After moving to the region six years ago, my two daughters and I fell in love with our community and the beautiful surroundings of the place we are now blessed to call home.

Having seen so many local businesses struggling through the COVID lockdowns — my own small business included — I started thinking about a creative way to help support our community of artisans, growers, restaurants and makers.

Endless conversations, mood boarding, and a whole heap of manifesting have led to Locale — a magazine that celebrates the bounty of creativity, lifestyle, beauty and the wonders our region has to offer, along with the allure of “Living like a Local” for visitors.

rom surfers hitting the waves at sunrise to all of the iconic local landscapes of the Northern Rivers coastline, Zak offers a unique viewpoint to the beauty of life as a local.

We grabbed him for a chat about his work, the influences and inspirations he gathers from our local region, and how he makes the most of his time living in paradise.

First things first, introduce yourself — who are you, where do you live, and what do you do?

I’m Zak Franklin, a born and bred Byron Bay local and lucky enough to be a photographer here in my hometown.

How did you become the photographer you are today?

Where did it all start, and how has it evolved?

It was my Dad that actually introduced me to the world of photography. As I was growing up, he was involved in surf photography, and I’ve taken a lot of inspiration from his career. As I got older, I looked for a creative outlet and naturally followed in his footsteps.

Sum up your photographic style in three words:

Oceanic, aerial and expressive.

What are you inspired by in your local community, and how does this influence your work?

Being lucky enough to have grown up in Byron Bay, I have always been inspired by the nature and wildlife that surrounded me. I also appreciate the consistent and innovative community approach when it comes to land care and ocean care.

What does ‘home’ mean to you?

Byron Bay has a special place in my heart.

I’ve moved away from Byron a few times, and the beaches, nightlife, festivals and community spirit always brings me back.

Let us in on your go-to favourite places — when it’s time to unwind, where do you like to eat, play, drink, relax and have fun around the Northern Rivers?

After work during the week, you’ll find me at Broken Head with my camera.

On the weekends, I’m usually out in the hinterlands, finding and shooting new and unique paradises.

What’s your weekend ritual?

A typical weekend is waking up early to take sunrise photos and explore the area until sunset. Even though I’ve lived here most of my life, there is always something new to discover.

LOCALE FAVE’S FAVOURITE BEACH: Broken Head Which other local artists, designers or creatives are you most inspired by at the moment?

There are so many, but some of my favourites you can find on Instagram are fellow photographers Saxon Kent (@saxonkent) and Craig Parry (@craigparryphotography). I also really like what Kiah and Edouard from Hunter and Gatherer (@hunterandgatherer.co) are doing with their awesome grazing tables, supporting local produce and suppliers to showcase the area and its incredible offerings.

From dive bars to sold-out international tours, Ocean Alley has captivated audiences with their psychedelic blend of surf rock and a refreshingly low-fi authenticity. Now, the boys are back — and they’re better than ever!

hese six mates began jamming together in a backyard shed in 2011 in their hometown on Sydney’s northern beaches. Now having since moved to Byron Bay together, our favourite local band are on a mission to navigate a post-COVID world in fresh new ways through their sun-soaked psychedelic sounds.

Responding to the global shift of current times in the only way they know best — through their music — the boys have made a triumphant return to the Australian music scene as the impact of shutdowns across the live music sector subside, announcing a huge national tour planned for February 2022.

Following on from their reimagining of how music could be experienced in a COVID-world (when they premiered their album in full for the first time online in the Lonely Diamond - Live In Studio session in the midst of worldwide lockdowns), Ocean Alley’s post-pandemic evolution is at the forefront of their latest release.

The uplifting ‘Touch Back Down’ is infused with their classic sun-drenched sound and infectious groove. A story about turning a negative into a positive and always finding the light side of a problem, the song was written during a last-minute writing session in Byron Bay, which only came to be after Bluesfest was cancelled at the eleventh hour in April this year.

“It’s exciting to have new music out. The more records we write, the more we can explore our sound and style, which is why they are ever-changing,” says Ocean Alley’s lead singer and guitarist, Baden Donegal. ‘Touch Back Down’ gives a much happier vibe than any single from Lonely Diamond, and we’re definitely carrying that upbeat energy across our writing at the moment. It provides a pretty good insight into the feel we’re going for in terms of our next record.”

Guitarist Mitch Galbraith agrees, adding, “It feels more playful than Lonely Diamond, and we wanted it to be that way.

After the craziness of the past two years, we wanted to be less serious and write songs that will get people moving rather than thinking. We felt that we could write music this time around that is less introspective and with a little more storytelling, so this is the first taste of that new direction for us.”

he seeds of Cape Byron Distillery were born back in 1988, when Pam and Martin Brook took over a rundown dairy farm and planted 4500 macadamia trees. The land is smack bang in the heart of what used to be the ‘Big Scrub’, the largest subtropical rainforest in Australia, of which only the tiniest fraction (around one percent) remains today.

The Brook family embarked on an enormous regeneration project, planting a whopping 35,000 subtropical rainforest trees and transforming open paddocks into a landscape that is now home to over 30 bird species, four resident koalas and a family of palm-sized sugar gliders.

Inspired by this amazing, regenerated rainforest, their son Eddie Brook along with co-founder Jim McEwan launched Brookies Byron Dry Gin in 2016, showcasing 25 botanicals, 17 of which are native ingredients, including aniseed myrtle, native finger lime and cinnamon myrtle, many of which are grown on the property. The result? Cape Byron Distillery and an award-winning modern twist on a classic dry gin.

Overlooking the rainforest, the balcony at the distillery is the perfect place to spend an afternoon with friends and family. Nestled among the forest at the end of a long sloping drive, the rustic corrugated iron building blends into the landscape. It’s an easy 15-minute drive from central Byron Bay. Parking is limited, so it’s best to arrange an Uber or share a taxi with your group.

“We operate tours rain or shine, so dress for the weather and wear appropriate footwear. And don’t worry, we have umbrellas available for those rainy days!” explains Mel Olson, Cellar Door Manager.

George is the nickname for the enormous 2000 litre copper pot still that takes pride of place on the production floor.

The most popular option is the Rainforest and Distillery Tour. Your friendly host will greet you with a classic G&T garnished with finger lime and aniseed myrtle. Then it’s off for a tour of the family farm to see, smell and touch the native rainforest botanicals used to make your gin, followed by a tour of the distillery and a journey through the art of distillation.

Another option for those who really love their gin is the Guided Tasting Session. A Brookie’s gin expert will knowledgeably guide you through a sample flight of Brookie’s Byron Dry Gin, Slow Gin, and Mac. Liqueur.

Head to the banks of the Tweed River in Murwillumbah to discover the newest star in the vibrant cuisine scene of the Northern Rivers.

or over a century, this riverside manor has been a focal point for significant occasions in local’s lives.

Once a sprawling family home, it’s now been magnificently restored as Tweed River House to take its place as the crème de la crème of dining, drinks, and soirees in the region.

Opened in September 2021, Tweed River House adds something pretty special to Murwillumbah and surrounds’ evergrowing collection of road trip-worthy eateries. With an inviting bistro and bar, sweeping views across lush tropical cane fields to majestic Wollumbin and Border Ranges, and even its own private pontoon for arrivals, the manor offers a new lease on glamour and old-world hospitality.

Tweed River House is the shared dream and vision of partners Gregory Lording and Phillip Hepburn, and has been lovingly and thoughtfully designed in the colonial style of bygone eras (think Singapore’s Raffles and Penang’s E&O dining rooms and cocktails on the terraces of grand old homes in Australia’s tropical north). It’s an elegantly relaxed affair — and entirely unlike any other establishment in the Northern Rivers.

The inspired and ever-evolving provençal style menu showcases the very best of each season’s haul from the Northern Rivers’ local farms, riverways and ocean.

You’ll find many dishes inspired by native bush foods too, with Chef McGrattan having worked over a decade in regional Australia, including a stint at Raugi’s restaurant at Kooljaman, a remote wilderness camp owned and run by the Indigenous Bardi Jawi Communities on the Dampier Peninsula in Western Australia. There’s also a set menu and a degustation to tempt gourmands and a purely vegan-friendly menu to

boot, while kids haven’t been forgotten with a children’s menu that is just as sophisticated yet entirely tempting for little tastebuds.

Naturally, this grand old plantationstyle dame settled at the foothills of the Tweed Caldera in Murwillumbah beckons couples seeking old-world romance, with the venue opening bookings for 2022 wedding celebrations.

Executive Chef Joseph McGrattan, Irishborn with an Australian family, combines his considerable gastronomic talents —garnered from his classical training in Michelin-starred restaurants in Europe — with his love for fresh local produce, creating a contemporary culinary experience at Tweed River House.

The Northern Rivers boasts some of the world’s best beaches and a truly idyllic coastal lifestyle. Discover just some of Locale’s favourite beaches to make the most of our little slice of paradise.

be warned — there’s very little parking at the best of times.

THE PASS, BYRON BAY

When you’re done swimming or surfing, head to the restaurant at iconic Raes on Wategos for a meal to remember (bookings are essential!). Or just grab a coffee from the coffee van that resides near the patch of grass nearby.

Wategos is also a popular departure point for the Cape Byron Walking Track, located just west of the Cape Byron headland, that ends at Australia’s most easterly point and the town’s famous lighthouse. It’s a stunning walk, especially early in the early morning.

BELONGIL BEACH

For a sunset to savour, head to Belongil Beach! This gorgeous stretch of coastline is known as one of the best places in Byron Bay to watch the sun setting over the hinterland beyond, producing aweinspiring colours across the sky. Don’t be surprised to find the shoreline and grassy area near the car park filled up with locals and visitors who converge to watch day turn to night against a beautiful backdrop of mountains.

While swimming can be a little fraught here (it is best to swim on the Southern end nearest to Byron Bay, and only when the beach is patrolled in Summer), Belongil more than makes up for it as a superb spot for long beach walks.

MAIN BEACH Without an afternoon at Main Beach, no visit to Byron is ever really complete.

This busy stretch of golden sand runs from the seawall at Belongil Beach down to Clarkes Beach, and it’s the prime spot to head to, right in front of the worldfamous ‘Beachy’ (The Beach Hotel). The grassy park at the top end attracts an eclectic mix of locals and tourists who come to soak up the sun, sand and surf or sit back and enjoy the bohemian vibe.

Grab yourself some hot chips or pack a picnic basket and settle into a soundtrack provided by the ever-present buskers — there’s often fire dancers, drummers, and so much more in the mix. If you’re lucky, you’ll even spot a pod of dolphins frolicking in the water just offshore — yep, even our friendly marine friends know a good thing when they find it!

THE PASS An iconic surf spot, The Pass offers a perfect beach experience for all ages in Byron Bay. Whether you come for the

wave break out beyond or swim and frolic in the more gentle shallows along the long sandbank, The Pass makes for an idyllic day out, and you can easily lose hours to beach bliss here.

To get a panoramic view of the Byron coastline, head to the eastern end of The Pass to climb the stairs to Fisherman’s Lookout, a wooden platform that is a favourite spot of photographers.

And be sure to look for the freshwater midden to learn about the area’s Indigenous history — it’s an accumulation of shells and stone artifacts that reveals this site’s use as a gathering place for local Arakwal First Nations people stretching as far back as 1,000 years ago. You’ll find it located to the left of the boat ramp.

WATEGOS Wategos is its own little legend in Byron Bay — a picturesque cove that feels like a secluded haven, even though it’s super popular with locals and tourists alike. But 19

Offshore, The Wreck is well-known in surfing and diving circles — it’s the remains of the SS Wollongbar that ran aground on the 14th May 1921 during a severe cyclone, and the wreck itself uniquely produces excellent waves when conditions are right.

TORAKINA BEACH Cross the wooden bridge and head north of the break wall at the mouth of the Brunswick River in Bruns to find one of the area’s smallest yet prettiest beaches.

Torakina is very popular with locals and is especially loved by families for its protected sandy beach and gentle waters perfect for very young children.

There’s a grassy park that’s perfect for picnics or BBQs (with several public amenities available), and it’s an ideal spot to simply laze in the sun and relax in between dips in the crystal clear water.

Visit at high tide to watch (and join!) the locals jumping off the wooden bridge into the gently flowing waters of the tidal river that separates the village from its beaches.

HASTINGS POINT Known as the ‘Jewel of the Tweed’, Hastings Point is surrounded by ocean, a national park and reserve, a beautiful estuary and a large stretch of native vegetation. Little wonder this haven is where you’ll find local families swimming, sunbathing, stand-up paddleboarding and bridge jumping just about every single day of the year!

The calm and often crystal clear waters of Cudgera Creek make it a hugely popular holiday destination for families with young children. There’s also the fantastic Tweed Coast Surf School in residence at the old surf shack by the river’s edge.

As a result, Hastings tends to get pretty crowded on some days, especially during school holidays, but regardless, you can’t help but fall in love with any day spent enjoying this charming corner of the Tweed Coast.

CABARITA BEACH Driving south over the rise on Tweed Coast Road once you hit Cabarita Beach, you can’t help but look to the left — with a pumping break known for consistent and long, powerful rides and a pristine golden beach, this truly is a surfer’s paradise!

Known for its natural beauty and laidback beach vibe, Cabarita Beach is a favourite

with locals and holidaymakers (as the often packed car park with vans laden with surfboards will attest!).

Walk along the boardwalk to the top of nearby Norries Head to be rewarded with sweeping, uninterrupted views of the coastline both north to Casuarina and Tweed and south from Maggies Beach and Pottsville to Byron Bay that will take your breath away. The lookout is a popular spot for picnics or afternoons lounging on the grassy headland and is a great place to watch the annual whale migration between June and October — you’re almost guaranteed to spot Humpbacks or Southern Right Whales.

SALT BEACH As one of the closest beaches to the border, located just a 20-minute drive south from Coolangatta Airport, Salt Beach is one of the Northern Rivers most accessible and best-kept secrets and a much-loved destination for holidaymakers and locals alike.

There are kilometres of well-maintained boardwalks and pathways to walk and cycle on that stretch right along the coastline here, so you can cycle or stroll to the beach and back through heath and grasslands. The beach is ideal for surfing, but not so much for swimming — there’s a constant rip that tends to sweep

northwards, and the majority of the beach isn’t patrolled, so proceed with caution.

The Salt Boat House also offers a simple access point to Cudgen Creek, where you can hire canoes and kayaks and make the most of the calmer waters.

But the real allure lies in its close proximity to the luxury hotels and restaurants of the nearby resort community of Salt Beach, which is perfectly set up for holidays and caters well for families with children.

KINGSCLIFF Located at the southern end of Wommin Bay and cradled by Cudgen Headland, Kingscliff Beach and the entire area has a relaxed vibe and a plethora of options for a perfect day in or by the water. There’s excellent surfing, an ocean-side lagoon, and grassy parklands with amenities to keep you lingering a little longer.

For the ultimate day of aquatic pleasures, head to the picturesque river and estuary system that spills out into the Pacific Ocean at the southern end of the beach.

It’s an ideal swimming spot (great for small kids, fishing, and watersports). And as the current is generally slow-flowing, so you can settle in and simply let the river carry you away on an inflatable or bodyboard. Bliss!

POTTSVILLE BEACH

POTTSVILLE The peaceful coastal enclave of Pottsville beckons families and nature lovers with one of the most picturesque creeks and estuaries on the Tweed Coast.

Mooball Creek is a mecca for local families and tourists who flock to the shores for picnics, lounging, swimming and meandering in the cool, calm waters. It’s also great for canoeing and fishing.

The surrounding natural beauty of Pottsville is spectacular, too, with long, uninterrupted and windswept beaches — easily some of the best beaches and surf breaks in Northern NSW — all backed by coastal bushland.

Wooyung is the wildest of the bunch, with a near-deserted golden beach fringed by littoral rainforest and coastal wetlands. And best of all, you’ll probably have it all to yourself. It’s not a patrolled beach, so we don’t recommend swimming, but if you’re after quiet relaxation, this is the place! PROTESTERS FALLS 1.25 hrs inland from Byron Bay | Park at Terania Creek picnic area | Easy grade, 20-30 minute return walk

Named after the Terania Creek protests that saved the pristine rainforest in the late 1970s, Protestor Falls are just inside the world heritage-listed Nightcap National Park, a remnant of the ‘Big Scrub’, which once covered the entire area.

To get to the falls, enjoy a gorgeous rainforest walk along a well-signed path that leads to a raised boardwalk, taking you through sub-tropical Bangalow palms, native tamarind trees, towering rainforest giants and strangler figs.

KILLEN FALLS 30 minutes from Byron Bay | Medium grade, 1km return walk with view spots

Flowing through the traditional lands of the Widjabul people, Killen Falls is a spectacular waterfall falling 10 metres into a shady, tree-lined pool.

You’ll get to the popular swimming hole at the base of the falls via a path that leads you through regenerating rainforest.

The track is one for the nimble-footed, as it starts gently before becoming quite steep and rocky, but once you reach the swimming hole, it’s totally worth the hike.

As well as the impressive cascade, you’ll also find a large cave area directly behind the falls, naturally eroded over the eons, that is a great place to sit and take in the beautiful scenery, surrounded by subtropical lowland rainforest, with towering native fig trees lining one side of the pool and rich vegetation hanging down next to the falls. It is shaded and cool even on the hottest days, making Killen Falls a local favourite for a cool respite in the summer months, especially as the pool is shallow with lots of submerged rocks, great for splashing or floating around.

After exploring the falls, an easy walk downstream reveals another swimming pool-sized section of the creek with shade aplenty. You can easily spend hours here as there are also other shorter and more accessible walks from the car park, one leading to views of the top of the falls and the other to the Emigrant Creek dam.

Word to the wise: This is a popular spot, so come early! There’s a small car park and public composting toilet, with less formal parking available further up Killen Falls Road on busy days.

You’ll be rewarded for your efforts by a cool breeze that caresses the wide, deep pool, even on a hot day. Up for a swim?

Enjoy, but be warned that the water is cold even at the height of summer. Or just lie back and enjoy the vertigo-inducing view looking back to where you started.

Then, gather your energy. It’s time for the climb back to the top!

Facilities at Minyon Falls were recently upgraded, with a new wheelchairaccessible viewing platform, picnic shelters, tables, toilets, and an educational amphitheatre.

Emerging from the dense forest, you’re greeted with a breathtaking sight of the waterfalls cascading 30 meters down a sheer rock face into the boulderstrewn pool below.

There is a rough path around the pool to stand behind the magnificent falls, and there’s no shortage of spots for great shots for the socials!

The area is a habitat for the threatened Fleay’s barred frog, so, tempting as it might be, please don’t swim in the pool at the base of the falls.

There’s ample parking, lush green picnic areas and toilet facilities.

PROTESTERS FALLS

MINYON FALLS 45 minutes inland from Byron Bay | Medium grade, 3 hour walk

Situated on the other side of Nightcap National Park, the dramatically beautiful Minyon Falls plunges 100 meters from an escarpment into a deep-water pool far (far!) below.

For a shorter, less taxing visit, simply enjoy the view from the top and then explore along the creek above the falls.

But, if you are drawn down to the valley below and have at least a few hours of daylight available, you can explore further with the 13km Loop Walk.

The path leads over Repentance Creek to a steep winding descent into the lush sub-tropical rainforest on the valley floor.

On the way, look out for natural wonders, like an extraordinary strangler fig, now standing 40m tall and almost completely hollow, its host tree completely rotted away. It’s an otherworldly sight.

To complete the route to the base of the falls, you’ll need to take on a boulder

on the menu Inspired by a love of the local region’s produce, Pipit Restaurant takes a creative pivot from fine dining to adding fine art prints to their epicurean offerings.

or lovers of relaxed fine dining, Pipit Restaurant is the place to be in Pottsville, set around an open-plan kitchen design where diners can share in the action and take a deep dive into the best of the region, from country to coastline, through a set menu designed by head chef and owner Ben Devlin.

The Pipit ethos is all about gourmet food made with a grassroots style and served up with creativity and thoughtfulness, showcasing sustainable seafood

(both wood-fired and raw), local subtropical fruits and vegetables, as well as foraged wild edibles gathered from the surrounding coastline. The set menus proved instantly popular with locals and visitors to the region when Pipit opened its doors in 2019.

Now emerging from the last few years of unexpected pandemic pivots, which saw Devlin and his team stretching their creativity to think beyond the plate through takeaway, pop-ups, closed-loop 24

ceramics, and even online classes, Pipit has pivoted again, just in time for a welcome reopening and the busy summer season ahead. And this time, it’s in an unexpected yet utterly inspired way!

During the March 2020 lockdowns, Ben started to learn ‘Gyotaku’ — a Japanese method of direct printmaking on seafood traditionally used by fishermen to record their catches and display the fish they sold. This traditional art form can still be seen in tackle shops across Japan today.

It’s another way for the Pipit team to share their passion for food and local produce and the abundant beauty of the Northern Rivers — and for diners to perhaps take home some really stunning artwork too!

In this same spirit, Gyotaku is being used to create Pipit art using fish, sea creatures and produce as “printing plates” for the ink (some of which is made from charcoal waste from the kitchen grill), allowing the silhouette to be imprinted on rice paper.

They make the prints according to the seasonality of produce, so it’s a beautiful connection to the sea and land that inspires their menu.

The Pipit art collection includes block prints of Flame Tail Snapper, Mahi Mahi,

John Dory, Mud Crab, Swimmer Crab, Eastern Prawn, and Squid, with some land-based love in the way of veggie delights like Morel Mushroom, Turnip, and Romanesco.

“A print shop from a fine-dining restaurant might seem unconventional at first, but the prints remain deeply connected to our dining,” says Pipit co-owner, Yen Trinh. “Each links a local farmer or supplier and a related dish on our menu.”

Cadeau is like a little slice of Europe for this charming coastal community, with a sophisticated yet relaxed bistro-style menu of classic French and British dishes and a top-notch wine list focusing on artisan growers and natural varieties to match.

This laid-back restaurant and bar has quickly become a favourite for locals and visitors alike, thanks to the warm hospitality of its owners, Chef Giorgio Ravelli and his partner in life and business, Holly Ottignon. The couple combine their considerable fine dining skills, having formerly worked in two of London’s most renowned Michelin starred restaurants — him at The Ledbury, she as front-of-house at The Clove Club.

We sat down with Holly to chat about how their dream of Cadeau Bar & Restaurant started, and what they love most about their local lifestyle after relocating to Bruns from London.

First things first, introduce yourself — who are you, where do you live, and what do you do?

We are Holly and Giorgio, husband and wife team from Cadeau Bar & Restaurant in Brunswick Heads. Giorgio is the head chef and I manage the floor and wine list.

Fill us in on the Cadeau story — where did it all start, and how has it evolved?

Giorgio and I met in London nearly 14 years ago, where we were both working in fine dining restaurants. Our relationship is a timeline of all the countries and restaurants we have worked in throughout Europe. Once we started our own family, we knew it was time to open our own place, and Cadeau amalgamates all those past experiences.

Let us in on your go-to favourite places — when it’s time to unwind, where do you like to eat, play, drink, relax and have fun around the Northern Rivers?

What kind of an experience have you tried to create for your diners and your community?

At the core, we want to create a warm and friendly atmosphere. We want the staff to laugh and joke with the customers like old friends. It’s that old-world hospitality that we hold so dear.

Showcasing local producers and farmers is also very important to us, so Giorgio’s menu will always be made up of what he can source as locally as possible. Eclectic music and art are also a nice point of difference at Cadeau (and something I was brought up appreciating).

Tell us, what do you love most about living in Brunswick Heads?

We moved back to Australia a few years ago to start a family and be closer to nature. When we were looking for a site, we wanted to find a place that would allow a good work and life balance, which cities often don’t allow.

I would say one of our favourite aspects of living in a small community like Brunswick Heads is the close contact that we have with producers and suppliers.

Our favourite place is Frida’s Field, a 120-acre farm and restaurant in the Byron Hinterland. The location is to die for, and Ally is cooking such delicious and rustic food. He and his wife Moira are such wonderful people.

What’s your weekend ritual?

A typical day off for us would be going to Black Drop in Pottsville for brunch before heading to Hastings Point for a swim in the river. The family-run cafe has an excellent chef at the helm and is delivering some of the best breakfast/ brunch food in the Shire.

Share the local love! Northern Rivers’ best-kept secret is?

It’s not a secret, but you can’t go past the epic omelette making skills of Rob from Nomadic Kitchen. He and his sister run a fantastic breakfast/brunch stall at a few of the local farmers’ markets, including Mullumbimby Farmers Market. It’s a mustdo! Bottle & Hoop in Brunswick Heads is also a super cute deli and bottle shop in one of the side streets of Bruns. Louisa is so passionate about what she does and will happily help you choose all your picnic essentials.

Rosé’s popularity in Australia just continues to grow, and you can always find a vast selection of this enticingly pink-hued tipple at your local bottle shop. Belinda Ryan from Pure Wine Co. breaks down the joy of Rosé to help you pick a style that you will like.

Rosé is a style of wine coming from red wine grapes and can be made up of just about any grape variety — its signature light pink hue is due to how Rosé incorporates some of the colours from the grape skins but not enough to qualify it as red wine.

Rosé wines range from pale salmon to copper-gold, strawberry pink and raspberry red. Styles can be crisp and bone dry to sweeter and fruitier. With so many variables, it’s little wonder navigating your Rosé of choice can be a little tricky at times.

Rosé is often chosen based on the general thought that the paler in colour, the dryer it is. And sometimes, this is true. But, don’t judge a drop by its colour! Some Rosé wines with a bit more depth of colour can just indicate more complexity and fullness of flavour.

The style of Rosé has changed dramatically over the years — we only need to look back to the ’80s and the super pink Mateus Rosé that everyone was downing at the time!

Fast forward to now, and the Rosé trend leans much more towards savoury and super dry varieties, like the famous French Rosé from Cote De Provence, which is super fashionable to drink currently. Connoisseurs tend to go for Rosé wines generally made from a mix of Grenache, Mourvèdre, Syrah and Cinsault, which appear extremely pale in colour and are very dry on the palate.

In Australia, we are blessed to have Rosé made from all different varieties, with popular varieties of Pinot Noir, Shiraz, Grenache and Cabernet, to name a few. However, we see a lot more Rosé made from Italian varieties such as Nebbiolo and Sangiovese.

Here are my top three picks for the most refreshing Rosé this Summer:

FOLK SONG A visit to Byron Bay isn’t complete without a spot of shopping, and the Industrial Estate has become quite the destination for boutique labels local to the area.

The Wandering Folk showroom is one you don’t want to miss. LOCAL ECLECTIC As one of the Northern Rivers’ most beloved stores and a destination in its own right, Fabulous Mrs Fox is the OG of the collectable and the cool in Brunswick Heads.

For the last decade, Fabulous Mrs Fox has been an icon of Bruns, so we thought it fit to sit down with the owner and the (equally fabulous!) Parri Wieckmann, to talk a little more about her colourful world, in-store and beyond.

First things first, introduce yourself — who are you, and what do you do?

My name is Parri Wieckmann, and I am the owner of Fabulous Mrs Fox located in beautiful Brunswick Heads.

Tell us more — how did it all start, and how has the store evolved to what it is today?

Fabulous Mrs Fox has been trading for around 11 years, and I managed the store for the original owners for about five years before purchasing it from them in 2019. I absolutely loved the shop so much that I treated it as my own, so I didn’t hesitate when the opportunity came up to purchase it.

What kind of an experience have you tried to create for your customers and your community?

Fabulous Mrs Fox’s aesthetic is whimsical

with a bit of vintage as well as new and quirky. I try to keep it interesting; I’m always looking for new products (firstly local and secondly Australian made) to keep the interest alive. We have so many regulars from local to interstate visitors that travel here every year. It would get so boring for them if they kept seeing the same thing every time they walked into the shop, plus there are so many new artisans popping up around here and further afield that deserve to be shared with as many people as possible.

Tell us about your neighbourhood, where you live, and what you love most about your community?

When I first came up from the Northern Beaches of Sydney 20 years ago, Brunswick Heads was a quaint seaside town. Fast forward to today, and it is full of fabulous shops, absolutely delicious cafes and restaurants, and what I consider to be the best pub in the Northern Rivers.

It’s a town for every interest, but it’s not too big to be overwhelming, which is something I absolutely love.

Which other local artists, designers or creatives are you most inspired by at the moment?

I love one of our most recent labels that have come on board. Wandering Folk is a brand started locally with gorgeous picnic rugs (which we stock) and is now an international success. Seeing where and how it started, to where it is today, is a truly inspirational story and should inspire others to know that what you 34

apply yourself to can make your dreams come true.

What is up next for you and Fabulous Mrs Fox? What should we be keeping an eye out for?

Coming into the Christmas period, we are super busy, not only with all our beautiful customers, but we also started a charity three years ago called the Brunswick Heads Community Christmas Tree.

It involves putting up a Christmas tree out the front of Fabulous Mrs Fox, which is filled with tags that have the age of children from one up to 13 years old.

People who would like to donate then come and pick a tag, get an appropriate gift from wherever they choose and then drop it back to the shop.

On 23rd December, I drop off all the donated gifts to local community groups to hand out to local children that might not be as blessed as others in our area.

Last year, well over 100 Christmas presents were handed over to smiling faces that might not have been otherwise.

So, if you visit Bruns leading up to Christmas, keep an eye out for the Bruns Community Christmas Tree if you would like to donate a gift.

Other than this we are looking forward to having people be able to visit us again and enjoy our beautiful little town.

SWEET TALK The rise of rum in the Northern Rivers An emerging clutch of distilleries in the Northern Rivers sees a local rum renaissance, one where the focus is on a spirit of creativity with fresh sophistication.

Rum’s renaissance is about more than the perceived superiority of the spirit. It reveals an appreciation of the Northern Rivers’ terroir – traditionally a French winemaking term that describes the distinctive environmental factors that influence a drink’s character, such as climate and soil. The region’s luscious coastal landscape lends itself well to growing sugarcane and, therefore, rum. In Wollumbin Mount Warning we have the source of rich volcanic soils, and 250 days of sunshine a year not only draws visitors, but those sun rays sweet-talk sugar cane from the earth with whopping speed.

The newest distillery to raise the rum bar is Cabarita Spirits and their flagship brand, Soltera Rum. Founder Keri Algar says subtropical and sunny Cabarita Beach is the perfect place to handcraft these quality spirits.

“Here in the Tweed Shire most of the local cane is processed at the Condong Sugar Mill, just outside of Murwillumbah, and this is where our molasses comes from.”

“WHERE SUGARCANE GROWS, RUM FLOWS” A by-product of the sugar-making process, molasses is rich in iron, calcium, magnesium and selenium. Mixed with water and yeast, it ferments. This fermentation creates a ‘wine’ or ‘beer’ which is then distilled to make rum.

Not all rum is made from molasses.

Rhum Agricole is a style produced from fermented sugar cane juice and is what distillers at Winding Road Distillery and Husk Distillers use.

“For Soltera, molasses was the obvious choice; it’s a by-product of the local industry and is readily available. Once fermented, it’s distilled twice in our copper pot still – I named the still ‘Felix’ 35

after my grandfather who worked as a chemist in a sugar factory in Spain; it’s one of those weird twists of fate I guess!”

Released at the end of 2020, Soltera Rum’s debut spirit is called Blanco. It’s a lightly spiced cane spirit and in Australia can’t legally be called a “rum” thanks to an antiquated Australian law that requires a spirit to be aged in wood for two years.

“Rum is a remarkably diverse spirit, there is so much to appreciate,” says Keri. “It can be rich and complex or light and easy, aged for decades or served fresh off the still. Blanco is a very approachable spirit, elegant and non-intimidating. There are barrel-aged products in the pipeline for Soltera Rum, but for now, Blanco makes an excellent daiquiri!”

Artisanal rum is now afforded the same respect as a fine wine or single malt scotch. This is apparent in beverage menus across the region, which reflect an increasing maturity and curiosity in consumer tastes.

This long-loved friendly community market always has lots on offer and is set in the heart of the thriving township of Pottsville (or ‘Potty’ as the locals like to call it!). Visit the markets for a great day out; pick up your fruit, veggies, homemade goodies, art, crafts, plants, jewellery, clothes, gifts and much more. The markets also accommodate community stalls that promote and support local interest groups. The markets are family-friendly (inclusive of fur babies) and just a stone’s throw from the stunning estuary, Mooball Creek. The markets have been managed by Pottsville Beach Neighbourhood Centre (PBNC) since 2003, and you can access PBNC via a driveway at the end of Philip Street where (on the 1st Sunday market) their Op Shop, Furniture Store and pop-up, outdoor Trash & Treasure stalls beckon, with all proceeds used to support community programmes.

The pristine Brunswick River makes for an incredibly scenic backdrop to the many cafes, restaurants, playgrounds, and shops, and, of course, to the famous monthly markets. From 7 am on the 1st Saturday of every month, the Brunswick Heads Markets come alive with the many artisan stalls, which provide clothing, plants, food, candles, soaps, coffee, and more. The products found here are a mix of locally made and imported goods, while the delicious nosh from the market food stalls is also not to be missed. Parking is available free of charge throughout the town, which is an easy walking distance from the markets. After exploring the various market stalls, Brunswick town centre and beach offer activities for the remainder of the day — a perfect excuse to spend ample hours exploring the best of this charming village.

Don’t leave town without a visit to Brooklyn Tasting Room, which brings the cellar door experience from the finest wineries in the world to right here in Burringbar.

Save some room for lunch at Farm & Co, the Cudgen café delivering delicious and wholesome food in a verdant setting (if you time your visit right, you’ll see the farm’s sprawling sunflower fields in full golden bloom!).

First things first, introduce yourself — who are you, where do you live, and what do you do?

My name is Peter Windrim, and I am a wine guy with a background in art direction. I’ve been a winemaker in Australia and France, I opened Byron’s first wine bar, and now run a business called Natural Order Wine with two mates in Byron. I live between the river and the surf in South Golden Beach with my wife, Nina, and our Maremma dog, Milka, whom was a vineyard guardian for our chickens and sheep when we lived on a vineyard in the Hunter Valley. Milka

now bodysurfs with us everyday so has had a radical sea change. I taste lots of delicious wine, but mostly I unpack boxes, pack boxes, flatten boxes, and recycle boxes. Ha. Tell us a little more about Natural Order Wine — where did it all start for you in the natural wine world, and how has it evolved?

My two partners, James and Daniel, approached me about an online wine business when I owned my wine bar in Byron. It was a bit of a Covid shift I guess, as I put my bar up for sale the moment I heard that the hospitality scene in Hong Kong had shut down in less than one day when the virus kicked off, and leapt onto this idea with them. month where we make no plans and see nobody. And as much as I miss living on a vineyard, I’m at home with the sound of the surf in our house. I’ve had a pretty restless life, always chasing new adventures, new jobs, new countries to live in, so I’ve never felt more at home than this very moment.

Let us in on your go-to favourite places! When it’s time to unwind, where do you like to eat, play, drink, relax and have fun around the Northern Rivers?

is a virtual wine business. We began with subscriptions, but now we have an online bottle shop, plus our own brand, NOW wines, are offically releasing next month, and we are opening our first physical space in the new year. Plotting a vineyard site also.

I grew up on a vineyard in the Hunter Valley so grape juice has run in my veins forever. I didn’t however, return to the farm and become a winemaker until I was 35. My dad farmed biodynamically which is what drew me back initially, but it was the natural wine movement that further fanned the flames of excitement. It’s so creative, so expressive, and so honest.

There’s no trickery, and it takes a lot more skill to get it right.

What are you inspired by in your local community, and how does this influence your work?

I’m enthused by our community’s passion for nature, equalled by a passion for a good time. There’s lots of beautiful talk of trees and trails and surfing, but I’ve never met so many entrepreneurs in one small area. People don’t move to Byron to drop out. They move here to breathe, but also to make and to motivate. This all influences your work by having an approachable and transparent business, and creating something that reflects not just our town, but a collective ethos around the globe. You can’t bluff people in a place like this. It’s like the country in that way.

What does ‘home’ mean to you?

My wife and I cycle there for swims, but our extended friends gather there often for beach picnics and wines. Our favourite restaurant is a vegetarian joint called No Bones. I used to raise and slaughter animals on the farm, but after I watched Seaspiracy I flipped the other way. It’s a wildly good restaurant regardless though. We mostly drink at house parties, but the drinks and wine list at Oma is very good. It used to be a nightclub called Locura which we used to love dancing in, but covid forced them to shift the model.

There’s loads of music here, the walks and hikes are amazing, the waterfalls are epic, and there are so many good places to surf.

What’s your weekend ritual?

I don’t have many. But most likely we cycle to Christmas Beach for a swim on Saturday morning, then go to a party or have street drinks with our neighbours (who weirdly are all our mates) that turns into a party at ours. Then on Sunday we turn our phones off, go for a hike or a nude swim (eek), cook something comforting, and watch an early film. Such a grandpa. Ha. Which other local artists, designers or creatives are you most inspired by at the moment?

Craig Ruddy was a hero of mine 20 years ago and now is such a good friend. Pete “Waves” White painted the interiors for my bar. His first art job and it was incredible. It now hangs in our house.

Contemporary First Nations artist Bianca Gardiner-Dodd is a Northern Rivers local and Kamilaroi woman living on Bundjalung Country whose work is inspired by the coastal environment, estuaries, forests and beaches she was raised and continues to live in. We spoke to the Pottsville local about her home in a picturesque coastal enclave, the area’s lifestyle, and her artistic influences.

First things first, introduce yourself — who are you, and what do you do?

My name is Bianca Gardiner-Dodd, and I am a First Nations Artist.

How did you become the artist you are today — where did it all start, and how has it evolved?

I found myself at home by myself one day without the kids (unusual at the time), and I was bored. I have always preferred to create things with my hands, craft, draw or paint, but after having kids, I had little time to indulge in such activities.

On this day, I went out to the garage and searched for old paints and canvas.

Previously I’d play with pop, abstract, Picasso-style art, but I thought maybe I would tap into my culture and try my hand at the Aboriginal style of art, just as I had watched my mum (a Kamilaroi

woman from Goodooga) paint artworks for the past few decades.

Once I started, I loved it; it felt totally natural. A few small paintings in, my husband decided to show a local gallery my work and my journey in the professional art world began with an order for three large paintings. My first major work was based on the Pottsville estuary and my local community.

Since then, my artwork has evolved, however, I continue to paint our local coastal environment and focus my attention on its positive interactions on my community.

Sum up your painting style in three words:

Topographic, fluid and emotive.

What are you inspired by in your local community?

When we first moved and built our home in Pottsville, it felt like a little village, and I loved that we felt connected. As our town has grown, I also love the diversity we are seeing and the energy that new people bring.

What does ‘home’ mean to you?

Home means family, my safe place and the place my family is free to express themselves. My home can be a little bit of a circus; we are all so busy with businesses, study and sport!

What’s your weekend ritual?

We start most days with a walk to our local coffee shops, and we love to explore regional eateries. Most weekends, though, I am usually in the studio painting.

Which other local artists, designers or creatives are you most inspired by at the moment?

Local artist Corrinne Lewis’ paintings are exquisite. Corrinne’s husband Cameron stretches and frames for many of my artworks; together, they are Two Seas Creative. And Kellie North is an amazing photographic artist, and I met her through Quilla Design Emporium at Mooball, where we both exhibit. Her work is stunning. I definitely have plans to own pieces by these two incredible artists in the near future. Obviously, my mum, Gloria Gardiner, has been a constant inspiration, and I already own several of her works.

What’s up next for you? What should we be keeping an eye out for in the world of Bianca Gardiner-Dodd?

I have a current collaborative exhibition in Melbourne with Art Lovers Australia, called Unwrapped. Quilla Design Emporium at Mooball has some really exciting things happening soon with me.
