INGREDIENTS 300 grams panang curry 50 ml cooking oil 200 ml coconut milk 50 grams palm sugar 25 ml fish sauce 300 grams lamb shank 1 egg

150 grams rice berry ¼ pc banana leaf 20 grams cucumber 2 pcs red chili 4 pcs star anise 1 pc kaffir lime leaf 1 pc coriander

METHOD Stir-fry panang paste with cooking oil. Add coconut milk in the pot and season with palm sugar and fish sauce. Sear the lamb shank until brown. Put the lamb shank in a vacuum bag with panang sauce. Sous-vide the lamb shank in the cooking pot at 82.5°C for 10 hours. Soft-boil an egg (boil in hot water for 6 minutes and 30 seconds). Rest the boiled egg in cold water. Cook the rice berry. Gather every ingredient and plate the dish.
