l año que entra, 2016, no va a ser uno más dentro de la historia de Puerto Portals. El 4 de julio se cumplirán exactamente 30 años desde que mi padre, el Dr. Klaus Graf, promotor del Puerto, y el entonces presidente de la Comunidad Autónoma de las Islas Baleares, D. Gabriel Cañellas Fons, inauguraran el que es hoy uno de los más apreciados puertos deportivos y comerciales del mundo. Tres décadas pueden ser mucho o poco tiempo, según se mire. Pero creo no exagerar en absoluto al decir que, de alguna manera, la construcción de Puerto Portals supuso un acontecimiento muy importante para la historia del Turismo en Mallorca, pues logró atraer a la isla a un turismo europeo que buscaba la calidad y excelencia que, instalaciones como la nuestra, podían brindarle. Se dice que el éxito de una empresa, más allá de nacer, radica en saber mantenerse en el tiempo, mejorando, en la medida de lo posible, lo conseguido en el pasado. Y eso es precisamente lo que, volviendo la vista atrás, podemos ver que vamos logrando, día a día, todos los que hacemos posible Puerto Portals: los trabajadores y los propietarios de los establecimientos de la zona comercial, desde luego, pero también y de manera fundamental todos nuestros clientes de amarres y visitantes al Puerto, que con su presencia siguen llenando de vida nuestra querida instalación. Aprovechando esta edición de la revista que aparece justo antes de la Navidad, no quiero olvidar que nuestro Christmas Market está también de aniversario, pues cumple cinco años consolidado como uno de los mejores, sino el mejor, de toda la isla.

his coming year, 2016, will not be just any year in the history of Puerto Portals. On 4th July it will be exactly 30 years since my father, Dr. Klaus Graf, the developer of the port, and the then-president of the Autonomous Community of the Balearic Islands Gabriel Cañellas Fons, inaugurated what is now one of the most highly-regarded marinas and commercial ports in the world. Three decades can be a long time or a short time, depending on one’s perspective. But I believe it is no exaggeration whatsoever to say that, in a way, the construction of Puerto Portals was an extremely important event for the history of Tourism in Mallorca, as it managed to bring to the island European tourists seeking the quality and excellence which installations like ours could offer them. They say that the success of a company, after its creation, lies in keeping up with the times, improving what has been achieved in the past, insofar as this is possible. And if we cast our gaze back, that is precisely what those of us who make Puerto Portals possible can see that we are achieving, day after day. By us I mean the workers and owners of the establishments in the commercial area of course, but also, and fundamentally, all of our mooring clients and visitors to the Port who, with their presence, continue to breathe life into our beloved harbour. Taking advantage of this issue of the magazine appearing just before Christmas, I would like to point out that our Christmas Market is also celebrating an anniversary, since it turns five, and is now consolidated as one of the best – if not the best – on the entire island. as kommende Jahr wird ein historischer Höhepunkt in der Geschichte von Puerto Portals. Am 4. Juli vor genau 30 Jahren wurde der Hafen von meinem Vater, dem Gründer Dr. Klaus Graf und dem damaligen Ministerprasident der Balearen, Don Gabriel Cañellas Fons eingeweiht. Puerto Portals zählt heute zu den prestigeträchtigsten Yachthäfen der Welt. 30 Jahre können, je nach Blickwinkel, ein kurzer oder langer Zeitraum sein. Ich bin jedoch überzeugt, dass es nicht übertrieben ist, den Bau von Puerto Portals als wichtigen Meilenstein in der Geschichte des Tourismus auf Mallorca zu bewerten. Mit dem Hafen kamen Touristen aus ganz Europa auf die Insel, die die Qualität und Exzellenz suchten, die unsere Hafenanlagen offerieren konnten. Bekanntlich liegt der Schlüssel des Erfolgs eines Unternehmens nach seiner Gründung darin, immer mit der Zeit zu gehen, das Erreichte im Rahmen der Möglichkeiten stetig zu verbessern. Wenn wir zurückblicken, sehen wir, dass es genau das ist, was wir in Puerto Portals Tag für Tag erreichen. Hier sind die Angestellten und Besitzer der Geschäfte unseres Shoppingbereichs zu nennen, doch auch all unsere Liegeplatzeigner und Besucher des Hafens leisten einen wesentlichen Beitrag, unseren Yachthafen mit Leben zu erfüllen. Unser Magazin erscheint kurz vor Weihnachten und so möchte ich die Gelegenheit nutzen, auf unseren Christmas Market hinzuweisen, der in diesem Jahr den fünften Jahrestag seines Bestehens feiert und sich nicht nur als einer der beliebtesten Weihnachtsmärkte, sondern als der renommierteste Weihnachtsmarkt der Insel etabliert hat.

A dos horas en coche de Ciudad del Cabo, se encuentra este lugar ideal para bucear muy de cerca al tiburón blanco. And this same village was where the writer Robert Graves decided to move to. His residence has now been turned into a museum, a house that in its day was visited by Hollywood stars like Ava Gardner. In 1913, the writer Ruben Darío visited Mallorca for the second time and spent a while in the Carthusian Monastery of Valldemossa, where he wrote the novel “El Oro de Mallorca” (The gold of Mallorca). A century earlier musician and pianist Frédéric Chopin had chosen the very same spot to create several scores and heal his illness, during the winter of 1838. He lived there with writer George Sand, who wrote “A Winter in Mallorca”. In the Palma of the 1920s, writer Jorge Luis Borges and his family spent several seasons at the Hotel Continental, which used to be in Calle San Miguel, and years later, in 1935, Albert Camus would spend many long hours in Plaza de Sant Francisco enjoying watching people pass by. Hoy es la Fundación Pilar i Joan Miró, espacio cultural que alberga una gran muestra de su obra artística. El gran guitarrista flamenco Paco de Lucía crió a sus hijos en Mallorca y también montó un estudio de grabación en Establiments, donde realizó parte de su último disco antes de fallecer. En Esporles reside la cantante Annie Lennox, quien se implica activamente en las campañas de protección de medio ambiente en Mallorca.

The grandmother of painter Joan Miró lived on Mallorca, and he himself ended up married to a Mallorcan woman, Pilar Juncosa. In the 1950s he set up his workshop on the island. It is now the Fundación Pilar i Joan Miró, a cultural space which contains a broad display of his artwork. The great flamenco guitarist Paco de Lucía brought up his children on Mallorca and also set up a recording studio in Establiments, where he recorded part of his last disc before he died. Der legendäre Flamenco-Gitarrist Paco de Lucía zog seine Kinder auf Mallorca auf und richtete sich in der Siedlung Establiments ein Tonstudio ein, in dem einige Stücke seiner letzten CD aufgenommen wurden, bevor de Lucía verstarb. RESTAURANTE: Spoon. RECETA: Tartar de salmón. Para hacer el tartar se necesita salmón fresco, jengibre, cebolla, wasabi, aceite de oliva, sal y pimienta. Para la base del plato, cortar rodajas finas de pepino a modo de carpaccio. RESTAURANT: Spoon. RECIPE: Salmon tartare. To make the tartare you need fresh salmon, ginger, onion, wasabi, olive oil, salt and pepper. For the base, use finely-sliced cucumber like carpaccio. RESTAURANT: Spoon. REZEPT: Lachs-Tartar. Für den Tartar benötigt man frischen Lachs, Ingwer, Zwiebel, Wasabi, Olivenöl, Salz und Pfeffer. Für den Untergrund Gurken in dünne Scheiben schneiden, wie beim Carpaccio.

RECIPE: Free-range chicken with quinoa risotto. Roast two chicken thighs with salt, garlic, rosemary and lemon. The risotto is prepared using peas, onion, fennel, 150 ml white wine and 150 g quinoa. Cook on a low heat until the wine is absorbed and add Parmesan. RESTAURANT: Cappuccino. REZEPT: Huhn vom Bauernhof an Quinoa-Risotto. Zwei Hühnerschenkel mit Salz, Knoblauch, Rosmarin und Zitrone braten. Risotto aus Erbsen, Zwiebeln, Fenchel, 150ml Weiβwein und 150g Quinoa zubereiten. Auf kleiner Flamme kochen, bis der Wein absorbiert ist. Parmesan zufügen.

Después se flambea con cognac y se le agrega soja, mantequilla y la reducción de bogavante. Freír las patatas y los huevos y servir. RESTAURANT: Flanigan. RECIPE: Lobster with potatoes and egg. Poach the onion and sauté 800 g shelled lobster. Afterwards, flambé with cognac and add soya, butter and the lobster reduction. Fry the potatoes and eggs and serve. RESTAURANT: Flanigan. ZUMOS DÉTOX. Los hay todos los colores y cada uno con una función diferente: diuréticos, vitamínicos, oxigenadores de la sangre, detoxificantes… Pero uno muy básico y que se puede hacer en casa en un momento debe contener al menos zanahoria, apio, espinacas y manzana.

DETOX JUICES. They come in all colours and each one has a different function: diuretic, vitamin-rich, blood oxygenating, detoxifying… But a very basic one that can be prepared quickly at home should contain at least carrot, celery, spinach and apple.

KÉFIR. Su nombre es turco y significa “bendición”. En el Cáucaso, el kéfir se ha consumido durante siglos y la gente vive más de 100 años. Básicamente, tiene la capacidad de regenerar y equilibrar la flora intestinal. En su forma y color es similar a una coliflor. Para su consumo habitual, se hace fermentar el kéfir en agua o leche, que después se bebe en uno o dos días.

KEFIR. Its name is Turkish and means “blessing”. In the Caucasus, kefir has been consumed for centuries and people live to over 100 years old. Basically it has the ability to regenerate and balance the intestinal flora. It is similar to a cauliflower in shape and colour. For the purposes of habitual consumption, kefir must be fermented in water or milk which is then drunk within one or two days.

SEMILLAS DE CHÍA. Contienen Omega 3, antioxidantes, fibra, calcio, hierro, proteínas y potasio. Además, generan sensación de saciedad y ayudan a bajar de peso, a eliminar toxinas, a calmar el dolor de las articulaciones, a mantener la hidratación y proteger de los efectos nocivos del medio ambiente gracias a sus nutrientes.

CHIA SEEDS. Chia seeds contain Omega 3, antioxidants, fibre, calcium, iron, proteins and potassium. They also give rise to a feeling of satiety and help reduce weight, eliminate toxins, soothe joint pain, hydrate and protect from the harmful effects of the environment thanks to their nutrients.

REMOLACHA. Contiene mucha Vitamina C, por lo que es desintoxicante. Su particular color morado proviene de las betaínas. Éstas son las responsables de proteger las células. También protege el hígado y de las enfermedades cardíacas.

BEETROOT. Beetroot contains a lot of vitamin C, and is therefore a detoxifier. Its peculiar purple colour comes from betaines, which are responsible for protecting the cells. It also protects the liver and prevents cardiac diseases.

CÚRCUMA. Este extracto de planta proviene de la India y es el que da color amarillento a los platos. De hecho, es uno de los componentes del curry. Entre sus propiedades, además de tener un efecto quema grasa, este extracto de planta combate el cáncer, ayuda a mejorar la circulación y tiene propiedades anti inflamatorias.

TURMERIC. This plant extract comes from India and gives that country’s dishes their yellow colour. Actually, it is one of the components of curry. As well as having a fatburning effect, its properties include combatting cancer, helping improve blood circulation and anti-inflammatory properties.

DETOX-SÄFTE. Es gibt sie in allen Farben, jeder Saft wirkt anders: entgiftend, harntreibend, als Vitaminlieferant oder zur Erhöhung des Blutsauerstoffs. Das Grundrezept des Saftes aus Karotten, Sellerie, Spinat und Apfel kann man auch zuhause zubereiten. KÉFIR. Der Name stammt vom türkischen Wort „Segen“ ab. Im Kaukasus trinkt man das Milchgetränk seit Jahrhunderten und die Einwohner werden nicht selten älter als hundert Jahre. Kefir regeneriert und bringt die Darmflora ins Gleichgewicht. Der Kefirpilz ähnelt in Farbe und Form einem Blumenkohl. Er wird in Wasser oder Milch vergoren und in ein oder zwei Tagen verzehrt. CHÍA-SAMEN. Sie enthalten Omega 3 Säuren, Antioxidationsmittel, Ballaststoffe, Kalzium, Eisen, Proteine und Kalium. Die Alleskönner stärken das Sättigungsgefühl, helfen beim Abnehmen, entgiften, lindern Gelenkschmerzen, fördern den Wasserhaushalt und wirken gegen schädliche Umwelteinflüsse. ROTE BEETE. Enthalten viel Vitamin C und wirken entgiftend. Die rote Farbe kommt vom Farbstoff Betanin, das die Zellen schützt, die Leber entgiftet und Herzerkrankungen vorbeugt. KURKUMA. Der Gelbwurz oder gelbe Ingwer stammt aus Indien und verleiht allen Gerichten eine gelbe Farbe. Auch im Currygewürz ist er enthalten. Kurkuma wirkt fettverbrennend und entzündungshemmend, beugt Krebs vor und verbessert die Blutzirkulation.

SULFORAPHANE. Cabbage, cauliflower and broccoli, as well as other greens, all contain this chemical component which, whilst not an essential nutrient, does help prevent many forms of cancer. It is also an antioxidant and helps improve muscle mass.

The Tibetan recipe combines garlic cloves with 70-degree alcohol, to create a concoction. Every day they ingest a few drops of this mixture and the dose is gradually increased over 7 days and then reduced again for another 7 days.

KNOBLAUCH. Die buddhistischen Mönche in Tibet verzehren Knoblauch, um schlank zu bleiben und Krankheiten zu heilen. Nach tibetanischem Rezept wird eine Mixtur aus Knoblauch mit 70%igem Alkohol hergestellt. Jeden Tag nimmt man ein paar Tropfen, wobei die Dosis sieben Tage lang stetig erhöht wird. ntre el 10 y el 12 de marzo de 2016, se disputará la duodécima edición del Oris Rally Clásico Isla de Mallorca, que una año más volverá a tener como sede Puerto Portals. Más de un centenar de coches clásicos llegados de diferentes puntos de Europa podrán ser admirados por los visitantes que en esos días se acerquen hasta el Puerto. Con motivo de una edición tan especial, Puerto Portals ofrecerá un programa de actividades complementarias para niños y adultos durante los tres días del Rally. El Oris Rally Clásico Isla Mallorca es una de las pruebas más emblemáticas del circuito de rallies clásicos internacionales, pues combina la categoría de los vehículos participantes y la competición con los espectaculares paisajes de la isla.

uerto Portals acogió en noviembre, por segundo año consecutivo, la popular fiesta de Sankt Martin, cuyos orígenes se remontan a la Edad Media, con una participación de más de 1.500 personas, entre ellas 500 niños. Talleres organizados para los más pequeños, cuentacuentos y la búsqueda con los farolillos encendidos de San Martín, que apareció con su capa roja sobre un caballo blanco, hicieron las delicias de todos los asistentes. Para terminar la fiesta, todos los participantes pudieron disfrutar de un chocolate caliente con las galletas preparadas por los niños anteriormente.

n November, for the second consecutive year, Puerto Portals was the venue for the popular festival of Sankt Martin, the origins of which go back to the Middle Ages, with the participation of over 1,500 people, including 500 children. Workshops for children, storytellers and the search with the glowing lanterns of Saint Martin, who appeared on a white horse with his red cape, delighted everybody who attended. Einer der Höhepunkte war der LampionUmzug, bei dem der Heilige in einer roten Pelerina auf einem Schimmel erschien. Zum Abschluss des Festes tranken alle groβen und kleinen Gäste heiβe Schokolade und probierten die Kekse, die die Kinder zuvor gebacken hatten.
