While the year was not easy on so many levels, it was a fulfilling one, in which we ticked off many boxes on our bucket list! In this last but fabulous issue of 2023, we spotlight Macao - its natural beauty, restaurants, bars, arts, culture, restaurants, bars and most importantly where to stay! AIR MILES Business Traveller India talks to Radhika Dhariwal, Director and Founder of Passcode Hospitality about the hospitality and F&B industry, entrepreneurship and more.

Can you briefly share your journey in the F&B industry and how you got involved with Pass Code Hospitality?

My brother Rakshay and I started Pass Code Hospitality in 2012 because we wanted to open a cocktail bar that was different from those that were present in Delhi at the time. Both of us had spent considerable time studying and working all over the world and in the United States, where we were exposed to various cocktail bars, specifically, speakeasy-style cocktail bars. It is this culture that we wanted to bring to India and hence we opened PCO in New Delhi, a cocktail bar hidden in plain sight where you are guaranteed world-class cocktails and a great night out. Since

then, our journey with F&B has grown. We’ve done two things:

brand creation and brand expansion. But whatever we do, we are driven by a simple mission: find a need in the market and fill it. Hence, we created various brands including ATM, a members-only supper club in Delhi, Ping’s Cafe Orient serves up healthy Asian street food, Jamun that offers the best of regional Indian recipes, SAZ, which is a trendy American Brasserie, and Mister Merchant’s in Pune dishes up that does Indian & Middle-Eastern small plates. We have also grown geographically and our restaurants are now present in Goa, Bombay, Calcutta, Pune, and soon to be in Hyderabad.

As a trained psychologist, how do you apply psychological principles in your role in managing teams and creating hospitality experiences?

While my training in psychology does not

come up overtly, it is a skill and training that I am very grateful for. It is a skill that is used in everyday life and of course in work.

In terms of management, it has given me the tools to create an environment where team members feel comfortable bringing up any issues they may have and to discuss their ideas, successes, and frustrations openly. In terms of guest experiences and brand creation, it helps in pushing the boundaries and thinking of innovative ways to encourage customers to visit one of the Pass Code restaurants. Lastly and most importantly, it helps to understand what motivates people: be they patrons, peers, or personnel.

Your books showcase a different side of your talents. How do you see your skills as an author complementing your work in the hospitality sector?

I love writing; I always have and I know that I will always keep writing—whatever it is.

However, creative writing is so wholly different from the writing and communication I do for work, that I don’t think they relate much. However, the skill that I have developed as an author that I use almost every day is imagining a world and, most importantly, learning how to edit what I have imagined. And honestly, it is this skill that I think is the most important in any form of creating—be it writing a book or building a restaurant. You have to be able to imagine a new world, go crazy in that vision, and then pare it down, analyse it, see what makes sense, and keep that.

What is the overarching vision behind Pass Code Hospitality, and how do you ensure it's reflected in each concept you create?

Pass Code Hospitality is all about creating

fresh experiences for patrons and our vision is to offer unique and boutique dining options for the urban, exposed Indian. Our restaurants are all the epitome of “fun dining”, which means that they are elevated yet casual and can be perfect for any occasion. We like the small format restaurant and we like to experiment and bring something new to the table, quite literally. This basic DNA is reflected in all our brands— be it Jamun, Ping’s, Saz, PCO, or Mister Merchants.

Balancing roles in hospitality, authorship, and creativity can be demanding. How do you manage your time effectively and maintain a balance between these different aspects of your career?

It is very challenging and to be honest, time management is one of the things I struggle with most. But over the years I have found one strategy that works well for me. Every day I divide my diary into four quadrants and write what I have to do in the different spheres of work and life: personal, Pass Code Work, Writing, and Pistola, our new 100 per cent Agave Spirit that we have recently launched. I list everything I have to do in each of the quadrants and try to tick them all off as quickly as possible. Yet, I regret to say, that my writing has definitely taken a back seat—but I do hope this will change in the year to come.

estled on the southern coast of China, Macao, a special administrative region, is an enchanting fusion of East and West. Situated at the southwestern tip of the Pearl River estuary, just opposite the Hong Kong Special Administrative Region, Macao is a place where cultures converge, and history thrives. Macao’s geography is a captivating mix, comprising a slender peninsula extending from mainland Guangdong, as well as the Taipa and Coloane islands linked by the reclaimed land of Cotai.

The city of Macao gracefully ascends a hillside, virtually covering the entire peninsula. Its name, Macao, also known as Macao, traces its origins to the Chinese “Amagao,” meaning “Bay of Ama,” paying homage to Ama, the guardian goddess of sailors. Connected by bridges, the

Macao Peninsula and the island area boast small granite hills surrounded by pockets of flatland. Originally adorned with evergreen tropical forests, the hills were gradually cleared for construction and firewood, reshaping the landscape. While Macao’s topography doesn’t reach great elevations, Coloane Peak stands as its highest point at 565 feet (172 metres). The region lacks permanent rivers, relying on rainwater collection and mainland pipelines for its water supply.

Basking just within the tropics, Macao experiences a monsoonal climate characterised by distinct wet and dry seasons. The majority of its annual rainfall, averaging 83 inches (2,120 mm), pours down during the summer rainy season, driven by the southwest monsoon from April to September. Summer temperatures soar to 84°F (29°C) and, coupled with high humidity, create a sultry atmosphere. In contrast, the winter months bring relief with cooler and less humid conditions, making them a delightful escape from the summer’s heat.

The charming region is a unique blend of Portuguese and Chinese culture, historical significance, and diverse landscapes which sets the stage for an unforgettable journey in Macao. From the charm of its UNESCO World Heritage Site-protected historic centre to its modern hotels, vibrant entertainment, upscale shopping, and world-class conventions, Macao offers a captivating experience at every turn. HAC SA BEACH

Hac Sa Beach, situated in Coloane, stands as Macao’s largest shoreline destination, renowned for its distinctive black sands, a result of minerals from the seabed mingling with the shore. The beach is relatively pristine and is an inviting spot for swimming and relaxation, known for its secluded charm. The name Hac Sa translates directly from Cantonese to ‘black sand capturing the essence of this tranquil coastal haven. Hac Sa Beach also neighbours the Hac Sa Reservoir Country Park, adding to the allure of this picturesque location.

LOU LIM LOC GARDEN

The most quintessentially Chinese of Macao’s gardens, Lou Lim Loc Park, stands as a testament to the region’s rich history. Originally commissioned by the affluent 19th-century Chinese merchant, Lou Kau, it was later inherited by his son, Lou Lim Loc, in 1906. As family fortunes waned, the garden fell into disrepair, only to be rescued and meticulously restored by the government, eventually reopening to the public in 1974. Modelled after the renowned Suzhou classical gardens, this intimate oasis features winding paths, bamboo groves, flowering flora, and intricate concrete mountains. At its centre, a serene pond with golden carp and lotus blossoms is traversed by a meandering nine-turn bridge, steeped in a legend that evil spirits can only move in straight lines, leading to a grand pavilion that harmoniously combines classical and Chinese architectural elements. The pavilion serves as an artistic hub, hosting exhibitions and offering an enchanting auditorium for melodic recitals during the annual International Music Festival.

MACAO GIANT PANDA PAVILION AND PAVILION OF RARE ANIMALS Nestled in Coloane’s Seac Pai Van Park, the Macao Giant Panda Pavilion unfolds as a 3,000 sqm fan-shaped marvel, thoughtfully integrated with the natural terrain. The pavilion encompasses two 330 sqm indoor activity quarters, a 600 sqm outdoor habitat, and a 900 sqm indoor exhibit space for giant pandas. It features dual viewing paths at different elevations, accommodating various visitor streams, while housing essential facilities like panda dens, bamboo processing, feed preparation, a control centre, and a veterinary clinic. Nearby, the Pavilion of Rare Animals, also in Seac Pai Van Park, acts as a conservation haven for other rare animals with three indoor and two outdoor areas designed to replicate the red pandas’ natural habitat, complete with temperature regulation at 25°C and climbing amenities for these charismatic creatures.

SUN YAT SEN MEMORIAL PARK

Sun Yat Sen Memorial Park, conveniently situated and a local favourite, beckons families with its panoramic vistas and expansive outdoor expanse.

This park presents a generous grassy terrain, ideal for picnics with sweeping views of Victoria Harbour, alongside an outdoor playground, soccer fields, and basketball courts to keep youngsters and teenagers engaged. Easy access via MTR Sheung Wan Station or Sai Ying Pun Station, and named in honour of Dr. Sun Yat-sen, the revered father of modern China, the park holds a special place in the heart of the community.

A-MA TEMPLE

A-Ma Temple predates the establishment of Macao itself, featuring a complex that includes the Gate Pavilion, the Memorial Arch, the Prayer Hall, the Hall of Benevolence, the Hall of Guanyin, and Zhengjiao Chanlin, a Buddhist pavilion. This diverse array of pavilions, each dedicated to the veneration of various deities, serves as a striking embodiment of Chinese culture, influenced by the principles of Confucianism, Taoism, Buddhism, and an array of folk beliefs, all harmoniously represented within this sacred site.

MANDARIN’S HOUSE

Built before 1869, this was the traditional Chinese residential compound home of prominent Chinese literary figure Zheng Guanying. It is a traditional Chinese compound consisting of several courtyard houses, displaying a mix of Chinese and Western detailing, such as the use of grey bricks against arched ornamentations and Chinese timber lattice windows against mother-of-pearl window panels of Indian origin. This historical gem is a perfect destination for architecture enthusiasts creating an engaging and enriching experience.

Situated along the outer harbour of Macao, the Macau Fisherman’s Wharf stands as the largest leisure and themed entertainment complex on the Macao Peninsula. Alongside the Legend Boulevard, captivating architectural structures pay homage to the multicultural cities of the West. The Ruins of St. Paul’s encompass both the preserved facade of the original Church of Mater Dei, constructed between 1602 and 1640 and later destroyed by fire in 1835, as well as the remnants of St. Paul’s College, located adjacent to the church. Collectively, these structures, along with Mount Fortress, which will be discussed below, were Jesuit creations and constituted the elevated centre of Macao, often referred to as its ‘acropolis.’ The archaeological remains of St. Paul’s College serve as a testament to the first Western-style university in Asia, offering an elaborate academic curriculum. In contemporary times, the Ruins of St. Paul’s hold deep symbolic significance, functioning as a metaphorical altar to the city.

Jaypee Greens, Greg Norman’s first and so far, only Indian design opened for play in 2000. It was intended as the golfing centrepiece of a 430-acre residential development and is one of the longest measuring from the tips. The terrain was relatively flat and featureless resulting in the excavation of several lakes to provide soil for contouring the fairways. Almost a hundred bunkers constructed in the style of those found on Melbourne’s sand belt courses, provide further hazards. Fairways are grassed with specially imported Bermuda Evergreen grass that was chosen for its performance and superior playing characteristics. The non-playing areas are populated with tracts of woodland, wetland, and scrubland, giving the course the natural feel of a private haven set apart from the fast-paced, hustle and bustle. The 407-yard fourth is a daunting right-bent hole where water runs along the right side of the fairway virtually surrounding the green.

NingXia, a Northwest province of China, accounts for 40 per cent of the total production of Chinese wines and is considered ‘The Bordeaux of the East’. The Eastern foothill of the Helan Mountain is the most refined region of NingXia province, where top-class wineries like Silver Heights, and Legacy Peak are located. The NingXia government extended a lot of support to its wine industry and introduced a Grand Cru Classé classification in 2013, like the ones in Saint-Emillion on the right bank of Bordeaux, to encourage local wineries to produce quality wines every year.

We also see French juggernaut LVMH investing in the YunNan province to establish a top-notch winery Aoyun, Chateau Lafite of the Rothchild family, invested in the Shandong province to produce one of the best Bordeaux style red wines in the country. With the support of financial capital from the government, the wine-making techniques and vineyard management experience, ensure that Chinese wines are experiencing a boom in quality and reputation. With my experience from numerous tastings of many Chinese wines, some of them can compete with any other finest wines in the world and would be an innovative pairing with gastronomic experiences. business traveller india

JAPAN The three most important regions in Japan for winemaking are Yamanashi, Nagano, and Hokkaido

hen it comes to Japanese alcoholic beverages, renowned ones such as Sake, Beer, and Whiskey, which have made their mark globally come to mind. In the past, Japanese wines have often been overshadowed by other global brands, however, in recent years, with the support of the government and talented winemakers, Japanese wines are showing an overall growth in market share and preference. The three most important regions in Japan for winemaking are Yamanashi, Nagano, and Hokkaido - with each having its own unique terroir and climate conditions.

Several unique varieties of grapes are grown in Japan including two local grape varietals that are well-recognised

by Japanese winemakers.

In July 2023, I was honoured to be part of the Koshu group and invited by Yamanashi Prefecture and Koshu of Japan to judge the national competition of Japanese wines and had the opportunity to discover its promising

future. One of the leading figures in Yamanashi prefecture is Grace Wine, founded in 1923 and now headed by Mr. Shigekazu Misawa, who is also the Chairman of Koshu of Japan. I had the privilege of visiting their vineyard and cellar this summer. It is very promising to me to see how efficiently and expertly they handle the business of winemaking.

Muscat Bailey A is a red wine grape variety that has black-coloured skins on the berries and is usually used for making still-red and rose wines. The sensory properties significantly consist of moderate tannin, soft acidity, and foxy berry aromas. It is a very important black grape of Japanese Origin and is mostly grown in the Hokkaido region. This grape displays a blueberry and bubble gum aroma with a silky tannin. It is very pleasant to enjoy a glass of Muscat Bailey A with delicate Japanese cuisine.

My recent visit to Spectrum Lounge & Bar, perched atop Bangkok’s skyline, was nothing short of a culinary revelation. Additionally, on the vibrant 30th level, a rooftop bar awaits, offering classic and creative cocktails alongside bar snacks, all set to a backdrop of highenergy music. For my main course, I indulged in The Spaghetti Truffle Carbonara, made up of Parmesan cheese, guanciale, and fresh egg yolks, was a comforting yet sophisticated rendition of one of my favourite Italian dishes. The Australian lamb chop, a carnivorous masterpiece, was cooked to perfection, tender and flavourful.

Pairing these delectable dishes with the Montepulciano d’Abruzzo from Bajo, Italy, was a stroke of genius. The red wine’s robust notes complemented the richness of the small plates and enhanced the overall dining experience.

The Lounge & Bar is an all-day dining venue with spectacular views of Victoria Harbour. The Ritz-Carlton, Hong Kong also offers other elegant dining experiences in beautifully designed spaces such as the futuristic rooftop bar Ozone, the Michelinstarred Tin Lung Heen and Tosca di Angelo restaurants which overlook Victoria Harbour and the city skyline. Cooked to perfection, it melted in the mouth, leaving a symphony of flavours that lingered. The Josper Grilled Eel Clay Pot Rice was a comforting and savoury interlude, a testament to the chef’s mastery of textures and tastes. Well positioned in the heart of Singapore’s Central Business District, the hotel is within walking distance to the cultural centres of Victoria Theatre and Concert Hall, Asian Civilisations Museum and Esplanade – Theatres on the Bay, as well as Boat Quay and Clarke Quay, two of Singapore’s most popular dining and entertainment belts.

I ate a light breakfast of boiled eggs with two slices of sourdough toast, a bowl of freshly cut fruits and ended it with a cup of delicious cappuccino. Additionally, guests can enjoy an array of international staples and local favourites at Jade which offers diners authentic Chinese cuisine of exceptional quality and warm hospitality and The Courtyard a lively and timelessly elegant setting for leisure dining with delicious local and international specials and the traditional three-tier English afternoon tea.

Seven years ago, founders Syed Asim Hussain and Christopher Mark set out on a journey to establish what would later become Ho Lee Fook. Their mission was to challenge norms and reshape the expectations associated with Chinese restaurants in a city saturated with them.

Adopting an imaginative stance towards Cantonese flavours, they emphasised the use of premium ingredients and showcased creative execution, all with a hint of humour. This approach aimed to redefine the traditional concept of a Chinese dining experience.

Ho Lee Fook is a Chinese culinary gem that beats with the heart of Hong Kong, unfurling a vibrant celebration of late-night elegance against a backdrop of neonsoaked sophistication. The restaurant, whose name translates to ‘good fortune for your mouth,’ stands as a proud ambassador of the rich culinary and cultural tapestry of the city it represents.

My culinary journey at Ho Lee Fook began with an exploration of the Snacks section, where the Chiuchow-Style Marinated Raw Botan Ebi stole the spotlight. The delicate interplay of coriander and chillies elevated the freshness of the dish, setting the tone for what was DECEMBER 2023

to come. The Chef’s selection of Dim Sums showcased the kitchen’s mastery, presenting a symphony of flavours and textures that delighted our taste buds. The Chongqing Chicken Wings, adorned with Facing Heaven chillies and Sichuan pepper soup, offered a bold and fiery kick, leaving a lasting impression.

Moving on to the Seafood offerings, the Steamed Live Razor Clams demonstrated a perfect marriage of ingredients with glass noodles, aged garlic, and soy sauce. The Steamed Fa Gap with Chinese Egg Custard was a delicate revelation, highlighting the chef’s finesse in balancing traditional flavours. The Roast Meats section featured the Kurobuta Pork Char Siu, honeyglazed and charcoal grilled to perfection, delivering a succulent and flavourful experience that lingered on the palate.

The Wok Fried Vegetables presented a symphony of textures and tastes. The Stir-Fry King, with flowering garlic chives, yellow chives, chillies, peanut sprouts, abalone, sun-dried shrimp, and crispy anchovies, was a culinary masterpiece that showcased the chef’s expertise in creating complex and harmonious flavours. For dessert, the Pandan Milk Bread French Toast was a delightful conclusion to our

meal. The interplay of peanut butter, smoked maple syrup, toasted coconut, and coconut sorbet created a sweet crescendo that left us with a sense of satisfaction.
