The Biggest Island

Spanning 4,000 square miles, Hawaii's newest island is larger than every other island combined. During the 1600's, chief Keawe brought unity to Hawaii through diplomacy, and his great-grandson, Kamehameha, became the first chief of the unified Hawaiian islands. Each following chief promoted peace and prosperity by offering the idea of 'aloha' to visitors- a warm welcome to anyone who respected and honored their heritage.

Turtle Preservation

Hawaii is home to five species of sea turtles. The most common species that snorkelers and divers see on all the islands is the honu (green sea turtle), which lives near shore waters. Unfortunately, these turtles are impacted by their interactions with local fisheries, and have recently started to suffer from a disease called fibropapillomatosis, which causes the growth of white to blackish, cauliflower-like tumors. Kauai was the last island to join chief Kamehameha's unified islands. That spirit of independence remains today. Among the most popularly visited Hawaiian islands, Kauai is the hardest to access, and as a result, it is one of the most private places on the planet. Anahola is the site of an ancient surfing area that has remained popular to this day as one of the island's most beautiful beaches. A fun pop culture fact: the Kalalea Mountain overlooking Anahola is featured in the first shot of 1981's beloved film "Raiders of the Lost Ark." Island Style Shrimp Poke Bowl

'Poke' is a traditional Hawaiian dish that has gained a lot of popularity in recent years. The word 'poke' means to 'slice' or 'cut crosswise into pieces.' While traditionally prepared with tuna, salmon, or octopus, this recipe offers a unique twist by using shrimp.

This colorful poke bowl (sometimes called a 'rainbow poke bowl') is a wonderful mix of flavors and textures that is an easy-to-prepare, healthy dish that is perfect for warm weather. It is also highly customizable, so this is a great way to use leftover vegetables from your fridge, or substitute any ingredients as you like.

The variety of colorful vegetables, legumes, and protein makes this a well-balanced meal that can easily be enjoyed for lunch or dinner.

What You Need

1 lb shrimp, peeled and deveined

2 tsp extra virgin olive oil, vegetable oil, or avocado oil (your choice)

1 cup cucumber, peeled and sliced

1 cup carrots, shredded

– 1 cup cabbage or slaw mix

– ½ cup jicama, cubed

1 avocado, diced

2 roma tomatoes, diced

4 scallions or green onions, chopped

4 cups cooked white or brown rice

sesame seeds, for garnish

– 1 lemon for garnish

– 1 ginger root, shaved

– soy sauce

Makes 4 servings. Prep time: 10 minutes. Cook time: 10 minutes.

Directions

Season shrimp with salt and pepper.

Heat oil in a large pan. Once heated, add the shrimp. Cook over medium heat until no longer pink (approximately 2 minutes). Season the shrimp with your preferred dressing (or leave undressed).

– Divide rice between 4 bowls.

A Day With Karen And Her Family

Fashion stylist and co-founder of YouLookFab.com, Angie Cox, spent a day at our corporate headquarters in Los Angeles, California, touring all of the essential areas that make our company function and flow. Here is what she learned:

"Karen Kane is a family based business with Karen herself as head of Design. Her husband, Lonnie, is in charge of Production and Finance, and her eldest son, Michael, shares the title of Co-President with his dad. They've been in business for almost 44 years, so there's a generation shift happening. Karen's younger son, Robert, works on the Design team, and he also produces his own brand, as well as assists mom.

Karen and Lonnie built their offices almost 30 years ago and it is big (135,000 square feet). When we arrived, my husband, Greg, and I were warmly greeted by Karen and Michael at reception. Karen was casual, yet uber-chic, in jeans, a black silky blouse (her own design), wedged sandals and gorgeous chunky silver jewelry. Michael looked hip and cool in tapered jeans, a slim-fitting shirt, and industrial boots. Right from the outset, I knew that this was going to be a fabulous day. We headed to a

conference room that contained the final samples for the next six months of delivery. Michael laid out beautiful design illustrations and photos of fashion shoots on the conference room table.

Karen's team shoots many of the photos for their books, like the one you're reading, in this building and across the city of Los Angeles. I was itching to look through the rails of samples, but I restrained myself until later.

As I expected, my buying days came flooding back as soon as I walked into the Karen Kane building. Before long, my head was exploding with questions. Over the next few hours, Karen would answer each of them with great insight, humble grace, infinite patience, and a confident dignity that one rarely sees in the fashion industry. Without question, she is a leader at her game.

We started in the “Work Room”, which is where Karen’s design process starts. It is filled with trims, swatches of fabrics, drawings, sketches, photographs, outfits for photo shoots, and all sorts of other things that fuel creativity. Karen has a team of associate designers who translate her hand-drawn sketches into digital renderings of clothing. Karen remains focused on the way she has designed from the start- every style still starts with a small sketchpad and an old fashioned pencil. She sketches her ideas and sticks them on large white boards with fabric swatches. After mulling over her ideas, she has the styles made up in her Design Room. Once that happens, every design is tweaked to perfection, at which point, it receives an official style number. Each season, Karen sketches many designs, but only the very best make it onto her final line.

After that, we walked down the hall. Karen does not spend much time in her own office, because she spends most of it all over the company, fixing problems, solving issues, and ensuring that products come out exactly as planned. Michael told us that it is common to see a line of 5-10 people regularly waiting to speak to Karen at any point in the building.

A Summertime Favorite

Karen's Lemon Arugula Salad

Years ago, my dear friend Karen (yes, we share the same name), shared this recipe with me. It has become a favorite of mine, and I often make it for my family and our friends. It's a great go-to meal that you can easily modify by adding or removing as much of any ingredient as you like.

The quinoa recipe makes more than one cup, so I save the extra grains for my next day of cooking. Also, if you want to add some protein to this salad, grilled shrimp tastes great mixed into it.

I hope you enjoy this salad as much as I do; I'm sure it will become one of your favorites too.

What You Need

Lemon Vinaigrette

1 Meyer lemon, juiced (3 tbsp)

– 6 tbsp extra virgin olive oil

– ½ tsp honey

– ½ tsp Dijon mustard

½ tsp fine sea salt

¼ tsp pepper

Salad

6 cups baby arugula

1 cup quinoa (tri-color)

½ cup pumpkin seeds (pepitas)

½ cup pomegranate seeds

1 cup roasted corn (available frozen at the grocery store)

– 1 or 2 avocados, cut in ½ inch cubes

– 2 tbsp Cotija cheese, crumbled

Makes four servings. Total time to prepare: 25-30 minutes.

Directions

Make the vinaigrette.

In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, honey, salt, and pepper.

I use an emulsifier to blend the vinaigrette, but you can combine the ingredients however you prefer.

Make the salad.

– Prepare and cook quinoa ahead of time by bringing 1 cup of quinoa and 2 cups of water to a boil. Reduce to simmer and cover. Cook about 15 minutes until water is absorbed. Cooked grain should be soft and appear translucent. Spread out onto a sheet pan to cool.

In a large serving bowl, toss together the arugula, quinoa, pumpkin seeds, pomegranate seeds, thawed roasted corn, and avocado.

Drizzle the vinaigrette and toss the salad to coat all of the ingredients.
