A brief history tells us that coffee or “coffea” beans were discovered by Ethiopian goat herders around the 15th century. While tending the flocks they noticed goats eating the berries from nearby bushes. They observed the animals had much more energy after consuming the berries and would stay awake through the night. Later the herders made a tea from the berries for their own consumption and thus our beloved cup of Joe was born.

In the 1600’s local clergy in Venice called the beverage the “bitter invention of Satan”. Pope Clement VIII decided to try the drink himself. He liked the beverage so much he gave it Papal approval and the coffee trade was born. Coffee houses and cafes began to spring up throughout Europe and the Middle East. Today coffee is grown in over 50 countries around the world. Primarily grown in mountainous regions around the equator, there are two main types of beans (called cherries). Arabica beans which produce the wonderful aroma and flavors are grown at higher elevations and tend to be more costly. Robusta beans, grown at lower elevations typically produce a more “bitter” flavor and are used more as extenders to adjust cost. By blending beans and adjusting drying and roasting processes, different flavor profiles are produced. Raspberry White Chocolate Mocha

Another variation on the fruit and chocolate with coffee theme, to make a raspberry white chocolate mocha, simmer one cup of milk in a saucepan, stir in a quarter cup of white chocolate morsels until melted, then pour into a cup and stir in half a cup of coffee and a tablespoon of raspberry spirits (Chambord). Add whipped cream and Valentine’s themed sprinkles to present this treat to your

While there are still many reasons consumers will celebrate Valentine’s Day at a restaurant (a night out, the mood to splurge), you must be offering carry out to those who choose to avoid the chaos of the V-Day. You may be asking yourself how to prepare and how can the Performance Food Team help you?

There is a good chance that many patrons, especially this year, would rather eat in the comfort of their home. With that being said, you can bet they are going to want to treat themselves to some fantastic food, as well as takeout from you! Don’t miss out on that.

You will be catering to couples, singles and friends by providing offsite dining options this year. Be prepared for the surge in takeout and delivery requests. Spend time on the menu selection you are offering and upgrade your packaging. You want the meal to arrive just as though it left your kitchen on a plate. Did you know that customers who place an online order with a restaurant will visit that restaurant 67% more frequently than those who don’t? Packaging plays a vital role in return take out customers. Let’s prepare for that surge in take out orders by making sure you have the following:

TAKEOUT STAGING AREA If you haven’t already, set up a separate area in the back of the house marked reserved for processing takeout orders only. You should make sure this area has everything you need for takeout purchases - packaging, utensils (heavy duty options), condiments, POS monitors, sanitizer, gloves, etc. This space will keep your carry out orders as organized as possible on this busy night, and in general.

PACKAGING IS VITALLY IMPORTANT Packaging is KEY for satisfying customers with their to-go orders. You might not want to hear this, but 30% of delivery drivers have admitted to snacking on your food.
