invest in a specific piece of equipment that could bring significant cost efficiencies to both the supplier and the customer could be amortized over a period of time with a high-volume product surcharge that could result in a net cost reduction after the efficiencies are taken into account. 7) Ask if your suppliers have existing internal budgets for marketing that you can tap into. Specialty coffee successfully drives growth in a flat market Canadians love coffee, and it has never been easier for them to get a good cup. For the past few years, consumers have been exposed to rigorous rebranding and new products launches both in home and at foodservice, and have accepted them with open arms. While just about every operator has some coffee on their menu, the growth of coffee has been driven mainly by a few top chains. Customer expectations have evolved; the competitive landscape has changed, and restaurants need to take a second look at their coffee program. In the past year, Canadians ordered 2.5 billion servings of coffee at foodservice. Included in a third of all restaurant visits, the popularity of coffee at restaurants is second only to Italy, and is fairly stable during even the warmer seasons. Even in a market not showing any visit growth, consumers are still ordering more coffee. Coffee purchases are driven heavily by convenience, so consumers readily accepted expansion of premium coffee programs beyond the typical coffee shop. Top coffee destinations now include quick-service burger and sandwich operators, and even full-service restaurants are partnering with well-known coffee-shop brands. On top of which, growing penetration of single serve coffee machines means a quick cup of quality coffee is easier to get at home.

While three quarters of coffee at foodservice is brewed coffee, there has been no overall growth for the past few years, only a battle for share. Growth has been driven by hot and cold specialty coffee. Several varieties of lattes, cappuccino, and espresso are now more convenient and affordable, broadening the consumer base that can enjoy these beverages on a regular basis. Even when it comes to brewed coffee, consumers are increasingly willing to spend more at a gourmet coffee shop. Operators may be wondering if their restaurant needs to worry about a quality coffee program if they don’t serve breakfast, but evolving customers tastes for coffee impact every segment and every daypart. No doubt, morning meals are a core daypart for coffee, but 46 per cent is served with meals or as an afternoon or evening snack.

At full-service restaurants, half of coffee is served at lunch and supper. Furthermore, espresso-based hot coffee and cold specialty coffee helps attract consumption outside of the morning meal. In this increasingly competitive coffee market, mere convenience is no longer good enough. Any restaurant can sell a cup of coffee, but with a product this habitual, repeat business is the name of the game. Restaurants must carefully choose the brand and types of hot and cold coffee they serve, resting the decision on more than just the best price. Once the best preparation is determined, communicate to staff how to execute properly and consistently. Coffee must be fresh, even at the expense of a wasted pot.
