Turkish Lamb Koftas
Fragrant, exotic and so easy to make. Perfect for summer grilling.
Ingredients
• 1lb/500g lamb mince (or substitute with Beef)
• 1 small onion, grated or minced
• 1 garlic clove, minced
• ¼ cup of pistachio nuts – ground
• 1 ½ teaspoons of salt
• 1 tsp Black pepper
• 1 tbsp cumin powder
• 1 tbsp red pepper flakes
• 1 tbsp olive oil
Yoghurt Sauce:
• ¾ cup plain yoghurt
• 1 tbsp lemon juice
• ½ garlic clove minced
• Salt & black pepper
To serve:
• Pitta bread
• Couscous
• Lettuce leaves
• Sliced tomato and red onion
Method
• Mix together yoghurt sauce ingredients and refrigerate to allow flavours to develop
• Place the kebab ingredients except the oil in a bowl and use your hands to just combine it – be careful not to over mix it.
• Divide into 8 portions and mould onto skewers
• Heat oil in a large skillet over a medium heat
• Add skewers and cook for 8 minutes turning to brown all side
• Serve kebabs with bread or couscous (or both), lettuce, tomatoes, red onion and yoghurt sauce on the side. Wedges of lemon are also a great accompaniment
Prosciutto Wrapped Baked Chicken Serves 4
Ingredients
• 4 boneless skinless chicken breasts
• Sea salt and freshly cracked black pepper
• 8-12 slices of prosciutto
• 4 tablespoons melted butter
• 1 clove garlic pressed or minced
• 1 tablespoon finely chopped fresh sage
• Pinch of crushed red pepper flakes
• ¼ cup dry white wine
• Fresh lemon wedge
Optional garnishes: Chopped fresh chives, grated parmesan cheese and/or extra crushed red pepper flakes
Method
• Wrap each chicken breast with 2-3 slices of prosciutto so that it covers most of the chicken
• Place them in a single layer in a large baking dish, brush the chicken evenly with 1 tablespoon of the melted butter and season both sides. Bake for 18-20 minutes or until the chicken is cooked through and no longer pink.
• Once the chicken is cooked remove the pan from the oven and loosely cover the pan with foil, let the chicken rest for at least 5-10 minutes.
• Add the remaining 3 tablespoons of butter to a small sauté pan along with the sage, garlic and crushed red pepper flakes.
• Sauté over a medium/low heat for 6-8 minutes or until the sage starts to get slightly crispy. Slowly add in the white wine and simmer for 5 more minutes.
• Once the chicken and sauce are ready spoon the sage butter sauce evenly over the chicken breasts, serve immediately with lemon wedges.

For the pastry:
• 250g/9oz plain flour
• 75g/2 ½ oz caster sugar
• Pinch of salt
• 1 vanilla pod, seeds only
• 150g/5 ½ oz unsalted butter softened
• 1 free range egg lightly beaten
• 1 tbsp milk
For the crème patissiere:
• 1 pint full fat milk
• 42g/1 ½ oz plain flour
• 1 vanilla pod split in ½ lengthways
• 6 free range egg yolks
• 125g/4 ½ oz caster sugar
For the fruit topping:
• ½ punnet strawberries hulled
• ½ punnet raspberries
• ½ punnet redcurrants
• ½ punnet blackberries
For the Pink Champagne Jelly
• 325ml/11fl oz pink champagne
• 4 gelatine leaves softened in cold water for 10 minutes
• 75g/2 ½ oz sugar
Fruit Tart
A deep filled fruit tart topped with summer fruits and Champagne Jelly
Method
1. For the pastry. Place the flour, sugar, salt, vanilla seeds and butter in a food processor. Use the pulse setting to mix until combined. Add the beaten egg and milk and piulse again until the dough comes together and leaves the side of the bowl.
2. Turn out the dough onto a very lightly floured work surface, shape into a ball and wrap in cling film and place in the fridge for at lest an hour before using. The pastry can also be made ahead and frozen or kept in the fridge for up to four days.
3. Preheat the oven to 180c/320f/gas mark 4.
4. Once chilled, on a floured surface roll the pastry out thinly. Line a 20-23cm (8-9 inch) flan or quiche dish with the pastry. Place some baking parchment in the middle and fill with baking beans. Bake for 30 minutes or until the pastry is a light golden brown (Blind bake, this means it should not be completely cooked.
5. For the crème patisserie in a pan, bring the milk and vanilla pod to the boil. Remove from the heat and set aside to infuse.
6. In a bowl, cream together the egg yolks and sugar until pale and fluffy, then add the flour. Remove vanilla pod from the hot milk and set aside. Pour the milk over the egg mixture and stir well. Return the mixture to the pan and warm, stirring continuously over a medium heat until it is thick enough to coat the back of a spoon.
7. Remove from the heat. Place a fine sieve over a bowl and strain the crème patisserie into it. Cover with cling film so it sits directly on a liquid to prevent a skin forming, refrigerate until completely cooled.
8. Fill the pastry case with the crème and smooth the surface.
9. For the fruit topping arrange the fruit over the top, chill in the fridge until needed

Gardening in Autumn
Autumn is a great time to make changes to your garden so that you will enjoy it even more next year. It’s time to plant spring bulbs and many other plants, mulch your borders and prepare new ground for growing.
Things to do in the garden during autumn...
1. Mulch your flower borders
Mulch is the name given to a thick, loose layer of material placed on top of bare soil in flower beds or containers.
Adding this layer helps to suppress weeds, increase water retention and improve the quality of the soil. It can also neaten the appearance of beds and protect roots from winter frost. Popular materials used for mulching are garden compost, wood chippings, manure and leaf mould.
Apply your mulch of choice in a layer 2-3 inches thick, taking care to leave space around the woody stems of plants.
2. Look after your soil
Leaving beds empty with exposed soil over winter isn’t good for soil health. Mulch empty vegetable and flower beds, as above, to protect them.
Alternatively, if they’re full of weeds, you could cover them with a layer of cardboard or woollen carpet and leave the weeds to break down, ready for planting in spring. If possible, avoid digging the soil as this disturbs the structure and soil organisms.

Plant bulbs
Spring bulbs can be planted in pots or in your flower borders throughout autumn. Daffodils, hyacinths and crocuses are best planted before the end of September when the soil is still warm. October and November are good times to plant your tulips.
Bulbs of tulips, crocuses and daffodils can be planted in pots or your flower borders. If you have a large area of grass try planting crocus bulbs in drifts for a vibrant colour show in early spring.
If you’re planting in pots, use a peat-free compost and really pack your bulbs in for a great display – you can even layer them up for a succession of colour.
4. Clear leaves
When the leaves start to fall, and the season heads into mid to late autumn, it’s a good idea to clear leaves from lawns to keep the grass healthy.
Use a rake or battery-powered leaf blower and keep the leaves to make leaf mould for feeding next year’s plants. Do this by piling leaves in wire cages and leaving them to break down.
If you’re tight on space use strong bags tied at the top and add puncture holes near the base for air to circulate. This makes a good mulch to use on your plants the following year.
If your roses had blackspot, removing fallen leaves from their base and putting them in your garden waste collection or dustbin is a good idea as the leaves can harbour this disease through winter.
