MEET ALLISON ACKER

Please join us in welcoming our new Executive Pastry Chef Allison Acker to the Club! Allison is an alumna of The Culinary Institute of America, New York, Hyde Park (CIA New York). Her background encompasses a diverse range of experiences in the culinary and baking world, from the fast-paced aspects working and managing front and back of house in restaurants and bakeries to volunteering her time at local soup kitchens within her community.

Allison has gained a variety of professional experiences throughout her career so far. One notable opportunity came when the chef at the Apple Pie Bakery Café at CIA New York invited her to join the team. There, she crafted hundreds of macarons, French entremets, and other fine desserts for the prestigious college. While pursuing her degree, Allison balanced daily baking and pastry classes with her work at the bakery. Remarkably, she maintained perfect attendance—never missing a single day of class or work.

She also gained valuable experience working as the Executive Pastry Chef for three well-known establishments in Bucks County, Pennsylvania: The Black Bass Hotel, The Lumberville General Store, and The Golden Pheasant. Additionally, she played a key role in opening a French restaurant in Cape May County, New Jersey, all while managing pastry operations for five bed and breakfasts in Cape May.

Her baking expertise spans a wide range—from wedding cakes and mini French desserts to Viennoiserie such as homemade croissants and Danish pastries, as well as plated desserts, fresh

breads, French macarons, and custom cakes. Whatever the creation, Allison brings her talent and passion to every detail.

Allison’s accomplishments include being featured on the Food Network television shows Chopped Sweets and Bake the Bizarre, as well as competing in Buddy Valastro’s The Greatest Baker competition. She enjoys the thrill of competing on national television, though she often says her biggest competitor is herself!

Outside of her professional career, Allison enjoys family life with her husband, Derrick, and their beautiful three-yearold daughter, Kingsley. Together, they love dancing, going on outdoor adventures, and, of course, baking and cooking meals as a family.

Allison is very dedicated and driven, striving every day to be her best and that will be shown when you get to try her desserts!

DINING REMINDERS

We understand and appreciate that the most popular time to dine is between the hours of 6:00pm and 7:30pm; however, like “pace of play” on the golf course and in free-standing restaurants, we have to pace the number of reservations over the evening, including Grab & Go orders, to ensure an exceptional À la Carte dining experience for all members and guests. Reservations are always highly recommended as they allow our management team to better plan for busy days and periods of high volumes. While “walk-ins” are welcome, you may be required to wait for a table. Also, due to the increased demand from all members, we ask you to be aware of your dining time so the staff may “turn” your table to allow other members to dine.

RESERVATIONS

▶ Reservations are highly recommended (reservations open ten days in advance)

▶ Reservation times are the party’s expected seating time. The reserving party must be present for seating. A reservation may be held for no more than 15 minutes. A party who

▶ On our busiest nights, when dining times must be enforced to accommodate the membership, bar and soft seating areas for cocktailing before and after dinner will be available in the Adirondack Bar, Trophy Bar, Oak Room, and Rooftop Terrace

▶ The Club reserves the right to enforce a two-hour dining limit during busy periods to accommodate as many members as possible. The Club will make every effort to advise you if there is a “turn” at your table following your reservation

OF THE MONTH

FOR THE GOLFER

With Dezmon Gray, Personal Coach & Golf Fitness Specialist

BIRD DOG DUMBELL ROWS

Bird Dog Dumbbell Rows on a bench help golfers improve upper-lower body disassociation, allowing the torso to rotate independently from the hips for a more efficient swing. This exercise strengthens core stability and anti-rotation control, enhancing posture and limiting unnecessary movement during the swing. It also builds upper back and shoulder strength, promoting better posture and reducing the risk of injury. Additionally, it improves balance and weight transfer—both essential for stability in various golf stances— and activates the glutes and hips, helping prevent early extension while generating more power through the swing.

Adding a resistance band to the extended leg increases core engagement, anti-rotation strength, and lower-body activation. The added challenge makes stabilization more difficult while rowing, further enhancing balance, coordination, and disassociation, leading to better weight transfer and improved swing control.

Lead Instructor David Hustell is set to play in the 2025 Senior PGA Championship starting Thursday, May 22 through Sunday, May 25 at Congressional Country Club. David qualified for the 2025 Senior PGA Championship after finishing t-17th at the Senior Club Professional Championship last year. Please join us in wishing David all the best as he prepares to compete with many former major champions on the big stage.

THE CADDIE CORNER

As we embark on our 2025 golf and caddie season, I want to extend a heartfelt thank you to the 387 unique members who took a caddie or forecaddie last year, and to all who generously support the Evans Scholarship Foundation.

For those unable to join us on Friday, April 11, for our Member-Caddie Appreciation Night, it was a memorable evening celebrating the 2024 caddie season. We proudly recognized our two newest Evans Scholars Kevin Flowers and Will Mitchell, Jr., and honored several of our outstanding youth caddies for their performance last year.

As Frank Palmer so eloquently stated, the growth of our caddie program—both at BCC and in the broader community— would not be possible without our valued partners: The First Tee of Greater Baltimore and their dedicated staff, the Evans Scholarship Foundation team, our Caddie Committee, the BCC staff, and most importantly, you, our members, including the 32 who serve as mentors to our 32 youth caddies.

Our mantra, “Take a Caddie, Change a Life,” carries real meaning. Just ask the eight Evans Scholars from BCC whose photos you see at the entrance of the Golf House, or the many caddies who have benefited from your support over the years.

Looking ahead, our goals for 2025 are ambitious but achievable:

• 500 unique members taking a caddie or forecaddie

• 5,000 total rounds

Last year, we reached 3,858 rounds. Members who contributed received the green caddie bag tag. If you didn’t receive one, please let us know—we’ll make sure your bag is tagged.

This year, those who participate will receive the silver 2025 bag tag. You might notice numbers in the corner—that’s our way of marking our collective progress. Help us hit 500 and 5,000, and those numbers will proudly appear on the 2026 tag.

Thank you again for your continued support. Here’s to a fantastic golf and caddie season!

Sincerely,

Greg Jones

Professional Emeritus Caddie Committee

As shared during the event, not every youth caddie will receive the Evans Scholarship, but we are committed to equipping each one with life skills that will serve them well beyond the course.

GREENKEEPER’S UPDATE

You may recognize this message from last month, but it bears repeating. It’s important to keep everyone informed about the recent herbicide application on the East fairways, which is helping us selectively manage ryegrass clumps and promote healthier, more consistent turf conditions.

In 2014, the East fairways were regrassed from perennial ryegrass to 007 creeping bentgrass. 10 years later, it’s become apparent that we have a problem with perennial ryegrass returning or contaminating the once solid stand of 007 creeping bentgrass. This contamination can happen for several reasons and the most logical explanation is the amount of ryegrass seed built up in the soil after years of maintaining ryegrass fairways and using ryegrass seed for divot recovery and overseeding. Afterall, perennial ryegrass seed can remain viable in the soil for 20 years. As you have observed, the ryegrass creates an unsightly patchy appearance on creeping bentgrass fairways because of the discoloration and growth habit differences between the two grass species.

voids (bare areas) in the bentgrass fill in. Reseeding can take place two weeks after the last application in the spring, and our Agronomic programs will be adjusted to ensure as speedy recovery as possible.

East Course aeration is scheduled for April 28 through May 1. We will be pulling small 1/8" cores followed by a light application of sand topdressing on the greens. In addition, we will be completing deep tine aeration and utilizing 5/8" coring tines on the tees.

Over the years, we have tested numerous herbicides to remove these clumps from bentgrass fairways. In April, we began a selective herbicide program to remove perennial ryegrass and return the uniform stand of creeping bentgrass. Research and recommendations from various independent research have suggested spring applications are preferred to reduce yellowing and potential injury of the bentgrass. The herbicide is called Manuscript and is applied with a surfactant. For the material to be effective, we will require two or three applications and repeat every three weeks. Please be aware that the clumps will turn yellow and eventually die. This will be unsightly until the
