With the arrival of autumn, the air turns crisp and our palates lean toward flavors that comfort and inspire. October is one of our most indulgent issues of the year, highlighting the food and beverages that make our community a true destination for taste and flavor.
We had the pleasure of sitting down with Chef Matt at Gourmet Café to dive into the story behind a local favorite known for its seasonal ingredients and dishes crafted to perfection. We also caught up with Dina Deleasa-Gonsar, who shared more about her cookbook At the Kitchen Sink: Recipes to Fill Your Table, Words to Fill Your Heart and the inspiration behind her comforting recipes. For Suhair Najjar, being ‘on board’ is more than a phrase—it’s her way of life.
As owner of The Fig & Zaytoun, a luxury grazing and charcuterie company, she transforms food into art, treating every board as a blank canvas for culinary creativity. And her path has evolved as seamlessly as the flavors she now so carefully pairs and plates.
With her workload lightened during the pandemic, Najjar—a speech pathologist and mom of three—found herself with untapped energy and a restless drive to create.
“I was antsy and always loved to cook,” she revealed. “Although I chose the safe route and went to college, that love for food and cooking never faded.”
At first, she began preparing charcuterie boards for family and friends, who were bowled over by the aesthetics as well as the taste. But when a friend asked her to cater her daughter’s Cinderella-themed Sweet 16, draped in blue and white, she elevated her craft to enchanting new heights.
At that moment, Najjar realized she wasn’t just arranging food—she was curating experiences. Her boards don’t sit quietly on the sidelines; they become part of the aesthetic, commanding attention as the centerpiece of any gathering. Each display is designed to spark conversation and set the tone, elevating events beyond a simple spread into something memorable. It’s this ability to blend beauty with taste that continues to set The Fig & Zaytoun apart.
“I said let me try it for my friend and if it comes out beautiful I’ll launch my business that night,” she recalled.
The timing was perfect, and through word-of-mouth and social media, her business soared. But for this thriving entrepreneur, the true reward is found in the creative process—a journey as fulfilling as the final creation.
“It’s funny because your parents always tell you to not play with your food and here I am doing just that,” she said. “But it’s what I’m passionate about. For me, it’s a creative outlet.”
That creativity rarely switches off. In fact, ideas often strike in those restless moments before sleep.
“’I need to melt this brie with these jams,’” she joked. “My brain is always going.”
Leading up to her venture, she put in considerable field work to test-drive her combinations. This involved immersing herself in the New York cheese scene, such as Murray’s in Greenwich Village, but she credits her first true love of fromage to a trip to France for a wedding anniversary.
“We went from Paris to the South of France and had so much cheese there–all these combinations that I [had] never tried here,” she said. “I came home with a different taste in my mouth.”
Like mother, like daughters—her nine- and seven-year-old have developed advanced palates and often name-drop cheeses in their requests of Manchego or Gouda. The jury is still out on their eightmonth-old sibling.
An all-around people-person deeply entrenched in her culture, Najjar draws from her Palestinian roots and plays on the cultural and religious significances of figs and olives.
“Zaytoun is Arabic for olives, plus it’s easy to pronounce,” she added.
Always the purveyor of freshness, Najjar laughs at the scramble to find fresh figs in New Jersey…but it’s all worth it.
Her philosophy is to be ready to take her boards—and her business—wherever the journey leads. She sets up shop in private homes, event venues, and even has provided catering for a Congressional delegation. No board or occasion is ever left unturned: corporate parties, grand openings, bridal expos, anniversaries, and more.
For now, prioritizing work-family balance, she limits her services to weekends with all hands on deck and support from her loved ones.
“My husband and brother will help load and unload,” she explained. “And I’m blessed to have amazing friends.”

As a role model for her daughters, she is happy to assign them small tasks as well. “They think Mommy’s a boss and maybe they can think about owning their own business.”
With family at the core—Najjar, one of eight siblings, comes from a lineage where entrepreneurship runs deep. Beyond pouring her heart into her art, she channels her talents into meaningful causes. Recently, she hosted workshops for underprivileged students at Passaic County Community College, celebrating their accomplishments at the close of summer classes.
“We like to keep things full circle, where food and culture go hand in hand, and bring that experience to a wider audience.”
What’s next for this mompreneur and speech pathologist? With the bar set high, she’s carved out her niche—and perhaps even her calling—in the luxury events space.
And the journey doesn’t stop there—today, she’s focused on networking and pushing her creative boundaries.
“I love connecting with other people and making new connections. I’ve learned so much along the way,” she revealed. “I hope people who meet me walk away knowing that it may just be food for some people, but for me, it’s truly an art form.”

The aroma of simmering sauces and freshly baked bread lingers in the air at the Gourmet Café, where every dish tells a story. For Chef Matt Pierone, that story began decades ago at a sink full of dishes and has since evolved into one of New Jersey’s most beloved Italian kitchens.
What began as an unexpected moment in the kitchen has since evolved into a legacy of flavor. As the longtime owner and head chef of Gourmet Café Italian Restaurant in Parsippany, Pierone channels his North Jersey Italian roots into dishes that are as authentic as they are satisfying.
That authenticity defines Gourmet Café, an intimate BYO restaurant serving classic Italian comfort food daily. Signature dishes such as Saltimbocca, Rigatoni Bolognese, Scallops with Crabmeat, and Meatballs Au Poivre showcase timeless flavors with subtle nods to international flair. Despite its café-inspired name, the ‘gourmet’ aspect shines through—Pierone crafts his own limoncello in-house and proudly champions his signature shrimp and scallop piccata.
“I wish I had changed the name and I had to overcome that the first few years,” he revealed. Soon after adding Italian Restaurant to the name, he built a steady stream of regulars that shaped the hot spot’s identity.
So, how did this ambitious young dishwasher at the Cobblestone Inn in West Caldwell work his way from sudsing to saucing?
“The cook didn’t show up [one day], so I gave the chef a hand,” he explained. “I went from a dishwasher to a line cook overnight. The chef said that I was better than the other guy.”
He spent five years there, crediting his former mentor for fostering a lively atmosphere and igniting his culinary passion.
Pierone’s next stop on the Jersey culinary circuit was the former Huddle Inn in Fairfield, where Italian fare—and romance— were equally on the menu. There he met his wife of 36 years, Rosemary, joining four other couples who also found love within its walls.
He also befriended Mike DiOnnio, former Chopped Champion, who took him under his wing.
Pierone went on to attend the former New York Restaurant School in Manhattan, which exposed him to the New York City food scene. “It’s definitely different in New York,” he said. “There’s much more pressure, smaller kitchens, and it’s very intense.”
Still, he claims boasting rights for honing his chops at The Rainbow Room in the capacity of fish chef or “poissoner,” and he also put in time at Gracie Mansion as well as the High Lawn Pavilion in West Orange.
“I GO AROUND AND SAY HI AND THANK PEOPLE. YOU HAVE TO BUILD THOSE RELATIONSHIPS. IT’S VERY IMPORTANT.”
“I graduated [from restaurant school] on my 31st birthday at the top of my class and had choices as to where to go.”
The commute to Manhattan had taken its toll and he decided to return to New Jersey to fine tune his fare. He seasoned his resume with Eccola Italian Bistro in Parsippany, Grand Cafe in Morristown, and Rod’s in Madison to name a few.
Having reached the top of the chef’s payroll, he decided to go all in on his own, drawing from his Italian heritage and tipping his hat to his mother.
“My mom was an amazing Italian cook,” he said. “Everyone loves Italian food.”
After encouragement from his loved ones, he reached deep into his pockets and pounced on the opportunity that presented itself in the form of the Gourmet Café.
“My father was a huge influence on my business and in life,” he said. “He owned several businesses and always encouraged me to work for myself.”
His wife was also on board with the venture and stepped up to the plate as hostess in the early days.
As owner and head chef, Pierone pays just as much attention to the front-ofhouse as he does to the kitchen.
“I communicate with customers every shift,” he added. “I go around and say hi and thank people. You have to build those relationships. It’s very important.”
Pierone takes a traditional approach to reservations and takeout, relying on phone calls rather than online platforms.
In embracing technology, the restaurant maintains a strong presence on social media and he takes online reviews very seriously.
In addition to dishing out food and camaraderie, Pierone also lends a charitable hand to community organizations in need. Since 2008, Make-a-Difference Mondays has donated 10 percent of sales to designated nonprofits that have included Table of Hope, Toys for Tots, and the Parsippany Food Bank to name a few. To date, he has raised more than $100,000.
With long hours and seven-day workweeks, Pierone exemplifies the chef’s on-the-go lifestyle—but it’s a rhythm he thrives on.
As for the future? “I want to keep it going as long as I can,” he explained. “I’m hoping eventually that one of the staff members will take it over since my children don’t want to.”
The restauranteur is the proud father of three children aged, 24, 27, and 28, who have all worked for and with him in some capacity. His youngest daughter can still be found waiting tables twice a week.
Pierone has built more than a restaurant—he’s built a community and his legacy is already written on every plate. As Gourmet Café continues to thrive, his story proves that passion, persistence, and heart are the most essential ingredients of all.

For Dina Deleasa-Gonsar, every recipe is rooted in three pillars—food, family, and faith. They’re the foundation of her debut cookbook and the latest chapter in a career that’s taken her from reality TV to lifestyle media, and now, into publishing.
Viewers first met her on Married to Jonas alongside her sister Danielle, and today she’s a regular presence on Pix 11’s New York Living and even The Today Show. Now, she’s adding ‘author’ to that ever-expanding resume with her debut cookbook, At the Kitchen Sink: Recipes to Fill Your Table, Words to Fill Your Heart—a collection of recipes and devotionals blended to appeal to the human experience.
“What’s unique is that it’s a hybrid,” she explained. “It’s like two books in one.”
The book’s approachable tone speaks to everyday audiences as she draws from her own relatable shortcomings such as staring down a near-empty pantry or transforming breakfast leftovers into a quick, nutrient-packed protein smoothie.
“I thought, ‘How am I really surviving every single week?’ and then I chronicled everything I did.”
That balance shines through in chapters like “Pantry Picks” and “A Mom Minute,” the latter a personal reflection on her postpartum depression and evolving sense of identity.
“I feel like those writings are very impactful and encouraging to others,” she revealed.

Then there’s “Impress Without the Stress,” a recipe list of family favorites that emphasizes gathering without the fuss.
Deleasa-Gonsar wrote the book over the last two years, but the concept sat dormant on her computer for seven.
So how did this mom, wife, and media personality eventually add “cookbook author” to her resume? It was her television debut that unexpectedly set the stage for her culinary voice.
While appearing on Married to Jonas, Deleasa-Gonsar was encouraged to join social media—a move that gave her the perfect platform to share her kitchen musings, or as she calls them, her “obsessions.”
What began as a casual hobby soon grew into Instagram posts that laid the foundation for DishItGirl, her blog, which then snowballed into national TV spots. Today, she hosts the lifestyle show In the Mix on ONNJ. Her cookbook reflects that journey, offering readers
a more personal connection beyond the polished lens of social media.
“There’s this mentality online that you’re falling behind everyone and you’re not good enough,” she said. “I want to let people know that they’re doing a good job and that they’re worth more than they realize.”
Her food, family, and faith approach to life is rooted in inspiration from her parents and grandmother, cherishing the memories created around the table.
“I love that I have a piece of my family in print and out there forever.”
That sense of legacy carries into her cookbook, where simplicity takes center stage—right down to her belief that a kitchen garden is the ultimate game-changer.
Though gardening is trial and error, she finds the reward—and the mother-daughter bonding with eight-year-old Siena—well worth it.
“It’s something Siena and I can do together,” she added. “It’s also nice to cook what you grow.”
Siena, already a budding sous chef, helps with dinner, joins her mom at events, and even contributed artwork to the debut cookbook. Keeping it in the family, Deleasa-Gonsar’s husband, Brian, recently released his own book, The Dracula Brunch Club, which debuted in August.
For Deleasa-Gonsar, every chapter in life circles back to family. Whether it’s a cozy night at home or a new recipe in the works, she sees the kitchen as the heart of connection. And her story proves that the true measure of a recipe isn’t just taste—it’s the people and moments it brings together.
THE SEASON’S BEST SANDWICHES

There’s something deeply satisfying about a well-made sandwich—especially when it comes together with minimal effort but delivers big on flavor. As the season changes and appetites grow heartier, fall is the perfect time to get creative with ingredients tucked between slices of crusty bread or buttery rolls. Whether you’re looking to upgrade your lunch routine, enjoy comforting flavors and bold textures, or impress guests with a no-fuss meal, these easy-to-make sandwiches strike the perfect balance between simple and sensational.
INGREDIENTS
• 2 slices crusty bread (sourdough, ciabatta, French bread)
• 6 oz roast beef
• 2 slices provolone cheese
• 2 tbsp butter (for toasting)
• 2 ½ tbsp mayonnaise
• 1 tbsp horseradish sauce
• 1 tsp Dijon mustard
• Arugula
• Cherry tomato
• Caramelized onions
INSTRUCTIONS
Toast the bread. Butter one side of each slice and toast in a skillet until golden. Heat roast beef briefly in a pan. To make the spread, mix mayo, horseradish sauce, and Dijon. Spread on the toasted bread. Layer roast beef, cheese, and broil briefly to melt. Add arugula, tomato, and caramelized onions if using. Top with the second slice of bread.
INGREDIENTS
• 1 grilled chicken breast
• 2 slices pepper jack cheese
• 2 slices cooked bacon
• 1 tbsp fruit jam (fig, raspberry, or jalapeño recommended)
• A handful of fresh arugula
• 3–4 cherry tomatoes (halved)
• 1 tbsp garlic aioli
• 1 brioche bun (toasted)
INSTRUCTIONS
Lightly butter the inside of the bun and toast in a skillet or oven until golden brown. Spread a layer of garlic aioli on the bottom bun. Add the sliced grilled chicken breast. Place the pepper jack cheese over the hot chicken to slightly melt it. Layer on the crispy bacon slices. Add halved cherry tomatoes and a small handful of arugula. Spread the jam on the top bun. Enjoy!
INGREDIENTS
• 3 oz goat cheese
• Fresh arugula
• ¼ cup caramelized onions
• 1 pear, thinly sliced
• Honey, to taste
• Butter for toasting the bread
• Rotisserie chicken breast thinly sliced
• Sourdough bread, buttered (optional)
INSTRUCTIONS
Spread goat cheese on one side of the bread. Top the cheese with arugula, caramelized onions, sliced pears and chicken breast. Drizzle with honey. Top with remaining slice of sourdough bread. Use a griddle or panini press to heat the sandwich.
