Food & Drink
Sausage and Mash With Gravy Serves 4
Ingredients
• 1 tbsp sunflower oil
• 8 pork sausages (the best quality you can find)
• Small knob of butter
• 3 small onions, finely sliced
• 1 thyme sprig
• 1 bay leaf
• Pinch of sugar
• 1 heaped tsp plain flour
• 1 tbsp red wine vinegar
• 1 glass of red wine
• 1 tsp soy sauce
• 400m beef stock made with 1 stock shot or cube
For the mash:
• 1kg King Edward potatoes, peeled and cut into large chunks
• 100ml whole milk or 50ml milk and 50ml cream
• 50g cold butter, diced
• Grating of nutmeg
Method
Step 1
Heat the oven to 200C/Gas mark 6. Heat the oil in an ovenproof frying pan and gently sizzle the sausages over a medium-high heat for 8-10 mins, turning them until browned on all sides. Transfer to a plate, put the butter in the pan, heat until sizzling, scatter in the onions, stirring them into the butter then add the thyme sprig, bay leaf and sugar. Give everything a final stir then put the sausages on top and drizzle over any juices from the plate. Roast everything for 20 mins, turning the sausages halfway through.
Step 2
Meanwhile, make the mash. Tip the potatoes into a pan of cold salted water and bring to the boil, turn down and simmer for 10-12 mins or until just cooked all the way through. Drain and leave for a minute. Tip the milk into the pan and bring to a simmer, pass the potatoes through a ricer into the hot milk and mash thoroughly. Once mashed add the butter. Keep it warm.
Step 3
When the sausages are cooked remove from the oven, lift sausages onto a tray. Return them to the oven to keep warm. Put the pan back on the heat and give the roasted onions a stir, they should be sticky and slightly burnt around the edges. Sizzle for a minute or two more to caramelise then stir in the flour and cook for another minute. Splash in the vinegar, simmer for a minute then pour in the red wine and soy sauce and bubble down to a gloopy paste. Pour over the stock and boil for 3-4 minutes or until you have a rich gravy. Tip into a gravy jug with a serving spoon for the onions.

Blackberry and Pear Crumble Serves 4-6
Ingredients
Crumble mix:
• 110g/4oz butter, cubed, plus extra for greasing
• 180g/6 ½ oz plain flour
• 110g/4oz demerara sugar
For the filling:
• 5 pears, peeled and left whole
• 150g/5 ½ oz caster sugar
• 300g/10 ½ oz fresh or frozen blackberries
For the custard:
• 200ml double cream
• 700ml whole milk
• 4 large egg yolks
• 3 tbsp cornflour
• 100g caster sugar
• 1tsp vanilla extract
Method
1. Pre heat oven to 180C/350F/Gas 4. Grease an overproof dish with butter.
2. In a large bowl, rub the butter into the flour using your fingertips until the mixture resembles breadcrumbs. Add the sugar, mix well then set aside.
3. To make the filling, place the whole pears in a pan, cover with water and add 50g/1 ¾ oz of the sugar. Bring to the boil, then reduce the heat to a simmer and cook for 10-12 minutes, or until the pears are tender. Drain well and set the pears aside to cool. Remove the pear cores and chop the flesh.
4. Spoon one quarter of the pears in an even layer on the bottom of the prepared ovenproof dish. Scatter one quarter of the blackberries over the pears and then sprinkle over 2 tablespoons of the remaining caster sugar. Repeat the layering process until all the pears, blackberries and sugar have been used.
5. Sprinkle over the topping and bake for 20-25 minutes, or until golden brown and bubbling.
Tip. Blackberries freeze well, so keep some on hand to make this delicious crumble all winter long.
6. Put the cream and milk into a large pan and gently bring to just below boiling point. Meanwhile in a large bowl, whisk the yolks, cornflour, sugar and vanilla. Gradually pour the hot milk mixture into the sugar mixture , whisking constantly.
7. Wipe the saucepan and pour the mixture back into it. Heat gently, stirring with a wooden spoon until the custard is thickened, but before any lumps form. Eat hot or cold.
8. To serve, divide the crumble between serving bowls and pour the custard over.
