By Dave Scott Do you remember the first time you saw a Police officer? I have my memory from when I was a kid… most likely, we all have a memory… hopefully it was a positive experience…

For mine, I think I was in grade one or two and our class took a trip to the police station in Dover… we were finger printed, which was fun… and then we were locked in a cell… of course at the time we all thought it was good fun… but I remember thinking… not a place I want to spend a night.

My how policing has changed, our story today involves Constable Ed Sanchuk, who is a member of our OPP. Ed who grew up in Hamilton always wanted to be a police officer… he remembers watching old episodes of C.H.I.P.S… and he recalls the first timer an officer came to his home… there had been a disturbance in the neighbourhood and the officer was asking question of the home

owners… Ed knew then that he wanted to be a police officer.

In high school he did his co-op with the police, going out on ride a-longs.

After high school was over and Ed headed to Mohawk College where he enrolled in Law and Security Administration.

He continued to become versed in law, taking on work as a lost prevention officer with K-Mart and then on to McMaster as campus police, which he tells me was a real eye opener… next up, was testing to be an officer and becoming an auxiliary police officer in Hamilton, his home town… upon his graduation, Toronto called offering a job… it was what Ed wanted… and so began his policing career.

I asked Ed about his seven years on the force in Toronto and he shared a few stories with me about his time there…

One was that of a prostitute who was continuously arrested, he figures seventy times… for some reason, officers always had a hard

By Dave Scott I don’t care where you go in this county, there is nothing like a street dance in the village… everyone comes out and enjoys… last Saturday night was no exception… there was a wonderful fish fry dinner put on by Knechtel Foods… the backdrop as the church yard filled with folks enjoying their delicious meal and sharing a good time was perfect … of course the music was playing and folks were just relaxing in the warm Ryerse evening.

time with her… so the call would go out to Ed to deal with her… he says it was just a matter of showing her a little respect to get her to cooperate… finally the girl was able to turn her life around and now assists in getting other girls off the street… Ed smiles just knowing that she got her life straightened out… after seven years on the force it was time to move on. He and his wife and children settled in Brantford, where Ed joined the force… he explained that in Toronto the officer does the initial work and then hands it over to a detective… coming to Brantford he learned that officers do it all… they have the case from start to finish… and with as many as twenty-five calls a day sometimes… it can be a little overwhelming. With his family settled in the Waterford area… Ed decided to apply to HN OPP… he came aboard and is currently the Media Relations Officer… he enjoys his current position getting out in the community, talking to the kids in the schools, being involved and

So why did I want to sit down and talk to Ed you ask? Well that is a great question… I remember a few months back watching the officers prepare for the Special Olympics Run… there was, most likely, a dozen or so officers there… chatting with each other, smiles all around… and it just hit me… these men and women are no different then we are… they have families… they go through the same problems you and I face everyday… the big difference being, that when they kiss their families good-bye and head out for work…. they never know for sure if they are coming home… that may seem harsh but after talking to Ed, it is true… he has been stabbed, seen carnage from horrific accidents, made arrests… but he still loves what he does… he still believes that he wants to serve and protect…

Perhaps we need to say thanks to our local OPP once in a while…

This is a piece that I wrote last week… a lot of folks knew my Uncle (Harold Earle)… and well… I wanted to share it with you…

A life is defined by what you make of it, what you put into it, and what you get back out.

Very few can honestly say that they got the full ride out of their lives.

But all of us can honestly say that we know Harold did.

This last week has found me chatting with folks who knew Harold... and their stories about him...

Every person I’ve talked to... as soon as they heard his name, their face would light up with some kinda’ crazy story about Harold... as you can well imagine... I cannot tell you any of those stories... because well…

I can tell you one fella’ who I talked with, did not know Harold had passed... and his first words were... ‘He was the toughest SOB I ever knew’... then he stopped for second... and said he was one of the nicest fella’s he ever knew...

man’s back... legend has it that Grandpa Earle... once punched out a horse... so go figure, Harold had a lot to live up to...

And he did not disappoint... sure, the tough guy rep stayed with him... and deservably so... but his passion... his drive to succeeded... his work ethic... his caring for others... far out way the tough persona.

Which brings me to the moments...

Harold was the king of the moment... he had the ability to put folks at ease... from banker to butcher... he treated them all the same... he could walk into a room and work it into laughs, or when the time called for it, he could be all business...

He understood life in a way a lot of us have not experienced... like I said earlier, everyone has a Harold story... and you know, I never heard him toot his own horn... he would let others tell his tales... think about it for a moment... he never made those memories for himself... he made them for you... he enjoyed having fun and making people happy...

My uncle for me... was a man I respected... in business he got me

started and because of him and Elaine, I met my wife... which in turn lead to him and I drinking out of my wife’s shoes on my wedding night... see, Harold created my moment.

As for family... Elaine was the love of his life and well let’s be frank kept him on the straight and narrow more than once... and Derek, his son... he would do anything for him and loved him dearly... and Derek admired his dad... and learned the importance of family values and friends from his father... which brings up another point... Harold wasn’t the type to throw that word around... LOVE... but his actions were his means of expressing it... he was always attending hockey games... really any sports event Derek or his grandchildren were involved in… hanging out with his grandchildren at every opportunity... sleepovers and time on the farm... Harold knew exactly what was important to him... his biggest smiles were for his grandchildren...

When ALS was finally diagnosed…

Harold never complained... never said why me... that was not who he

was... he was a fighter... and this fight would be his toughest... he never quit... a few days before his passing... a young man lay in the bed across from him... not well... but Harold, like always, summoned the energy to walk down the hall with the young man... Harold again was sharing a moment… creating another story... helping another... then a day or so later, his grandchildren came to visit… the strength that had been his life returned, he showed no weakness... and shone for his grandchildren...

Derek reflects, that for him, he will always remember that night as one of his father’s greatest moments... a few days later, life is slipping away... Elaine takes his hand... he squeezes one more time... it is their moment.

My uncle, I can say, was old school... a hand shake was his word... if you were a friend, it was for life... and he took no crap from anyone... he stayed true to himself... his whole life... and that is why people loved him... he was Harold Earle …don’t cry because Harold’s life is over... smile because it happened.

We receive approximately 20% of our budget from the United Way, but as a non-profit we must rely primarily on our own initiatives to raise the remaining 80% of our financial demands.

Without those dollars we simply cannot maintain the programs that we run that greatly benefit children in our community. Those programs include Traditional Match programs, In-SchoolMentoring programs, and Group / Community based programs.

oots of Empathy Program

Haldimand & Norfolk Women’s Services has initiated the Roots of Empathy Program in Haldimand & Norfolk Counties. RBC Dominion Securities & RBC Royal Bank wanted to get involved and donated $1,000 to this program. Roots of empathy is an evidence based classroom program that has shown

significant effect in reducing levels of aggression among school children while raising social/ emotional competence and increasing empathy. The mission of Roots of empathy is to build caring, peaceful and civil societies through the development of empathy in children and adults.

At the heart of the program are a neighbourhood parent and baby who visit a classroom nine times over the course of a school year.

A trained instructor coaches the students to observe the baby’s development and to label the baby’s feelings. In this experiential learning, the baby is the “teacher” and a catalyst that the instructor

uses to help children indentify and reflect their own feeling and the feelings of others – empathy.

The instructor also visits the week before and after each family visit to reinforce teachings.

Simcoe and District Youth Soccer Club SUPPORTS “Fill the Beetle” for the Simcoe Caring Cupboard Norfolk is one of those counties that makes magic happen every single sunny day of the summer. Every corner of this county is filled with something wonderful; that something is the people.

The people of this county always surprise me. Last Christmas I had the benefit of being part of a toy drive for children. The outpouring of gifts was so heartwarming and inspiring. Watching children and adults bring in bag after bag of brand new toys was truly moving. Reflecting on that event made me want to do something of my own. I hit the drawing board and came up with a challenge for the folks of Norfolk County: I want to have a “Fill the Beetle” food drive! This will give me an opportunity to introduce myself and assist my community.

When we think of food drives we think of

Christmas. Most of us don’t give the food bank a second thought over the summer months. That’s what makes this so important. In speaking with the Simcoe Caring Cupboard, I learned the surprising facts about the need for donations in this area. The Caring Cupboard helps feed over 220 households in the Simcoe area, including nearly 300 adults and over 130 children.

The Simcoe and District Youth Soccer Club (SDYSC) has graciously agreed to help me on my campaign, and have offered me a spot on the sidelines of their tournament on July 21st. I invite and encourage all of you to come out to the Norfolk County Youth Soccer Park (660 West Street, Simcoe ) and support a great cause. Of course, we will be getting a head start on this event by having the Beetle parked in

our showroom up until the event. I ask all of you to stop in and drop off an item for the food drive. Any donations are helpful, but most needed items include: peanut butter, juice boxes, fruit/pudding cups, granola bars, cake mixes, cans of tuna/ salmon, sidekicks, canned fruit, cereal and baby food.

By MARG WERDEN Butterfly festival another huge success!

The third annual Butterfly and Dragonfly Festival, presented by Nature’s Calling Environmental Education and the Long Point Region Conservation Authority on Sunday, attracted several hundred visitors and was deemed a success by organizers.

The event included a colourful Spread Your Wings parade in which almost 50 children, many sporting butterfly wings, took part. Led by the local musical group, The Ukeheads, the parade wove its way around Backus Heritage Conservation Area.

Crafts, face painting, and an opportunity to make a piece of pottery decorated with butterfly impressions were just some of the other activities enjoyed by the children. Participants were also able to attend workshops to learn about the life cycle of butterflies and dragonflies, monarch migration, gardening to attract butterflies, and photographing insects. Despite the warm temperatures, pond and stream studies and butterfly hikes were well attended as participants caught and identified a wide variety of insects. One of the highlights of the pond study was watching an adult dragonfly emerge from the nymph stage.

Life at the beach not so much fun for the birds

It’s hot and time to hit the beaches.

However, though heading to the beach may be one of the most enjoyable ways to deal with the heat and humidity of our summers, the results of so many people leaving behind bits and pieces of plastic is taking its toll on water birds. I’m not sure if any studies have been done on the Great Lakes, but on the Pacific coast of Canada, a collaborative project being conducted by the University of British Columbia, Environment Canada, Bird Studies Canada, and others is assessing the amount of plastic ingested by seabirds. After studying the stomach contents of 67 beached Northern Fulmars, it was found that over 92 per cent had plastics such as twine, Styrofoam and candy wrappers,

in their stomachs with an amazing average of 36.8 pieces per bird! This amount of plastic ingestion shows that plastic pollution off North America’s northwest coast is reaching that of the heavily polluted North Sea. Earlier this year when I visited Point Pelee National Park, I was appalled by the amount of plastic debris on the beach, so this is not a problem that is restricted to our oceans. Hundreds and hundreds of pieces of plastic littered the sand. In addition to being dangerous to birds and turtles, it was very unsightly. I took a plastic bag with me on one walk along the beach and filled it within minutes. Although my effort was only a drop in a very large bucket, if everyone who went for a walk along our shoreline always filled just one grocery bag, perhaps we could make a difference. If beach goers can’t make even that much effort, please take home ALL your garbage when you leave the beach. And it sure would be nice if smokers didn’t leave their cigarette butts in the sand either!

Although, in theory, these may decompose in a couple of decades, they are just another form of pollution and take away from the beauty of our natural areas.

The Norfolk Field Naturalists invite the public to join them on an outing on Saturday, July 21 from 10am to noon. David Okines will do a hummingbird banding demonstration and Audrey Heagy will lead a walk to spot butterflies and birds. few weeks ago I came home for a quick lunch and to feed my dog, Rocky. Rocky is a 13 year old Golden Retriever. He used to be waiting at the door for me when he was younger but now I have to go look for him and wake him up. I loaded up his food dish and gave him fresh cold water; he started to eat and I left him to make myself a sandwich. A couple moments later I looked over and Rocky was just standing in front of his food dish staring at his half eaten food. This lasted long enough that I called out to him; he did not respond or look my way. Now Rocky does not hear very well anymore so I was not surprised he did not respond. I called out again, ROCKY! He looked at me, back at his food, back to me. I walked over to him and shook his bowl under his nose, he quickly started eating again. I think he forgot what he was doing! It was the first time that I realized that Rocky was having difficulties, not unlike many of our elderly care clients, with his memory and staying on task. It helped explain a few other things that had been a bit “odd” lately in his behaviour. He had nipped at my son Richard for

no apparent reason, perhaps he was confused or frightened. The lesson I learned that day was that he was not the same dog that I had all these years, he was different now and he had to be treated differently. I had to start thinking more compassionately about him and put myself in his ‘paws’.

So many of the families we work with in Eldercare are stuck with the image of their vital and active parents and they can’t accept how they have changed. They just want it to be the way it was. But the hard reality is that it is never going to be how it was. Things have changed and how you deal with those changes, and how you accept those changes in your elderly parent or relative will have a profound effect on your level of satisfaction in your interactions. Make those small and large adjustments and put yourself in their “shoes” every now and then and think what it must be like to not remember what you are doing, or not be able to follow a rapid conversation. By doing this you may anticipate a problem before it happens and help smooth out the day to day activities of life with an aging

Elder. This is compassion at the most intimate level; a true joy of service will follow.

On the bright side, Rocky and I still go on our daily walk. It used to be about 5 Km but now we are down to around 3 Km and he’s kind of pushing it to do that now. We do walk at a good pace, about 4.5 Km/h, for Rocky, this is the equivalent of a 91 year old man running 5 Km every day. So Rocky may have his limitations in some areas, but if you look at his physical endurance he is still a champion. Eureka! I think there is another lesson to be learned here!

omething that is often seen in the treatment of Sleep Apnea, or other forms of Sleep Disodered Breathing, is that people become non-compliant to therapy after six months, 12 months or longer.

This can happen for a number of

The most common reason that people stop using their CPAP after time is the lack of follow up with their therapy. We see this because sometimes you will have a question or issue regarding your CPAP but never have a chance to ask it and if no one follows up with you, then you often do not have the chance to ask it. You are busy and don’t necessarily have the time to ask the question, however if you have some follow up from either your physician’s office of your CPAP vendor you may remember to ask your question or address your issues. The most common reason for people to stop using their CPAP is lack of follow up after their purchase. People willl tend

to stop using their CPAP when no one, whether it is their Sleep Lab or their CPAP vendor, has followed up with them to see how they doing with their therpay.

Mask discomfort, mask leak or other problems related to the mask are the next most common reason for people to stop using their CPAP. The most important thing to remember is that as your mask ages it will start to leak or need to have the headgear tighter and as a result the mask may become uncomfortable. Most masks will need replacing on an annual basis and replacing the mask may resolve your issues and make it more comfortable, allowing you to stay compliant with your CPAP therapy.

If you generally do not like how your mask fits, then a good option is to

look at a new mask. Manufacturers are always bringing out new masks and improving existing masks to help make them more comfortable and effective.

It is important to remember, just because you have fallen out of the habbit of using your CPAP nightly, it is never to late to get back at it. If it has been a while since you have used it, it is a good idea to make an appointment with a vendor to have it checked over and answer any questions about it that you may have.

Lighthouse Festival Theatre welcomes two of Canada’s most accomplished theatre performers to Port Dover to star in The Fly Fisher’s Companion, the third production of the its 2012 season. Actors Jerry Franken and Ian Downie will play two unlikely lifelong friends that have unsettled issues that they address while reconnecting on a long overdue fishing trip.

Franken is one of the Canadian theatre industry’s most respected artists.

His achievements include helping establish the now defunct – but still renowned – theatre company NDWT (which stood for Ne'er-Do-Well Thespians).

During the company’s operations from 1975 to 1982, Franken became the associate artistic director and performed in the seminal production of James Reaney’s landmark stage trilogy The Donnellys. Since then, Franken has performed across Canada, including the Blyth Festival,

Grand Theatre in London, Theatre Passe Muraille, and the Stratford Festival. Franken is best-known by Lighthouse Theatre audiences for his memorable roles in Ethan Claymore, Fire, and Old Love.

Downie boasts a similarly impressive resume, having appeared in over 80 commercials, and more than two dozen films and television programs in his 25 year career. Some of his notable film roles include Rock My World (2002), starring Peter O’Toole, Joan Plowright, and Alicia Silverstone, The Tuxedo (2002) starring Jackie Chan and Jennifer Love-Hewitt, and The Glow (2002) starring Portia de Rossi. He is currently best-known for his role in popular commercials for TD Canada Trust where he plays one of the two loveable curmudgeons that marvel about how much banking has changed since the good old days.

The Fly Fisher’s Companion is best described as a comedy with heart, as it combines clever comedic pay-offs with genuine moments of sentimentality and reflection.

“We’ll definitely bring the laughs,” says Downie, “but the audience will also recognize themselves and their friends in the characters.”

The winners of the first annual Arts Country Juried Arts Competition were announced at the Norfolk Arts Centre on Friday, June 29. The winning works of art were chosen by a panel of three judges from among 180 entries by artists living throughout the South Central Ontario Region (SCOR), which includes Brant, Norfolk, Oxford, Elgin, and Middlesex County.

Encaustic painter Sierra Barber of Simcoe won the top prize of $2500 for her piece Hodge Podge. The judges described the five-foot-high beeswax painting as “energetic and engaging,” commended the use of embedded colours, and recognized that the use of beeswax gives the painting a sweet aroma.

The 20-year-old artist is currently preparing for her third year of study at the Ontario College of Art and Design (OCAD), where she majors in sculpture and installation. She has never taken a formal painting class, and has no plans to. “I don’t really want to focus on any one thing right now,” Barber said, “but I do want to understand how to work with different materials and how those materials can work together.”

Since she began exhibiting, Barber has been working with bird motifs – a decision that came to her almost by accident.

“I was doing fast painting exercises, just making lines and shapes,” she recalls. “One piece looked like a landscape with eggs embedded in it, and I decided to create the characters those eggs would belong to.“ At just 4’11”, Barber’s winning painting is taller than she. “I had to ask one of my classmates to carry the canvas home for me,” Barber laughed. “I can’t move it on my own.”

Barber says winning the competition is both validating and encouraging. “My mom and dad always tell me I’m good, but this is different. This is three people who don’t know me - but do know art saying they like my work. I’m so happy.”

Glass artist Miia Virtasalmi, also of Simcoe, won the competition’s $1500 second prize for her sculpture Sunshine, Lollipops, and Rainbows.

Virtasalmi says her artwork reflects happy childhood memories and her love of bold colours and round shapes. Her winning piece was created with blown, fused, and sand-cast glass, and inspired by her love for fairy tales. “I want to create happiness,” she explained.

Virtasalmi is well-known throughout Norfolk County for her blown glass tea party sculptures, which she says bring a domestic, cheery gathering together into a single tower. “I take the tea party, and stack it up,” Virtasalmi

explains.

“It’s not only the table setting, but also the guest characters, whose faces are painted on the teapot sides.”

Originally from Finland, Virtasalmi has exhibited across Europe and Canada, and in Japan, Turkey, and the United States.

Third prize and $1000 winner Laurie-Lynn McGlynn of London is an award-winning artist influenced by the intricate details observable in the natural world. In particular, McGlynn focuses on the interactions between the earth, water, and sky, and Simple Harmonic Motion – a scientific term for the transfer of energy through a wave resulting in an expression of energy in another form.

“I’m interested in waves, but not just in water,” the London, Ontario artist explained. “Waves occur in sand, snow, and rocks too, and I’m interested in why. The amount of energy that it takes to cause these patterns is so powerful, but what remains is elegant and sometimes even delicate.”

McGlynn has extensive art education and training, and has participated in solo and group exhibitions throughout Ontario and Nova Scotia.

The winners were chosen by a panel of three jurors with a range of artistic experience and expertise.

To enter the competition, artists were required to submit three photographs of their work with descriptions, along with a $50 entrance fee to the Norfolk Arts, Culture, and Heritage Alliance (NACHA), the not-for-profit, volunteer-driven organization overseeing the Arts Country project.

The images were catalogued and randomly posted online with all the details provided by the artists except their names and locations.

This way, jurors were able to judge the merits of each individual piece, rather than considering the artist’s work as a collection or regional representation.

In order to be accepted into the show, a work of art was required to get at least one ‘yes’ vote from a juror. After the initial online review was completed, 16 pieces had received three yes votes, 29 had received two, and 72 – including the eventual winner – received one, for a total of 117 accepted pieces.

The jurors met at the Norfolk Arts Centre on June 18 to view the accepted pieces in person and award prizes. Again, the works of art stood on their own, without any information about the artist. The process took approximately two hours, and careful consideration was given to each piece as it was reviewed and considered for a

prize. By the end of deliberations, three unanimous winners were selected.

The 2012 Arts Country Juried Arts Competition jurors are Laura Woermke, Executive Director and Curator of the St. Thomas-Elgin Art Gallery; Patricia Deadman, Curator of the Woodstock Art Gallery; and Robert Achtemichuk, former director of the Canadian Clay & Glass Gallery in Waterloo. All three judges have strong backgrounds in a range of artistic disciplines and knowledge, and have connections to the region.

Laura Woermke was born in London, and has been visual art professional for 20 years. A graduate of the University of Windsor’s School of Fine Art in 1990 with a Honours BFA in Visual Arts, she has worked steadily as an Artist and the Executive Director and Curator of the St. ThomasElgin Public Art Centre. She also serves as a director and executive on many arts and cultural boards, advisory panels, and committees.

Patricia Deadman is a visual artist, independent curator, and writer. She studied Fine Arts at Fanshawe College in London, ON, and obtained her BFA from the University of Windsor. Deadman has participated in numerous artist residencies in Banff, Paris, and Mexico. Her lens-based work has been exhibited since the 1980s and collected in public and private collections throughout Canada, USA, and Mexico. Deadman is the former curator of the MacKenzie Art Gallery (Regina, SK) and currently Acting Curator for the Woodstock Art Gallery.

Robert Achtemichuk received his undergraduate degree from the University of Manitoba with a focus on printmaking, and he has also studied in France, Mexico, and Toronto. His work appears in public galleries and private collections across Canada and abroad, including Brussels, Paris, and, Mexico City. He has often been a guest artist or an artist in residence, including the Banff School of the Fine Arts and the Nova Scotia College of Art and Design. Until recently, he was the Director of the Canadian Clay & Glass Gallery in Waterloo, ON, and recently exhibited Latitude 43.456193 Longitude -80.500507 at the Glenhyrst Art Gallery of Brant.

to marketing locally created art, studio tours, and unique cultural and heritage experiences. There is no other project like it in Canada.

The Ontario Trillium Foundation contributed $40,000 to the Arts Country project to help it attain sustainability. The studio tours in each county also contribute financially to the project, with additional sponsorships and advertisements in the printed catalogue and online making up the difference in project expenses.

The 2012 edition of Arts Country is the second printed publication. The inaugural publication and website development was funded by a Sand Plains Community Development Grant in 2011.

NACHA is a registered notfor-profit corporation made up entirely of volunteers committed to raising the profile of arts, culture, and heritage in Norfolk County. Part of the group’s focus is supporting the creative economy and creating opportunities for artists and other people working in cultural or heritage based industries to thrive.

NACHA meets on the second Wednesday of every month at the Norfolk Arts Centre. The membership includes leaders of cultural institutions, local businesspeople, artists, representation from the Ontario Ministry of Tourism and Culture, and citizens with a general interest in the proliferation of local culture and heritage.

PAN-SEARED ZUCCHINI

1 med zucchini or summer Squash 1/2 cup flour 1/2 cup corn meal 1 tbsp seasoning salt 1 tsp pepper 1/2 tbsp garlic powder 1 egg 2 tbsp water Slice Zucchini or squash into 1/2� rings, set aside between 2 tea towels to remove excess moisture.

Mix dry ingredients in a dish. Combine water & egg in separate dish & mix well. Heat a small amount of oil in frying pan on medium/high.

Coat each piece of zucchini or squash in egg mixture, then the dry. Fry on each side for 2 minutes.

This Dish can also be made in the oven: on a cookie sheet lined with parchment paper and roasted for 10 minutes at 400 degrees. Serve hot as a side, or cold in a toasted tomato sandwich.

KALE & ROASTED SWEET POTATO SALAD

2 sweet potatoes cut into 1 inch cubes 2 tablespoons olive oil salt and freshly ground black pepper to taste 1 tablespoon olive oil 1 onion, sliced 3 cloves garlic, minced 1 bunch kale, torn into bite-sized pieces 2 tablespoons red wine vinegar 1 teaspoon chopped fresh thyme Preheat oven to 400 degrees. Toss the sweet potato with 2 tbsp of olive oil in a bowl. Season to taste with salt & pepper and arrange evenly

onto a baking sheet. Bake in the preheated oven until tender, 20 to 25 minutes. Cool to room temperature in the refrigerator.

Meanwhile, heat the remaining 1 tbsp of olive oil in a large skillet over medium heat. Cook and stir the onion & garlic until the onion has caramelized to a golden brown, about 15 mins.

Stir in the kale, cooking until wilted and tender. Transfer the kale mixture to a bowl, and cool to room temperature in the refrigerator.

Once all the ingredients have cooled, combine the yams, kale, red wine vinegar and fresh thyme in a bowl. Season to taste with salt and pepper, and gently stir to combine.

Makes approx. 1 1/2 cups 1 Can Chickpeas, rinsed and drained 2 tbsp Tahini 1/2 tsp Salt 2 tbsp Olive Oil 1/4 Cup Water 1/4 Cup Sun-dried Tomatoes (about 5) 1 Small Head Kale, de-veined and steamed Fresh Cracked Black Pepper Fresh herbs (Optional, I used oregano) Rinse chickpeas & place into food processor.

Add salt, tahini, water, oil & blend until very smooth.

Remove & discard tough stems from kale with scissors. Steam until tender and bright green, shock under cool water, then squeeze as much water out as possible. Break kale ball apart and place in processor with sun-dried tomatoes. Gently pulse until ingredients are well combined, but you can still see chunks of kale and tomatoes. Serve immediately or refrigerate.

For a light lunch, snack or appetizer, grill or toast some high quality bread and spread with hummus. Top with freshly cracked black pepper and fresh herbs of your choice, if available.
