S"pring is a reckoning. A moment when the world exhales, unfurling from the grip of winter, daring itself to begin again. This issue of Manner is about that audacitythe courage to rebuild, redefine, and step into the light after darkness.

Our cover star, Alicen McNair, knows this journey intimately. Hers is a story of survival, not the neat, polished kind, but the raw, unflinching reality of clawing her way out of addiction, escaping domestic abuse, and finding herself again. It takes a rare kind of strength to own your past, to say, 'This is what I’ve endured, and I am still here'. Matt Porteous captures that strength perfectly, her beauty not in spite of her struggles, but because of them.

Fashion, too, is an act of transformation. In Spring Awakening, we shed the layers of winter and embrace something softer, something freer. In our feature on Voyage, we unravel the story of a brand that built itself on the power of exclusivity - until that very exclusivity became its downfall. It’s a reminder that in fashion, as in life, evolution is everything.

This issue also pulls back the curtain on the quieter addictions; the ones that don’t get whispered about in dark rooms, but the ones

we feed every day. The endless scroll, the search for validation, the way we pour ourselves into digital spaces, hoping for a hit of something real. Addiction is more than alcohol or substances; sometimes, it’s as simple as the need to escape ourselves.

And then, there’s Denim Day. A movement born from injustice, a protest against the idea that clothing could ever be consent. On April 30th, I’ll be wearing denim, not as a trend, but as a statement. As a reminder that silence is complicity and that every survivor’s story deserves to be heard. Jersey Action Against Rape (JAAR) invites you to take part in the Denim Day March on Saturday 19th April 2025, from 11:00AM to 1:00PM in St Helier.

But not everything in this issue is heavy. We also explore the lighter side of life, from the power of essential oils in a piece by Claire Bradbury to healthy snack recipes by Christian Gott. Plus, our Secret Eaters team takes on Red House Pizzeria—because sometimes, indulgence is just as important as restraint.

Certain brands emerge in the fashion world, captivating the zeitgeist with their unique vision and audacious approach. Voyage, a British fashion house founded by the eccentric Mazzilli family, was one such brand. Their journey, marked by exclusivity, artistic flair, and a touch of controversy, is a fascinating case study of the dynamics of the fashion industry.

The story of Voyage begins in the early 1990s, when Tiziano and Louise Mazzilli, along with their children Rocky and Tatum, established their boutique on London's fashionable Fulham Road. The brand quickly gained recognition for its distinctive aesthetic, a blend of vintage-inspired designs, bohemian chic, and a touch of theatricality. Their creations, often adorned with ribbons, embellishments, and unexpected details, exuded a sense of individuality and artistic expression.

Their unconventional approach to customer relations further amplified Voyage's reputation. The Mazzillis implemented a "Members Only" policy, restricting access to their boutique to a select clientele. This strategy, while raising eyebrows and attracting criticism, only fuelled the brand's mystique and desirability. Celebrities and fashionistas clamoured for an invitation to the exclusive world of Voyage, eager to acquire one of their coveted pieces.

Among those who sought entry into the exclusive world of Voyage were two of the world's most recognisable figures, Madonna and Naomi Campbell. However, their experiences with the brand were far from ordinary.

Madonna, the pop icon known for her everevolving style, was allegedly turned away from the

Voyage boutique due to her casual attire. While this incident added to the brand's notoriety, it also sparked criticism for its perceived snobbishness.

Naomi Campbell, the supermodel with a reputation as fierce as her runway walk, had a more complex relationship with Voyage. Initially an exclusive circle member, she was banned from the boutique, reportedly for rude behaviour. This incident further solidified Voyage's reputation for exclusivity and willingness to enforce its strict code of conduct, even for high-profile personalities.

Despite their initial success and the allure of exclusivity, Voyage's reign was not to last. As the fashion landscape evolved, the brand struggled to adapt - the rise of fast fashion and the increasing demand for accessibility challenged Voyage's business model. In the early 2000s, the company faced financial difficulties and ultimately went into liquidation.

The rise and fall of Voyage is a fascinating tale that encapsulates the allure and challenges of the fashion industry. The brand's journey serves as a reminder of the changing tides of fashion and the importance of adapting to the evolving landscape. While Voyage may no longer be a prominent name in the fashion world, their legacy inspires and influences future generations. 

Born in Chester in 1967 alongside her twin brother, Alicen had no idea what path her life would take. But it was at just six months old that her life first changed dramatically when she was adopted alongside her twin brother. Alicen was just a tiny baby, already having moved homes and now living with a couple who had children of their own and who, she says, 'never really loved her like their own.'

'Family life was very regimental,' she recalls. 'We had to go to church every Sunday, and both my parents were very strict. We lived in a big house in a very posh area, but the school I attended was in a market town, so I always felt I stuck out and didn't have many friends.

'I was dyslexic, but it wasn't understood back then, so everyone just thought I was thick. People didn't realise it was a condition, and I struggled in school.'

Alicen remembers spending a lot of time in her bedroom and says she didn't socialise with friends. She was constantly told she would never go to university and her father only wanted

Alicen to find a career based on her beauty. Alicen always felt her father only had hopes for her to become Miss World or make money from her looks due to her long brunette hair and hourglass figure.

'He used to tell people that I would never go to university and it made me feel worthless,' she said.

'I didn't get on well with my mum either, and spent no time with her. I was never allowed to go in the kitchen or help with cooking. We didn't have a good relationship. She never told me she loved me, and I don't remember being kissed by either of my parents. Trying to get a word in at the dinner table was pointless, and I always felt like the odd one out of the family.'

Having left school at 16 years old, struggling with education, and not knowing what she wanted to do, Alicen got a job at a hair salon, Vidal Sassoon, in Leeds. Vidal Sassoon salons were renowned for luxury and were famous worldwide. She recalls being picked for the role over hundreds of applicants and remembers feeling proud for the first time. It was a job she loved and remembers fondly. But still,

Alicen struggled, living with her parents and spending most of her time alone.

'I didn't have many friends and didn't go out much,' she said. 'I used to like staying in and watching horror movies with my brother. I have fond memories of doing that. I remember my brother turning the light off and making me run upstairs in the dark, and I would be so scared. I used to love watching Monty Python and remember sitting and watching that with my brother.'

It was during this time that Alicen had her first experience of domestic abuse, being raped at just 16 years old by someone she trusted. Experiencing no love at home, Alicen liked the attention she received from those around her and quickly started getting attention from those older.

After having experienced her first rape, she remembers: 'I rang my dad, and he picked me up, and he didn't say a word to me in the car. It wasn't allowed to be spoken about, and the police weren't involved, and nothing was done about it. Years later, my older half-brother rang me and apologised for not doing anything at the time.' 

"BUT WITH THE TOPLESS SHOOTS, HIGH-END LIFESTYLE, AND ENDLESS PARTYING CAME ALCOHOL AND WITH THAT CAME ADDICTION."

Pausing for thought, Alicen explains that just months later, she was engaged to a different man and was trying to move on with her life, but sadly, that did not work out either.

Despite the wedding never going, Alicen had a date set, dress picked, and everything organised. Alicen discovered that her husband-to-be had an affair, which led to Alicen taking an attempt on her life. It was her older brother who found her and saved her life.

'I will always be forever grateful to him [brother] for finding me that day,' she said.

At 18, Alicen finally had what she thought was her dream wedding to her second long-term partner. She had met her husband in the local pub where she was working, and four weeks later, they tied the knot.

'That was my first domestic relationship,' she said. 'It was a terrible time. My husband worked away, and whenever he came back, he would be violent towards me. We were married for three years before the relationship ended, and I moved back to Leeds.

'Domestic violence wasn't what it was back then. I didn't have support and didn't go to the police because I wasn't encouraged to.'

Alicen remembers being told to look in the mirror and seeing her own reflection and not knowing it was her because of the extent of the bruising on her face. Alicen was forced to pick up and carry on.

A chance meeting on a train some months later led to Alicen's lifechanging path once again. For the next five years, Alicen modelled for top-shelf [porn] magazines and was hired by Galaxy Promotions. She was photographed by Jim Carter, who was famous for black-and-white photography. It wasn't long before Alicen appeared on the front pages of magazines and was living a life where she was popular for the first time, attending high-end clubs and drinking with stars.

'I had been amateur modelling for a few years, but nothing had really come of it. I was on the train one day, and the man opposite me started chatting with me,' Alicen said. 'He was taking photos of girls for Penthouse Magazine (a men's

magazine) and doing some Page 3 stuff. We started chatting, and he asked me if I was interested in going to the studio and taking photos.

'I met him in Manchester and did my first proper shoot. It was 'a girl about town shoot.' I had never done anything like that before, but I loved it. I looked different to everyone else. Everyone was blonde, and I was this little brunette thing, and they liked me.'

But with the topless shoots, highend lifestyle, and endless partying came alcohol and with that came addiction.

Alicen said,' I earned great money. I used to go to all the clubs, and I would buy amazing clothes. I had a lavish lifestyle.

'I used to dance in clubs, and I felt sexy. I felt loved. I was drinking and partying, but I didn't see it as a problem. It was just part of the lifestyle I was living at the time. I was body confident, and I felt great. I would drink champagne before the shoot. Looking back, most of my shoots, I was drunk. The drinking masked everything, but I felt beautiful and fabulous. It was the first time in my life I had felt like that.'

Whilst Alicen was modelling, she was in a relationship which soon turned abusive due to jealousy. Alicen remembers turning up to work and being covered in bruises. She remembers the other girls covering them up with make-up, so Alicen could still work.

The modelling ended when Alicen's partner decided he had had enough. The relationship soon ended, and Alicen was stuck again, having had another failed marriage and years of abuse. It was then she decided to move to Jersey, where her twin brother was living at the time. Alicen packed her bags and left her old life behind. She arrived in Jersey with nowhere to live, nowhere to work, a domestic abuse survivor and struggling with an alcohol addiction.

Alicen worked for various pubs and cafés before being offered a job at Roseneath Hostel, supporting the island's homeless community.

'When I first moved to Jersey, I went out every night,' she said. 'The accommodation was terrible. I was living in tiny bedsits, and you had to pay extra to have a bath. I was drinking all the time, but I still didn't see it as a problem. I was partying all the time.

'I then got a job at Roseneath Hostel. It was a good job, and I looked after homeless people. I would work day and night shifts, and I really enjoyed it.

'I am proud to have worked there, but sadly, my drinking started to take over, and I lost my job due to the alcohol. I eventually plucked up the courage to ring a local support group, and I have been with them for more than 24 years.'

She remembers: 'The group meetings were very rough and ready back then. We had no heating, big brass kettles, and we used to meet in freezing cold rooms. It took me two years to get sober, and then I remained sober for eight years until I had my first relapse. Those years I was sober were the best years of my life. I was happy and healthy.'

Alicen still struggles with her addiction and will have highs and lows but is a valued member of a local support group, who she says are like family. The islander still battles every day with memories of abusive relationships and living with the fact she has lost babies to miscarriages and abortions. Still, she is determined to keep going. She volunteers for a local charity once a week, attends support meetings, and engages with the Adult Mental Health Team. Alicen is supported by The Drug and Alcohol Service, Jersey Domestic Abuse Service, FREEDA and The Shelter Trust and thanks them all for their support.

Despite suffering years of abuse, addiction, and not feeling loved by her own family, Alicen says: 'I would say, no matter what happens in your life, you can get through it. Some days, you don't even want to be here, but you must keep going. The local support group and some really good people have kept me going.' 

THE JOURNEY

When I met you I thought things were great

Then slowly you started to shut the gate

Take over my friends, keeping me close by and slowly, slowly creating your lie

A little slap here and a punch there

How sorry you were the very next day

The control began

You took me hostage in my home

I totally lost myself

Chilled with fear right to the bone

Needles in my arm, You said the feeling would do no harm

Losing control

Leaving me feeling trapped and all alone

I turned to the bottle

To take away the pain

Of being in love with someone who Just caused me pain again and again

No-one to talk to

Nowhere to turn

No self-esteem and only you to blame

I took a deep breath

This has to be wrong

Called the police and now you're gone I'm now with friends back in my life

Feeling loved again

I can start the road back to find me again

Court case looming ... Fear setting in But in my heart

I know I'm doing the right thing You have to understand, you were wrong

No woman should be locked away

With fear in her belly and nothing to say I will stand up and say my piece.

I hope one day you see you were wrong.

I look in the mirror and what do I see?

A bruised and battered face

Looking back at me

No more sorrys and no more pain I've stood up and I will again

You serve your time

And come out a changed man

But by then I will be so strong

So take a breath and walk away

Knowing that hitting women is wrong.

ADDICTION: A LOVE STORY

THE COMMON THREAD IS THE PURSUIT OF AN ALTERED STATE, A TEMPORARY REPRIEVE FROM THE DISCOMFORT OF BEING OURSELVES.

You wake up late. Your head pounds, your stomach churns, and last night’s poison sloshes inside you like a cheap cocktail of shame. Your mouth is dry, your tongue tastes like an old ashtray, and your jaw aches—maybe from grinding your teeth, maybe from saying the wrong thing to the wrong person. Maybe you remember what happened. Maybe you don’t. Maybe it doesn’t matter. Because before you even drag yourself out of bed, before you even breathe properly, you check your phone.

Thumb scrolling. Mind blank. Doom-scrolling through news, sports, memes, filth. Some stranger online calls you a legend. Some girl you don’t even like has left you on read. You tell yourself it doesn’t matter, but you keep looking. Keep checking. Keep clicking. Like some poor bastard at a betting shop, waiting for the odds to shift in his favour.

It’s not entertainment. It’s not fun. It’s just something to fill the silence. To stop you from feeling like a useless sack of flesh taking up space. And that’s addiction, isn’t it? Not just

heroin, not just cocaine or pints or pills or chasing the next warm body. It’s need. A constant, gnawing need— for distraction, escape, that fleeting moment where life doesn’t feel like one long, slow funeral. Maybe you gamble. Maybe you crush weights at the gym six days a week, chasing a body that’ll never be enough. But thanks to TikTok, we’ve entered a brave new world where anyone with a ring light and an unearned sense of confidence can declare themselves an expert. Forget training. Forget qualification. Forget basic common sense. All you need is a “vibe” and some hashtags, and boom, you’re ready to ruin someone’s hair, face, or dinner.

Welcome to TikTok University, where disaster is the core curriculum, mediocrity gets a standing ovation, and anyone questioning the chaos is labelled a “hater.” From cooking to cosmetic procedures to literal aviation (yes, really), TikTok has birthed an army of overconfident, underqualified creators who are out to influence the world—one poorly executed service at a time.

TIKTOK CHEFS: WHEN “VIBES” ARE THE ONLY INGREDIENT

Once upon a time, chefs were revered artists who spent years perfecting their craft. Today, TikTok “chefs” have redefined cooking as little more than reheating frozen food and arranging it with the flair of a sleep-deprived toddler.

Take the classic TikTok meal: a Marks & Spencer’s fish pie. It starts in the microwave, where it’s nuked to the texture of molten regret. Then, for a side, they steam frozen vegetables until they achieve maximum limpness. The pièce de résistance? A swirl of ketchup, zigzagged across the plate as if Jackson Pollock had a bad day. The captions are the best part: “Michelin-star vibes tonight! #ChefLife #FoodieGoals”. Michelin-star vibes? Darling, this is barely cafeteria quality. It’s giving “school dinner tray,” not fine dining.

But don’t you dare suggest this isn’t gourmet. Criticism is met with the wrath of the TikTok masses: • “Wow, jealous much?” • “Not everyone can handle this level of creativity.”

TIKTOK HAIRDRESSERS: CUTS, CHAOS, AND TEARS

Once a profession that required skill, training, and an eye for detail, hairdressing has now been hijacked by overconfident amateurs with kitchen scissors and a ring light. Imagine this: A hopeful client sits down, Pinterest photos of sleek blunt bobs in hand. Five minutes later, they leave looking like they’ve been mugged in a back alley by a drunk

vagrant wielding a broken bottle. The TikTok stylist? Thrilled. “OMG, it’s giving edgy!” they squeal, posting a selfie with their victim. They slap a filter on to hide the uneven fringe and post it with hashtags like #HairGoals and #SmashItAgain. It doesn’t end there. Blow-drying is another TikTok horror show. A sleek, glossy finish? Forget it. Clients leave with a frizzy, burnt nightmare that looks like it was styled with a travel iron and an attitude problem. The stylist calls it “volume,” but we all know it’s just irreparable heat damage. The comments, of course, are an echo chamber of delusion:

• “Why pay for a salon when you can do it at home?”

• “Haters just don’t get your creative vision.”

Yes, Kev, because nothing screams creative vision like a haircut that makes you look like you lost a bet with a hedge trimmer.

TIKTOK AESTHETICS: FROM WAXING TO FILLERS, NO LICENCE REQUIRED

But the chaos doesn’t stop with hair. No, TikTok creators have now moved into the terrifying world of aesthetic procedures. Botox, lip fillers, and cheek enhancements - services once reserved for trained medical professionals—are now being offered by nail techs and waxing specialists who’ve “pivoted” into aesthetics.

Imagine lying back in the corner of a nail salon, surrounded by acetone fumes and fake plants, as the girl who used to give you a Hollywood wax approaches with a syringe. “Don’t worry, babe,” she says confidently. “I watched loads of tutorials, and this filler is, like, totally legit. I got it online.”

The results? A mixed bag of horror. Uneven, lumpy lips. Overfilled cheeks. Foreheads frozen into a permanent expression of surprise. But the TikTok aesthetician is undeterred. “Look at this glow-up!” they caption their work as if they’ve just performed a miracle. And if you dare to question why someone without a medical degree is injecting filler into people’s faces? “You’re just jealous of my hustle,” they’ll snap. Yes, your hustle, otherwise known as “actual bodily harm“.

COMING SOON: TIKTOK SURGERY?

At the rate we’re going, it’s only a matter of time before someone on TikTok live streams a DIY heart transplant in their kitchen. The video will start with the usual upbeat intro, “Hey guys! Today I’m saving lives with just household tools. It’s so easy #LifeHack!” Out come the sterile tools; IKEA tongs, a butter knife, and a bowl borrowed from mum’s cupboard. “Don’t worry, babes,” they’ll assure the patient. “I’ve seen all 12 seasons of Grey’s Anatomy. I’ve got this.” As the operation begins, the comments flood in:

• “OMG, you’re so brave!”

• “Doctors are such a scam. Why pay thousands when you can DIY?” The patient, pale and shaking, lies there regretting everything. Meanwhile, the TikToker pauses mid-incision to bask in the praise. “See, guys? Told you I could do it. Confidence is key!” When it all predictably goes wrong, they’ll post a follow-up video: “Hey guys, I just wanted

to say I was trying to help. Doctors mess up too, but no one bullies THEM. Please send love, not hate.” Their fans will rally, of course. “You’re doing amazing, sweetie!”, “The NHS could learn from you.”

It would be bad enough if these overconfident TikTokers were just working in isolation, ruining hair and burning dinners behind closed doors, but no, they’ve got an entire legion of cheerleaders backing them up - arguably worse than the creators themselves. These are the selfappointed reviewers, hype men, and moral support squads who not only encourage these delusions but actively promote them to others.

“DOCTORS ARE SUCH A SCAM. WHY PAY THOUSANDS WHEN YOU CAN DIY?”

Imagine leaving the house with a haircut that looks like Edward Scissorhands had a nervous breakdown halfway through. You’d expect a bit of honesty from your mates, right? But not in the TikTok world. Instead, the comments section is packed with people screaming “YAS QUEEN!” and “This is ICONIC!”

Worse, these enablers are the ones leaving glowing “reviews,” tagging their friends, and urging others to give it a go. “Honestly, I got my lips done by her, and she was soooo sweet. Only charged £50 and threw in a free eyebrow wax!” Yes, well done, Emma. Now you’ve got one lip bigger than the other, and your eyebrows look like startled caterpillars.

Their relentless support isn’t just annoying—it’s actively harmful. By promoting these unqualified amateurs, they’re not just undermining actual professionals but encouraging even more deluded behaviour. Every rave

review convinces the next TikTok wannabe that they, too, can be the next big thing with zero training and a DIY kit bought on Amazon.

SOCIAL MEDIA ADDICTION: THE ENGINE OF IDIOCY

Behind every uneven fringe, every charred steak, every unfortunate case of “pillow face” from a back-alley lip filler job, there lies a single culprit: social media addiction. TikTok isn’t just a platform—it’s digital crack. The endless scroll, the dopamine rush of a viral post, the desperate need for strangers to comment “SLAY QUEEN” under a video of you committing actual crimes against hairdressing—it’s frying our collective brain cells like a deep-fried Mars bar at a Scottish chippy.

People aren’t learning skills to master them anymore; they’re learning just enough to convince the algorithm they know what they’re doing. And because TikTok operates at the speed of light, trends move so fast that no one has time to get good at anything before they’re onto the next disaster.

One minute, they’re butchering hair; the next, they’re offering unlicensed Botox in their mum’s conservatory. Give it a few months, and they’ll be live-streaming DIY LASIK surgery with a magnifying glass and the power of positive thinking.

And the worst part? Failure isn’t just accepted, it’s actively rewarded. If you mess up spectacularly enough, you don’t just get away with it; you go viral. Mess up a recipe? 2 million views. Ruin someone’s eyebrows? A brand deal. Accidentally invent a new way to give people chemical burns? Congrats, you’re an influencer now.

Where does it end? TikTok dentistry? TikTok brain surgery? TikTok nuclear engineering? At this rate, it’s only a matter of time before someone builds a working particle accelerator in their garden shed and attempts to split atoms with a tutorial they found under #ScienceHack.

And let’s not forget—this is the same internet that collectively agreed it was a great idea to steer a submersible with a PlayStation controller. If that doesn’t perfectly sum up the TikTok mentality, I don’t know what does. 

While the day serves as a broader call to action, it holds particular significance for survivors of sexual violence. It's a day where denim becomes a symbol of solidarity, a visual representation of support, and a reminder that survivors are not alone.

The origins of Denim Day are rooted in a 1992 Italian court case where a rape conviction was overturned because the victim was wearing jeans that were deemed too tight to be removed without her consent, implying she had consented to the assault. This absurd and victim-blaming judgment sparked outrage and ignited a movement. Women in the Italian Parliament protested by wearing denim, and the movement quickly spread globally.

For survivors, Denim Day can be a complex and emotionally charged occasion. Seeing so many people wearing denim can be a powerful affirmation that their experiences are acknowledged and believed. It sends a message that society is listening and challenging the culture that often silences and blames survivors. Participating in Denim Day can be a step towards healing. It can be a way for survivors to reclaim their voice and take a stand against sexual violence. Wearing denim can be a symbolic act of taking back control and refusing to be silenced.

Ultimately, Denim Day is about creating a culture of respect and consent. It's a reminder that sexual assault is never the victim's fault, regardless of what they were wearing. For survivors, it's a day to remember their strength, resilience, and right to heal. It's a day to stand together and say, "We believe you. We support you. You are not alone."

JERSEY ACTION AGAINST RAPE (JAAR)

JAAR is an independent and confidential service helping individuals 16+ to recover from the trauma of sexual violence. JAAR stands with survivors and continues to shine a light on the deep, lasting impact of sexual violence. They recognise that sexual violence affects communities everywhere — and Jersey is no exception. In 2024 alone, 85 people received critical trauma-informed counselling and support from JAAR. These are not just statistics; they represent real people — friends, family members, neighbours — who are working to rebuild their lives after experiencing the trauma of sexual violence.

Sexual violence is far more prevalent in the local community than many might think. It is easy to look the other way, to assume that it doesn’t affect us, but the truth is that we cannot afford to bury our heads in the sand. Silence only perpetuates harm. We must face the reality that sexual violence happens here, and we must take action to support those affected and work towards lasting change.

JAAR provides a FREE 1:2:1 counselling service to support anyone affected directly or indirectly by sexual trauma or rape. The counselling sessions offer a safe, private, and confidential environment where survivors can share their experiences without fear of judgment. They take a trauma-informed approach, ensuring their fully qualified counsellors understand the complex impact of trauma and approach each session with sensitivity, empathy, and respect for the survivor’s unique needs.

Pat McGrath is a British makeup artist and one of the most influential figures in the beauty industry. Born in 1970 in Northampton, England, to a Jamaican mother, she developed a passion for makeup early on, inspired by her

mother's love for fashion and beauty. McGrath's career took off in the 1990s when she started working with top fashion photographers like Steven Meisel. "A good few years ago, there was a popular advert for a well-known chocolate brand with the tagline, ‘Everyone’s a Fruit and Nut Case’. There's a good few reasons to include more of both ingredients in our diets. Fruit is an excellent source of dietary fibre, Vitamin C, minerals and antioxidants that may boost our bodies' defences. Nuts are a good source of protein, healthy unsaturated fats and essential nutrients such as Vitamin E and Magnesium."

DATE & WALNUT FLAPJACKS

Packed with nutrients, this flapjack is ideal for a dairy-free or vegan diet.

INGREDIENTS

• 250g Porridge Oats with Wheat Bran

• 100g pitted Medjool Dates

• 100g Chopped Walnuts

• 50g Flax Seeds

• 1 ripe Banana

• 3 tsp quality Vanilla Extract

• A generous pinch of fine Sea Salt

METHOD

1. Preheat your oven to 350F/180C/Gas Mark, and butter a twenty-centimetre square, non-stick baking tray.

2. Finely chop the dates and place in a bowl. Lightly press the dates down with a spoon, cover with boiling water, and leave to soak for thirty minutes.

3. Place the banana into a food processor, add the soaked dates, liquid, salt, and vanilla - blitz to a puree.

4. Add half of the nuts and one hundred grams of the oats and process to a thick paste. Thoroughly mix the paste with the remaining oats, nuts and seeds in a large bowl. Transfer the mixture to the buttered tray and level down with a wooden spoon.

5. Place in the oven and bake for 20-25 minutes until golden brown and firm to the touch. Cool completely before cutting into pieces.

BANANA & OAT MUFFINS

Bananas are perhaps the original superfood, and their natural sweetness reduces the amount of processed sugar needed in the recipe. I boost the fibre content using rolled oats with wheat bran.

INGREDIENTS

• 2 ripe Bananas

• 200g Self-Raising Flour

• 75g Light Brown Sugar

• 50g Porridge Oats with Wheat Bran

• 50g Plain Yoghurt

• 100ml Vegetable Oil

• 100ml Full-fat Milk

• 2 Free-range Eggs

• 2 tsp quality Vanilla Essence

• 1 level tsp Baking Powder

METHOD

1. Mix the oats and milk together and soak for at least an hour.

2. Pre-heat oven to 350F/180C/Gas

Mark 4. Prepare a muffin tin with 12 cases.

3. Sift the flour and baking powder into a bowl and stir in the sugar. In a separate bowl whisk the eggs, vanilla, oil, and yoghurt together.

4. Mash bananas and stir into the presoaked oats. Combine all ingredients with the flour mix thoroughly. Carefully spoon into the muffin cases.

5. Bake for 25-30 mins until a sharp knife or skewer comes out clean. Allow to cool for a few minutes, and transfer to a wire rack to cool thoroughly.

TRAIL MIX

Trail Mix was originally made as a short-term energy boost for walkers and hikers. It is a great mid-morning snack or ideal to eat after a workout.

INGREDIENTS

• 160g Whole Almonds

• 160g Dark Chocolate Chips

• 120g Dried Apricots, cut into quarters

• 120g Sunflower Seeds

• 120g Pumpkin Seeds

• 60g Golden Raisins

• 40g Coconut Flakes

• A generous sprinkling of fine Sea Salt

METHOD

1. Mix all the ingredients in a large bowl. Store in an airtight container.
