It’s a big month March, notably because it heralds the start of spring on the 20th, and the clocks going forwards on the 30th –both of which mean brighter days, lighter nights and warmer weather.

Sunday 30th is also Mother’s Day, so if you haven’t got that date in your diary yet make a note of it now! We have a couple of ideas of how you can celebrate with your mum on page 37 but, if you are short on time or money, I don’t think that you can go wrong with a bunch of daffodils!

And, speaking of daffodils, March is also home to St Davids Day on the 1st of course. Celebrated all over the country, St Davids Day reminds us of what it is to be Welsh – and what an honour that is. There is

no other country like Wales, and no other region quite like North Wales.

This issue is a great example of just how unique North Wales is. From the great events that are highlighted in our What’s On? section, to the picturesque beauty that you can see on page 11, there truly is something for everyone. Bethany Birch visits Bala, and finds a lakeside town full of the joys of Spring…

Tucked between rolling hills and expansive lakes, Bala has long been a hub for outdoor enthusiasts and those seeking a peaceful escape. As spring arrives, longer days and milder temperatures breathe new life into the countryside, making it the perfect time to explore Bala's natural beauty and welcoming charm.

Daffodils line the pavements, and delicate snowdrops begin to emerge, offering the first glimpses of the changing season. The countryside bursts into life with bluebells carpeting the woodlands and the scent of wild garlic drifting through the air. Birds return to the skies, with red kites and buzzards often seen soaring above the hills, while lesser celandine and wood anemone flourish in the hedgerows and meadows.

One of the town’s defining features is Llyn Tegid, or Bala Lake. The largest natural lake in Wales, Bala Lake stretches nearly four miles, framed by the peaks of Aran Benllyn and Arenig Fawr. Formed in the last Ice Age, its glacial waters mirror the shifting skies, and are home to the rare Gwyniad fish.

Outdoor activities draw many visitors to Bala, and the lake provides the perfect setting for adventure. As the days grow longer and the chill of winter eases, now is the perfect time to consider getting out on the water. Canoeing, kayaking and sailing are all popular pastimes, with rental facilities available for those eager to experience the lake up close. The Bala Lake Railway offers a more leisurely way to take in the scenery, with a narrow-gauge steam train running along the southern shore.

For a more relaxed experience, a picnic by the lake makes for a wholesome weekend activity. Whether enjoying a homemade sandwich and a slice of cake in the sun, or sipping from a flask of tea while wrapped up against the everchanging British weather, there are few better ways to take in Bala’s stunning views.

Beyond the lake, Bala’s dramatic landscapes provide ample opportunities for walking and hiking. With mountains reaching close to 3,000 feet, the views are breathtaking, encompassing deep valleys, rushing rivers, and hidden waterfalls.

The Bala Lake Circuit is a well-loved route that follows the shoreline, offering changing perspectives of the water and the surrounding hills. For those seeking a greater challenge, the ascent of Aran Fawddwy provides a panoramic reward, revealing the vast beauty of southern Snowdonia. Further afield, the Berwyn National Nature Reserve is home to an array of wildlife, from rare birds of prey to wild mountain goats, creating an unspoiled sanctuary for nature enthusiasts. The woodlands and meadows along these trails are also bursting with wildflowers, with delicate wood sorrel and bright yellow buttercups adding colour to the landscape.

The town itself retains its market-town charm, offering a mix of traditional and contemporary experiences. Bala’s High Street features independent shops, including award-winning butchers and delicatessens that showcase both Welsh and international produce. Cafés and bakeries provide the perfect setting to pause and enjoy a slice of homemade bara brith or a warming bowl of cawl, a traditional Welsh stew often found in the town’s eateries. Alternatively, why not enjoy a warm parcel of fish and chips by the lake, soaking in the scenic views as you tuck into this classic seaside treat?

The town’s sense of community is evident in its weekly Monday market (open throughout the spring and summer seasons), where local farmers and artisans gather to share their goods, keeping the region’s agricultural traditions alive. Bala is not only a destination in itself but also a gateway to the wider landscapes of North and Mid Wales. Positioned within easy reach of many key attractions, it serves as an ideal base for exploring the surrounding areas.

Hikers and nature lovers can venture into the nearby Snowdonia National Park, where trails wind through dramatic mountain landscapes, deep valleys, and ancient forests. The Arenig mountains offer more remote, rugged paths for those seeking a quieter escape, while Cadair Idris, a little further afield, presents one of Wales’ most renowned climbs.

Nearby Dolgellau, with its cobbled streets, offers access to the scenic Mawddach Trail, ideal for walkers and cyclists. The picturesque village of Betws-y-Coed, often referred to as the gateway to Snowdonia, offers stunning woodland trails and waterfalls, making it another must-visit location for nature enthusiasts.

The nearby River Tryweryn is known for its white-water rapids, drawing kayakers and rafters from across the country to test their skills at the Canolfan Tryweryn National Whitewater Centre. Another notable body of water in the area is Llyn Celyn Reservoir, built between 1960 and 1965. This vast reservoir not only provides water supply but also adds to the region’s dramatic scenery. The scenic drive through Snowdonia opens up a world of possibilities, from exploring hidden valleys to discovering historic castles that stand as reminders of Wales’s rich past.

Childhood sweethearts Peter Driver and Alison Townsend are celebrating a record year of bookings for their spare garage turned romantic holiday let for two on the Llŷn Peninsula . WHAT AWAITS ON COURSE

As previously stated, Betws-y-coed golf course offers a worthy challenge to any golfer. Your round begins with two tree-lined par 4s, with the second hole dog-legging in the footsteps of the adjoining Afon Llugwy. From this point a mixture of challenging par 3s (many over 200 yards long) and Par 4s, wind their way between water hazards, trees and well-bunkered greens. The fourth hole in particular will live long in the memory for any visitor, with a formidable tee shot across the fast flowing Afon Conwy facing you if brave enough to take it on.

The clubhouse awaits directly behind the ninth green, with a large patio area for you to sit down and contemplate your round. On a warm summers day it is hard to imagine a more beautiful setting to sit down and relax with a drink and breathe it all in. n

Food waste is a significant contributor to greenhouse gas emissions and climate change. By providing a platform for individuals and businesses to donate surplus food items, the Community Fridge helps divert edible food from landfills, thereby reducing emissions and carbon footprints. This initiative not only promotes a more sustainable way of living but also raises awareness about the importance of responsible food consumption and waste management.

“Food waste is a major contributor to greenhouse gas emissions and climate change,” explains Jo Prandle, Community Fridge co-ordinator at Refurbs Flint. “By providing a platform for responsibly donating surplus food, our Community Fridge is helping reduce these harmful emissions while promoting a more sustainable way of living.”

The Community Fridge also serves as a vital resource for those experiencing hardship, ensuring that no one in our community goes hungry. By providing access to free, nutritious food, Refurbs Flint aim to alleviate the burden of food insecurity and promote a more equitable and compassionate society.

Local businesses are being called upon to support this worthy cause through various means, such as monetary donations, in-kind contributions of surplus food items, or volunteering assistance. Food for thought

Spring is finally here and with it comes all those lovely feelings of hope and renewal. Frankly it couldn’t have come a moment too soon. The first glorious week of January with its still, chilled, sunlit days soon gave way to a pretty dismal run of weather – and let’s not even talk about the rugby. The sight of that first snowdrop this year was enough to elicit tears.

Everyone knows that things are a touch parlous at the moment and certainly in the tourism and hospitality industry, hope seems to be in short supply. When those sectors suffer, the knock-on effect for local suppliers can be devastating.

However, we have a secret weapon here; namely the fact that North Wales is an absolute goldmine for food and drink. We might be vaguely aware of it up here but I don’t think enough people associate North Wales with food in the same way they might do with, say Cornwall.

Well, I intend to change that, as much as I possibly can. Everything you could possibly want, to appease every kind of taste or appetite, is available here, fresh, local and unique. Everything from meat, fish, wine, cheese, chocolates, coffee, gin, fruit, vegetables and even crisps. So for the rest of the year, I’m going to aim a spotlight on the North Wales larder, and I’m going to start on the coastline with one of our finest natural exports – oysters.

There are oyster beds scattered around the North Wales coast, but the ones cultivated at Menai Oysters are especially magnificent and feted around the country. Now, I know that oysters can be a bit divisive. It took me a number of failed attempts to finally get one down my gullet – it involved Guinness, which I highly recommend as a pairing. So, if the idea of raw oysters is a step too far, why not try my mum’s recipe for poached Menai oysters instead?

MENAI OYSTERS

Ingredients

(Serves 2 or 4, depending on how hungry they are)

2 dozen fresh oysters

1 bag baby spinach

50g/2 oz grated Gruyère cheese

about 100 mls of reduced fish stock

175 mls of double cream

175 mls of dry white wine

Seasoning

Open the oysters, preferably with an oyster knife or, if you don’t have one, a strong, short bladed knife, which you push into the hinge and twist. A thick tea towel or napkin to hold the oyster with in case the knife slips is useful (as are the exact whereabouts of the nearest casualty unit if it goes through the tea towel).

As you open the oysters and remove the lids, pour off the juice inside the shells into a saucepan and reserve. Remove the oysters from the shells and keep in a bowl. Clean the shells with a stiff brush, taking care to remove the bit of membrane, and warm them gently in the oven.

Remove the stalks from the spinach and poach it for about two minutes until it goes soft. Thoroughly squeeze out all the moisture and arrange it in the oyster shells. Poach the oysters gently for a couple of minutes in the juice you have reserved. If there is insufficient liquid, add a drop of water. Remove the oysters (retaining the juice) and place them on the beds of spinach.

Add the concentrated fish stock to the reserved oyster juices, then the wine and the double cream and make the sauce, which should be of a heavy consistency. Pour it over the oysters, cover them with the grated cheese and bubble it all up under the grill until the cheese is melted. n

A New Era of Dining

A fresh chapter is unfolding in Dolgellau, as head chef Dan Andrée takes the helm at Penmaenuchaf – bringing a bold new approach to dining at this much-loved country house hotel.

Previously head chef at the Michelin-starred Beach House Restaurant in Oxwich, Dan played a key role in maintaining the restaurant’s Michelin star, working alongside chef director Hywel Griffith. Now, he turns his focus to the rugged beauty of North Wales, embracing the landscape, local produce, and a seasonal, ingredient-led approach to create dishes that reflect the unique spirit of the region.

following the rhythm of the seasons, with a strong emphasis on working with local farmers, fishermen, and foragers. “We’re lucky to have such incredible producers on our doorstep, and I want to showcase their hard work,” Dan explains. “The quality of produce in this part of Wales is outstanding, and I want to create dishes that feel both refined and deeply connected to the landscape.”

But the evolution at Penmaenuchaf is more than just in the kitchen. Since being taken over by The Seren Collection – owners of the 5* Grove of Narberth – in May 2022, Penmaenuchaf has gone from strength to strength. A carefully planned renovation project is breathing new life into this mountain hideaway, blending timeless charm with thoughtful modern updates.

March marks the celebration of St. David’s Day, the national day of Wales, making it the perfect time to honour Welsh heritage with a cocktail that embodies the spirit of the country. This month's iteration of the Cocktail of the Month from Number 25 is a uniquely Welsh take on the classic Tom Collins, a drink that has been a favourite since the 19th Century. Originally created as a gin-based highball, the Tom Collins is believed to have originated in London, though it gained widespread popularity in America. Traditionally made with gin, lemon juice, sugar, and soda water, it is a light and refreshing drink with a crisp citrus profile.

This Welsh riff on Tom Collins might even deserve a name change – perhaps the Tom Jones? Much like the legendary Welsh singer, this cocktail is smooth, full of character, and guaranteed to leave a lasting impression. The Tom Jones takes the timeless cocktail and infuses it with a distinctly Welsh character by using Welsh gin, which has gained recognition in recent years for its high-quality botanicals inspired by the country’s landscapes. Many Welsh gins incorporate local ingredients including locally sourced Welsh water, lending them a unique flavour profile that sets them apart from traditional London dry gins. In place of simple syrup, this variation uses Welsh honey syrup, adding a layer of natural sweetness that pays tribute to Wales’ rich beekeeping tradition. The honey pairs beautifully with the botanical notes of the gin, while fresh lemon juice adds a sharp contrast, ensuring the drink remains balanced. Finally, a splash of Welsh sparkling water ties it all together, making for a light yet complex serve.

To make a Tom Jones, start by filling a tall glass with ice. Pour in 50ml of Welsh gin, followed by 25ml of freshly squeezed lemon juice. Add 25ml of honey syrup, which is made by mixing two parts Welsh honey with one part warm water to create a smooth consistency. Stir gently to combine the ingredients before topping up the glass with chilled Welsh sparkling water. Garnish with a lemon wheel and a sprig of fresh thyme for an aromatic finishing touch.

This cocktail is not only a celebration of St. David’s Day but also a toast to the rising prominence of Welsh spirits on the global stage. Welsh gin has carved out a niche for itself among gin enthusiasts, with distillers embracing the country’s natural bounty to create gins that are both innovative and deeply connected to the land. The use of honey syrup in this drink further highlights the importance of traditional Welsh ingredients, giving the cocktail an identity that is undeniably Welsh.

Clare Valley is just inland from Adelaide and has a microclimate that makes is particularly suitable for cooler climate varieties like Riesling. Limey, zesty and fresh, this is calling out for a few prawns to go with it.

Mac Forbes Chardonnay, Yarra Valley 2022 - £36.00

No sign of too much oak here! Yarra Valley near Melbourne is home to some phenomenally good wines, and Mac Forbes’ excellent Chardonnay evokes Chablis in style, with its lean, creamy texture and 11.5% abv.

Tanners Australian Shiraz, South Eastern Australia 2022 - £12.40

Soft and silky, with plenty of juicy blackberry and blackcurrant fruit and that classic black pepper note you get from good Shiraz. This is a great example of modern, good value Aussie Shiraz that won’t break the bank.

I’m going to show my age this month, but when I first started getting into wine in the 1990’s, THE go-to country to drink wine from was Australia. You couldn’t miss their wine wherever you went – fruity, great value for money, great branding, and wines that made you think of sun and good times. Since the late 00’s however, Aussie wines have been declining in popularity due to many reasons. Drought in areas that made bulk wines, unfavourable exchange rates, and a perception that all wine from Oz is either sweet, overly oaked Chardonnay or jammy, alcoholic Shiraz hasn’t helped their sales.

Since then, winemakers in Australia have gone back to the drawing board and concentrated on both the quality of their wines, and the regional difference in this vast country. There are still great value entry level wines to be had, like our Tanners Australian Shiraz below, but Australia should be better known for the world class wines they produce that just can’t be replicated elsewhere. I love Aussie wines, and here are a few of my favourites.

Grounded Cru GSM, Grenache/Shiraz/ Mourvedre, McLaren Vale 2023 - £17.20

A ‘Rhône blend’ from a new producer based just south of Adelaide by Geoff ‘Joffa’ Thompson and Matt ‘Jacko’ Jackson. This is a rich and decadent wine yet very well balanced too, perfect with a beef stew.

Rocky Road Cabernet Sauvignon, Margaret River, McHenry Hohnen 2021 - £18.20

Margaret River, just south of Perth, is responsible for some incredible wines that balance Bordeaux-style complexity with the warmth of Aus. This Cab Sav is full of juicy blackcurrant fruit, with a spot of old-world savouriness. David Hohnen was the man behind Cape Mentelle and Cloudy Bay, so knows a thing or two about wine!

Stanton & Killeen Muscat, Rutherglen£17.50 (half bottle)

Rutherglen Muscats are truly one of the world’s finest dessert wines. Made in tin shacks to intensify the heat, these are almost immortal in their ability to age and have a complexity that is unrivalled. Raisins, caramel, hazelnuts, orange peel…the flavour just goes on and on.

Renewable energy systems for your home

There are incentives available for anyone who exports the electricity they produce, with some of the larger energy providers now offering in excess of 15 pence per kWh for any electricity sold back to the grid using the “smart Export Guarantee” (SEG), which is currently only available when having your system installed by an MCS accredited company such as Princes LHS.

A sensible option to fit alongside a Solar PV system due to it being powered by electricity is a heat pump which heats your home replacing your fossil fuel boiler and connecting to your wet central heating system. There is a £7,500 grant to go towards the installation of an air source or ground source heat pump. If you have gas, oil, LPG, or electric heating you are eligible for the BUS (Boiler Upgrade Scheme) Grant which as MCS accredited contractors, Princes LHS can apply for on your behalf.

An air source heat pump works by extracting heat from the outside air. This heat can then be used to heat the home via radiators or underfloor heating and also provides all of the hot water required in the home. Equally important is the fact that it is able to operate when outside temperatures drop as low as -20°C. Typically a heat pump can achieve efficiencies of 400% meaning for every 1kw of electricity consumed it will produce 4kw of heat, compared to a fossil fuel boiler being somewhere between 75% and 90% efficient. Alternatively, a ground source heat pump is like a traditional central heating boiler, but, instead of using oil or gas, it uses heat extracted from the earth. Rather than buying fossil fuels from a supplier, you would be using renewable energy for your heating and hot water meaning you will not only be doing your bit to help the environment, you will also save money on your heating bills.

Laura Weir and Alicia Johns, both clinical negligence specialists at Lanyon Bowdler, are giving a guest lecture to law and medical students at Bangor University.

Laura, who herself studied law a bit further along the Welsh coast at Aberystwyth University, said she was really looking forward to meeting the students.

“We are honoured to be invited to speak to the law and medical students of Bangor University as guest lecturers,” she said. “The aim is to give the students some real-life insight into the work of a clinical negligence solicitor. We will be sharing our career stories, talking about how the clinical negligence protocol is used in practice and describing an array of case studies. We want to give the lecture we wish we had received when we were at university and to inspire the next generation of clinical negligence solicitors.”

Alicia also studied law in Wales, graduating from Cardiff University in 2011, and said people were not always aware of how many medical students became lawyers.

“It’s great that medical students will be joining us alongside those studying law, because there are lots of opportunities for medical professionals to work in law,” she explained. “There is the option of working for a law firm as a medical expert, and indeed we know a good number of lawyers who practised medicine before turning to the law. There is more overlap than they might initially think and I hope we will be able to

show that lawyers aren’t as scary as they might be told in the future!”

Dr Marie Parker-Jones, Lecturer in Law at Bangor University, said she was looking forward to welcoming Alicia and Laura to the university.

“This is an excellent opportunity for our students to learn about the practical aspects of this important area of medical law,” she said.

Rydal Penrhos welcomes international school visitors

Coeducational independent school Rydal Penrhos recently hosted students from Methodist College Kowloon in its first overseas visit since the pandemic. Travelling over 9,500km from Hong Kong, the group spent ten days fully immersed in school life. Alpine success for St David’s College pupil

Rydal Penrhos School celebrates outstanding Estyn Report

Rydal Penrhos School is celebrating a glowing report from Estyn, the education and training inspectorate for Wales, which has praised the school for its exceptional learning environment, strong sense of community, and commitment to continuous improvement. The report highlights the contribution of Principal Mr Tom Hutchinson, who joined in 2023 and is successfully defining a new chapter for the school.

Inspectors commended the school’s “collaborative environment with a shared focus on continuous improvement,” recognising the dedication of staff and leadership in maintaining the highest educational standards.

A key strength identified in the report is the school’s “strong sense of community,” where pupils thrive in a setting that values well-being and academic success. The inspectors found that “positive and trusting relationships with staff” foster an atmosphere where pupils feel secure and supported.

The report describes classrooms as “calm, purposeful learning environments,” where pupils engage with their studies “with enthusiasm and commitment.” This is reinforced by “programmes of study that are appropriately planned for progressive development of pupils’ knowledge and specific skills,” ensuring a robust and tailored educational experience for every learner.

One of the most significant findings is that “pupils feel their voices are heard and valued,” underlining Rydal Penrhos’ commitment to pupil engagement and leadership. The school’s ethos ensures that “effort is valued ahead of achievement.”

Principal Mr Hutchinson expressed his pride in the report’s findings, stating: “We are delighted that Estyn has recognised the exceptional environment here at Rydal Penrhos. This report is a testament to the hard work and dedication of our staff, the enthusiasm of our pupils, and the support of our entire school community. A special installation to mark the 80th anniversary of VE (Victory in Europe) Day in 2025, which is being created by a group of knitters in France, will be a centrepiece at next year’s Wonderwool Wales event in the heart of Mid Wales. Tansy Forster and her fellow knitters have agreed to create the new installation especially for the 19th Wonderwool Wales, the premier wool and natural fibre festival in Wales which will be held at the Royal Welsh Showground, Builth Wells on 26th & 27th April. The new work follows the great success of The Longest Yarn, which is an 80 metre, 3D wool art depiction of the D-Day landings in France on June 6, 1944, and is currently touring the UK. The Longest Yarn installation features 80, one-metre long panels, each depicting scenes of the build-up to D-Day in England, the horrors on the landing beaches and the bloody inland battles. More than 1,000 knitters from across the world contributed to the project which snowballed from Tansy’s initial idea of a display for her garden wall. The Impact of Medical Examiner Delays on Funeral Services

Since the implementation of the new Medical Examiner (ME) system on 9th September 2024, funeral directors, families and healthcare professionals have faced significant challenges due to delays in the certification and registration of deaths. While the system was designed to improve transparency, prevent errors and provide families with greater clarity, the reality has been a frustrating and, at times, distressing experience for those involved.

What is the Medical Examiner System and why was it introduced?

The Medical Examiner System ensures that, except for deaths referred to the coroner, all deaths are independently reviewed before the Medical Certificate of Cause of Death is issued. Its purpose is to improve scrutiny, support bereaved families with clearer explanations and identify concerns around patient care. Historically, oversight gaps –highlighted by cases like Harold Shipman – demonstrated the need for a more robust system. While the new approach aims to uphold high standards and prevent errors or misconduct in death certification, its roll-out has not been without challenges.

The Reality of Delays

Since September, many funeral directors across the country, including us at Tom Owen and Son, have experienced increased waiting times for MCCD approvals. Previously, doctors would issue certificates promptly, allowing families to register deaths and plan funerals without unnecessary delays. Now, the additional review process by the ME means that certificates are often taking several days, sometimes even over two weeks, to be released.

These delays have a knock-on effect on:

J Funeral Arrangements – Without an MCCD, families cannot register a death, which in turn means funeral plans, burial or cremation bookings, and other logistical arrangements are put on hold.

J Family Distress – Bereaved families already facing emotional distress now endure prolonged waiting times, adding stress at an already difficult time. If their relative died in hospital, this can also mean up to three weeks without being able to see them.

J Hospital and Mortuary Capacity – The increased time taken to release certificates means that hospitals and some funeral homes may be experiencing capacity issues, causing further complications.

Why Are There Delays?

Several factors contribute to these ongoing issues:

J Staffing Issues – Many areas lack enough Medical Examiners and administrative support to process the number of deaths efficiently. Also, there is a timing delay if the doctor goes off shift for a few days and the ME cannot speak to them.

J Additional steps for already busy healthcare teams – In

North Wales in particular, hospital staff and some doctor’s surgeries are struggling to deal with the additional steps involved in a timely manner.

J Inconsistent Processes – The system varies by region, with some ME offices handling cases more efficiently than others.

J Lack of Public Awareness – Many families are unaware of the new process and struggle to understand why there are delays in obtaining documentation.

What Can Be Done?

We are working closely with the local hospitals, the ME office and key stakeholders, including our local MP and the Patient Advice and Liaison Service (PALS), to address these issues. We urge:

J Increased Funding & Staffing – More resources need to be allocated to appropriate departments to prevent bottlenecks.

J Streamlined Processes – A more consistent, transparent approach across regions would help reduce disparities in waiting times.

J Better Communication – Families need clearer guidance on what to expect and who to contact for updates.
