Valmonte Garden Having A Hearty, Healthy Spring then boiled the beets in salted water until soft. When boiling beets, you do not need to peel the skin off before because when they are cooked, the skin slides off. I decided to make a lemon vinaigrette with rosemary for the salad. I juiced half of the lemon, added some olive oil, finely chopped rosemary, salt, pepper, and a little agave syrup. I poured the dressing over the kale and bite sized beets for a simple salad to complement my frittata.

For my frittata, I sautéed some onions and garlic in olive oil over medium-low heat. Once the onions and garlic were cooked down, I added in the baby potatoes which I cut into thin rounds. I then added in some chopped beet greens and some cherry tomatoes. I seasoned the mixture with salt and pepper and then poured the mixture into the bowl. I then whisked together four eggs with some salt, pepper, and a little water. I added the egg mixture into the pan and then quickly added the vegetable mixture

By Alexis Ferguson Most people know the Valmonte school as a place that lives and breathes baseball, but the garden right behind the main baseball field is highly underrated.

The farm and garden stretch to 1.5 acres and is managed by Nancy Lemargie. The garden and farm started out as a side of a hill, but now is teeming with vegetables, fruits, plants, chickens, and cats.

Chez Mélange and Bettolino kitchen purchase produce from the Valmonte farm and garden.

Kale is a popular item for the restaurants now, and in the summer, tomatoes and shishito peppers are very popular.

The fresh fruits and vegetables along with eggs and plants are able to be purchased on the second Saturday of every month except in April.

Nancy was so kind enough to let me choose some vegetables to cook with. I grabbed some Tuscan kale, beets, rosemary, a lemon, eggs, and baby potatoes.

I first made a salad with the kale and beets. I started off by washing kale and chopping the kale into bite sized strips. I

localnews@pvppanorama.com back in. I gently mixed the eggs and vegetables so they were combined. I let the frittata cook until the edges were cooked and then put the frittata into the oven to broil, so the frittata was cooked all the way through.

I cannot rave enough about how amazing and simple this meal was. The frittata and salad were so simple which made the fresh vegetables more prominent. It is so obvious when you are cooking with fresh ingredients that the dish tastes better. I only seasoned the frittata with salt and pepper because I really wanted to highlight the taste of the vegetables. I ate at least half of the frittata because it was so delicious.

I don’t know if I can buy produce at supermarkets anymore. It looks like I will be a monthly visitor to the Valmonte farm and garden and I think you should be one too!

PEN Holds Annual Black and Gold Affaire Support • Peninsula High Athletic Booster Club holds annual Black and Gold Affaire at PV Golf Club.

By Nina Li To support the hundreds of studentathletes at Peninsula High School, the school’s Athletic Booster Club (ABC) works hard every year to raise money. This year, the Booster Club is headed by co-presidents, Julia Parton Rosas and Randy Hata.

The Booster Club put on its biggest fundraiser of the year, the Black and Gold Affaire, at the Palos Verdes Golf Club, on March16.

Among those who attended was freshman football coach Larry Campbell. This is Campbell’s fourth year participating in the Black and Gold Affaire. With three kids who play many sports at Peninsula, he fully supports the ABC. “I love having people come together from all the different facets, all the different sports coming together as one big family and celebrating athletics,” Campbell said.

The evening began with silent auctions and then progressed to dinner and a live auction. Near the end of the event, many senior athletes representing all the sports at Peninsula were recognized by their respective coaches. Each name was called and the athlete would shake hands with Principal Brent Kuykendall and pose for a picture.

“Through all four of my years playing sports at PEN, I have made some great friends and learned so much from every coach that I have had,” said senior and var-

This part of the program is a highlight for many. It is a way for parents and coaches to celebrate the hard work each athlete has put in for so many years.

“My favorite part of the evening is the parade of athletes,” Rosas said. “Watching the kids go from usually four years until they are seniors is what we are here for.

We want to raise money for all of these programs.”

The ABC’s main focus is to support the athletic programs at Peninsula, but they

also fund the athletic trainers, pay for maintenance of the fields and rooms, promote Peninsula’s teams and athletes and, most importantly, ensure the athlete’s safety while playing their sport. Through the funds raised from the Black and Gold Affaire, the ABC funds equipment for all sports, including surf longboards, wrestling mats, lacrosse helmets, cheer competition signs, dance room floors and more.

“I know other schools have athletic booster club events to raise money, but I think this one is unique,” Kuykendall said.

“It is probably one of the more longstanding events since Peninsula opened back in the early ‘90s. It has great tradition and has raised millions of dollars.”

According the Hata, the Black and Gold Affaire raises $150,000 for the ABC, which is donated to Peninsula and its athletes.

Besides this event, the Booster Club raises money from their memberships. Approximately $60,000 comes from memberships

and other ABC events.

Hata has had two daughters who graduated from Peninsula who also played sports as well as a son who plays basketball.

“My favorite thing about this event is being able to visit all the parents of these student athletes,” Hata said.

The Black and Gold Affaire took six months to plan with many parent volunteers and co-chairs assisting the presidents with the process. These volunteers are either full-time contributors to the ABC or work on weekends or after work.

“I think it is great just seeing the parents come together and raise money for our student- athletes,” Kuykendall said.

“My favorite part of the night is the parade of athletes and seeing all the seniors come together. “It really says a lot about the hard work and time they have put in.”

"Asian Basketball League" Has Long South Bay History

• Many South Bay basketball leagues have been around for many decades.

By Justin Kim The South Bay FOR basketball league is a well-known organization dedicated to giving anyone a chance to play organized and competitive basketball.

Established in 1959, the non-profit charitable organization commemorates Richard Nishimoto, who excelled at sports and died at the age of 18.

What was at first a service organization and baseball team started by a handful of people turned into a basketball organization that now includes boys’ and girls’ basketball leagues for teams of second and third graders, middle and high school students and even adults.

To the outside world, FOR is known as the “Asian basketball league”. FOR teams

in general consist of a majority of players with Asian backgrounds because the organization originally aimed to give Asians and Asian-Americans the opportunity to play basketball competitively where in other places they were not always welcome.

Craig Uyesugi, the boys 12th grade Division Tournament Coordinator, has two children, Kevin and Kristen, that have grown up playing in the FOR basketball league. He says that “FOR has provided opportunities for my children to play basketball in an organized environment.

They learned the meaning of teamwork, friendship and sportsmanship. It has especially allowed my son to learn how to play basketball… [because] he didn’t know how to play so it’s given him the opportunity to play with others that didn’t know how to play.”

One special thing about FOR is that teams are started with second and third

graders. If their team remains intact over the years, they are able to create lifelong friendships. Not only do they have an entire team of friends to grow up and play basketball with, but FOR players often get a taste of the culture that the organization tries to present.

Although competitive, FOR basketball is all about respect and friendships made through the sport. Teams often play against each other continuously through the years, and this leads to even more friendships made with one another.

“I like the friendships that we formed with other people, not necessarily at the same school. You know, you’re able to meet a lot more people within the community,” Uyesugi said.

Brandon Lee, the head coach of the 12th grade FOR Koa team, has been to many games and tournaments with his three sons who played and continue to play in FOR.

“FOR has been a really great experience for our boys as they have grown up to become young adults,” Lee said. “They have been able to play basketball and volleyball, grow in leadership through the PlayMakers Project, and make lifelong friends.”

FOR is not the only “Asian basketball” league out there. CBO, VFW and other organizations all work together in hosting tournaments and bringing players together. The purpose behind all of these organizations is not to discriminate against non-Asians, but to create a foundation of friendships and memories while playing a sport.

When asked what he would recommend to other parents, Uyesugi said, “If you’re looking to have your child participate in organized basketball and learn about sportsmanship, friendship… [to] build friendships and expand their circle of friends, this is the organization to join.”

The PV boys’ varsity lacrosse team is currently 10-1 after sweeping Peninsula on Thursday, while the PV girls’ team is undefeated at 6-0 after a big win over Westview High School.

Both programs still have a number tough opponents left on their schedules, but both varsity teams are expected to do well in CIF playoffs in a few weeks.

PV Thunder Western State Champions . . . The AYSO EXTRA boys’ U10 PV Thunder won the Western States Championship recently. This special team of PV boys first won the Sectional championship, followed by the Regional Championship. Then the team went on to the Western States tournament, playing against other AYSO EXTRA teams from Alaska, Washington, Oregon and California, a region of over 275,000 players, and won the Western States Championship on March 16 in Lake Forest, CA.
