The Miller’s Toll Dinner Club Bennington With moody lighting and semi-private dining nooks, The Miller’s Toll should be on your list of stops if you’re seeking artfully crafted cocktails and small plates that satiate. Miller's Toll features a menu of dozens of “libations” curated by eras and often utilizing made-in-Vermont products, including Barr Hill’s gins.

Newly renovated Tourterelle champions simplicity and quality in its atmosphere and menu. At Tourterelle, the fusion of classic French dishes made with local Vermont products delivers distinctive flavors to the Champlain Valley. Tourterelle is a member of the Vermont Fresh Network, partnering with local farms to bring the region’s best seasonal ingredients directly to its recipes.

Vin Chaud (Hot Wine) 1 orange 1 lemon 1 bottle red wine merlot, pinot noir, burgundy ½ cup brown sugar 1 large or 2 small cinnamon sticks plus extra for serving 1 star anise 1-inch piece fresh ginger, peeled 1/8 teaspoon freshly grated nutmeg Wash orange and lemon, especially if they are not organic.

Peel a few strips off the orange, avoiding the white pith, and reserve for serving. Then slice the orange into half-inch rounds.

Peel the lemon in long strips, avoiding white pith.

VERMONT PRODUCT

Combine orange slices, lemon peel, red wine, brown sugar and spices in a large saucepan and bring just to a simmer over medium heat. Stir until sugar dissolves.

Turn down the heat to low and cook for 20 minutes to let the spices infuse. Make sure the wine does not boil. Boiling will negatively affect the flavor and cause some of the alcohol to evaporate. There should be small bubbles on the surface and some curls of steam rising from the liquid.

After 20 minutes, strain wine through a fine-meshed strainer into a clean saucepan or remove the orange slices, star anise, cinnamon and ginger with a slotted spoon. Keep over a very low heat.

Serve with an orange twist and cinnamon stick in each glass.

Hot off the Press 1 ounce Tom Cat Gin from Barr Hill 1 ounce Amaro Ciociaro 6 ounces Vermont apple cider 1 ounce orange juice ½ ounce raw honey syrup (2:1) Freshly grated nutmeg to top Heat cider, orange juice and honey syrup in a mug. Add gin and Amaro to a glass, then top with hot cider mixture.

Using Amaro is a nice way to spice up a drink instead of making an actual mulled cider. Experiment with different Amari as you’d like; some like Montenegro will be sweeter but delicious. Nardini will add a nice espresso/dark chocolate aroma, and others like Fernet Branca might just be too intense and mentholated.

Dishes are based on premium ingredients found only miles from the restaurant in the lush Green Mountains and Champlain Valley.

Into the Woods 1½ ounces bourbon 2 ounces dry hard cider 2 ounces ginger beer 3 dashes Angostura bitters Large lemon wedge, for garnish

Flat White Martini 1¾ ounces Baileys Original Irish Cream ¾ ounce vodka ¾ ounce espresso 3 coffee beans (for garnish)

Combine bourbon, cider, ginger beer and bitters in a tall glass with ice and stir gently to combine.

Garnish with a large lemon wedge, squeezed into the drink and then added to the glass.

Measure your Baileys, vodka and espresso, and add to a cocktail shaker.

Shake hard over ice.

Strain into a martini glass, and garnish with the coffee beans.

Starry Night Café Ferrisburgh While the secluded patio surrounded by flowering plants is closed at this time of year, Starry Night Café still offers a cozy atmosphere indoors. The building is, in part, a former cider mill with original beams and floorboards, plus a newer octagonal addition with a fireplace and mini booths.

Norwegian Woods (makes 2) 4 ounces simple syrup 6 raspberries 10 blueberries 4 blackberries 2 sprigs fresh rosemary juice of ½ lime ½ cup vodka Ginger ale Divide the berries and the rosemary between two old-fashioned glasses and muddle.

Add ice to the glasses and then divide the lime juice, simple syrup and vodka in half between the glasses. Stir. Top with the ginger ale.

MAPLE OLD-FASHIONED 1½ ounces WhistlePig Small Batch Rye, Aged 10 Years ¼ ounce maple syrup 3 dashes bitters Orange peel for garnish Add all ingredients to an old-fashioned cocktail glass. Add ice.

Stir until maple syrup is properly diluted. Garnish with fresh orange peel.

Fill shaker with ice, cover and shake vigorously until outside of shaker is very cold, about 20 seconds. Strain cocktail through a Hawthorne strainer or a slotted spoon into an old-fashioned or rocks glass filled with ice. Garnish with orange wheel and/or cherry.
