Personal Connections Matter Most In today’s competitive digital world, I’m supposed to tell you that our magazine is on the cutting edge of technology. SP IN THE SPOTLIGHT community DRAGON FANS GOT PUMPED UP AT SECOND ANNUAL COMMUNITY PEP RALLY The Second Annual Dragon Football Community Pep Rally was held at Dragon Stadium last month. The evening included activities and events such as a silent auction, gourmet food trucks, bounce houses and giveaways. There was even a special Fan Zone where guests could get a free autographed football or take a picture with an Emerald Belle on the 50-yard line. The event was packed with performances by the award-winning Emerald Belles, cheerleaders, Crew and Marching Band. The freshmen, JV and varsity football teams were announced on the field.

CARROLL ISD RANKED NO. 1 SCHOOL DISTRICT IN TEXAS Carroll ISD is the top district in the state of Texas, according to annual rankings from SchoolDigger. In 2014-15, the district enrolled 7,771 students from pre-K to 12th grade, had five ranked elementary schools, two ranked middle schools, and a rank score of 0.995 (which is eight points better than the previous year). The Dragons top Dallas’ Highland Park ISD at No. 2 and Texarkana’s Red Lick ISD at No. 3. Ranking updates are approximately yearly, usually the same day the Texas Department of Education releases its test scores. District rankings are calculated as follows: for each district, SchoolDigger determines a Rank Score by averaging the rank percentile for each of the schools in the district. This calculation is made for all districts, and then the list of districts is sorted by Rank Score. The district with the highest score is ranked No. 1. This year, that district was Carroll ISD. MICHELLE MOORE APPOINTED TO CARROLL ISD SCHOOL BOARD In July, the Carroll ISD school board appointed Michelle Moore as the newest Place 1 Trustee to fill the vacancy left after Trustee Craig Rothmeier resigned in May. Moore will serve on the Board until the May 2016 election when voters will elect a candidate to serve out the remaining final year for Place 1. Moore can decide whether or not to run in the May 2016 election. The seat will come up for election again in May 2017. Moore has been an active volunteer in Carroll ISD serving in multiple capacities. She is a board member on the Carroll Education Foundation and serves as the Grants Committee Chair. Moore was also a member of the district’s Strategic Planning Committee and is active in the PTO. This year, she was recognized as the Eubanks Intermediate School Volunteer of the Year. SOUTHLAKE POLICE CREATED “EXCHANGE ZONE” Last month, the Southlake Police Department designated an area outside the department as an “Exchange Zone” for Southlake residents. According to MySouthlakeNews.com, the designated area is two marked parking spaces on the southeast corner of the DPS Headquarters (600 State Street) that are under 24-hour surveillance. The Exchange Zone can be used for child custody exchanges, as well as for the exchange of items bought or sold by individuals. Additionally, residents can always make exchanges in the front lobby of the Southlake Police Department, which is staffed by a licensed Peace Officer Monday through Friday, 8 a.m. to 5 p.m.

SOUTHLAKE RESIDENT SELECTED FOR DALLAS STARS DEVELOPMENT CAMP Southlake resident Brendan O’Reilly was invited by the NHL Dallas Stars to attend the 2015 Development Camp, which ran from July 7 to July 11 at the Dr. Pepper StarCenter in Frisco, according to a release sent in by Jim O’Reilly. Brendan graduated from Carroll in May. He is the youngest player invited to the Dallas Stars annual camp. A Southlake resident for the past 16 years, Brendan began playing hockey with the Dallas Stars house league program at the age of four. He’s also played on teams that won Tier 1 USA Hockey State Championships, USA Hockey Regional Championships, and advanced to play in the USA Hockey National Championships.

WESTLAKE EARNED ESTEEMED SCENIC CITY CERTIFICATION The city of Westlake received Gold level Scenic City Certification, joining 20 Texas cities earning a five-year certification from 2015-2020. The Scenic City Certification Program recognizes cities with strong scenic infrastructure standards. Cities can apply to the program to have its standards measured against more than 70 model standards of design and development of public roadways and public spaces “We are appreciative of this recognition,” said Westlake Town Manager Tom Brymer. “Westlake has worked hard to develop strong aesthetic standards that reflect the unique, natural beauty of our community.”

FUSION ACADEMY OPENED ITS DOORS IN SOUTHLAKE Fusion Academy, an accredited private school serving grades 6-12, opened in Southlake on September 1. This non-traditional school model customizes each student’s curriculum to accommodate wherever they may be in their education. Course material is presented at the student’s pace and delivered in a way to best support their strengths and challenges. Fusion Academy Southlake, located at 301 State Street in Town Square, will be the sixth Fusion Academy in Texas and 33rd in the nation. The Dallas and Plano schools opened last year. The decision to open the Southlake location was made after research indicated a strong need in the area for a one-to-one educational option. CALL A RIDE SOUTHLAKE HELD VOLUNTEER ROUNDUP Call A Ride Southlake, or CARS, hosted a Volunteer Roundup in July at the CARS office, located inside the Department of Public Safety building (2100 W. Southlake Boulevard). Founded in 2000 with the aim to maintain a level of independence for senior citizens and disabled adults in the area, CARS provides transportation for medical appointments up to 25 miles away. It also provides transportation for social and personal purposes. “Sometimes our riders just need to do some shopping, banking or get a hair cut,” CARS volunteer Lisa Adam said. SOUTHLAKE RODEO TEAM KICKS OFF SECOND SEASON THIS FALL Southlake got a brand new rodeo team in 2014 thanks to the ambition of six Carroll students. Adding two freshmen to the squad this year, the team entered its second season under the direction of Head Coach Michael McGibson. Part of the North Texas High School Rodeo Association, the girls compete almost every weekend from September through June. Most of the rodeos are held at the Saginaw Arena, and each one is hosted by a different school. The rodeo offers many events including Bull Riding, Bareback, Saddle Bronc, Calf Roping, Goat Tying, Breakaway, Steer Undecorationg, Ribbon Roping, Walk Up Goats, Steer Wrestling, Team Roping, Barrels, Poles and Chute Dogging.

JAYDEN GOLDBERG WOWED THE CROWDS AT STARS & STRIPES The National Anthem is always music to our ears – but especially on the Fourth of July and when it is performed by someone as talented as Jayden Goldberg. This 15-yearold Southlake resident helped kick off the Southlake Stars & Stripes Celebration by performing the National Anthem after a flyover by a WWII A-26 invader. Jayden has taken voice lessons since age nine and has specialized in classical music since she was 13. Jayden’s musical talents have led to many opportunities including performing for the Dallas Stars and the Texas Rangers. She has even performed as a soloist in Saint Peter’s Basilica in the Vatican. Wherever her talents take her, we’re proud to say that Jayden is from Southlake and that she helped make this year’s holiday one to remember.

SOUTHLAKE RESIDENT PRODUCED FILM THAT INSPIRED THE LATE THOMAS KINKADE The independent film, “Beyond The Farthest Star” and The Thomas Kinkade Company announced the national city-by-city release of the film and unveiling of a new painting inspired by the story. “It is an honor to have our film associated with an artist whose work consistently reflects belief in home, family and hope in a time so callous and cynical in its social, political and artistic expression,” said writer/ director Andrew William Librizzi. Librizzi worked closely on the film with Southlake’s own Ben Dane, who served as the executive producer of the film. GRACE GALA SCHEDULED FOR OCTOBER The largest singular fundraising event for Grapevine Relief and Community Exchange (GRACE), the GRACE Gala, will take place October 10 and will consist of gourmet food, fine wine, superb entertainment and unparalleled auction items. “The event is a spectacular night, but to see how it changes the stories of families to hope from despair; there is no greater reward than that,” said Executive Director Shonda Schaefer. SHANNON BREWERY MARKED ONE-YEAR ANNIVERSARY WITH TWO IMPRESSIVE ACCOLADES Shannon Brewery celebrated two big wins in its inaugural year: a Gold Medal at the U.S. Open Beer Championships for its Chocolate Stout and a Silver Medal for the Irish Red at the Commonwealth Cup, which is an international brewing competition. This all came just before Shannon Carter’s Keller-based company celebrated its one-year anniversary on August 29. The celebration consisted of special beers from its first year of production along with some new brews for customers to taste. Food trucks included Hick’s BBQ, FnG Eats and Steel City Popsicles. KIMBALL PARK HOTEL CONSTRUCTION UNDERWAY Construction on Cambria Southlake DFW North in Kimball Park, a mixed-use development at Texas 114 and Kimball Avenue, has officially begun, according to mid-July reports by the Fort Worth Star Telegram and Dallas Morning News. The building is to be constructed by approximately January 1, 2016, according to JLL, a financial and professional services firm specializing in commercial real estate and investment management. The building will have an on-site 175-room Cambria hotel with a fitness center, conference center and executive boardrooms. THE GINGER MAN HOSTED ANNUAL BELGIAN BEER TASTING The Ginger Man commemorated Belgium Independence Day with a Belgian beer tasting in July. Soliant Health holds an annual contest to rank the 20 most beautiful hospitals in the country based on the architecture and landscape, as well as unique features and photogenic qualities. The results come from a record-breaking 388,505 votes. This is the seventh year Soliant has put together this list. Texas had four hospitals on the list, three of which were Forest Park locations. t has to start somewhere. Noshing on a favorite dish at a neighborhood dining hotspot or enjoying a cold beer at a nearby brewery, you might wonder how it all began. We caught up with three local families in the food and drink industry and learned a thing or two about the beginnings of a family-owned business. Whether it’s the ambition of one entrepreneur, the joint effort of a husband and wife, or the desire of a child to carry on her father’s legacy, it takes support from family to pursue a dream. SCOTT WOOLEY SoCal Tacos Being diagnosed with cancer was a wake-up call for Scott Wooley, founder and owner of SoCal Tacos in Grapevine. But maybe not in the sense you’d think. It wasn’t until the cancer miraculously went away that Wooley and his wife, Susan, decided to pursue their foodie ambitions. They hoped to not only bring authentic Southern California fish tacos to Grapevine, but most importantly, to be a testimony to others. “In 2010 I was diagnosed with a nerve tumor in my left shoulder,” Wooley says. “I was told chemo, radiation and surgery were not an option. I was dying. One day our pastor prayed that God would heal me, and the next day I woke up with no pain.” Wooley went to see the neurosurgeon September 23 and the doctor was amazed at how well he looked. When Wooley returned October 30, the doctor said the tumor was gone. “My wife and I didn’t know what that meant – if it was going to come back,” Wooley says. “But we did know that we had a testimony to share with others and give them hope.” Being the foodies that they are, Wooley and his wife decided the best way to “love on people” would be through food. “Food is a universal language; it breaks down barriers,” he says. SoCal Tacos was created in the Wooley’s kitchen, essentially out of a craving for authentic Southern California fish tacos not to be found anywhere they looked. Cashing in all their chips, as Scott puts it, they entered the restaurant business starting with a food truck in 2011. And in 2013 they opened up shop in Grapevine. “Our company culture is to ‘Give love, receive love and repeat the process,’” Wooley says. “If we can testify our story through food, then we can give hope to others.”

GARY HUMBLE Grapevine Craft Brewery With the craft beer business booming over the past few years, many home brewers’ dreams have turned into realities. But as Gary Humble, founder and owner of Grapevine Craft Brewery, knows – you don’t get far without an entrepreneurial spirit. Humble remembers the moment he knew he was ready to take his home brewing hobby to the next level. “It was a Saturday morning epiphany in 2012,” he recalls. “At that moment, I knew I wanted to pursue my brewing beyond my garage. I jumped in headfirst, as I tend to do, and the right doors opened.” What Humble remembers most about the year he would start his business is the support he had from his wife, Andrea. Not just his go-to taste-tester, his wife was also a sounding board for all Humble would need to hash out if Grapevine Craft Brewery was to become a reality. “We were pregnant with our second son while I was going about starting our brewery—officing out of the home,” Humble recalls. “At the time, I had a one-year-old son, and he’d crawl around the room while I worked. KATHLEEN TOLBERT RYAN Tolbert’s Restaurant Chili. Ingredients and preparation of the heatedly discussed dish are often hashed out at family reunions throughout the country. In other words, people, specifically Texans, are pretty particular about their chili. But Frank X. Tolbert Sr., a notable historian and author who worked for The Dallas Morning News for more than 30 years, decided to make order out of culinary chaos in the late 1960s, according to his daughter Kathleen Tolbert Ryan. And he used the chili con carne recipe he created and documented in his book, A Bowl of Red: The History of Chili. Tolbert Sr. founded the World Chili Championship in Terlingua, Texas, with Wick Fowler in 1967. Some say this would be the catalyst for all chili cook-offs to come. But it wouldn’t be until 1976 that Tolbert Sr., along with his son Frank X. Tolbert, would bring a Bowl of Red to the Dallas masses. The original Tolbert’s was located in the heart of downtown Dallas on Main Street across from El Centro community college. Ryan, who at the time was working toward a master’s degree in special education at the University of Texas at Dallas, would later find herself attending culinary school at El Centro in 1977—when she began working at the restaurant. “It was a wonderful experience working at that first Tolbert’s,” Ryan says. “That is what made me want to continue on with the restaurant, and eventually open the Grapevine location with my husband in 2006.” The restaurant continues to keep its family-owned atmosphere. Ryan’s son, Steven Frank Ryan, has been working at Tolbert’s in Grapevine for many years. He started as a busboy and has now become a manager. Of course, Tolbert’s features its famous Bowl of Red (chili con carne), along with chargrilled steaks and burgers, signature salads, tortilla soup and many other Southwestern and homegrown specialties.

We sat down with Texas State Representative Giovanni Capriglione to learn about the accomplishments of the most recent legislative session. By Audrey Sellers

I

f you’re a legislator and you really want to know what’s on constituents’ minds, just go door to door and ask. That’s what Giovanni Capriglione does. As the State Representative for Southlake and surrounding areas, block walking is one of his favorite ways to stay connected to the community. Capriglione has some extra time to be out ringing doorbells and chatting with citizens now that the 84th Texas legislative session is in the books. For 140 days from January 13 to June 1, 2015, all 150 members of the Texas House of Representatives were in session, debating hot-button issues such as education and taxes. On a sunny day in June, we caught up with Capriglione at Keller Town Hall, which is where he works when he’s not in Austin. Everything in his office emanated state pride – from the giant Texas flag behind his desk to a smattering of historic Texas photographs on the walls. Capriglione serves approximately 175,000 residents in House District 98, which includes Southlake, Keller, Colleyville, Grapevine and Westlake, along with portions of Haslet, North Ft. Worth and Trophy Club. He has always had a passion for politics, although his path to becoming a State Representative is as winding as a Texas country road. After earning a degree in physics, Capriglione worked as an electrical engineer designing computer chips. He then attained an MBA in finance and went to work for a private equity firm, eventually branching out on his own to manage various private equity funds through his company, Texas Adventure Capital. He recalls 9/11 as the turning point he needed to get involved in politics. “That was the first big moment for me,” he says. “I felt that I had to get more engaged in the political process.” Capriglione ran for State Representative in 2010, but was not elected. It didn’t take long for him to get back on his feet. In November 2012, he was elected with more than 85 percent of the vote and was sworn into service in January 2013. He was re-elected for a second term in November 2014. “As you start to get involved in the political process, you realize you’re doing it all for the people,” Capriglione says. “Everything we do is for Texans.” In this most recent legislative session, Capriglione served on three committees: Appropriations, Investments and Financial Services, and Local and Consent Calendars.

On the Appropriations committee, Capriglione helped manage the state’s $210 billion budget. On the Investments and Financial Services committee, he handled a variety of bills related to banking, securities and credit. And on the Local and Consent Calendars committee, Capriglione had the opportunity to vote yes or no on bills, deciding whether or not they move on. “By serving on these committees, I was really able to help our local communities,” he says.

Better Education for Texans Capriglione was also part of an ad hoc work group committee that focused on the formulas relating to how school financing happens. “Texas is so varied. The needs of our district are different than other districts,” he says. “In our area, we want to make sure we focus on education and education financing. I moved to Carroll ISD for the schools [Capriglione has three young daughters], and I know many other people did as well. It’s important for me as a legislator to keep this in mind when I go to Austin.” Carroll ISD is ranked the top district in the state of Texas, according to SchoolDigger, which ranks schools based on test scores provided by the Texas Department of Education. Though the Dragons enjoy a promising educational landscape, education isn’t flourishing in all parts of the state. To help promote quality education throughout Texas, Capriglione pushed for higher standards for teachers and more accountability for schools. “There are multiple ways to become a teacher, and I felt that the barrier to become a teacher through a certification process was too low,” says Capriglione. He filed a bill that will increase the standards necessary to complete the teaching certification program in Texas. Capriglione also filed a bill that will create a preK program that helps mostly foster kids, homeless children, and kids of active-duty military parents. If we can get quality education to children at the earliest age possible, the benefits compound quickly,” he says. “It’s going to be an impactful tool here in Texas to be able to give kids a head start on their education.” When it comes to testing, Capriglione aimed to ease the pressure on students by reducing end-of-course exams from 15 to seven. “We found that we were putting kids in a box,” he says. “They may be super bright, but they just don’t do well on tests.” The classroom isn’t the only focus when it comes to education reform; Capriglione worked to create additional training for high school counselors, making them better prepared to help students determine their career paths. “This requires a different skill set,” he says. Creating a future that’s bright for young Texans is important to legislators – and the funds back up this commitment. “We spend the most amount of money on education,” says Capriglione. Texas schools spent an average of $9,559 per student last school year, according to figures compiled by the National Education Association. Capriglione works hard to create a better Texas for young people for a variety of reasons. For starters, he has three daughters: Cristina, Helen and Natalie. And, he simply enjoys volunteering with kids. Capriglione is a former Odyssey of the Mind coach, and he often visits Government 101 classes to teach students the voting process. “Kids are our future, and any opportunity I have, I get involved with them,” he says. Keeping Texas Strong Economic development was another key issue of Texas’ 84th legislative session. With nearly 1,000 people moving to Texas every day, according to the U.S. Census Bureau, Capriglione aims to ensure that our area is an attractive place to work and live. SOUTHLAKESTYLE.COM

“We want to make sure this area remains the hotbed of economic development and vibrancy,” he says. “We vote on so many bills, but for me, and most of legislature, jobs is job number one.” Texas is in constant competition with other states and other countries when it comes to attracting new businesses. But in this legislative session, Capriglione and other legislators made the Lone Star State a whole lot more appealing by slashing the Gross Margins Tax by 25 percent. Most corporations in Texas pay this business tax, and those with more than $1 million in revenue will see their business taxes reduced by a quarter. “Ultimately, I hope we’ll be able to cut the Gross Margins Tax completely,” Capriglione says, “but I’m glad we got rid of a fourth of it.” This session, Governor Greg Abbot and Texas Speaker of the House, Joe Straus, received the first award from the Texas Enterprise Fund to bring the Kubota Tractor Factory to the city of Grapevine. The move is expected to bring nearly 400 new jobs to Texas and $51 million in capital investment. Additionally, Texas legislators eliminated fees for 16 different professions such as architects and real estate agents. “Many professionals have to pay a fee to have a license and work,” says Capriglione. “Though it’s not technically a tax, I call it an income tax because if you have to pay money to go have a job, then it’s effectively that.” What’s Next for Texas Depending on your views, Texas’ 84th legislative session brought some big improvements to residents of the Lone Star State. But Capriglione isn’t resting on his laurels; he’s out knocking on doors, getting to the heart of what matters most to the people of Texas. “There will always be issues coming up, so we’ll be constantly gathering the needs and suggestions of constituents to be able to address it in the next session,” he says. Although, when you’re fortunate enough to live in Southlake, the needs often aren’t many. “When I was going door to door, one voter said, ‘What issues could we possibly have? We live here,’” Capriglione says. “I love every part of Texas, but the quality of life in Southlake is second to none. I’m glad to call it home.” SEP 15 • 63

ehold, fried everything. Since the tradition first began in 1886, the State Fair of Texas has been a rite of passage for anyone living in or visiting Dallas during the fall. One of the largest fairs in the nation, the State Fair of Texas is much more than just its unique — and sometimes, outrageous — food options. Sure, there are funnel cakes, fried Snickers, turkey legs, Fletcher’s original corny dogs and hundreds of other deep-fried creations to sample, but take a closer look and you’ll see a celebration of all things Texan. Once you’ve filled up on eats and drinks, explore interactive exhibits focusing on agriculture and livestock. Take a stroll and discover art-deco structures. Stop into the Auto Show and take in nine acres of new and concept automobiles. Come by the Chevrolet Main Stage and jam out with local and national acts like The Voice champion Craig Wayne Boyd, Christian rapper Lecrae, The Beach Boys and more. And don’t forget to head to the Midway to challenge your fear of heights with more than 70 rides to choose from, including the iconic 212-foot Texas Star Ferris wheel. With all this excitement, there’s no way you’ll be able to pack it all into just one day, or even a weekend. Taking place September 25 through October 4, the State Fair of Texas is the longest-running fair in the United States, offering 24 consecutive days of carnival games, rides, food, crafts, shopping and entertainment. Whether you’re a wine lover, simply enjoy a glass on occasion, or (gasp!) don’t even like wine, there’s something for all palettes at the largest wine festival in the Southwest. Historic Downtown Grapevine will play host to the 29th Annual GrapeFest, September 17-20. Sample sips from across Texas, premium Oregon wines and even high-end premium Argentina wines. Take part in the People’s Choice Wine Tasting Class, or sink your toes into the action at GrapeStomp, where you’ll have the chance to stomp approximately 18 pounds of grapes for two minutes — with the teams that stomp the most juice gaining eligibility in the Grand Championship StompOff. Tennis lovers can head to the courts throughout Grapevine and Colleyville for the GrapeFest Tennis Classic, featuring multiple events for both junior-level and adult players. And for those with an affinity for bubbly, the Champagne Terrace offers the perfect shaded escape to enjoy your favorite sips, while the Champagne Cork Shoot-Off is just plain fun. Not just a 21 and older event, there’s plenty of entertainment for the entire family, including delicious festival foods like snow cones, cotton candy and root beer floats, four stages of live music, and a KidCave featuring everything from aquatic creatures to a LEGObuilding playground. All restaurants on Grapevine’s Historic Main Street will also be open throughout the festival. Come early for free admission all day Thursday or until 5 p.m. Friday, and children age five and under are free anytime. We’ll raise a glass to that!

For more than three decades, brilliantly colored hot air balloons have taken to the Plano skies for an incredible display celebrated by spectators of all ages. Join in the tradition during this weekend-long event, featuring everything from delicious food and fireworks to a half marathon, 5K or 1K Run/Walk paved by hot air balloons. Nestled on the bank of the Trinity River in Ft. Worth is Woodshed Smokehouse, a tribute to all things grilled, cooked and smoked. It’s a glorious hybrid of smoky, meaty barbecue and fresh, zesty Tex-Mex right in the heart of Cowtown. Texas’ favorite chef and Food Network regular, Tim Love, opened the restaurant in 2012 with a goal to bring familiar and exotic meats to the table, and that’s exactly what he did. Upon walking in to Woodshed, it’s impossible not to notice the shiny glass window where the “animal of the day” – could be goat, boar, venison – slowly rotates on a spit. It’s immediately clear that Woodshed is no joke when it comes to meat. The establishment blurs the line between indoor and outdoor seating. General Manager David Lace describes it as “a patio venue with a party atmosphere.” No matter where you’re seated, you’ll feel like you’re in a beautiful backyard, relaxing at a wooden table admiring the river while overhead fans waft the scent of smoky meat.

Woodshed doesn’t take reservations, which makes for a high activity level as servers bustle around wearing shirts scripted, “I’d totes smoke that” and hopeful singles linger around the bar. Luckily, our group came in on a Tuesday night and was able to be seated right away. It’s casual and primitive, yet trendy, but the menu – a piece of paper held to a slab of wood with two rubber bands – tells a more complex story. Boasting three smokers, two rotisseries, two wood grills, and four to five rotating woods to smoke menu items on, Woodshed’s flavor palette would raise the eyebrow of even the most experienced foodie. “We use four main woods to smoke with: hickory, oak, mesquite and pecan. Each wood has a distinct profile and is best for certain items,” Lace says. Each day, Woodshed chooses a new animal and a new sausage, which shapes some of the menu offerings, while classics like the Beef Brisket and the Smoked Red Fish are offered all the time.

Lace says the meats can elicit lots of questions from customers, with the daily rabbit/rattlesnake sausage the most bizarre. To start, we ordered the Smoked Hummus, made with pit master fat (sounds repulsive, but tastes delicious) and the Smoked Whitefish Dip. Both came with camp bread (a puffy, soft bread that’s cooked over an open flame) and fresh tortilla chips. The hummus was slightly spicy, and the dip was the perfect amount of fishy and smoky. The animal of the day was pig, which made for some delicious Pulled Pork Tacos. The sausage was elk, which was a nice addition on top of the Woodshed Burger. The manager brought out some Lamb Brisket as we chomped down our entrees. The boldest in our group raved about its tenderness. We also enjoyed some greens that proved that at Woodshed, vegetables have bite, too. Both the Crispy Brussel Sprouts with fermented lime vinaigrette and Slow Smoked Cauliflower with creamy mornay sauce were sinfully good. Woodshed features a “Brewery of the Month” on their drinks menu, fit with 25 craft beers on tap, beers in cans, wines on tap and specialty cocktails. It’s rare to spot a group of people not taking advantage of the adult offerings, which gives the atmosphere a rowdy and fun feel. Woodshed hosts live entertainment Wednesday through Sunday with local up-and-coming artists to top off the vibe. As required by its landlord, Woodshed must use eco-friendly products due to the proximity of the river – but this restriction is well worth it in light of all of the unique opportunities the location provides. “We have trail access for bikers, joggers and runners,” Lace says, which has led Woodshed to co-sponsor two fun runs each month. The frequency of joggers-turned-diners even spurned the creation of a Pup Menu. That’s right. Your furry friend can enjoy various sizes of bones dipped in pit master fat and “Chef Tim Love Rainwater” that are sure to get the drool going. Considering its location, atmosphere, service and food, Woodshed boasts more than just a hip restaurant; it’s a unique experience. Being only about a half hour away from Southlake, you have no excuse; put on your cowboy boots, grab some friends, and head over to Woodshed for your own taste of Ft. Worth.

Get Fresh Frezko offers some of the freshest Mexican fare this side of the border.

Freshness is what sets Frezko Taco Spot apart from other taco joints in the area. That’s what the name means: fresh taco spot. There are no freezers or can openers in this hidden gem of a restaurant that’s tucked off Southlake Boulevard near 114. Owner Eliazar Salinas believes in serving all-natural, authentic food exactly how you’d get it in Mexico. No Tex-Mex. No fusion. Just straight-up street tacos and homemade Mexican meals. Frezko Taco Spot’s menu features Nuevo Leon-style food, which is different than most Mexican restaurants in Dallas/Ft. Worth. “This style is more grilled meat and more ranch-hand food – kind of like cowboy food here in Texas,” Salinas says. When you step inside, you order just as you would at other taco places – going down the line choosing your meat and toppings. Options include a burrito, tacos (four to an order), salad, and papa asada, which is a Texas-sized baked potato. You get eight ounces of your choice of barbacoa, carnitas, carne asada or pollo asado. For non-meat eaters, there’s a vegetariano option. A variety of toppings including grilled onions, pico de gallo, and sour cream are available to suit all taste buds. Tortillas, which come raw from South Texas, are grilled, never steamed. “You won’t see fajitas in Mexico. It’s carne asada or pollo asado,” Salinas says. “Asada means grilled. Carne is beef and pollo is chicken. Sometimes people get confused by that, but we try to stay as authentic as we can.” Simplicity is a common theme across the entire menu at Frezko Taco Spot. All the butchering is done in-house; nothing is pre-cut. It’s important that the flavor of the meat shines through in each dish, which is why Salinas uses seasonings sparingly in the kitchen. “Meat has its own flavor, and I believe that to the fullest,” he says. “Here, you actually taste the beef, chicken and pork – not all the seasonings.” Even the guacamole only has three ingredients to let the avocado flavor speak for itself. But don’t expect to eat that guac with a heaping mound of tortilla chips. This restaurant doesn’t serve chips and salsa. “That’s an American thing,” Salinas says. Instead, patrons are served a cup of spicy bean soup, Frijoles Charros. It’s cooked from scratch with bacon and a bit of heat, and it’s served as an appetizer before the meal. You won’t have to wait long for the main event, though. Food is hand-delivered to your table in five to 10 minutes. When it comes to beverages, the restaurant offers bottled sodas that use pure cane syrup from Mexico. Or, if you want to treat yourself, try an ice-cold beer or authentic sangria, and enjoy your meal on the patio. When you’re done, the staff clears your table so you can sit back and relax. “I want to make sure all customers know they’re welcome,” Salinas says. If you’re craving some authentic south-of-the-border flavor in a welcoming environment, you can get it right here in Southlake. You just have to know where to find it.

Meet Aslam Khan:

The Turnaround King THIS SOUTHLAKE RESIDENT STARTED WITH NOTHING AND MADE AN EMPIRE OUT OF RESCUING STRUGGLING FRANCHISES. HERE’S HIS STORY.

W

e’ve all heard the saying that you must walk a mile in someone else’s shoes before you can really understand who they are and what they do. But when you’re speaking to Aslam Khan, a highly successful entrepreneur and one of the top franchise holders in the country, it really isn’t that simple. Although today the 60-year-old owner of Falcon Holdings, LLC is known for being the king of the turnaround story for struggling franchises including Church’s Chicken, Piccadilly Cafeteria, Long John Silver’s, A&W and Hardee’s, it hasn’t always been that way. Now living in a sprawling 16,500-squarefoot home set on three acres on the west side of Southlake, Khan recalls a much different time – one growing up in the small village of Fatehabad, Pakistan, where shoes and most human necessities were merely a fantasy. Humble Beginnings “Poverty in the United States is different than poverty in third-world countries,” Khan explains about the conditions he faced as a child. “There, when you say ‘poor,’ you mean no running water, no clothes, nothing at all.” With no schools to attend in his village of about 500 people, Khan walked up to six miles each day on the mountain to attend school in the nearest town. By age 12, he not only walked, but also swam his way to education, crossing a three-mile river without a bridge. “You’d take your clothes off, hold them up, and in the other hand you’d hold your bag,” Khan explains matter-offactly. “Then you’d put your clothes back on when you got to the other side and go to school.” The son of poverty-ridden farmers and one of 10 children, Khan knew that any sort of future he hoped to create for himself was in his hands. Though schooling was not required for children in his village, he quickly realized it was the only opportunity he had to spend his life living rather than simply surviving. “When I came to my senses as a kid, I was thinking, ‘This is not a lifestyle. I’m sure there is better than this somewhere,’” Khan recalls. “As I got into middle school,

I started reading more, and I realized education was the only way I was going to get out of this mess. So I started planning and planning, and finally I broke off and left.” The Pursuit of a Better Life At this time, when Khan decided to leave his family to pursue a better life, he was only 14, but had already experienced more hardships than any child ever should. He decided now was the time to reach for more, and he never looked back. “I went to the nearest city, which was then a two- to threehour walk and a three-hour bus ride, so six hours away total,” Khan says. There he completed high school and college, and landed his “first real job” at the U.S. Embassy in Pakistan’s capital city of Islamabad after seeing an advertisement for the job. During his seven and a half years there, Khan received his first introduction to American culture and the restaurant business, which would become his life’s work. But first, he had to prove himself, both in Pakistan and in the United States. “I was a bartender, then I became head of dining and was the general manager at the U.S. Embassy when I left for America,” Khan recalls. His hard work had paid off in Pakistan, but when he settled in Southern California 30 years ago, he quickly learned that without local references, he might as well be starting from scratch. “I didn’t have time to waste because I didn’t have a lot of money,” Khan says. So, he picked up the first job he was offered as a dishwasher at a local Church’s Chicken franchise, but it wasn’t long before co-workers began noticing his full potential. “As people got to know me, they put me in a Manager-in-Training program, and I became a general manager again,” he explains. Never one to get discouraged, Khan said the key to his eventual success was to keep moving forward. “Every day, I would just pick up my stuff and keep on going,” he says. Finding His Stride It only took a few years for Khan to have the chance to prove himself in America when he was

given the opportunity to help a failing Church’s Chicken franchise get back on its feet. He did that, and then some, helping them to not only stabilize, but also to profit. Soon he became the go-to guy for franchises on the rocks, turning around businesses facing financial trouble, as he put to use the skills he gained through the years he spent as both a persistent student and a determined employee. By 1999, he had taken on the role as primary owner of Falcon Holdings, LLC, purchasing 100 Church’s Chicken units along the way. Now, more than 15 years later, Khan continues to do what he does best, currently owning approximately 300 franchises for a variety of restaurant brands, which he will help rebuild while simultaneously selling and purchasing others. He permanently moved his headquarters to Southlake in 2008 after an extensive three-year search for the ideal location for his wife of 22 years, Hilda, and their son, Abraham, an incoming freshman at The University of Texas at Dallas this fall. So why did Southlake reign as the winner? “It’s the best place to live – close to the airport, the weather is good, and the people are really friendly,” Khan says. Not that he has had much free time to soak in all that Southlake has to offer. Never one to shy away from a challenge, Khan has made it his mission to not only purchase failing franchises, but to connect with his employees on a personal level. It’s the value he sees in these employees that really makes him stand out, and one of the reasons he was awarded both the prestigious Entrepreneur of the Year from the International Franchise Association and the American Dream Award from Multi-Unit Franchisee Magazine this year. Success Shared “My philosophy is not to change people, but to change expectations,” Khan says. “You need to help them, you need to make sure that people are number one.” Khan is fond of using the phrase, “I’m not in the chicken business. I’m in the people business.” And it’s easy to see why. Countless stories could be told of his turnaround business triumphs, but where he really shines is in helping his more than 13,000 employees excel. “I love helping people,” Khan says. Putting his money where his mouth is, so-tospeak, Khan has awarded 25 percent of the profits from about 15 of his franchises to their senior managers, celebrating the hard work and loyalty they have put into his 88 • SEP 15

company. And you won’t find Khan taking the afternoon off for a round of golf; instead he’s at his desk from morning until night, and he visits various franchises on the weekends. His advice to aspiring entrepreneurs? Keep pushing. “If you really, really, really want to do something, focus,” Khan says. “Everybody has a dream, a goal, an expectation, but to take it to the other side and call it success you have to have extreme discipline.” You also can’t forget where you started. “Since I came from extreme poverty, I had a mission that nobody in my future generations should be poor,” Khan says. “So I’m moving with that mission.” To fulfill that promise, Khan is completely funding the educational needs of all his siblings’ children, ensuring his nieces and nephews will never have to face the extraordinary hurdles he once faced. “I think if it had ever registered in my head that I had ‘made it,’ I would have stopped working like I am now,” Khan says. “But I keep poverty right in front of me all the time. It keeps me going forward through all the hoops, all the time.” Maybe one day Aslam Kham will retire to his Southlake home to spend quiet afternoons working in his garden — a favorite hobby of his during his rare free time. ore than one million American tourists are expected to descend on Cuba this year, according to sources at the recent CUBA Tourism International Fair. Travel Agent Lily Pousa of Southlake-based Horizonte Caribe was in attendance and can’t wait to share all Cuba has to offer.

Other hotels on her muststay list include Hotel Parque Central and any of the Melia chain of hotels and resorts. Countless museums and historical markers speckle the Cuban capitol. If you choose the Scenes & Celebrity tour, you’ll enjoy walking tours and jaunts through the city in classic cars, reminiscent of Cuba during the 1950s. While in Havana you’ll have the opportunity to sip a mojito at La Bodeguita, the drink’s birthplace, or to take a seat in the very bar—El Floridita at the hotel Ambos Mundos—where Ernest Hemingway spent his afternoons sipping his favorite drink, the daiquiri. But famous cocktails aren’t all you can enjoy in Havana. When grabbing lunch or dinner, visiting authentic Cuban-owned restaurants called paladars is the only way to go. Pousa recommends her clients try Paladar Rio Mar, which offers Cuban food “with a twist.” It has a unique view of the Bahia de la Habana (Havana Bay) and Vedado, which was an affluent part of Havana during the 1950s. Although Havana may be the perfect starting point to your Cuban getaway, keep in mind that Havana serves as a gateway to many other cities full of tradition.

Off the Beaten Path Lily and her team can set up catered tours of Cuba touching on specific locations and activities chosen by clients, but remember, Horizonte Caribe has a number of already put-together agendas. Another point to note is that not all locations on the tour may be named specifically. For example, one tour may lead a group of clients to a certain art studio, but on another trip to the same city, clients will be taken to an entirely different one. There’s always something different to do, see or explore. On the City & Country tour, clients will not only explore Havana, but the country towns of Cienfuegos and Trinidad as well. You’ll explore the countryside towns not only by visiting locations within them, but through interaction with the people of the region. For example, in Cienfuegos you’ll visit a cigar factory and learn about the importance of tobacco to Cuba’s economy.

Trinidad, which is a UNESCO World Heritage Site, is considered the “crown jewel” of Cuba’s colonial cities. On this leg of the tour, you’ll be once again immersed in the culture by speaking with locals— not just the tour guide. The most popular package offered by Horizonte Caribe is the Salsa Workshop. Clients travel to Cuba to take Afro-Cuban dance lessons by day and practice their moves at various salsa clubs by night.

What to Expect Horizonte Caribe is not your typical travel agency. Pousa and her team recognize that it is much easier to immerse clients in the culture of the country in small groups of five to six rather than larger groups. In addition, the contacts the travel agents have in Cuba allow for a truly customized agenda. Your trip will be fitted to you and your fellow travelers. Once in Cuba, you will be matched with English-speaking guides to take care of the necessary translations. And one final note Pousa wants potential tourists to know: “Don’t expect to stay at any beachside resort and spend your days basking in the sun.” Americans are still not allowed to rent or stay at beach houses and resorts. While it is possible to visit the seawall and the beaches, it’s best to make it just one of the many stops on your Cuban vacation. Besides, according to Pousa, you can visit Cuba five times and still not see all this beautiful country has to offer.

DRIVING AWARENESS Former Major League Baseball player, José Guzman, is hitting the links to find a cure for Alzheimer’s.

Thirty years ago, José Guzman was chasing wins in the Major Leagues. Today, the Colleyville resident and former Texas Rangers pitcher is chasing a cure for Alzheimer’s disease, the sixth leading cause of death in the United States. He founded Guzman23 Foundation, a nonprofit that provides financial assistance to the families of those suffering from Alzheimer’s.

On October 12, the Foundation will host its annual charity golf tournament, Putting for a Purpose, at the Trophy Club Country Club. We caught up with Guzman to talk about golf, giving back, and his inspiration to get involved with raising Alzheimer’s awareness.

Q: You started Guzman23 Foundation as a tribute to your mother, Maria Mirabal Guzman. Tell us about her.

Q: What do you want the community to know about Alzheimer’s?

A: She had me at 45 years old. I was the baby. I went everywhere with her. She had raised seven other children. I watched her work so hard around the house caring for all my brothers and my sister. Before I was born, she did odd jobs to save money to buy a lot in the neighborhood where I was raised. I watched both of my parents sacrifice so much for us. But I was so close to my mother. She was the most beautiful woman in the world. I loved to just sit and visit with her. She was such a sweet soul. When my mom got dementia and then Alzheimer’s, my sister took care of her the entire time. I decided I wanted to do something to help.

A: I can’t think of one person I’ve met who hasn’t been touched by this disease, and the cases of it are increasing. We are going to have a major problem on our hands in the coming years if we don’t find a cure. What I am doing with Guzman23 Foundation is simply trying to help the ones who are suffering now and bring awareness to everyone of the resources available when they are facing this horrible disease.

Q: What do you find most rewarding about your work with the Foundation?

A: Lunch and dinner. Drinks on the course and afterwards. Celebrities from various sports activities in the area. Hand-rolled cigars. Live music by Steve Helms. A great raffle giveaway provided by Park Place Lexus for a golf trip for two to play in a championship golf tournament at Pebble Beach including airfare, hotel and transportation. And the most fun-filled, laid-back, fast-moving golf tournament in DFW.

A: When we deliver meals or groceries to some of the patients through the years and get to visit with the caregivers. Even though many of them don’t understand what’s going on, I can tell it’s a comfort to them. Also, when we provide caregiver services to so many patients who are in their final stages of Alzheimer’s (they remind me of my mother so much). And last, being able to help elderly patients who don’t have family members caring for them. Just knowing we have been able to help them even though they don’t understand where the help came from. Q: How did the Foundation get its name? A: The “23” represents the 23 chromosomes that detect genetics and if you are genetically dispositioned to have Alzheimer’s disease (or other diseases). The fact that it was also my number in baseball was merely a coincidence, albeit a significant one.

Q: Tell us a little about how funds are allocated. A: My wife and I spearhead most of the fundraising activities along with our wonderful, committed Board. They have all been with us since the beginning and believe in our mission. Our Board and many of our committee members have all been affected personally by this terrible disease. We base our decisions on need first and then our ability to serve, being a relatively small foundation. While we’d like to be able to help everyone we hear about that is suffering from Alzheimer’s disease, we tend to allocate funds to those who are in the most dire need of help immediately. We see some very tragic circumstances. We are involved with many of the memory care facilities in the DFW area and they notify us when they see an extreme need. If we have the funds, we provide them.

Q: The fifth-annual “Putting for a Purpose” charity golf tournament is next month. What can attendees expect at this event?

Q: What are some other ways the community can get involved? A: We always accept donations through our website, Guzman23Foundation.com, and bereavement funds set up in lieu of flowers can be a great way to honor a loved one who has suffered from this disease. We will begin planning next year’s tournament later this year and the funds raised from corporate sponsorships help tremendously in our efforts. Q: What is your hope for the future of Alzheimer’s research and treatment? A: Medicine is closing in on a cure for this disease. It is imperative that government funds continue to be allocated to researching a cure and/or providing medications that can prolong the memories and brain function of those afflicted. If the population of our country that suffers from this disease continues to grow at the current rate, the financial impact will be extreme for the U.S. and its citizens. Q: Anything else you’d like to share? A: My wife and I do all of the administrative work, so we don’t have expensive staff or overhead. I think people like to know that their money is being put to good use.

Go Long: A Beginner’s Guide to Tailgating QUICK TIPS TO ENSURE YOUR TAILGATE IS A TOUCHDOWN THIS SEASON. School in full swing, cooler temperatures, and pumpkin-flavored everything – it can only mean one thing: it’s football season, and by default, tailgating season. With grills all over Southlake firing up, and more and more people staking out parking spots at Dragon Stadium before the game, tailgating is becoming a lifestyle. Here are some pointers from former Emerald Belle and Southlake Style intern, Amber Cline, to help you kick off the season with an outdoor celebration worth cheering for. PLAY BY THE RULES Before getting the party started, it’s important to plan. Know the rules of the stadium. For instance, at Dragon Stadium, no alcohol is permitted and you’re required to take everything home that you brought with you (including trash!). Be sure to keep checking the weather – will a tent be necessary? Should you bring a jacket? PREPARE LIKE AN ALL-STAR Next, prep everything you can before actually arriving at the stadium. Make a list of everything you’re bringing, including easily forgotten essentials like zip lock bags, sharpies, condiments, tongs and hand sanitizer. Marinate the meat the night before so all you have to do is throw it on the grill. Pack the coolers with the stuff you’ll need first on top, and use frozen water bottles instead of ice packs so you’ll have cold water to drink when they melt. Plan to be at the stadium at least three hours before the game so there’s time to set up, eat, relax and pack up. DRESS LIKE A WINNER First of all, ladies, heels are a no-no. The enemy of stilettos is grass and the last thing you want to happen is to constantly sink into the ground. Keep it casual with sneakers, comfortable flip-flops or flat boots later in the season. In Texas, you never know what you’re going to get when it comes to the weather, so layering is your friend – a poncho or cardigan could save the day. And last, but not least, green out! It seems like a no brainer, but be sure to take every opportunity to remind people who’s going to win, using everything from green hats and scarves to green food and decorations. FOOD FANS LOVE Now for the main attraction: the game-day grub. The goto foods are definitely burgers and hot dogs, but you can also get creative with other options. For example, a chicken sandwich or a veggie burger could ensure everyone gets something they like. Keep it simple with finger foods like fruit and veggie kabobs that both adults and children will love (the less disposable cups, plates, and utensils to clean up, the better). THERE’S AN APP FOR THAT Tailgating is as easy as ever with new apps and sites to help you out. For example, the website ourtailgate.com allows you to make an event, invite guests and keep track of who’s bringing what. For day-of inspiration, the app “Tailgate Fan” has great recipes to shake things up and even allows you to connect with other tailgaters in the area using photo and video. “Tailgating Recipes” also is stocked full of fun recipes like “Quarterback Quesadillas” and “Kick-Off Kabobs.” Use your phone’s “Notes” app to keep track of inventory and the “Clock” app to set timers on meats. yeing the popularity of sport trucks for some time, Fiat Chrysler has officially joined the race for the attention of active truck enthusiasts. By way of an offroad style overhaul of its Ram line of pickups, the all-new Ram 1500 Rebel has both literally and figuratively set it’s sights on the competition— namely the Ford F-150 Raptor. With its newest endeavor, “Ram Tough” has emerged in an all-black grille that is a substantial departure from Dodge’s iconic “cross-hair” design. The blacked-out Rebel grille is just the beginning of an aggressive off-road persona that carries from black powder-coated bumper to bumper and everything in between, including black wheel-arches, mirrors and lower body panels. Even the truck’s bi-functional projector headlamps take on the dark of night from within—you guessed it—black bezel encasements. Resting atop elaborately designed 17-inch, matte black aluminum wheels, 33-inch Open Country all-terrain tires and ride-softening Bilstein rear shocks, the Rebel is as capable as it looks. A 3.6-liter HEMI V-6 engine unleashes 305 horses for more

than 8,000 pounds of towing capacity. Drivers who enjoy the unbeaten path will appreciate the truck’s 25 mpg rating and its rear anti-spin differential. The latter turns both rear wheels in tandem when increased torque is applied to get drivers free from most any obstacle. When not in use, the system automatically unlocks the differential, allowing the wheels to spin independently during normal on-road conditions. Extra power, to the tune of 395 horsepower, is also available through an optional 5.7-liter V-8 engine. Inside its crew cab, Rebel is every bit as brawny as it is outside. With an eye for rugged detail, the cab’s technical grain black vinyl seats have been embossed with the exact tire tread pattern matching the truck’s actual footprint. The seats, the door armrests, and the Ram logo-embossed center console are all finished in Radar Red with Light Gray accent stitching that all come together to complete a rugged, yet refined presence. Starting at an MSRP of $42,790, the Rebel is at the top end of the Ram lineup exceeded in price only by its Laramie and Limited models. However, priced slightly below the Raptor ($46,190) and with its offroad capabilities, towing capacity and stylish finish, the Dodge Ram 1500 Rebel speaks for itself.
