By Dave Scott These days you never know where Annaleise Carr is going to turn up, as she prepares for her Lake Ontario crossing (August 17-18). She is busy training and out gathering sponsors to help raise funds for Camp Trillium (the big winner in this crossing attempt).

Last week Port Dover KIA came on board and is helping Annaleise raise awareness by hosting her in the July 1st parade in Port Dover.

Annaleise will proudly be riding atop a KIA Soul in the parade… Kelly Fulsom, of Port Dover KIA, is thrilled to be part of the sponsor team for Annaleise.

ichael Barber

By Dave Scott As the rain fell, I sat on the porch of Michael Barber’s home… I had stopped by to chat with him about his art… his pieces can be haunting at times… whenever I look at them, for some reason I sense pain, a battle going on, a search if you will.

I have to know what it is about his work… what is this man looking for? Who is he?

The rain outside seemed to be part of this story… it almost felt like nature was using us as its art.

I have known Michael for a couple of years and the more I found out about him, the more I became intrigued… his calm demeanour, his sense of humour, his positive outlook… are almost a contradiction to his work.

Our conversation began, we talked about the pride he and his wife, Lisa, have for their two daughters… he beams as he tells me a little of their character… he is so happy for them. His oldest daughter, Sierra, has just wrapped up a year at art school in Toronto and is back home working locally… Sierra’s works are just as impressive as her dad’s.

Michael thinks back to how Sierra would soak it all in, as folks from different areas of art would stop by… watching and learning about the many different forms that art can take. His younger daughter, Marisa, is just finishing high school… in the fall she will begin studies at the prestigious Aveda Institute in Toronto… it seems Marisa has her own flare for hair creations… in fact she entered into a provincial hair contest (Cosmo Cup) in which she finished 9th. His wife, Lisa, also has talents that extend to creating magnificent meals for friends and family… Michael is extremely proud of his family… you can see clearly that his heart and soul lay within his family.

Hmm… you get the feeling that he is just an ordinary guy, working hard (co-owner Barber & Veri Inc.), and living the dream.

But where does his art come from?

What makes his work speak to us?

To get to the bottom of this story we have to go back to Michael and his childhood… he tells me his parents were good folks… his father was Mohawk and his mom, Anglo, both

Michael Barber were from the area… he attended North Public School in Simcoe and it was during this time that he discovered he was different… there were some racial slurs directed his way… he could feel the underlying racial tension… it was a confusing time and Michael admits that he felt like he just didn’t fit in… sure he had his close group of friends at school and their respect, but others, not so much… he played sports and his creative side was beginning to be engaged… but the fact was that many students viewed him as different because he was part Mohawk… and the Mohawk part of his heritage was never discussed… a child left to wonder… to internalize his own self… school, he admits was tough and he really had no focus for it.

Grade six came and the family moved…

Michael attended Lynndoch School and after that it was off to Delhi District Secondary School. It was during this time that Lisa and he began dating… I know, but we have to say it… high school sweethearts.

College was next and Michael knew what it was he wanted to do… and that was Graphic Design… it intrigued him… he enjoyed creating with his hands… but he still wasn’t at the point of releasing himself onto the canvas.

With school completed, Michael started his own business Strictly Visual… making signs for businesses…

The rain drums on the roof with a steady beat as we sit on his deck, almost to the point where we are leaning in to hear each other…

Michael grins warmly, almost in awe of what he and Lisa have been able to accomplish since those heady days starting out… working all kinds of hours to make ends meet, figuring out how to make life work.

The colours that paint the emotions of Michael were too soon to hit the surface, as two distinct events were perhaps the catalysts for his work to pour out.

Michael’s father passed away suddenly.

Shortly after, his Mohawk grandmother lay on her deathbed…

Michael went to visit… her passing words were in her native Mohawk

tongue… and Michael could not understand. As he tells me the story… I can see the emotions, the feelings, of his reaching for something he is part of but cannot understand… the frustration… her life passing… questions racing in his mind… wanting to help… to talk with her… she is gone… again questions arise from within…

Something stronger than Michael needs to get out of him and two years after his father’s death… it finally begins to release itself… his painting begins to speak to him… it is healing, his voice, his soul… his expressions take form and Michael finds himself drawing on his graphic background… and pouring himself into his work… sometimes an idea hits… an experience… a piece of wood talks to him… and he will find himself being drawn into the piece… letting the hours go… working all night… and finally seeing the piece complete… the piece letting him go.

His art at this point is his life, his experiences, perhaps his heritage breaking out… whatever it is, it speaks to him…

a hundred pieces, all over North America, done art shows from New York to Norfolk. A young lady from Iran has even written a poem to one of his pieces… the piece spoke to her.

Black Garden is a series of pieces that was formed from the words blurted out by an elderly woman… his thoughts and emotional process of dealing with racism came through in the words she spoke, ‘Black Garden!’

Our conversation is beginning to wind down… the rain hammers away on the roof… my body is feeling the coolness of the air… and Michael needs to get going… I think to myself, how lucky I am to get just a little glimpse inside the world of one of Norfolk’s distinguished artists… he continues his long journey… and with every piece he creates… he uncovers yet another layer of himself… and those around him…

ort Dover Knights of Columbus Help Hospital

The Port Dover Knights of Columbus recently visited Norfolk General Hospital to personally welcome new foundation director of development, Julie Powell and hand deliver a $500.00 donation towards the Operating Room Revitalization project.

The Port Dover Knights of Columbus serve their community and raise funds through community events such as Summerfest, 50/50 draws, dances and Rose Sunday’s. The club have over 70 members and meet at St. Cecilia’s once a month except July and August.

Striker’s U18 Girls R ep imcoe

On Tuesday June 12 Simcoe Striker’s U18 Girls Rep team sponsored by Sun Life Financial and Simcoe Lions played West Lorne Wolves. After a tough semi final loss in the Ancaster tournament on Saturday the Strikers were fired up and pressured the Wolves from the first whistle. That pressure paid off after just 6 minutes when Wolves clearance fell to Madison Heggie who controlled the ball from 20yds took a high looping shot that dipped under the cross bar for a 1 v 0 lead.

The pressure kept being applied by the Strikers and from a Kelsey Depaepe corner kick Angelica Ponte tapped the ball home from 6 yards for her first goal. The half winding down a long through ball was met

The second half began as the first ended with the Strikers forcing play in the Wolves half with only 10 minutes gone an interception by

With 3o minutes gone in the 2nd half a Wolves counter attack produced a long range shot that gave the Wolves their only goal. Not to be out done the strikers then went back on the offensive and a nice through ball from Alicia Ryan found Elizabeth Sutherland at the corner of the penalty box and her precise well placed shot gave the Wolves goalie no chance that made it 5 v 1. As in the first halve with time winding down the Strikers defence Sarah Ploj, Sadie Childs, Sydney Caerels and Alynna Brosazzi turned the Wolves away every time they tried to break through. A good set up pass from Kelsey Depaepe found Samantha Correia who beat a defender then drilled a low hard shot into the bottom corner of the net this made the final score Simcoe Strikers 6 West Lorne 1. It was a good well played game by all the team.

The Operating Room Revitalization project is the final stage of the NGH Foundation’s 3-year $3 million dollar “Lend a Hand” Campaign.

The foundation hopes to raise $400,000 to complete the goal and

Of course the games were exciting… and the kids I am sure enjoyed the day away from school.

It’s almost here; it’s almost summer. The sun is shining, the ice cream is cold and the beach is packed. Kids are out playing in the parks around town and sprinklers and swimming pools are offering a refuge from the heat. Air conditioners are running, and convertibles are buzzing down the strip looking cooler than ever. I was raised in Norfolk County, and I know this is our time to shine; this is when we come alive.

Norfolk is one of those counties that makes magic happen every single sunny day of the summer. The atmosphere, the energy, the people… it’s all part of the experience.

Whether you’re sitting on the beach in Turkey S onya G reenslade Point, playing at the splash pad in Delhi, Sales and L easing eating some ice cream in Simcoe, or enjoying a hot dog in Dover, there’s something magical to experience. Every corner of this county is filled with something wonderful; that something is the people.

The people of this county always surprise me. Last Christmas I had the benefit of being part of a toy drive for children. The outpouring of gifts was so heart warming and inspiring. Watching children and adults bring in bag after bag of brand new toys was truly moving. Reflecting on that event made me want to do something of my own. I hit the drawing board and came up with a challenge for the folks of Norfolk County: I want to show off Volkswagen’s newest model, and have a “Fill the Beetle” food drive! This will give me an opportunity to introduce myself and demonstrate what I do to assist my customers and my community.

When we think of food drives we think of Christmas. Most of us don’t give the food bank a second thought over the summer months. That’s what makes this so important. In speaking with the Simcoe Caring Cupboard, I learned the surprising facts about the need for donations in this area. The Caring Cupboard helps feed over 220 households in the

Simcoe area, including nearly 300 adults and over 130 children. I am always thinking of my client’s best interest, and what better way to show my level of commitment than something within my community.

The Simcoe and District Youth Soccer Club (SDYSC) have graciously agreed to help me on my campaign, and have offered me a spot on the sidelines of their tournament on July 7th. I invite and encourage all of you to come out to the SDYSC field at 660 West Street in Simcoe and support a great cause. Of course, we will be getting a head start on this event by having the Beetle parked in our showroom up until the event. I ask all of you to stop in and drop off an item for the food drive. Any donations are helpful, but most needed items include: peanut butter, juice boxes, fruit/pudding cups, granola bars, cake mixes, cans of tuna/salmon, sidekicks, canned fruit, cereal and baby food.

Summertime and the Travelling is Easier

The heading probably reminds many of an old song from Show Boat but there is no music to these words! It simply says what many seniors feel as the warm climate of summer begins and it is certainly easier to walk without snow boots.

Travel for seniors can now mean an afternoon at a craft show or a river cruise for two weeks. The travel can be by car, bus, plane, boat or even helicopter!

There is one aspect of travelling though that every senior has to give more time and attention than other travellers. This important item is never in the brochure, never mentioned by the travel agent or tour guide and yet it can mean the difference between an enjoyable trip or one to try and forget!

It is the health and stamina of the senior traveller. The points are interrelated and the level of each depends on the other. These should be at the top of every travel list and their preparation begun even before the trip is given any thought. All too

often does one see a fellow senior traveller stay on the bus because they lack the energy to get off and visit the beautiful garden. Or after a luncheon that was included in the cost of the tour, a certain person had to see the hotel physician for chest pains. This person had eaten to get ‘their money’s worth’!!!

There is only one person who can help themselves to have the best trip possible. Preparing for the changes in routines takes regular physical exercise such as walking 30 minutes everyday and not having any extreme changes in

health habits such as eating. Taking care can mean that the time and money spent (sometimes in the four figures!) will give pleasure and smiles for years later when the trip is recalled.

Being in our ‘best condition’ also helps when boarding the bus or boat.

There can be a ‘walk’ to get to the gangplank or the steps. Learning to relax and have a catnap en route to the plane is also a plus to conserve energy.

Seniors can do so much to help themselves have an enjoyable and safe trip!!

ater. We often take it for granted but it’s actually the most important element for the body. Even a healthy adult can only last three to five days without water. Water makes up 70-80% of our bodies -- even our bones are over 20% water! “Water, water everywhere…” but sadly, dehydration in the elderly is very common and very dangerous.

Water lubricates joints, regulates temperature

and moistens the lungs for effective breathing.

These processes are compromised when the body is dehydrated, leading to arthritis, sore muscles, heavy breathing and higher body temperatures. And over time, lack of water causes loss of muscle tone, weight gain, slow metabolism, increased toxicity and even organ failure. These are dangerous issues for everyone, but they pose greater risk for an elderly person.

A 2007 Australian study found that older adults don’t drink enough water and become dehydrated during heat waves, proposing that their brains and bodies don’t properly coordinate thirst signals. If the elderly cannot depend on internal thirst signals, they have to consciously drink enough water to maintain health. Here are some tips to help your loved one stay hydrated this summer.

Signals Look for the signs of inadequate fluid intake -dry mouth, headache, light-headedness, little or no urination and constipation. These signals may not be as apparent as they are in a younger person, so be extra vigilant.

Sip Sip on water throughout the day, even when the thirst signals aren’t firing.

Substitutes While water is the best fluid to ensure proper hydration, other fluids are also effective. These include milk, tea, soup, fruit juice and sports drinks. However, keep in mind that beverages with caffeine or alcohol can increase fluid output and hinder hydration.

Shade An easy way to determine hydration level is to observe the shade of urine. Fluid intake is probably adequate when the urine is colourless or slightly yellow. If urine is dark yellow, however, this most likely means dehydration has set in, hydrate immediately.

Remember, some water consumption does come from food. So if your loved one has problems with liquids, encourage foods with high water content. Raw fruits and vegetables are healthy hydration foods, but particularly: Leafy greens, especially iceberg lettuce -although it doesn’t have the fibre and nutrients of darker leafy greens Tomatoes Melons, especially water melon Broccoli Grapefruit Keep Hydrated and Keep healthy this summer!

here are many things that can be symptoms of sleep apnea that you may not think are related to your sleep disorder.

While most people recognize snoring or

all these symptoms or be aware of why they are a symptoms of Sleep Apnea: Impotence/decreased sexual drive: This symptom affects both men and woman, and even if you have Sleep Apnea but do not have this symptom, it will likely happen if you continue not to treat your Sleep Apnea. The primary cause of this symptom is because you are so exhausted that your body cannot muster the energy for most things.

Morning Headaches: These are caused because of the starting and stopping of breathing as well as the drop of your blood oxygen levels.

When you stop breathing your blood oxygen levels drop, putting

immense stress on your brain, which can cause these headaches.

Usually headaches related to sleep disorders will resolve within an hour of waking.

Acid Reflux (Heart Burn): When the airway collapses but breathing effort continues, the pressure in the chest and belly swing back and forth. This change in pressures can cause acids to escape from the stomach up to the esophagus, causing the acid reflux (heart burn).

High blood pressure: When the airway collapses your blood oxygen levels drop and your blood carbon dioxide levels will rise. This results in a drop in the amount of oxygen your heart can deliver and receive.

When the oxygen is low coming to the heart muscles, it can cause your heart to work harder to keep up, resulting in the increased blood pressure.

Snoring: This happens just before the airway completely collapses.

As the airway starts to collapse (before complete closure) it becomes narrow and air gushes through it causes vibrations against the soft tissues, which is was causing the snoring sound.

"Alright students; pencils, pens, and paper out; it’s time to start our lesson," a saying that Brock Johnston said to his students for the past 23 years of his teaching life. During the majority of his career he taught, at the school that he’s currently working at and soon will be retiring from, Simcoe Composite School – where he has been for the past 22 years!

That’s a long time to show pride of being a Sabre (which he is very proud to do that every single day).

But, do you ever wonder why he got interested into teaching? He got interested into the teaching career because when he was growing up, both of his parents were both in the education field! His father was a professor, while his mother was an elementary school teacher - seeing that while growing up, made him become very interested in becoming one too!

After completing high school, he went off two

different secondary school to get started on his dreams of teaching. He went to both Western (to get a history degree) and The University of Alberta (to get a teaching degree). After he tried and tried to get it started, and at the age of 35, he finally got a job at WDHS - his very first teaching gig.

Throughout his career, he has taught politics, math, English, economics, science, and history.

While the majority of us (including myself) remember his history lessons. He told us amazing, historical events in a very entertaining and educational way. That is what he loves to do.

He enjoys interacting with the students. "What I love the most about teaching," he began to says when he’s reminiscing about teaching at SCS, "is getting to know the students. After a while, they become just like family... I’m going to really miss that after I retire".

Which, isn’t the only thing that he’ll miss.

He’s also going to miss attending the fair... A LOT! When asked ‘why will you miss fair day’ his response makes me proud to be a Sabre,

"Us, Sabres, always show the most enthusiasm during fair day! I’m going to miss fair day - but I’m planning on coming down to visit". Another thing that he’ll also miss is the school because he finds the school to be very friendly; we all genuinely like each other.

We’re all going to miss him too. We’re going to miss he’s very entertaining and educational teaching skills. One of his current students, Amber Gibbons, had stated about he’s teaching, "He’s a good teacher. He doesn’t just tell us the facts but, he also tells us about the conspiracies".

During his retirement, he’s planning on working in Wine Country that’s 20 minutes away from where he lives, in Burlington - where he’ll be working at a winery. Throughout his life, he always enjoyed the wine industry.

It’ll be sad and hard to see him go. But, he’ll always remain a Sabre just like every single one of us. And, I think we’ll all say to him, "Good luck, Mr. Johnston. We’ll miss you and always will cherish the memories that we all shared!

By MARG WERDEN Dry as a desert?

As I write this, it is sprinkling outside and the clouds look like they are about to burst open with a downpour. I mention this only because I’m sitting very close to one of the driest and sunniest spots in Canada: the Okanagan Valley in British Columbia. My daughter, Laura, is working for the British Columbia Conservation Foundation doing species-at-risk research.

(Nice work if you can get it – she spends her days hiking through the bush birding! In her defence, however, after spending two days with her, I have to say that she has very long and rigorous days.)

While I know this from previous travels, I am always surprised how much the weather is affected by elevation. I spent part of the weekend in the Osoyoos area, which is at the south end of the Okanagan Valley. It was very warm and dry there, but by the time I returned to our campsite (over a mountain and at a somewhat higher elevation) it was quite cool and threatening rain once again.

The Okanagan Valley, carved out by glaciers, lies between the Monashee Mountains in the east and the Cascade Mountains in the west and runs about 180 km northsouth starting just north of the US border. At the southern end of the valley lies Osoyoos, in the heart of a “pocket desert,” just approximately 50 km from north to south and 20 km across at its widest point.

This small desert is the northern extension of the Mexican Sonoran Desert and is Canada’s only desert.

The flora and fauna found here are very similar to that found a couple of thousand kilometres to the south. With less than 200 mm of rain a year, the area is prime habitat for the Calliope (ka-lye-AH-pee) Hummingbird, Canada’s smallest bird. On a visit to the Desert Centre, a 27-hectare Antelope Brush ecosystem just north of Osoyoos, I saw what the area looked like before the advent of irrigation. While the areas directly adjacent to the Okanagan River, which flows through the valley, are lush and green with fruit trees and vineyards, the sides of the valley are much drier and covered in

desert brushes, cacti and grasses.

And the hour-long hike on the boardwalk trail at the centre was VERY warm and dry; I knew I was visiting a desert!

Although most of the wildlife that lives here is only active at night, I managed to see several species, including the above-mentioned Calliope Hummingbird. This tiny bird measures just 8 cm from tip to tail, but travels an amazing 8,000 km each year to and from its winter home in Mexico. The male has a streaked neck that suggests nectar dripping from the bird’s bill. Although tiny, this bird plays an important role in the desert ecosystem. The plants that grow here produce colourful flowers with sweet energy-rich nectar and as the hummingbirds visit the flowers drinking this nectar, they spread pollen to fertilize the plants.

The desert may look lifeless at first glance, but on closer inspection a whole host of plants and animals can be found here and they all depend on one another for survival.

Many of the species live only is this type of habitat. Unfortunately, estimates suggest that only 9 per cent of this endangered ecosystem is left in the world. The remainder has been destroyed by overgrazing, used for agriculture, or been turned into golf courses and housing developments.

Flutter by two butterfly events in one weekend The weekend of July 7 and 8 offers two opportunities for the public to learn more about some important members of our ecosystem: butterflies and dragonflies.

On Saturday, July 7, the Norfolk Field Naturalists are looking for volunteers to help them conduct a butterfly count. Similar to a bird count, this all-day event involves walking around an area, spotting, netting, identifying, and counting as many species of butterflies as possible. Volunteers will be matched up with knowledgeable butterfly experts to determine what species

Nature’s Calling Environmental Education will be presenting their third annual Butterfly and Dragonfly Festival at Backus Heritage Conservation Area, north of Port Rowan, on Sunday, July 8.

Numerous activities of interest to the entire family will be part of a full schedule that runs from 10am to 3pm Guided hikes to look for butterflies, stream monitoring and pond studies, crafts, face painting, live butterflies, demonstrations and workshops are just some of the scheduled events. Presentations and workshops will help the public understand how these insects grow, how they benefit our environment, and how we can help them to do their jobs by planting butterflyfriendly gardens. The crafts are free except for the pottery, for

which an additional fee is charged.

The highlight of last year’s festival, which will once again be part of this year’s event, was the “Spread Your Wings” parade. Children and youth are invited to dress up as butterflies and flutter around the grounds accompanied by music provided by “The Ukeheads” and harpist Kristin Vollick.

Admission into Backus is $13/ carload and will give access to all the activities throughout the day.

I stopped by last week and chatted with owner, Jean Gordon, who ever since her aunt gave her, her first cook book many years ago… has enjoyed baking and her little shop proves

1/2 cup extra-virgin olive oil 1 teaspoon fresh rosemary leaves 1 teaspoon fresh thyme leaves 1 teaspoon fresh oregano leaves 2 teaspoons sweet paprika 2 medium cloves of garlic, smashed into paste 1 well-crumbled bay leaf pinch of red pepper flakes 1/4 teaspoon + fine grain sea salt 1 tablespoon fresh lemon juice Gently warm the olive oil over medium low heat in a skillet or pan, until it is just hot.

When hot remove from heat.

While the oil is heating, lightly pound the rosemary, thyme, and oregano in a mortar and pestle.

Stir the paprika, garlic, bay leaf, red pepper flakes, and salt into the oil.

Then add the bruised herbs and lemon juice.

Fennel You can use this now, but know – the oil just gets better as it ages over a few days.

Keep it in a refrigerator for up to a week/ten days-ish. It thickens up when cold, so if you need it in a liquid state, place it in the sun or in a warm place for a few minutes.

Makes ~2/3 cup.

4 Tablespoons (1/2 stick) butter, at room temperature Salt and freshly ground black pepper, to taste 1 Tablespoon minced shallots 1 Tablespoon balsamic vinegar Preparation: Use a fork to cream butter, salt, pepper, shallots, and balsamic vinegar together.

Cover or wrap and refrigerate or freeze until needed. This gentle butter goes well with baked or sautéed fish dishes, grilled mild fish, or steamed vegetables.

Yield: 4 to 8 servings
