Island Style Shrimp Poke Bowl

'Poke' is a traditional Hawaiian dish that has gained a lot of popularity in recent years. The word 'poke' means to 'slice' or 'cut crosswise into pieces.' While traditionally prepared with tuna, salmon, or octopus, this recipe offers a unique twist by using shrimp.

This colorful poke bowl (sometimes called a 'rainbow poke bowl') is a wonderful mix of flavors and textures that is an easy-to-prepare, healthy dish that is perfect for warm weather. It is also highly customizable, so this is a great way to use leftover vegetables from your fridge, or substitute any ingredients as you like.

The variety of colorful vegetables, legumes, and protein makes this a well-balanced meal that can easily be enjoyed for lunch or dinner.

What You Need

1 lb shrimp, peeled and deveined

2 tsp extra virgin olive oil, vegetable oil, or avocado oil (your choice)

1 cup cucumber, peeled and sliced

1 cup carrots, shredded

– 1 cup cabbage or slaw mix

– ½ cup jicama, cubed

1 avocado, diced

2 roma tomatoes, diced

4 scallions or green onions, chopped

4 cups cooked white or brown rice sesame seeds, for garnish

– 1 lemon for garnish

– 1 ginger root, shaved

– soy sauce

Makes 4 servings. Prep time: 10 minutes. Cook time: 10 minutes.

Directions

Season shrimp with salt and pepper.

Heat oil in a large pan. Once heated, add the shrimp. Cook over medium heat until no longer pink (approximately 2 minutes). Season the shrimp with your preferred dressing (or leave undressed).

– Divide rice between 4 bowls.

Top bowls with shrimp, jicama, cucumber, tomatoes, cabbage/slaw, carrots, avocado, and scallions.

Sprinkle with sesame seeds. If you would like, add a light drizzle of salty soy sauce and a pinch of ginger for taste. Serve immediately.

Feel free to add anything to this recipe- the options are endless: it is great with jalapeno, edamame, sriracha mayo, pineapple, mango, and every type of bell pepper... you can not go wrong!
