elcome to the April-May issue of Business Traveller India; which is also our sixth anniversary special.

And to say the least, what a roller-coaster ride it’s been!

Six years of business travel that blends with leisure sojourns.

Six years of business meetings that turned colleagues into friends.

Six years of making the sky our “office with a view” and the hotel desk into a scenic “work from home” setup.

PS - I am not complaining one bit.

And then came along the pandemic that indefinitely changed our lives and work for good.

Working from home and now crawling our way back to normalcy, I have learned that life, travel, health and work — should never be taken for granted. The transience of life is the only constant we hold on to.

And hence, this issue, we celebrate our love for travel; including some of the destinations we miss, preferred airlines, hotels, watches and cars.

We celebrate the quest for unconventional experiences at our usual destinations, including London, Tokyo, Dubai, Hong Kong, Frankfurt and more.

We celebrate the love for food (at Indian hotels) that’s been reason enough to hail us back to make a reservation.

We celebrate premium classes of airlines that now seem more luxurious than ever.

We celebrate a few of our favourite things - handpicked time wear and automobiles.

Our sixth anniversary issue embodies our labour of love and our passion to return to our usual ways of business travel. The above along with reviews, a special trip to a brand new Maldives hotel, latest news from the world of aviation, hospitality and more makes up this issue.

ETIHAD AIRWAYS HAS partnered with local designers to upcycle obsolete aircraft cabin interiors into pieces of art, as an environmentally friendly alternative of dealing with waste.

Carpet and fabric rolls, emergency equipment, sidewalls and windows, and Economy and Business class seats are just some of the old aircraft parts designers Azza Al Qubaisi and Christine Wilson used to design art installations for the airline. These art installations are not only some of the most magnificent upcycled art pieces but also a new way to make the world a more sustainable and environment friendly place to be in. QATAR AIRWAYS BEGINS IATA TRAVEL PASS TRIALS QATAR AIRWAYS HAS become the first airline in the Middle

East to trial the IATA Travel Pass digital health passport app. The IATA Travel Pass app enables passengers to receive Covid-19 test results and verify that they are eligible to undertake their journey through an ‘OK to Travel’ status. Qatar Airways says that the app will also ensure “passengers receive up-to-date information on Covid-19 health regulations at their destination country”. qatarairways.com

RAFFLES AT GALAXY MACAU TO OPEN IN SECOND HALF OF 2021 GLOBAL HOSPITALITY GROUP Accor has signed a collaboration agreement with Galaxy Entertainment Group (GEG) to open Raffles at Galaxy Macau in the second half of 2021. It will feature 450 suites, which will draw inspiration from a modern palazzo. Some suites will have their own private pools and gardens as well.

AIR INDIA has announced direct flights between Goa and Moscow’s Sheremetyevo – A.S. Pushkin international airport from April 14 to October 28, 2021.

SPICEJET has announced the launch of 66 new domestic flights. The low-cost carrier is the first Indian airline to introduce daily direct flights on the Pune–Darbhanga, Pune-Durgapur, Pune-Gwalior, Pune-Jabalpur, Pune-Varanasi, Kolkata–Darbhanga, Chennai–Jharsuguda and Nashik-Kolkata sectors.

EMIRATES and TAP AIR PORTUGAL have signed a new agreement that will allow passengers of both airlines to fly on many new routes across the Americas, North Africa, and East Asia.

VISTARA has started its nonstop flights between Mumbai, India, and Malé, Maldives.

With this new service, Vistara becomes the only airline to offer the choice of premium economy class of travel on the route, in addition to business class and economy class.

Thomas Pongsak Catley is the chef-partner at TORI in Mumbai, a new restaurant that encapsulates an amalgamation of Latin and Asian cuisine.

His food philosophy is to make the most of the local produce available and use cooking techniques to combine unusual elements. He speaks to Business Traveller India about food and travel.

What is your favourite dish to cook and why?

It has to be an English Sunday Roast. It consists of roasting a piece of meat for example a whole chicken, leg of lamb, topside of beef (eaten after church service on Sunday afternoon). The meat is served alongside roast potatoes, Yorkshire puddings, greens, roasted root vegetables, cauliflower cheese and a gravy made from the juices of the meat.

It was the only meal that we would have at my grandmother’s house when my father’s side of the family would be there.

How would you describe your style of cooking?

I have worked with many amazing chefs and there are a lot of techniques that I have learnt over the years, which I use in creating my dishes. It’s always about

cooking food that has been influenced by my childhood, travels and the cuisines that I have worked with. So, my food can be unpredictable. By using local seasonal produce on my menus, I get to support the local economy, cook with ingredients that are at their prime, grown locally so its carbon footprint is low or none at all and is available on my doorstep.

COVID-19 INSURANCE WITHIN THE COST OF THE FLIGHT TICKET If any passenger is diagnosed with Covid-19 during their trip, they won’t have to worry about medical expenses or quarantine costs when they fly with Etihad. The airline has introduced a global Covid-19 wellness insurance as part of its health and hygiene programme, Etihad Wellness and this is currently included with every Etihad ticket.

The insurance is automatically effective following the first flight outside of the guest’s home country and is valid for 31 days, or upon return to their home country if earlier.

WELLNESS AMBASSADOR ON EVERY FLIGHT Etihad has introduced specially trained Wellness Ambassadors, a first in the industry, who will provide essential travel health information and care so guests can fly with greater peace of mind. They are available 24/7 pre-departure, at Abu Dhabi International Airport and on board every flight to offer reassurance by sharing advice on travel wellbeing and details of the health and sanitisation measures being implemented throughout the guest’s journey.

TECH AND DIGITAL-FIRST SOLUTIONS Due to the pandemic, there has been an accelerated growth in digitalising experiences and ensuring contactless travel for guests, with their safety and wellness in mind.

Technology will continue to be a driving force, creating new avenues in the postpandemic world. Etihad leads the industry in creating, testing and implementing technologies that make travel safer, more sustainable, more enjoyable and with passenger wellness as the priority. The airline has also been working with a variety of different companies, some within the industry, some outside of it, to develop technology required for a global health certification system. JAPANESE TIPPLING A classic Japanese-style bar experience means hitting an izakaya after your meetings

T

okyo’s cultural potpourri is intriguing to say the least. Anyone who’s visited Japan knows that there are certain aspects of its society and tradition that are signature to the Land of the Rising Sun. From the no tipping rule to addressing another individual with the suffix of the respect giving “san”; there are ways to conduct yourself in Japan.

A way of life that’s quintessentially Japanese — and one that’s always caught our fancy — is the concept of izakayas. This is an experience that you must absolutely indulge in on your visit to Tokyo, as being the capital city, it’s the hub of the izakaya culture in all of Japan.

So what is an izakaya, to begin with? It’s essentially an after-work Japanese bar where people get together for drinks, snacks and banter.

What’s special about the concept is that it dates back to the Edo period (1603-1868) when a sake merchant began serving the drink in tasting glasses in a corner of his humble shop. It was in the 1970s that izakayas grew phenomenally in popularity among the working community. However today, there is an izakaya for everyone; from office-goers, students, expats to tourists. considered to be relatively reserved, and an izakaya is a place where they get together for nomikai (a gathering to drink), often at the bar counter itself, and let go for a while alongside good food, drinks and conversation.

This initiative aims to support the revival of Singapore’s air hub status and hospitality sector, and facilitate essential business exchanges in the pandemic environment.

Once approved by authorities, business and high economic value travellers from all countries will be able to enter Singapore for shortterm stays of up to 14 days to conduct in-person meetings via the business travel bubble. However, there is a condition to it, and that is to apply online requests in advance on stb.gov.sg.

Recently, Singapore has also announced the opening of a ‘bubble’ hotel and conference facility for non-quarantining business travellers – Connect@Changi – which is located just five minutes from Singapore Changi Airport. ndless ocean views, white-sand beaches, spectacular marine ecosystems — the beauty that the Maldives is, never ceases to amaze me; so much so that I decided to explore it amidst a pandemic.

Setting foot into the world of international travel once again, I flew to the turquoise paradise in February this year, for a zen holiday at OZEN RESERVE BOLIFUSHI, the latest resort by THE OZEN COLLECTION. Situated in a glittering lagoon in South Malé Atoll, this uber-luxe private island resort opened its doors to guests in December 2020.

However, a more elaborate Maldivian welcome awaited me at the Bolifushi island.

The blowing of a conch shell, the rhythm of the bodu beru (a Maldivian drum) drumming and sangu shell whistling against the blue backdrop complemented by the serving of kurumba (fresh coconut) drink seemed like the ideal start to my island sojourn. And that wasn’t all! I was then pampered with a foot massage, which, at the risk of sounding dramatic, was soul-stirring.

I certainly see it as a trend accelerator, from the digitalisation of commerce to a general awareness of the risks linked to the economic and industrial development of our society: global warming, pollution and animal extinction.

I also see it as a demonstration by absurdity – or more specifically by absence – of the persistence of certain fundamental elements characterising the watch industry and the luxury world in general.

Our industry and indeed our society lives and breathes through social interaction, exchanges, sensual and physical contact.

In 2020, we have learned to do without watch fairs, exhibitions, commercial operations and pop-up stores. We have moved towards intensive use of new video platforms such as Zoom or Teams.

I was particularly impressed by the functioning of the cabin crew who were cordial, but at the same time made sure that passengers followed all the necessary protocols such as wearing face masks and shields.

Colloquially called the “Grand Dame of Mumbai”, the Taj is steeped in centuries worth of legacy with its art and architecture including Belgian chandeliers, Goan Christian artefacts and its magnificent 240-feet high central dome. Divided into the Tower and Palace Wings, it has a total of 560 rooms and suites. The renovated Palace Wing opened to guests in August 2010, with refreshed rooms and restored antiquated corridors. Those interested in the hotel’s history should walk down the Hall of Fame on level one that exhibits portraits of its eminent guests and significant landmarks. There is also an art gallery and several nooks where you’ll stumble upon art dating back to the colonial era.

I loved the little touches that upped the luxury quotient of my stay - Forest Essentials pillow mist, rose petals delicately decorated across my room and a serve of macarons post turndown.

Each suite of the hotel is different from one another and prides itself on interesting backstories; for example the Bell suite in the Palace Wing sits inside the dome and houses the original “Colaba Bell” that was used for maritime protocols in the 1900s.

lot of nostalgia value in all the F&B outlets of the hotel. I enjoyed a sumptuous Chinese meal at the Golden Dragon where the warm staff spoilt me with an array of dim sum, starters, mains and dessert. The dishes that stood out include — truffle edamame dim sum, stuffed shiitake with five-spiced honey, truffle-scented mushroom rice, drycooked haricot beans and chocolate toffee dessert. For breakfast and lunch, I dined at Sea Lounge, where its powder-blue walls and soft piano music create a tranquil setting. Breakfast was avocado on toast,

fresh pastries, a spread of cheese and hot chocolate. Lunch was a light tomato soup with some bread. I spent my golden hour at the chic rooftop lounge Aasmana serving a selection of crafted beverages and creations from the royal kitchens of India such as delectable kebabs, spiced sweet potato cakes, seafood dishes, tandoori chicken tikka and Lucknowi biryani to name a few. Chef Qureshi prepared a scrumptious bajra salad with hung yogurt for me. For mains, I had dal aasmana which was cooked overnight and the rich flavour left a lasting impact on me.

Magic on the Dal Lake, Kashmir, by Ujwal Puri This image has been taken by Puri on his second trip to the valley of Kashmir, but his first time during winter.

"The experience was surreal,” he says. “The whole valley was covered in a blanket of snow where temperatures dipped below freezing; and in some places reaching even minus 15 degrees."

The magical image was taken on a cold foggy day during his shikara ride. "The dal lake was partially frozen over and icy cold water cast a spell. There was a perfect reflection of the Zabarwan mountain range covered in snow. I clicked this photo and got the vibes of one of my dream destinations - Banhoff Alberta, Canada,” he adds.
