TRAIL BREAK SERVES UP VIBRANT TACOS AND BRIGHT COCKTAILS

cross the street from the Quechee Gorge Visitor Center, Trail Break’s lime green, hot pink and tangerine exterior is tough to miss. Most days, the summer evening crowd must wait outside for a table or a seat at the bar. Local fans are willing to linger to experience the energy of Trail Break’s bright aesthetic, loud music, unique tacos and colorful cocktails.

“We’ve got a good vibe. It's a fun place to come,” says owner Topher Lyons. “It's worth the wait. That's always our hardest part: we are pretty busy, to the point where, if somebody is driving by ... a lot of people continue to pass by because they look and the parking lot is full and there's a line out the door.” Lyons says that, once he’s able to get diners in the door, they keep coming back.

RENOVATED LOCATION, REFRESHED

STAFF

Lyons founded Trail Break in White River Junction in 2017 after relocating here from Southern California with his wife. The focus on California-style tacos and craft beer was uncommon in the area. He added a food trailer the following year, and growth accelerated.

Today, Trail Break operates three trucks for catering, which comprise more than half the business, plus the seasonal restaurant in Quechee. This is the second season that Trail Break has operated out of the Quechee location.

“It’s a really cool, cool building that feels more like Trail Break than the old Trail Break did, which is awesome,” says Lyons.

The move to the Quechee location, which is not equipped for winter use, was a strategic pivot to address staffing challenges and empyee burnout. Trail Break is open from April through October.

A focus on catering and post-COVID staffing challenges madTrail Break’s hours irregular last summer.This year, refreshed and reorganized, Lyons says Trail Break should have a consistent schedule.

“I've got an awesome catering and restaurant manager. I've got a kitchen lead who's been with me for fie years,” Lyons says. “I hired an awesome new kitchen manager who's killing it. And we've got these really hard-working local college kids mixed with international students from like Thailand and Colombia, Kazakhstan, Albania, and they're coming over with a huge enthusiasm to work and learn.”

The restaurant is open Monday, Friday and Sunday, 11:30 a.m. to 8:30 p.m., and Tuesday and Thursday, 4 to 8:30 p.m. Parties of six or more, and members of its Coaster Club, can make reservations. Notably absent are Saturday hours, when catering contracts occupy the staff

“We can make the decisions to be closed on Saturdays, because we feel so confidet that we have this following, we don't have to rely so much on tourists who would more typically come in on a Saturday,” Lyons says. “We can really pull in our regulars and our loyal contingent on those Mondays and Tuesdays.”

Trail Break’s food trucks, which are equipped to be full bars in addition to food service, can handle events with 20 to 450 guests.

much a feature of the restaurant as its menu. Bright hues of lime, teal, pink and orange create a scene with elements that speak to Vermont’s mountain recreation and California’s sun and surf.

The restaurant consciously doesn’t play cable sports, but only screens fun visual activities like snowboarding, mountain biking and surfin, which can be viewed passively.

Louder-than-typical music fuels the highenergy ambience.

“One of the best compliments I always get from new people at the bar, which I literally got from this nice couple traveling through two days ago, was that the vibe is great at the place,” Lyons says. “The food has to be good, the drinks have to be good and the service has to be pretty good for people to acknowledge that the atmosphere, the vibe, everything else beyond that is something that they're perceiving. That's pretty huge.”

SERVING UP VALUE AND CONSISTENCY

The fun vibes carry over from the space to the menu, where Lyons tries to balance a consistent product with a high perceived value while keeping costs reasonable.

“If someone can come in and get a margarita for under nine bucks, and a couple tacos and a side, and be all in for under 30 bucks, I think there's something to be said for that,” Lyons said.

Especially with new staff and a seasonal schedule, Lyons says he’s mak ing an effort to check in with guests, especially regulars, to make sure the dishes meet consistent quality standards.

“Consistency is at the heart of what we do,” he says. “Whether it's a cocktail or a taco or anything else on the menu, you're gonna lose a lot of people if you're inconsistent.”

“The black bean burrito is killer,” Lyons says. “It's just a sleeper, in the sense that it's not as exciting as the Mahi taco, but it's one of those that certainly stands out.” They also have nachos, street corn and duck wings as starters.

A SPIRITED SELECTION

Trail Break’s full name appends “Taps and Tacos,” highlighting a vision of blending West Coast-style tacos with Vermont craft beers. Its tap list features local breweries and rotates through seasonal drafts.

But you won’t find just beer behind the ba.

“On the cocktail side, we have margaritas and fun drinks, not pretentious drinks,” Lyons said. “They're colorful; they match the vibe.”

Trail Break puts a Vermont spin on a standard margarita with maple syrup replacing

a purple Hibiscus-infused Agave Mojito. It’s made with real dried hibiscus, not syrup, which adds vibrancy to the hue.

Trail Break is collaborating with Vermont Spirits, just up the road in Quechee, to fulfill its commitment to spotlight regional craft suppliers. Vermont Spirits’ No. 14 Maple Bourbon goes into Trail Break’s Maple Mole Old Fashioned. A cocktail using Copper’s Gin is in development, too.

With its crowd-pleasing atmosphere, Trail Break invites guests to enjoy vibrant dishes, approachable drinks and a vibe that keeps them coming back.

Combine all ingredients in a shaker with ice. Shake for 15 to 30 seconds.

Strain into a tiki mug.

3 ounces pineapple juice

1 ounce sweet and sour mix

(1 part simple syrup to 1 part lime juice)

Add vodka, light rum, blue curaçao, pineapple juice and sweet-and-sour mix into a shaker with ice and shake until well-chilled.

Strain into a Hurricane glass with crushed ice.

This intimate, indoor dinner features a fie-course menu from the leaders of Vermont’s culinary scene, including Spruce Peak Executive Chef Sean Blomgren, and wine partner Skurnik Wines & Spirits, which shared this cocktail recipe.

Rum-Bar Daiquiri

2 ounces silver rum (like Rum-Bar Silver)

1/2 oue sugarcane syrup (like Rhum J.M Sirop de Canne)

1 ounce fresh lime juice

Combine all ingredients in a shaker and shake vigorously with ice until well-chilled. Strain into a coupe glass.

Garnish with an orange slice.

Prepare an old-fashioned glass with ice. In a cocktail shaker, add lime juice, rum, orange curaçao, orgeat and ice, and shake until chilled, about 20 seconds.

The state’s deepest lake was carved out by glaciers thousands of years ago, and today it’s a destination for hiking, swimming and paddling. 1 1/2 oues light rum

1 ounce cognac

1/2 oue dry gin

2 ounces lemon juice, freshly squeezed

1 ounce orange juice, freshly squeezed

1/2 oue orgeat

1/2 oue oloroso sherry

Mint sprig

Add all ingredients except the oloroso sherry into a shaker with ice and shake until well-chilled.

Strain into a chilled Collins glass filled with crushed ice, adding additional crushed ice if needed.

Float the oloroso sherry on top. Garnish with mint.

Tropical Cherry (serves 2)

6 ounces clear rum

1 ounce orange liqueur

4 ounces blood orange juice

6 ounces pineapple juice

2 ounces cherry simple syrup

Plus whole cherries for garnish

Pour all ingredients into a cocktail shaker with ice. Seal the lid and shake for about 10 seconds.

Using a Hawthorne strainer, pour over ice in two highball glasses. Garnish with a cherry.

Cherry Simple Syrup

11 ounces cherries, halved and pitted

1 ounce water

1/4 cup sug

In a saucepan over medium heat, combine cherries and water. Stir until the cherries have cooked down and add sugar. When sugar is dissolved, remove from heat and strain the cherry mixture through a fin-mesh strainer. Store in an airtight container in the fridge for up to a week.

Tiki Cooler (makes four)

6 ounces pineapple juice

6 ounces coconut milk

3 limes, juiced

2 tablespoons almond syrup

1 cup club soda

4 pinches nutmeg

Lime wheels or pineapple wedges for garnish

4 sprigs fresh mint

Ice

Add pineapple juice, coconut milk, lime juice and almond-flvored syrup to a pitcher with ice. Stir until chilled. Strain the mixture and pour into 4 glasses.

Top each glass with club soda — mocktail will foam up.

Dust each mocktail with nutmeg. Garnish with fruit, sprig of mint and a festive tropical umbrella.

Bennington Battle Day Bennington

On Aug. 16, Vermont marks a unique state holiday, Bennington Battle Day, this year observed on Aug. 15. Celebrating the Continental Army’s success against a British raid, this battle (that never actually reached Bennington) was a critical victory and helped lead to the British surrender at Saratoga two months later. You can mark the occasion by visiting the Bennington Battle Monument, the tallest man-made structure in Vermont. Regular admission is $8 for adults and $2 for children, but on Bennington Battle Day, the monument and all state historic sites will have free admission. There are usually historical reenactments over the holiday weekend.

1 ounce dark Jamaican rum

1 ounce gold demerara rum

1 ounce white Cuban or Puerto Rican rum

1 ounce honey syrup

1/2 oue club soda, chilled

3/4 oue grapefruit juice, freshly squeezed

3/4 oue lime juice, freshly squeezed

Add the dark rum, gold demerara rum, white rum, honey syrup, club soda, grapefruit juice and lime juice to a shaker filled with crushed ice and shake until well-chilled (about 30 seconds). Strain into a chilled rocks glass with fresh crushed ice. Garnish with sprig of mint and lime wheel.
