Tom Wilson The Evolution of

The Canadian rock legend morphs from rock star to storyteller to spirit healer.

n 1997, I sat down at MuchMusic to interview Junkhouse frontman Tom Wilson, one of the loudest, most electrifying voices coming out of Hamilton, Ontario, at the time. Now, in 2025, almost three decades later, I find myself in a very different kind of room with him. Instead of stage lights and amps, we’re surrounded by his paintings at the Beckett Fine Art Gallery, right here in our shared hometown. There’s something beautifully full-circle about it.

Tom Wilson is no longer just the voice behind iconic Canadian bands like Junkhouse, Blackie and the Rodeo Kings, and Lee Harvey Osmond. He’s become a multidisciplinary storyteller: author, playwright, and a visual artist whose work now hangs in prestigious galleries across the country. But more than that, Tom has become a symbol of rediscovery, of truth reclaimed, and of

“I just know that the energy I allow to surround me is so positive and so driven that I get to do these great things in my life,” he told me. “I’ve never been happier in my life.”

His work – often bold, meditative, and covered in thousands of hand-dotted points – echoes a spiritual and cultural reclamation.

This evolution didn’t happen overnight. In fact, when Junkhouse released Fuzz, their last record, in the late ’90s, Wilson was already laying the groundwork for his next creative chapter.

“It had to be the end,” he said. “Bands run their course… You start out trying to create something that didn’t exist yesterday, but that gets lost in the chase for success. Painting, writing plays, writing books – these things bring me back to the essence. There’s no instant gratification. Just the act of creating. That’s where the truth lives.”

Wilson’s truth has always lived beneath the surface, buried even from himself. At age 53, he discovered he was adopted and of Mohawk heritage, a revelation that rocked his world and reshaped his identity.

“The truth of who I am was kept from me,” he wrote. “But it groaned in agony from inside the walls of my childhood home.”

Tom, or Tehoháhake, his traditional Mohawk name, has since embraced this lineage, not only in his memoir Beautiful Scars, but in his art. His work –often bold, meditative, and covered in thousands of hand-dotted points – echoes a spiritual and cultural reclamation.

“It pacifies me, it calms me down,” he says about his art. “It’s my meditation. I’m a big guy with a lot of wild energy. It gives me focus… It’s almost like a prayer. It’s also my path back to feeling Indigenous.”

One piece in particular, Will Not Be Destroyed – a 10-foot tribute to the children who never came home from residential schools – was sold to a corporate collector before being featured at the renowned McMichael Canadian Art Collection Gallery in Kleinburg. It’s an emotional milestone for Wilson, and a testament to how deeply his work resonates.

And his artistic talent hasn’t gone unnoticed. During the debut of Beautiful Scars as a stage play at Theatre Aquarius, Beckett Fine Art held a companion exhibition of Tom’s art. The art show? It sold out! Completely! A mind-blowing occurrence for any artist.

“That kind of support, it’s rare,” he told me, confiding he felt both humbled and a little stunned. “But it tells me people are connecting not just with the art, but with the journey. Tom Beckett at Beckett Fine Art is a champion and ally to my artwork and to the Indigenous community of artists, who create to keep our culture where it belongs: in the brightest light for the world to see!”

Now, in June 2025, Tom Wilson is returning with a new solo art show titled “Blood Memory” at Beckett Fine Art in Hamilton. It promises to be a showcase of vibrant new works large and small, oil-painted paddles and a guitar, and the debut of a series of dynamic hand-pulled silkscreen prints, each one a continuation of his everdeepening dialogue with self, spirit and story.

When I ask what’s next for Tom Wilson, he just smiles. “More creation. More connection. That’s all I ever wanted anyway.”

From guitar strings to paintbrush strokes, from the stage to the canvas, Tom Wilson continues to do what he’s always done best: tell the truth, in whatever language he’s discovering it.

CONTEMPORARY CLASSIC

REFINE CUSTOM HOMES REINVENTS THE CLASSIC COUNTRY FARMHOUSE AS A SPRAWLING, AND SUPREMELY COMFORTABLE, CONTEMPORARY FAMILY HOME.

Photos by Alex Lukey
Refine

Custom Homes' contemporary take on a classic English farmhouse is more than a splendid example of the company’s passion for detail, smart space planning and highquality construction. It’s first and foremost, a comfortable and inviting family home.

“Every home we build starts with a vision,” explains Al Lynn, who with partner Justin Da Silva, co-founded Refine Custom Homes in 2022. A premium custom home builder serving the west GTA area, known for blending classic craftsmanship with modern livability, Refine takes pride in a client-first approach, rooted in transparency, care, and uncompromising quality.

“Refine combines speed of execution with clear, documented planning – a rare combination in the custom home space,” says Lynn. The company’s thorough process, paired with genuine

client care, results in homes that are both technically sound and deeply personal. Its signature planning process, he continues, is built to eliminate ambiguity.

What makes Refine different from other custom builders? For the partners, who separately exchanged executive careers to pursue a passion for buying, renovating and selling houses before teaming up to launch Refine, it comes from firsthand experience on the owners’ side of things.

Left: The kitchen features a carefully chosen mix of traditional and contemporary materials. Above: A striking jute light fixture adds an artisanal touch to the dining room.

“Unlike a typical owner/builder relationship, the builder doesn’t always take the owner’s side,” Da Silva observes. “But we have a real sense of what keeps the owner up at night, which stems from over 16 years as an owner's representative in my previous career.”

The secret, explains Da Silva, is in expert, detailed planning of every contingency, long before the first shovel touches the ground. “Part of our process is efficient design and planning, in advance. Our commitment to cost and scheduling is an important part of the overall process.”

It also has to do with excellent, seamless collaboration with team members and key trades, many of whom are an in-house part of the company, rather than independent subcontractors, and are able to provide their expertise both during the pre-construction planning and when the build is underway – quickly developing solutions to any problems that may arise.

Set in a pretty suburb in the hamlet of Carlisle, this home, with its fieldstone exterior, features beautiful views of woods and sky for miles around. To make the most of the stunning setting, Lynn and Da Silva conceived the house as bungalow-style, with a lower level and extended living quarters over the garage.

Then they gave it huge wraparound views, and no fewer than six walkouts – as Lynn observes, indoors and out are so integrated that it could be in California, rather than a four-season climate like Ontario.

The circular driveway leads to a walnut front door flanked by large sidelights, and opens to a classic farmhouse foyer. Here’s where you get the first glimpse of the work of interior designer Ashley Sleiman and the team at Barnard & Speziale Design, who fine-tuned the interior design to bring the partners’ vision to life.

“We wanted something more subdued here, with subtle design cues in features like the scalloped shape of the overhead lighting fixture, textured wallpaper and the side mirror, with its matching scalloped edges,” Sleiman notes. The combination of soft, woodsy tones and textures makes for a cozy welcome to the main living area directly ahead.

From end to end, a soaring vaulted ceiling lined in stained pine with exposed rafters, overlooks a huge open space where light pours in from all sides. A succession of floor-to-ceiling windows, some closed and others that open to the garden, make it cheerful even on the gloomiest winter days.

Clockwise from above: A precast concrete mantel updates the classic stone fireplace; near-black walls add coziness to the primary suite; a reading nook under the eaves; sliding doors turn the family room into a library, or open to reveal a TV for family movie night.

“THE REAL MAGIC OF [THE HOME] IS THE WAY IT FLOWS.

Every room leads somewhere new, and it always brings you back to the heart of the home.”

To the right, the rustic tone and texture of the pine ceiling provides an interesting counterpoint to the kitchen’s sleek contemporary cabinetry, pre-cast concrete range hood and marble counters. Another design delight lies just to the right: a walk-in butler’s pantry. It shares the light from its big windows with the main kitchen through a fully glazed interior window: it’s a modern update on a traditional Victorian summer kitchen.

The adjacent dining room features a custom oak-and-steel table and off-black wooden chairs with rush seats; as with the design overall, it’s about comfort rather than stiff formality. At the end of this “wing,” a small family room offers a place to escape from the bustle without being cut off completely. With its sliding cabinet doors that offer the option of TV watching or access to bookshelves, it’s a versatile space where kids can watch a movie, or grownups can have a quiet chat.

On the other side, another farmhouse classic dominates the main living room: a massive stone fireplace, updated with a smooth precast concrete mantel. Sleiman particularly likes the gigantic, five-foot wrought-iron candlestick chandelier. “In a big space like this, it helps to ‘mark off’ the living room area,” she notes.

Directly behind the living room sofa, the eaves slant down over a cozy, bookshelf-lined reading nook. From here, a short hallway takes you into the private world of the primary bedroom suite, serene and more than a little romantic. Here, an abundance of windows makes the choice of near-black walls dramatic and cocooning, rather than gloomy.

“The real magic of [the home] is the way it flows,” says Lynn. “Every room leads somewhere new, and it always brings you back to the heart of the home.”

Beauty Restraint of The

in Design

Ideally, your home decor should serve more than your aesthetic style. No matter your lifestyle or design preferences, it can be a haven and a source of positive energy.

MEET THE DESIGNER

When I purchased my home in Niagara almost ten years ago, I knew I had stumbled on a jewel of a property. My mid-century modern home stood against the escarpment, with a large spring-fed pond right outside my kitchen window.

It was this connection to nature that made me want to renovate my home thoughtfully. We naturally began with installing large windows everywhere, giving us the feeling that we lived in a treehouse. I so enjoy the gorgeous views that change seasonally.

Even now, I have moments of silent contemplation and gratitude for this wonderful place.

I think we can all agree that our world has gotten a lot more complex these days, so it is not surprising that our homes have become even more important to us.

More than ever before, it is a place to unwind, relax and fully recharge.

Wooden kitchen cabinets are having a comeback, especially darker woods. It’s a far cry from the ever-popular white kitchen!

While it is important for me as a designer to be aware of the direction of design trends, I feel creating calming, timeless and thoughtful living spaces is crucial with today’s intense life cycle.

Whether or not you have a great view from your window, the key for any good design is to have a flow or synergy from room to room. Your personal design style – traditional, transitional, modern – becomes much less important.

Rather, I think there are other philosophies coming into play. And while we may be familiar with some, they seem to make more sense now. Are we moving towards a more restrained style of design?

Let's start with a design philosophy many of us are familiar with: Feng Shui. This philosophy aims to precisely guide our furniture placement in order to promote positive energy. De-cluttering is also key, and since so many of us work from home, controlling this is critical for a soothing environment.

Feng Shui principles advise that getting rid of clutter not only clears physical space, but also clears the mental space in our heads. Bad luck is often linked back to a cluttered home, so Feng Shui experts usually begin at the front entrance of a home.

They also embrace real plants versus artificial ones, and prohibit sharp-edged furniture pieces, as they believe curved furniture promotes positive energy.

Lastly, happy or positive artwork that inspires calm and joy should be chosen over art that evokes negative emotions.

Now consider the Japanese aesthetic of Yugen. Originating from Zen Buddhism, this practice values restraint over excess: subtle emotions, less symmetry. In fact, imperfection and “the spaces in between” are how a home becomes timeless and connected to nature: it’s serene, but not minimalist. A space decorated following this philosophy is tranquil and reflective, and most importantly, feels as if the space has always existed in this way.

More and more it seems, we have been seeing these different design elements come into play. I call it an organic movement. By adding textures and aged patinas to a clean-lined contemporary space, you are not only creating a visual and tactile story, but also developing your own story as the homeowner.

Wooden kitchen cabinets are having a comeback, especially darker woods. It’s a far cry from the ever-popular white kitchen! Some of the features of Yugen design include natural stones and hand-made collectibles and accessories, preferably weathered and imperfect, to finish a new space so that it has a lived-in look. The style also embraces light, space and views; light creates atmosphere as well as being functional. Space means embracing empty areas and not just filling them up; negative spaces add balance.

Consider views that frame visually pleasing scenes; this could be a garden, or even a single tree. Furniture is grouped around these views to allow the sitter the maximum enjoyment.

The key for any good design is to have a flow or synergy from room to room.
Feng Shui experts believe curved furniture promotes positive energy.
Our homes can offer much more than a perfectly curated space; with care, they can become an oasis of mental calm and positive energy.

Another Japanese principle is Ma, which translates to “negative space.” Japanese architecture and design envelop this practice and define it this way: “the absence of objects is an intentional as their presence.”

Western design fills space, but Ma values balance between elements, and steps away from fast-paced style to a slower, more thoughtful form.

Our homes will always be a reflection of our lifestyle, but choosing to embrace some of these aesthetics can make a big difference. In our overfilled, stressful lives, our homes can offer much more than a perfectly curated space; with care, they can become an oasis of mental calm and positive energy.

Here are five ways to show restraint and improve positive energy in your decorating:

Not every shelf needs something on it. Less is more.

Don't think every wall needs a piece of art. Let some walls breathe.

Use seasonal change as a way to refresh both your living space and your mind.

Add live plants to your living space. Choose healthy, easy-care ones if you don't have a green thumb.

Consider de-cluttering spaces every six months, or even seasonally. This includes wardrobe clean-outs. Start at your front door.

Followers of Ma say “the absence of objects is an intentional as their presence.”

A steadying force

It’s completely understandable to feel uneasy during market fluctuations. The constant barrage of headlines can amplify anxiety and lead to impulsive decisions. Here are a few strategies to manage that unease:

• Stay informed but disciplined: Keep up with the news, but limit exposure to sensationalist headlines. Focus on credible sources and relevant information.

• Review your goals: Remind yourself of your long-term investment goals. Shortterm market movements often do not impact long-term strategies.

• Diversification: Ensure your portfolio is diversified. This can help mitigate risks and reduce the impact of volatility on your overall investments.

• Stay calm during downturns: Market downturns are a natural part of investing. Historically, markets have rebounded over time. Resist the urge to panic sell.

• Consider consulting a professional: If you’re feeling particularly anxious, speaking with a financial advisor can provide clarity and reassurance.

• Practice mindfulness: Techniques such as meditation or journaling can help manage stress and keep emotions in check.

By focusing on your strategy, staying informed without overreacting, and remembering that volatility is part of investing, you can navigate fluctuations with greater confidence.

Your life’s goals are our life’s work. Combining our personal approach, in-depth knowledge and innovative technology, we’re able to create a plan that stands up to market volatility and enables you to achieve your financial goals – no matter the conditions.

THE WHITE LOTUS:

THERE HAS NEVER BEEN A BETTER TIME TO EMBARK ON A JOURNEY TO SOUTHEAST ASIA, A REGION WHERE ANCIENT TRADITIONS BLEND SEAMLESSLY WITH MODERN LUXURY.

As one of the most captivating destinations for discerning travellers in 2025 and beyond, the vibrant cultures, breathtaking landscapes, and world-class hospitality of Southeast Asia offer an unparalleled experience. With the highly anticipated third season of The White Lotus set in Thailand, this alluring region is poised to capture global attention, drawing travellers eager to experience its pristine beaches, indulgent resorts, and rich cultural tapestry.

But seasoned adventurers know that travel is most powerful when it moves beyond the surface, forging deep connections with the places we visit and the people we meet. Whether it’s waking up in a secluded rainforest retreat, sailing through emerald waters on a private yacht, or witnessing centuries-old traditions unfold in a quiet temple at sunrise, Tully Luxury Travel curates experiences that transcend the ordinary. The company’s exclusive partnerships, regional expertise, and personalized approach assure that every journey is seamless, immersive, and tailored entirely to you.

A JOURNEY THROUGH BEAUTY AND CULTURE

Southeast Asia is a region of captivating contrasts, where modern skyscrapers rise above ancient temples, bustling markets lead to tranquil beaches, and history and innovation exist side by side. From the rhythmic hum of Buddhist chants at dawn, to the dazzling neon-lit streets of a metropolis at night, the region offers a feast for the senses.

A journey here might begin in a dynamic city, where private guides unlock stories behind centuries-old alleyways and sacred shrines. It could mean retreating to a remote island where the only footprints in the sand are your own, or staying in a jungle retreat in Laos where a morning meditation with monks offers a moment of quiet reflection. Every destination tells its own story, and with Tully Luxury Travel, each experience is curated to offer you the very best of it.

ABOVE ANCIENT TEMPLES, BUSTLING MARKETS LEAD TO TRANQUIL BEACHES, AND HISTORY AND INNOVATION EXIST SIDE BY SIDE.

THE ART OF SLOW TRAVEL

Luxury travel in Southeast Asia is about more than just where you stay; it’s about how you experience a destination.

Aboard a private luxury boat in Vietnam’s Halong Bay, you can drift between limestone karsts and hidden lagoons, far from the crowds. In Cambodia, you might choose to explore the Angkor temple complex in the golden light of dawn, before retreating to a serene countryside estate for an afternoon of relaxation. A train journey through Malaysia allows you to witness the landscapes unfold at a leisurely pace, while a private villa on a Thai island offers the ultimate sanctuary for those seeking seclusion and serenity. Slow travel is a philosophy that thrives in this part of the world, where time seems to stretch and every moment feels richer. It allows you to savour an intimate cooking class in a local home, where generations of knowledge are passed down through time-honoured recipes.

SLOW TRAVEL IS A PHILOSOPHY THAT THRIVES IN THIS PART OF THE WORLD, WHERE TIME SEEMS TO STRETCH AND EVERY MOMENT FEELS RICHER.

It means spending an evening at a hidden restaurant known only to locals, where the dishes tell the story of a nation’s culinary heritage. Whether it’s embarking on a spiritual retreat, taking part in a traditional textile weaving workshop, or simply pausing to admire a sunset over the Mekong River, every experience is designed to be deeply meaningful.

BEYOND THE ORDINARY

True luxury lies in the details – the quiet moments of perfection that turn a trip into something unforgettable. With Tully’s local connections and insider knowledge, the company can open doors to experiences that go beyond what traditional travellers can access.

Imagine a private candlelit dinner at Angkor Wat, where the ancient temples serve as the backdrop to an exquisite Khmer feast, prepared by a personal chef. For those with a passion for craftsmanship, exclusive workshops with master artisans in Vietnam and Laos offer the opportunity to create one-of-a-kind lacquerware, handwoven silk, or delicate pottery. Culinary enthusiasts can embark on private market tours with top chefs, followed by hands-on cooking classes in stunning countryside settings, offering a true taste of the region’s rich culinary traditions.

This is an invitation to experience the world in its most authentic and aweinspiring form. With Tully’s expert guidance, bespoke itineraries, and seamless execution, every detail is handled with care, allowing you to travel with ease, confidence, and the knowledge that you are about to embark on something truly restorative.

Tucked away in the heart of Caledon’s Headwaters Region, The Liberty Inn is a historic country retreat that seamlessly blends heritage charm with modern luxury. Recently restored with an eye for detail, this five-suite inn offers a perfect getaway for those looking to relax, reconnect, and indulge in the serene beauty of the countryside.

ur journey to The Liberty Inn began with a scenic drive through winding country roads from Burlington, just over an hour but transporting us to a world that felt a million miles away from the fast pace of city living. Upon arrival, we were greeted with a seamless, contactless self-check-in experience, accessing the gated property and our suite with pre-provided codes. As we pulled up to the inn, its stunning stone exterior immediately set the tone for the elegant and thoughtful experience that awaited us.

Upon our arrival, we were graciously upgraded to the Hawthorne Suite, the largest of the five accommodations. Spanning two floors, it features two king-sized bedrooms, one and a half bathrooms, and an inviting open-concept living, dining, and cooking space. The suite felt both grand and intimate, with exquisite touches that celebrated craftsmanship: from the in-house handcrafted ceramic tiles, to original artwork from local artists. A record player with a selection of vinyl, automated blinds, and a diffuser that filled the space with a spa-like aroma were just a few of the details that made it feel incredibly special. One of the most luxurious touches was the private in-suite infrared sauna, along with a red and blue light therapy mask.

What made the stay feel especially personal was the care and inspiration behind the space. Owners Bruno and Jacqui have infused the Inn with thoughtful touches, including handcrafted ceramics from Jacqui’s nearby Soft Fire Ceramics studio. Every plate, mug, and serving dish was made by hand, adding warmth and artistry to the kitchen and living areas. The fridge was stocked with fresh eggs, butter, milk, fruit, and ready-tobake croissants, and the kitchen included everything needed for cooking, plus a selection of teas and coffee.

Before heading out for the evening, we enjoyed a drink on our private outdoor porch off the living room and played a Fleetwood Mac record as we got ready. We then made our way to GoodLot Farmstead Brewing Co., a five-minute drive away. Lucky for us, it was their Friday night Taco Bar Pop-Up (by Tacos Chidos) with live music. We sampled the Farmstead Ale alongside flavourful tacos – tinga (pulled chicken) and picadillo (ground beef) – while soaking in the lively atmosphere and local charm.

Back at the inn, we were eager to experience the Woodland Spa, a private retreat exclusively available to guests, just steps from our suite. We walked over clad in the HUSH weighted robes provided by the inn, for our hour-long booking. The spa, surrounded by nature, featured a cedar hot tub, a Finnish sauna, and a refreshing cold plunge. As dusk settled in, the twinkling string lights and cozy firepit area created a

Afterward, we returned to our suite to try out the Kala Red Light Therapy Masks, then curled up in the living room to watch a movie while baking the croissants, which were absolutely delicious paired with raspberry jam. The beds were incredibly comfortable, with a calming sleep spray adding an extra touch of relaxation. We slept soundly in the comfort of the suite.

The next morning, we embraced the slow pace of our countryside retreat before

heading out for breakfast at Heatherlea Farm Shoppe's café, a charming spot just ten minutes from the inn. Their store also featured a beautifully curated selection of kitchenware, cozy home decor, and unique gifts, making it a delightful stop. A Cypriot Tale

Irene Matys realizes a long-held dream with her first cookbook, My Cypriot Table.

Irene

Matys wholeheartedly believes in creating and serving beautifully plated food. She knows the sights and aromas foster the anticipation of a wonderful meal. But what makes it truly special is the connection it creates – lingering a little longer not just for the flavours, but also for the warmth of good company.

She captures this perfectly in her new cookbook, My Cypriot Table. Matys, who lives in Oakville, celebrates her Greek Cypriot heritage at every turn, both in the book and in her work as a recipe developer, food photographer and farm-to-table advocate. “I’m a firm believer that people eat with

Her family’s journey unfolds in the beginning pages of the book, and continues to build through to the last page. A heartwarming personal anecdote accompanies each of the recipes, imparting its importance to Matys, her family and her culture.

“I’m a firm believer that people eat with their eyes. If I can make you fall in love with a dish at first sight, I know you’ll want to taste it.”

When asked which dish she’d choose from her entire repertoire, the answer comes easily: Krambo Salata with Potato Wedges. “I like to call it my Cypriot poutine. It’s incredibly special to me because my grandmother, Irene, who lived with us, made it often. We’d walk home for lunch filled with excitement, knowing she had it waiting for us; it was my absolute favourite. It’s deeply nostalgic. Every time I have it, I’m reminded of my grandmother – my yiayia, as we say in Greek. Now, my daughters love it, and even my grandson enjoys it.”

Irene and her family immigrated to Canada as refugees in 1976. Though they arrived with little, they carried with them a strong familial foundation and a deep connection to their culture. “I grew up with both parents cooking and gardening. We always had a garden full of fresh vegetables. Food is everything. It’s communal, it’s special, it nourishes us, and it brings us together. That’s why I believe it should always be prepared beautifully.”

Baklava Butter Tarts

MAKES 12 TARTS

Mmm, butter tarts. Truly a Canadian classic! Butter tarts aren’t just a dessert; they’re a taste of Canadian history and a sweet reminder of the country’s warm and welcoming spirit. For Greek Cypriots, the same things hold true for baklava. This recipe is a culinary marriage of these two classics and my two heritages: the rich, gooey sweetness of butter tarts pairs perfectly with the aromatic cinnamon and cloves, nuts, and layers of flaky pastry that define baklava. The best (and sweetest) of both worlds, you might say.

INGREDIENTS

⅓ cup unsalted butter, melted

3 tbsp unsalted butter, room temperature

½ cup dark brown sugar

2 large eggs, room temperature

¾ cup pure maple syrup

¾ tsp pure vanilla extract

½ tsp ground cinnamon

⅛ tsp ground cloves

⅛ tsp sea salt

⅓ cup finely chopped walnuts

⅓ cup finely chopped raw almonds, skin on

6 sheets phyllo, thawed, following package directions

METHOD

Preheat the oven to 350°F and brush a 12-cup muffin tin with melted butter.

In a large bowl and using a hand mixer, whisk the room-temperature butter and sugar until fluffy and light in colour, 2 to 3 minutes. Whisk in the eggs one at a time; do not overmix. Stir in the maple syrup, vanilla, cinnamon, cloves, salt, walnuts, and almonds. Set aside until ready to use.

Lay a sheet of phyllo on a clean work surface and lightly brush it with melted butter. Repeat this process with the remaining sheets, stacking each sheet on top of each other.

With a sharp knife, cut the phyllo stack into 12 equal squares. Carefully press each stacked piece of phyllo into the muffin tin to form a cup. Give the filling a gentle stir and divide it among the phyllo cups.

Bake for 25 minutes, until the phyllo is golden and the filling has slightly set. Let them cool for 5 minutes to set in the pan, then remove to a cooling rack.

These can be enjoyed warm or at room temperature. They can be refrigerated in an airtight container for up to 3 days. To serve, bake them in a preheated oven at 350°F until the phyllo is crisp, about 5 minutes.

Use a glass measuring cup with a spout to make it easier to fill the cups.

Drink magazine or working the fields at Plan B Farm, where she volunteers her time. A love for farming runs in the family; her paternal grandfather had olive groves in Cyprus, providing the entire island with the fruits of his labour.

The cookbook started as a bucket-list item and became a three-year passion project. Matys created it, she says, “not just to leave a legacy for my family, connect them to their roots, and to inspire others to cook Cypriot cuisine, but also to embrace their heritage. Many people don’t know about Cyprus; when I say where I’m from, they ask, ‘What part of Greece is that?’” Though geographically close, Cyprus is its own country. “Yes, we speak Greek, but I call Cyprus the island where East meets West – a beautiful marriage of Mediterranean and Middle Eastern flavours.”

The book features more than 100 recipes, each of them spotlighting her home country’s rich culinary heritage. Some of its highlights include the many ways Cyprus’s cherished halloumi cheese can be turned into a Canadian classic “grilled cheese,” and how integral ingredients like tahini and mastic can be creatively paired with local produce.

“Food is everything. It’s communal, it’s special, it nourishes us, and it brings us together.”

Offering Canadian infusions to her recipes, she shows how to make Eliopita (Cypriot Olive Bread) and Spanakopita, Cypriot Meatballs, and Halloumi Saganaki, and use Ontario-grown garlic scapes in a Halloumi Quiche. Serve Baklava Butter Tarts for a sweet finish. Many of the recipes also offer substitutions that cater to different diets, whether it’s vegetarian, vegan, pescatarian or carnivore.

With a freshly printed hard copy in hand, Matys shared her cookbook with her parents on a recent trip home to Sarnia. “They’re so proud of this accomplishment and the love I poured into it. Most of all, they’re proud that I’ve continued to celebrate our Cypriot culture and roots here in Canada. It brought back so many emotions – coming here as refugees, they had lost everything,” she says. “They worked tirelessly to give us a better life. Flipping through the pages, knowing they inspired me to carry on these traditions and recipes, meant the world to them.”

ERINN & KELLY, THE MOM AND DAUGHTER CREATORS OF EVERYTHING KELLY’S!

THE BAKE SHOPPE WITH A BIG MISSION,

and a bigger heart.

KELLY’S BAKE SHOPPE BEGINS A SWEET NEW CHAPTER IN OAKVILLE

In 2012, mother-daughter duo Kelly Childs and Erinn Weatherbie opened Kelly’s Bake Shoppe in Burlington. Last December, the bakery proudly expanded with a new location in Oakville. In an interview with Best Side Magazine, the pair share sweet moments from their journey so far.

WHAT MAKES YOUR BAKERY SPECIAL?

We’re 100% gluten-free, plant-based, dairy-free, egg-free and peanut-free, giving people the peace of mind they can enjoy anything at Kelly’s. We see thousands of incredible customers on a weekly basis. People travel all the way from Ottawa, Toronto, Buffalo, London, Niagara, Pennsylvania and Montreal just to visit us!

HOW HAS THE OPENING EXPERIENCE GONE FOR YOU AND YOUR TEAM?

The first few months in business in downtown Oakville have been spectacular. With the news that our Burlington location will be demolished for rental units, we’re looking forward to having Oakville as our flagship location and move forward on our path of growth for 2025 and beyond. As entrepreneurs, pivoting is our best ally and we’ve learned to be adaptable and resilient!

WHAT HAS BEEN THE MOST POPULAR ITEM ON YOUR MENU SO FAR?

We have to say our skinny cookies, protein-packed and sweetened with roasted bananas, coconut sugar and maple syrup, along with our muffins

and milkshakes are the most popular. People are losing their minds when they find out everything is allergen-friendly.

HOW DO YOU ENVISION THE GROWTH OF YOUR BUSINESS HERE?

While we’re sad to say goodbye to our first location, we’re excited for the energy coming from the Oakville community. We’ve hired a team of consultants to help us expand our brand in multiple ways—more details to be shared soon—and we also launched a brand new website. You can now order treats through our website for pick-up, delivery or nationwide shipping! FOR MORE INFORMATION,

BRIDAL SHOWER THE MODERN

Wedding season is quickly approaching, and the lead-up to the big day is an exciting time, with many celebrations and milestone moments for the bride and groom. From engagement parties to bridal party proposals, family brunches and bachelorette celebrations, there are countless opportunities to honour the couple.

While family and friends eagerly anticipate the big occasion, the sheer number of events leading up to the wedding has grown significantly these days. With this increase, there’s been a noticeable shift in traditions, particularly when it comes to bridal showers. The bar has been raised, and today’s showers are no longer just about the bride – they’re about creating an engaging, memorable experience for all attendees. Hosts are crafting immersive, well-thought events that guests genuinely enjoy. Here’s how to plan a modern bridal shower that leaves everyone buzzing with excitement for the big day.

Setting the Tone

One of the most important touchpoints is the invitation. Thoughtfully designed invitations set the stage and generate excitement long before guests arrive. Consider coordinating a colour palette and revealing key details that hint at the shower’s theme. While there’s something special about receiving a beautifully crafted invitation in the mailbox, a well-curated digital option can be just as exciting. Either way, the invitation should communicate that this is a standout event, and encourage early RSVPs.

A fun way to build anticipation is to include an outfit suggestion that ties into the theme. For example, “Kindly dress in your favourite floral” sets the tone for a blooming garden party, while “Neutral chic” signals a modern, minimalist affair. Not only does this help create a cohesive aesthetic, but it also gets guests engaged from the start. Have fun with it!

Getting Guests Involved

Family and close friends of the bride are often eager to contribute. If you’re hosting at a venue, traditional shower treats and cookies may already

be provided; but if you are hosting at home, guests might offer to bring food or beverages. To maintain a polished look, ensure you know exactly what each guest is bringing, and be prepared to re-plate items on serving dishes that align with the theme. Elevate contributions with small details: having extra garnishes like microgreens, edible flowers or other finishes can instantly refine the presentation.

Consider incorporating a signature cocktail designed by the bridal party. This adds a personalized touch and becomes a conversation starter at the event. Lean on those closest to the bride to incorporate her favourite flavours, whether that’s a refreshing citrus spritz or a floral-infused gin cocktail. And don't forget a zero-proof option!

Creating Experiences

Traditional bridal shower games have largely fallen out of favour. Instead of wrapping guests in toilet paper gowns, focus on interactive experiences that bring people together in a meaningful way. Here are some guest-involved trends that elevate the bridal shower experience.

1

Wine Tasting

Rather than just serving wine, curate a guided tasting with a boutique winery, such as Kern Wine Co. in Vineland, Ontario. Bringing in a sommelier or wine expert transforms the experience into an interactive and educational moment. Guests can learn about tasting notes, perfect pairings, and the art of wine. This group experience fosters conversation, connection, and a relaxed atmosphere, and adds a touch of luxe while ensuring both the bride and her guests feel celebrated. Consider a small food pairing if you’re serving bites throughout the cocktail hour.

2

Floral Bar

Floral bars have risen in popularity, tripling as an interactive activity, event decor and guest favour to take home. Guests can handpick seasonal blooms and create their own bouquets under the guidance of a florist, such as Gather Floral & Events in Hamilton. Not only does this provide a creative outlet, but it also ensures each guest leaves with a personalized arrangement. Consider adding a sticker or notecard to wrap the arrangement in for a personal touch. The process of selecting and arranging flowers creates a sense of “group project,” making it a meaningful and beautiful addition to any bridal shower.

3

Hands-On Culinary Experiences

Including a guided culinary activity allows guests to engage with their senses and take home a unique treat. Consider a chocolate-making workshop with decadent chocolatier Christy’s Gourmet in Burlington. Guests can walk through the process of crafting artisanal chocolates, experimenting with different flavours and textures, and ultimately creating something delicious to enjoy or take home.

Whether it’s a chocolate station, a macaron workshop, or even a makeyour-own cocktail bar, these types of experiences add an element of playfulness to the event.

Elevate the Atmosphere

Of course, decor plays a significant role in setting the scene. Since guests have been encouraged to dress the part, their outfits naturally become an extension of the event’s aesthetic. Whether working within a specific theme or a refined colour palette, focusing on larger, impactful decor pieces is key.

KEY STYLING ELEMENTS

Statement bar arrangement: A beautifully styled bar area, complete with an elegant

Signage and details: Thoughtful touches such as welcome signs, handwritten place cards, or custom menu prints tie everything together seamlessly.

For at-home gatherings, consider decluttering and simplifying the space before decorating. Tucking away smaller decorative items allows the standout pieces such as floral installations or tabletop accents to really shine. The goal is to create an inviting environment, where guests feel immersed in the experience from start to finish.

Rounding out the event with personal touches falls back on the host. Make sure you are prepared with a welcome sentiment, memories of the bride, and other thoughtful words to share. Then invite others closest to share their stories (keeping them brief and heartfelt). Be sure to acknowledge attendees in the room who may have travelled great distances or been involved since day one; everyone loves to feel that they have played a small part in someone's life.

HEART, HUSTLE, AND A HOUSE FULL OF GUESTS:

J.A.C’s BISTRO THE STORY OF

An Oakville favourite built on passion, perseverance, and a whole lot of heart.

Fourteen years ago, J.A.C’s Bistro quietly opened its doors in Oakville, and contrary to what many people might think, success didn’t come overnight. The team behind this beloved local gem assumed their downtown Oakville experience would immediately translate to a packed house, but the reality was far more humbling – and, ultimately, far more rewarding.

“We thought it would be an immediate success…but that wasn’t the case at all,” recalls owner Cory Cherry. “It took at least a year before we filled the place for the first time.” That early struggle taught a lesson that still fuels the restaurant today: passion is non-negotiable. It’s the secret ingredient that has carried J.A.C’s through more than a decade of service, challenges, celebrations, and even a global pandemic.

The team credits their ongoing success to one core value: hard work. “You’ve got to stay on the gas,” they say. “Maybe the slow start was a blessing. It taught us not to take a single customer for granted.”

That mindset has created a fiercely loyal clientele. While the restaurant has certainly welcomed new faces over the years, many

“Some of our regulars come every week, some every month. I could name so many, it blows my mind. And during COVID? They still came, just for takeout. It was incredible – and emotional – to see them support us through such an unstable time.”

As for the food? J.A.C’s cuisine is what many would describe as elevated comfort: refined but without pretension, with a focus on fresh ingredients and seasonal variety. Signature dishes like seafood linguine, lemon fennel-crusted salmon, tomato soup, steak frites, braised lamb shank, and classic Caesar salad have earned devoted followings. The menu changes roughly every six months, guided by what’s fresh and in season, though daily features often inspire new additions.

“We love working with ingredients that are only here for a short time,” says Cherry. “There’s a certain energy that comes from creating something special from what’s available now.” Whenever possible, those ingredients are sourced locally – something the team takes pride in, knowing that community support should go both ways.

Of course, none of it would be possible without the team behind the scenes. “To talk about my staff, friends, and

family would take all day,” says Cherry, adding, “I’m blessed to be surrounded by a remarkable group of people, some I’ve known long before J.A.C’s ever came to be.” That sense of camaraderie is reflected in the restaurant’s culture. “When guests come in and give Christmas gifts to the staff, that says it all. They’re more than just employees— they’re the heartbeat of this place.”

The restaurant industry has changed significantly over the past decade; trends come and go, and customer expectations are constantly shifting. But for J.A.C’s, the goal remains simple: create a space where people feel welcome, deliver consistently delicious food and drink, and provide a level of service that brings people back time and time again.

Looking ahead, the hope is for continued success; not necessarily growth for the sake of growth, but the kind of success that allows J.A.C’s team to keep doing what they love. “We want to be the place people come to celebrate life’s milestones – or just enjoy a really great dinner.”

If there’s one thing people might not know about J.A.C’s, it’s how much heart went into every decision along the way, even the tough ones. “The first year was the hardest of my life. My daughter was three months old, and we would sit in an empty dining room, waiting. After riding a ten-year high downtown, I was humbled quickly. But I learned that success only comes from the heart and hard work you put in.”

Ask about a favourite memory, and the answer is surprisingly simple: “It was a Saturday. I came back from a break, looked at the reservation book, and we were full. I called my wife. We all felt that moment. It was more than just a busy night; it was a turning point.”

Fourteen years later, J.A.C’s Bistro isn’t just a restaurant. It’s a reflection of passion, perseverance, and the power of community. Oakville is lucky to have them, and they know they’re lucky to be here.

DIFFERENCE MAKING THE

A campaign to build a new state-of-the-art facility in Oakville seeks to match more Canadians with Dog Guides.

Over the past 40 years, the Lions Foundation of Canada Dog Guides has bred, raised, and trained more than 3,200 Dog Guides, and matched them to deserving clients.

Now, the Foundation has been asking for the community’s help in supporting a dramatic new initiative, dubbed The Difference Campaign. The campaign’s goal is to raise funds to build a new 89,000 sq.ft., state-of-the-art Dog

Guide national training school, to be located at 1949 Ironoak Way in Oakville, Ontario. To date, the campaign has raised an impressive $41.5 million, and is counting on the community to help them go that last mile to reach their objective.

Bev Crandell, CEO of Lions Foundation of Canada Dog Guides, calls the project “transformational.” She explains that LFCDG does not receive any operational government funding for its services; it relies entirely on the support of individuals,

THE DIFFERENCE CAMPAIGN

The campaign’s goal is to raise funds to build a new 89,000 sq.ft., state-of-the-art Dog Guide national training school, to be located at 1949 Ironoak Way in Oakville, Ontario. To date, the campaign has raised an impressive $41.5 million.

corporations and service clubs to breed, raise, train and match these specially trained dogs, who are given at no cost to the recipient. She adds that it’s the only organization that supports people living with disabilities through seven programs (Autism Awareness, Seizure Response, Facility Support, Vision, Hearing, Service and Diabetes Alert).

The new world-class facility will allow for enhanced training and provide more life-changing Dog Guides to people across the country.

According to Crandall, the new facility offers the Foundation an opportunity to build a purpose-built, dedicated facility from the ground up, with a focus on accessibility, “which is something our existing property doesn't have.” By eliminating barriers for people with disabilities, the new building will ensure a welcoming space for all.

The current building was originally a school, built in the 1930s when accessibility was not top of mind. “Keeping our client base in mind,

we [felt] accessibility was really important. So through the Rick Hansen Foundation, we’re seeking their gold level accreditation in accessibility, which means we go above and beyond what's required by law: things like lighted stairways, using tactile tiles (where the tiles will have indicators on them that help indicate direction), and a variety of seating options,” Crandell notes. Other features will include extra-wide hallways for clients with wheelchairs and dogs, elevators, and underground parking.

Oakville resident Don Meehan has been a supporter of the Dog Guides for many years. Meehan is president of Newport Sports Management Inc., which represents many National Hockey League (NHL) and up-andcoming hockey talents. Meehan donated $500,000 to the Difference Campaign, which will be directed toward the facility’s soaring new atrium, an area that will welcome clients, their families, volunteers and visitors.

Having a companion, Don says, is very meaningful. “On one of my earlier visits to Dog Guides years ago I met a blind man training with a dog at the facility. He said to me that the guide dog was his best friend, because when you're blind, it can be isolating. It stuck with me for a long time, and I felt that providing a Dog Guide was very meaningful, since it helped him navigate more independently through life with a companion,” he says.

“I am incredibly proud to be able to leave a lasting legacy, by giving what I can to support the incredible work of Lions Foundation of Canada

Dog Guides,” Meehan continues. “Seeing the plans for the new national training school is very exciting, especially knowing it will allow them to match more Canadians with disabilities with these life-changing dogs.”

Donations to The Difference Campaign can be made through the Foundation’s website. “We're still looking for funds in order to cross the finish line,” says Crandell. “We’re so proud that this state-of-the-art facility, which matches people with disabilities from across Canada with a Dog Guide, is located right here in Oakville.

“This is a once-in-a-lifetime opportunity for Canadians to give and be part of a lasting legacy,” she adds. “It's really making that investment in our future.”
