Chef Alvin Leung brings culinary innovation to Demon Duck

ALL ABOUT THE DUCK

Celebrity chef Alvin Leung, known as the Demon Chef, has brought his unique culinary approach to the Middle East with the opening of Demon Duck, his first restaurant in the region. The restaurant’s name is an amalgamation of Alvin’s fierce personality and a traditional Chinese dish - Peking duck. With Demon Duck, Chef Leung has crafted an innovative, pan-Asian menu that adds a creative twist to much-loved Cantonese, Malaysian and Chinese classics.

Located at Caesars Palace Dubai, Demon Duck’s interiors are inspired by the streets of Hong Kong and feature bold neon lights, graffiti, and contemporary art. The restaurant offers an alfrescostyle dining experience in a beautiful outdoor garden terrace, with an energetic ambience and playful theatricality that reflect Chef Leung’s high energy and eccentric personality.

Along with the food, guests can enjoy cocktails inspired by the nightlife of Hong Kong in a trendy speakeasy-style lounge. The menu offers a variety of signature dishes, including the signature shrimp toast, Demon hummus, and the signature wagyu tenderloin A8 – a flavour explosion of Singaporean pepper sauce, mushroom, tasty garlic chips, and aromatic pineapple shawarma for a sweet finish. But the star of the show is Chef Leung’s slow-roasted Demon Duck, which is aged for 14 days, slow-cooked to keep the meat tender, and then cooked at high temperatures to make the skin extra crispy. The duck is carved and sliced table-side and served with Calamansi buns, traditional pancakes, cucumber, green onion, and hoisin sauce. Available in limited quantities daily, pre-booking the duck is highly recommended.

Other dishes include the fillet of sea bass with sambal beurre blanc, salmon roe, and maitake mushrooms, the wagyu beef noodles with capsicum and bean sprouts, and the Demon fried rice with mushroom xo, porcini, maitake, olive leaf, and Singapore crunch.

The lunch is priced at Dhs228 per person for a three-course meal, with an option to add on a wine pairing, too.

A MATCH MADE IN CAESARS

Chef Alvin Leung has teamed up with his protégé, Chef Eric Chong, to curate four-hands dinners that take place twice a year, creating an experience that should not be missed. Chong, who won the title of Canada’s first MasterChef in 2014, went on to complete a prestigious apprenticeship in Hong Kong under the guidance of Chef Leung. The two mavericks then teamed up to open R&D in Toronto, which was recently awarded a Bib Gourmand by Michelin, following the success of Leung’s two Michelin starred Bo Innovation in Hong Kong and one Michelin starred Bo London.

The visit of Chef Leung and Chef Chong to Dubai marks a rare occasion for the local dining scene, offering an opportunity to get up close and personal with international icons and embrace an exciting culinary concept. THE FIRST JOB I EVER HAD…

… was waitressing in a restaurant. I loved every minute of it. Thinking about it, I suppose this is where I really fell in love with hospitality. The relentless pace, the meticulous attention to detail, the unfailing passion of the seasoned professionals I worked alongside… I soaked up every element of it with wide-eyed awe. My happy place, between people watching on hostess duty and learning to make my first mojito during bar service, was at the pass. It was here, with a front row view into the kitchen, where I truly began to appreciate the sheer amount of work that goes into making a dining experience so much more than a meal.

While many roles make up the expertly choreographed show that is hospitality, the chefs, for me, are the protagonists. Though traditionally chefs have adopted behind-the-scenes roles, increasingly they’re coming into the leading light of the culinary experience. And the Dubai dining scene is much better for it.

It’s these chefs, and the exceptional teams that surround them, that we salute in this issue. From p16, come dine with us in some of the finest kitchens in the city. From under-the-radar supper clubs to tasting menus of Michelin pedigree, these culinary creators have the business of hospitality down to a fine art.

Each month, we ask residents to share a guide to the UAE through their eyes, their favourite places, hidden gems, must-try dishes, local brands they love. This month, we chat to Samantha Wood (@foodiva), founder of impartial restaurant review website FooDiva.net and curator of dining experiences. After living in Dubai for 24 years, she shares her tips to making the most of UAE life.

Six Senses Zighy Bay is my favourite UAE staycation spot. Strictly speaking it’s in Oman, however, given the two hour drive from Dubai, in my book, this resort qualifies as local. Having returned so many times since my first visit back in 2011, I’ve lost count. A combination of pool villas, outdoor showers, endless beach for long strolls, five-star butler service and utter serenity makes this resort extra special.

My recent discovery is Josette, a French restaurant in DIFC with a Parisian-style, roaring 20s theme, complete with the most mesmerising singers and dancers, tap dancing included all the way from France. I love the press for Champagne button that actually works by lighting up the table number at the bar. This is classic French brasserie-style fare with the odd twist.

A traditional Chinese massage at Yin Yang Connection Spa is my favourite hidden gem. I frequent the JBR branch for a no-frills, deep tissue treatment by Bonnie that alleviates muscular aches. If I am feeling lazy, then I’ll book an at-home massage with Kaina Home or Solace Home Spa.

One restaurant that is close to my Greek-Cypriot heart is Mythos – the OG in JLT. Delicious mezze morsels aside and a wallet-friendly Greek wine list, plus the warmth of the service, sets this restaurant apart.

To switch off I love a pool day, preferably an adults-only pool with low volume music. I love La Baie’s pool at the RitzCarlton on JBR Walk where, swimming aside, I spend the day reading. A piña colada at the swim-up bar is mandatory. I’ll end the day with a sundowner at the hotel’s beach-fronted Latino restaurant Tamoka – paired with a choripan (Argentinian chorizo hot dog).

It may not be centrally located, but Sonara is a game-changing desert dining experience. The focus is as much on the experience as it is on the inventive gastronomy, where brash buffets and gimmicky belly dancing are replaced with magical entertainment and Middle Eastern fare with a fine dining edge. Experiences begin at 5pm, where you’ll watch the sunset as the golden orb drops behind the stretching dunes, sipping drinks and enjoying sandboarding, soft archery and hawk shows. The newest addition to Dubai’s immersive dining scene is Krasota, a collision of food and art at Address Downtown. Self-described as an ‘immersive gastro-theatre’ prepare to settle in for a meal that’s been designed to be photographed. Each course, or ‘act,’ is a homage to eight world renowned artists, with each dish complemented by interactive installations, 3D projections and custom AI designs that captivate each of the senses. Private dining in the sky at Shangri-La Dubai

Fast forward to 2023, and Kuwnal has fed over 10,000 people through her supper clubs, and collaborated with brands including XVA Gallery, 21 Grams and Dibba Bay. Inventive yet nostalgic, sophisticated yet wholesome, Moreish by K will never cease to amaze with her delicate harmony of flavours. Girl and the Goose

What do you know about Nicaraguan food? Well, with Girl and the Goose, you’re about to learn a whole lot more, as chef Gabriela Grasser has a modern take on this exciting cuisine. Past menus have included organic sea bass ceviche and and aguachile, but the beauty is in the presentation, which will have you snapping pictures before sampling. If you’re looking for a more intimate experience, she also hosts nights for two to three diners. If you’re partial to a great paella, Dubai residents Sultan and Kinda Chatila’s supper club is the one for you. Called Tano’s at 8, the couple use fresh, seasonal ingredients to prepare their paellas, switching up their menu every six weeks. More than just paella though, the culinary connoisseurs have a hankering for burgers too, coming in third place for the best burger at the World Food Championships 2022. Off the back of that success, a permanent burger restaurant, Eleven Green, is set to open in Dubai this month.

Haus of Vo

Home is where the heart is at Haus of Vo, as the supper club is lovingly prepared by your host, Madame Vo. You are invited to her DIFC home with impressive views over Dubai and served a meal that draws on her Vietnamese-German roots. “I grew up in the kitchen. As the child of restauranteurs, cooking brings me closer to my parents and serves as a reminder to never forget our humble roots,” says the chef. The evening includes eight diners – nine if you count her dog, Bailey – and is a great way to make new friends or more, as there are even single’s nights. On our visit, the menu included multiple courses ranging from a bo kho (48-hour oxtail tomato stew) to steamed dumplings that you can help cook.

Kuv’s Secret Supper Club

Before other supper clubs in Dubai hopped on the gravy train, Kuv’s Secret Supper Club was one of the first in the city. While we know who Kuv is – an architect-turned-chef – the location is always a secret and only revealed 24 hours before the event. Previous meals have been wide-ranging and included a kofte tabrizi, Eton mess and dishes that pay homage to his Rajput heritage. There’s just one catch: it’s by invite only – but you can DM their Instagram page for a secret code.

Ossiano feels like an underwater kingdom, with its sparkling chandeliers, royal blue carpet and white marble tables that look like shimmering pearls against the backdrop of The Lagoon, Atlantis The Palm’s looming aquarium. Tables are carefully arranged to ensure every table gets a front row seat to the 65,000 marine life swimming by. Everything about the design of the dishes, to the symbolic plates they’re presented on, to the way the staff recite chef Gregoire’s story with impeccable finesse, is expertly curated, and with each course you learn more and more about the mastery that goes into this 10-wave menu. It can be paired with alcoholic or non-alcoholic drinks.

Avatara

From the same family as Trèsind Studio comes Avatara, which replaced the aforementioned restaurant in Voco Hotel Sheikh Zayed Road. The first and only entirely vegetarian fine dining experience in Dubai, Avatara’s menu makes a case for the simple goodness of veggies. With a focus on Indian soul food, Avatara hopes to challenge preconceived limitations of a vegetarian diet with its colourful, 16-course tasting menu. Along with their veggie menu, they also have a completely vegan menu that adopts the same mantra. Both can be enjoyed with a wine pairing.

After a successful run at Voco Hotel on Sheikh Zayed Road, Trèsind Studio moved to the rooftop of Nakheel Mall last year. The resulting venue is one of understated elegance: an open kitchen, floor-to-ceiling windows, and white table clothed tables with seating for just 20. The new venue also seats just 20 people per seating, with an option of two seatings per night. Simply put, it’s minimal, purposefully done, we presume, so that your focus and attention remain on the intricately prepared dishes presented. This degustation menu of 16 courses, is a presentation of humble Indian ingredients elevated to an outstanding level.

Hōseki

Just nine seats make up the dining room at Hōseki, a speciality Omakase restaurant inside Bvlgari Resort Dubai. The name itself, which means ‘gemstone’ in Japanese, is an indicator of what a true gem this experience is, where dining takes place at the counter with front row seats to all of the Omakase mastery. The restaurant rips up the rule book when it comes to the menu – in that there isn’t one. Instead, you’ll have dishes selected for you by chef Masahiro Sugiyama across a two-hour omakase experience. Your preferences will be considered, but from there, it’s all in the hands of this culinary creator, with the freshest and finest ingredients taking centre stage as you journey through each course. There’re no walk-ins, so you’ll need to book in advance for either lunch or dinner.

Takahisa

This sleek Japanese restaurant might not exclusively be dedicated to its tasting menu (an a la carte offering is available), but it deserves a mention because the trio of Omakase menus are what guests head here for. The sophisticated restaurant centres around a counter, where guests perch up ready to indulge in one of three Omakase menus: sushi, Wagyu, or the combination menu of both. Each round of the 10-course menu illustrates the quality of ingredients, all the finest calibre. If rich flavours are your forte, you’ll delight in the high-grade ingredients that make up this menu: such as slivers of bluefun tuna and Kobe beef.

Moonrise

From master chef Solemann Haddad comes Moonrise, an inventive culinary journey that showcases the chef’s life through food. The (currently) unlicensed restaurant on the rooftop of Eden House, a modest residential building near Satwa, presents a multi-course menu, with dishes changing every three months. Just a dozen guests can embark on this flavour flight at any one time, which is exactly how the chef wants it. In this, he ensures that every guest gets to soak in the narrative of each course, down to the most intricate ingredients. What makes Moonrise truly standout is the man behind the menu, and despite being just 27-years-old, chef Solemann Haddad has become one of Dubai’s most accoladed culinary creators.

Mimi Kakushi

Mimi Kakushi has a leaveit-to-the-chef omakase menu, which takes place on weekdays from 7pm to 9pm. Competition for a spot at the six-seater chef’s table is fierce but it is here that Chef Go Nagano serves up a creative Japanese tasting menu across four courses, including a selection of sushi, sashimi, appetisers, a hot main, and dessert. A different kind of dinner and a show – guests surrounding the kitchen can watch a magnificent cooking performance. Mimi Kakushi’s Omakase experience is priced at Dhs1,100 per person inclusive of four courses and premium cocktail pairing.

Multi-award-winning Souk Madinat hotspot, Folly, has developed its tasting menu to reflect its culinary talents. Priced at Dhs475 for food only, and an additional Dhs445 with a wine pairing, it’s not as extravagantly priced as some of its competitors, and you won’t leave hungry either. Work your way through six tasty courses with a chance to broaden your palate and expectations (pigeon, anyone?).

Burj Al Arab’s fine dining French restaurant, Al Muntaha, has a degustation menu for those who enjoy the finer ingredients in life. REVIEW: SUMOSAN

A global icon joins the Dubai scene

The Dubai Edition already had some impressive names on its food and beverage roster – namely Inti and Ergo – but recently, globally acclaimed restaurant Sumosan, with restaurants in London, Riyadh and Berlin, also joined its ranks. For this reason, and the fact that we adore Japanese cuisine, we had to check it out.

Upon entering the hotel our eyes are immediately drawn to the grand fusilli shaped staircase that acts as centrepiece to the lobby. Onwards, we stroll into the restaurant’s dark and moody interiors that make for a deliciously intimate setting.

Seated at our table, Dimitri, our server for the evening, introduces himself and explains that Sumosan is a strictly

sharing-style restaurant, so dishes will be served to the middle of the table for everybody’s enjoyment. A tour through the menu’s signature dishes includes the classic Sumosan lobster surprise salad (Dhs190) and the famous crispy sushi rice pizza with salmon furikake (Dhs75).

In the salad, bite-sized lobster portions are accompanied by a delightful zesty and fragrant salad dressing.

The crispy rice pizza comes with a heavy dusting of spices atop freshly cut salmon and makes for a perfectly amalgamated bite. Beneath the salmon we’re greeted by thinly sliced cucumber, which elevates the intricate flavours of the plate. Our only note, we would have preferred the crispy rice to have been crisper.

Onto the sushi course and we’re jovially warned that if we dip the T&T (tuna and truffle) maki rolls (Dhs100) in soy, we should leave. Because all jokes come with at least a kernel of truth, we decide not to test the staff of Sumosan and follow their advice. The

combination of truffle mayo and fattiness of the tuna, carefully rolled in sushi rice and then incrusted with aromatic roe provides all the flavour you’d ever want in such a bite.

WHAT’S ON VERDICT

Sumosan is a love letter to Japanese dishes that keeps the culture, taste and traditions alive with immaculate flair.

Lastly, we delight in chu toro nigiri (Dhs80), a cut prepared from the fatty belly of tuna. We dip the nigiri, fish side down into the soy, let it sit for a short time, remerging for a melt-in-the-mouth experience.

So focused on the refined fare in front of us, we barely notice the restaurant filling up. But as our eyes greet the inbound dessert, the buzz is palpable. Our sweets are refreshing and light – an uncommon combination of melted white chocolate, mint leaves and pineapple (Dhs70), served on shaved ice. Every last drop of mouthful is scooped before we retire.

Another serving of celebrity chef excellence at Atlantis The Royal

The man at the helm of this restaurant is Costas Spiliadis, who has been credited with putting Grecian flavours on the international map over the last four decades. Since opening his original Estiatorio Milos in Montreal in 1979, he’s expanded globally with outposts in London, Athens, and New York, with Dubai now taking its place alongside those culinary capitals.

In Dubai, the restaurant is known simply as Milos, and sits at the heart of one of Dubai’s most lauded luxury hotels, Atlantis

The Royal. Milos has snagged the most dazzling setting of all the celebrity chefled restaurants at the property. As such, the design is grand and modern. Forgoing

the traditional taverna feel that most Greek restaurants adopt, the expansive restaurant is a magnificently large space, with double height ceiling, a standout show kitchen, and rows of tables that lead out to the terrace. The terrace is the real showstopper, jutting out over the water of the fountain, providing front row seats to the choreographed water and fire show that hypnotises diners at regular intervals.

The menu of Grecian and Mediterranean flavours is heavily focused on seafood, so we’re delighted to see an extensive display of fish and shellfish presented on a bed of crushed ice in the corner of the restaurant. With main course selected, we turn our attention back to the menu, kicking things off with half a dozen deliciously plump oysters (Dhs215) served with a zesty vinaigrette. On our visit, they’re Gillardeau, but we’re advised that this changes with local availability. The Milos Special (Dhs95) ends up being our favourite dish of the night, with paper

thin slices of lightly battered zucchini and eggplant served with moreish chunks of fried saganaki cheese and a creamy tzatziki. We fight over the final bite. The grilled octopus (Dhs190) is another delightfully well-balanced dish that’s all about simple flavours, with neat bites of tender grilled octopus served with a buttery Santorini fava.

WHAT’S ON VERDICT

Milos is up against some stiff competition at Atlantis The Royal, but its stunning location and focus on ingredients make it well worth adding to your culinary bucket list.

The salt crust sea bass (market price per kg) is theatrically deconstructed from its salt shell tableside, drizzled with olive oil and topped with capers. The fish itself is delicious, if a little bit drier than we’d hoped, but when paired with grilled vegetables (Dhs90) such as eggplant and peppers, we don’t notice.

Despite feeling suitably full, we can’t resist trying the Greek yoghurt ice cream (Dhs75). It’s light and deliciously sweet thanks to a drizzle of honey.

Chinese fine dining reaches new heights

If restaurants in Dubai were judged on views alone, Mott 32 would be up there with the very best in the city. The latest addition to Address Beach Resort, this New York-born Chinese restaurant has taken up residence on the hotel’s 73rd floor. While the space is large, the feeling is intimate, and the bar is separated from two dining areas with dark wooden beams and arches. There’s a lot of global influence all in one industrial-looking space.

For context, Mott 32 was born in New York, an elevated celebration of Hong Kong’s flavourful cuisine. The name is taken from the address of Manhattan’s first Chinese convenience store that opened in the 1980s. Then there are also Arabian influences which are an ode to the brand’s expansion into Dubai.

The resulting aesthetic is a venue of east-meets-west: high ceilings, dark woods, warm lanterns, ornate sculptures and neatly arranged foliage. Inside, the

vibe is moody and romantic, guests dine in cosy booths and at gold tables for two. Where this restaurant really shines is the outdoor terrace, a narrow strip of dazzling alfresco dining where tables are backdropped by mesmerising views of Ain Dubai and the stretching JBR skyline. It’s here we perch up to drink in the city vistas – the waiter has to return twice to take our order, as we’re almost unable to take our eyes off the panoramic views.

Aiming to challenge the perception of Chinese cuisine, there’s plenty of healthy options alongside the usual favourites, which have all been given a fine-dining touch through presentation and haute ingredients. The cucumber salad (Dhs55) swiftly arrives as a bowl of diced cucumber marinated in a zesty vinaigrette and topped with fragrant garlic.

A duck salad (Dhs85) is a brilliant recommendation – the shredded duck is

tender and plentiful layered with lettuce, beetroot and topped with crispy taro and a citrus truffle dressing. We enjoy the main, a bowl of king prawns (Dhs170), the most. They are simply seasoned with black pepper and garlic, given a welcome sweet note with swirls of soy sauce. You’ll want to order any main with side dishes, and we’d order the sauteed string beans mixed with diced wagyu (Dhs85) again.

There’s only a handful of choices for dessert, but we like the look of them all, eventually deciding on the almond and chocolate (Dhs85). They arrive as four neat chocolate swirls designed to look like sweet xiao long bao’s with oolong tea. A sophisticated evening brunch with seaside Italian style

Bussola sits in an elite group of Dubai restaurants that is still as popular now as it was when it opened almost two decades ago. In 2022, the casual-chic Italian eatery at The Westin Mina Seyahi added a seaside inspired sister restaurant, Mare by Bussola; a more upscale, adults-only iteration of the original, with a private pool and a focus on coastal Mediterranean cuisine.

It’s here we find ourselves on a Friday night for Notte, the restaurant’s new evening brunch. By 7pm, when brunch begins, the temperature has dipped to within the perfect degree for alfresco dining. But rather than being seated right away, guests gather for an hour aperitivo on the lawn. Here, canapés of neat tartlets and focaccia topped with creamy buffalo mozzarella,

pesto and dried tomato are plentifully passed around. A chef wanders between groups, preparing Gillardeau oysters while guests catch up over glasses of bubbles, which are never far from full thanks to a Fiat boot full of Prosecco bottles on ice. It’s a lovely way to wind guests into the weekend, Italian style.

When we move to our table at 8pm, the format of the remaining courses is explained: sharing starters, a choice from three pre-main courses, a sharing plate for the main event, and a board of desserts. The starter selection is an extensive showcase of raw seafood. Our favourites are the red prawn ‘non-pizza’, with raw prawn mixed with tomato pulp, stracciatella cheese and oregano topped with light crisp bread and the diced Hokkaido scallop ceviche dotted with avocado cream and topped with caviar. The next course, a red prawn and burrata tortellini, is al dente pasta packed with light burrata and a hint of red prawn covered in a subtle yet tasty lobster sauce.

The only disappointment comes with mains. Il mare in un piatto, a board where pieces of turbot, mackerel, red mullet, cuttlefish, octopus, and red prawn are laid out, misses the mark on presentation. The pieces of turbot and mullet lack flavour, and while we enjoy the prawns, there’s only enough for one each. We enjoy other bits, like the tender octopus and cuttlefish, especially with a bowl of fresh seasonal vegetables.

Desserts fare much better, a sweet array of Italian signatures laid out on a wooden board. The tiramisu is the just-right balance of coffee, cream, and soft sponge; a zesty lemon tart is topped with an airwhipped meringue; and the classic Italian cannoli is crunchy and buttery.

A special mention should be given to the impressive array of cocktails that are swiftly served until brunch ends at 10pm. A fruity passionfruit martini, refreshing frozen bellini and others are available on tap alongside all the house classics.

With more than 50 restaurants to his name, Nobuyuki “Nobu” Matsuhisa clearly works hard to keep his global brand feeling exclusive and aspirational. In Atlantis, The Palm, Nobu has been successfully operating for 14 years, having recently elevated its offering (both literally and figuratively), by moving to the hotel’s 22nd floor Bridge Suite. It’s only fitting then, that in neighbouring Atlantis The Royal, Nobu has stepped it up yet again with a first for the brand, a Nobu beach club.

Nobu by the Beach has an indoor space for dining, but the real highlight can be found outside. A multi-level pool spreads across the space surrounded by various sun loungers, day beds and luxury cabanas. It is in one of these stunning cabanas that we find ourselves on a Saturday afternoon, in awe of the luxurious setting. The air-conditioned cabanas are priced from Dhs6,000 (including a welcome platter and a bottle of Champagne) and can fit up to eight guests. Complete with a huge living space, private bathroom with shower and your own shaded terrace, it has everything one could need for the perfect pool day.

The full restaurant menu is available to order to the cabanas (while a limited pool menu serves the sun loungers), so we get stuck in with starters. From a choice of ceviches, we pick the sea bass coconut (Dhs80), which is traditionally Peruvian in flavour, served in half a coconut.

Crunchy dried corn pieces top the dish, which also has cubes of sweet potato, slices of cucumber and more than a hint of chilli. Special mention has to go to the surprise dish of the day, the crispy shiitake salad (Dhs90). Sublimely simple, the dish consists of ice gem lettuce, dried shiitake mushrooms, but it’s the lashings of goma truffle dressing that really takes it to the next level.

The vibe of Nobu by the Beach is more subdued than we expected, although its website does describe it as a ‘haven of relaxation’. So, don’t expect party vibes at this chic poolside spot. Regular sun loungers are priced at Dhs250 per person from Monday to Thursday and Dhs300 from Friday to Sunday (nonredeemable), while day beds are Dhs1,000 per couple on all days.

He’s a British-Indian podcaster, author, viral content creator, life coach and former monk –we’re talking about none other than Jay Shetty. A horror comedy that’s gorily, cartoonishly-violently brilliant

For those of you with TikTok-savaged attention spans, here’s our elevator review: Renfield feels like a dialled-up, unashamedly brazen Dusk Till Dawn and Brooklyn Nine-Nine crossover project with Nicholas Cage as an archetypal Dracula and Nicholas Hoult on ghoulishly good form.

Most of us have experienced a toxic relationship at some point in our lives. It could have been a romantic entanglement, an unhealthy workplace dynamic, or just siblings lighting the touch-paper of familial trauma in a way that only people who sleep in horizontally tiered bedding can. There’s usually asymmetry within the tryst, one partner being the more toxic (obviously not you), but the truth is this sort of relationship can only exist for as long as there is a codependent element to it. There must be an enabler.

That relatively dense psychological premise (co-dependence) – its identification and eventual rejection of – forms a large part of the spinal column of Renfield. It’s a Dracula (Cage) movie, a nouvelle vague Nosferatu feature that feasts on the rich narrative vein of what sort of effect bestowing immortality on a loyal servant (Renfield, played by Hoult) might have. A gift that was coercively

sold on a platform of gaslighting, false promise and pyramid scheming. It’s a live autopsy on how feelings of resentment, mistreatment and being undervalued might ferment into an unhealthy, employer-employee relationship.

At the beginning of the film we’re given a whistlestop monochrome montage of Dracula movies through the ages with Cage and Hoult’s characters superimposed onto the frame. Renfield has been a part of Dracula lore since the jump, appearing in the OG Emo source text, Bram Stoker’s 1897 novel Dracula, and a good percentage of the celluloidal reimaginings since. As you might expect from a movie that trades under the character’s name, this story is largely seen through the eyes and set to the monologuing of arch lord of the undead manservant, Renfield.

Our tale unfolds in the modern era. Being over a century old now, it’s an epoch the two central characters are struggling to adapt to. And, in addition to his shortcomings as a nurturing boss (honestly, the state of those one-on-one evaluations), it’s widely known that the malicious old Count also

suffers from a severe sunlight allergy, and because of PTSD from attempted wooden stakings, EpiPens are not an option.

So it’s Renfield who is delegated the task of going out and sourcing victims to feed the Transylvanian tyrant’s bloodlust (and life force). He finds a ready supply in the souls that force individuals into emotional support groups. But it’s an occupation that becomes immeasurably more complicated when Renfield’s recruitment project inadvertently overlaps with the operations of a local gang boss (Teddy, played by Ben Schwartz) and a principled, maverick cop (Rebecca Quincy, played by Awkwafina).

Renfield runs thick with themes of love and duty, and little Freudian tickles under the chin – a treatment on manipulation, Stockholm Syndrome of the mind, selfempowerment, and catharsis. But, at its blood-flushed heart, it’s a horror comedy, that celebrates each side of that dual heritage with a reverence, than can only come from a true love of the genres.

Each cast member brings their own form of humour to the movie. There’s the menacing gothic self-aware camp of Cage’s Dracula; the chaotic pratfalling gangster Teddy is ostensibly a ‘made-guy’ version of Jean-Ralphio (Schwartz’s character in Parks and Rec) and fully deserves his own spin off.

Awkwafina’s comic timing and rapid fire delivery is demonstrative of a craft master; but it’s the wrylydry Britishness of Nicholas Hoult that impresses most. Like discovering your perfectly serviceable striker just happens to be a brick wall goalkeeper in comedy, it appears we’ve stumbled upon optimal Hoult. Despite a decidedly straight and serious filmography, Hoult’s final form might just be ‘comic actor’. Renfield flows in tangents

and sparks with farce, it’s pepper sprayed with incredible fight sequences choreographed in deliberately audacious violence. Cockroaches and bug viscera are to Renfield, what spinach is to Popeye. And after powering up, we’re showered in comic splatter and gore galore, there’s even a moment where a pair of aggressors are kebabbed by the ripped-off arms of another foe. And that feels like as good-aplace as any to leave this review.

Your character is a bit of a loveable rogue. If he was to get his own spin off, or prequel, what would it be called?

His first name is ‘Tedward’ so I think the show would be called that, just because I think it’s the stupidest name I’ve

They gave me quite a bit. Once I got the role and we started chatting about stuff, we kind of worked on it together. But the biggest leniency they gave me was in the scenes themselves, Chris would let me improvise in just about every scene, so we’d do it as is, then we’d find little moments that weren’t in the script and explore those, and that was fun. My background is in improv, so it was very fun to use those muscles.

When it comes to luxury hotels, location matters. Usually, you’d find a highend property either right in the heart of the action, or out in a remote spot surrounded by nature. Park Hyatt Milan falls into the former category, an actual stone’s throw from the grand Duomo cathedral and Galleria Vittorio Emanuele II, Italy’s oldest active shopping gallery. Embedded into the iconic Milano architecture, within a building that dates back to 1870, the hotel opened in 2003 and recently underwent a renovation, meaning that after two decades, the beauty and sophistication of the property remains the ultimate focus.

While the entrance is subtly grand, inside is where Park Hyatt Milan makes its first statement. The lobby lounge, La Cupola, sits under a nine-metre-tall glass cupola, flooding the room with light. Echoing the spherical window is the curved seating area, where guests can enjoy breakfast, lunch and dinner, as well as cocktails.

We stay in a King Deluxe room, which looks out onto the closely positioned building next door. But what it lacks in views, it makes up for in interiors. We could happily move into the spacious marble-clad bathroom which oozes pure luxury. The bedroom is equally decent-sized, with a small dining area next to the large, comfortable bed. The colour palette throughout the hotel is warm and inviting, taking in natural light wherever possible.

Breakfast is a treat for the senses, with a mix of both buffet and a la carte dishes. Everything is executed to the highest standard, to suit the mostly business travel clientele in-house during our stay. hyatt.com

UNMISSABLE EATS

All’antico Vinaio

There aren’t many places we’d queue for 45 minutes in sub-10-degree temperatures for, and yet we soon find ourselves on the pavement outside All’antico Vinaio, wondering if this hyped sandwich shop, with outposts in New York and LA, will live up to its reputation. Inside, the tightly packed counter displays a wide selection of sandwich fillings, including fresh and high-quality meats, cheeses and vegetables. High energy staff dance around each other moving in an effortless production line like the trained professionals they are. Our sandwich sets us back 10 Euros (approx. Dhs40) and we’re swiftly ushered outside to eat it so more people can fit inside. The sandwich is a classic focaccia, crisp and crunchy on the outside, light and bubbly inside, and thin enough to ensure the filling to bread ratio is just right. We’ve gone for sliced honey roast ham, Emmental, pesto, and sundried tomatoes. Maccheroni –Cucina Italiana

In the Risorgimento area is a restaurant famed for one signature dish. Here, the humble carbonara is served in a silver pan alongside a complimentary glass of Prosecco and a warm smile. The homemade pasta comes as large al dente rigatoni tubes, with chunky, juicy bacon pieces served extra crispy on top, before being doused with Parmesan. The Dome Rooftop

For us, rooftop bars are a must on every new city visit. And in Milan, they don’t come chicer than The Dome. Perched atop the building famed for having a huge lit-up Gucci sign, guests are treated to views of Duomo from above. The space is beautifully boho, with rattan chairs, tasselled parasols and pretty pink foliage. Inside, the greenery continues, cascading over cosy booths finished in brown leather and Aztec patterned cushions. CONTEMPORARY LIVING

Hyatt Centric Milan Centrale

Catering to easy-going business travellers or explorers with style, Hyatt Centric offers contemporary living in the heart of the city. A short walk from the metro station, the cool, colourful lobby is adorned with graffiti murals and bright furniture. The rooms are a little more subdued, with brown leather quilted headboards, sophisticated grey furniture and large windows overlooking the city. Downstairs boasts a spacious coworking space, with a large, shared desk and cosy reading nooks to chill out in. Hyatt Centric’s rooftop bar, Sky Garden, was closed on our visit, but is opening this month for the summer season. Elsewhere, guests can enjoy dinner at Rivington Cucina New York, the hotel’s upmarket Italian American restaurant inspired by the allure of Manhattan. The space is dark and atmospheric, with white clothed tables and luxurious red leather seating. THINGS TO SEE AND DO

See the ancient canals

The Naviglio Grande (Grand Canal) is one of Europe’s oldest navigable canals, dating way back to 1177. Milan was once traced with waterways similarly to Venice, allowing architects to send marble via boat to build the Duomo. In order to build Milan into the bustling city we know today, a network of canals had to be developed, which was carried out between the 12th and 17th centuries. Many became buried in concrete in the 20th century, as boats were replaced by cars and trains. However, you can still enjoy a piece of this unique history at Naviglio Grande. The area is filled with bustling cafés and restaurants, as well as local market stalls.

Have an immersive spa experience

The viral TikTok that put this spa on the map showed the world exactly why this experience is a must-try in Milan. Not your average spa, QC Termemilano is a converted train station that offers a five-hour spa experience across a range of rooms and treatment options. There’s an outdoor jacuzzi, sauna train, sleep room, and the now-famous thunderstorm simulation pool. While the small plunge pool is bubbling with water, the surroundings create the simulation of a storm, complete with heavy rain falling from the roof, crashing sounds and flashes of light, while LED screens show clouds, lightning and auroras of colour. Shop in the world’s oldest mall

A trip to Milan simply isn’t complete without visiting Galleria Vittorio. Even if you’re not looking to shop (or window shop) the gallery itself is an incredible landmark. Opened in 1877, it’s known as the oldest mall in the world, and is covered by a stunning arched glass roof. Some of the world’s most luxurious brands and boutiques have a home there, further adding to the overall aesthetic. Found close to Milan’s other main landmarks, Teatro alla Scala and Duomo di Milano, it’s easy for tourists to tick off all three attractions in one go. The area is filled with top restaurants and bars, so you can enjoy a full day out without leaving.

Step back

With twice-weekly direct flights from Dubai to AlUla, there really has never been a better time to visit this incredible destination. Emerging from our three-hour flight, we feel as though we’ve stepped back in time, thanks to AlUla’s alluring preservation of its ancient roots. The drive from the airport takes us through quiet, dusty roads and winding valleys, surrounded by unique rock formations, which have naturally weathered to reveal artistic patterns we can’t take our eyes off.

Our first stop is Habitas AlUla, a sustainable villa-only resort with three room categories, each offering cosy cabinstyle accommodation with an outdoor terrace and rustic wooden furniture. Like a scene from a Wild West movie, we’re

surrounded by dusty mountains, sand and an overwhelming sense that ‘we’re not in Dubai anymore’. The resort is built in a large upward-sloping part of Ashar Valley, but guests can make use of golf carts or electric bikes to get around. At the top is Tama, the hotel’s all-day dining restaurant and its outdoor pool. The chilly weather puts us off taking a dip but the undeniable beauty of the infinity pool against the mountain backdrop has us reaching for our phone to snap pictures. Tama’s expansive menu features a fusion of European and Middle Eastern dishes, all prepared and presented to an impeccable standard. On a chilly AlUla evening the slow-cooked lamb shank was a heart-warming treat, while in the morning we for-go the selection of eggs for a deliciously indulgent French toast coated in fresh berries, nuts and caramel sauce.

AlUla’s enchanting offering leaves travellers wanting more

Town to really immerse themselves into the history and heritage of this fascinating location.

Another must-see spot in AlUla is Hegra – Saudi Arabia’s first UNESCO World Heritage Site. Home to 111 monumental tombs, Hegra is sure to take your breath away. We took the sunrise tour which begins at 6am. We hop in a ‘vintage’ Land Rover (the cars are actually brand new but Land Rover custom-built the vintage-looking cars just for Hegra), and drive to Tomb of Lihyan, Son of Kuza – a 72-foot-tall tomb that has become the symbol of AlUla. In our uninitiated haste, we presumed that this was the extent of what there is to see, but over the 90-minutes that followed, our eyes were opened to the incredible display of tombs around the area, as we listened intently to our guide sharing insights into the rich heritage of Hegra. What we loved most about this experience is the fact that their excavations are ongoing, meaning that the archaeological team are discovering new pieces of history all the time. Rather than absorbing information passed down from decades ago, we’re told about new discoveries learned just months ago.

Back at Habitas, our time is filled with moving between the collection of cultural pop-ups, including the famed in-ground trampolines (Manal AlDowayan’s installation called Now You See Me, Now You Don’t), where we work up a sweat before stretching out in the wellness centre. The Thuraya Spa provides welcome relief to our tight knots and sends us into a soft slumber of deep relaxation.

We’re staying in an Alcove Villa, which has a private wooden terrace offering a close-up view of the sandstone canyons. Inside, an industrial yet ultra-comfortable king-size bed takes centre stage, facing the floor-to-ceiling windows for maximum views. The bathroom continues the rustic theme, with wooden flooring and a powerful shower both inside and outdoors, and more huge windows to give the impression of being closer to nature.

While we could quite easily stay in the resort throughout our stay, we’re here to explore the city, starting with Old Town. The first thing that strikes us as we being to stroll around the area, is just how bright and captivating the stars are. Even our outdated iPhone 12 manages to capture the night’s sky in incredible detail. After craning our neck from walking with our face to the solar system, we return to earth and take in the beauty down here, too.

Old Town has been meticulously preserved since it was abandoned in the 1970s. Its labyrinth of tightly packed streets and ancient mud houses give an accurate impression of how residents lived here in the 12th century. Back then, AlUla Old Town became an essential settlement along the pilgrimage route from Damascus to Makkah, and the market traders once used for exchanging goods, has been revitalised into an authentic evening market housed by local sellers. A sublime resort that’s all about the guest experience

LOCATION

Situated on one of the hottest stretches of beach in Dubai, the Marriott Resort Palm Jumeirah takes some beating. To the front is Palm West Beach, with its popular promenade and all-day entertainment. To the left is the dramatic skyline of Dubai Marina. To the right, the graceful fronds of Palm Jumeirah curve off into the middle distance, while the resort’s private beach offers picture perfect access to the Arabian Gulf.

LOOK AND FEEL

Sleek, modern and spacious is our first impression. Upon entry you’re greeted by a cavernous foyer and there’s a feeling of expansiveness throughout the property. There’s also a sense that the first Marriott Resort in Dubai straddles two worlds –that of the leisure seeker and the business traveller. It’s all big windows, straight lines and contemporary design and has made the most of its stunning shoreline location.

ROOMS

We stayed in a Palm Suite, which is as fabulous as it sounds. There’s a living room and dining area with floor-to-ceiling windows and remarkable views of the Arabian Gulf. The large bedroom features a king size bed, the fluffiest of pillows, a 55in TV, and its own balcony. The ensuite bathroom, meanwhile, has a separate bath and shower and there’s even a further washroom just off the suite’s main hallway.

FACILITIES

Where to begin? Well, there’s an outdoor swimming pool that’s complemented by the Myami Pool Bar & Lounge, a Saray Spa that pays homage to Arabian healing practices, and a private beach with sunbeds and cabanas. We enjoyed an hour-long couple’s massage at the Saray Spa, which left us both feeling rejuvenated. There’s also a fitness centre, a business centre, and a kid’s club for those with children.

FOOD AND DRINK

This is where things get special. First up, there’s San Francisco import Señor Pico, which is located on the Palm West Beach promenade and serves both Californian and Mexican cuisine. It’s fun and friendly and the dishes are wonderful. Inside, it’s the rustic trattoria Cucina that hits all the right spots. It’s all fresh Italian ingredients and crispy bread for soaking up olive oil. In total, there are 10 restaurants, bars and lounges across the resort, with breakfast served at Levantera.
