Happy April, In San Antonio, April means three things; Easter services, wildflowers and the ten-day, city-wide party known as Fiesta©. All three of which can be enjoyed on or along the San Antonio River Walk. Four of the five UNESCO sanctioned missions, located along the “Mission Reach” portion of the river-south of downtown, offer Easter Mass; Mission San Jose, Mission Concepcion, Mission San Juan and Mission Espada. Texas Hill Country towns are popular with wildflower enthusiasts. However, I am happy to report the nine-mile stretch of native landscape along the Mission Reach has been restored thanks to the funding from Bexar County and the hard work of the San Antonio River Authority after flood control efforts from decades ago removed much of the natural foliage. This is now an A-1 place to enjoy wildflowers while walking, biking or kayaking. As for Fiesta©, if you happen to be here April 14-24 you’re in for a grand time. 2016 marks the 125th anniversary of our city’s biggest party. This issue is filled with stories to get you up to speed on events, food, medals and music. Check out my Top-10 list of Fiesta music events on page 36. Viva Fiesta!

The textures of Mexcio weave through San Antonio like bright threads in a serape rich with sound, color and taste. And one of the most popular sounds is the stirring music of the mariachi.

Mariachi – say it “mah-ree-AAH-chee” –is the musical heritage of a convergence of cultures, from Indian through Spanish into the melting pot of Mexico and up across the border. Mariachis are San Antonio’s strolling minstrels. Locally you’ll find them serenading diners in River Walk restaurants, on party barges floating the river; in Market Square, and even playing special Mariachi Masses in historic churches. In Mexico, mariachis are there for life’s big moments. Mariachi serenades are part of courtship, and mariachi songs are traditional at weddings, birthdays and important occasions. Distinguished visitors are often greeted by mariachis, as Pope Francis was on his recent visit to Mexico. A few years ago, the United Nations Educational and Scientific Organization (UNESCO) recognized the mariachi tradition as part of the Intangible Cultural Heritage of Humanity. Even before you come to recognize mariachi music, you’ll spot the outfit. It’s a doozy. Mariachis’ short jackets are generously embellished with big silver buttons in front and on the sleeves, and set off with big puffy bow ties. Their trousers have more ornate silver decorations running down the outside of each leg; they wear flashy belt buckles and short, ankle-length

boots. Both coats and pants may also sport lavish embroidery. And the crowning glory of the ensemble is usually a huge, elegantly decorated sombrero. Prices range from $150 or so for a very basic outfit to $4,000 and beyond for hand-tailored gear, depending on craftsmanship and the amount of bling involved. As more women have infiltrated the once-male mariachi world, long skirts have been added to the wardrobe, but the basic look remains the same. Originally, mariachi musicians dressed like ranch workers, in white cotton shirts, pants and simple sandals. That all changed in the early 1900s, when standard mariachi costume switched to follow form with the classic Mexican charro, or gentleman cowboy, outfit. One legend has it that the transformation occurred when Mexican President Porfirio Diaz, who himself was big on highly embroidered and heavily medaled military uniforms, hired mariachis to perform at a grand event for international visitors. He felt the simple peasant costume was not appropriate for a fancy event and put the players into upscale charro gear instead. As mariachi music hit radio airwaves and swelled in popularity, the bands got bigger, entertained in larger urban venues and added more elegant accessories to their ensembles.

Mariachi music was not set apart as a style until the mid-1800s. It’s usually great for dancing, with waltz, polka or other distinctive rhythms, since it was originally played at occasions where people danced. Nobody is precisely sure where the word came from. While some scholars have suggested it came from the French word for marriage, since the music was often played at weddings, others say it evolved from a native language. “Mariachi” refers to the music, the individual musician, and also the musical group -- so a mariachi plays mariachi in a mariachi. In cafes and smaller spaces, you’ll usually find small groups of three or four musicians playing stringed instruments – the vihuela, a small, high-pitched five-string guitar with a rounded back, a hefty bass guitarron and a violin. Many mariachis sing, too, and their liveliest songs are often punctuated by distinctive cries known as gritos, followed by whoops and whistles. In the last hundred years, larger groups and mariachi orchestras have swelled to dozens of musicians, including trumpets and the traditional mariachi harp – part of the original mariachi sound, but hard to carry around. Some bands have added accordions and harmonicas.

One of the best places to soak up some mariachi sound on the River Walk is at restaurants like Café Ole, the Lone Star Café or Michelino’s, where a mariachi quartet performs from 6-9 p.m. every weeknight except Wednesday, and from noon to 2 p.m. for the lunch crowd during April. Just listen in, or request a song for your table. Mariachi etiquette requires a tip of about $10 per song if you ask for a serenade. It’s usually well worth it. If someone with you is celebrating a birthday or a special occasion, ask for the traditional “Las Mañanitas”. Good, general upbeat songs include “Jarabe Tapatio” (the Mexican Hat Dance) the familiar “Rancho Grande” or “El Son de la Negra. Feeling romantic? Request “La Malagueña,” “Sabor a Mi,” or the ever-popular “Volver, Volver,” which may prompt the whole café staff as well as your own table to join in the rousing chorus. That’s the great thing about mariachi. It’s a beloved form of music, played by serious, professional musicians dressed in blinged-out costumes like Liberace. And it’s the music of a warm-hearted, passionate culture that is as rich as life. If you let it, mariachi will sweep you right up in its spirit. Ay, ay ay!

La Villita, south of the River Walk in downtown San Antonio, was originally settled nearly 300 years ago as one of the city’s first neighborhoods. Fiesta offers a unique opportunity to sample a wide variety of treats from San Antonio’s diverse cultural and ethnic heritage.

There are many street parties featuring food stalls selling a variety of local specialties­— some unique to Fiesta—and River Walk restaurants that serve items iconic to the Alamo City. For those not familiar with our local delights, here’s a primer to guide you on your Fiesta gastronomic adventures.

Gorditas

chili con carne

Spanish for “little fat ones,” gorditas are small cakes made out of corn flour, which is also used to make tortillas. Gorditas are typically fried or baked on a steel griddle known as comal. After cooking, the gordita is drained of excess grease for a few minutes, then slit on one side and filled with a variety of ingredients. These can be pork or chicken stew, shredded beef, nopalitos (cooked prickly pear cactus pads), beans, cheese, rajas (strips of roasted mild chiles), potatoes, chorizo (Mexican sausage), or picadillo (seasoned ground beef with potatoes). Find them at street stalls during Fiesta events, or visit the legendary Mi Tierra Café & Bakery, open 24 hours, for some of the best in town.

Sure, chili is a dish as American as apple pie, and everyone seems to have their secret recipe. But did you know the origin of chili? Chili con carne was sold from the 1860’s through the 1930’s in various plazas around San Antonio, and was made famous by the legendary “Chili Queens.” Proclaimed as the state dish of Texas in 1977, chili con carne has been a favorite at Casa Rio on the River Walk since 1946 and remains true to the original Chili Queens recipe. Add that to your notto-be-missed list.

This delightful pastry of Mexican origin is synonym with fairs and carnivals such as Fiesta. Buñuelos are made from a yeasted dough with a hint of anise that is shaped into a disc, deep-fried, and then drenched in a syrup of brown sugar or piloncillo (raw sugar cane sugar), or dusted with cinnamon and powdered sugar.

These grilled skewers of marinated beef chunks hail originally from South America and are popular street fare in Andean countries such as Peru, Bolivia, and Chile. Cooks marinate the meat in vinegar and spices such as cumin, ají pepper, and garlic, skewer it, then grill it over coals. Anticuchos are savory and irresistible, and an indispensable treat for visitors during Night in Old San Antonio (NIOSA to the locals) festivities.

An homage to San Antonio’s German roots, this popular Fiesta item is a chicken schnitzel, breaded and fried until crispy, served on a stick. For a true Texas twist, order yours with a pickled jalapeño at the Oyster Bake party.

This delicacy, courtesy of San Antonio’s Mexican community, may not be for everyone. But fans of the crispy-fried beef or pork intestines, served atop a warm corn tortilla topped with chopped onion, cilantro, and chile sauce will stand in line as long as it takes to get them.

Yep, you read that right. Ácenar, a popular Modern Mexican restaurant with a lovely patio overlooking the River Walk, serves one of San Antonio’s unique takes on the ballpark favorite. Here, they place plump fried oysters atop yuca chips, then top them with diced charred pineapple and jalapeño-honey mayo. They are certainly unusual, but also delicious.

This traditional Mexican soup is an acquired taste. Made with beef stomach (tripe) simmered in a broth flavored with red chiles, menudo is served piping hot, garnished with lime wedges, chopped onions and cilantro, dried oregano and red chili pepper flakes on the side. Locally it is well-known as a miracle hangover cure, and you can get your fill 24-7 at Mi Tierra Café & Bakery.

Perhaps you know them best as snow cones or shaved ice. The name raspa (or raspado, as they call them in Mexico) comes from the Spanish word for “shaved.” These icy treats doused in brightly-colored flavored syrups come in myriad flavor combinations. Be sure to try tropical flavors like coconut or pineapple, and the uniquely sweet, sour and spicy mangonadas and chamoyadas.

Literally translating as “refreshing water,” an agua fresca is a fresh fruit-flavored beverage that is perfect to wash down any and all foods of Fiesta. Think about lemonade, but made with fresh strawberries, cantaloupe, pineapple, and other seasonal fruits instead of (or alongside) lemons. Popular agua frescas around these parts are the horchata at Rio Rio Cantina, made with rice, sugar, and cinnamon, and at Casa Rio you will find a watermelon fresca that will quench any thirst.

Sure there are a plethora of parades, countless kings and queens and more food-on-astick than you can shake a stick at, but every Fiesta fanatic worth his or her cascarones knows that the goal during Fiesta is to collect and wear as many medals as you possibly can, usually pinned all over their specially-designed sashes and hats.

If you are into this kind of “heavy medal,” rock on over to Alamo Plaza for Pin Pandemonium, THE place to find whatever and whoever you want to find. During this annual, free Fiesta kickoff event, anyone and everyone who collects pins and medals gathers to view, buy and trade these precious medals and enjoy the opening ceremonies of Fiesta Fiesta. Some ultra-creative medals feature designs with moving parts, 3D effects, sparkling colors and even LED lighting. This year’s Pin Pandemonium takes place Thursday, April 14, at 6 pm in Alamo Plaza. According to the Fiesta Commission, there are 17,000 medals sold at The Fiesta Store on Broadway (the “official” Fiesta store) alone. But there are more medals produced than you can count. Medal producers include charitable organizations, colleges and universities, hotels, restaurants, sports, events, churches, city areas and attractions, banks, doctors, judges and attorneys. Highly collectible medals include those from the district attorney, mayor, police chief and fire department. Original Medal Head King Antonio XLIX Charles Orsinger gets the historical nod for “inventing” the Fiesta medal. During his reign over Fiesta in 1971, His Royal Highness punched holes into his royal coins, strung them with ribbon and handed them out to his loyal subjects that year. Today, all the Fiesta royalty give out their own individually-designed pins and many organizations sell

their own as fundraisers. Businesses highlight their brands via pins and some individual Fiesta fanatics even make their own. Some ultra-creative medals feature designs with moving parts, 3D effects, sparkling colors, and LED lighting. One of San Antonio’s premier medal makers is FiestaMedals. com. It started as the brainchild of Lt. Col. Leon Childers (ret.) who, in the late 70s, created the first military-themed Fiesta medal for the Commanding General to hand out during Fiesta events. Nowadays, anyone with an imagination and an internet connection can make their own Fiesta medal since medals can now be designed and ordered online. There are many local manufacturers and they estimate that the number of medals made over the years runs in to the hundreds of thousands. Back in the olden days, customers would come in with a design or idea and it would be drawn by hand. (That part is done by computer now.) After the medal is designed, the factory makes a model, die, stamp, fills it with color, assembles the ribbons and adds dangles or any extras. Metal detectors unite! The unique traditions of Fiesta medals bring an extra factor of frivolity and folly to this festival of fanciful fun. So come and join the revelry. What do you want—a medal?

Two Pearls of Fiesta by Bob McCullough

Ironically, tiny oysters play big roles in two of Fiesta San Antonio’s longest-running festive events. In addition to offering lots of phenomenal food, both the Fiesta Oyster Bake and A Taste of New Orleans (ATONO) feature hot music, amid tons of fun, and they raise millions of dollars for scholarships. The community-wide Fiesta San Antonio celebration marks its 125th anniversary this year with a dizzying array of more than 100 events stretching from April 14 through 24. Speaking of milestones, the Oyster Bake is observing its 100th anniversary April 15 and 16 with special touches such as an enhanced entertainment lineup, a second grand fireworks finale and a “wedding” for mascots Shuckie and Pearl. An estimated 70,000 patrons descend upon the campus of St. Mary’s University on San Antonio’s west side to consume about 100,000 oysters and to raise funds for St. Mary’s student scholarships as well as university and alumni programs. As a result, 70 students receive scholarship assistance each year. Oyster Bake began in 1916 on the banks of the San Antonio River as a reunion of former St. Mary’s students and Marianist priests and brothers with ties to the university. Some of the alums brought oysters and beer to the party, and thus Oyster Bake was born.

Today more than 7,000 volunteers help stage Oyster Bake, and thirty-six student organizations operate beverage and food booths. To secure one of the coveted booths, the student group must submit a business plan and make a presentation to the Oyster Bake Committee. The highestscorers earn money for their respective organizations and gain real-world business experience. Organizers view Oyster Bake as a great music festival with stages reserved for oldies, country, rock, Tejano/Latin, R&B/hip hop and children/family acts; the same can be said of ATONO, which presents a musical jambalaya. Groups from as far away as Los Angeles entertain with zydeco, brass band, dance band and jazz (Latin, contemporary, fusion and Dixieland) numbers throughout the three-day festival, April 15-17. Sponsored by the San Antonio Zulu Association, a community organization that raises money for the Leonard C. Brooks Scholarship Fund, this year’s 31st annual ATONO also spotlights Any Baby Can, another service organization that helps families with special-needs children. ATONO leaders and 500 volunteers look to attract 25,000 fun-seekers to the Sunken Garden Theater in Brackenridge Park. ATONO began as a family event called Fiesta West on the city’s West Side, migrated to St. Paul Square in downtown San Antonio and ultimately moved to the Sunken Garden Theater. Many of the early Zula Association’s members grew up in the New Orleans area, so the Association changed the name to A Taste of New Orleans and offered a Southern Louisianathemed experience. Like precious pearls of Fiesta San Antonio, both Oyster Bake and ATONO remain lustrous and lively year after year because they bring diverse peoples together for fun and, in doing so, support worthwhile causes.
