FOR THOSE CRAVING A LITTLE GREEN IN THEIR LIVING SPACE, INDOOR PLANTS HELP NOT ONLY TO SPRUCE UP THE DÉCOR, BUT THE ATMOSPHERE AS WELL. Brian Whitfill, owner of Whitfill Nursery, says that plants help to create more oxygen and clean the air. “Indoor plants create more air filtration in the house,” Whitfill says. “It’s like bringing all of the benefits of the outdoors inside.” In fact, a study by NASA (yes—the NASA!) showed that houseplants can remove up to 87 percent of air toxins in 24 hours. Other studies show that indoor plants may also help to boost mood, improve concentration, and reduce stress levels. Whitfill says that the average lifespan of a houseplant is 90 days, but that home dwellers can extend that lifespan with proper care. He recommends following each plant’s care instructions exactly. As a general rule, most indoor plants require regular water checks and do well if their soil goes dry between waterings. He notes that most indoor plants come with their own special soil—some even benefit from tea bags or coffee grounds. When watering, water them thoroughly, he advises. “The water quality here in Chandler varies throughout the year,” Whitfill says. “In the winter and spring, it’s usually fine to use tap water, but consider switching to bottled water in the summer as pH balances in the water may change.” For those new to indoor plants, it’s recommended to do some research first before purchasing. Whitfill notes that many tropical plants do well indoors. INGREDIENTS + 4 lbs. veal shank + 1 cup whiskey + 1 lb. onions + 1/2 lb. celery + 4 tbsp. fresh garlic + 3 bay leaves + 2 tsp. dried thyme + 2 qt. beef broth + 2 tsp. black pepper + 1 tsp. Kosher salt + 1/4 cup roux + 1/2 cup fresh Italian parsley

INSTRUCTIONS Secure meat to bone with twine and season with salt and pepper. In a large Dutch oven pot, heat vegetable oil until smoking. Add tied veal shanks to the hot pan and brown all sides, about 3 minutes per side. Remove browned shanks and reserve. In the same pot, add the onion, celery and garlic. Season with salt. Sauté until soft and translucent, about 5 min. Return browned shanks to the pan, add the whiskey and sauté about 3 minutes. Add 2 cups of beef stock and remaining ingredients, except the roux and parsley. Reduce heat to low, cover pan and simmer for about 1 1/2 hours or until the meat is falling off the bone. Check every 15 minutes, turning shanks and adding more beef stock as necessary. The level of cooking liquid should always be about 3/4 the way up the shank. Carefully remove the cooked shanks from the pot and place on platter. Cut off the kitchen twine and discard. Add a cup of beef stock and a 1/3 of a cup of whiskey to the drippings, turn heat to medium and whisk, scraping the bottom of pan. Strain to remove the vegetables and return to pan. Add roux and stir until slightly thickened. Add salt and pepper to taste. Place shanks on plates and pour whiskey sauce over the top and garnish with chopped Italian parsley and serve. 24

Steve Kraus, owner and founder of Press Coffee, explains how this

unique partnership works.

“We at Press Coffee feel very lucky to have a partnership with the

Phoenix Zoo’s conservation arm. The farm in Costa Rica–Finca Las Alturas–exists in large part to help protect and create a habitat for native jaguars to live in,” he says. “At Press, our part of the partnership is a commitment to buy and roast the  coffee  growing on that farm. We worked with our  coffee  importer, Royal  Coffee, to bring it to Phoenix where we present it in the best way possible through the roasting process. Then, we donate $5 for every retail bag sold back to the conservation effort.” Sourced from the Fincas Las Alturas in Costa Rica with the help of the Arizona Center for Nature Conservation (ACNC), which operates the Phoenix Zoo, the 12-ounce bags of whole beans are available at all Press Coffee locations and on the website, with a portion of the proceeds supporting jaguar research led by the ACNC and ProCAT, an international nongovernmental organization focused on wildlife and habitat conservation.  “The CEO of the Phoenix Zoo, Bert Castro, happened to come to a coffee tasting event we were running. He loved the passion and science behind the  coffee,  and the event was a memorable one for him. When an opportunity to roast  coffee  from Costa Rica came about, he approached us,” Kraus says. “In situations like this, the quality of the coffee is an unknown, and often not at the same level that we source and roast at Press. In this instance, the quality was spectacular. It made the opportunity even more unique. We couldn’t be more excited to roast this coffee at Press Coffee for a great cause.” “We are so pleased to be partnering with Press Coffee on the Jaguar Friendly Coffee  project and sharing with people in the Valley the great work that the Arizona Center for Nature Conservation and its partners are doing in Costa Rica to conserve jaguars and their habitat,” adds Ruth Allard, EVP of conservation and education at the zoo. Kraus says that the flavor of the Jaguar Friendly coffee makes him think of a candy bar. “It is full of chocolate, nougat, and caramel notes with a big body and a medium acidity.” Press Coffee’s Chandler location is at 2577 W. Featuring grass-fed steak, avocado, heirloom tomatoes, butter lettuce and cloud bread, it’s a fan favorite. “The cloud bread can be used for any sandwich and only has two grams of carbs,” he says. Nelson adds that Cherish’s executive chef is Steven Fowler, formerly of EVO. Other popular favorites are the pink lady salad (rainbow chard, butter lettuce, pink lady apples, pink grapefruit, strawberries, spiced walnuts, zinfandel goat cheese, and pomegranate vinaigrette) and the vegan banh mi sandwich (roasted golden beets, shitake mushroom and tofu pâté, bean sprouts, pickled diakon radish and carrots, shaved jalapeño, cilantro, banh mi sauce, and a noble vegan hogie).
