For this issue, we had the pleasure of sitting down with various chefs and owners and also with Chef Pamela Bedford of the Eastside Institute of Culinary Arts - to learn about their stories and some of their new offerings. We’re sharing Halloween sweet treats, and our guide to some of our favorite Food & Drink spots including a couple of road-tripworthy ones you won’t want to miss! Chef Pamela Bedford is the Director of the Academy of Culinary Arts at Eastside High School and has earned national honors for her work preparing students for success in the food and hospitality industry. Bedford was named the 2021 Educator of the Year by the American Culinary Foundation (ACF). She was the only female and the only high school educator among the four finalists for the award. “It means the world to me to be recognized as the top chef educator in the nation,” Bedford said.
The Educator of the Year Award pays tribute to an active culinary educator whose knowledge, skills and expertise have enhanced the image of the professional chef and who, by example, has given leadership, guidance and direction to students seeking a career in the culinary profession. In her 17 years with the program at EHS, including 6 years as director, Bedford has helped hundreds of students win awards, find jobs, and earn career certification.
Last year Chef Bedford’s program spent over $12,000 to take the students to competitions at State and National Levels. "The students spend days practicing and the equipment they practice with has an expiration date."

its own money for competitions and training. That includes funding for the purchase of the food to practice what they learn in class. "That is a big misconception in the community, that we have funding for food and competitions. The students and I try to fundraise as much as we can. We cater for events and in our dining area we have holiday parties and business luncheons.” One of their biggest supporters of the program is the Rotary Foundation. There are also many local businesses that partner with and support the program and students.
“My students compete a lot, I train them to do it,” Bedford said. “I encourage them, coach them, and hype them up." For the students and Chef Bedford, the competitions are an integral part of their education and experience in the program. Competition season is a great way to win awards but also a great way to earn those much-needed scholarship dollars for college! Most recently sweeping first place at regional, and state culinary competitions and placing 5th overall in the nation.
Being in the program offers the students the opportunity for an industry certification. The American Culinary Federation ACF Certification Program is the most comprehensive certification program for culinarians. Culinarians achieve certification based on education, experience, and successful completion of written and practical exams.
Students are also eligible for the Florida Gold Seal CAPE Scholarship. Students must meet the general requirements for a Florida Bright Futures Scholarship Program award, earn a minimum of five postsecondary credit hours through CAPE Industry Certifications and complete at least 30 hours of service work approved by the district school board.
WHAT DOES THE FLORIDA GOLD SEAL CAPE SCHOLARSHIP PROVIDE TO THE STUDENTS?
The scholarship pays up to $48 per credit hour of a career education or certificate program (AS degree or Technical Certificate) tuition. The award requires the student to have completed CAPE industry certifications and service hours to qualify.
The Eastside program is ranked in the Elite 50 of high schools excelling in the culinary arts, baking, pastry arts, and hospitality management.

Halloween brings back such sweet memories of time with my mom handing out candy and trick or treating at just 5 special houses. One of those homes belonged to Christine Shewey. Her mother-in-law was my Godmother who lived across the street from my grandmother. I called her “Shoo-Shoo”. “Shoo-Shoo always played board games with me and never turned away a visit from me. She was one of my very favorite people in the whole world."

Every Halloween my mom and I would hand out candy from our house. As soon as we finished, we would head out to the 5 houses of close family friends who my mom trusted in our rural town of Bronson. Ms. Christine always knew that we would be later than everyone else because we took time to hand out candy and couldn’t come to her house until we were finished. So, every year she saved a popcorn ball just for me.
Maybe she did this for the other trick or treaters too, but she always made me feel like it was just for me. This caramel corn that I made is not her secret recipe and it’s a loose caramel corn with a slight crunch. Hers was every bit ooey-gooey, sweet, and delicious tied up with a little bow and truly unforgettable.

Friends of the Library (FOL) offers the community a treasure trove of approximately 500,000 donated books and media, most items costing between 25 cents and $5. Shoppers can select from books in print and on tape and DVDs, art, vinyl records, comics and manga, puzzle and games, over 60 categories in paperback and hardback books, fiction, mystery, science fiction, romance, history, classics, biography and non-fiction, children and young adult, large print, sports, numerous science categories, cooking, law, religion, and more. The Collector’s Corner is open from Saturday through Tuesday and features signed works, special and first editions, and rarer items for somewhat larger amounts. On Tuesday, Oct. 24, each item is half priced, and on Wednesday, Oct. 25, each remaining item is just 10 cents. Occupancy limits have generated outside lines during peak attendance periods, especially Saturday mornings. Shoppers should plan accordingly.

The Black Prong Bar & Grill, located in Bronson, Florida, features a full bar, delicious dishes, and a cozy lounge area for food and beverage enthusiasts to gather.
This relatively new dining establishment is locally known for its most popular dish, the Redfish Pontchartrain Amandine, inspired by Louisiana Creole flair. Everything at Black Prong is curated in-house, including their popular bread board and selection of tempting desserts.
In the nine months since the Black Prong Bar & Grill opened its doors, the enthusiastic team has grown and meshed together nicely. “With such a young staff, it is exciting to see the quality of the dishes we are preparing and the comparisons we are drawing to other kitchens,” said Executive Chef Ray Einhorn. “I could not ask for much more, but there will always be room for us to continue to evolve.”
One unique aspect of their offering is the off-menu dining experience where Chef Einhorn carefully crafts a
four-course meal each Monday. With no two Mondays being the same, this dining option allows him to let his culinary expertise and creative juices collide, resulting in mouthwatering flavor profiles you won’t forget. When asked about his Monday special, Chef Einhorn replied, “The Monday tasting menu allows me to bring something different to the table. It is not something that other restaurants offer, and cooking the same menu every night can be repetitive, so this gives me a chance to explore my creative side.”

A living master draftsman and installation artist, Bedia left Cuba in the early 1990s for Mexico and later relocated to Miami. His work is a singular synthesis of the artistic traditions of Africa and the indigenous Americas.
