Happy October! Even though pumpkin spice season kicked off early this year, fall is now officially here. Halloween is right around the corner, and the leaves are falling. October also means it's time for one of my favorite issues of the year— The Food Issue!
Food and restaurants play a vital role in bringing communities together by creating spaces where people can connect, share, and celebrate. At their core, restaurants are communal hubs that offer more than just meals—they offer experiences. Whether it's a family dinner, a business meeting, or a casual gathering with friends, restaurants provide a setting where people can engage in conversation, exchange ideas, and build relationships.
Food itself is a universal language that transcends cultural and social barriers. It brings people together around a common table, fostering a sense of belonging and unity. Community events, such as food festivals, restaurant weeks, and farmers' markets, further strengthen these bonds by encouraging local residents to explore diverse cuisines and support small businesses. These events often become traditions that enhance a community's identity and pride.
Moreover, restaurants often reflect the culture and values of the community they serve, showcasing local ingredients and culinary traditions. This not only supports local farmers and producers but also reinforces the community’s unique character. In times of celebration or crisis, food often becomes a means of expressing solidarity and support. Whether it's through fundraising dinners, community kitchens, or simply gathering to share a meal, food and restaurants foster a sense of togetherness that is essential for a thriving community.

Recently, I had the opportunity to chat with Brent Glashan, the general manager of the new Omni Viking Lakes Hotel in Eagan. The hotel is located in the new Viking Lakes complex, within walking distance of the iconic Vikings training center, which can’t be missed when traveling on 494.
Ember & Ice combines the energetic vibe of a sports bar with the sophistication of a lounge.
Our chat largely focused on Ember & Ice, which offers an unrivaled dining experience that takes guests beyond the traditional sports bar. Opened in 2020 amid the pandemic, this upscale lounge has survived and thrived, becoming a beloved hotspot for locals and visitors.
Brent, and Ayman, the food and beverage director, have been instrumental in crafting a unique environment where delicious and elevated food and a beautiful high-end atmosphere simply coexist.
Walking into Ember & Ice, you're immediately struck by its upscale feel. The space combines a sports bar's energetic vibe with a lounge's sophistication. Open for breakfast, lunch, and dinner, each visit will create a unique but consistent and elevated experience that will want you to return again and again.
Plush couches and deep seating invite you to settle in and relax, whether catching a game or enjoying a night out. The menu, curated with a creative touch by Ayman, perfectly reflects this duality. Brent shares, “You can indulge in classic bar fare like wings and burgers or more refined dishes such as fire-roasted salmon and short ribs.”
One of Ember & Ice's best features is its commitment to offering an elevated dining experience. Even the bar food here is something special. Take, for instance, the Skol Tower, a shareable delight that includes Minnesota-based charcuterie, walleye fritters, and a lobster roll. This focus on shareable plates prioritizes a dining experience that is about more than the food—it creates an experience that encourages sharing, great conversation, and lots of happy laughter.
For those with a sweet tooth, the dessert menu will not disappoint. You can savor everything from classic ice cream to the sophisticated crepe suzette. Brent says, “There's something for everyone, no matter your preference.”
And if you're looking for healthier or vegetarian options, Ember & Ice has thought of that, too. Dishes like the cauliflower shawarma, which can be cooked with chicken or lamb, and the spicy kung pao noodle bowl offer delicious alternatives that don’t compromise flavor. I snuck a quick peak at the menu myself—can it get any better than Wisconsin cheeses and exotic fruits? Yes, please!
The ambiance doesn’t stop there. Ember & Ice offers a lavish, wonderful patio area with fire pits and soft seating. It's the perfect spot for a casual evening with friends or a romantic date night. Brent's favorite way to enjoy the patio? A cold beer and peel-and-eat shrimp, though he admits the short ribs are a must-try.
Brent and his team have also recently rolled out a new menu, continuing to innovate and delight their patrons. With options catering to various dietary preferences and moods, Ember & Ice makes every visit feel fresh and exciting.
It's no wonder that it's also a fantastic date spot. Imagine sitting around the outdoor fire pit, sipping cocktails before heading downstairs to Kyndred Hearth for a more formal dining experience. I plan to do this in the future!
The connection to the Minnesota Vikings adds an extra layer of allure to Ember & Ice. The Omni Hotel at Viking Lakes is majority-owned by the Wilf family, who also own the Vikings. DISCOVER THE ALLURE OF THE MUDD ROOM: COZY, UPSCALE DINING WITH A MYSTERIOUS, EVER-EVOLVING MENU

Late this past summer, I had the opportunity to chat with Chef and Owner Tyge Nelson. With a career spanning 25 years and a portfolio of some pretty noteworthy Twin Cities establishments, Tyge brings experience and creativity to his dishes. His journey began as an intern at La Belle Vie in Stillwater, where he honed his skills before moving on to prominent roles at Solera, Barrio, The Inn, and Chino Latino. Rumor has it that you can taste these experiences in every bite at The Mudd Room.
I asked him what his favorite dish is to whip up in the kitchen, and his answer might surprise you. Instead of being prepared with something right
favorite? Laab, a Thai-style beef salad with fish sauce, lime juice, and chiles—a perfect dish for hot weather. With a ten-year-old son, Tyge shared that home meals often feature family favorites like chicken and steak.
The Mudd Room is one of the newest additions to Eclectic Culinary Concepts and the several local dining establishments we told you about last year. This concept began as a creative vision of Tyge and his partners, Charlie Burrows and Stephan Hesse. They initially partnered to open Pajarito at the end of 2016 in St. Paul and, later, the second location in July 2020. Then, after successfully adding Lucky’s in Mendota Heights, they sought to create a more exclusive, intimate setting downstairs. The result is a cozy and upscale speakeasy, a place where guests can enjoy craft cocktails and live music in a relaxed, homier environment.
As we discussed the current and upcoming menus, Tyge’s excitement was palpable. The existing menu, available until the end of October, features a delightful mix of hearty, approachable dishes. One standout is the katsu cod slider, a Japanese-inspired creation with slaw and pickled cucumbers. Another favorite of Tyge’s is the escargot with chorizo butter, which perfectly marries rich flavors and textures.
I have to admit that my tastebuds were salivating as I reviewed the menu for myself. Ceviche shrimp cocktail and sweet corn fritters topped my list of appetizers. And for the main dish? I’m thinking of the beef boccadillo, or definitely the katsu cod that Tyge suggested earlier.
And for a cocktail? The choices are endless as far as I am concerned. But my top picks are sure to be the Lavender Haze, the Raspberry 75, or The Sheik.
Yet, the true allure lies in the mystery of what’s to come. Tyge and his partners are diligently working on new menus for all his concepts, including The Mudd Room. He promises seasonal dishes that embrace the colder weather, crafted to be both simple and enticing. While he kept specifics under wraps, one thing is certain: the new menu will be worth the wait.
The Mudd Room isn’t just about food; it’s an experience. The ambiance, the live music, and the expertly crafted cocktails create a perfect evening out. As Tyge puts it, "The idea was a Prohibition-style bar, a speakeasy, but one that people know about." This unique blend of secrecy and familiarity makes The Mudd Room a must-visit destination.
There's a sense of anticipation with a new menu set to debut at the end of October or early November. What culinary delights will Tyge unveil next? Opening a new restaurant is not for the faint of heart. It’s often fraught with challenges, triumphs, and unforgettable experiences. Recently, I had the pleasure of chatting with Brad Nordeen, one of the dynamic duo behind LoLo American Kitchen, Lolito Cantina, and Stillwater Proper, to discuss his adventure launching Stillwater’s beloved establishment and the incredible journey that followed.
“WE WANTED A PLACE WHERE PEOPLE COULD HAVE A GREAT TIME AND ENJOY FINE DINING QUALITY WITHOUT PRETENTIOUSNESS.”
Both seasoned restaurateurs, Brad and his business partner, Joe Ehlenz, first crossed paths while working at Phil’s Tara Hideaway in their twenties. In 2013, they stumbled upon a modest 1500-square-foot space and immediately envisioned transforming it into an upscale yet value-based dining experience. With the help of a skilled architect, they made the seemingly impossible possible.
Financing, however, was a challenging feat. A few years past the financial crash, banks were reluctant to support their venture. Brad recalls, “We went to multiple banks, and they wouldn’t even talk to us.” But perseverance paid off. Thanks to a chance connection through Brad’s mother, a small bank was willing to work with them but did require collateral. In a heartwarming display of support, Brad’s parents offered their cabin property, and his 90-year-old grandfather put up his home. “Our family believed in us and what we could bring to the community,” Brad shared.
The final piece of the financial puzzle fell into place through a mutual acquaintance willing to provide the remaining funds. This chance phone call turned into a cornerstone of their success.
Drawing inspiration from Brad’s time at 112 Eatery in Minneapolis, another small yet iconic restaurant well-known to locals, Brad and Joe crafted a space that promised an exceptional dining experience despite its size.
Their first venture, the Stillwater location, came together “almost magically,” Brad shared. And within just the first year, they received an unexpected opportunity to bid for a spot at the airport. “By luck, we were able to present our plan, and a week later, we were approved to open a spot at the end of Concourse E,” Brad recalled with a smile.
The success continued with the opening of their Hudson location in 2017 and the expansion of their Stillwater location with a lounge, prep kitchen, and office space.

When you’re dining at LoLo American Kitchen, Brad has some must-try favorites. Start with the Hanger Steak Tacos, a savory delight, or the Spicy Ahi Poke for a burst of flavor. The Chicken Kung Pao Rice Bowl is another crowd-pleaser.
If you’re visiting Lolito Cantina, don’t miss the ‘off the cob’ elote, duck confit enchiladas, or smoked brisket taco with chipotle, tomatillo, black beans, and sweet corn—it’s mouthwatering with the perfect spice blend!
At Stillwater Proper, Brad recommends the barbecue carrots, togarashi bluefin tuna, and the pastrami sandwich—their unique take on the famous Langer’s #19 from Los Angeles, complete with coleslaw, Swiss cheese, rye bread, and exceptional brisket pastrami.
I asked Brad how he and Joe decided on the atmosphere and menu they wanted to create. Thinking back on the landscape in Stillwater a decade ago, Brad noted, “There wasn’t really anywhere that brought great food and drinks together with a fun and exciting dining experience. We wanted a place where people could have a great time and enjoy fine dining quality without pretentiousness.” Brad emphasized, “We wanted a place that offered value and was welcoming to all comers."
At LoLo American Kitchen, the focus is on creating memorable experiences. “Our foundation is great food and drinks, but it’s the overall experience beyond those that leave a lasting impression. Patrons remember the atmosphere and how they felt,” Brad said.
Also, great talent is key. “We find the right people to work with us who are invested and bring the right attitudes. Integrity and how they treat others are non-negotiable.” Brad explained that while teaching the technical skills of cooking and bartending can be done, cultivating the experiential aspects is where the magic happens.
Brad and Joe's passion didn’t stop at LoLo American Kitchen. In 2019, they opened Lolito Cantina, a Latin American restaurant specializing in regional Southern Mexican cuisine with handmade tortillas, smoked meats, seafood, mezcal, and tequila. In 2021, they launched Stillwater Proper, an upscale bar and grill experience with classic Americana vibes where the smash burgers use beef ground in-house daily, and the cocktails are prepared with all the care and dedication of the most dedicated chef. As the end of our conversation neared, I asked Brad about his favorite part of the job, and his answer was heartfelt: “The daily interactions. Seeing people happy with their dining experience and employees taking pride in their work makes for a great day.” Brad and Joe’s dedication to their craft and community has created a place where joy and great food go hand in hand.

This hearty chicken noodle soup is the perfect comfort food that is packed with nutritious goodness. This pairs perfectly with homemade beer bread or a sourdough loaf.
INGREDIENTS:
• 8 cups chicken broth (add more if desired)
• Whole fryer chicken, cut in chunks or shredded
• 5 celery stalks, sliced
• 8 carrots, sliced
• ½ onion diced
• 4 tablespoons butter
• 1 teaspoon Italian seasoning
• ¼ cup half and half (optional)
• 1 package egg noodles
• Salt and pepper to taste
DIRECTIONS:
In a large stock pot, add 8 cups of chicken broth. Dice carrots, celery and onion and add to the broth. Bring to a boil, and reduce to medium heat until the vegetables are soft. In the meantime, skin and cube 1 whole fryer chicken and add to the stock pot. Next, add egg noodles (frozen Reames homemade egg noodles are my favorite) and let boil until noodles are cooked. Add butter, half and half, salt, pepper, and Italian seasoning. Simmer on low until ready to serve.
