his will be the Kilimandjaro’s twelfth winter season, and the K2’s second. Over the last twelve winters (and springs), the Kilimandjaro has become a benchmark on the landscape of French art de vivre, perpetuating the tradition of luxury hospitality characterised by authenticity, conviviality and outstanding levels of comfort and service. The 2011-12 winter season saw the opening of the K2, which has already become the emblematic jewel in the crown of the K Luxury Collection Group. More than a hotel, it is an exceptional establishment that takes the concept of the luxury mountain hotel to a new level.

For this year-end, and to mark the opening of the winter 2012-13 season, we are pleased to announce the creation of the “K Luxury Collection”, which unites all our activities and unique expertise under one umbrella - combining prestigious hotels with property and hotel development projects.

on contents de faire vivre à leurs hôtes une parenthèse d’exception au pied des sommets alpins, les Hôtels Kilimandjaro et K2 leur concoctent également, de décembre à avril, une programmation de haut vol. À commencer par les réveillons de Noël et du Nouvel An. Le premier sera placé sous le signe du jazz, avec deux duos de talent à découvrir dès 19h : Virginie et Emmanuelle au K2 (à retrouver également plusieurs fois par semaine de 19h à minuit au bar Le 8611), face aux voix chaudes de Sandra et Marlène au Kilimandjaro. On raconte même que le Père Noël pourrait faire une halte le lendemain dans les deux hôtels…

La veillée de la Saint-Sylvestre promet d’être tout aussi rythmée avec au K2 le groupe Harmony qui interprètera les plus grands hits du XXe siècle, et au Kilimandjaro, un trio de concertistes au répertoire classique et de variété internationale. La soirée se poursuivra par un feu d’artifice, tiré à minuit dans chacun des deux établissements. Ambiance digne des meilleurs clubs à suivre.

Même lieu mais autre ambiance avec au Stanley’s Bar, Fédor et Andrei, un duo instrumental à découvrir le mercredi, et plusieurs fois par semaine, Satin & Soul au répertoire pop, world music.

Enfin, pendant les vacances, Jean Sébastien exécutera ses tours de magie devant un public médusé à la Table du Kilimandjaro (13h-15h et 19h-23h) et au Black Pyramid au K2, tandis que Laurent proposera une multitude d’activités pour toute la famille (sortie luge, en raquettes…). Christmas Eve will be jazzy this year, with two talented duos performing from 7pm: Virginie and Emmanuelle at the K2 (and can also be seen several times a week from 7pm to midnight at Le 8611 bar), with the warm voices of Sandra and Marlène at the Kilimandjaro. We hear that Father Christmas himself may even call in to both hotels the next day…

New Year’s Eve promises to be just as rhythmic with the group Harmony performing hits from the 20th century at the K2, and at the Kilimandjaro a trio of concert performers playing a repertoire of classical and popular music. The evening will continue with midnight fireworks at both hotels, followed by a club atmosphere worthy of the trendiest night spots.

Same place, different atmosphere at Stanley’s Bar, with Fédor and Andrei, an instrumental duo performing on the Wednesday, and Satin & Soul on several other nights during the week, with a repertoire of pop and world music.

Lastly, during the holidays, Jean Sébastien will be performing his magic to amazed audiences at La Table du Kilimandjaro (1-3pm and 7-11pm) and at the Black Pyramid at the K2, while Laurent offers a multitude of activities for the whole family (tobogganing, shoe shoeing, etc). Les Laboratoires La Prairie doivent leur origine et leur réputation à la prestigieuse Clinique La Prairie établie à Montreux en Suisse. Suzanne Capezzone : J’apprécie particulièrement et d’un point de vue général tout ce qui touche au design et à l’art. L’art fait, je pense, partie intégrante de l’esprit d’un lieu. Quoi de plus représentatif qu’un lieu de vie et de rencontre que sont nos établissements ? Cela apporte un vrai supplément d’âme à nos hôtels. Je me suis prise de passion depuis que nous constituions des collections au travers de nos activités de développement d’hôtels ou de chalets. À chaque fois que nous définissions un concept de décoration pour nos projets, il nous apparaissait important d’intégrer l’art à cette réflexion globale. Au K2, nous avons même fait appel à certains artistes tels que Philippe Icher pour concevoir des pièces totalement personnalisées en corrélation avec le lieu et son concept.

Comment est née l’idée de la “Kilimandjaro art ColleCtion” ?

Nous souhaitions faire découvrir ou redécouvrir à nos clients des artistes contemporains aux œuvres originales et nos établissements nous paraissaient être un parfait écrin pour mettre en valeur leur travail. C’est ainsi que le contact fut pris avec nos partenaires galeristes et que la Kilimandjaro Art Collection était née.

Cette démarche fut en effet une suite logique, nous avons abordé cet aspect dès le développement du concept de décoration qui diffère de celui du Kilimandjaro, ce qui nous a permis également de développer une collection permanente distincte.

Comment séleCtionnez-voUs les artistes de ChaqUe exposition éphémère ?

Il s’agit d’un vrai échange avec nos partenaires galeristes, cela dépend également de l’actualité des artistes eux-mêmes, nous essayons

Suzanne Capezzone : I very much appreciate everything connected with art and design. Art is, I believe, an integral part of the spirit of a place. What could be more representative than our two hotels, places where people come to stay and meet others? Art really enhances the spiritual quality of our establishments. This enthusiasm first gripped me when we began establishing collections as part of our hotel and chalet development activities. Each time we worked on the decorative concept for a project, it seemed important to include art in our overall thinking. At the K2, we even called on artists like Philippe Icher to design fully customised rooms in keeping with the location and our concept for it. how was the idea of the Kilimandjaro art ColleCtion Born?

We wanted our guests be able to discover contemporary artists who are creating original material, and our hotels seemed to be the perfect setting for featuring their work. We therefore made contact with our gallery-owning partners and the Kilimandjaro Art Collection was born. and the K2 art ColleCtion was an inevitaBle follow-Up? Yes, this second initiative was a logical consequence.

The idea arose when we began developing the concept for the K2’s decor, which is quite different from that of the Kilimandjaro. And so we also built up a distinctive permanent collection. how do yoU seleCt the artists for yoUr temporary exhiBitions?

We discuss things in depth with our gallery-owner partners. It also depends on the artists’ present circumstances. We try to feature the works which have not been exhibited before, and the work of young artists. Our watchword is originality: we want people to discover amazing works which cannot leave you indifferent, whether or not

Nos clients s’intéressent particulièrement à l’art, le succès de la première édition de la Kilimandjaro Art Collection nous le confirmait dès 2008. C’est cet intérêt de nos clients qui nous a poussés à poursuivre et développer encore notre collection permanente tout en proposant les expositions éphémères qui permettent de faire découvrir chaque année de nouvelles collections. l’art fait-il partie intéGrante, selon voUs, de la déCoration et partiCipe-t-il d’Un art de vivre ?

Je pense que cela fait partie de l’esprit d’un lieu et du ressenti perçu lorsque l’on y passe ou lorsque l’on y séjourne. Peut-être un juste échange et équilibre : l’œuvre sublime le lieu et le lieu sublime également l’œuvre d’art. Cela laisse place également à l’imaginaire, à la réflexion et au rêve. qUel est votre meilleUr soUvenir “artistiqUe” ?

Des rencontres avec des passionnés que ce soit les artistes eux-mêmes ou les galeristes. Je garde ainsi le souvenir de la collaboration que nous avons menée avec Philippe Icher et la Galerie Bartoux de Courchevel dont les œuvres marquent et soulignent le concept de décoration de K2. |K|

Our guests are very interested in art. This was confirmed by the success of the first Kilimandjaro Art Collection exhibition, back in 2008. And the interest shown by our guests has encouraged us to further develop our permanent collection, which at the same time staging temporary exhibitions featuring new works year by year. in yoUr opinion, is art an inteGral part of interior deCoration? is it an aspeCt of the “art de vivre”?

I think it is part of the spirit of a place, part of what you feel and experience when you visit or stay. Maybe one thing balances and enhances the other: the work of art sets off the place, and the place sets of the work of art. Works of art also stimulate the imagination, inviting you to reflect and dream. what is yoUr happiest “artistiC” memory sinCe 2008 and the first Kilimandjaro art ColleCtion?

EsthétIquE dE LA syMétrIE philippe iCher n’en revient toUjoUrs pas d’avoir été Choisi par la Galerie BartoUx. si poUr lUi la peintUre a lonGtemps été Un hoBBy, il vit depUis qUatre ans l’aventUre à 100 %, aCCompaGné par les fantômes qUi ont traCé sa voie. « Explorateur de l’imaginaire » : voilà le terme qui le caractérise le mieux. « Les voyages sont à la source de mon imagination. je suis tombé amoureux du continent asiatique, chine, Laos, cambodge, vietnam, birmanie, etc. où je suis déjà allé de très nombreuses fois. c’est là que je puise un grand nombre des éléments qui me servent pour mes toiles, tampons, parchemins, sceaux en bronze. de birmanie, j’ai rapporté de petits morceaux de tissus et de cahiers d’élèves moines ; de Mongolie, je suis revenu avec de menus objets appartenant à des chamanes. depuis que j’ai commencé à peindre, je me sens proche des artistes qui ont eu des parcours tortueux, comme van Gogh et ses déchirures ou encore Modigliani et ses visages sans regard. Et pourtant, mes tableaux disent tout le contraire. j’aime que mes toiles donnent aux gens l’envie de s’arrêter et de prendre le temps. je suis ravi quand elles évoquent pour eux un voyage ou une émotion ressentie devant un palais en Asie ou ailleurs », confie le peintre. Et d’ajouter : « je me sens à la frontière entre réalisme et utopie. L’art est un langage universel, grâce auquel je peux parler avec tout le monde, échanger des idées, même si elles sont contraires. j’apprends chaque jour de ce que je vois. je vais puiser dans d’autres cultures et je récrée des mondes, c’est une forme d’archéologie contemporaine. Au cours de mes déambulations, j’aime faire des découvertes. si je trouve un objet, je passe du temps à le nettoyer et en le réintroduisant dans ma peinture, je lui donne une deuxième vie ». Les toiles de philippe Icher sont des « révélateurs » qui racontent ses voyages et parlent d’équilibre. “Explorer of imaginary worlds” is maybe the expression that describes him best. “travel has always fired my imagination. I fell in love with Asia - china, Laos, cambodia, vietnam, burma and so on and I have visited those countries many many times. from them, I draw a number of the elements I use in my paintings: bosses, parchments, bronze seals. from burma, I brought back small pieces of fabric and the exercise books of student monks; from Mongolia, tiny items belonging to shamans. since I began painting, I have felt close to artists who had tormented careers: van Gogh and his violent reactions or Modigliani and his blank faces. And yet, my canvases convey a totally different message. I am pleased when my paintings make people want to stop and take time over them.

I am delighted when they evoke a trip or the emotion they felt at the sight of a palace in Asia or elsewhere,” explains the painter. And he adds: “I feel I am at the frontier between realism and utopia. Art is a universal language, thanks to which I can speak to anyone and exchange ideas, even if our ideas are contradictory. I learn every day from the things I see. I draw from the well of other cultures and I recreate worlds: it is a form of contemporary archaeology. In the course of my wanderings, I love making discoveries. Встреча. Откуда такой интерес к искусству? Считаете ли вы себя опытным коллекционером? Сюзанна Капеззон: Вообще, я очень ценю все, что так или иначе связано с дизайном и искусством. ’il ne fallait retenir qu’une seule date, ce serait peut-être celle-là : 1995. Cette année-là… Philippe Capezzone et Stanley Fink associent leurs compétences et créent Prestige Property. La société, spécialisée dans la construction de chalets haut de gamme, va rapidement démontrer ses capacités à livrer des produits clés en main, où tout, du sol au plafond, porte l’empreinte de l’excellence.

An Iconic ‘K’ When Philippe Capezzone and Stanley Fink opened the Kilimandjaro in 2001, they raised the bar for the outstanding luxury hotel sector. es chiffres sont éloquents : 600 kilomètres de pistes balisées accessibles à tous, répartis en 330 pistes (13 % de vertes, 39 % de bleues, 38 % de rouges et 10 % de noires) sur les 8 stations que comptent les 3 Vallées (Courchevel, La Tania, Méribel, Brides-les-Bains, Les Menuires, Saint-Martin de Belleville, Val Thorens et Orelle). Les 3 Vallées, c’est aussi 180 remontées mécaniques (dont 2 téléphériques, 33 télécabines et 38 télésièges à haut débit), 85°% du domaine skiable situé au-dessus de 1800 mètres et 25 sommets accessibles par les remontées mécaniques, dont 10 culminent à plus de 2500 mètres d’altitude.

Mais réduire ce domaine XXL à des chiffres, ce serait passer outre ses incroyables paysages de carte postale où, de décembre à avril, le blanc prédomine. Les amoureux de la nature s’extasient devant cet amphithéâtre naturel auréolé de neige, les skieurs du monde entier s’imaginent dévalant des pistes immaculées et se réfugiant, le soir venu, autour d’un bon feu de cheminée. Le temps d’un séjour, les voilà les rois du monde ! Si tous, débutants et confirmés, peuvent profiter pleinement de leurs vacances, c’est grâce à des infrastructures adaptées et à des professionnels qui ont fait de la sécurité le cheval de bataille des 3 Vallées. La formule, ici : le ski sans souci. De là à dire que la sécurité vire à l’obsession, il n’y a qu’un pas et Patrick Mugnier, directeur du Service des Pistes de la S3V, le franchit allègrement : « Nous misons sur une véritable politique sécuritaire et les résultats semblent nous donner raison. Nous avons constaté, la saison dernière, une fréquentation accrue et moins de blessés. » L’acquis et la nouveauté L’une des forces des 3 Vallées réside dans sa capacité à prévenir les accidents, sans que la clientèle ne le perçoive. Acteurs essentiels du processus, les 180 pisteurs-secouristes parcourent le domaine, l’inspectant avant son ouverture au public.

Les plus curieux peuvent néanmoins remarquer de gros tuyaux installés au sommet des pistes, sur des corniches. Il s’agit de gazex, autorisant le déclenchement préventif d’avalanches, histoire de sécuriser le domaine skiable, notamment après de fortes chutes de neige. On en compte 258 dans les 3 Vallées : ils permettent l’acheminement d’un mélange de gaz et d’oxygène qui va créer une déflagration dont l’onde de choc fera partir l’avalanche. L’opération s’effectue à distance, à partir d’un

But narrowing this extra large skiing area to mere numbers would be to exclude the incredible postcard scenery, where, from December to April, snow prevails. Nature lovers are dazzled by this white natural stage, skiers from all around the world dream to run down the immaculate ski slopes, retreating at night around the fireplace. They become the kings of the world over their holidays! If everyone, from beginners to experienced skiers, can fully enjoy their holidays, it is thanks to adapted facilities and to experts who have made safety the leading priority of the 3 Valleys. Their motto: carefree skiing. One could even say that safety has become an obsession, as Patrick Mugnier, the director of the S3V slope service cheerfully confirms: “We are banking on a genuine safety policy and results seem to prove us right. Last season, we noticed an increase in traffic and a reduction of injuries.”

Glories and updates One of the 3 Valleys’ assets lies in being able to prevent accidents, without customers’ knowledge. The 180 patrollers, who are essential to this process, scan the skiing area before it opens to the public.

The most curious skiers will nevertheless notice large pipes set up at the top of the slopes, on ridges. They are gazex, enabling preventive avalanche release, aiming at securing the skiing area, in particular after intense snowfalls. There are 258 of these systems in the 3 Valleys: they allow the transfer of a gas and oxygen mix creating a detonation, releasing an avalanche triggered by the blast wave. It is operated remotely, from a computer. Another system is the CAtex (short for CAble Carrier Explosives). There are 20 of them, and they include explosives attached to cables. Finally, ski patrols also use hand grenades selectively.

La sécurité du skieur passe également par l’aménagement des pistes, notamment leur élargissement. « Nous avons engagé d’importants travaux de terrassement, précise Patrick Mugnier, pour lesquels nous utilisons des déblais, ce qui nous évite de toucher au terrain naturel. » Ainsi, à Courchevel, les débutants bénéficient d’un espace dédié, avec de nombreuses pistes vertes, larges et longues, à l’écart des couloirs empruntés par les skieurs expérimentés. L’apprentissage, oui, mais en toute sécurité ! La fréquentation en hausse des 3 Vallées en général, et de Courchevel en particulier, a incité la station à investir quelque 7 millions d’euros pour la nouvelle remontée mécanique du Biollay, débrayable 6 places : elle arrive désormais plus haut qu’avant et offre une capacité de transport supérieure de 32 %.

Des systèmes high-tech Autre dispositif qui a fait ses preuves : le Magnestick-Kid. Ce système breveté, qui « scotche » les enfants aux télésièges, leur sert également de protection dorsale et de signal lumineux, et protège les plus jeunes des collisions et des chutes sur les pistes. Succès aussi pour les Security Patrols, une initiative qui a été une première en France et qui est reconduite cet hiver ! Ces patrouilles de professionnels assermentés interviennent sur les pistes pour sensibiliser les skieurs et leur faire prendre conscience des dangers de la vitesse. Pour la saison 2012/2013, Courchevel (mais aussi Méribel-Mottaret et la Tania) généralise le Magnestick-Bar, c’est-à-dire le verrouillage de garde-corps à tous ses télésièges.

Aux Ménuires et à Val Thorens, les inconditionnels du hors-piste peuvent désormais se familiariser avec le DVA (Détecteur de Victimes d’Avalanches). Au sommet de la télécabine du Roc des 3 Marches 1 et en bordure de la piste Espace Junior, ils sont invités à découvrir dans un premier temps, puis à manipuler et enfin à utiliser efficacement le DVA, outil désormais indispensable dès que l’on quitte le domaine skiable balisé. « Il vaut mieux prévenir que guérir », dit l’adage. Le domaine des 3 Vallées le vérifie au quotidien. Sa politique de sécurité, passive et active, est garante de séjours au ski sous le signe du confort, du plaisir et de la joie de vivre. |K|

High-tech devices The Magnestic-Kid is another device that proved its worth. This licensed system, which “glues” children to their seats, also provides back protection and light signal, and protects the youngest skiers from collision and falls. The Security Patrols were also a success; a pioneer initiative in France, renewed this winter! These expert sworn patrols go on the slopes to increase skiers’ awareness of the dangers of speed. For the 2012/2013 season, Courchevel (but also Méribel-Mottaret and the Tania) is bringing the Magnestick-Bar into general use, which implies a locking system on all chairlifts.

At the Ménuires and in Val Thorens, the off-piste fans can now get accustomed to the DVA (avalanche transceiver). At the summit of the bubble car of the Roc des 3 Marches 1 and on the side of the Espace Junior run, they are invited to first discover and then handle and use efficiently the DVA, a tool that has now become essential when off-piste skiing. “An ounce of prevention is worth a pound of cure”, as the saying goes. nicolas Gros, Monsieur “Sécurité” Il a grandi à Courchevel et, à l’âge où d’autres ont quitté la station, lui a choisi d’y rester. Aujourd’hui encore, Nicolas Gros dévale les pistes, mais plus seulement pour le plaisir. Rencontre avec un homme de la montagne, qui met tout en œuvre pour que neige rime avec sécurité.

« Le véritable montagnard possède un état d’esprit similaire à celui d’un marin. Il sait qu’il est peu de choses par rapport à la nature environnante et qu’un accident est vite arrivé. » Nicolas Gros parle en connaissance de cause. Pisteur-secouriste, il est chef de secteur à Courchevel et tous les skieurs, débutants comme chevronnés, enfants comme adultes, lui doivent, sans le savoir, une fière chandelle. Car c’est grâce à lui, et à d’autres professionnels, qu’ils profitent de la montagne dans des conditions optimales de sécurité. À l’heure du choix, moniteur ou pisteur, Nicolas Gros a pris la seconde option, « parce que j’imaginais que j’aurais davantage de liberté. » Il a donc passé un test technique (des descentes en ski toutes neiges), préambule à une formation bien spécifique, avec cours de secourisme en individuel et en équipe, et d’artificier, option neige, le tout sanctionné par un examen. « C’est un métier intéressant, parce qu’en plus d’être en permanence au contact de la nature, il offre une grande variété de tâches et évite la routine. » Un physique au top De mi-novembre à fin avril, Nicolas Gros vit sur les pistes. Chaque matin, bien avant que les skieurs ne chaussent leurs spatules, il parcourt le domaine, vérifie l’état des piquets, des filets, des matelas. La sécurité passe par la prévention. Relié en permanence par radio avec les hommes de son équipe, il est à même, en cas de besoin, de gérer toutes sortes de situations, de la simple rectification d’une protection à l’intervention et aux premiers secours en cas d’accident. « Les secours sont déclenchés par le central qui est en communication constante avec tous les pisteurs. Il y a un certain nombre de refuges, sur les sommets et l’un de nous y passe la journée. En cas de besoin, celui qui est au refuge part immédiatement avec la trousse de premier secours, et éventuellement un brancard. » Si nécessaire, le pisteur-secouriste peut être amené à déclencher une avalanche, l’opération nécessitant évidemment une procédure bien spécifique. Garant d’une sécurité autant passive qu’active, Nicolas Gros n’hésite pas à miser sur une autre approche, celle de la sensibilisation. « Nous parcourons les pistes toute la journée et nous sommes amenés à être en contact avec la clientèle. On nous pose des questions, ce qui nous permet d’expliquer et de conseiller. » Très régulièrement, pendant l’hiver, la station accueille des classes et montre aux élèves le travail des chiens d’avalanche. « C’est une autre facette de notre activité. Là encore, nous essayons de sensibiliser les jeunes aux dangers de la montagne. » Avoir une excellente condition physique, être un skieur chevronné et ne pas craindre de sortir par tous les temps restent des impératifs pour qui veut devenir pisteur-secouriste. Nicolas Gros, n’a, dit-il, jamais regretté son choix. Il aime son métier et s’y consacre à 100 %.

He grew up in Courchevel, and when others were old enough to leave the resort, he decided to stay. Nicolas Gros still hurtles down the slopes, but for more than just fun.

We met with the man on the mountain, who does everything in his power to make snow synonymous with safety.

“A genuine mountain person thinks just as a sailor would. He knows he is insignificant compared to the surrounding nature, and accidents can happen any time.” Nicolas Gros knows what he is talking about. As a ski patroller, he manages the Courchevel area, and all skiers, whether they are beginners or experienced, children or adults, are without even knowing it hugely indebted to him. Because together with other experts, he is the reason why they are able to enjoy the mountain in the best safety conditions. When he had to pick a specialty, either ski instructor or patroller, Nicolas Gros went for the second option, “because I thought I would have more freedom.” Consequently, he took a technical test (ski runs in every snow conditions) that was the introduction to a specific training, with individual and group first aid courses, as well as avalanche release courses, with a focus on snow, and a final exam. “It is an interesting job, because I get to be in the nature all the time, and then undertake a whole range of missions that are never the same.”

Great physical condition From mid-November to mid-April, Nicolas Gros lives on the slopes. Each morning, long before skiers put their skis on, he goes all over the area, checks the poles, the nets, and the mattresses. Safety can be ensured by preventive action. Connected at all times by radio with the men of his team, he is able to manage any kind of situation if necessary, from a simple adjustment of a safety equipment to intervention and first-aid in case of an accident. “ The rescue team is being reached via telephone exchange, which is connected to patrollers all day long. There are a few refuges at the top of the mountain, and one of us spends the day there. If anything happens, the person in the refuge leaves immediately with the first-aid kit and possibly a stretcher.” If necessary, the ski patroller may have to trigger an avalanche, following of course a specific process. Guaranteeing both passive and active safety, Nicolas Gros does not hesitate to try a new approach of awareness. “We go over the runs all day long and we are brought to be in direct contact with customers.

We are being asked questions, and we can then explain and give advice.” Very regularly, during wintertime, the resort welcomes schools and shows students how rescue dogs work. “It is another aspect of our job. Then again, we try to increase youth awareness of the dangers of mountains.” To become a ski patroller, you must be in excellent physical shape, have experienced skiing skills and be able to go out on the slopes no matter what the weather conditions may be. Nicolas Gros says he never regretted his choice. He loves his job and he is 100% dedicated to what he does.

Так, например, в Куршевеле начинающим отведено отдельное пространство с множеством зеленых трасс, широких и длинных, подальше от опытных лыжников. Повышение посещаемости Трех долин, и в частности Куршевеля, поставило станцию перед необходимостью установки нового подъемника Biollay, стоимостью 7 миллионов евро. Вмещая 6 пассажиров за раз, он повысил скорость перевозки на 32%. Высокие технологии на службе у безопасности Специальное оборудование Magnestick-Kid - запатентованная система, обеспечивающая максимальную безопасность маленьких лыжников, установлена в этом сезоне в Куршевеле, Мерибель и Ла Танья.

История горнолыжного курорта Трех долин началась в 40-е годы ХХ века. За 60 лет он превратился в самую большую в мире зону катания. Для влюбленных в природу и лыжный спорт это исключительное место дарит не только великолепные заснеженные пейзажи, но и безопасность на самом высоком уровне.

330 горнолыжных трасс общей длиной в 600 км (13% зеленых трасс, 39% - синих, 38% - красных и 10% - черных) располагаются на 8 станциях Трех долин (Куршевель, Ля Танья, Мерибель, Брид-ле-Бан, Ле Менуир, Сан-Мартен де Бельвиль, Валь Торанс и Орель). Станции оборудованы 180 быстроходными подъемниками, в том числе 2 канатными дорогами с кабинами, 33 фуникулерами и 38 канатными дорогами с сиденьями. 85% горнолыжных трасс находятся выше 1800 м над уровнем моря. На 25 горных вершин можно добраться на при помощи подъемников, 10 из них находятся на высоте 2500 м над уровнем моря. На эту огромную лыжную территорию, где с декабря по апрель преобладающим цветом является белый, приезжают лыжники со всего мира, чтобы как следует насладится великолепием снежных пейзажей и теплом вечерних каминов. И здесь абсолютно для всех, начинающих и опытных лыжников, на протяжении всего сезона гарантирован беззаботный отдых и безопасное катание. За последним ревностно следит директор Службы безопасности трасс Патрик Мюнье: "В Трех долинах мы уже давно ведем строгую политику безопасности, и результаты не заставили себя ждать. В прошлом сезоне мы констатировали большую посещаемость и меньшее количество раненых".

On ne devient pas une référence sans avoir été un modèle... Volant a propulsé sa réputation jusqu’aux sommets au début des années 2000 en étant le pionnier des skis dits « Rocker ». Appuyé par les performances de l’un des plus grands noms du sport hivernal, Shane McConkey, le lancement du premier ski au cambre inversé marque le début d’une nouvelle ère ! Le modèle Spatule de la marque Volant fera un effet boule de neige dans le secteur... Sa forme, qui s’apparente davantage au snowboard, voire au ski nautique, d’un point de vue esthétique, va totalement changer la donne de la tolérance sur la neige et du pivotement dans les virages. Depuis ce jour, on observe un mouvement plus fluide des skieurs « qui ne doivent plus se baisser et faire de

petits soubresauts », explique le champion. D’après la légende, l’idée aurait été développée suite à un croquis griffonné sur une serviette en papier par le free-rider. C’est ainsi que l’étroite relation qui unissait le sportif et la marque de ski a vu naître le ski « moderne ». Après son essai de la fameuse Spatule, Shane McConkey a déclaré : « Ce jour-là, j’ai réalisé que le ski devait être « taillé » pour aller dans le sens du skieur, pas contre lui ! (...) Quand je croisais des gens qui étaient contre l’idée ou surpris par sa forme, je savais au fond de moi qu’ils seraient confus dès qu’ils seraient face à la réalité des résultats. C’était vraiment très « fun » de vivre cette évolution du sport ». Depuis, le design atypique de la marque est entré dans les normes tout en les repensant. L’étoile montante des neiges ne cessera jamais de slalomer vers la perfection...

à CœUr vaillant, rien d’impossiBle À dix-sept ans, il s’engage dans la Marine et devient mécanicienplongeur-sauveteur sur hélicoptères. Il part pour l’Indochine et demande à devenir pilote. La réponse prend la forme d’un « Non » sans appel. Il participe à la guerre d’Algérie, où il rencontre le colonel Crespin, auprès de qui il réitère sa demande. « L’armée de terre recrutait en faisant passer des tests psychotechniques et lui avait compris, je crois, mon rêve de gosse. » René Romet va remporter une première revanche sur la vie en devenant pilote. S’enchaîneront quelques autres pieds de nez au destin, notamment lorsqu’il obtiendra son diplôme d’instructeur pilote avion et hélicoptère de l’Aviation Légère de l’Armée de Terre (ALAT) et qu’il formera les pilotes de la navale. « J’ai participé à trois cent-cinquante missions de guerre, et je garde encore en mémoire cette fois où mon appareil a été pris pour cible en Algérie. Une belle montée d’adrénaline ! Je me souviens aussi de l’hélitreuillage d’un amiral anglais, une opération épique et quelque peu mouvementée, qui a longtemps fait dire dans la profession : ‘Romet, c’est celui qui a déposé l’amiral dans la cheminée du bateau !’ ». dU militaire aU Civil Lorsqu’il quitte l’armée, en 1970, René Romet ne range pas sa casquette de pilote. Bien au contraire. Il entre dans la Sécurité Civile, en Corse d’abord (patrie d’origine de sa mère), puis dans les Pyrénées, avant de rejoindre Annecy. Là encore, il s’impose comme le meilleur. Sa gouaille et son sens de la communication font des merveilles : il compte parmi ses amis des pointures du show-biz, Alain Delon ou Jean-Paul Belmondo, il s’invite dans des émissions télévisées (Michel Drucker l’accueille dans Stars 90), il compte quelques élèves célèbres, comme Christophe

t all began one July day in 1950, in Toulon. René Romet was fourteen: “I was on the beach with my friends when a helicopter patrolling the area hovered above us. I gave a discreet signal to the pilot, and he responded. It was unbelievable! I felt as if I’d been in direct contact with that pilot and as soon as I got home I proudly told my father that I too wanted to be a helicopter pilot. My father, who was a Navy mechanic, told me that my grades weren’t in my favour.” Not one to be easily deterred, René Romet stuck with his dream, with a determination to pass any test. with CoUraGe, nothinG is impossiBle At the age of seventeen he joined the Navy, where he became a helicopter mechanic-diver-rescuer. Leaving for Indochina, he asked to become a pilot, but the immediate answer was a resounding “No”.

Later, while doing service in the Algerian war, he met Colonel Crespin, and repeated his request. “The army were recruiting by making you pass psycho-technical tests, and I think he understood my childhood dream.” René Romet got his own way in the end, and went on to become a pilot. He tempted, and defied, fate again on several occasions, notably when he obtained his aeroplane and helicopter flying instructor’s diploma from the Land Army Light Aviation division (Aviation Légère de l’Armée de Terre - ALAT) and trained navy pilots.

“I took part in three hundred wartime missions and I still remember when my machine was targeted in Algeria. It got the adrenalin going!

I also remember airlifting an English admiral in an epic and turbulent operation, which ended up with me being known in the profession for a long time as: ‘Romet, the guy who deposited the admiral in the boat’s funnel!’” from the forCes to Civvy street When he left the army in 1970, René Romet didn’t exactly put his helmet away. On the contrary. He joined the Sécurité Civile, first in Corsica (his mother’s native land) and then in the Pyrénées, before returning to Annecy. Once again, he would soon be known as the best.

His mischievous demeanour and ability to communicate have served him well: his friends include big show-biz names such as Alain Delon and Jean-Paul Belmondo. He is invited to speak on TV (as the guest of Michel Drucker on Stars 90, for instance), and has several famous pupils, among them Christophe Dechavanne and Nadine Vaujour.

René Romet a alors quatorze ans : « J’étais sur la plage avec des amis lorsqu’un hélico, qui patrouillait dans le coin, s’est mis en stationnaire au dessus de nous. J’ai fait discrètement un signe au pilote, qui m’a répondu. Pour le gamin que j’étais, c’était incroyable ! J’avais l’impression d’être entré en contact direct avec ce pilote et, en arrivant à la maison, j’ai annoncé fièrement à mon père que je voulais devenir moi aussi pilote d’hélicoptère. Mon père, qui était mécanicien dans la Marine, m’a fait remarquer que mes résultats scolaires ne prêchaient pas en ma faveur. » Qu’importe, René Romet a de la suite dans les idées et une volonté à toute épreuve.

Déchavanne ou Nadine Vaujour. « Nous étions dans les années 80, et un jour, je vois arriver dans l’un de mes stages de pilotage, un petit bout de femme qui n’avait pas froid aux yeux. » Le petit bout de femme en question fera évader de prison son mari, Michel Vaujour, en pilotant ellemême l’hélicoptère à bord duquel elle l’hélitreuillera. « Quand elle est sortie de prison, elle est revenue me voir à Annecy et a fait un reportage avec Antenne 2. C’était sa façon à elle de « réparer » ma mise en lumière bien involontaire dans l’une des affaires d’évasion les plus célèbres de cette décennie-là. » Spécialiste des sauvetages extrêmes, René Romet est à l’origine de la création de la base du SAF (Secours Aérien Français), à Courchevel. C’était en 1981 et, aujourd’hui encore, ce centre de secours en haute montagne intervient régulièrement en toutes saisons.

Chapitre trois Le troisième grand chapitre de sa vie professionnelle, René Romet l’écrit en 1994. Deux ans plus tôt, il a abandonné la Sécurité Civile avec un palmarès impressionnant, 13.000 heures de vol, 2.000 missions de secours et quelque 2.500 personnes sauvées. L’aventure continue, avec la création de Héli Secours René Romet Assistance, dont la vocation est triple : formation de sauvetage en montagne, perfectionnement et négoce d’aéronefs. « Pour durer, il faut exister » clame haut et fort celui qui n’envisage pas de mettre un terme à sa carrière. « J’ai formé environ 600 pilotes et je continue de former les instructeurs qui, à leur tour, apprendront tout du métier aux pilotes d’essais à Istres. J’aime l’idée de passer le flambeau. » Aujourd’hui, deux de ses trois fils perpétuent la tradition et sont, chacun, à la tête de leur société. Parlant de Dominique, René Romet plaisante : « C’était mon fils, aujourd’hui, c’est mon père ! C’est moi qui lui demande des conseils. » Et la peur ? Ne se glisse-t-elle jamais dans la cabine d’un hélicoptère ? « J’avoue que chaque fois que je vois un pilote décoller, j’attends de savoir s’il a bien posé son appareil. Pour mes fils, en plus, il y a l’angoisse du père ! Mais on s’habitue. Et puis, je dis toujours : « Cesser de risquer, c’est cesser d’être un chef ». Je suis enquêteur des accidents d’aviation, en particulier d’hélicoptères, et j’ai constaté que sur 10 accidents, plus de 9 sont dus à une erreur de pilotage. Quand on vole, il faut être tout à fait bien dans sa tête. À 100 % ! » Et s’il devait avoir un regret, René Romet ? Peut-être celui de n’avoir pas pu faire homologuer la pose de son hélicoptère sur le toit du monde.

Mais comme toujours, il aura le mot de la fin : « J’ai formé Didier Delsalle, le pilote d’essai qui s’est posé en mai 2005, au sommet de l‘Everest, à 8.850 m avec son Écureuil/Astat B3. » Indépendamment des records, et René Romet en détient quelques-uns. Ce professionnel hors normes, baptisé par ses pairs le « sauveteur de l’impossible », avoue que « sauver des gens reste le plus beau métier du monde. » |K|

It was her way of paying me back for having involved me against my will in one of the most famous escapes of the decade”. A specialist in extreme rescues, René Romet was behind the creation of the French Air Rescue (Secours Aérien Français - SAF) base at Courchevel. That was in 1981, and still today this high mountain rescue centre is regularly called out, all year round.

Chapter three René Romet began the third great chapter in his professional life in 1994. Two years earlier he had left the Sécurité Civile with an impressive record: 13,000 flying hours, 2,000 rescue missions and some 2,500 people rescued. The adventure continued with the creation of Héli Secours Assistance (Helicopter Rescue Support), which has a triple vocation: mountain rescue training, advanced courses and an aircraft trading business. “If you want to last, you have to exist” proclaims the man who sees no end to his career.

“I’ve trained about 600 pilots and I still train instructors, who then teach everything about the profession to test pilots in Istres. I like the idea of passing on the flame.” Today, two of his three sons carry on the family tradition, each at the head of their company. René Romet jokes about Dominique: “He was my son, but now he’s my father! I’m the one who asks him for advice.” And what about fear?

Doesn’t it ever slip into the helicopter cockpit? “I admit that every time I see a pilot take off, I wait to know whether they landed safely. And with my sons there’s a father’s worry on top of that!

But you get used to it. And I always say: ‘When you stop taking risks, you stop being a leader.’ I’m an aviation accident investigator, specialised in helicopters, and I’ve seen that more than 9 out of 10 accidents are due to pilot error. When you fly, you have to be a hundred percent OK mentally. 100%!”

And if René Romet had a regret? Perhaps not having been able to officially touch down his helicopter on the top of the world. But he always has the final word: “I trained Didier Delsalle, the test pilot who landed on the summit of Everest at 8,850 m in his Ecureuil / Astat B3.” Records aside, René Romet holds a few achievements of his own.

This outstanding professional, known to his peers as the man who “rescues the impossible”, is happy to say that saving people “is still the most beautiful job in the world.” |K|

Из военного в штатские В 1970 гору Рене Ромэ ушел из армии, но не перестал быть летчиком. Я являюсь экспертном по авиа авариям, и в частности вертолетов, и я заметил, что 9 из 10 аварий происходят из-за неправильного управления. В полете нужно иметь голову на плечах. На 100%!" А есть ли у Рене Ромэ сожаления? Может быть то, что не засвидетельствовал свою посадку на вертолете на мировую вершину. Но, как всегда, ему есть, что сказать: "Я обучил Дидье Дельсаль, летчика-испытателя, приземлившегося в 2005 году на вершину Эвереста, на 8 850 м над уровнем моря, на своем Écureuil/Astat B3". Partant du principe que le coefficient d’adhérence sur la neige est proche de 0, il convient d’équiper son véhicule en pneus hiver. Aussi performante que puisse être votre transmission intégrale, elle doit bénéficier d’un minimum d’adhérence.

———— Petrus ———— Discrétion et humilité Trouver Petrus n’est pas chose aisée. Au fil des tours et détours, les nouveaux chais apparaissent, comme plantés au cœur des vignes. De prime abord, rien n’identifie le mythe. Seules les clefs de Saint-Pierre, apposées sur certaines portes ou linteaux, sont là pour rappeler que vous touchez du doigt le plus discret des Crus bordelais.

L’exception d’un terroir Petrus est un lieu-dit situé à 40 mètres d’altitude sur une croupe d’argile disposée autour des chais. Ici, le Merlot trouve sa plus formidable expression sur des argiles noires de surface, elles-mêmes situées sur des argiles profondes de 6 à 8 mètres. Plantées à 95% de Merlot et 5% de Cabernet Franc sur près de 11 hectares, les vignes sont suivies avec attention, chaque pied est considéré comme une entité unique. Il existe une architecture du pied de vigne à Petrus. Par la taille, au fil des saisons, le vigneron cherche à obtenir des bois à la même hauteur, qui montent très droits ; il oriente ainsi la vigne pour mieux l’équilibrer. Comme un être humain.

Chaque parcelle se voit récoltée puis vinifiée séparément pour tirer le meilleur parti de la maturité.

Tact and modesty Finding the Petrus estate is no easy matter. As the road twists and turns, the new winery buildings come into view, as if planted in the midst of the vineyards. At first glance, there is nothing very exceptional about it. Only the keys of St. Peter, carved here and there on doors and lintels, remind you that you are making contact with the most discreet of great Bordeaux wines.

An exceptional terroir The Petrus estate lies at an altitude of 40 metres on a clayey hilltop that enfolds the winery itself. Here, the Merlot grape finds its fullest and finest expression on black surface clays, themselves overlying deeper layers of clay, 6 to 8 metres down. Extending over 11 hectares, planted 95% with Merlot and 5% with Cabernet Franc, the vineyards are carefully tended, each vine treated as a unique individual. Petrus vines have a special “architecture”. In pruning them over the years, the vinedresser seeks to obtain stocks of the same height, rising straight upwards, shaped to achieve the best possible balance. The care you would lavish on a human being. The grapes from each plot are harvested and vinified separately, as and when they are perfectly ripe.

Une affaire de famille Lorsque le moment des vendanges approche, trois silhouettes familières s’affairent dans les vignes, goûtant les raisins pour définir la bonne maturité et débuter la récolte. L’un d’entre eux, Olivier Berrouet, est un homme heureux. Arrivé à Petrus à la fin de l’année 2007, il prend la suite de Jean-Claude, son père, véritable figure tutélaire du vignoble bordelais. Après des études d’ingénieur agronome à Toulouse, Olivier enchaîne les stages en Californie, en Australie, à Château Haut-Brion puis Château Margaux, il passe ensuite quatre ans à Château d’Yquem.

Fort de ces expériences, il est aujourd’hui le vinificateur de Petrus.

Pour Olivier, « un grand vin se définit comme une accumulation de détails, à la vigne comme à la cave ». À l’instar d’un peintre impressionniste, il travaille par petites touches et définit ainsi tout au long de l’année avec ses équipes la structure finale du vin.

Le temps des vendanges Lorsque les raisins arrivent à pleine maturité, les vendangeurs se pressent dans les vignes. Sur les argiles, le merlot est un cépage qui acquiert épaisseur, densité, texture et une structure extraordinaire. Il se suffit, presque, à lui même. Lorsque les grappes sont déposées dans les chais, l’équipe de Petrus prend en charge la sélection des meilleurs raisins. Un éraflage doux, puis c’est le moment d’un premier tri visuel.

Ensuite, une table de tri optique entre en scène et c’est à un véritable ballet auquel assistent alors les visiteurs. Les grumes sont sélectionnées en parcourant un tapis tressé de fils serrés ; un jet d’air comprimé et le raisin non conforme se voit écarté. Seuls les plus beaux fruits sont conservés.

Les vins des différentes parcelles sont assemblés très rapidement pour mieux les homogénéiser. Il est temps, ensuite, d’entonner dans des barriques pour 50% neuves et 50% âgées d'un an.

A family affair As harvest time approaches, three familiar silhouettes can be seen busying themselves about the vineyards, tasting the grapes to assess whether they are ripe and if the harvesting should begin. One of them, Olivier Berrouet, is a happy man indeed. He arrived at Petrus at the end of 2007 and has taken over from his father, Jean-Claude, a real doyen of the Bordeaux vineyards. After studying to become an agronomist in Toulouse, Olivier served his apprenticeship in California and Australia, then at Château Haut-Brion and Château Margaux, with a final four years at Château d’Yquem. On the strength of this experience, he is now chief wine-maker at Petrus.

For Olivier, “a great wine depends on an accumulation of details, in both vineyard and winery”. Like an impressionist painter, he and his teams work in small touches throughout the year, thereby defining the final structure of the wine.

The grape harvest When the grapes are fully ripe, the harvesters get busy in the vineyards.

On these clayey soils, Merlot is a variety that acquires substance, density, texture and an amazing structure. It is almost self-sufficient. When the bunches of grapes are brought to the winery, the Petrus team’s first job is to select the very best of the crop. They are gently separated from the stems, then undergo an initial visual sorting operation. They next pass to an optical sorting table, where visitors witness something akin to a ballet. The berries are selected as they run over a conveyor fitted with tight-stretched wires; a jet of compressed air and the undesirable grapes are whisked away. Only the very best fruits are kept.

The wines from the different plots are blended at a very early stage for greater homogeneity. Then it is time to run the wine into casks that are made of 50% new wood, 50% one-year-old wood.

En 1925, Madame Loubat, une libournaise qui croit énormément au potentiel de Pomerol, achète une partie de Petrus puis la totalité vingt ans plus tard, en 1945. Son neveu et sa nièce héritent puis cèdent, là encore, une partie du domaine à JeanPierre Moueix. À la fin des années soixante, il devient propriétaire de l’intégralité de ce vignoble situé au nord-est de Libourne et à l’ouest de Saint-Emilion. L’extraordinaire aventure de Petrus prend alors un tournant décisif.

L’histoire de Petrus est à son image, discrète et délicate. Le fil historique se déroule paisiblement, sans anicroche, passant entre les mains de passionnés qui ont conduit Petrus vers les sommets.

Le temps de Petrus s’écoule différemment, ici on ne fait pas de vin, on poursuit la construction d’un mythe. Au fil des années, Olivier Berrouet et Jean Moueix ont développé une complicité et une estime mutuelle avec Jean-Alain Baccon. Sommelier de formation et passionné, directeur de la restauration des Hôtels Kilimandjaro et K2, il a transmis son enthousiasme et son savoir à Pierrick Fischer, devenu aujourd’hui chef-sommelier. Les deux hommes abordent le vin dans un même état d’esprit : écoute, exigence et humanisme. Petrus a su trouver dans les caves un écrin et une philosophie à sa mesure. A bit of history During the early part of the 19th century, the Petrus estate was owned by the Arnaud family. In 1925, Mme Loubat, a native of Libourne, who had great faith in the potential of Pomerol, bought a part of the estate then, twenty years later, in 1945, the remainder. Her nephew and niece inherited, then again sold part of the estate to Jean-Pierre Moueix. In the late 1960s, M. Moueix became owner of the whole property, located to the north-east of Libourne and to the west of Saint-Emilion. The extraordinary adventure of the Petrus estate then took a decisive turn.

Like its image, the history of Petrus is discreet and seemingly unexciting. The story unfolds calmly and quietly, without a hitch, the estate passing through the hands of enthusiasts who have brought it to its present pitch of excellence.

Time at Petrus has a different quality: here they do not just make wine; they are engaged in building a legend. Over the years, Olivier Berrouet and Jean Moueix have developed a partnership and a sense of mutual esteem with Jean-Alain Baccon. A sommelier by training, a true enthusiast, director of the restaurants of the Kilimandjaro and K2 hotels, he has passed on his expertise and passion to Pierrick Fischer, who is now the head sommelier of these two establishments. The two men approach wine with one and the same mind: minute attention, rigour and a humanity. In their cellars, Petrus wines have found a setting and a philosophy that suit them. La vendange 2012 donnera sans doute un millésime délicat laissant s’exprimer tout le talent du vinificateur. Comment s’est déroulée l’année ? Explications.

Les mois de janvier, février et mars ont connu une certaine sécheresse avec 180mm de déficit hydrique. Quelques précipitations en avril sauvent le millésime, puis un temps plus frais et de la pluie vont compliquer la donne. La floraison débute à la fin du mois de mai et de nouveau apparaissent la pluie et un temps frais jusqu’à la fin du mois de juin. De mi-juillet au 25 septembre, le temps est beau, sans excès, avec un peu d’eau : l’optimisme revient. Le vent et le temps sec avant la récolte permettent de vendanger en plusieurs étapes selon la maturité, dans des conditions idéales. Le millésime 2012 aura du fond, avec de la complexité, et donnera un très grand vin.

The 2012 grape harvest will undoubtedly yield a delicate vintage, revealing all the talent of the wine-maker. How did the year unfold? Let us explain.

January, February and March were months of relative drought, with rainfall 180 mm below average. Showers in April saved the crop, but the situation was then complicated by cool weather and more rain. The vines came into flower at the end of May, then again we had rain and cool weather until the end of June. From mid-July to 25 September, the weather was fine, not overly hot, with some slight rainfall: optimism returned. Wind and dry weather just prior to harvest made it possible to pick the grapes in stages, as they ripened, in ideal conditions. The 2012 vintage will have substance and a degree of complexity. It should be a great wine.

A chef passionate about chocolate

Loin des bruissements feutrés des salons confortables et des restaurants accueillants, un monde discret bourdonne et s’active. Ce monde à part, comme hors du temps, reste une énigme pour bon nombre de gastronomes. Les cuisines des restaurants du Kilimandjaro et du K2 sont l’épicentre culinaire des deux établissements.

Au cœur des cuisines, une attention toute particulière a été accordée à la pâtisserie et plus particulièrement une chocolaterie, véritable laboratoire du chocolat. Pâtissier de formation, Nicolas Sale, chef exécutif des restaurants du Kilimandjaro et du K2, est un passionné de desserts et de chocolat. Rencontre.

Far from the hushed atmosphere of the plush dining rooms and welcoming restaurants is a world that hums discreetly with activity. This world apart, almost beyond time, is something food lovers struggle to understand. The kitchens of the Kilimandjaro and K2 restaurants are the very heart and soul of these two establishments. Here, special attention has been given to pastries and, more specifically, to chocolate creations which are made in a real chocolate laboratory. As a qualified pastry chef, Nicolas Sale, head chef of both restaurants, is absolutely passionate about desserts and chocolate. We went to meet him.

Pourquoi avoir créé une véritable chocolaterie dans les cuisines du K2 ?

La philosophie de tous en cuisine est la recherche de l’exclusivité et de l’excellence. Nous fabriquons tous nos pains dans notre boulangerie, il nous a semblés comme une évidence de créer notre propre laboratoire pour le chocolat. Nous travaillons le chocolat en amont puis il est stocké tout au long de la saison grâce à des méthodes de conservation de pointe. La base de ganache est fabriquée puis est passée à l’enrobeuse sous une fine couche de chocolat. Plus la couche est fine, plus la fabrication est maîtrisée, en régularité et en quantité.

Cette volonté d’obtenir ces outils de haute technologie est un moyen essentiel pour nos deux établissements de se démarquer. Chacun d’entre eux a développé une véritable d’identité.

Why did you create a proper chocolate laboratory in the K2 kitchens?

In the kitchens we all share the same philosophy; that is to aim for exclusiveness and excellence. We all make our own breads in our bakery, so it seemed only natural that we should create our own chocolate laboratory. We work the chocolate beforehand which is stocked throughout the season using state-of-the-art methods of preservation. After preparation, the ganache base is placed under a thin layer of chocolate using the coater. The thinner the layer, the easier it is to ensure regularity and quantity.

Using such high-tech tools is an important way for our two establishments to stand out from the crowd. Each of them has developed its own personal identity.

Comment envisagez-vous le métier de pâtissierchocolatier ?

C’est un métier qui vous projette dans une quête d’exigence et perfection. Des mois de travail sont nécessaires pour que le niveau d’excellence soit porté à son paroxysme. Le chef pâtissier doit nourrir son imaginaire et engranger de nouvelles idées. Les mois d’intersaison permettent de se retrouver, de voyager ou de découvrir de nouvelles cultures. Une forme, une courbe, un trait permettent, à leur manière, d’insuffler ou de débuter une idée de dessert.

For you, what does it mean to be a pastry/ chocolate chef?

It’s a profession that requires a challenging quest for perfection. It takes many months of work to ensure levels of excellence are at their peak. A pastry chef must have imagination and be a constant source of new ideas. Between seasons is the time to relax, travel or discover new cultures. A shape, a curve or a line can all contribute to breathing life into a creation or act as a first step on the road to a new dessert idea.

Combien proposez-vous de desserts au chocolat ?

Nous proposons quatre desserts dans chacun de nos restaurants. A la Table du Kilimandjaro, nous travaillons des desserts inspirés de grands classiques. Les montages sont simples - sans être simplistes cependant - sur base de ganache fondant sur un biscuit. Nous associons le tout avec un produit - la noisette par exemple - et une glace par plat. J’avoue un faible pour « Passion Saké », un crémeux d’ananas au chocolat et Yuzu.

Un dessert au chocolat fétiche à nous faire partager ?

Au Kintessence, nous avons le temps et les moyens de travailler sur des desserts de haute tenue. Je me laisse tenter par « After Eight » un dessert menthe-chocolat (comme son nom l’indique) qui pousse le détail artistique et l’esthétisme jusqu’à son paroxysme. L’exclusivité du Kintessence, ses cinq tables, nous permet une véritable précision dans nos parti-pris culinaires. (photo Mathieu Cellard). « After Eight » en quelques mots. Pour créer After Eight, nous avons commencé sur une idée de menthe-chocolat et nous l’avons fait évoluer au fil des années.

How many chocolate desserts do you offer?

We offer four desserts in each of our restaurants. At the Table du Kilimandjaro, our desserts are inspired from the great classics. They are simple to look at - but not simple to make - set on a creamy ganache base over a biscuit. Each of them focuses on a particular product hazelnut for example - and an ice cream per dish.

I admit I have a soft spot for the “Sake Passion”, creamy pineapple with chocolate and Yuzu.

Do you have a favourite chocolate dessert to share with us?

At the Kintessence, we have the time and resources to work on more flamboyant desserts. I can’t resist the “After Eight”, a chocolate and mint dessert (as you can guess from the name) that pushes artistic detail and aesthetics to their limit. The particularity of the Kintessence, with only five tables, means we can achieve real perfection in our culinary choices. (photo Mathieu Cellard).

“After Eight” in a few words. To create After Eight, our initial idea was to use chocolate and mint, but we have refined it over the years.

We were looking to achieve a balance between mint and chocolate, a certain texture. I imagined a water lily sitting on a deep plate in a

Le dessert est délicatement posé sur un socle creux en son centre. La base est un crumble, une glace à la menthe et l’eau chaude déposée sur l’assiette dégage de la fumée libérée lorsque le serveur ôte la cloche. La découverte du dessert s’effectue ainsi en ouvrant. Au fil des réflexions et des années, « After Eight », de nénuphar clos, est devenu une fleur ouverte.

Nous avons choisi ce grand chocolatier pour sa gamme des produits « Laboratoire » destinés aux professionnels. Le chocolat est un métier à part. Ainsi, Philippe Givre, formateur de l’école Valrhona (créée en 1989 par Frédéric Bau) a passé quatre jours avec nous l’année dernière pour présenter, expliquer et décortiquer tous les aspects du chocolat et de la création.

loBsters Bring the cooking liquid to the boil. Boil the lobster tails for 3 minutes, keeping them straight. Cool immediately, remove the carapace, roll the tails tightly in cling-film to make an even cylinder shape. Set aside in a cool place. When the time comes, cut into 2.5 cm thick medallions and glaze them with lobster butter.

CooKinG liqUid for the loBsters Prepare the liquid with distilled vinegar, half the garlic, the rock salt, the lemon, the pepper, the fennel seed and 5 litres of water.

BeUrre de homard Découper les têtes de homard en grosses rouelles, dans une cocotte de fonte les raidir à de l’huile d’olive. Ajouter les oignons et le fenouil émincés et l’ail en chemise, suer à couvert. Déglacer au cognac, flamber, réduire à glace. Déglacer avec le vin blanc, réduire à glace. Ajouter les tomates, laisser compoter doucement à couvert pendant 15 minutes.

Ajouter le beurre et le fenouil sec. Porter à ébullition et cuire pendant 40 minutes à petit feu en dépouillant des impuretés au fur et à mesure de la cuisson. Au terme de la cuisson, mixer à l’aide d’une girafe, laisser infuser 20 minutes sur le coin du feu avec le poivre en grain concassé et le bouquet de basilic. Filtrer à l’aide d’un Tork.

loBster BUtter Cut the lobster heads into large slices and fry them in olive oil in a castiron casserole. Add the chopped onions and fennel, and the unpeeled garlic. Cover and leave to sweat. Deglaze with cognac, flambé, reduce to a glaze. Deglaze with the white wine, reduce again. Add the tomatoes and allow to simmer gently with the cover on for 15 minutes. Add the butter and fennel seeds. Bring to the boil and cook gently for 40 minutes, removing impurities as they come to the surface. When fully cooked, process with a hand-held blender, leave to marinate for 20 minutes on the back burner with the crushed peppercorns and bouquet of basil.

Filter using a Tork sieve.

Céleri Laver, éplucher le céleri, réserver. Au moment, tailler en fine julienne, assaisonner de jus de citron, d’huile d’olive et de fleur de sel.

CeleriaC Wash and peel the celeriac, then set aside. When the time comes, cut into fine strips (julienne), season with lemon juice, olive oil and fleur de sel.

vinaiGrette trUffe Hacher finement la truffe. Réaliser une vinaigrette avec 25 g d’huile d’olive, 10 g de balsamique vieux, la moutarde, la truffe hachée, l’huile de truffe et l’huile de pépin de raisin. Rectifier la texture avec un peu d’eau. dressaGe Dresser 3 médaillons de queue de homard au centre de l’assiette.

Dresser la mâche assaisonnée feuille à feuille au milieu des médaillons en intercalant des lamelles de truffe et des croutons. Dresser le céleri de façon à créer du volume. Terminer avec la vinaigrette truffe sur le tour du fond de l’assiette.

trUffle vinaiGrette Mince the truffle very finely. Prepare a vinaigrette with 25 g olive oil, 10 g vintage balsamic vinegar, the mustard, the minced truffle, the truffle oil and the grape-seed oil. Add a little water to obtain the right texture. servinG Arrange 3 medallions of lobster tail in the centre of each plate. Arrange the seasoned lamb’s lettuce leaf by leaf among the medallions, interspersed with slivers of truffle and croutons. Arrange the celeriac to create a sense of volume. Finally, drizzle the truffle vinaigrette around the food on the plate.

Bar Après avoir écaillé et vidé le bar, lever les filets et portionner des tronçons de 8 cm. Rouler dans le film assaisonné de sel et d’huile de cresson. Cuire au four vapeur à 65°C pendant 8 min pour atteindre 45°C à cœur. Lustrer d’huile de cresson à l’envoi.

Sea bass Scale and gut the fish, remove the filets and cut into strips 8 cm in length. Roll them up in clingfilm seasoned with salt and watercress oil.

Cook in a steamer at 65°C for 8 minutes to achieve a temperature of 45°C in the middle. Glaze with watercress oil when done.

Huile de cresson Chauffer l’huile à 115°C. Mixer pendant 5 minutes 1 bte cresson effeuillée et les pousses d’1 botte de cressonnette pour obtenir un mélange homogène. Filtrer à l’aide d’un Tork. Refroidir en cellule.

Watercress oil Heat the oil to 115°C. Blend for 5 minutes with one bunch of watercress and the shoots of 1 bunch of bittercress to obtain an even mixture. Filter using a Tork sieve. Cool in the fridge.

Mayo cresson Mixer l’œuf dur avec le cresson et la cressonnette. Ajouter le wasabi, le raifort et 75 g d’huile de cresson, sel, poivre. Rectifier la texture avec le xanthane. Réserver au frais en pipette.

Watercress mayonnaise Blend the hard-boiled egg with the watercress and bittercress. Add the wasabi, the horseradish and 75 g of watercress oil, salt and pepper. Add the xanthan gum to obtain the desired texture. Set aside in a cool place, in a piping bag.

Pomme de terre caviar Laver, éplucher les pommes de terre. Détailler des demi-sphères dans les pommes de terre. Oter le centre de chacune d’elle, à l’aide de trois emportes pièces de tailles différentes. Mettre sous vide 2 pièces avec une noisette de beurre demi sel. Cuire à 83°C vapeur. Chauffer et glacer les pommes de terre dans un glaçage fond blanc. Flasher rapidement sous la salamandre, puis garnir le centre des pommes de terre de caviar, déposer en volume une pousse de cressonnette et une chip de ratte.

Chips de ratte Détailler finement des petits ronds de pomme de terre à l’aide d’un emporte pièce de 0,5 cm. Cuire dans une négresse à 110° C, égoutter, saler, réserver.

Tombée de cresson Laver, équeuter le cresson. Tomber le cresson au beurre salé, remuer à l’aide d’une gousse d’ail dégermé, piquée sur une fourchette, égoutter à l’envoi.

Nage coquillage Monter au beurre de cresson le jus de coquillage. A l’envoi, porter à ébullition, sortir du feu et ajouter 50 g de coquillage, 50 g de couteau, 40 g de brunoise de chair de bar et 10 g de brunoise de citron.

Coquillage & Couteau Dégorger coquillages & couteaux dans une eau salée à 30 g/l, au frais, à l’abri de la lumière, pendant 3 h. Les rincer à l’eau claire pendant 30 minutes. Décortiquer les couteaux, détailler en sifflet de 1 cm de long, réserver sur glace.

Suer le céleri branche, l’échalote ciselée au beurre, mouiller au vin blanc et porter à ébullition, réserver. Chauffer une casserole à blanc. Ouvrir les coquillages avec le vin blanc à couvert. Muni de gants, décortiquer les coquillages, découper le pied pour ne conserver que la partie supérieure, réserver sur glace.

Beurre de cresson Incorporer 30 g cresson finement haché et le jus de citron à 20 g de beurre pommade, rouler en boudin.

Emulsion cresson Laver, émincer les oignons et les poireaux. Suer au beurre à couvert.

Ajouter le cresson puis mouiller au fond blanc, crémer et laisser infuser 30 minutes. Mixer, passer au chinois, rectifier l’assaisonnement.

Dresser les assiettes.

Caviar potatoes Wash and peel the potatoes. Cut hemispherical pieces from the potatoes. Remove the centre of each, using three cutters of different sizes. Put two pieces in a steamer with a knob of slightly salted butter and cook at 83°C. Heat and brush the potatoes with a white-stock glaze. brown quickly under the grill, then garnish the centres of the potatoes with caviar, together with a bittercress shoot and a ratte potato chip.

Ratte potato chips Cut out some small roundels of potato using a 0.5 cm cutter. Cook in a chip pan (négresse) at 110° C, drain, season with salt and set aside.

Watercress “tumble” Wash and tail the watercress. Stir the watercress into some slightly salted butter, turning it with a clove of garlic stuck on a fork, having removed the shoot. Drain when done.

Shellfish sauce Stir some watercress butter into the juice from the shellfish. Bring the mixture to the boil, remove from the heat and add 50 g of shellfish, 50 g of razor shell meat, 40 g of diced sea bass and 10 g of diced lemon.

Shellfish & razor shells Soak the shellfish and razor shells in salted water (30g/litre). Keep in a cool place, out of the light, for three hours. Rinse in fresh water for 30 minutes. Remove the flesh from the razor shells, cut into 1 cm long pieces, set aside on ice.

Sweat the celery and chopped shallots in butter, add white wine and bring to the boil, set aside. Heat a saucepan to high temperature. Cook the shellfish in white wine in the covered pan until they open. Wearing gloves, remove the shells and cut away the tough foot of the molluscs, leaving only the upper part. Set aside on ice.

Watercress butter Incorporate 30 g of finely chopped watercress and the juice of the lemon with 20 g of soft butter. Roll into a sausage.

Watercress emulsion Wash and chop the onions and leeks. Sweat with butter in a covered pan. Add the watercress then some white stock, stir into a cream and leave to infuse for 30 minutes. Blend and sieve, season to taste.

Lay out the various items onto plates.

After Eight Mettre de la couverture noire au point, l’étaler sur une feuille de papier guitare légèrement coloriée avec du beurre de cacao vert. Tailler des pétales de 2 tailles différentes puis laisser cristalliser dans une gouttière pendant 12 heures environ à 17 °C. Déposer un disque de biscuit au chocolat creusé, le garnir avec la crème légère à la menthe, disposer les petits pétales de chocolat autour, renouveler l’opération avec les grands pétales. Disposer au centre, une boule de sorbet chocolat et menthe, parsemer de dés de gelée et de dés de guimauve à la menthe.

Décor : glace carbonique.

Biscuit au chocolat Monter les jaunes d’œufs et les œufs avec la poudre d’amande et le sucre glace, ajouter la farine tamisée avec le cacao. Incorporer les blancs montés et serrés avec le sucre semoule puis étaler l’appareil sur un Silpat® dans un cadre (de 40 x 60 x 3 cm) et cuire dans un four à 170 °C pendant 10 minutes environ. Laisser refroidir puis tailler des cercles de 6 cm de diamètre.

Gelée à la menthe Infuser la menthe dans 350 g d’eau environ en maintenant à ébullition pendant 3 minutes. Mixer, passer au chinois étamine. Peser 250 g d’infusion, ajouter le sucre et la gélatine puis couler dans une plaque sur 1 cm d’épaisseur. Mettre au froid, démouler,couper des carrés réguliers.

Guimauve à la menthe Infuser la menthe dans 100 g d’eau environ, maintenir à ébullition 3 minutes. Passer, mixer les feuilles de menthe et réserver. Prélever 50 g d’infusion, ajouter le sucre et 50 g de sucre inverti, cuire à 110 °C. Avec un batteur, émulsionner le sucre inverti restant, verser le sucre cuit et la gélatine. Laisser monter puis ajouter les feuilles de menthe, mixer et étaler sur un Silpat® graissé, sur 1 cm d’épaisseur. Refroidir et tailler des carrés réguliers.

Sorbet au chocolat et à la menthe Infuser la menthe dans 350 g d’eau maintenir à ébullition 3 minutes.

Chinoiser, prélever 250 g d’infusion, ajouter le sucre, le glucose atomisé, le stabilisateur et le cacao en poudre puis le sucre inverti. Porter à ébullition et verser sur la pâte de cacao, mixer, verser dans un bol à Pacojet, bloquer au grand froid. Pacosser puis mouler des 1/2 sphères de 4 cm de diamètre, les mettre au froid ; démouler, accoler deux par deux puis pulvériser au pistolet chocolat noir. Dresser aussitôt.

Crème légère à la menthe Crème pâtissière : porter le lait à ébullition, verser sur les jaunes blanchis avec le sucre et la poudre à crème puis cuire à ébullition pendant 30 secondes. Réserver au froid.

Détendre la crème pâtissière, ajouter la gélatine fondue puis incorporer la crème fouettée. Laisser prendre au froid avant utilisation.

After Eight Melt some black chocolate and spread it out on a sheet of dipping paper lightly brushed with green cocoa butter. Cut out petals of 2 different sizes and leave to set hard in a drip-tray for 12 hours at around 17 °C. Lay out a disc of hollowed-out chocolate biscuit, decorate it with the mint-flavoured cream, arrange the small chocolate petals all around, then the larger petals. In the centre, place a scoop of chocolate-andmint sorbet and sprinkle it with dice of jelly and mint marshmallow.

Decoration: dry ice.

Chocolate biscuit Whip the eggs and egg yolks with the ground almonds and icing sugar; add the sieved flour and the cocoa powder. Incorporate the egg whites, whipped and stiffened with the caster sugar, then spread the mixture on a non-stick baking mat (Silpat) in a baking tin (40 x 60 x 3 cm) and cook in the oven at 170 °C for roughly 10 minutes. Leave to cool, then cut into discs with a diameter of 6 cm.

Mint jelly Infuse the mint in roughly 350 g of water, simmering for 3 minutes.

Blend and strain through muslin. Weigh out 250g of the infusion, add the sugar and gelatine, then run into a 1 cm-deep tray. Put in a cold place, remove from the mould, cut into squares of equal size.

Mint marshmallow Infuse the mint in roughly 100 g of water, simmering for 3 minutes.

Strain, blend the mint leaves and set aside. Take 50 g of the infusion, add the sugar and 50 g of sugar syrup, cook at 110 °C. Using a whisk, emulsify the remaining sugar syrup, pour in the cooked sugar and the gelatine. Allow to rise, then add the mint leaves, blend and lay out on a greased non-stick baking mat to a thickness of 1 cm.

Cool and cut up into squares of equal size.

Chocolate-and-mint sorbet Infuse the mint in roughly 350 g of water, simmering for 3 minutes.

Strain through muslin, take 250 g of the infusion, add the sugar, the glucose powder, the stabiliser and the cocoa powder, then the sugar syrup. Bring to the boil and pour onto the cocoa paste, blend, pour into a Pacojet (sorbet-maker) bowl, then set the sorbet-maker to “very cold”.

Process, then place in hemispherical moulds 4 cm diameter, put them in a cold place, remove from their moulds, join them two by two, then spray with black chocolate. Serve immediately.

Light mint-flavoured cream Confectioner’s custard: bring the milk to the boil, pour in the egg yolks whitened with the sugar and cream powder, then boil for 30 seconds.

Keep in a cool place.

Soften the confectioner’s custard, add the melted gelatine, then incorporate the whipped cream. Allow to chill before using.
