


Welcome fall! With the changing seasons comes a change in what we are craving, and with fall that often means comfort food. October is our most delectable issue of the year, filled with some of our favorite dishes and beverages around town. We included a few new recipes for you to try at home, whether you’re cooking for just your family or for entertaining guests. The smells of fall bring memories to my mind of sitting in my mom’s kitchen, and the aroma of cinnamon, apple, pumpkin, chili and soups of any kind brings me right back to her table.
There is definitely an art to creating a flavorful dish that not only satisfies our taste buds but evokes memories. The aroma of certain spices and foods can bring us right back to our childhood, which can be incredibly powerful and comforting. Food brings us all together, and whether we are sharing a meal with loved ones or enjoying a night out on the town, the time spent while enjoying food is invaluable.

ALLANNA HARRISON AND MIKE WELCH ARE BRINGING FUN AND LUXURY TOGETHER WITH THEIR MOBILE BAR
Allanna Harrison and Mike Welch, owners of Rolling Shindiggs, bring both fun and luxury together when it comes to bartending. Both Allanna and Mike love to socialize and started Rolling Shindiggs, an upscale mobile bar, so they could work together and entertain others. They serve at events such as weddings, house parties, and corporate gatherings.
Allanna initially worked in the healthcare industry. “I was a speech therapist, but I decided that I wanted to get out of healthcare. So, we started looking for ideas on something we could start together,” she shares. “We both had our experiences with corporate jobs and working eight to five and we were just looking to do things that we loved,” says Allanna. Originally, Mike and Allanna
discussed opening a bar in downtown Augusta until their niece mentioned a mobile bar. They began to research mobile bars in the CSRA and wanting to bring something new and unique to the area, they decided to use a horse trailer to create their mobile bar.
After purchasing the trailer, Mike spent some time renovating and designing it. “It definitely has a different look about it. We were trying to go with a little bit of old west, farm style, and rustic,” says Allanna. “We wanted to make it more luxurious. We made the windows around it have a stained glass look, we put up the wood paneling towards the back and stained all of that, and we have a couple backdrops too for a photo spot. What’s different about ours is on the inside we actually have running water and a big cooler where we can store wine and beer,” says Allanna. Also included is the Hydration Station where they provide chilled water for guests.
Rolling Shindiggs has a custom cocktail menu that can be tailored specifically for your event along with beer, wine, and mixed drinks. Custom cocktails can be crafted based on drinks and flavors that have sentimental value to the renter. Allanna and Mike are constantly creating new cocktails, but their most popular Signature Drinks are Allanna’s Southern Sunset, Mike’s Pickleback with tajin, and the Shindiggs’ Sangria. Everything from the mixers, garnishes, and decorative napkins are provided and other add-ons are available.
One day, Mike and Allanna hope to expand to offering the mobile bar and music entertainment as a package. “Mike is a singer and also plays the guitar. We wanted to do something like this to give us some time to work on our music,” says Allanna.

In 2003, Terri Jenks served her first year as a volunteer with the Piedmont Augusta Foundation’s Miracle Mile Walk counting donations and securing deposits. Twenty years later, Terri continues to be involved and her role has grown significantly. Now, Terri recruits and organizes hundreds of volunteers, which includes much of her family, who come together to make the event successful each year. What keeps Terri coming back to serve year after year? “Just seeing the people out there keeps me involved because
almost everybody is walking for somebody - either a survivor or somebody who lost their battle,” shares Terri. “I do this because every one of us is going to be touched in some way by breast cancer. It might not be you, but it may be your mother, your sister, your friend, or your spouse. It’s going to touch everybody eventually because breast cancer is so rampant and what I really love is that we can do something to slow it down.”
Funds from the Miracle Mile Walk go directly to help people here in the CSRA. “The purpose of the Walk is to fund lifesaving mammograms for people who don't have a way to pay for it, don't have insurance, or don't have enough insurance,” says Terri. “These are funded through Piedmont Augusta's Randy W. Cooper, M.D., Center for Breast Health Services and the Mobile Mammography Unit, which goes out to different businesses and rural communities where they can provide a mammogram right there on the mobile.”
“There might be somebody who works at a plant on an assembly line who doesn't have time to take off to go to the hospital and have a mammogram or maybe they're afraid to go somewhere,” she adds. “So the mobile unit addresses those barriers and makes it easy and available to them.” Since its inception, the mobile unit has performed 80,000 screening mammograms and has traveled over 300,000 miles, with over 360 diagnoses of cancers. In addition to educating the community about early detection and the importance of getting an annual mammogram, resources are available to help survivors during and after treatment.
This year’s walk will be held on Saturday, October 21st. The pre-walk program begins at 8:00am at the Augusta Common, located at 836 Reynolds Street. The three-mile fun walk will kick off at 9:00am and will conclude with a post-walk celebration and raffle drawings at the August Common.
Terri welcomes and still needs volunteersindividuals and groups such as churches, office staffs, and civic organizations - to help the day of the event, especially with set up. She also encourages individuals and groups to participate in the fun walk and continue to raise breast cancer awareness.

Now that it’s finally October, it’s time for pumpkins! Picking pumpkins can be so much fun and there are so many things you can use them for! You can set them out as decorations, carve them, there are endless ways to use them while cooking, and you can roast the seeds. Pumpkins arrive October 11th

Apples are the trademark fruit of fall, and with the many varieties to choose from, there is an apple that is sure to please any palate. They can be included in both sweet and savory dishes and are delicious and incredibly healthful. We all have heard the saying, “An apple a day keeps the doctor away.” While they aren’t a cureall, apples are packed full of polyphenols, antioxidants, vitamin C, B vitamins and fiber. Make the most of autumn’s best produce and the flavors of fall with these simple recipes.
Easier than pie but with all the same textures, this gooey warm dessert is sure to please. For simplicity, this can be made with a premade crust.
Crust:
• 1 1/2 cups flour
• 1/4 cup sugar
• 1/4 teaspoon salt
• 1 stick cold unsalted butter, cubed
• 1/4 cup iced cold water
Filling:
• 2 apples, peeled and sliced into thin slices
• 1/4 cup packed dark brown sugar
• 1 1/2 tablespoons flour
• 1 1/2 teaspoons lemon juice
• 1 teaspoon cinnamon
• 1/4 teaspoon ground nutmeg
• Caramel sauce
• Optional: 1/4 chopped walnuts or pecans
Crust:
(Note: If running short on time, store bought crust works great, too.)
Mix flour, salt and sugar together in a bowl. Cut in the butter. Add water and mix until moistened. Lightly knead the dough and then form into a ball. Next, flatten dough into a thick circular form and refrigerate for one hour.
Filling:
Mix the apples, flour, lemon juice, cinnamon, nutmeg and brown sugar together in a bowl.
Assemble and Bake:
Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Roll the dough into a circle and set on parchment paper. Arrange apples in center of dough, leaving about one inch of space for the edges. Fold crust over the apples and press to seal edges. Drizzle with caramel sauce and sprinkle with pecans or walnuts. Bake for 35 minutes. Serve with caramel sauce and ice-cream.
This take on the classic grilled cheese is sure to satisfy your fall cravings. With the combined flavors of savory and sweet, it packs a punch for your taste buds.
• 1/4 red onion, sliced
• 2 tablespoons brown sugar
• 1 tablespoon olive oil
• Sliced sourdough bread
• 1-2 tablespoons butter
• 4 ounces Brie, sliced
• Fig jam, or preferred choice of jam
• 1 Granny smith apple, sliced
• Arugula
• Thinly sliced ham, optional
Heat olive oil in the skillet and add sliced onions. Cook for a few minutes and then add brown sugar. Sauté until soft. Set aside. Butter the outside of the sourdough bread. Next, spread jam on the inside of both slices. Add cheese, apples, onions and arugula. If using meat, add as well. Top with slice of bread and grill on skillet until both sides are toasted and cheese is melted. Serve and enjoy!
This Indian-inspired dish is the perfect fall topping for pork chops and also pairs nicely with ham. This is so easy to make and will fill your kitchen with the aroma of fall.
INGREDIENTS:
• 4 tablespoons butter
• 2 cups Granny Smith apple, chopped
• ¼ cup pecans or walnuts
• 1/3 cup apple juice
• 3 tablespoons brown sugar
• 3 tablespoons dried cranberries
• 1 teaspoon lemon juice
• ¾ teaspoon cinnamon
• ½ teaspoon nutmeg
INSTRUCTIONS:
Heat butter in saucepan, then add remaining ingredients. Cook over medium heat until the sauce has cooked down and the apples are tender. Serve over pork chops. Enjoy!
