Hello Fall, it's time for football, friends and fabulous food!
Welcome, fall! The changing season brings changes in what we are craving to eat, what activities we are participating in, and what our schedules are like. We transition from free schedules dashing across the country visiting people and places during the summer to weekday routines from sun-up to sun-down, socializing with family and friends during small weekend gatherings in the fall.
Fall brings family fun events like football, Southlake's Oktoberfest, and festival season. Festival season begins and people start decorating their stoops with a myriad of pumpkins, gourds and corn stalks. Ghosts, jack-o'-lanterns and goblins are soon added to the fall foliage, ushering in one of our family's favorite holidays, Halloween. It's not a holiday everyone celebrates, but for those of us who do, the idea of decorating, preparing Frankenstein and bat themed foods and coming up with a new and unique costume idea as a family is something we look forward to for months! One of our personal favorites was the year HBO debuted the series "Westworld" and Jon and I dressed as two characters from the series. It was a blast!
October is one of our most delectable issues of the year, highlighting some of our favorite locations to wine and dine around town. There is definitely an art to creating a flavorful dish that not only satisfies our taste buds but evokes memories. The aroma of certain spices and foods can bring us right back to our childhood, which can be incredibly powerful and comforting. The smells of fall like cinnamon, apple and pumpkin spice bring memories of laughter and fun with family and friends enjoying tailgate parties before Cowboy games and heading to the State Fair of Texas for awesome rides and great food. Pumpkin spice lattes and Oreo cookies simply encourage the brewing excitement for the holiday season on the horizon. Food brings us all together, and whether we are sharing a meal with loved ones or enjoying a night out on the town, the time spent while enjoying food is invaluable.

Chamber welcomes new Board Chairman
The Southlake Chamber of Commerce recently welcomed Karl Chester as its 2023-2024 Chairman of the Board. Karl is a Vice President/Commercial Lender in Southlake, with more than 15 years of experience in the banking and financial industry. He is an active member of the community and donates time volunteering with different non-profit organizations, as well as helping to organize different Southlake community events. Southlake welcomes him to this new Chamber leadership position!

Pickleball complex well underway
Construction on Southlake's new Bicentennial Park Pickleball Complex is moving right along. The only thing I love more than fashion is food! I am one of those people who falls asleep looking forward to what I am going to eat for breakfast. Like most people, food is a big part of my daily life, and any type of happiness, success or special event is always celebrated with a fun food gathering. For us, Fridays are for parties with friends serving Domino's pizza and swimming with our 8-yearold daughter Ava. Saturday is Roots and Water for date night with Jon, and Sunday is brunch with family. Southlake is filled with restaurants offering delectable cuisine from around the world, and any day is a great day to try one.

KIDS MATTER PUTS KIDS FIRST
11 million U.S. children, 20% of Texas kids and more than 22% in Tarrant County live in poverty. Poverty affects all facets of children’s lives, including school performance, behavioral and social health, physical health, nutrition and well-being.
Ask Marti Conner, President, Kids Matter International, why she’s so invested in her job, and she can relate story after poignant story about the lives of those who’ve been touched by Kids Matter.
Kids Matter is dedicated to today’s kids and tomorrow’s future, helping children in need through empowering programs that enhance their lives and offer hope for a better future.
Kids Matter provides new clothing, shoes, books, backpacks and educational programs. On average, the organization helps families with an annual household income of less than $25,000; households headed by single parents or grandparents; families raising two to four children; and those where the head of household works, often holding two jobs.
For every dollar spent, Kids Matter puts 81% back into the community through programs like:
Around the Block , the largest Kids Matter program, where volunteers, donors, staff and Kohl’s stores provide clothing, books, backpacks and school shoes to children. Kids receive up to $100 each for a Kohl’s shopping spree. Every $100 donated to the program buys children $225-$250 in new clothes and shoes. Twisted X shoes and boots also donates quality casual shoes. Each child can select a pair from a variety of styles. For many, it’s the first time they’re receiving new clothes instead of hand-me-downs or shopping in a second-hand store. The positive impact on their self-worth and confidence is immediately apparent in their demeanor and smiles. Around the Block 2023 will be held at the Southlake Kohl’s on November 4, Kohl’s Arlington on November 11, and Kohl’s Austin, Texas, on November 18. Volunteers are needed to help kids select and shop for clothes.

Ramp Up Reading Literacy. It’s reported that one in four kids today grow up unable to read. Students without reading proficiency by third grade are four times more likely to drop out of school. Kids Matter addresses this concern through its reading literacy program, partnering with Kohl’s department stores, Kohl’s Cares Volunteers and local volunteers. During this summer and back-to-school program, Kohl’s employee volunteers read to children and provide them with new books contributed by Kids Matter. Books are also given to local community centers, distributed at back-to-school

events and at festivals where the Ramp Up Reading Program is featured. Approximately 15,000 new books are distributed annually. Every $25 donation buys 15 books for this program.
Lone Star Artists. Kids Matter sponsors the annual Lone Star Youth Artist Award with Representative Giovanni Capriglione from the Texas House of Representatives District 98, held in partnership with the Southlake Art in the Square festival. The event gives aspiring high school artists an opportunity to participate and learn about a world-class art festival, with the winner’s work displayed at the Texas State Capitol.
The Eagles Challenge Hole-in-One Golf Tournament will be held October 23 at Lantana Golf Club. This one-of-a-kind charity tournament features a Hole-in-One prize valued at $50,000 on each hole. Closest-to-Pin and Hole-in-One winners also compete at the 19th hole shootout for a $1 million grand prize.
Kids Matter Charity Ball. The agency’s largest annual fundraiser will be held February 23, 2024, at The Bowden premier event venue in Keller. This black-tie evening features a seated dinner, luxury live and silent auctions, entertainment and a chance to reflect and celebrate the positive impact of Kids Matter programs on the thousands of children and families served each year.

Young entrepreneur Diana McWilliams likes to say she has ketchup running through her veins. The roots of McDonald’s franchise operations run deep within her family, and some of her fondest memories hail back to enjoying that first hamburger as a kid, hanging out with Ronald, and seeing so many children enjoy their birthday parties in the fun style that only McDonald’s can provide.
Her grandparents made history in 1978 as one of the first Hispanic McDonald’s owner-operators in California, and everyone in her family has since supported the brand in a major way.
Diana’s parents followed in the family business, opening their first franchise, CKMC Enterprises, in 1994 in Fort Worth. Today, they operate four McDonald's located in the DFW Airport and in Fort
Worth, with Diana, her brother and her boyfriend all helping out.
Diana, too, has aspirations to open her own franchise. It’s a dream she’s had since she was younger. She loved watching her parents work hard and make a difference. Her goal is to open a McDonald’s in her community.
It was always important to her grandfather to be involved in his community, and Diana feels the same way. At just 25 years old, she is already the youngest new Board member for the Southlake Chamber of Commerce and serves as Co-Chair of the Southlake Chamber’s Young Professionals networking group, which is dedicated to developing and empowering purpose-driven young business leaders.
“Being a part of the Southlake community has been such a beautiful blessing,”
she says. “The guidance, support and mentorship I’ve received has made it easy to serve my community.”
By attending different Chamber events, Diana experienced how welcoming and unique the Southlake community is, and how all the local restaurants work hard to support each other, as well as other businesses in the area. Delta Hotels by Marriott Dallas Southlake has been a great supporter of Diana’s efforts, helping to introduce her around town. Diana also credits the hotel’s Executive Chef Jos é Soto, a fellow foodie, for inspiring her to be the best version of herself.
“Without this support I wouldn't be who I am today,” she says.
Community has always been such a part of her life. She grew up seeing her parents host school nights, sponsor high school

games, support their local Ronald McDonald House and more. She was always known as the "McDonald’s Girl," a nickname she embraced because of her pride in her parents and all they did for the community.
“They’ve always told me that I can do anything I put my mind to, and I live by that every day. I live the ‘golden’ way,” she enthusiastically explains, relating back to those recognizable McDonald’s golden arches.
“I want to carry on the family legacy as a third-generation Hispanic McDonald’s owner-operator in my own community, scooping out hot golden-brown fries, serving up fresh burgers and offering ice cream to customers on warm summer days, for after-school snacks or for date night desserts,” she adds.
It’s not easy to acquire your own McDonald’s franchise – a comprehensive understanding of the business is needed – which is why Diana is immersing herself in every facet of operations and employee relations, the keys to running a successful restaurant. Her aim is to acquire the knowledge and skills necessary to providing an exceptional experience for employees and customers alike.
“My philosophy is, don’t be afraid to be your best self. You have to take calculated risks to achieve personal growth and to step out of your comfort zone as you build your business and
make yourself known. Surrounding yourself with individuals who possess greater knowledge and expertise than you have not only fosters personal development but also paves the way for new opportunities and insights,” she says.
By following this approach, Diana believes she can continue to evolve both personally and professionally.
She has always been an entrepreneur at heart. At age 15, she established her own photography business, and at age 17 she started a T-shirt company called 24/7 Cajj, a short name for “casual.” She is a graduate of the University of Arkansas, with a major in business management and a minor in marketing.
As a young entrepreneur and new member of the Chamber Board, she’s filled with excitement and eagerness to learn from her experienced peers. She recognizes that her journey has just begun and is committed to absorbing knowledge and experiences that will shape her future endeavors for years to come.
Diana McWilliams' journey is a true testament to the power of community involvement and the pursuit of one's dreams. As she takes her place on the Southlake Chamber Board and pursues her McDonald’s local franchise goal, she is poised to make a lasting impact both within the community and professionally.
With such passion and drive at such a young age, Diana's future seems undoubtedly bright.

Finding unique, interesting wines can be difficult. Before Southlake’s location opened, the best option was grocery stores, although selections were limited and missed the special, boutique, hard-to-find wines and vintages that aficionados seek. So General Manager Blake Maso went on a mission to fill the store with the best of the best at each price point and wine region.
“There are great wine stores in Dallas, but nothing close to Southlake like Roots and Water,” notes Blake.
Blake has worked in the wine industry for 10 years, with a heavy emphasis on importing and distributing the best vintages from Europe, including Bordeaux, Tuscany and Burgundy. Throughout his travels and tastings, he’s gained a wealth of knowledge about winemaking, viticulture, the history and diversity of different wine regions.

If you’re seeking a hard-to-find wine, a nice party wine, something special for an anniversary, birthday, holiday or business event, look no further than Southlake’s premiere wine shop, Roots and Water.
Partners Mark Plamondon, Charlie Stewart, John Miller, Jimmy Shoppa, AJ McClellan and Rick Helmig opened Roots and Water over a year ago with Blake Maso to provide the local community with wines and tastings not found in Southlake, Westlake or surrounding areas. A wine lover himself, Mark had been driving to Dallas to find good wines and eventually decided it would be a fun venture to build his own store closer to home.
Wine is their hobby and passion.
“It was a personal venture to establish Roots and Water in Southlake,” Mark says. “I love wine and the people involved in wine.”
AJ McClellan, Certified Sommelier at the Dallas Roots and Water, has helped the partners find some of his most favorite wines, leading to establishment of the Southlake location.
Prices at Southlake’s store range from quite affordable to exclusive. There is truly something for everyone.
“Depending on your needs, we can connect you with a delicious $20-$30 bottle or help find distinctive specialties,” Mark says.
Roots and Water can find a vintage from the year someone special was born, or perhaps a wedding year. There are memorable wines for client gifts, and the store can recommend ideas for holidays, special dinners and occasions, with exclusive bottle engravings.
Experts are on hand from noon-7 pm TuesdaysSaturdays to share their knowledge and experience. Many of Roots and Water’s offerings are “best in class.”
There’s no membership required to shop the retail store – it’s open to everyone.

meet new friends and strike up a sense of community. Members can host events and establish their own wine lockers.
There are member discounts, access to wines not found anywhere else and the experience of learning the finer points of wines.
“We’ve seen many people join the club not really knowing other members, and a few weeks later gaining great new friends and enriching their circle of community,” Mark says.
While business networking does take place, it’s really more of a social club, Mark and Blake explain.
“You don’t have to know a lot about wine, you just need to be a wine lover to come and enjoy,” Blake says.
Blake also offers personal phone access at any time for members who are out somewhere and need advice on selecting a wine.
The club features live music nights, New Year’s Eve parties and other events. Private tasting rooms are available for board meetings, presentations and the like.
While the club offers light bites, members can bring in their own catering for dinners with friends.
“We want members to feel like this is an extension of their own living room, with their personal sommelier,” Blake says.
The club is currently designing an enclosed 2,200-square-foot patio, opening in 2024.

Local legend Rickey Hill's big screen story
Famous North Texan Rickey Hill’s life is an incredible story that gives faith to the power of dreams and exemplifies the strength of the human spirit.
Born in Fort Worth, Texas, to a poor Baptist preacher and his wife Hellen, Rickey grew up in the 1960s wearing leg braces due to a degenerative spinal disease. Doctors doubted he would ever walk normally. He was teased and taunted by other kids in school, yet even through the physical challenges, bullying and discouragement, Rickey knew from a very young age that what he most
wanted to do was play baseball. It was a dream that seemed unattainable, yet he held onto it tightly, feeling like it was God’s calling that he would one day play in the major leagues. He wanted to be the best baseball hitter in the world.
Rickey’s dad had other aspirations for his son. He wanted to shield Rickey from further physical pain. He didn’t see that Rickey could ever become a baseball player with the limitations he suffered. And, importantly, he wished for Rickey to follow in his footsteps along a higher calling to also one day become a minister.

The incredible Rickey Hill
The remarkable true-life story of Rickey Hill's improbable journey to overcome his challenges and play professional baseball are explored in the new movie “ The Hill,” starring screen legend Dennis Quaid as his father, Reverend James Hill. This inspirational true story hit theaters nationally in August.
A YOUNG PHENOMENON, DESPITE PAIN, ADVERSITIES
At age four, Rickey began hitting rocks with a stick. With his leg braces locked in place, the youngster would hit the “fast ball” rocks his older brother pitched, swinging hard for the bleachers. The family lived in poverty and times were hard, with no money to spare for a ball and bat for a boy who was considered just a dreamer. Every day, though, Rickey would continue hitting rocks with sticks, sometimes for 16 hours a day. He would practice batting wherever he could, in his backyard, outside the church and in open fields.
When he turned seven, his brother encouraged him to play baseball with the older kids who were bigger, stronger and more experienced at the game – and young Rickey surprised them all, hitting the ball better than anyone else.
By age nine, he was playing in a twilight league’s starting lineup, and by the time he reached 12, Rickey was known as the “home run king” by the other boys. From about age 10 on, Rickey would always draw a cross in the dirt each time he came to bat, feeling God’s love and encouragement pushing him on.
Limitations had no effect on his dream – Rickey kept his mind focused on the prize. He saved green stamps to buy his first glove and continued to seek balance between the crippling disease he wouldn’t allow to get him down, the pro ball player he wanted to be, his father’s dreams to become a preacher, and what God truly had in store for his life.
When it finally came time to remove the leg braces, baseball had become a natural for Rickey – yet the ups and downs continued to plague him. While playing for his high school baseball team at
age 17, he injured his leg on a sprinkler head in the outfield, requiring surgery, just as the St. Louis Cardinals were scouting him.
At 18, he was invited to a three-day baseball camp where 700 of the top teenage ball players from around the country were competing for a chance at the big leagues. The main tryout field was reserved for the top-rated talent, with Rickey stationed at the worst field, frustrated as he limped around the bases while his extraordinary batting abilities were overlooked.
Eventually, he tapped the top scout on the shoulder and said, “Sir, the hardest hitter is about to leave this camp. How do I get to the main diamond, where the top players are?” The scout was skeptical but invited Rickey back for the opportunity of a lifetime the next day, where the top 18 talents faced off for the camp finale. Rickey was assigned as fourth in lineup and designated hitter for both teams, putting on a spectacular display as the hardest hitter at camp, going 11 for 11, including two singles, five doubles, one triple and three home runs.
As Rickey tells the story, he “entered camp as a nobody and came out as a somebody.” Not long after, he signed with the Montreal Expos and played four seasons in the minors before his body gave out.
DETERMINATION AND GRIT
They say it takes a lot to make it in baseball. A strong work ethic and perseverance are important. You have to set high goals and stay focused on reaching them. And you have to continue when the going gets tough. Nobody understands that more than Rickey Hill.
Despite the obstacles life has thrown Rickey’s way, he’s faced those challenges with faith and an unwavering will. He’s been through 49 surgeries in his lifetime, living most of his days in chronic pain but never letting it stop him from his dreams. He’s broken nearly every bone and has been in three near-death car accidents where ribs and his femur

have been smashed, his skull was cracked, and one wreck resulted in a year-long concussion. In the last accident, troopers were surprised to find he was still alive.
“My mom always said I was hardheaded,” Rickey jokes.
When he could no longer play baseball, he found golf and now enjoys both playing and teaching the game to others.
All his life, Rickey has moved mountains to climb The Hill , in baseball and other aspects of life. From being dirt poor as a child to living in his car, eating dog food from a can and arm wrestling for $15-20 to make gas money as an adult, he’s managed to hold dear to his faith and determination.
He’s reached some of the highest heights – going from rocks and sticks to achieving a career batting average of 298 - stopped only by his physical limitations.
Today, Rickey plays golf at PGA levels, partnering with famous names like Tony Romo and other celebrities.
Close friend Ron Gourley, Co-Founder, President and CEO of TrendTek Bio, Inc. - a nutraceutical supplements company that has helped relieve some of Rickey’s pain and restore mobility through anti-inflammatories and brain boosting products – has
encouraged Rickey to use his heart and energy to inspire underserved kids, just like he once was, to pursue their dreams.
Ron is a past board member of the local Kids Matter International, which helps children in need through programs that empower them and enhance their lives. He led Rickey to the organization, and on October 23, the sports legend will play in the Kids Matter Eagles Challenge charitable golf tournament at Lantana Golf Club in Lantana, Texas.
Eagles Challenge is a hole-in-one tournament valued at $50,000 on each hole, with a $1 million prize opportunity at Hole 19.
Every $100 that Kids Matter receives generates an estimated $225-250 in new clothes and shoes for children in need.

Apples are the trademark fruit of fall, and with the many varieties to choose from, there is an apple that is sure to please any palate. They can be included in both sweet and savory dishes and are delicious and incredibly healthful. We all have heard the saying, “An apple a day keeps the doctor away.” While they aren’t a cure-all, apples are packed full of polyphenols, antioxidants, vitamin C, B vitamins and fiber. Make the most of autumn’s best produce and the flavors of fall with this simple recipe.
APPLE GALETTE WITH CARAMEL DRIZZLE
Easier than pie but with all the same textures, this gooey warm dessert is sure to please. For simplicity, this can be made with a premade crust.
INGREDIENTS:
Crust:
• 1 1/2 cups flour
• 1/4 cup sugar
• 1/4 teaspoon salt
• 1 stick cold unsalted butter, cubed
• 1/4 cup iced cold water
Filling:
• 2 apples, peeled and sliced into thin slices
• 1/4 cup packed dark brown sugar
• 1 1/2 tablespoons flour
• 1 1/2 teaspoons lemon juice
• 1 teaspoon cinnamon
• 1/4 teaspoon ground nutmeg
• Caramel sauce
• Optional: 1/4 chopped walnuts or pecans
INSTRUCTIONS:
Crust:
(Note: If running short on time, store bought crust works great, too.)
Mix flour, salt and sugar together in a bowl. Cut in the butter. Add water and mix until moistened. Lightly knead the dough and then form into a ball. Next, flatten dough into a thick circular form and refrigerate for one hour.
Filling: Mix the apples, flour, lemon juice, cinnamon, nutmeg and brown sugar together in a bowl.
Assemble and Bake: Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Roll the dough into a circle and set on parchment paper. Arrange apples in center of dough, leaving about one inch of space for the edges. Fold crust over the apples and press to seal edges. Drizzle with caramel sauce and sprinkle with pecans or walnuts. Bake for 35 minutes. Serve with caramel sauce and ice-cream.
