Are you ready to get a bit spooky? This issue of Metropol coincides with Halloween, one of the celebrations New Zealand has embraced, even though it honours northern hemisphere seasons and not our own. That aside, who doesn’t love the spine-tingling frisson of a good scare?
The genesis of Halloween is the 2000-year-old Celtic pagan festival of Samhain, which celebrated the harvest at the end of summer and the beginning of winter.
The Celts believed the veil between the living and dead is thinner on this night, allowing spirits to roam the earth, so it was also a time to honour the dead. Celebrations involved dancing around bonfires in animal costumes, while feasting and drinking heavily. As with all the big pagan festivals, the Christian church piggybacked their popularity.

In the 8th century, Pope Gregory III designated 1 November as a day to honour all saints, which meant the evening before was called All Hallows’ Eve, or the ‘evening of the Holy ones’. Before you could say ‘boo’, it all became the mish-mash of traditions that we now call Halloween – with a lot of chocolate thrown in.
In a nod to these ancient customs, we interviewed Canterbury’s most sought-after spiritual medium (pg 8).
Jacqueline Mitchell talks to dead people for a living and there is a two-year waiting list to see her. During the interview, she told me I had a ghost in my house. As well, we talked to local end-of-life doula Sue Beach about the need for better conversations about death and dying (pg 31).

On 29 November at Rolleston’s Foster Park, Matilda Green will be one of thousands attempting to break the world record for the largest high intensity interval training (HIIT) class ever – raising awareness and funds for mental health. The media personality talks to Metropol editor Nina Tucker about HIIT for Hope, motherhood, and protecting her peace.

“Jared’s story is harrowing, and I really admire him for taking something like this on. Getting 7000 people together for a HIIT workout world record is no mean feat, and it speaks to his character that he’s willing to do this all in the name of raising awareness for mental health,” Matilda says.
“A charity like this, which has human connection at its core, is so needed,” she adds. Her passion for movement and its positive e ects made HIIT for Hope ambassadorship for herself and husband Art Green an easy decision. are joined by the likes of broadcaster Dom Harvey and former Silver Fern Courtney Tairi, each utilising their respective platforms to drive participation. Matilda may be used to having all the attention on her – but the limelight hasn’t swayed her selflessness. She supports Variety Children’s Charity, youth mentoring organisation Big Brothers Big Sisters, and is one of the influential parents of B416 lobbying the government to raise the age of social media access from 13 to 16. Each an enormous investment of time and energy, and each in need of someone like her. “The more we look after each other, and connect with each other, the more we will see what connects us, rather than what divides us. I’m lucky to have an online platform (of 160,000 followers) that can be used to amplify causes that I feel passionately about,” Matilda says.
time that looks like a walk in nature surrounded by as many trees as possible, but sometimes protecting her energy is about doing all the things she’s awful at and embracing being a self-proclaimed “80-year-old living in a 34-year-old’s body”. Music, knitting, embroidery, drawing – “I’m shit at all of them but I love it,” she laughs. “What I lack in skill, I make up for in enthusiasm.” When she’s not slowly convincing her children to join the family band, she’s found shopping at antique stores.
I’m almost at the point of unfair criticism being water off a duck’s back… almost.
If it’s not the country’s youth she’s serving, it’s her own. Matilda and Art (who is an “absolute superstar” and “incredible dad” according to her) share three gorgeous children and a whole lot of sacrifices to provide for their family and pursue personal goals simultaneously. The latest juggle was Art transitioning to a stay-at-home dad so Matilda could cover a maternity leave opportunity with Matty McLean on The Hits radio. The change was a challenge. “I felt really overwhelmed with the change of family dynamic, and everything I was trying to handle on my own. I dropped the ball on a couple of family things and broke down a bit,” Matilda reflects, who drew on her self-compasion processes at the time. “I like to handle everything myself, I’m not great at o oading tasks. After that, I had a good discussion with Art about how I was feeling and we made a plan.” Ah, New Zealand’s perfect couple. “Honestly, the man deserves a medal,” she says about his value during their recent high-coverage house move.
Matilda has spent a large chunk of her adult life in the spotlight, navigating a relationship and becoming a celebrity with thousands of eyes watching. It took her years to understand that it’s okay if some misunderstand or dislike her. “I have had to let go of the need to be liked,” she says. “I’m almost at the point of unfair criticism being water o a duck’s back… almost.”
Her evolution to motherhood has been equally transformative. “I have become less selfish, more self-compassionate, and have found joy in serving others. My children are the most precious things in the world, and any time I get overwhelmed,” (she laughs and says it’s a lot), “I look at their tiny hands and remember what a privilege it is to be able to be a part of their unique journey.
“They are the ultimate example of pure presence. They are forgiving, loving, and take everything at face value, and any time I’m experiencing something tricky, I take inspiration from them,” she says. “I just put it on the backburner and play Lego with my kids, and it reminds me what is most important to me.”
Matilda knows to prioritise her health and mental space – when she does, her family receive the best version of her. Most of the


Naturally, and perhaps guiltily, Matilda spends other pockets of time on social media. “Addicted”, she admits, “but I have ways of managing it”. It’s a valuable tool for inspiration and reach for her work across radio, podcast Untidy, and online platforms – but “an absolute cesspit for consumerism and comparison,” she says.
“It’s handy having children around as a reminder to get o it and be present. I’m very conscious of putting my phone away around them as I want to model the behaviour I want to see in them.”
In recent years Matilda’s found her purpose, guided by her children and charity connections. Confident in her skillset, “I have a really clear vision of where I want to go and what impact I want to have.” Never one to like the phrase ‘stepping into your power’ but Matilda says, “I kind of get it now.”

With a two-year waiting list, Rangiora-based Jacqueline Mitchell is one of New Zealand’s most in-demand psychic mediums. She talks to deputy editor Tamara Pitelen about life with dead people.
Ihave a ghost in my house. This didn’t come as a big shock, to be honest. Weird things have been happening since we bought the property in 2022. Loud noises in the dead of night, doors and windows opening that we knew we’d shut, hearing voices calling our names from empty rooms, and my husband says he has seen a male figure out the corner of his eye. So, when Christchurch psychic medium Jacqueline Mitchell told me I had a ‘spirit resident’, during the interview for this story, I was more ‘ah yes’ than ‘agghh, what?!’
Our house was constructed by a builder in the 1970s for his own family. He died there, and we bought it from his widow when she moved into a retirement home. That original builder is very fond of the property and would like to hang out there still, if it’s okay with us.
“He’s a real salt-of-the-earth kind of guy, and he’s really content to be there, if you’re not bothered by him. He likes the renovations you’re doing. Mostly, he likes to potter in the garden and outside in his workshop. He’s telling me he hopes you don’t mind him being there.” I tell her to assure him that we don’t mind at all.
Based out of Rangiora, Jacqueline is one of New Zealand’s most indemand mediums, in other words, someone who talks to dead people. In 15 years of working full-time, she’s never advertised, yet she recently had to stop accepting new clients because her waiting list is two years long. Calling herself “the telephone between those on the earth plane and their loved ones in the spiritual realm,” Jacqueline appears to be a hotline. Before I’ve even managed to turn my voice recorder on, she’s reading the colours in my aura, passing on messages from both my grandmothers, and describing my husband, his personality and his work worries. She also describes my mother to a tee and tells me to pass on a message to her from my grandmother.
It’s an extraordinary experience. Within minutes of meeting her for the first time, this total stranger is telling me details of my life and describing my loved ones to me with stunning accuracy. For Jacqueline, though, this is just another day in the o ce.





Jacqueline has been seeing, hearing and sensing spirits for as long as she can remember. As a little girl of three, she recalls being comforted at night by a pair of disembodied blue arms.
“My mum was really busy with two sets of twins under three, so I didn’t always feel supported,” she says. “When I was upset, these beautiful blue arms that ended at the elbows would come at night and cuddle me. It was really lovely. I always felt calm.”
Hailing from a line of Romany gypsies, Jacqueline’s family is steeped in psychic ability. “When you put a whole lot of psychic people together, you get a lot of psychic activity. We’re like moths to a flame,” she says.

Her grandmother’s home was famously “active,” the cupboards swinging open overnight and cutlery drawers pulled out by unseen hands. “She had a one-legged spirit man who hopped up and down the hallway quite a lot,” Jacqueline adds matter-of-factly. “She just accepted it. That was our normal.”
Still, Jacqueline didn’t start working as a medium until her forties, even though her father had taken her to the local spiritual church many years earlier and she had sat in a weekly psychic development circle. For years, though, she led an “ordinary” life, working as an accountant and raising her children. It was personal tragedy – the sudden death of her beloved father – that pushed her into a deeper spiritual practice.
“When my dad died in a plane crash over Foveaux Strait in 1998, there were no goodbyes,” she says. “He was my best mate. I was only 30. I went to a medium because I desperately needed to know he was okay. The messages she gave me were muddled, and while I sat there, balling my eyes out, she said ‘okay, times up.’ I remember leaving that reading utterly distraught and thinking, ‘If I ever do this work, I’m going to do it di erently. If I can help people reconnect with their loved ones and give them tools to manage their grief, give them closure, then that’s what I’ll do.’”
After her father’s death, he visited her in a dream and told her that one day, she would be asked to work here on Earth for the spirit realm. That call eventually came, and Jacqueline committed to working full-time as a medium.
Helping the living, listening to the dead Jacqueline’s clients come to her for all sorts of reasons. “Some people want to talk to their dad and find out why he was so mean to them when he was alive. Others had a fabulous relationship with their mum and just miss her. Or they’ve lost a brother in an accident. There’s a million reasons people come.”
One of her most touching current cases involves a man whose wife is living with advanced dementia. “He comes to me every six months to talk to her,” Jacqueline says. “She’s already threequarters transitioned out of her body. Through me, she tells him what kind of chocolate biscuits she wants, and which sta

members are annoying her. It’s gorgeous. It gives him comfort, even as he’s grieving the loss of her.”
Jacqueline also works with families who’ve lost loved ones to suicide, which is a deeply personal calling since her own nephew died by suicide at 19. “Reconnecting him with his family has been healing,” she says. “I’ve got a soft spot for helping people through that kind of loss.”
Clearing houses, clearing energy
For a period, Jacqueline specialised in house clearings, which is removing disruptive or negative energy from homes. “Houses are sponges,” she explains. “We live in them and ooze all our emotions into them.”
Sometimes the issue is simply a “resident spirit” who doesn’t bother anyone. Other times, especially where there’s been mental illness or trauma, the energy attracts “opportunistic darkness”– knocking, banging, flashing lights. “The worst I’ve seen here in New Zealand isn’t anything like it’s shown in the movie The Conjuring,” she laughs, “but there are still some pretty intense situations.”
The West Coast, she says, has particularly heavy energy, often tied to the land itself. “I did one case where a man had died on the property, and it was being subdivided. The people in the existing house were having objects thrown around. In those cases, you listen to the spirit, set boundaries, and if necessary, pass them over. Sometimes you bring in a Māori blessing as well. It’s about resetting the energy.”
According to Jacqueline, New Zealand is a deeply spiritual place. “We have land keepers, ancestral Māori guardians, watching over us. Before the earthquakes, people saw them in certain areas, creating activity as a warning that people would need to move.”
As for Christchurch’s most haunted spots? She cites Riccarton House, the Sign of the Kiwi, the Arts Centre (“it’s amazing at night, look in the windows”), and Moorhouse Ave, where the old train station used to be. “The older the property, the more energy it holds,” she says.
“Years ago, they used to run haunted tours at the The Arts Centre Te Matatiki Toi Ora. I went on one where this lovely little man in spirit followed me around the whole time. He kept saying to me ‘isn’t this interesting?’ He was from about 1910, I think, and he was just enjoying the tour.”
While Jacqueline’s appointment book is closed as she works on shortening her two-year waiting list, she does give group readings at the Papanui Spiritual Centre, giving short messages to as many people in the audience as possible.
As for my resident spirit, the builder who once lived in our house, we quite like having him around.

The struggles with terminal illness of beloved New Zealanders like Nigel Latta and Dai Henwood have highlighted the need for better conversations about grief, death and dying.
For Western cultures, the concept of death is uncomfortable. Unlike other cultures, which have woven the honouring of death and dying into every day custom and ritual, we are brought up to avoid talking about death, calling it ‘morbid’.
Bizarrely, we are even seeing the rise of the notion that death is a ‘disease’ that can be avoided. US tech billionaire Bryan Johnson, also known as the ‘don’t die guy’, says he is “at war with death and its causes” and is on a mission to “defeat all causes of human and planetary death”.
“Here’s the truth: we are all going to die,” says Christchurch end-of-life doula and grief coach Sue Beach.
“We are all going to experience grief and loss, and we need better conversations, learnings and understandings to deal with it when it comes. This not only helps us live better lives, but it also brings dignity, more ease, and less fear to the process of dying when there is a terminal diagnosis. Even in my previous career in the medical profession, death was sometimes viewed as a ‘failure’ rather than the natural end to a life.”
As an end-of-life doula, Sue o ers non-medical, practical and emotional support to a terminally ill person and their loved ones, before and after death.
“A terminal diagnosis is scary and overwhelming. An endof-life doula is there through the whole journey, ensuring the appropriate resources are accessed and supporting emotional and spiritual well-being,” Sue says.
Her own first experience with death was with her little brother at the age of seven. “We were at my grandparents’ celebrating my seventh birthday. I was standing right beside him when something fell on him and killed him. This was more than 50 years ago and, typical of the time, was not handled well. Nothing was explained to me. I didn’t go to his funeral and wasn’t taken to his grave until I found it myself a few years ago. I didn’t even really understand what had happened; we never talked about him or that awful day. It left me deeply a ected, and it wasn’t until my sister died in a road accident many years later that I was able to process what had happened when I was a child.
“I learnt so much more about living when I did my end-of-life doula training. It taught me what’s important and gave me some direction and purpose in my life. I studied it originally to get a better understanding of death. I was already a grief companion and coach, so I thought it would help me be a better grief coach. I had worked in the operating theatre for 25 years, so I had a good understanding of how the physical body worked. I knew how to try and keep people alive, but never learnt how to help people die. I had been present at many Caesarean section births, with the joy and celebration of birth, so thought it was time to learn more about how to be present with death.”
Sue’s attitude to dying is that it is the next big adventure. “It might be wonderful and exciting, or it might be empty and nothing. Either way, it’s fine with me.”

WesleyCare, a branch of the Christchurch Methodist Mission, is a not-for-profit providing care to people transitioning from living in their own home to a more comprehensive support environment. For many, that means high dependency or mobility limitations. Ceiling hoists cater to that. These hoists provide a gentle way of transferring someone – keeping both resident and sta members safe. “It’s a dignified way of managing their care,” says manager Donna Coxshall.
Of 108 rooms at WesleyCare – where rooms range from rest home and hospital level care to respite and palliative –just 25 are fitted with ceiling hoists. “Residents are coming in older and more frail, most requiring a ceiling hoist at some point,” Donna explains. More and more hoists are needed, yet these systems are expensive, costing about $7500 to install in a single room. Systems for all the remaining hospital rooms at today’s price would cost just under $400,000. Charging just modest room prices, the team relies on external support and donations.

The Christchurch Methodist Mission has launched an appeal to raise the funds for extra ceiling hoists that assist with providing high quality care. “Funding pressures in aged care are ongoing, as everyone is aware,” says Donna. “Because we are not-for-profit, we need to fundraise for the equipment we use.” With the city’s support, her goal of fitting all 108 rooms with ceiling hoists is possible.
For its 60-year history, WesleyCare has always been grounded in its generous community. It was thanks to the kindness of others leaving a gift to the Mission in their will that enabled WesleyCare’s rebuild in 2015, introducing a modern facility with spacious rooms, ensuites and beautiful gardens. Yet the need doesn’t stop there – donations remain key in funding equipment like ceiling hoists, air mattresses and specialised shower chairs. CMM executive director
Jill Hawkey says “Even a very small gift can make a significant di erence to the care that WesleyCare is able to provide. It can purchase a piece of equipment that we wouldn’t otherwise have – something that makes everyone’s day easier. A gift in your will, regardless of size, can make a substantial di erence to the lives of our residents.”

With a resident-centric approach, Donna’s team is committed to providing the highest possible care. “This is their home. It’s not a business. Donna hails from a life of service in aged care and community care leadership, from managerial positions at Healthcare NZ to private retirement villages. Her morals are grounded in family, community, and giving back – the perfect alignment for her role at WesleyCare.
She acknowledges the dedication and professionalism of her team when noting the low sta turnover – a telltale sign of a healthy work environment and great management. From residents to their families and beyond, each interaction is anchored in the charity’s values.

• 1/3 cup grated parmesan
• 1 decent tsp Pepper & Me Sunshine Salt
• 1/2 red onion
• Fresh herbs (basil, Italian parsley or thyme)

water out. Whisk together the eggs, cottage cheese and parmesan. Season really well with Sunshine Salt.
3. Finely dice the red onion and add to the egg mix with the spinach. Chop any fresh herbs you may have and mix in well. Pour into your prepared dish.

• 200g tri-coloured quinoa
• 75g kale
• 1/3 cup Pepper & Me Long Lunch Dressing (or balsamic vinaigrette)
• 2 oranges
• 1 handful fresh mint
• 100g pomegranate arils

1. Boil the quinoa in a large pot of water for 15 minutes, drain and set aside.
2. Remove the woody stem of the kale and shred the leaves finely. Add the kale to a large bowl and massage in the dressing. Add the quinoa.
3. Finely grate the zest of both the oranges. Cut the peel from the oranges and cut into segments.
4. Add the zest and segmented oranges to the quinoa and kale with the finely chopped mint and pomegranate arils and season with Man Grind Flakes.
5. Crumble over the feta to garnish.

• 250g plain biscuits, blitzed
• 170g butter, melted
• 1 cup chocolate chips
• 1 cup dessicated coconut
• 1 cup dried cranberries
• 3/4 cup slivered almonds
• 395g can sweetened condensed milk
1. Preheat the oven to 190°C (170°C fan bake). Line a 20cm square slice pan with baking paper.
2. Combine the blitzed biscuits with the melted butter and press evenly into the prepared slice pan.
3. Sprinkle over the chocolate chips, then the coconut, the dried cranberries and lastly the slivered almonds
4. Pour the condensed milk over evenly.
5. Bake for 30 minutes. Leave in the pan to cool before cutting into squares.

With just four ingredients, this strawberry limoncello spritz is simple and easy – a spring staple.
1. Add two tablespoons of strawberry puree and ice to a wine glass.
2. Next, add 60ml of Ali’s Lemons limoncello and stir.
3. Finish by filling the rest of the glass with Prosecco, almost to the top, leaving room for a splash of lemon or lime-flavoured sparkling water.

A three-step guide to styling one of the most used and most visible features of the kitchen – the humble bench.
Don’t throw everything and the kitchen sink at making your bench look pretty. Start with the type of stone and adjoining cabinetry. “Our criteria is that the decorations we stock are di erent from those you might see everywhere. All the decorations say ‘Christmas’ clearly but without

slipping into the old-style red velvet and brassy gold – which was never the greatest look. We aim to stock decorations that will blend in with the look you already have.”

Finding the ideal artwork to transform a wall or display case just got easier, thanks to Windsor Gallery’s latest exhibition, The Premier Art Collection. The term ‘dark horse’ refers to an underdog or a surprise winner, which is how Ford has positioned its first new Mustang brand in 21 years.

eferred to as the Mustang ‘you never saw coming’, the Dark Horse by Ford is a hardcore, limited-edition version of the regular seventh-generation Mustang GT. Having driven it for the first time on track at The Bend in Adelaide late last year, I was dead keen to experience this limitedrun Mustang on Canterbury roads.
Power comes from the now legendary 5.0L Coyote V8, which in Dark Horse trim produces 373kW instead of the regular GT’s 362kW. Mated to this is a 10-speed automatic or a TREMEC sixspeed manual transmission, of which my test car had the former.
The Dark Horse also benefits from larger Brembo brakes,
underbody brake ducts, enhanced cooling, a rear subframe which it shares with the Shelby GT500, a rear spoiler and larger sway bars.
Inside, you have comfortable and immensely supportive Recaro bucket seats, lots of blue stitching and a big red starter button. The 13.2-inch SYNC 4 infotainment system takes centre stage and provides some seriously sharp graphics and intuitive in-car tech.
The vehicle also incorporates numerous elements that evoke Mustang heritage, including the option to select digital instrument displays representing various generations of the Mustang – from classic models of the 1960s and Fox Body vehicles of the 1980s, to the SVT Cobra from the early 2000s.

The ride is also relatively smooth for a no-nonsense muscle car as the Dark Horse’s unique Magnaride adaptive suspension monitors both tyre and wheel movement up to 1000 times per second to ensure things are as plush as possible.

Switching over to Sport or even Track mode is a not-so subtle reminder that this is no luxury barge. That snarling V8 amplifies its soundtrack, the steering weights up, and the shifts get more aggressive. The Dark Horse is ready to bolt and bolt it does, as I was able to reach 100kph from a standstill in 4.4 seconds.
Despite some delayed upshifts from the 10-speed auto box’s manual mode, the Dark Horse is a terrific automotive adrenaline pump. There is big power, but it is power within the realms of control. Sure, if you don’t treat it with respect, this horse might be tempted to buck, but in the corners, you have the confidence to turn in hard after standing on the anchors and get on the power again sooner.
As this is a limited edition, New Zealand’s Dark Horse allocation for this model year has already been snapped up. However, one could say it has renewed my admiration for one of the most coveted heroes of motoring. The Ford Mustang Dark Horse is a laugh, a real laugh.

It isn’t easy to find the headquarters for fashion brand Drama the Label. It’s tucked away behind a hedge in rural Swannanoa. From here, founder Arlene Tipler works alongside a small team, designing and supplying fashion to some 35 stores spanning Whangarei to Invercargill.
“I design for things I feel comfortable wearing,” Arlene explains. “I want things to be practical, comfortable, stylish. Just about every one of our dresses has pockets. I think about cuts that are flattering for tummies.”
Arlene designs two collections a year, one summer and one winter and, as she says, keeps it practical and stylish. It’s clearly working. She started the business in 2018 and has navigated Covid-19, a recession, the changing business landscape caused by tari s and the vagaries of market forces. Arlene is a smart creative but she’s also a smart businesswoman.
It’s no coincidence that she ended up in fashion. She grew up surrounded by it and fell in love with it. Her grandfather was a tailor, and her grandmother was a milliner. Her parents owned a production business manufacturing clothing and Arlene was sewing clothes for her dolls at age six. That’s an early start.
“The first thing I made for myself was a white jumpsuit, sort of dungarees with paint splattered colours. It was awful,” Arlene says with a laugh.


The jumpsuit might not have been catwalk material, but Arlene got seriously stuck into fashion and business, studying at both Otago and Christchurch’s Ara. At 21 she was running her own business, with premises upstairs in Cashel Street. She designed and sold wedding dresses and ballgowns, whilst at the other end of the spectrum creating her own menswear range of casual street and skate wear. There then followed a time working for other big fashion producers both at home and overseas.
“I learnt a lot. I understand textile science, pattern making, the technical side of putting a garment together,” Arlene explains. All of which has stood her in good stead for running her own label. Designing an item starts with the fabric she explains, and she knows about choosing fabrics, finding factories and all the other elements that go into developing a collection.
She has also developed a second label, Loughlin Clothing, which focuses on a slightly more muted colour palette, more expensive fabrics and smaller production runs. Loughlin was Arlene’s maiden name. Her parents Valerie O’Loughlin and Matthew O’Loughlin (who recently passed away) have been nothing but supportive of their daughter in all her business ventures.

For Christchurch-based photographer, Claire Fahey, her love of food started early in life. Cheesy mashed potato was one of her very first ‘go-to’ dishes, with lots of butter and grated cheese. Then her repertoire expanded.
“When I was around 11 my parents bought me a Prue Leith book, which I read from cover to cover,” she says. “I loved all the French terms.”
The book was Leith’s Cookery Bible by Prue Leith and Caroline Waldegrave and the young Claire was enchanted. The first thing she cooked from it was good, old-fashioned French toast.
Not surprisingly, the next step for Claire was to train as a chef in her native Dunedin at Polytech (Ara). She loved the formal training and the discipline of the course that saw her learn classic techniques for those tricky things like choux pastry and béchamel. She even loved learning about the cuts of vegetables – brunoise and macédoine (di erent forms of dicing if you’re wondering). Yet she never really enjoyed working in the industry, mostly due to the hours and pressure, she explains.


A few years ago, however, her love of all things foodie came together with her love of photography, when she set up Lime Blue Photography. Now she cooks, styles and takes photos for a wide range of clients, and still enjoys playing about in the kitchen with new ingredients and writing recipes for her website – along with taking fabulous photos.
Soup can be one of the toughest things to photograph says Claire. A good way to deal with that is to add texture like drizzled oil, crunchy croutons or herbs to make it really stand out. Of course, even for professionals things can go wrong. “I was photographing tomato soup in my living room as the light was good, then I knocked two bowls all over the carpet – it went everywhere. Even up the wall,” she says.
Spillages aside, Claire is still in love with food and photography.
“I love to celebrate New Zealand’s seasonal ingredients and the joy of sharing meals – capturing food as it’s really eaten: generous, rustic, and full of flavour,” she says.
So you want to take a great photo of your food? We asked Claire for some of her top tips when it comes to rating that plate.
Place your plate or dish near a window with good natural light but not in direct sunlight, that will be too harsh and cause shadows in your shot.
Photograph from above. You may want to place the plate of food on the floor or on a low stool. Or grab yourself a ladder.
Use the freshest produce and always add a pop of green at the end – parsley, basil, chives etc.
When it comes to plates, white and simple always shows o fresh food and makes the colours stand out. Try adding in a little texture with a linen napkin or rustic knife and fork – and always a little garnish.
Getting the right light is really the most important thing. Then try experimenting with di erent settings and angles and practise, practise, practise.

Live your zest life, no butter needed. (makes about 12)
• 275g self-raising flour
• 150g caster sugar
• 1 tsp baking powder
• 170ml water
• 100ml plain oil
• Zest and juice of 1 lemon
Method
1. Preheat oven to 180°C.
• Juice of 1 lemon
• 1/2 cup caster sugar or icing sugar
*Caster sugar makes a slightly crunchy topping, while icing sugar gives a smooth drizzle.
2. Mix all the ingredients together until just combined.
3. Pour into either a lined loaf tin or cupcake cases.
4. Bake:
• Cupcakes: 12–15 minutes
• Loaf: 35–40 minutes (check with a skewer – if it comes out clean, it’s ready).
5. While still warm, drizzle with the lemon topping.

It’s an exciting time to be a South Island MP with the latest news that we are leading the way in New Zealand’s economic recovery. Confidence is building and the Reserve Bank has cut the OCR by another 50 basis points to 2.5 per cent, which is welcome news and will continue to help New Zealand’s economy to grow.
As local MP I am of course a big advocate of the Waimakariri and I enjoy promoting the area to visitors. So I was excited to hear that the Oxford Forest Conser vation
As an example, successive cuts to the OCR mean that minimum repayments for a family with a 25-year, $500,000 mortgage will be more than $800 less than when National came into Government.

Major infrastructure projects like the Woodend Bypass are finally getting under way, creating more highpaying jobs and boosting our building and construction sector, and there is a definite feeling we are moving in the right direction.
Across the Waimakariri we can see some of this economic growth mirrored in our population growth, with places like Ravenswood taking o at pace. I recently met up with Ravenswood developer Paul Croft who has relocated from Wanaka to Canterbury because he believes this area has so much to o er.

Visitors I have met from places like the UK are amazed by our night skies and it’s something we should be harnessing more as a drawcard for tourists. This is just one more thing to put Waimakariri on the map for both international and domestic tourism.
His development alone has contributed significantly to local employment and it is clear that the area has not stopped growing. Along with big retail names like Harvey Norman now on our doorstep, we are likely to soon see further housing being made available with the substantial Gressons Road development proposed between Ravenswood and Waikuku.
Add to that the long-awaited Woodend Bypass which will make travel into the city faster and more reliable, and you have to ask yourself who wouldn’t want to live in the Waimakariri!
I am a frequent visitor to schools around the electorate and I feel sure those I have spoken to recently will be happy with the Government’s recent action in the education sphere. As well as banning
Woodend itself will become a town centre destination once the bypass takes the heavy trucks away and I can’t wait to see this northern area of the electorate continue to develop and thrive over the coming years.

Many people believe that gaining weight as we age is inevitable. If that were truly the case, everyone would gain weight over time – and we know that isn’t so.

While our bodies certainly change as the years pass, extra kilos are not a guaranteed part of the process. What’s far more common is that our habits, hormones and stress levels evolve with age, often in ways that make it easier for the body to get the message to store rather than burn body fat. The good news? Once we understand these shifts, there’s so much we can do to feel lighter and more energised again. Let’s explore common age-related changes that can a ect our body fat levels.
We move less
Between work, caring for family and keeping up with life’s demands, many of us simply move less than we used to. If you have a desk-based role, it’s possible to sit for 10–12 hours a day – far more than our bodies were designed for. The fix doesn’t need to be dramatic. Stand up and stretch every hour, walk to a colleague instead of emailing, or park further from the shops. Gardening, taking the stairs or carrying your groceries rather than pushing a trolley all count. Movement doesn’t have to mean “exercise” – it just has to happen often.
We lose muscle
From around age 30 onwards, we gradually lose muscle mass unless we do something to maintain it. Muscle not only keeps us strong and stable – it fuels our metabolism. While fat tissue is metabolically quiet, muscle is active, meaning it helps us burn energy even at rest. Crash dieting or long-term stress can actually cause the body to break down muscle for fuel, lowering


our metabolic rate further. This is one reason people often regain more weight after restrictive diets. To protect muscle, include resistance training in your week. Pilates, yoga, bodyweight workouts or light weights at home can make a profound di erence over time.
As responsibilities grow – mortgages, families, ageing parents, work pressures – our perception of stress often increases. When we live in what I call the “red zone” of constant urgency, the body interprets this as danger and holds tightly to stored energy (body fat) as protection. To shift out of this mode, we need to communicate safety to our nervous system. Slow, diaphragmatic breathing helps. So does reframing the way we view our responsibilities – from endless pressure to meaningful choices. We aren’t attuned to our body’s messages
Many of us were never taught how to listen to our body’s signals. Yet every symptom – from fatigue to bloating – is a form of communication. At first, the body whispers. If ignored, those whispers become shouts. Learning to interpret early signs can help us prevent deeper imbalances later. Instead of judging your body for what it looks like or how it behaves, try asking, what is my body trying to tell me? The answers often lead to remarkable healing.

Solar panels are better for your pocket, says Josh Trubshaw of Solar Alps, a North Canterbury solar power installation company. “Our systems pay themselves back over seven years, possibly quicker depending on how you utilise the system. Power prices have been rising significantly lately as have lines user charges, so going solar is really a no brainer.
