Crib Goch is a knife-edged arête in Eryri. Meaning "red ridge" in Welsh, Crib Goch is a scrambling route as opposed to a hiking trail – meaning it is only suitable for mountain climbers that have plenty of experience. It has been classified as a Grade I scramble, meaning that there are lots of obstacles and sheer drops. The highest point on the arête is 923 metres (3,028 ft) above sea level, meaning that those who do complete this challenging route are rewarded with the most spectacular of views…

Deganwy
Tucked between the popular tourist hubs of Llandudno and Conwy, Deganwy is a scenic seaside town on the Creuddyn Peninsula that often gets overlooked – and unfairly so! While neighbouring destinations boast castles, piers and bustling high streets, Deganwy quietly holds its own with historical intrigue, sweeping views, and a pace of life that invites you to pause and soak it all in. For those in the know, Deganwy is a hidden gem that makes for a rewarding day trip or a peaceful base from which to explore North Wales.
Just south of Llandudno and a stone’s throw north of Llandudno Junction, Deganwy curves along the mouth of the River Conwy, offering an outlook that’s as captivating as it is calming. The views across the water to Conwy Castle are postcard-worthy, and the sunsets here, especially in early autumn, are a spectacle of colour reflected across river and sea. Dominating the landscape above the town is The Vardre, a distinctive double-humped hill that was once the site of Deganwy Castle. Though only ruins remain today, the grassy mounds and stone foundations are evocative of its storied past. The first Norman castle on the site was built in 1080 by Robert of Rhuddlan as part of his campaign to subdue North Wales. His efforts met a dramatic end when he was killed attacking pirate ships off the nearby Great Orme headland, a

To the west lies Conwy and its iconic castle turrets; to the north, the promenade of Llandudno and the sweep of the Great Orme; and to the east, the hills of the Conwy Valley roll into the distance. It’s easy to see why this spot was once a strategic stronghold, and why it continues to captivate today.
Deganwy’s shoreline is one of its quiet triumphs. The beach, a blend of sand and shingle, is perfect for a peaceful walk, especially as the summer crowds begin to thin. Whether you're skimming stones, beachcombing, or simply breathing in the salty air, it offers the kind of simple pleasures that we so often crave. The path along the coast connects you easily to neighbouring Llandudno or Conwy, making for a rewarding scenic stroll.

The village itself has an understated charm, with local cafés and independent shops offering a warm welcome.
From here, it’s easy to explore more of North Wales. Llandudno is just minutes away and offers its Victorian pier, traditional seafront and cable car rides up the Great Orme. In the opposite direction, Conwy beckons with its UNESCO-listed medieval castle, town walls, and the smallest house in Britain. There’s something special about returning to Deganwy at the end of the day. It offers a gentler experience, less crowded, more contemplative. Julie Roberts, originally from Y Felinheli, is a single parent and businesswoman with a real passion for what she does. For Julie, business isn’t just work — it’s something she lives and breathes.
“After Covid, I launched my first venture, Zest Housekeeping, offering cleaning and housekeeping services,” Julie explains. “It opened my eyes to the standards customers expect and the challenges businesses face in consistently delivering quality.”
That experience sparked the idea for her next step, and so House of Linen was born.
“From the beginning, I wanted to create a service that took the stress away for my customers and gave them complete confidence in what they were getting,” she says. “I didn’t have a background in the industry, but I knew that if I combined determination, a focus on quality, and a personal touch, I could build something that stood out.”
Today, House of Linen has evolved into a thriving commercial laundry and linen hire service, working with hotels and property management companies across Anglesey, Gwynedd and Conwy. Nature is full of surprises, and the mysterious world of fungi holds wonders great and small!
Fungi are an intriguing part of nature. Neither plant nor animal, they make up a kingdom all of their own. With over 15,000 in the UK, they’re incredibly diverse, and autumn is the perfect season for exploring these strange beings.
Are you sure that’s a fungus?!
Fungi come with some wonderfully intriguing names, and many appear just as curious as they sound! Take the bird’s nest fungus. True to its name, it looks like a miniature bird’s nest and cleverly uses rainwater to launch its spores. The turkeytail is a colourful bracket fungus that grows in tiered layers, which resemble the fanned tail of a certain festive bird. And although rare, the violet coral fungus is particularly striking with its branching finger-like projections that give it the appearance of underwater coral. Other fascinating finds include chicken of the woods, oyster mushroom, and hare’s ear!
You can find fungi in all kinds of places, including gardens, woods, parks, and even cemeteries! They particularly like damp, undisturbed places and decaying wood, so look out for them on old logs, in leaf litter, or on the bark of trees. With 35

Dene Bebbington explores The Great Orme, and discovers the fascinating history buried beneath Llandudno’s famous headland…
Llandudno is North Wales' premier resort with a sweeping seafront and magnificent pier. Its line of grand hotels harks back to the Victorian era when the town began attracting visitors to the seaside. Bookending this shore is the Great Orme headland and its less famous sister, the Little Orme.
Ancient Britons mined malachite copper ore on the Great Orme (Pen y Gogarth) at least as far back as 4,000 years ago in the Bronze Age. Its current name stuck when Llandudno developed as a seaside resort, but actually derives from Old Norse words “horma heva” meaning “great serpent” because of its appearance from the sea witnessed by Viking raiders.
Bronze Age miners laboured with primitive stone or bone tools to dig out the ore. Then copper and tin mixed in the right ratio formed bronze, a hard alloy suited to making robust
tools like axeheads, and weapons like swords or spearheads. Copper deposits here were so rich and relatively easy to extract that within a century Britain's other copper mines had closed! The Orme mines boomed for several centuries, even trading across the sea to continental Europe. After eventually closing, the mines remained largely abandoned until the 18th Century, then mining resumed until cessation of the last lease in 1881.
We can't blame those miners for being a superstitious lot from working in eerie dark tunnels under the earth where they believed that impish “Knockers” resided. But these spirits weren't necessarily to be feared. They supposedly helped miners to find ore veins and made a knocking sound while they worked – perhaps the offerings of clogs and clay pipes encouraged them to treat the hardworking men favourably.

are two wells: Ffynnon Rufeining (Roman's well, near which Roman coins were found), and Ffynnon Tudno named after the saint. When a new utility company formed in 1875 they had permission to extract water from St Tudno's well, and a few others on the headland, to supply Llandudno.
People had already occupied the Orme to some extent for millennia, but that increased in the late 13th Century when King Edward I gifted Gogarth manor to Anian, Bishop of Bangor, after conquering Wales. Gogarth Abbey was built on a cliff on the southwestern part of the Orme as a palace for bishops. Legendary Welsh leader Owain Glyndŵr is believed to have burnt it down over a century later. Parts of the building that were left standing became overgrown and have been eroding in its exposed position ever since.
Much later, the building of an optical semaphore station in 1826 initiated development of the Orme's summit. Electric telegraph replaced it years afterward, then that equipment later moved to the lighthouse built in 1862. This grand castellated building sits on the edge of cliff, below which is Yr Ogo Llech – the “hiding cave” which got the nickname “smuggler's cave”.
We have station keeper Job Jones to thank for increasing the summit's appeal. The old semaphore station proved so popular with visitors that he opened a tearoom to serve refreshments after their ascent, and kept a visitors book to record their presence for posterity.
The long-gone Great Orme Golf Club, opened in 1905 and closed in 1939, originally used the station as a clubhouse. A few years later the Telegraph Hotel was built at the redundant site and part of the hotel was used as a more salubrious clubhouse.
Of course, people aren't the Orme's only inhabitants. Grazing far from their native land are about 150-200 Kashmir goats, descendants of a mating pair gifted to Queen Victoria by Mohammad Shah of Persia in 1837 after her coronation. Thanks to their distinctive horns and long hair, these goats were chosen to be the Royal Welsh 1st Battalion's Regimental Goat mascot. The latest to be so honoured is Fusilier Llewellyn who was chosen in 2016 and who makes an appearance at regimental ceremonies.
Goats share the headland with other fauna both above and below ground. Notably, a variety of seabirds nest on the cliffs, while horseshoe bats hang around in mines and caves during the day before flying out at dusk in search of prey.
As in the past, Great Orme's biggest tourist draw is the summit complex which is now reached by tramway, cable car or road. From there fantastic panoramas can be enjoyed looking inland and out to sea, while a visitor centre provides information about the headland, plus refreshments can be enjoyed in the café. Though copper mining here belongs to a bygone era, people can get a flavour of life working underground in a mine tour but, thankfully, in better conditions than ancient miners experienced. n

Echoes in the
Landscape
As we get deeper into October thoughts automatically turn to Halloween, and all things supernatural. Sonia Goulding dares to unearth some of the regions spookiest stories…
Beneath the rolling hills, soaring mountains and dramatic coastline of Wales, dark secrets lie hidden, woven into the very fabric of this ancient country. Celebrated as the land of poetry and song, myth and magic, its valleys and mountains still echo with legends, ghostly tales, and strange happenings that blur the line between history and folklore.
DEBORAH’S WELL
Deborah’s Well stands quietly beside the Cadole to Gwernaffield road, a modest stone structure at the edge of the woods. In the 1980s, councillor and local historian, Arthur Smith, recounted that a mysterious illness had struck the area sometime during the 6th Century. At its onset, a young woman named Deborah, reputedly a white witch, or healer, is said to have discovered that the region’s water supply had become infected and was therefore the source of the disease. She led those villagers who had so far escaped sickness to the safety of a makeshift hospital on higher ground above where her memorial now stands. For a time, lives were spared, but eventually the illness reached them, and the blame fell on Deborah. Now branded a black witch, she and those in her care were locked inside the building and it was set alight. There were no survivors.
The 1970s saw an unsettling latter-day twist to the tale. Late one night, a couple were driving home from an evening out when they stopped near Deborah’s Well for the man to answer a call of nature. As she waited for him in the car, his wife was terrified at the sudden sight of a woman emerging from the woods with her hair ablaze. Panic-stricken, she ran to find her husband, dropping her handbag on the way. When they returned to the car, the apparition was gone, and they drove away in haste. Shaken by the encounter, the couple reported it to the authorities the next day. Police visited the site but found no trace of a woman nor any signs of fire – though they did recover the handbag.
Could this terrifying vision have been a manifestation of Deborah, a terrible re-enactment of her tragic death at the hands of the very people she was trying to help?
THE GOLDEN GHOST OF GOBLIN HILL
In 1833, workmen unearthed an extraordinary gold cape at Bryn yr Ellyllon (Goblin Hill) on the outskirts of Mold. Dating from the Bronze Age, the cape was beaten from a single ingot of gold, about the size of a golf ball, and placed on someone interred within the burial mound known as Tomen yr Ellyllon (Tumulus of the Goblins). Considered one of the finest examples of prehistoric gold work in Europe, it is now on display at the British Museum, with a copy in Mold Museum.
Long before the cape’s discovery, however, locals spoke of a spirit called Brenin yr Allt, or King of the Hill, said to haunt the area. Legend tells that in 1810 a woman, leading her drunken husband home past Bryn yr Ellyllon, saw an apparition “clothed in gold which shone like the sun” towering over the tumulus before vanishing into it. The encounter scared the woman out of her wits – and her husband into sobriety!
An 1830 report recounts a similar encounter: a ‘respectable woman’, riding home one summer evening, saw the trees bathed in a strange, shimmering light, before being confronted by “an apparition of unusual size, clothed with a suit of golden armour” which too, disappeared into the tumulus. She turned back immediately and reported the sighting to the Vicar of Mold, Reverend Charles Butler Clough, who informed her that the golden ghost story was well-known locally.
Whether ghost story, legend, or cultural memory preserved across millennia, do the tales of Brenin yr Allt preserve a faint memory of a real king, or another high-status figure, laid to rest beneath the tumulus?
PLAS TEG: A TURBULENT PAST
An impressive and brooding Grade I listed Jacobean mansion located between Mold and Wrexham on the A541, Plas Teg was built in 1610 by Sir John Trevor. It is thought to be one of the most haunted buildings in Wales, with no fewer than 15 unquiet spirits believed to wander the house and grounds.
One of these is said to be Sir John’s own daughter, Dorothy, who fell in love with Iorwerth, a local farmer’s son. Her father strongly disapproved of the match however and forbade the couple from meeting. Heartbroken, Dorothy planned to elope with her love and buried her jewellery near a well in the grounds of the mansion. On the night of the planned elopement, Dorothy went to retrieve her jewellery but tragically slipped and fell to her death down the well. Her body was not discovered for two months, and her jewellery was never found. Over the years, there have been numerous reports of a woman in white wandering on the A541. Could this be poor Dorothy, looking for her beloved Iorwerth? Frightened of being accused of her murder, Iorwerth hanged himself, and his ghost is also said to haunt Plas Teg.
This enigmatic house has attracted many supernatural investigators over the years – including the team from popular television show, Most Haunted – many of whom claim to have seen shadowy figures, sensed ghostly presences, and heard loud, wailing noises.
From haunted wells and golden kings to tragic tales of love and loss, the landscapes of north east Wales carry stories that refuse to fade. These legends are more than curiosities; they are echoes of lives once lived in the hills, woods, and houses that we still see today. Whether we believe in ghosts or not, the sense of something lingering reminds us that history here is never silent – captivating, chilling, and enchanting all who visit this beautiful corner of Wales.

As autumn begins to fully take shape, there is no better time to explore North Wales. But while the landscape is beautiful, it can also be dangerous, so it’s best to always be prepared…
October heralds lengthening shadows and shorter days, making precious hours spent exploring the coast and countryside of North Wales especially valuable. However, it’s easy to be distracted by the richness of the autumn landscape and suddenly caught off guard by rapidly changing weather and/or fading daylight.
Whether you are planning a walk in the hills or along the coast, a mountain bike ride, or some paddleboarding, be prepared for shorter daylight hours; it will get dark quicker if the skies are overcast. Be realistic about the amount of time you will be out, and maybe plan shorter outings. Set out in good time, carry a torch, even if you intend to be back long before the dark descends; check your batteries before setting off and carry spares.
Autumn weather is notoriously unpredictable. Storm-force winds and persistent heavy rain can rage at the top of hills and mountains when it is merely cloudy and breezy in the valleys. Climbing the highest mountain in Wales, Yr Wyddfa (Snowdon), is on many a bucket list. The Llanberis Path is the most gradual route, but it’s still seven hours of difficult walking up and down. The two mountain rescue teams that cover Yr Wyddfa are the busiest in the UK, and they are all volunteers. Help to lessen the strain by preparing well. Trust us, you’ll have a better day!
Colder conditions and strong winds at height can mean a severe wind chill, which can lead to hypothermia, especially if waterproofs become soaked through in wet conditions. Whilst well-fitting walking boots/shoes, warm layers and waterproofs are essential, sometimes even the best kit won’t keep you
dry. If the weather closes in unexpectedly, or if the conditions turn out to be more difficult than you’d expected, it’s best to be flexible – there’s no shame in changing your plans. Choose a different route or turn back if the forecast doesn’t look too clever.
Whether you are planning to be on, in or near water, bear in mind that heavy rainfall through the autumn can change flow, currents and levels dramatically. Strong offshore or crossshore winds can also make conditions for swimming and paddling particularly challenging, so be sure you have the technical skills for the conditions before you set off. If you do find yourself unexpectedly in the water, remember to float to live; tilt your head back, relax and move your hands and legs to help you stay afloat.

Survey the beer options on the bar and you’ll undoubtedly find a good selection of local ales with a North Wales provenance. Names like Purple Moose, Cwrw Llyn, Orme Ales, Hafod, in Mold, Snowdon Craft Beer and Conwy Brewery already have their legions of admirers. If you’re a beer and ale aficionado, pub-crawling around North Wales is two dozen Christmases rolled into one.
Up the road from us in Llandudno is the Wild Horse brewery which is currently going from success to even more success since it opened in 2015. It was set up by Dave and Emma Faragher, who had left Llandudno 1n 2010 and moved to Canada, which is where their beer journey unexpectedly started. “That’s where we discovered North American craft beer. CARBONADE DE BOEUF
Ingredients
(Serves 4)
1 kg good quality braising steak cut, cut into good sized chunks
500ml North Wales beer – your choice!
1 tablespoon olive oil
1 large onion, peeled and sliced
2 garlic cloves, finely chopped
1 tbsp plain flour
2 bay leaves
1 bouquet garni
Salt and black pepper
Put the meat into a bowl and cover with the beer. Leave to marinade overnight in the fridge. The next day, lift the meat out with a slotted spoon, pat it all dry and season with salt and pepper, keeping the beer marinade to one side.
Pour some olive oil into your favourite flameproof casserole and heat it on the hob. Place it over direct heat, then heat the oil until sizzling hot and fry up the meat in stages, a few pieces at a time, until they are browned. Set the browned meat aside in a dish as you cook up the rest.
Once all the meat is browned, add in the onions and cook them off until they are golden brown. Add the garlic
in Calgary and we were knocked out by the flavours of the beer and the passion of the people working there,” Dave told me.
“Afterwards, my two bothers and sisters gave me a home brewing kit for my birthday and it all started from there; figuring out how to make beer from scratch. I got more equipment and more knowledge. Fast forward to 2014 and we were looking to move back and we had the idea to open a brewery.”
Dave and Emma are soon going to be opening up the Llandudno brewery for tours, and you can already enjoy ridiculously good pizzas there in their Taproom. “We opened that about 18 months ago and it’s been a learning curve. We’re not from a hospitality background, so we brought it some seasoned pros and I think we’ve created a unique space for around here, and it’s great to be able to sell the beer at source.”
Beer also comes in handy for cooking, as in this Flemish classic, which I remember fondly from the very first days of Paysanne. Simple to make and the perfect warming meal to come back to after a long pub walk.n
and cook for a minute longer. Now return all the meat to the pan and stir in the flour until everything is coated. Stir in the beer marinade – if there isn’t enough to completely cover everything, add some more beer. When it comes to the boil, turn the heat down, give it a good final stir, then season with salt and pepper, and add the bay leaves and the bouquet garni. Put the lid on and place the casserole in the pre-heated oven – 140¨C FAN. Leave there for three hours.
Serve it with some gratuitously rich dauphinoise potatoes and your choice of autumn vegetables. And a pint of beer.

As the nights begin to draw in and autumn properly takes hold, it feels like the right moment to reach for something with character, complexity, and just a hint of mystery. October’s Cocktail of the Month at Number 25 is The Last Word, a drink with roots in Prohibition-era America that has since become a modern classic in cocktail bars around the world.
The story of The Last Word begins in Detroit in 1915, at the Detroit Athletic Club. Despite the country hurtling towards Prohibition, bartenders were still experimenting with flavour, and this cocktail quickly became a house speciality. After vanishing for decades, it was rediscovered in the early 2000s and has since returned to centre stage, thanks to its unusual but perfectly balanced combination of ingredients.
What makes The Last Word so distinctive is its use of equal parts: gin, green Chartreuse, maraschino liqueur, and freshly squeezed lime juice. On paper it may sound eccentric – a powerful herbal liqueur, a cherry-based spirit, sharp citrus, and a juniper backbone – but together they create poetic harmony. The result is a cocktail that’s sharp yet smooth, herbal yet sweet, layered yet approachable. Every sip seems to shift, revealing something new, which is perhaps why it has endured as a bartender’s favourite.
At Number 25, we keep the preparation of The Last Word true to tradition. We shake all four equal elements hard with ice and serve it straight up in a chilled coupe glass, letting its pale green colour speak for itself. It’s not a drink that
needs embellishment, though we’ll occasionally garnish with a simple lime twist to accentuate the citrus, or in cases a maraschino cherry to accompany the maraschino in the drink.
The Last Word is perfectly suited to October. Its crispness and herbal depth cut through the heaviness of autumn dishes, while its lively sharpness keeps it refreshing. It is a drink that feels both timeless and timely – the sort of cocktail you want to savour slowly as the evenings grow darker, each sip reminding you that balance can be found even in unexpected places.

Chef Marc Macauley has turned his love of food into a catering business built on passion…
For Marc Macauley, food has been a lifelong calling. Leaving school at 16, he walked straight into the kitchen and, more than 40 years later, he hasn’t stepped out. Now 57, Marc has built a career – and a company – around his passion for creating unforgettable dining experiences.
As the driving force behind Marc Macauley Catering, Marc specialises in marquee weddings and large-scale corporate events. But don’t be fooled – he’ll happily turn his hand to buffets, intimate dinner parties, occasional pop-up restaurants and even Christmas Dinner in a box.
“Every event is different, every menu is unique and every client is special,” says Marc, who thrives on the variety that catering brings. “That’s what keeps it exciting.”
Central to his cooking is a deep respect for local produce. Sourcing ingredients from trusted suppliers close to home, Marc believes taste and presentation should always go hand in hand. His dishes are known not only for their flavour but also for the artistry with which they’re presented. “Food should always look as good as it tastes,” he adds.
But behind the scenes, Marc is not alone. His wife, Anna, is an integral part of the business. As a wedding and event planner,
she works closely with clients to ensure every detail is taken care of – from the first tasting to the big day itself. “Nothing is ever too much trouble,” Anna says with a warm smile, about their philosophy that clients have come to know and love. Together, they’ve made the company a true family affair, blending Marc’s culinary expertise with Anna’s organisational flair.
That personal touch is what sets them apart. Couples and clients often remark on how much Marc and Anna clearly love what they do. And it shows. Whether it’s the sparkle of a wedding marquee, the buzz of a corporate gala, or the intimacy of a private dinner, every event is treated with the same dedication and care.
After more than three decades running his own business, Marc still feels the same thrill as he did at the start of his career. “Cooking has never felt like a job – it’s who I am,” he says. “Seeing people enjoy what we create is what it’s all about.”
For Marc and Anna, catering isn’t just about feeding people; it’s about making memories and, in some cases, lifelong friends. And with every dish served and every event delivered, they continue to do just that. n
A feast for the senses
Feast Brothers is a new restaurant in the heart of Holyhead, that specialises in Italian cuisine…
Now mostly known for serving spaghetti Cacio e Pepe from a wheel of parmesan cheese, founders Scott Wheeler and Joey Ashton have been the best of friends since their school days. Their skills have taken them as far as Sydney, Australia where Scott worked in the business sector for global companies and Joey worked his way up to an Executive Chef of a multimillion-dollar hospitality group.
Once they had both decided to move back to the UK it was time to combine their experience and passion to create Feast Brothers. With a deep love for hospitality, they wanted total control of where the food comes from and where it ends up. Now they cater for all private events and travel all around the country in their food trailer, serving quality meats, cheeses, pastas and more to wedding guests, festival and market goers.
They started with one humble little food trailer, serving pasta to the people of North Wales on the beach. They now have two trailers and two shops, with a base in Somerset, England and another on Anglesey.
“When the second lockdown happened we were forced to close our trailer and do home deliveries on Anglesey,” explains Joey. “We made kits and recipes for people to serve our food in a restaurant style in their homes during a time when all restaurants were shut. Trying to bring the restaurant experience to people's homes.”
Word soon spread and after a week Scott and Joey couldn't cope with the demand.
“After Covid we travelled around North Wales in our food truck for a number of years,” continues Joey. “We did pop-ups and events and have now catered for over 150 weddings. We started doing a monthly pop-up at Bragdy Cybi Brewery in Penrhos Retail Park, and it kept getting busier each month until we realised that we needed to open our own place on Anglesey. So we have now opened up a restaurant in the heart of Holyhead.”
Scott and Joey, aka Feast Brothers, are the first in a long list of new and exciting operators going into the area at the beginning of a period of significant investment into Holyhead town centre.
“As an authentic restaurant in Wales, all of our produce is exclusively either imported from Italy or sourced locally,” adds Joey. “Our cheese and wines are from Italy, our beer is brewed round the corner by Bragdy Cybi, our coffee is roasted in Newborough by Dragon Roastery, our fresh produce is from North Walian growers Oren foods, our spirits are from Mon distillery, our seafood is caught by a fisherman in Cemaes Bay and our eggs are from a local chicken farmer.”
Feast Brothers specialises in Pasta and authentic Italian small plates. Everything is made on site from scratch, and the menu is made up of dishes that Scott and Joey have eaten and learned about on one of their many trips around Italy.
It's a small restaurant, so it gets booked up quickly, but Scott and Joey have plans to expand into the upstairs of the building. Takeaways are also available, so you can still have that restaurant experience in your very own home. n

The Gunroom Restaurant is a contemporary special occasion restaurant that is set in the historic 5* Plas Dinas Country House, Caernarfon. The former home of Lord Snowdon is fast becoming known as one of the best restaurants in North Wales, in fact it was awarded ‘BEST PLACE TO EAT ‘ in Wales 2025 by Visit Wales and AA Restaurant with Rooms of the Year in Wales 2025.
It is headed up by Daniel Ap Geraint, who works alongside a selection of the region’s best chefs including Kane Williams, an extraordinary talent that was previously the Head Chef at The Barn at Moor Hall until March, when he joined this ambitious team here in North Wales. They are joined by Cosmin and Tom who have both held successful Head Chef roles and offer consistency, precision and incredible talent working alongside Aled, Daniel and Kane.
Daniel has been at the restaurant since 2018, gradually building up the reputation as a popular foodie destination with guests travelling from all over the world to stay and dine. The Gunroom Restaurant was added to the MICHELIN Guide in 2022 and have since retained their place in the coveted guide.
Daniel was incredibly proud to be competing in the Wales region of Great British Menu 2025, the 20th Anniversary year of the iconic BBC tv programme. It is a dream come true for
Daniel and he is grateful for the support he has received. He was successful in winning the Wales region week and went on to achieve 2nd place to Sally Abe during the starter final and joint 3rd to Jean in the mains.
Kane has an outstanding CV, working for Mark Birchall at Moor Hall as Chef De Partie, before going to The Ledbury in London as Chef De Partie. He returned once again to Moor Hall as Senior Sous Chef and then went on to hold the prestigious Head Chef role at The Barn at Moor Hall.
With each month, Daniel and his team refines and perfects, move forward, develops incredible dishes and as a result you see the awards and achievements, incredible feedback from diners from all over the world, mentions in the MICHELIN Guide newsletters and foodie articles coming in thick and fast. The kitchen team are made up of truly lovely chefs who work incredibly hard.
Daniel and his team are so passionate about the provenance of their ingredients, they climb mountains, source the best locally farmed meats, have developed a kitchen garden to use on their monthly menu and even use vines from their very own vineyard to smoke the butter. The nights are drawing in; the leaves are turning brown and there’s a distinct nip in the air. Autumn has well and truly begun, and my thoughts start to turn towards warming, comforting dishes like stews and roasts. But what to drink? My go-to region at this time of year is the Rhône Valley, and its soft, brambly reds and orchardfruited whites.
The Rhône is split into two parts. The northern Rhône is the smaller of the two and home to famous names such as Condrieu, Hermitage, Côte Rôtie and St Joseph. Syrah and Viognier are the main grape varieties and quality is very high. The southern Rhône is larger, and most famous for Châteauneuf-du-Pape but also for basic Côtes du Rhône, and villages like Gigondas and Rasteau. Here Grenache is the main act for reds, with support from Syrah, Mourvèdre, Cinsault and Carignan. The weighty, complex whites are made from Marsanne, Roussanne and Viognier. Now is the time of year to give them a go.

Although the Rhône is most famous for its reds, and whites are becoming increasingly popular, it’s also home to this superb, aromatic sweet wine too. Floral, peachy and very moreish, this Muscat is the perfect pairing for anything fruity, or chilled as an apéritif.

A sensible option to fit alongside a Solar PV system due to it being powered by electricity is a heat pump which heats your home replacing your fossil fuel boiler and connecting to your wet central heating system. There is a £7,500 grant to go towards the installation of an air source or ground source heat pump. If you have gas, oil, LPG, or electric heating you are eligible for the BUS (Boiler Upgrade Scheme) Grant which as MCS accredited contractors, Princes LHS can apply for on your behalf.
An air source heat pump works by extracting heat from the outside air. This heat can then be used to heat the home via radiators or underfloor heating and also provides all of the hot water required in the home. Equally important is the fact that it is able to operate when outside temperatures drop as low as -20°C. Typically a heat pump can achieve efficiencies of 400% meaning for every 1kw of electricity consumed it will produce 4kw of heat, compared to a fossil fuel boiler being somewhere between 75% and 90% efficient. Alternatively, a ground source heat pump is like a traditional central heating boiler, but, instead of using oil or gas, it uses heat extracted from the earth. Rather than buying fossil fuels from a supplier, you would be using renewable energy for your heating and hot water meaning you will not only be doing your bit to help the environment, you will also save money on your heating bills.

There are Eco Forest and CTC ground source heat pumps, various models of Air Source Heat Pumps including Mitsubishi, Samsung and Midea. Plan ahead to ensure your farm stays in the family
Many farms stay in the same family for generations, but strict conditions apply to tenant farms which can make all the difference to whether a succession is possible or not.
Katie Baker, senior associate solicitor at Lanyon Bowdler in Conwy, says advance planning is essential to avoid complications and the potential devastation of a succession being lost or refused.
AHA (Agricultural Holdings Act) tenancies granted before 12 July 1984 carry succession rights, but it’s vital to be aware of the conditions which need to be met to ensure a smooth transition.
“Put simply, tenancies signed after 12 July 1984 have no succession rights, limiting them to one generation, but tenancies agreed before that date have the ability to be passed on to two generations, providing certain criteria are met,” explains Katie.
“It is possible to make an application for succession in two circumstances – upon the death of the tenant or upon the retirement of the tenant. Making an application upon retirement is the better option as it is less time-pressured and could be withdrawn, before reaching a final hearing, in the event that it was considered unlikely to succeed.
“In contrast, an application upon death must be made within three months of the date of the tenant’s death – there is no extension to this time limit and therefore it is vital to seek legal advice immediately upon the passing of the tenant.
“In order to make a successful application for succession, the applicant must demonstrate to the Agricultural Land Tribunal that they are both ‘eligible’ and ‘suitable’.
“To be eligible, you must be a close relative of the deceased, and you must also have delivered your principal source of

livelihood from farming the holding for at least five of the last seven years.
“There are a range of factors involved in determining your ‘suitability’ to become the tenant, and the tribunal will take all relevant matters into account, including the applicant’s experience, training, skills, financial standing, capability and capacity to farm the holding commercially.
“Evidence for this would come from a range of sources, including agricultural qualifications or training experience of managing or contributing to the management of the holding, and experience of successfully operating within subsidy schemes. You also need to be able to show evidence of having available finance to support the future of the holding.
“So as you can see, planning for succession is key. Getting yourself into a position whereby you know you can demonstrate this evidence is so important. Leaving it to chance is likely to result in your application failing which can be devastating for a farming family.” n

Charlie Merrick’s outstanding performance earned him two awards, including a stunning trophy, and he even received a mention in Yachts & Yachting magazine, an exceptional recognition at the age of ten. Charlie, who is a pupil at St David’s College, also took first place in a wakeboarding competition, showcasing his talent across multiple water sports. New project offers fully funded ‘green’ training to Anglesey and Gwynedd
A project is being launched to offer fully funded ‘green’ training to individuals and businesses on Anglesey and Gwynedd to take practical steps towards a low carbon future.
The Employer Green Skills SPF Transitional Project, which will run from this September to March 2026, is being run by Busnes@LlandrilloMenai and aims to support 30 Employees in Anglesey and 90 in Gwynedd.
It’s designed to build on the success of two previous projects –Net Sero Gwynedd and Employer Skills North Wales. All three projects are supported by the Shared Prosperity Fund (SPF).
The new project allows Busnes@LlandrilloMenai to continue to provide fully funded, specialist ‘green’ and associated training, such as retrofit, renewables and air and ground source heating.
The training aims to support small companies and tradespeople, enabling them to offer new services and become part of supply chains supporting carbon reduction in housing and construction.
The project will also fund associated business and management skills, such as Prince2 Project Management, CIM Marketing Courses and micro learning modules in a range of business skills.
Geraint Jones, a Grŵp Llandrillo Menai Contract Manager, will manage the project and experts from Busnes@LlandrilloMenai and CIST (Centre for Infrastructure Skills and Technology) will deliver the specialists training.
Training will be held at Canolfan CIST Llangefni, Tŷ Gwyrddfai, Penygroes, near Caernarfon and Busnes@ LlandrilloMenai, Parc Menai, with limited online provision.
The two previous projects run by Busnes@LlandrilloMenai and CIST have supported companies and individuals to develop their skills with specialist training and accredited qualifications in construction, civil engineering, carbon reduction and retrofit.
“This project is about helping people and businesses to take practical steps towards a low carbon future,” said Gwenllian Roberts, executive director of commercial development at Busnes@LlandrilloMenai.
“We know that demand for green skills is growing quickly and we want to ensure that local employers are not only prepared, but confident to take on the work. By offering fully funded training in areas like retrofit, renewables and project management, we are supporting small businesses to grow, adapt and continue serving their communities.

David Nash Nature Wisdom opened at Ruthin Craft Centre last month and runs until 11th January 2026. This new show brings together over 60 years of Nash’s sculpture, prints, drawings and films in an epic exhibition to celebrate his 80th year. Internationally renowned sculptor David Nash has been living and working in Blaenau Ffestiniog since 1967. Known for his work in wood, he only uses trees that have fallen naturally or had to be felled for reasons of safety, disease or age. He makes work from the green wood, carving and sometimes charring pieces. Nash uses a whole tree, quarrying the ideas as well as the material to waste nothing. Frequent motifs include columns, vessels, crosses, eggs, and the platonic solids – sphere, cube and pyramid. on an Abbeyfield resident
Chris was a Trustee of The Abbeyfield Colwyn Bay Society since 1996, joining the Executive Board after retiring. Chris was persuaded by Nell Street who was the founder of the Abbeyfield Colwyn Bay Society. Originally from Bolton, Chris worked for the Police Force but decided to change career when she moved to North Wales with her husband and daughter in 1966. Chris joined the Post Office and worked in many Post Offices in the area, finally settling into the Rhos on Sea branch, at the very heart of the Community. Chris was a member of the Soroptimists and was a valuable member of the Abbeyfield Executive Board, welcoming new residents and making them feel at ease and advising them on moving home. Chris always said she would move into Room 2 at Rhos on Sea Abbeyfield so when it became available at the right time in her life, she did just that in 2022 and is still going strong.
