You’ll be sure to get plenty of “Ooohs” and “Ahhs” this Valentine’s Day with Lobster Tails. Broiled butterflied lobster tails are very easy to make for all the show stopping, mouth watering reputations they have. HOW TO BUTTERFLY YOUR LOBSTER TAILS Place the lobster tail on a cutting board and carefully snip through the top shell with heavy duty kitchen shears. Cut a straight line from the top (where the lobster tail was separated from the body) to the base (right before the flippers). Pry open the shell, wide enough that you can loosen the meat inside, keeping the meat still attached to the base. Lift the meat up through the cut opening and over the shell. Using a pairing knife score the meat in 3 lines, one down the center and two on either side, filleting the meat so it drapes nicely over the shell. Preheat your broiler to high and make sure to place the oven rack 10 inches from the heat source. I like brushing my lobster tails with a little bit of melted salted butter mixed with some minced garlic before broiling. Broil for 10 minutes or until lobster is cooked completely. Garnish your lobster with lemon wedges and parsley-make sure to serve with some additional melted butter or reserved garlic butter.
