Welcome fall! With the changing seasons comes a change in what we are craving, and with fall that often means comfort food. October is our most delectable issue of the year, filled with some of our favorite dishes and beverages around town.

We had the pleasure of sitting down with Chef Sheppard at Stafford House Provisions and learned about what their fall menu will be boasting—so get your tastebuds ready, you are in for a treat. We also included a few new recipes for you to try at home, whether you’re cooking for just your family or for entertaining guests. The smells of fall bring memories to my mind of sitting in my mom’s kitchen, and the aroma of cinnamon, apple, pumpkin, chili and soups of any kind brings me right back to her table. I always loved arriving home from school and smelling her chocolate cake baking in the oven. There is definitely an art to creating a flavorful dish that not only satisfies our taste buds but evokes memories. The aroma of certain spices and foods can bring us right back to our childhood, which can be incredibly powerful and comforting. Food brings us all together, and whether we are sharing a meal with loved ones or enjoying a night out on the town, the time spent while enjoying food is invaluable.

HERITAGE RANCH RIBBON-CUTTING
Neighbors toured model homes and enjoyed refreshments at the August ribbon cutting of Sherman’s newest community, Heritage Ranch. Heritage Ranch is a 440-acre mixed-use master-planned community featuring commercial, retail and entertainment space. It will also offer more than 750 new single-family homes across a variety of home styles and lot sizes along with parks, trails and ponds for residents to enjoy. All located off Highway 82 just west of U.S. 75.

MAKING MEMORIES ONE MEAL AND SONG AT A TIME

The Country song, “Crowded Table” recorded by The Highway Women is one of many featured in the new cookbook, Gatherings and Guitars: Making Memories One Meal and Song at a Time by Sherman’s own, Jennifer Taylor. It’s the perfect correlation of the spirit felt at Old Quail Run Farm during their many dinner concert events. Those memories and experiences are what inspired Jennifer to create the book.
As briefly spotlighted in Texoma Lifestyle’s January 2024 issue, Jennifer Taylor is the owner of Old Quail Run Farm in Sherman. Jennifer and her husband, Rick, purchased the home in the Spring of 2016. After renovation, they hosted their inaugural dinner, followed by another focusing on Jennifer’s love for Spanish Tapas. She quickly realized the only thing missing was music. Having a rich musical background, she organized the next event with Texas’s own, Jack Ingram, for the farm’s first concert dinner. Since then, Old Quail Run Farm has hosted numerous dinners featuring country artists like Lee Roy Parnell, Radney Foster, Darryl Worley, and Suzy Boggus.
Jennifer Taylor realized these captivating experiences should be documented in a cookbook. And while it is a book full of recipes, it is exceedingly more than just a cookbook. Pretty enough to be a coffee table book, Jennifer describes it as a “table book of stories with recipes.” It took Jennifer five years to complete this labor of love. “I wanted people outside of our little farm to have a glimpse to see what we have here”. Jennifer continues, “After every dinner, people remark the event was magical, a word used regularly. It isn’t just the music, the food, or the farm. It’s the spirit of it all.” By documenting the gatherings, Jennifer hopes everyone

will read the stories from the artists, prepare the menus, plus listen to the music associated with each dinner.
It's the reason Jennifer titled her books Gatherings and Guitars, note the first word, gatherings. Jennifer believes the world needs to “gather” back together, talking face-to-face over a homemade meal and listening to great songs in a personal setting. “People yearn for this more than they know,” states Jennifer. Creating a beautiful table, amazing music, and phenomenal food in an intimate setting results in a magical occasion.
In fact, the Gatherings and Guitar books are a series of five commemorating the memories, recipes, and stories from the past and upcoming dinners at Old Quail Run Farm. Each book includes stunning photography, recipes from the event, and memorable tales from the artists. Some of the artists include their own recipes as well. Jennifer wants you to relive these moments, so she included a QR Code (quick response bar code) to a musical playlist complementing each recipe and story.

Furthermore, soon you will be able to learn more about the dinners and artists via the “Gatherings and Guitars” Podcast streaming on most major platforms. There are fifteen podcasts recorded to date airing this fall hosted by Jennifer Taylor.
The remaining 2024 dinner concert schedule includes concerts from artists such as The Texas Playboys, Mike McClure, and Grady Spencer to name a few, with more announcing soon. Jennifer Taylor hopes the cookbook will encourage people to come to the farm and experience the dinners live and possibly be featured in future books.

TEXOMA’S PREMIER BOUTIQUE DINING EXPERIENCE

Stafford House Provisions is excited to announce a recent change to its dining services. Located in the historic Katy Depot in Denison, Stafford House Provisions originally specialized in charcuterie and wine services. However, co-owner Erin Griffith has recently partnered with Chef Jason Sheppard of Knife-and-Whisk to offer an exciting dinner menu for Texoma residents.

Griffith, a long time Texoma resident, found much success with her charcuterie and wine business but knew there was still a need for fine dining services and felt that she could offer a uniquely elegant dining experience. “I knew Denison was growing, and I wanted to provide to our area what I was driving to Dallas for. We want to be another regional attraction.”
A certified sommelier, Griffith felt like she could use her expertise in wine services to create curated wine pairings with gourmet meals for one of a kind dining experiences. “My passion is people and making them happy. Getting them together with food and wine is something I know I can do well.”
Partnering with Chef Sheppard brings her wine expertise and his 20 years of fine dining experience together and residents can experience an amazing curated meal in what she describes as boutique fine dining. Griffith encourages her patrons to try her favorite meal of Pork Chops and Sweet Potato Grits while Chef Sheppard states that the Sea Bass Dinner is a must try. Sheppard, a certified Chef, states, “We have a small, experienced staff and all of our food is made by hand. It is definitely a delicious and intimate dining experience.”
Stafford House Provisions is open Wednesday through Saturday for lunch and dinner. In addition to fine dining, Stafford House Provisions is a great petfriendly place to bring friends, guests and family to enjoy a nice glass of wine or other beverage and relax.

A Community Resource For Those In Need
GRAND CENTRAL STATION SHERMAN

Morning Shift Volunteers

Grand Central Station has served the Texoma area since opening their doors in 2010. Their purpose is to provide for the underserved and their mission is to provide food, tools for learning, advocacy, life solutions, and an environment of safety for our neighbors in need. Grand Central Station has served over 700,000 client meals and has over 100,000 hours of volunteer and group service since opening.
In 2023, Grand Central Station provided 39,831 lunches and 16,517 breakfasts totaling 210,322 pounds of food. Forty volunteers served 5953 hours to assist clients in need. Eighty percent of guests served are 55 years old or older, and thirty percent of guests are veterans.
With today’s economic crisis and increasing homelessness, Grand Central Station provides invaluable assistance to the community. The facility, its devoted staff, and volunteers provide hot meals, groceries, emergency clothing, hygiene supplies, laundry and shower facilities, internet and computer access, advocacy, and referrals to other agencies. Services include the Dining Car, Children’s Express which provides weekend food distribution for school aged children, Market Food Pantry, Matthew 25 which provides shower and laundry facilities, and Case Management.
Melissa Schmitz, Executive Director, stresses the importance of service and volunteerism in the community with so many people in need. Melissa, an East Texas native with a master’s degree in social work, has always seen the need to help others and find solutions
to community problems. After more than a decade of working with victims of domestic violence and sexual assault, she joined Grand Central Station in the fall of 2023. According to Schmitz, “Our mission is so profound because we not only serve adults but we have programs for kids and other underserved groups. There is a huge need as we not only serve the homeless, but people with short term issues. It’s not just meals. It’s everything.”
Sabrena Keathly, Market Depot Director, matches individuals and families with their food needs in their grocery market. “We don’t just hand out food. Individuals are allowed to shop and pick out their groceries according to their needs. We carry most grocery items and toiletries.”
Of course most of this would not be possible without the dedicated support of volunteers and community partners. Nat McClure is one of those that helps to make these programs possible. He is the owner of Nat McClure State Farm Insurance in Sherman, and he started his sponsorship of Grand Central Station a couple of years ago to show gratitude for the services they provide to the Texoma community. According to McClure, “Helping and

volunteering really gives you a perspective on what is going on in our community. This community is good to us and sponsorship and volunteering gives us a chance to give back. We have a responsibility to make a difference.” Being involved is a family and workplace affair. McClure’s son Grant began volunteering and encouraged his father to get involved as well. Robin Bethel, Nat’s Marketing Director, helped coordinate a recent effort to provide reusable water bottles to Grand Central Station. McClure’s company recently donated 250 customized water bottles to help cut down on waste from disposable water bottles.
Welton Stoker is a faithful volunteer and is one of the many volunteers you will find working diligently to provide food and services to those in need visiting Grand Central Station. Stoker, a retired minister and former teacher at Sherman High School, can be found working at the Station Monday through Friday where he works an average of 5.5 hours per day. He started in 2020 during the covid epidemic and stressed the importance of working with such a worthy organization. “It’s a great ministry and it keeps me busy doing some good work for people in need.”
Lisa Shields, an owner of Shields Construction in Sherman and a Grand Central Station board member serving her first year, can also be found volunteering at the facility in her off time. “Being involved is a great way to give back and I am so happy to be a part.”

Have you ever made a life decision that was a huge risk, uprooting your family leaving life as you know it behind, to follow a dream? Carli Dunham did just that in 2020 moving to Denison, opening Café Blackbird.
Carli Dunham grew up in Quanah, Texas, west of Wichita Falls. She was raised in restaurants as her mom and aunt owned one and her father was a cook at an iconic local restaurant. It was fate for Carli to do the same. Enter Café Blackbird, a sandwich shop and bakery. Quanah did not have a restaurant serving homemade soups, sandwiches with fresh baked bread, and desserts made from scratch. That motivated Carli to provide the town with something new.
Several years later, Carli’s daughter started showing horses, requiring her family to travel to Denison “pretty regularly.” The horse trainer was in Denison so the Dunham family would always end up downtown. Carli immediately was drawn to the area. “Downtown Denison was thriving and growing, and it had something really special,” she says. She felt drawn to the town.
While shopping at a Denison boutique, Carli learned of downtown space renovated for a restaurant. She researched and realized Texoma was about to burst making it prime time to make a move. Carli quickly inquired about the property discovering it was already highly sought. Luckily, she had the opportunity to take the location, coincidentally at the height of the pandemic – not a great time to relocate. However, that’s exactly what Carli did. Carli and her husband had never lived away from their parents prior to moving to Denison. To say that it was a big move would be an understatement, but four years later it is a decision she does not regret.

Café Blackbird opened in August 2020. Luckily for Carli, her artisan baker, Bailey, followed her to Denison. The café is known for their homemade soups, savory sandwiches made from scratch at the restaurant, and, of course, the decadent desserts like the giant walnut chocolate chip cookies.
“People ask me all the time where I get our desserts and cakes. I think it’s sad that nowadays most restaurants don’t make the food themselves by buying from food suppliers,” proclaims Carli. Having food made fresh in the restaurant is of great importance to her. “It is a jewel in my crown that we can do everything in house. It’s efficient and better. If you are going to have a sandwich shop in the days of chain sandwich stores, you need something that is better,” she states factually. The public agrees based on positive online reviews and loyal customers.
“We’ve done really well. I do not have access to tons of capital and investors. It has always been my family,” notes Carli. It was an adjustment going from small Quanah to a “bigger town” in Denison. “But we hit the ground running, and the town has supported us,” she continues.
Carli and family are so pleased with the success of Café Blackbird that they are opening another business downtown. Four & Twenty, A Bookshop by Café Blackbird is launching this fall. The store’s title coincides with Carli’s love of blackbirds in literature (ergo the restaurant name) using lyrics from the “Sing a Song of Sixpence” nursery rhyme.



The store will sell books, gifts, coffee and tea, and Café Blackbird desserts and pastries. Helping small businesses, Carli decorated the shop with furnishings from local Denison antique stores. Her hope is to host book clubs, craft classes, and other small events at Four & Twenty.
The Dunham family is very happy in Denison. Carli is pleased with the charm and history of downtown. “I love how people are invested in renovating the downtown. It’s good for the community and the area,” she says. Carli is quick to note while she chose Denison, sometimes she thinks Denison actually chose them. Moving the café and her immediate family from Quanah to Denison, plus leaving her parents and other family, was the most challenging risk she has ever taken. Nevertheless, Carli appreciates the people of Denison for “embracing us with open arms.” Four years and two businesses later, Café Blackbird and Four & Twenty are happy to call Denison home.

Fall’s most notable comfort meal

CHICKEN NOODLE SOUP
This hearty chicken noodle soup is the perfect comfort food that is packed with nutritious goodness. This pairs perfectly with homemade beer bread or a sourdough loaf.
INGREDIENTS:
• 8 cups chicken broth (add more if desired)
• Whole fryer chicken, cut in chunks or shredded
• 5 celery stalks, sliced
• 8 carrots, sliced
• ½ onion diced
• 4 tablespoons butter
• 1 teaspoon Italian seasoning
• ¼ cup half and half (optional)
• 1 package egg noodles
• Salt and pepper to taste

DIRECTIONS:
In a large stock pot, add 8 cups of chicken broth. Dice carrots, celery and onion and add to the broth. Bring to a boil, and reduce to medium heat until the vegetables are soft. In the meantime, skin and cube 1 whole fryer chicken and add to the stock pot. Next, add egg noodles (frozen Reames homemade egg noodles are my favorite) and let boil until noodles are cooked. Add butter, half and half, salt, pepper, and Italian seasoning. Simmer on low until ready to serve.

PUMPKIN PERFECTION
Put the carving tools down and check out how you can add some pizzazz to your pumpkins with just a paint brush.
the CREEPY crawler
For this design, you’ll need several pumpkins or gourds in various shapes and sizes, some white and metallic acrylic paint, hot glue and some fake creepy crawlers.
Paint your “background” pumpkins in metallic colors. For your centerpiece, use white paint to cover the body, metallic paint for the stem and hot glue your creepy crawlers all around.
