Fred Allard présente l’exposition « Vide ton sac » à l’Hôtel Barrière Les Neiges Courchevel. Rencontre dans l’atelier de l’artiste, sur la Côte d’Azur, près de Nice.

Hyper-glam ! Fred Allard is presenting his Vide ton sac exhibition at the Hôtel Barrière Les Neiges Courchevel. We met with the artist in his studio on the Côte d’Azur near Nice.

est ici que vous travaillez et que toutes les pièces de l’exposition ont été créées.

Vous pouvez les présenter en quelques mots ? Je crée des sacs en résine de cristal, qui deviennent ainsi des sculptures. Tout est réalisé sur place, à l’atelier, avec mon équipe.

Je suis arrivé à l’art après avoir évolué dans la mode. J’en ai gardé un goût pour les choses du luxe, tout en les réinterprétant à travers ma sensibilité. Pour moi, l’essentiel, c’est d’être connecté à mes émotions. L’idée d’inclure des sacs de grandes marques dans la trame de mes œuvres vient de là. Je voulais donner libre cours à un désir de transparence, d’être vrai, et d’exprimer tout ça concrètement, en vidant mon sac, selon la formule bien connue.

C’est à partir de ce matériau qui relève du vécu, qui n’a rien à voir avec un concept, que j’en suis venu à imaginer mes sacs…

T

his is the studio you work in and where all the exhibition pieces were created. Could you tell us a little about them? I make bags in crystal resin and they become sculptures. Everything is created on-site in the studio with my team. I entered the art world after honing my skills in fashion, and I have kept a certain taste for luxury objects while using my sensitivity to reinterpret them. I see being in touch with my emotions as the most essential thing, which is what inspired the idea of including bags from prestigious brands in my work. I wanted to give myself total freedom in terms of transparency, being real, and expressing everything in tangible terms. Vider son sac (literally “empty one’s bag”) means to “get something off one’s chest”, and I think that’s quite appropriate. Using these ideas, which are taken from my own experience and are far from conceptual, I started designing my bags…

Vertiges d’un monde consumériste, purs objets de rêverie : en quels termes définiriez-vous les œuvres que vous créez ? Pour moi, un artiste doit retranscrire quelque chose de l’air du temps dans son travail. Mes sacs sont porteurs de cette dimension, sont une photo de la société dans laquelle on vit, où tout se télescope, l’intime et l’exhibition, le luxe et la pop culture. J’aime ce mélange des genres qui permet de jouer avec une multitude de signes et de symboles. À chacun de les interpréter comme il le souhaite… Et je pratique aussi ce mélange des genres dans les artistes qui m’inspirent, de César et Arman à Andy Warhol, Jackson Pollock ou Jeff Koons. Le plus important à mes yeux et ce que chacun d’eux affirme, c’est la liberté de créer en restant fidèle à soi-même ! Le geste artistique de vider son sac rejoint cette démarche, se recentrer sur soi, accéder à soi, au-delà de la confusion ambiante…

Comment avez-vous conçu l’exposition pour l’hôtel ? Toutes les œuvres exposées sont exclusives, des pièces uniques créées pour l’occasion, toutes hyper-glam ! Il y aura même une œuvre monumentale, installée à l’extérieur de l’hôtel, faite de trois cubes de résine de cristal, taillés façon glaçons. Certaines des pièces seront émaillées de clins d’œil au cinéma de Tarantino notamment… @atelier_fred_allard

Whether icons of our consumerist world or objects of dreams and desires, how would you define the works you create? I believe an artist should inject the spirit of the times into their work. My bags have this dimension, offering a snapshot of the society in which we live. A time when everything is colliding, intimacy and exhibition combine, luxury lives alongside pop culture. I love this blend of genres that allows me to play with a whole host of signs and symbols. Each person can interpret them as they see fit. I also employ this mix of genres by drawing on the artists who inspire me, including César, Arman, Andy Warhol, Jackson Pollock, and Jeff Koons. The most important thing for me, and what all of these figures promote, is the freedom to create while remaining true to oneself! The artistic act of getting something off one’s chest is part of this approach, refocusing on and accessing our inner selves to go beyond the confusion of the day-to-day…

How did you develop the exhibition for the hotel? All the works on display are exclusive. Unique pieces created just for this show, and all boasting a hyper glam aesthetic! There will even be a monumental sculpture installed outside the hotel made using three resin crystal cubes cut to look like ice cubes. Some exhibits also feature references to films, including those by Tarantino…

Э

то ваше рабочее место, и именно здесь были созданы все экспонаты для выставки. Пожалуйста, расскажите о них в двух словах. Я создаю скульптуры в виде сумок из прозрачной эпоксидной смолы. Мы с помощниками изготавливаем всё прямо здесь, в мастерской. В искусство я пришёл из мира моды. Поэтому у меня осталась тяга к предметам роскоши – переработанным, однако, в соответствии с моим восприятием. Для меня важнее всего – прислушиваться к своим эмоциям. В связи с этим и родилась идея вплести сумки известных брендов в канву моего творчества. Мне хотелось полностью выразить стремление к прозрачности, к искренности, тем не менее, облекая это в некую осязаемую форму – выложить всё, как говорится. Взяв за основу материал, который не ассоциируется с прошлым, не несёт в себе дополнительных идей, я и придумал свои сумки… Апофеоз общества потребления, предмет беспримесного эстетического удовольствия – какое определение Вы бы дали своим работам? По-моему, в своей работе художник должен каким-то образом отражать дух времени. В моих сумках это есть, они моментальный снимок общества, в котором мы живём, в котором всё вперемешку: личное и общественное, элитарное искусство и поп-культура. Мне нравится такое смешение стилей: благодаря ему, появляется возможность обыгрывать массу знаков и символов. Каждый волен толковать их на свой лад… Этот же подход, смешение жанров, я встречаю и у художников, чьё творчество меня вдохновляет, начиная от Сезара и Армана и заканчивая Энди Уорхолом, Джексоном Поллоком и Джеффом Кунсом. На мой взгляд, для каждого из них главное – это свобода творчества, оставаться верным себе! Для художника «выложить всё» значит присоединиться к этому лозунгу, вновь сконцентрироваться на своем внутреннем «я», добраться до своей сущности, скрытой за внешней неразберихой… Пожалуйста, расскажите о концепции выставки. Все предметы на выставке эксклюзивны, уникальны и были созданы специально для этого случая – да, они по-настоящему шикарные! Перед отелем будет даже один огромный экспонат из трёх кубов эпоксидной смолы, сделанных в виде кубиков льда. Кстати, некоторые из них мы покроем эмалью – намёк на фильмы Тарантино…

P

arisien de naissance, Baptiste Pitou a puisé son essence créative au cœur de la campagne du Val de Loire, tapissée de fleurs sauvages. Baptiste Fleurs ouvre le 1er mai 1994 dans une petite échoppe du 6ème arrondissement parisien au charme désuet et aux jolis bouquets qui attirent vite la clientèle huppée du quartier : Yves Saint Laurent, Pierre Bergé ou encore Sonia Rykiel. Très demandé, le fleuriste se spécialise dans la mise en place et le sur-mesure notamment chez les couturiers Yves Saint Laurent et Kenzo Takada. Fort de son talent poétique et de son esprit d’entreprise, Baptiste Pitou réalise ensuite, avec l’aide d’une solide équipe aux multiples compétences, des décors fleuris pour de prestigieuses institutions parisiennes à l’instar de Lanvin, Roger Vivier, Piaget ou Boucheron. Pour la saison de Noël à Courchevel, à l’Hôtel Barrière Les Neiges, l’artiste a imaginé une vraie féérie enneigée entre une forêt de bouleaux côtoyant de grands bonhommes de neige, des sapins de Noël en enfilade envahissant le lobby et d’autres végétaux d’hiver invitant à la saison festive dans le restaurant et même le jacuzzi.

LE NATUREL SOPHISTIQUÉ DES COMPOSITIONS

Oscillant entre les mises en scènes spectaculaires et la délicatesse des compositions, l’art de Baptiste Pitou fascine. Lustres de cerisiers en fleurs, forêts d’arbres extraordinaires, murs de miroirs en fleurs multicolores, champ de roses inversé au plafond…S’il habille les plus luxueux espaces, Baptiste Pitou propose aussi son art aux particuliers dans des bouquets jaillissant et stylisés, entre une vivacité champêtre et une modernité épurée.

arisian-born Baptiste Pitou developed his creative identity in the flower-covered countryside of the Val de Loire region. Baptiste Fleurs opened on 1 May 1994 in a small space in the sixth arrondissement of Paris, featuring an oldfashioned charm and a selection of beautiful bouquets that quickly drew in wealthy clients from the neighbourhood such as Yves Saint Laurent, Pierre Bergé and Sonia Rykiel. The highly sought-after florists specialised in installations and bespoke creations, working for designers such as Yves Saint Laurent and Kenzo Takada. Driven by his combined poetic talent and businesses sense, Baptiste Pitou then created floral decors for prestigious Parisian institution such as Lanvin, Roger Vivier, Piaget and Boucheron, helped by a loyal, multi-talented team. For the Christmas season at the Hotel Barrière Les Neiges in Courchevel, the artist truly worked magic with a snowbound setting of birch trees, snowmen, Christmas trees lining the lobby, and other winter plants inviting to celebrate the festive season in the restaurant and even in the jacuzzi.

NATURALLY SOPHISTICATED COMPOSITIONS

Shifting between spectacular settings and delicate compositions, Baptiste Pitou’s art is fascinating. Blossoming cherry chandeliers, forests of extraordinary trees, mirrored walls covered with multicoloured flowers, and fields of roses on the ceiling are but a few. But while he has decorated the most luxurious spaces, Baptiste Pitou also offers his art to the general public in eye-catching, stylised boutiques blending rustic energy and elegant modernity. our la fête des neiges, événement prisé de l’Hôtel Barrière Les Neiges, Marjorie Colas décorera en effet les espaces des restaurants pour donner aux réveillons de Noël et celui du jour de l’An, des airs de paradis immaculé. Jouant sur les ombres, les lumières, ses sapins, ses flocons stylisés vont créer l’émotion nécessaire pour donner aux lieux ce qu’il faut de chaleur et d’intimité pour un moment convivial, familial et féérique. La créatrice sait, avec ses doigts de fée, mettre de la magie dans tout ce qu’elle entreprend.

TISSER SA TOILE

Cheveux blonds légèrement ondulés, regard clair, Marjorie Colas affiche une quarantaine rayonnante. Il faut dire qu’elle en a fait du chemin depuis les bancs des Beaux-Arts de Dunkerque et ceux de l’école d’ameublement de Paris. Après s’être établie en Bretagne, quelques années durant, pour ouvrir une galerie et un atelier d’encadrement, elle reviendra ensuite à quelques encablures de la capitale. Non loin des bords de Seine, elle installe son tout nouvel atelier, qui fait la curiosité des passants qui peuvent observer son travail.

De ses doigts agiles et à l’aide d’une machine, elle coupe, découpe des bouts de papier qu’elle a préalablement dessinés, réinvente la nature et compose des univers entre rêves et réalités. Utilisant les réseaux sociaux pour diffuser son travail, Marjorie Colas rencontre un rapide succès dans l’univers de la décoration conquis par ses créations qui apportent leur part de rêve et de magie.

FÉERIE HAUTE COUTURE

Sous le charme de son ouvrage délicat, les maisons de couture commencent à s’intéresser à la créatrice et font appel à son talent pour donner à leurs évènements, leurs vitrines, leurs campagnes de publicité une touche de poésie, de féérie. Collant, taillant, travaillant comme de la dentelle, cette matière douce qu’elle affectionne tant, le papier, Marjorie Colas donne vie à de somptueux décors faits de sculptures, d’installations en 3D inspirées du monde animal, végétal. Arbres, fleurs, papillons, entre ses mains expertes, tout ce qu’elle touche se transforme en merveilles. Devant le succès remporté, Marjorie Colas entame de nouvelles collaborations, notamment avec une griffe de robes de mariée, dont les créations seront bientôt en ligne.

or the festive season - a major time of year for Hôtel Barrière Les Neiges, Marjorie Colas will be decorating the restaurant areas to lend the Christmas and New Year celebrations an immaculate touch of paradise. Interplaying shadow, light, Christmas trees and stylized snowflakes and creating the emotion needed to lend the setting the full warmth and intimacy of a good-natured, family, fairy-tale experience. With her magical fingers, the designer knows exactly how to put wonder into everything she does.

COMPOSING HER CANVAS

With her lightly wavy blonde hair and clear gaze, radiant fortysomething Marjorie Colas has come a long way since her days at the Beaux-Arts school in Dunkirk and the Ecole d’Ameublement design school in Paris.

After establishing herself in Britany for a few years where she had a gallery and framing studio, she returned closer to the French capital. Not too far from the Seine, she opened her brand-new studio that quickly piqued the curiosity of passers-by who could see her working.

vec un physique empruntant aux traits gracieux de Nicole Kidman et Amy Adams, la jeune Tatiana Verstraeten ne pouvait pas se tromper en choisissant le métier d’actrice. Mais cette Belgo-Hollandaise, biberonnée à l’art, a aussi développé son sens de la créativité en travaillant pour des maisons de mode. Après un master en business management et finance, elle entre chez Maison Michel à Paris, poursuit auprès de Anthony Vaccarello et c’est en 2011 qu’elle croise le chemin de la joaillerie chez Chanel. Aux côtés de Karl Lagerfeld, elle dessine bijoux et chapeaux découvrant le savoir-faire d’exception des métiers d’art. Tatiana Verstraeten quitte ensuite la maison parisienne pour lancer sa propre ligne de joaillerie en collaboration avec la productrice de cinéma Nancy Grant. ith gracious features similar to Nicole Kidman and Amy Adams, the young Tatiana Verstraeten was born to be an actress. But the Belgian-Dutch woman was also raised in the art world and later developed her sense of creativity by working for fashion houses.

After graduating with a Master’s degree in Business Management and Finance, she joined Maison Michel in Paris, followed by Anthony Vaccarello, and finally discovered jewellery at Chanel in 2011. She designed jewellery and headwear alongside Karl Lagerfeld, and discovered the exceptional know-how of artistic crafts.

Tatiana Verstraeten then left the Parisian label to launch her own jewellery line with film producer Nancy Grant. Quelle célébrité au ski ne s’affiche pas en pantalon fuselé ? Cette silhouette extrêmement seyante et unisexe doit sa popularité au monde du ski alpin qui a adopté dès 1964 le fuseau créé par Fusalp. L’aventure mode de la marque débute en 1952 lorsque Georges Ribolat et René Veyrat, deux tailleurs originaires d’Annecy, révolutionnent les vêtements de ski en créant, en 1960, un fuseau ajusté en stretch dont les genoux sont préformés de boudins. This incredibly becoming, unisex style owes its popularity to the world of downhill skiing, which adopted the ski pants developed by Fusalp as far back as 1964. СЧАСТЛИВОЕ СОБЫТИЕ Создание премиум-марки одежды для лыжного спорта, названной в его честь, было лишь вопросом времени. В 2006 году Ханс Таубенбергер (Hans Taubenberger) основал компанию Toni Sailer. Главный, что и не удивительно, её принцип – тот же, что и у австрийского лыжника: постоянное стремление к совершенству. Без преувеличения можно сказать, что между подготовкой коллекции и интенсивными тренировками профессионального спортсмена много общего: ведь на одну «обычную» куртку может уйти много часов кропотливой работы.

ывшие популярными в 60-70-х годах брюки фюзо вновь поднялись на пик лыжной моды. Производители горнолыжной одежды стали обращаться к забытым формам. Так, компания Fusalp недавно успешно вернулась к делам.

ХОЛОД НЕ БЕДА Кто сказал, что снег – враг моды? Зимняя коллекция 2018-2019 с лёгкостью это опровергает. Прекрасным лыжницам понравятся женственные модели, не стесняющие свободу движений, сшитые из удобных материалов с отличной теплоизоляцией. Мужская линейка отличается сложным кроем и изготовлена из технологичных материалов. Вновь вернулась в строй камуфляжная ткань. Прекрасно продуманы детали. В такой одежде невольно ощущаешь себя членом лыжной олимпийской сборной.

ПЕРВЫЕ ШАГИ Своей известностью свободные в бёдрах и сужающиеся книзу брюки обязаны миру горнолыжного спорта: в 1964 году лыжники стали носить фюзо от компании Fusalp. В 1960 году портные Жорж Рибола (Georges Ribolat) и Рене Вейра (René Veyrat) навсегда изменили мир горнолыжной одежды, разработав прилегающие фюзо из стрейчевой ткани с плотными коленными вставками. Модель идеально вписывалась в модный стиль семидесятых (и прекрасно защищала от снега), поэтому вскоре прочно заняла вершину лыжного пьедестала. УДАЧНОЕ ВОЗВРАЩЕНИЕ Возвращение марки Fusalp произошло в 2013 году. За это время лыжные брюки фюзо появились в коллекциях брендов, больше известных производством городской, а не горнолыжной одежды. В 2016-м Maje произвёл фурор, выпустив коллекцию «HorsPiste» полностью в стиле 70-х. А этой зимой Chanel предложит роскошные модели своей первой коллекции «Coco Neige», посвящённой зимним видам спорта.

ourchevel 1850 c’est du roc en douces heures. Avec le bonbon des pistes, la neige poudreuse. C’est le ski exquis. Pour ceux qui l’aiment, elle est la reine des neiges. Libérée, délivrée, etc. Mais, alors pourquoi l’appelle-t-on ici d’un nom très moche : « peuf » ?

Il semble que les premiers touristes britanniques dans les années 1920 ont fort prisé la légèreté de son tapis. Ils y voyaient comme des « nuages de fumée ». En anglais, on dit « puff ». Les guides ont rapporté le mot. Depuis, il court la montagne.

Hardly a name befitting such beauty. So the story goes, the first British tourists in 1920 were so smitten with the lightness of the snow they likened it to “clouds of smoke”, or “puffs”. The local guides picked up the lingo, and it has flurried over the mountains and through the highs and lows of the valleys ever since. With every year a new, white page waiting for adventures to be written.

Les remontées mécaniques ont arrêté de ronronner quand, soudain, une, deux, trois, puis des dizaines de lueurs se détachent du paysage poudré de blanc, formant un irréel et éblouissant ballet. Des éclats de rire retentissent. Avec le sourire et les joues rosées, tous les participants savourent pleinement cette expérience authentique et joyeuse, cette glisse sur tapis immaculé, au milieu d’une haie de sapins. Un soir par semaine, cette descente aux flambeaux fait briller les yeux des petits – et des grands ayant gardé leur âme d’enfant. Une superbe activité, un brin insolite, à partager entre générations. De retour du grand air, les clients se réchaufferont à l’hôtel, en buvant à petites gorgées un verre de vin chaud. Et si c’était ça, le bonheur ?

Огонь и лёд Когда сгущается ночь, на лыжных трассах Куршевеля появляются заманчивые огоньки. Каждую среду, для гостей отеля и учеников лыжной школы вечерний спуск превращается в танец света.

7 часов вечера небо уже угольно-черное, рокотание подъемников замолкает и, внезапно, на белом фоне один, второй, третий – зажигаются фонари, объединяясь в волшебный, ослепительный танец. Звонкий смех, улыбки, румяные щеки…полностью отдаваясь искреннему и радостному событию, гости скользят вниз мимо елей по сверкающему снежному ковру. Во время этого незабываемого еженедельного спуска в глазах детей тоже сверкают веселые огоньки, а взрослые будто возвращаются в детство. Потрясающее событие, которое никого не оставляет равнодушным и объединяет поколения. А вернувшись после снежных забав в отель, гости греются, потягивают теплое вино. Это ли не настоящее счастье?

Pour la saison hivernale en montagne, il y a ceux qui ne pensent qu’aux pistes enneigées à dévaler tout schuss, et ceux qui se projettent plutôt au coin du feu de cheminée, thé à la main. Côté stars également, l’hiver est un état d’esprit pour lequel deux écoles s’affrontent. Alors, plutôt schuss ou plutôt grog les people ?

Quand je suis dans l’Utah, j’aime me mettre au coin du feu et lire un bon bouquin. Et pourquoi pas en savourant un vin chaud ! Il y a quelques années, je pouvais encore skier intensément, mais ce n’est plus possible aujourd’hui. J’ai perdu en élasticité au niveau de mes muscles et surtout en réflexe !

When I’m in Utah I like settling down by the fireplace and reading a great book. And why not enjoy a mulled wine at the same time! I used to be able to ski all the time a few years ago, but those days are over. I’ve lost the flexibility in my muscles, and my reflexes aren’t what they used to be!

Vous vous rendez compte que Rocky a même du cholestérol ! (rires). Cela ne m’empêche pas de soulever des poids et haltères, en moyenne quatre heures par jour ! Mais le ski non ! J’aurais aimé vous dire que je descendais les pistes tout schuss, mais c’est loin d’être le cas. Quand je suis sur ces planches, j’ai l’impression d’être une enclume avec les bras en l’air ! Mon style n’a rien d’académique !

Skiing isn’t really my thing. But I love walking through the snow, it gives your muscles a great workout. And I can’t say I have the same energy as when I was a kid in my twenties. You realise that even Rocky has cholesterol! (laughs). But that doesn’t stop me lifting weights for four hours a day. I just can’t get into skiing. I’d love to tell you I speed down the pistes, but it just isn’t true. When I’m on skis I feel like a big anvil waving its arms. I’m far from being a pro!

Avant de devenir acteur, je pratiquais le ski au niveau compétition. À 15 ans, j’ai décroché ma première médaille d’or en slalom. Mais je n’ai jamais pu aller plus loin que le titre de champion d’État dans la mesure où, un jour, en dévalant une pente, je me suis comprimé les vertèbres en chutant. Et voilà, c’est comme ça que je me suis retrouvé à faire du cinéma. Cela ne m’empêche pas de chausser mes skis dès que j’en ai l’occasion. Je rêve un jour de me faire les Grands Montets à Chamonix. Entre deux pistes, je vous promets que j’irai goûter votre Génépi !

J’aime le ski ! Le problème, c’est que je suis une frileuse de première ! Dès que la neige tombe, je n’ai qu’une envie : me mettre au chaud et m’engouffrer sous une couette. Je dois avoir du sang de marmotte qui coule dans mes veines. Je pense surtout que je suis une fille qui a grandi dans la vallée, à Sherman Oaks, dans la banlieue de Los Angeles. Là-bas, la seule neige que l’on voit c’est la fausse créée par les studios pour les besoins d’un film ou d’une série ! Je ne bois pas d’alcool à part ça ! Je carbure à l’eau. Un bon schuss avec des skis cela me botterait bien, mais il faudrait que j’aie le niveau ou alors que je sois complètement inconsciente !

I love skiing! The only problem is that I hate the cold. When the snow starts falling the only thing I want to do is to wrap up warm and stay under the covers! I must have a bit of marmot blood in me! I also grew up in the valley, in Sherman Oaks in the suburbs of Los Angeles. The only snow you see there is the fake stuff created by the studios for movies and series. I also don’t drink, I run on water! Convaincu que vous avez révélé la version Koh Lanta de vous-même en marchant 20 mètres chaussures de ski aux pieds, et que les températures extrêmes imposent à votre corps de brûler deux fois plus de calories, vous vous autorisez à songer à votre prochain repas depuis le télésiège.

Fondue and other comfort foods that make up the local culinary canon are the main reason you holiday in the mountains. Et pour un alibi « c’est local », on fonce au Chalet Fouquet’s qui, pendant la saison hivernale, met à l’honneur les spécialités savoyardes : tartiflette au reblochon fermier, mont d’or fondu au savagnin…

Qu’on ne remette surtout pas en cause votre profonde volonté d’intégration dans le terroir local ! À la table du BFire, on vous a pourtant clairement parlé de partage, mais vous aurez du mal à céder à votre voisin un bout de cette pizza aux cèpes, parmesan et roquette.

e BFire pourrait être « le rendez-vous découverte d’une cuisine créative respectueuse des traditions et des terroirs de montagne », comme les stricts greffiers du goût académisé l’écriraient de manière aussi mécanique que les remontées du même nom. Eh bien, non ! Si le BFire est à Courchevel 1850 l’un des restaurants de l’Hôtel Barrière Les Neiges, c’est pour une bonne raison : celle de la curiosité pour le meilleur. À moins qu’il ne s’agisse de curiosités au pluriel.

Ces curiosités sont nées de plusieurs rencontres. D’abord entre le chef (2 étoiles) Mauro Colagreco et la cuisson au feu de bois de son enfance.

Ensuite, en 2015, entre le président de Barrière, Dominique Desseigne, et ce virtuose de la flamme, mondialement réputé, venu d’Argentine, passé par l’Italie et installé à Menton au Mirazur. Mauro Colagreco glisse en effet dans sa cuisine étoilée une discipline en même temps qu’une effervescence de saveurs, une palette de couleurs et beaucoup d’ardeur.

Fire could be described as “a place to discover creative cooking that respects mountain traditions and produce,” but this would be much too stiff, and would fall far short of doing the institution justice! If BFire is one of the restaurants at the Hotel Barrière Les Neiges in Courchevel 1850, it’s for a good reason! It is here because of its curiosity about finding the best, and on many different levels. This multi-faceted curiosity is the fruit of several encounters. Firstly, between the two Michelin-star chef Mauro Colagreco and the woodfired cuisine of his childhood. The next turning point came in 2015 when Barrière CEO Dominique Desseigne met the world-renowned lord of the flames, who left Argentine for Italy before settling in Menton and starting work at the Mirazur restaurant.

Buoyed by his experience Mauro Colagreco is highly disciplined in his Michelin-starred cuisine while also adding a certain effervescence, a palette of colours and unwavering determination.

BFire, c’est B comme Barrière, et Fire comme crépitement d’étincelles et d’étoiles pour proposer, dans un univers de luxe, de loisirs et d’altitude hivernale, un concept de cuisine « innovant et festif » bâti autour d’un simple constat : la montagne se vit le jour à l’extérieur, le soir à l’intérieur.

Au BFire, il y a donc deux approches de cuisine, mais un point commun : un brasero, un authentique brasero argentin. Le feu et les braises de la cuisson « sont les couleurs ardentes ou tamisées de la cuisine que j’ai connue dès mon enfance en Argentine », confiait récemment le chef au magazine Signé Barrière. Avant d’ajouter : « Il ne s’agit pas de sophistiquer la simplicité ou de simplifier la sophistication. Il s’agit de mettre l’exception dans le simplement bon. » Voilà aussi comment, au pied des pistes, à l’heure du déjeuner à l’Hôtel Barrière Les Neiges, c’est autour du brasero qu’on se retrouve sur la terrasse. Et le soir ? Dans la chaleur du cocon des « Neiges », il donne la place à une cuisine finement piochée dans les savoirs et les goûts mêlés de l’Italie et de l’Argentine.

En maîtrisant cette cuisson au bois et aux braises, les poissons, viandes, légumes et fruits prennent des saveurs emplies de nuances. Le pain grillé au feu de bois avec son beurre d’herbes et jambon de Parme, en bonne compagnie auprès du velouté de panais paré de ses couleurs automnales, la salade de courge « marquée » au feu de bois, burrata, noix et herbes, le céleri rave à la braise, le gratin d’oignons doux et jambon à l’os, au vin d’Arbois et serpolet (l’autre nom du thym), la croûte de pain au romarin, la pomme de terre de montagne à la pulpe « travaillée » à la truffe noire, le carpaccio de sanglier grillé au feu de bois, poivre, agrumes, raifort, rémoulade aux herbes. Mais aussi les côtes de bœuf et de veau, l’épaule d’agneau, les poissons précieux (omble chevalier, sole).

Et puis, tout ce que « les goûts m’en disent », selon la délicieuse formule d’un superbe gourmand : Honoré de Balzac. Donc, au pied de la piste Bellecôte, on savoure la panna cotta ananas rôti, émulsion coco – spécialité réinventée de crème cuite du Piémont italien – le beignet de pommes, crème battue aux myrtilles, la boule de neige aux bleuets, crème de marrons et marrons glacés, la tarte gourmande à la vanille, le clafoutis au miel et aux noix. Sans oublier l’ébouriffant tiramisu. Le BFire de Barrière et Colagreco ? C’est le goût de grâce à 1 850 mètres d’altitude.

A place offering a luxury cocoon of leisure and high-altitude winter excitement, where an “innovative and festive” culinary concept has been developed around a simple belief: Life in the mountains is enjoyed outside in the day, and inside during the evening At BFire, therefore, there are two approaches to the cuisine served, both linked by a shared characteristic – an authentic Argentinian brasero. Rather, I am adding the exceptional to high-quality simplicity.” Thanks to this philosophy, guests can gather for lunch around the brasero on the terrace at the Hotel Barrière Les Neiges at the foot of the pistes. And in the evenings in the cosy comfort of the restaurant, the flames conjure up gastronomic fare inspired by a blend of Italian and Argentinian tastes and culinary secrets.

Through a skilled mastery of cooking on woodfire and embers, fish, meats, vegetables and fruits take on new, subtle flavours. The gastronomic panoply includes bread toasted on a woodfire with herb butter and Parma ham, a creamy parsnip soup in autumnal colours, a seared woodfire squash salad with burrata, walnuts and herbs, celeriac cooked over the embers, a sweet onion gratin and ham on the bone with Arbois wine and thyme, rosemary bread crust, black truffle-infused alpine potatoes, wild boar carpaccio grilled over a woodfire, pepper, citrus fruit, horseradish and herb remoulade dressing.

And, of course, the renowned sides of beef and veal, the shoulder of lamb and prestigious fish such as Arctic char and sole.

Then come the sweeter notes and everything “such flavours express”, to deliciously quote a renowned French foodie and novelist, Honoré de Balzac.

With this in mind, the restaurant at the foot of the Bellecôte piste also offers roast pineapple panna cotta, coconut emulsion – a reinvented specialty of cooked cream from Italian Piedmont region – apple fritters with blueberry whipped cream, cornflower snowball bites with chestnut and sweet chestnut cream, irresistible vanilla tart, and clafouti cake with honey and walnuts. And don’t forget the breathtaking tiramisu! BFire by Barrière and Colagreco: a taste sensation at 1,850 metres of altitude.

Но «Bfire» не зря находится в уникальном отеле Куршевеля! Любопытство и поиск лучшего – вот, в чём главная особенность этого ресторана в Barrière Les Neiges. Дальше, как говорил известный гурман Оноре де Бальзак: «Вкус мне подскажет». А на десерт у подножья горы Белько можно отведать панна коту из ананаса, кокосовый крем, яблочный пирог, взбитые сливки с черникой, васильковое мороженое, каштановый крем или глазированные каштаны, изысканный ванильный пирог и клафути с медом и орехами. И не забудьте про божественный и тающий во рту тирамису. Что самое важное для «Bfire» в Barrière и Колагреко? Подарить гостям уникальный вкус на высоте в 1850 метров!
