Ingredients
2 Cup(s) Bacio® Cheese Shredded, Mozzarella - #294206
1/4 tsp nutmeg, ground
1 egg, yolk(s), lightly beaten
5 Tbsp Nature's Best Dairy® Butter, unsalted - #157189
1/4 cup(s) Nature's Best Dairy® Cream, Heavy - #199406
1 1/2 Pound(s) pasta dough, fresh
1 Tbsp Piancone® Oil, Olive, Extra Virgin - #587291
Roma® Cheese, Parmigiano Reggiano, for serving - #231505
12 leaves sage, fresh
Salt and pepper, to taste
1 Pound squash, butternut, sliced in half, seeds removed
Directions

Preheat oven to 400°F. Place squash on a sheet pan, brush with olive oil and season with salt and pepper. Roast in the oven until tender, about 35 to 45 minutes. When the squash is cool enough to handle, scrape the squash out from the skin.

1. Transfer squash to a food processor and purée until smooth. Place purée in a bowl, cover and chill.

Add the egg yolk, cream, Bacio Mozzarella Cheese and nutmeg to the chilled purée. Season with salt and pepper and mix well. Cover the filling and set aside.
4 Repeat process with remaining pasta dough and filling.
Using a pasta machine or a floured rolling pin, roll out the pasta dough 1/32 inch thick Fill, seal and cut the raviolis, using 1 tablespoon of squash filling per ravioli.Lightly dust the raviolis with flour and place on a sheet pan.

6. In a large pot over high heat, bring 5 quarts water to a rapid boil. Add 2 Tbsp of salt to the boiling water Gently drop in half of the ravioli Cook ravioli until pasta is al dente, about 3 to 5 minutes

Over low heat, warm the butter in a medium-sized sauté pan. Add the sage leaves and cook until the butter is saturated with the flavor of the sage, 3 to 4 minutes. Butter will toast slightly, turning a light golden brown.Remove butter from the heat; keep warm until ready to serve.
7. Remove ravioli from water, and drizzle with the sage brown butter. Serve with grated Parmigiano Reggiano cheese and season with salt and pepper.

Directions
Pickled onions

2 cups Water
1/3 cup Sugar
2 Tbsp Salt
For the onions: fIn a sauce pot, heat water, vinegar, salt and sugar until sugar is dissolved Let cool until warm and pour over the onions Let cool to room temperature then refrigerate. For best results, make this a day ahead.
For the Birria : In a medium sauce pot combine 2 cups of birria base with 2 cups of beef broth. Add your FC short rib and simmer until warmed through. Adjust seasoning with salt and pepper if needed. Break tortilla chips into strips.
In a small sauce pot, bring water to a boil and lower to a simmer, add your egg and cook until soft boiled state is reached ( about 6 minutes) While birria is simmering, take a quart sized pot, bring 3 cups of water to a boil, cook ramen until al dente. While ramen is cooking, remove the short rib, slice and reserve.
In a large bowl add ramen and 2 cups of Birria soup base, add more if needed. Lay sliced beef over top and garnish with corn, cilantro, onions, cheese, scallions, tortilla strips, avocado and egg. Serve with additional toppings such as sour cream and fire roasted salsa. Don’t forget to pair it with your favorite contigo hot sauce.
