Champagne may be made from a single grape variety or more commonly, blended from a mix of Pinot Noir, Chardonnay and Pinot Meunier. The process of Champagne-making is in fact very similar to wine-making with the exception of the fermentation which is done in two stages, the added carbon dioxide and the remuage (racking) which catches the sediment before the final cork is secured.

Choosing Champagne is like choosing wine. With more than seventy 'houses' to choose from and the different styles and level of sweetness, or its residual sugar as it referred to, knowledge is essential and naturally your own personal taste. These factors including whatever it is - a Vintage, Cuvee de Prestige, Ros6, non-vintage(NV), Blanc de Blancs or Blanc de Noirs bottle is utmost important Brut Nature,(bone dry)to Demi-Sec(sweet)is measured by the percentage of sugar in grams per litre. Out Of Africa Thursday 24 February 2005 If you're a Zulu, never give a strand of pink beads to a woman you love (it tells her that you can't afford her

bride price), whereas green beads say you'll wait for her until you're as thin as a blade of grass. These are just two of the many pearls of bead lore speaker Amelia

Herran shared with the February ladies lunch crowd. And while the oldest African beads were made of natural

substances - coconut shells, rocks, ebony, horn, broken bits of ostrich eggs (now an endangered substance, much like ivory), cowries, bananas seeds, teeth and

even snake bones, the entry of European glass beads

(1700-1900)for barter against African gold, ivory, palm oil and slaves changed all that. Today, both old and new beads can be found across

the continent although the same beads are worn differently by the different tribes because - in a nutshell - "beads travel".

Thank you, Amelia, for a fascinating glimpse Into the colourful world of African beads.

Valentine's Day Dinner Monday 14 February 2005 This was our Chinese New Year Ladies Lunch and we were treated to a

Sixty-four couples had a romantic Valentine's Day Dinner in the Churchill Room this year. The ladies were presented with beautiful red roses and special chocolates, and adding to the ambience was a lovely harp recital.

The resident band, Joy & The Face Facts provided the music for dancing the night away.

wonderful meal, starting with the favourite of the season Vu Sheng, which we tossed appropriately with all our hopes and wishes for the year of the Rooster and luck was flowing in all directions! The following main course

and desert were deliciously and interestingly created reflecting the Chinese festive season.

After lunch, we were taken into the world of Cantonese Opera. It was explained to us why for instance in the Cantonese Opera the women play the part of men and we saw some of the moves demonstrated by two actors

who then continued with an excerpt of "Picking The Jade Bracelet". They played "the village maiden" and "the scholar" and it made so much more sense because we knew some of the moves.

The introduction was by Chinese Theatre Circle's Artistic Director Mrs

Joanna Wong Quee Heng. At question time afterwards, she was even persuaded by some of our ladies to show us a piece herself. It was brilliant

- her moves as well as her crystal clear unique voice.

CTC was established in 1981 and they have been promoting Chinese operS?''' dance and music in Singapore and overseas in 22 countries worldwide

(including China)! They got an award for "Excellence For Singapore" in 1997 for their efforts. Last year they performed in Guangzhou in English and it was a huge success, it was an interesting and enlightening afternoon, a big thank you to the organizers. I am only feeling sorry for the ladies who missed out on a great event! Birgitte Lund

The Scuba Section cordially invites all members and their guests to this free slideshow and talk by the renowned marine photographer and conservation writer.

Those of us who attended Tony Wu's first slideshow and talk at The Tanglin Club in 2003 were treated to superb underwater images and amazing tales

of one man's passion for capturing the beauty of the marine world. Tony retums to update us on what he has been doing since winning the prestigious Antibes Grand Prize for underwater photography with his book "Silent BlacktipRj j^Sharks

Symphony". His recent dive destinations include the Bahamas, Crystal River, Lankayan, Tonga and Papua New Guinea, and his photographs cover a range of marine creatures, from teeny-tiny gobies and hermit crabs to enormous 60-tonne whales. Tony's commentaries, as he talks 'tall tales' about his adventures and circumstances under which some of these shots

were taken, are often as entertaining as the images themselves.

Tony has also been working closely with Canon, and although still primarily a film person, he has started using digital SLRs above and below water. He has run a series of digital workshops, so will be a great resource for those who are venturing into digital photography. Shrimp

the idea of breaking a date with a friend.

It's raining outside. Your shoes are wet and you don't really feel like going for a walk, but your cell phone is blinking with a message from your buddy that says she's already left the house and she'll meet you at the trail. You know you have to go, or she'll give you a hard time for ditching her. So, you grab your soggy shoes and head for a power walking session. Aftenwards, you

OK,so you're sold on the Idea of a fitness buddy. But wanting one can be easier than finding one. Your regular friends might not be into fitness, or they're the kind of people who start something with good intentions and gradually slack off. It's important to find someone who is as dedicated to fitness (or more dedicated) than you are. But

Once you find a fitness buddy, don't let him or her down. If you both show motivation and keep to a regular schedule, you'll both reap the benefits.
