Ladies Day at the Races is not just an event; it's a thrilling spectacle where fashion takes centre stage alongside the thundering hooves of racehorses. From the grandstands to the winner's circle, this traditionrich affair combines the excitement of competition with the elegance of high fashion, creating an atmosphere that is as captivating as it is iconic.

The tradition of Ladies Day dates back to the 19th century when horse racing became a popular pastime among the upper classes in Britain. Women would attend races alongside men, often dressed in their finest attire, showcasing their social status and wealth.

During the late 19th and early 20th centuries, Ladies Day fashion was governed by strict etiquette and dress codes. Women were expected to wear long dresses that covered their ankles, with high necklines and sleeves covering their arms. Hats were a must, often adorned with feathers, flowers, or ribbons, adding a touch of sophistication to the ensemble.

In the quaint parish of St. Ouen resides Sarah Jane Simon, an impassioned activist whose home is not only a sanctuary for her, but also the 75+ ducks and birds she cares for. Her commitment to animal welfare and her unique living situation paints a colourful picture of compassion and dedication. Sarah is a staunch advocate in the fight against PFAS contamination. With her unwavering dedication, she tirelessly campaigns for stricter regulations and greater awareness of the harmful effects of PFAS chemicals (perand polyfluoroalkyl substances), commonly known as 'forever chemicals', on both the environment and public health.

SARAH, FOR THOSE UNFAMILIAR, COULD YOU EXPLAIN WHAT PFAS CHEMICALS ARE AND WHY THEY’RE OFTEN REFERRED TO AS 'FOREVER CHEMICALS'?

PFAS are a group of man-made chemicals used in various industries around the world, especially in aqueous firefighting foams. They're called "forever chemicals" because they don't break down in the environment—or in our bodies. This longevity means they bio accumulate over time, leading to significant health risks. Initially the health consequences of ingesting forever chemicals were covered up by the manufacturers of AFFF - the movie Dark Waters portrays the story of Rob Billott's fight against the chemical manufacturers responsible and uncovers the truth.

WHAT PROMPTED YOU TO INVESTIGATE THE LINK BETWEEN THESE CHEMICALS AND THE HEALTH ISSUES IN JERSEY?

I was diagnosed with the autoimmune disorder, vitiligo in the year 2000. At this time, my family didn't know forever chemicals were present in our drinking water supply. By the year 2015, me and my family members were all sick with

varying diseases, kidney, liver, thyroid, nerve etc. it didn't make sense. This prompted me to talk to neighbours in my area and I connected the dots back to PFAS in our water supply. This realisation that our suffering could have a preventable cause was my call to action.

HOW LONG HAS THIS BEEN GOING ON FOR IN JERSEY?

Aqueous Firefighting Foam (AFFF) has been used in Jersey since the 1970's. For five decades firefighting foams containing various forever chemicals have been allowed to permeate Jersey's natural water supplies without any remediation whatsoever. St Ouen's Bay is known as the 'Plume Area' as it is located under the airports fire training ground, where run-off was not contained for decades. In 2004 the

Government of Jersey knew there was a risk of PFAS causing bladder cancer. They failed to monitor the health of all residents living in the known plume area and in my opinion, they are still failing to protect the islanders from forever chemicals. The island needs an updated water plant to remove PFAS from the environment and its waterways.

CAN YOU DESCRIBE SOME OF THE HEALTH EFFECTS THAT YOU AND YOUR NEIGHBOURS HAVE EXPERIENCED?

Absolutely. In our community, there’s been an alarming rate of kidney stones, cancers, thyroid and autoimmune diseases. We’ve seen young children with severe illnesses, all living in the shadow of contaminated sites. It’s heartbreaking and completely unacceptable.

WHAT STEPS HAVE YOU TAKEN TO ENGAGE THE GOVERNMENT AND PUBLIC ON THIS ISSUE?

I’ve compiled extensive research, conducted community blood tests to prove PFAS exposure, and organized public meetings to raise awareness. Despite the bureaucratic hurdles, we're gaining traction and making our voices heard.

HOW CAN PEOPLE HELP IN YOUR FIGHT FOR A CLEANER, SAFER ENVIRONMENT?

Support our cause by staying informed, sharing information, and pressing policymakers for change. We also need people to advocate for stricter regulations on industrial pollutants and better environmental practices, particularly where Jersey Water is concerned. For forty years our local environmental agency has known just how polluted groundwater is here in Jersey, it isn't just forever chemicals, there are countless pesticides, fertilisers and other dangerous chemicals out there causing cancers.

WHAT IMMEDIATE STEPS CAN INDIVIDUALS TAKE TO PROTECT THEMSELVES FROM PFAS EXPOSURE? Be cautious about your water sources;

invest in high-quality water filters if possible. Also, consider the origin of your food, particularly seafood, as PFAS can accumulate in fish and shellfish.

WHAT ARE YOUR HOPES FOR THE FUTURE OF JERSEY'S ENVIRONMENTAL POLICIES?

I hope for a future where our environment is no longer an afterthought in industrial operations. We need policies that prioritise public health and safety, ensuring clean water and a toxic-free environment for all. Most urgently needed are water plantations that seriously reduce the chemicals found in Jersey Water.

WHAT WOULD YOU SAY TO SOMEONE WHO WANTS TO GET INVOLVED IN ENVIRONMENTAL ACTIVISM?

Start where you are, use what you have, and do what you can. Every small action contributes to larger change. Never underestimate the power of an informed and engaged community.

Sarah's story is not just one of struggle but a beacon of activism that illuminates the path to change. She has written 5 reports, highlighting how the environment across Jersey has become polluted and ultimately affected the health of many islanders. Around 90% of all skin cancers are caused by overexposure to UV radiation from the sun or sun beds. Sunburn, reddening, peeling and even tanning of the skin are indications of sun damage. While many people associate a tan with looking healthy, a tan is a sign that our skin has been harmed by UV radiation and is trying to defend itself against further damage.

When considering any aesthetic treatment, there are some important facts to find out in order to give you the correct treatment and fulfil your expectations.

Firstly, it’s essential to choose a qualified and credible aesthetic practitioner for your treatment, consider their education level, professional certifications and particularly their experience in the field.

THE POWER OF SLEEP & HOW TO LIFT DEPRESSION

ADEQUATE SLEEP IS SCIENTIFICALLY PROVEN TO HELP LIFT DEPRESSION. WORDS BY BRONTE LE MARQUAND

We dream as a way of discharging emotionally arousing introspections from the previous day that have not been expressed. Have you ever heard the saying that one should not go to bed in an argument? It isn't necessarily for your relationships' sake but for your sleep quality. Typically, one will process the previous day's events during an adequate amount of REM (rapid eye movement) sleep, leaving their body and mind to repair during the remaining restorative sleep cycle and wake up feeling refreshed, energised and ready for a new day. REM sleep is a unique phase of sleep that only occurs in mammals and birds. It is characterised by a random rapid movement of the eyes, accompanied by low muscle tone throughout the body and the propensity of the sleeper to dream vividly.

The majority of depressed people have disturbed REM sleep and wake up exhausted and unable to motivate or activate themselves. Although depression holds the criteria of a loss of pleasure or interest in usual activities, loss of energy, low mood and psychomotor retardation, depressed people actually have very high levels of physiological arousal. With depression comes a lot of negative thinking due to its close relationship with anxiety, agitation, rumination, tearfulness, substance abuse and recurrent thoughts of death and suicide.

As depressed people are excessively negatively introspecting, they inevitably have much higher levels of physiological arousal to be discharged.

Emotional arousal automatically forces the brain into a reactive, blackand-white way of thinking, reducing its ability to think more subtly and objectively. So, typically, after a setback, someone with a more pessimistic outlook will inevitably catastrophise their interpretations of life events and excessively introspect about their interpretations. This puts excessive pressure on the dreaming process, distorting the REM sleep system and

This is where one finds themselves stuck in a vicious cycle of depression, which goes like this:

1. One or more of your emotional needs are currently not being met.

2. Due to this, you might start to feel that something is "wrong".

3. This leads you to feel emotionally aroused, i.e., catastrophising or thinking in a black and white pattern.

4. Questions about why or what if begin to ruminate.

causing an excessive autonomic arousal discharge, which leads to physical exhaustion, a depletion of motivation and subsequent depression.

Therefore, depressed people tend to have very vivid dreams, so vivid at times that one is woken up or disturbed by the dream. This is an example as to how the REM sleep system is working in overdrive to discharge the high levels of arousal from the day before, leaving little time for the body and mind to rejuvenate themselves during their restorative sleep cycle, which consists of both deep and light cycles of sleep. As a result, depressed people will wake up feeling exhausted, unmotivated and depleted, as sub-consciously, their sleep cycle has been disturbed by intense and prolonged dreaming.

5. Sleep cycle is disturbed as REM sleep is prolonged and working in overdrive to discharge excessive autonomic arousal.

6. Wake up feeling exhausted and lacking in motivation, fuelling number 1 and starting the cycle again. The cycle will continue until the dreaming (REM) process is normalised.

Therefore, the most effective way to break the cycle of depression is to lower emotional arousal and stop negative emotional introspections as quickly as possible. Simple ways to reduce your physiological arousal are by practising deep relaxation exercises, also known as meditation. Practising either first thing in the morning or just before you go to bed would be particularly useful.

There is a brilliant exercise called 7:11 breathing, which calms the nervous system down.

Breathe in for 7 seconds and breathe out for 11 seconds. Link your hands and gently place them on your belly as you focus on the movement of your breath as if your belly were a beach ball being inflated and then deflated. Repeat this exercise as many times as necessary as you begin to notice how deeply relaxed you feel. However, if this feels like a difficult length for you, then breathing in for 3 and out for 5 could be a beneficial alternative.

If breathing exercises do not feel right for you, there are plenty of other methods that you can refer to:

• Make a list of your five best attributes.

• Make a list of your five proudest achievements.

• Ask your friends to politely avoid

discussing negative life events and instead focus on discussing positive past, present, and future life events.

• Write a list of happy thoughts and experiences, however small, that happen each day.

• Reflect on positive memories that you can vividly re-imagine, using the 54321 method, identifying 5 things you could see, 4 things you could touch, 3 things you could hear, 2 things you could smell and 1 thing you could taste (if accessible).

FIRE UP THE BBQ

"Everyone loves the smoky flavours of flame-grilled food, and these recipes will take your barbecuing to the next level. Each of them comes with an extra chilli kick but all of them will be just as tasty if you choose to omit the heat. Portobello mushrooms are a great alternative to meat packed full of savoury umami flavours, corn on the cob is one of my favourites and a flavoured butter compliments the sweet, charred taste of the corn. Make extra butter, freeze it and use it with chicken, prawns and fish. Finally grilled pineapple, coconut, and rum it’s a Piña Colada on a plate."

GRILLED PORTOBELLO MUSHROOM ‘BURGERS’ WITH SRIRACHA MAYO

INGREDIENTS

4 Portobello Mushrooms

4 Brioche Rolls

200ml Mayonnaise

A handful of Rocket or Watercress

100g Butter

50ml Olive Oil

3 tbsp Sriracha Sauce

4 Garlic cloves, peeled and crushed

2 tsp dried Parsley

1 tsp Worcestershire Sauce

½ tsp Smoked Paprika

Sea Salt and Black Pepper

METHOD

1. Light your barbecue or preheat the oven to 375F/190C/Gas Mark 5.

2. Mix half the butter with half the crushed garlic, the parsley, Worcestershire sauce and a good grind of black pepper.

3. Wipe the mushrooms clean, remove the stems and if barbecuing brush with oil and season. Carefully place on the barbecue and cook for a couple of minutes before flipping over and cooking for two more minutes.

4. Remove the mushrooms from the

barbecue and divide the garlic butter between them. Wrap in foil and cook on the barbecue or in the oven for 15 mins.

5. While the mushrooms are cooking, slice the rolls, melt the remaining butter and brush on the rolls before toasting them on the barbecue. Mix the mayonnaise, paprika, and remaining garlic and spread on the toasted brioche.

6. Carefully open the mushrooms and drain off the juices into a small dish. Finish the burgers by placing the mushrooms and rocket into the buns and serve.

BBQ PINEAPPLE, CHILLI RUM GLAZE & COCONUT ICE CREAM

INGREDIENTS

1 large Pineapple, peeled and cut into 8 wedges

Coconut Ice Cream

200ml Dark Rum

200g Soft Brown Sugar

100g Butter

2 Limes, zested and juiced

1 Red Chilli, de-seeded and very finely diced

1 teaspoon Vanilla Essence

A couple of sprigs of Mint

METHOD

1. Heat the rum, butter, lime juice, and sugar together in a small pan over a low heat and stir until the sugar dissolves. Increase the heat and bring to a boil for five minutes and reduces slightly. Remove from the heat. Stir in the vanilla, lime zest, and chilli.

2. Place the pineapple wedges on the barbecue and cook for a couple of minutes until char marks appear, then turn over. Brush with the syrup and continue cooking until soft, turning regularly to prevent burning.

3. When cooked serve with a scoop of coconut ice cream, extra syrup and some finely sliced mint leaves.

CORN ON THE COB WITH HARISSA & LIME BUTTER

INGREDIENTS

4 large Sweetcorn Cobs

250g Butter

3 tbsp Harissa Paste

3 tbsp of Honey

2 Limes, zested and juiced

A small bunch of Coriander, finely chopped

2 cloves of Garlic, peeled and crushed

METHOD

1. Light your barbecue or preheat the oven to 375F/190C/Gas Mark 5.

2. Mix the butter, harissa paste, garlic, lime zest and juice, coriander, honey and seasoning in a bowl. The butter can be made in advance and wrapped in greaseproof paper and stored in your fridge.

3. Trim the Sweetcorn cobs and spread with a thin layer of butter. Wrap each corn cob in a double thickness of foil and cook in the oven or on the barbecue for thirty to forty minutes or until tender.

4. Carefully remove from the foil and place directly on the barbecue for a couple of minutes to get a great char. Spread on some extra butter and serve.

We offer large light-up letters and numbers as well as sequin walls, balloon garlands and an exciting new photobooth that has just launched - all at very competitive prices."
