Colin Ferguson is the kind of actor who brings both heart and humour to every role he takes on. Whether you remember him as the affable Sheriff Jack Carter from the cult favourite sci-fi series Eureka, charming his way through a string of Hallmark Channel hits, or enjoyed his performance as John Conklin in the current Amazon Prime hit The Summer I Turned Pretty, Colin Ferguson has carved out a career defined by versatility and charisma. With a résumé that spans drama, comedy, and even a turn behind the camera as a producer, the CanadianAmerican star continues to keep audiences engaged and entertained. I sat down with Colin to talk about his journey, his love for storytelling, and what’s next on his creative horizon.

QLet’s talk about your time as Bob Knowles in the TV series Landman, featuring fellow cast members Billy Bob Thornton and Demi Moore.

AI play an oil tycoon. My scenes have been primarily with Billy Bob Thornton and Jon Hamm and I’m not heavy in the show at all, but it’s still pretty satisfying to be in the Taylor Sheridan universe in any capacity and get to do scenes with those guys. They’re both incredibly down-to-earth, nice guys.

QHow did you enjoy the role of John Conklin on The Summer I Turned Pretty?

AI

adore playing John Conklin and being in that show. I love that cast, the show, I love Wilmington where we shot it, I loved my summers being at the beach and in coffee houses, and I’m really enjoying the popularity of it. And it’s pretty special watching the younger cast grow into the amazing people and artists that they are.

QEureka remains a fan favourite, years after it ended. What do you think made it resonate so strongly with audiences?

AQuite simply, I think we made a bizarre, fun little world that people somehow still like to visit. I think the show has heart – or tries to – and people can watch it and trust that it is going to be okay.

QHow did playing Sheriff Jack Carter shape your perspective as an actor – or even as a person?

AThat role changed everything for me. It made me a better actor, it paired me with phenomenal people that I learned incredible amounts from, and frankly, I got to live my dream of being on a TV show. Of all the things I’ve gotten to do in my life, that is pretty close to the top. I even got to direct a few episodes! It was a special time.

Q You’ve worn many hats: actor, director, producer. Which role challenges you the most creatively, and why?

AThey challenge me in different ways. Being an actor is fun and it’s something that I have a lot of experience with at this age. It’s always a challenge to try and make something as interesting as one can, but acting is still mostly fun.

I haven’t directed in years, but what I like about it is being able to take care for the story from the very beginning, from the very first meeting, and seeing it through to the end.

QYou’ve worked in both comedic and dramatic roles. Do you approach these genres differently, or is your process the same?

AMy process is very much the same now. I love comedy. It’s my first love, actually. But it took me a really long time – too long, really! – to figure out that a sketch wasn’t a sitcom, and a sitcom wasn’t a single-camera show. Let’s say I was a little overly enthusiastic when I started. Now, I prep a comedy like I do a drama, and it holds together in a much more satisfying way for me: You read a script, it tells you what it needs and you work as hard and as creatively as you can to make that happen.

QLooking back, is there a particular role or project that you feel didn’t get the recognition it deserved?

ANope! Other people’s work, I do. I have clearer vision on that. But I don’t weigh in when it comes to my own.

QHow has growing up in Montreal and your Canadian identity influenced your career in Hollywood?

AIt means more to me now than it ever has. I grew up in the ’70s in Montreal, which had a very specific culture that I love and I hold pretty dear. It was social and it was interactive. And as we move towards a less and less social culture, I realize that I’m grateful for the warmth, character and humour I grew up around.

QTell us about your time at Oakville’s renowned Appleby College.

AI started at Appleby in the 10th grade. What was excellent for me was that it wouldn’t let me abstain. It wouldn’t let me skate by. You had to do activities and sports, and for someone as shy as I was, that was really important. I honestly think I would’ve fallen through the cracks at a larger school. And I would have done it on purpose!

QDo you find a noticeable difference between Canadian and American film/TV productions, from either a creative or cultural standpoint?

ANot really. Everyone is trying to make something worthwhile. The “game” is always trying to figure out what you have to fix, and what is already great. And if it needs fixing, you fix it as specifically and kindly as you can.

QWhat’s something your fans might be surprised to learn about you?

AI have no idea what people expect of me, to be honest! Maybe I am a lot quieter than they expect.

QYou’ve developed a reputation for being down-to-earth and approachable. How do you stay grounded in an industry that often rewards ego?

AIf that’s true, I’m happy to hear it. I think life helps. I mean, just getting overwhelmed, or sick, or injured, or making mistakes, or coming up short on

something helps keep the day-to-day pretty real. Or just trying to be a good dad.

QOutside of acting, what passions or hobbies are you currently exploring?

AI love being in the yard, doing yard work, planting things, helping it all grow. And then getting a drink and reading a book for a while. Currently I’m reading Beryl Markham’s West With The Night and working my way through Japanese Duolingo (my son told me I had to learn Japanese, because he might work at Nintendo when he grows up). That’s enough for me.

QYou’ve directed episodes of shows like Eureka. What’s it like to direct your castmates – and does it change the dynamic on set?

AIt’s a wonderful dynamic. Making TV is a grind, but I’ve found everyone is a little more excited when one of the cast or crew is getting a shot at directing – especially if it’s their first time. Everyone rallies and tries to help out, to make it go well. And it feels like a family.

QWould you ever consider directing or producing a feature film or series from scratch? If so, what kind of story would you want to tell?

AThis’ll sound crazy, but keeping on a Canadian theme, the story about how and why the RCMP were created, and what

Streaming platforms have transformed the TV landscape. As someone who rose to fame during the cable era, how do you view the current state of television?

There is good and bad. But there is always good and bad. I think we’re seeing ads come back and, on our side, it’s a good thing because the type of shows that people look back on and love, need ads. That’s how they were funded. I think everything is about to change again, and I sincerely hope we get some good comedy out of it! We need more of that!

What advice would you give to young Canadian actors trying to break into the industry today?

You have to make your own stuff. I personally believe that that is the only way in right now. So I encourage people starting out to roll up their sleeves and get at it.

Are there any dream collaborators – actors or directors –you’d love to work with?

That question always stumps me. I could list people for days who I’d love to do scenes with, or get to read their dialogue, but I’m not sure that’s what the question is asking. I mostly just want to work with kind people who are really good and really prepared and see where it goes.

“Our client is a developer and builder,” the team at Stamp & Hammer shares, “and he fell in love with this lot the moment he saw it.” Positioned near the Georgian Bay Club, the home sits within easy reach of golf courses, ski hills, bicycle trails, and lake access. It’s a recreational paradise— one perfectly suited to the client’s lifestyle and love for the outdoors.

But beyond the location, this was a home meant to reflect personality and passion. The client envisioned a classic chalet—warm, grounded, and inviting—while his wife gravitated toward sleek modernity. “Our challenge was to bring those two worlds together,” Stamp & Hammer explains. The result is a striking design that marries traditional alpine architecture with a clean, modern aesthetic: a chalet-inspired structure with soaring ceilings and an open loft, softened by natural textures and contemporary finishes.

a showpiece. The 6,370-square-foot residence (3,665 above ground with a fully finished 2,705-square-foot basement) is a study in contrast and craftsmanship. The exterior pairs rugged natural stone with sleek black Fraser siding, a palette chosen to both complement and stand out against the surrounding landscape. Inside, light pours through oversized windows and double-height spaces, connecting every corner of the home and reinforcing its sense of openness and flow.

At the heart of the main floor is a two-storey living room that frames sweeping views of the mountains. It's flanked by a gourmet kitchen with two islands, a spacious dining area, and a primary bedroom suite that rivals any luxury retreat. "They wanted a space that felt cohesive and inviting,” Stamp & Hammer notes. “Light, flow, and the ability to gather easily were top priorities.” Nowhere is this better reflected than in the finished basement: a vibrant family zone complete with a bar, two additional bedrooms, a mudroom with garage access, and two bathrooms—all smartly laid out for entertaining and everyday living.

While the design pays homage to timeless chalet living, it is by no means stuck in the past. Sustainability and technology were key pillars from the start. The home is a smart house through and through—remotely accessible utilities and energy-efficient systems ensure it remains low-maintenance and ecofriendly, even when the family is away. Material selection also emphasized longterm performance and environmental responsibility, proving that beauty and function need not be mutually exclusive.

As with any successful custom build, collaboration was central to the process. “Stamp & Hammer is a full-service firm,” the team explains. “The client came to us because he trusted that we could take care of the entire process—from planning and architecture to permits and construction oversight.” Their in-house rendering team provided realistic visualizations at every stage, helping the client make confident design decisions and minimizing surprises during construction.

BUILDING TRADITION ON A FINE

Building bespoke homes is more than just an occupation for this distinctive Oakville company: they see themselves as continuing a time-honoured tradition

When you visit a home built by Oakvillebased Chatsworth Fine Homes, often the first thing you notice is the precise fit and finish of the trim and millwork, notable for its attention to detail and the quality of the joinery. It’s something of a trademark of the company that Fil Capuano founded with his brother Nick over forty years ago, and emblematic of a philosophy Fil calls “high-performance building.”

Pride in workmanship runs in Fil’s veins. He was born in England, the son of an Italian builder and English mother. Growing up in the English county of Cheshire, where his father continued to ply his trade, the young Fil began working alongside him, picking up skills and observing how the guild craftspeople of England accomplished their work.

“In England, the housebuilding industry has a completely different tradition than here,” Fil recalls today. “You’re often working on old Victorian houses, so you learn how the old guilds and trades did everything. You really felt part of a storied tradition. Here in the New World, craft often falls prey to expediency, and homebuilding is relegated to a ‘job.’ But over there, there’s respect for the many upon whose shoulders we can now stand, and a lot of pride in workmanship.”

Later, the Capuano family emigrated to Canada, and Fil graduated from Ryerson (now Toronto Metropolitan University) as a CET in civil engineering. But housebuilding was in his blood; instead of entering the civil engineering field, he returned to working alongside his dad. But he was an entrepreneur at heart, and by the mid1980s, he and Nick were firmly ensconced in the Canadian building fraternity.

From the beginning, Fil wanted Chatsworth Fine Homes, whose name comes from a famous English manor. to be more than just another purveyor of high-end Oakville homes. “The concept of high-performance building has two components to it,” he explains. “I lived in the U.K. in the seventies during gas rationing, and I have always been interested in energy efficiency and how you maximize it in the construction of homes – we built the first net-zero home here in the GTA. And when you come down to it, energy efficiency is about much more than high energy bills; it’s about comfort, health and how you live in your home.

“The second component is that we take our commitment to our clients’ families

very seriously. If we make a mistake, we’ll fix it. And we care about your house, even years later. That’s why we have clients who wouldn’t let anyone else but us touch their home.”

Nowadays, the senior Capuano generation is gradually handing the reins over to Fil’s son, Daniel Capuano, and longtime employee Paul Sabourin (himself a skilled and experienced fine carpenter). But Fil insists that the company’s original vision still informs everything they do.

“Our feeling is that we are not just building a house – it’s someone’s home. We are doing this for people, for families.”

A recently completed project in a leafy Oakville neighbourhood demonstrates the “high-performance building” philosophy in action. Designer Alison Knapp frequently collaborates with the Chatsworth team on the interior design; their passion for the

work, along with the company’s meticulous attention to detail, resonates with her.

As Knapp relates, the home, an updated Georgian, posed an interesting challenge, since the young couple who commissioned it had very different tastes: he’s a lover of traditional style, with lots of mouldings and woodwork and big stone fireplaces, while she prefers slimmeddown contemporary. “And they both felt very strongly about their preferences!”, she laughs. It was the perfect test for Chatsworth’s high-performance building philosophy, enabling them to tailor the home perfectly to their clients’ tastes.

The front foyer, like virtually the whole home, is pure white and awash in sunlight from generous windows. It’s grand without being stuffy: tasteful panel mouldings set off a two-storey atrium ceiling and elegant arched front door, while oversize porcelain floor tiles add a clean, contemporary note. The foyer sets in place two recurring motifs that, once you start looking, you begin to see all through the house: subtle

reeding detail, as an inset in the chair rail, and the use of warm metals like the aged brass of the delicately curved sconce. “Brass details,” she comments, “add warmth to all the white. And this sconce almost feels like sculpture.”

Even a transitional space like the staircase received careful attention. “Most hallways don’t have a lot going on in terms of embellishments,” says Alison, “but this one has real attention to small, beautiful details.” Panel mouldings add grace and human scale to the stairwell’s soaring walls and play up the lines of an unusual squared-off vaulted ceiling. (The addition of a beautiful glass and bronze light fixture at the peak, along with contemporary black-metal stair pickets, streamlines the look.)

As Knapp explains, the family room resolves what, in less skilled hands, might have posed something of a puzzle. The husband longed for a formal room with a big, carved

– most notably, a walnut shroud embracing the back work area, and again lining the inner knee wall of the island. Here, the eye for detail is rewarded again: overhead, a dropped ceiling with subtle reeded edging defines the kitchen area, while warm metal accents – satin brass fixtures and similarly finished narrow brass strips on the range hood – act like jewellery in the space.

Upstairs, the primary ensuite is another perfect example of the home’s seamless blend of traditional romance and contemporary chic. A three-part classical Palladian window overlooking the garden fills the room with light, but there’s a modern update: unlike traditional Palladians, whose central window is usually arched, this one is squared off and set into a cutout in the ceiling – a twist on the classical design order, as Knapp explains.

The carved stone fireplace was achievable, but the ceiling wasn’t high enough for a true coffered ceiling – and might easily have looked too heavy in this airy, sunlit room. Instead, the team designed a softer version that suits the room’s character and proportions: framed within a shallow tray ceiling, light trim mouldings recall the delicate lines of the panel mouldings used in the hallway and in other rooms. It’s a much less formal look and adds to the room’s mood of quiet comfort.

Perfect synergy between the designer and the contractor is the key to all great renovations.

There are a lot of moving parts to a major renovation, and to have a good team to support the design is critical to its success.

Over the years, I have worked with many skilled contractors. Their ability to see what is conceived in a drawing, and create a work-back schedule to accommodate that, has always amazed me. No design, no matter how brilliant, can be brought to fruition without a good contractor; the two go hand in hand.

MEET THE DESIGNER

Design intentions can suddenly take an abrupt turn if the contractor finds an unexpected setback inside the walls. That's when the real synergy begins. Designer and contractor band together to figure out how to maintain the design (which has, after all, already been approved by the client!) without compromising the integrity of the space. A good contractor knows there is always a solution.

As a contractor, David Gimza of Glen Abbey Contractors also believes a team approach is imperative.

“You have a client, a designer and a contractor. Everyone has to be on the same page; otherwise it will be a struggle from the beginning.”

I love to see a beautiful space come together, and the project shown here is no exception. Our clients were also wonderful people and a joy to work with!

This couple had happily raised their children, planted beautiful vegetable and flower gardens, travelled, enjoyed successful careers and lived a beautiful full life in their home. After more than 30 years, though, they realized their home needed an update. They were still family-focused – their grandchildren regularly visited – but they wanted a home that suited their next phase of life.

As a designer, my first job is to listen carefully to the client and hear their wish list. I have always approached clients with the questions: What is important to you? What needs to stay?

In this case, what we heard was clear: an updated kitchen for cooking and entertaining; a large primary ensuite and closet area; and to incorporate some furniture and artwork that they dearly cherished.

The suite of design ideas we presented began with new updated kitchen cabinetry and finishes. Knowing our client loved to cook, we changed the window and incorporated a nook for growing herbs, which we set off with attactive new underlighting. We added a coffee station and a gorgeous goldflecked backsplash for visual interest. Finally, the addition of a new large island created the perfect setting for family breakfasts and entertaining their friends.

We chose a neutral fabric palette for both the living and family room areas. The family room fireplace material we selected was designed to work with their granite kitchen table, which we were able to re-shape to work in the new eating area.

I always feel that visual flow and sequence is critical to any design; colours and patterns need to move harmoniously from room to room. Colour palettes should be soothing, and high-dollar investments like sofas and chairs are best kept neutral. Accessories like pillows, throws and artwork are where you can add colour and interest.

worked beautifully to muffle sound, and also gave an edgier vibe to the space. The black edge of the partitions also sets off the charcoal in the granite kitchen table.

We used the same partitions in our client’s front office. Moody background wallpaper and custom cabinets gave this room a dressier feel.

The addition of ceiling detail to the front hall and a spectacular light fixture made the upper area magical, especially in the evening light. We replaced the stair pickets with simple slim posts, since we didn’t want to stray too far from the classic – or at best, transitional –overall style of the design.

The principal bedroom and bathroom were especially fun to design, and our team was delighted that they wanted such a bold tile for their ensuite! I love the sweep

of pattern on the floor and shower wall; it makes a wonderful dramatic gesture in that area.

I always love a good closet design, and this one does not disappoint. We added wallpaper on one wall to focus attention on our client’s collection of purses, and underlit the shelves for drama.

After reviewing all the existing artwork, we were able to refresh them with new matting and frames as needed, as well as adding new pieces. Our clients loved that their precious art was being given new life and placements throughout their home.

When our clients finally moved back into their home, they were clearly delighted, which is always very rewarding for us. And it’s especially gratifying to know they will continue to enjoy it for years to come.

The ideal contractor–designer relationship is built on mutual respect, clear communication, and a shared goal. The designer brings the vision; the contractor brings it to life—and both stay flexible and collaborative when challenges arise. Trust is key: the designer values practical input, and the contractor honors the design intent. Together, they work as a unified team to deliver a space that's both beautiful and functional.

3) WHAT IS THE BIGGEST CHALLENGE YOU HAVE FACED ON A JOB?

Working within an unrealistic budget is the biggest struggle every time.

4) WHAT IS YOUR FAVOURITE PROJECT TO DATE?

This one we are featuring now. We modified our client’s entire home. The budget was realistic. The clients moved out to allow our trades to work uninterrupted and in the end it was one of our finest projects because of the unified teamwork between us, our clients and the designers.

5) WHAT ADVICE WOULD YOU GIVE A CLIENT WHO IS ABOUT TO BEGIN A RENOVATION?

I always ask if they have a designer. If they say they don’t, and it’s a large scale project, I recommend they hire one. Having this collaboration makes the project go so much smoother. There are so many decisions to be made and it helps to have that guidance.

A residential design specialist and graduate of Carleton University (1993) with a degree in architecture, SangerSmith began his career working with a few architects that he greatly admired and respected, learning the ropes and developing expertise in a variety of residential and other architectural forms.

“I had the good fortune to work with two incredible architects at the beginning of my career,” he recalls, “so I had some very good influences. But I wanted to head out on my own.”

He founded Structured Creations in 2003, and over time built the firm into a full-service company, offering full custom design from concept to completion of

construction. Jerrod Sinclair, who has been with the firm since 2006, is Sanger-Smith’s right-hand man and collaborates on every project that comes through the door.

“I handle the design process and liaise with the client during all aspects of the construction – you could say I’m the face of the company, while Jerrod handles all the behind-the-scenes work, such as preparing the detailed construction documents and obtaining all the various permits." (He adds, with undisguised admiration, that Sinclair also creates probably the finest building drawings in the business.)

He adds that another advantage worth noting has to do with the comfort that comes from working with the same skilled contractors, trades, engineers and designers, some of whom have worked with Sanger-Smith over decades. From initial design and drawings, to landscape contracting, to the building team who

turns ideas into bricks and mortar, the Structured Creations team – whether in-house or under contract – is a welloiled machine.

Sanger-Smith goes on to say that through their detailed step-by-step process, clients are introduced to a select group of contractors, interior designers and other groups that become an integral part of the overall team.

It works this way, he explains: once you’ve worked with the Structured team to complete the preliminary design concept, “We then introduce you to several of our recommended contractors – all of whom have shown themselves to be extremely competent – and have you personally interview each of them and decide which team you’d prefer to work with.” From the very start, in other words, you’re in the driver’s seat.

That spirit of partnership was perfectly executed in this recently completed Burlington beauty. The client, he explains, works in the building industry; not only were they highly knowledgeable about the specifics of home construction, SangerSmith recalls, but the couple had very sophisticated design tastes, which made them an absolute pleasure to work with.

Built in a bungalow style, the house has an attractive settled look, with weightierlooking materials like charcoal brick and poured concrete encircling its lower section, and lighter-seeming glass and wood panelling for the living area above. Horizontal black-metal banding, set just below the roofline and framing the glassed-in living and outside seating areas, emphasize the nested feeling. At the eastern side, where the house rises some 20 to 30 feet over the driveway and road below, a matched pair of chimneys suggest the solid look of the piers of a bridge.

The site posed an interesting challenge:

He notes that it was particularly important to feature an outdoor seating area, since the lay of the property is such that it doesn’t have a natural backyard. “I grew up in an

a natural location for the “porch” (actually, a relaxed seating area contained behind a glass railing). There’s another, larger outdoor covered deck on the north side, with plenty of room for al-fresco dining or gathering around the firepit.

To temper the somewhat steep rise to the front entry, a poured-concrete walk broken up by short flights of steps ascends along the side facing the road, culminating at a sheltering brick retaining wall at the top. Here, under the shelter of a flat roof, the walkway turns right to the front door tucked modestly within. All along the ascent, tiered landscaping boxes on both sides of the rising walkway add the softening effect of greenery.

“From the start, we designed the ‘bones’ of the house with boxes and tiered levels; it’s something I do in almost all of my houses. Landscaping is so dynamic and an integral part of every design, as it grows and changes over time.” As the young trees, shrubs and grasses planted on the perimeter reach mature size, the harmony between the home’s clean, simple lines and its greenery will add shade and privacy to the overall composition.

The best part of his work, says SangerSmith, isn’t necessarily the end result – although he concedes that’s certainly a high point of the job. For him, it’s the process: working with the trades and other experts to guide a project from concept to completion, and helping clients to bring their ideas from initial vision to their perfect home.

“Houses are very personal things,” he says. “I’m not designing my dream home, I’m designing yours. So your ideas, and your comfort, are what matters.”

The Welsh have a word for the rush of happiness that comes from being in a perfectly delightful moment: hwyl.

It’s pronounced something like “h-oil.” You’ll be forgiven for missing the nuances of the Welsh language, which is big on consonants. Although almost everyone in Wales speaks English, preserving Welsh – the language spoken by about 30 per cent of the country’s 3.2 million people – is a point of pride for the resilient inhabitants of this country on Britain’s west coast. In areas like the walled town of Caernarfon, home to a UNESCO World Heritage Site medieval castle, about 80 per cent of people speak Welsh as their first language.

I also learned the word cwtch (kw-itch), which means to be cozily snuggled down. As a first-time visitor to Wales, I found cwtch and hwyl in abundance.

Known for its hospitality, Wales is roughly the same size as Nova Scotia. Its rich Celtic culture and long history, which includes standing firm against English occupation, is fascinating.

The country has near-mythic beauty, with steep hills and valleys, which you can experience firsthand by travelling from the mountains of the Eryri (Snowdonia) National Park range to the packed-sand beach at the colourful seaside town of Tenby, where author Beatrix Potter created Peter Rabbit.

Here, you’ll drive along narrow roads past hillside farms that look like they’ve been standing for more than a century and admire the skill of the dry stonewall builders who divided farmland into patchworks for countless sheep.

Wales also has the highest concentration of castles per square kilometre in Europe: more than 400 in all. No wonder the legend of King Arthur was born here.

I experienced my first hwyl at the fivestar Relais & Chateaux property, Palé Hall, a 19th-century country house near the market village of Bala. Prime Minister Winston Churchill was a guest in the 1950s, and I had the key to the secondfloor Churchill tower suite, complete with a stained-glass vaulted ceiling, a glass coffee table with a gleaming Spitfire

engine base, and a refurbished Second World War ejector seat next to the oak desk.

Unlike me, maybe Churchill didn’t soak in the suite’s massive copper-zinc tub. But Queen Victoria did splash in the same bath that’s in her namesake suite at Palé Hall. She stayed at the great house for 10 days in 1889. The original cast-iron hearth where the queen’s breakfast was prepared is now a showpiece in the Henry Robertson Dining Room, where executive chef Edward March creates four- and six-course seasonal tasting menus.

More hwyl came when I met the fourlegged celebrity residents of Palé Hall. Unlike typically skittish sheep, the small flock of champion Valais Blacknoses are curious and as affectionate as puppies, with trailing eiderdown-soft fleece, black knees and spiral Yoda-like horns. Head ram Karter and his buddies Kokonut, Kaffir, Ingrid, Larry and Junior are there for one reason: for the guests to visit and pet.

PORTMEIRION: THE FANTASY VILLAGE

Portmeirion is a pastel-painted fantasy village in North Wales that seems to have popped out of an Italian fairytale book. Architect Sir Clough William-Ellis’s passion project is a hwyl hotspot made to delight.

Edward I of England, hardly popular with the Welsh for his 13th-century conquest, built impressive castles to seal his occupation. You can spend an afternoon exploring the ramparts and towers of Caernarfon Castle, or the medieval walled town of Conwy and its castle. Both are UNESCO World Heritage Sites.

With more than 400 castles, get a taste of the good life with a visit or even a stay. These vast estates reflect the immense wealth of the British nobility and families who amassed fortunes in Wales with coal, slate, tin and lead mining, as well as railways and shipping.

The elegant properties are also known for lavish gardens and culinary excellence.

I also enjoyed stays in estate cottages, including the 17th-century Bodysgallen Hall. Owned by the National Trust, it’s situated on 200 acres of parkland. The Grove of Narberth is a Small Luxury Hotels of the World country house that focuses on Welsh heritage. I stayed in a romantic cottage loft suite, cwtch beneath a beamed oak ceiling.

Built over 50 years starting in 1925, the village was the setting for the futuristic 1960s TV show “The Prisoner,” starring Patrick McGoohan. You can pick up some show memorabilia in a shop located in McGoohan’s Number Six character’s cottage.

Stay in the village in one of 32 suites or 13 guest cottages, or the Portmeirion Hotel on the Dwyryd Estuary. I was a 10-minute walk from the village, down a wooded country lane, at the neo-Gothic Castell Deudraeth Hotel. It’s also part of the village complex. If you turn to channel 801 in any room, “The Prisoner” is on 24/7.

Village guests can wander around Portmeirion after it closes to the public at 5 p.m. daily.

Wales has dozens of charming market towns and medieval villages to explore. Book lovers won’t want to miss Hay-onWye, home to the annual Hay Festival of Literature & Arts. The town is a printlover’s dream, with more than two dozen independent bookstores along its narrow streets.

The Welsh capital is a city best explored on foot, to best experience the seven elegant Victorian and Edwardian shopping arcades, and Cardiff Market, a heritage Victorian glass-roof building.

Baked Brie with Grapes & Thyme

● 1 large wheel of brie cheese

● 1 bag of seedless red grapes, on the vine

● 1 tbsp olive oil

● 1 tbsp honey

● Fresh thyme sprigs

● Crusty bread or artisanal crackers

To make: Preheat oven to 375°F. In a cast iron skillet, place the brie in the centre. Toss grapes with olive oil and honey, then scatter around the brie. Tuck thyme sprigs between grapes. Bake for 15 minutes, until the brie is soft and the grapes are sizzling. Serve immediately with bread or crackers.

The skillet keeps the cheese warm through the first quarter, and the combination of creamy brie, sweet grapes, and herbal thyme feels seasonally perfect.

5. The Main Event: A Chili

Chili is a game day staple, but here we’re skipping the predictable. My decadent twist swaps traditional ground beef for braised short ribs, creating a richer, more luxurious bowl. Plan on having enough for seconds…and thirds!

Braised Short Rib Chili

● 3 lbs bone-in beef short ribs

● Olive oil, for searing

● 1 large onion, diced

● 3 cloves garlic, minced

● 1 red pepper, diced

● 2 tbsp tomato paste

● 1 cup red wine

● 1 can crushed tomatoes (28 oz)

● 2 cups beef stock

● 1 can black beans, drained and rinsed

● 1 can kidney beans, drained and rinsed

● 2 tsp smoked paprika

● 1 tsp ground cumin

● 1 tsp chili powder

● Salt and pepper to taste

To make: Season short ribs with salt and pepper. In a large heavy Dutch oven, sear them in olive oil until browned. Remove and set aside. In the same pot, sauté onion, garlic, and pepper until softened. Add tomato paste and cook for 2 minutes. Deglaze with red wine, scraping up browned bits. Add tomatoes, stock, beans, paprika, cumin, chili powder, and the short ribs. Cover and simmer for 2½ hours until meat is fall-off-the-bone tender. Remove ribs, shred meat, and return to pot, simmer another 30 minutes without lid to reduce and thicken. Adjust seasoning and serve.

Top with a dollop of sour cream, fresh cilantro, and corn chips on the side.

6. Polished Game Day Decor

Colour palette: Anchor in neutrals, charcoal, cream, and camel, then add pops of team colours sparingly.

Executive Chef Jack Lloyd’s love for food began long before culinary school. Inspired by chefs on television, he experimented in his family’s kitchen before training at the Canadian Food and Wine Institute at Niagara College.

His career blossomed at Toronto’s Marben Restaurant, where he spent six formative years under Chef Chris Locke. “Chris taught me that being a chef is about more than food,” Lloyd reflects. “It’s about understanding where it

comes from — how the seed was grown, who the farmer is, how animals are raised — and recognizing our responsibility to support sustainable systems.”

Spaghetti all’Aragosta

WITH SCALLOPS & SNOW PEAS

INGREDIENTS

● Lobster tails & claws (2–4 oz each)

● 6–8 large scallops

● 1 cup snow peas, trimmed

● 1/2 cup white wine

● 1/2 onion, finely diced

● 1 garlic clove, crushed

● 500 ml crushed tomatoes

● 150 g unsalted butter

● 1 cup cherry tomatoes

● 1 tbsp chopped parsley

● Fresh basil leaves

● Extra virgin olive oil

● Fresh spaghetti (180 g) or dried (100 g)

● Salt

INSTRUCTIONS

1. Heat 2 tbsp olive oil in a large pan over medium heat. Sauté onion with a pinch of salt for 5 minutes until soft. Add garlic (30 sec), then white wine; reduce. Stir in crushed tomatoes and simmer 15 minutes. Stir in butter until melted.

2. In a separate pan, blister cherry tomatoes in a little olive oil (4 min). Set aside.

3. Bring a large pot of salted water to a boil. Cook pasta until al dente.

4. Add lobster tails to sauce; cook 2 min. Add claws; cook 1 min. Add scallops and snow peas; cook 2–3 min until scallops are opaque and snow peas bright.

5. Toss pasta in sauce with parsley and a drizzle of olive oil. Garnish with charred tomatoes and basil. Serve immediately.

Spaghetti Pomodoro

FRESH PASTA

● 2 cups flour

● 14 egg yolks

1. Place flour and yolks in a KitchenAid mixer with the dough hook. Mix on speed 2 until a shaggy dough forms, adding a splash of water if dry or extra flour if sticky.

2. Increase to speed 3–4 and knead for 5–7 minutes until smooth and elastic.

3. Wrap in plastic and rest at room temperature for 30–60 minutes.

4. Roll dough through pasta sheeter to setting 6–7, cut with pasta cutter, and dust with flour to prevent sticking.

5. Cook in salted boiling water for 1–2 minutes until al dente.

QUICK TOMATO SAUCE

● 2 cups crushed San Marzano tomatoes

● 2 tbsp olive oil

● 2 garlic cloves, crushed

● 1 tbsp finely diced onion

● ¼ tsp chili flakes

● 10 fresh basil leaves

● Salt

1. Heat olive oil in a pan over medium heat. Add garlic and onion; sauté 2–3 minutes until fragrant, without browning.

2. Stir in chili flakes and tomatoes; simmer 12–15 minutes, stirring occasionally.

3. Add basil leaves and season with salt.

TO SERVE

Toss hot pasta directly in the sauce, adding a splash of pasta water if needed. Garnish with fresh basil or a dollop of whipped ricotta.

Wild Mushroom Soya and Mustard Cream Cavatelli

WITH TALEGGIO CHEESE

INGREDIENTS

● 3 cups mixed wild mushrooms, sliced

● 1 pkg cavatelli pasta

● 2 tbsp unsalted butter

● 4 shallots, diced

● 3 garlic cloves, smashed

● ⅓ cup soya sauce

● ¼ cup 35% cream

● 1 small bunch fresh thyme, destemmed and chopped

● 1 tbsp triple crunch mustard or grainy mustard

● 300 g Taleggio cheese (add more for extra creaminess)

● 50 g parmesan cheese

● Olive oil

● Salt and pepper to taste

DIRECTIONS:

Heat 2 tbsp of olive oil in a large pan over medium-high heat. Add shallots and sauté until translucent. Add garlic and sauté for another minute. Add mushrooms and thyme, and sauté until mushrooms are cooked and start to caramelize. Finish with butter. Stir in soya sauce, mustard, and cream and reduce by half. Melt in Taleggio cheese and set aside. Meanwhile, bring a large pot of salted water to a boil. Prepare the pasta according to the package directions, cooking until al dente. Toss with mushroom sauce. Garnish with Parmesan cheese.

Ricotta Gnocchi

WITH PESTO AND CONFIT TOMATO RECIPE

GNOCCHI

● 500 g ricotta, drained well

● 250 g all-purpose flour

● 120 g grated Parmesan

● 2 eggs, lightly beaten

● 1 tsp kosher salt

Pat ricotta dry with paper towel to remove excess moisture. Combine all ingredients in a bowl, then knead gently on a floured surface for 2 minutes until just smooth. Divide into ropes 1–2 cm thick and cut into bite-sized pieces. Place on a floured tray to prevent sticking. Cook immediately or freeze for later.

PESTO

● 4 bunches fresh basil leaves

● Zest of 1 lemon

● 100 ml extra virgin olive oil

● 2 garlic cloves

● 30 g grated Parmesan

● ½ tbsp salt

Blanch basil for 10 seconds, shock in ice water, then squeeze dry. Blend with remaining ingredients until smooth. Chill until needed.

CONFIT TOMATOES

● 2 pints campari tomatoes on the vine

● 1 cup olive oil + 1 cup canola oil

● 2 garlic cloves

● 1 sprig rosemary

● 4 sprigs thyme

● 1 tsp each balsamic vinegar, fennel seed, salt, cracked pepper

Bake at 225°F for 1.5–2 hours until skins burst.

TO SERVE

Boil gnocchi in salted water until they float. Toss with pesto, 60 ml confit tomato oil, and reserved lemon juice. Plate with confit tomatoes, stracciatella, toasted pine nuts, shaved Parmesan, and fresh basil. Serve immediately.

● 2 tbsp olive oil

● 1 tsp garlic, minced

● 1 roasted red pepper, diced

3. Deglaze the pan with a splash of white wine, scraping up any browned bits.

4. Pour in cream, reduce heat, and let simmer gently for 5–7 minutes until thick and velvety. Season with salt and pepper.

5. Stir in spinach and basil just before serving so they stay bright and fresh.

RUFUS WAINWRIGHT

THE DRAMA KING WE DIDN’T KNOW WE NEEDED

In a world increasingly obsessed with algorithm-approved pop hits and TikTok bangers under 30 seconds, Rufus Wainwright remains a gloriously defiant outlier. The Canadian-American troubadour has never fit into a neat musical box—and thank goodness for that. He’s theatrical, he’s emotional, he’s classically trained and delightfully over-the-top. And through it all, he remains one of the most interesting, underrated forces in modern music.

Wainwright was practically destined for stage lights, born into a family of folk royalty—his parents are Loudon Wainwright III and Kate McGarrigle, and his sister Martha Wainwright is a musical powerhouse in her own right. But while the family business might have been acoustic guitars and heartfelt harmonies, Rufus charged off in his own direction. With a

piano and a penchant for grand gestures, he forged a style that’s equal parts opera, baroque pop, and Broadway melodrama.

His debut album  Rufus Wainwright (1998) was a breath of fresh air in the Lilith Fair era, filled with lush orchestration and theatrical yearning. Critics swooned. David Bowie was a fan. Elton John declared him “the greatest songwriter on the planet.” And still, Rufus managed to stay weird—in the best way.

This is, after all, a man who once recreated Judy Garland’s 1961 Carnegie Hall concert in its entirety, complete with the same setlist and a similar level of emotional vulnerability. It was not irony. It was not camp (okay, maybe a little). It was Rufus being Rufus: deeply reverent, musically fearless, and never afraid to cry in public.

What makes Wainwright so compelling is that he takes the art of songwriting personally. His songs don’t just narrate— they confess. Whether he’s crooning about unrequited love, addiction, or the state of the world, there’s an emotional honesty that punches right through the often extravagant arrangements. Songs like “Cigarettes and Chocolate Milk,” “Poses,” or “Going to a Town” (a political ballad disguised as a torch song) showcase his ability to blend razor-sharp wit with deep vulnerability.

And let’s talk about that voice—part velvet, part tremble, part opera house. It’s the kind of voice that doesn’t just sing a lyric, it feels it, stretches it, dramatizes it like it’s the last thing he’ll ever say.

Beyond music, Wainwright is also a passionate advocate for LGBTQ+ rights and a fearless presence in an industry that often rewards conformity over character. He’s written operas, performed Shakespearean sonnets set to music, and collaborated with everyone from Joni Mitchell to Mark Ronson.

So, in a musical landscape sometimes lacking flair and originality, Rufus Wainwright stands as a beacon of theatrical brilliance and unapologetic artistry. He may not top the Billboard charts every week, but he continues to make music that’s daring, dazzling, and defiantly his own. Long live the drama king.

TURNING LAUGHTER INTO LASTING CHANGE

The celebrated Oakville fundraiser celebrates fifteen years of successful support for children’s charities.

For over 15 years, Chuckles for Charity has been one of Oakville’s most anticipated upscale fundraising events, blending an evening of stand-up comedy with a mission that touches every stage of a child’s development.

“Our children in Oakville and across Canada are facing significant challenges post-COVID, with literacy and learning gaps continuing to widen and sedentary behaviour at an all-time high,” says Brian Warren, Founder and Executive Director of Start2Finish. “With more than 250,000 graduates of our programs over the past two decades, Start2Finish remains on the frontlines of providing access to critical supports so children can thrive. But we can't do it alone! It takes a community to raise a child, and this community has continued to show up time and time again. I'm confident

that this year, as we expand our programs in Oakville and across Halton and collaborate with other impact-driven local charities, there's no limit to what we can accomplish together in helping the most vulnerable in our communities – our children – succeed!”

Organized by Start2Finish, and this year, in partnership with the Children’s Aid Foundation of Halton and Big Brothers Big Sisters of Grand Erie, Halton, and Hamilton, the event is more than just a night of laughs. It’s part of a carefully coordinated effort known as The Road to Success. Chuckles for Charity takes place on October 24 starting with a cocktail reception at Ce Soir Brasserie & Bar in Downtown Oakville, and with the comedic lineup taking place at the nearby Oakville Centre for the Performing Arts.

“This partnership is about creating a clear, connected path of support for every child,” says Anita Wong, communications and events manager at Start2Finish. “Through The Road to Success, each organization plays a vital role at different stages of a child’s journey. From a child’s first days, the Children’s Aid Foundation of Halton provides essential care and stability. Start2Finish then steps in during Grades 1 to 8, offering literacy programs, mentorship, and after-school learning opportunities. Big Brothers Big Sisters carries that support forward, guiding youth with mentorship as they navigate into adulthood. Together, we ensure no child ever has to walk that road alone.”

The collaboration strengthens more than just programming; it’s helping to meet an ambitious, long-term policy goal. Karen Warankie, fund development associate at Start2Finish, explains, “Our goal is to provide access to literacy enrichment and well-being supports to 70 per cent of marginalized elementary school-aged children living in poverty or deprivation within Canadian school

As much as the lineup of top-notch comedians is a draw, attendees often point to something else as the heart of the experience: the people.
