ITALIAN LEMON CAKE
Torta al limone- classic Italian lemon cake- is beloved for many reasons: it shines with a balance of sweetness and zesty tartness, it’s not overly complicated or fussy, and it multitasks with ease for brunch, tea time, birthdays, or as a light summer dessert topped with berries and powdered sugar.
What you need
– 1 1/4 cups granulated sugar
– 1/2 cup extra virgin olive oil (or neutral oil if preferred)
– 3 large eggs (room temperature)
– Zest of 2 unwaxed lemons
– 1/2 cup freshly squeezed lemon juice
– 1 3/4 cups (220g) all-purpose flour
– 2 tsp baking powder
– 1/4 tsp salt
– 1/2 cup whole milk (room temperature)
– Optional: powdered sugar or lemon glaze for topping
How to make it
– Preheat the oven to 350°F (175°C). Grease a 9-inch round or loaf cake pan and line with parchment paper.
– In a large bowl, whisk together the sugar, lemon zest, and eggs until pale and fluffy (about 2–3 minutes).
– Slowly add the olive oil while whisking continuously to emulsify.
– Stir in the lemon juice and milk until well combined.
– In a separate bowl, sift together the flour, baking powder, and salt.
– Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.
– Pour the batter into the prepared pan and bake for 35–40 minutes (or until a toothpick inserted in the center comes out clean).
– Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
– Some topping ideas: 1) Simple glaze: mix 1/2 cup powdered sugar with 1–2 tbsp lemon juice until pourable; 2) Classic finish: dust with powdered sugar right before serving; 3) Decorative touch: add thin lemon slices or edible flowers for a summery look.
