Dear Bellevue Friends & Neighbors,
With the changing season comes a change in what we are craving, and with fall that often means comfort food. October is our most delectable issue of the year, filled with some of our favorite dishes and beverages around town. We had the pleasure of digging into the culinary personalities of the brand-new Café 100 as well as Bellevue’s quintessential Loveless Cafe. (We sure love those cafés here!) Get your tastebuds ready—you’re in for a treat. And Bellevue bars and restaurants are serving a great selection of classic cocktails this season like, our cover subject, the Wynot Saloon's Wynot Be Old Fashioned. We also included a few new recipes for you to try at home, whether you’re cooking for just your family or entertaining guests.
The smells of fall bring memories to my mind of growing up with spicey aromas spilling out of the kitchen—cinnamon, apple, pumpkin, chili and soups of all kinds bring me right back to another time and place. And then there’s the classic Better Than Ezra anthem “This Time of Year” from 1993 that captures the feeling of fall to a T: “Well there’s a feelin’ in the air … just like a Friday afternoon … Well there’s a football in the air … across the leaf-blown field.” Go check out that one! Lead singer Kevin Griffin resides in neighboring Franklin and is one of the founders of September’s annual Pilgrimage Festival.
There is definitely an art to creating a flavorful dish that not only satisfies our taste buds but evokes life-marking memories. Food brings us all together and, whether we are sharing a meal with loved ones or enjoying a night out on the town, the time spent while enjoying food proves invaluable.
Some parting thoughts for soaking up the best of Tennessee’s fall natural beauty—the colorful, unmatched changes in the leaves: Take a family trip out to Cheekwood, take a drive to Monteagle Mountain and hike Sewanee’s perimeter trail and, lastly, make a tailored road trip playlist and take a little drive down the Natchez Trace Parkway. Pizza, beer and family fun are the big draws at Tailgate Brewery

For the past nine years, pizza lovers and craft beer enthusiasts from the Bellevue area and beyond have congregated at Tailgate Brewery. Look up the hill at the brewery from 7300 Charlotte Pike and you'll notice the colorful murals and the packed parking lot. For its many fans, though, it’s what goes on inside the building that is truly magical.
“We make a big effort to be welcoming,” said Liz Tarry, Marketing Manager for Tailgate Brewery. “We want to create an atmosphere where your two-yearold child or your 90-year-old grandmother will feel equally welcome.”
The walls of the brewery are adorned with a rotating collection of bright, unique and sometimes even funny art pieces that appeal to customers of all ages. Seeing young families eating together with children happily running around and playing is a common sight. With half-priced pizza on Wednesday and halfpriced appetizers on Monday, it’s easy to see why Tailgate has attracted such a rabid fanbase with the families of Bellevue.
For the fall season, Tailgate has introduced a new menu, featuring fried green tomatoes, onion rings and house-made pork rinds. The crown jewel on the new menu is the permanent introduction of Detroit-style pizza to the lineup of pies. In order to accommodate this new addition, Tailgate sourced all-new specialty pans and altered the preparation process. Although it may take a little bit longer to bake, Detroit-style pizza fans insist it’s worth the wait.
Detroit-style pizza is cooked in a rectangular pan and features a thick and chewy crust with cheese baked around the edges. Tomato sauce is typically ladled over the pizza instead of under the cheese.
Any of their signature pizzas can be transformed into a Detroit-style masterpiece. Two of their specialty craft pizzas work particularly well with the Detroit-style: the Whipped Ricotta Pizza with sausage and honey-whipped ricotta, and the Hot Honey Pizza with pepperoni, sausage, jalapeños and a hot honey drizzle.
“Truly, I believe this is our best product,” says Tarry. “And we have gotten that feedback as well.”

In addition to the new menu additions, Tailgate rolls out a Pizza of the Month with some truly unique flavor combinations. Upcoming fall pizzas include the Oktoberfest Pizza and the Thanksgiving Feast Pizza topped with turkey breast, gravy, stuffing and mashed potatoes.
“Once you try it, you’re a convert,” says Tarry.
And beers? Yeah, they do that, too. In fact, every single year, Tailgate serves 300 unique beers to a growing number of thirsty regulars. The most popular brews include the creamy Peanut Butter Stout, the bestselling Orange Wheat and a number of rotating seasonal selections.
This fall, they’ll feature red ales, fest beers, traditional lagers, their Basic Pumpkin Ale, the beloved Pumpkin Spice Latte Coffee Milk Stout and the highly anticipated Tailgate Fest, their own take on a classic Oktoberfest brew. If you don’t happen to like beer, they’ve got you covered. Tailgate brews its own ciders and seltzers with upcoming fall flavors including Pumpkin Pie Cider and Apple Pie Cider.
A great place to revel in the fall weather is outside where you’ll find a large number of picnic tables and a huge TV screen for Thursday movie nights and to watch all the big games. You’ll also find “The Shack,” where you can get a draft beer or pizza by the slice. Dogs are welcome out back and you may even find some live music.
A family favorite every autumn at Tailgate is its October Movie Series. On the big screen outside, they’ll host viewing parties for Hocus Pocus, Halloweentown and other classic Halloween-themed movies.
Although its offerings may change with the seasons, some things at Tailgate never change. Wesley Keegan continues to be the sole owner and brewmaster. The brewery’s love of the Bellevue community has been unwavering from the beginning.
“We made a bet on Bellevue because we saw what it could be,” says Tarry. “It remains our busiest taproom.”
Currently, Tailgate has six locations in Tennessee with a special outpost at the Nashville International Airport. A seventh location is also set to open soon in South Nashville. As Tailgate looks toward the future, more expansion is always possible, but its heart will remain in Bellevue.
“This will always be the headquarters,” says Tarry. “Bellevue will always be home.”

THE LOVE OF “CHAOS”
As sales manager for The Loveless Cafe and its properties, Crystal Buttrey sits at the intersection of a locally owned icon that doubles as a must-see tourist destination.
“What I love most about my work is that no week or day is the same,” says Buttrey, a lifelong Bellevue resident. “It’s chaos, but in a great way.”
That’s because for nearly 20 years at The Loveless, including the last 10 as a full-time team member, she’s witnessed a renaissance of sorts that has elevated a quaint roadside respite into a dynamic player on the Middle Tennessee hospitality scene. And it has managed to do so without compromising its authentic small-town charm and aesthetic.
It was in 1951 when Lon and Annie Loveless began serving fried chicken and homemade biscuits to weary travelers along Highway 100. That led to the construction of a small motel and a loyal following that soon evolved into a Southern institution.

Today, The Loveless is a sprawling campus where guests can shop in several retail outlets before or after their meal. And the event venues host everything from civic luncheons and business meetings to weddings and celebrations of life.
Buttrey says that it takes a lot of behindthe-scenes thought, creativity and talent for the Loveless team to pull things together so seamlessly. “We’ve grown and we have to keep up with times,” she says, “But we stay true to the recipes, home cooking and the old-fashioned way.”
Buttrey has been a cheerleader for The Loveless since she began waiting tables there as a Hillwood High School student in 2004. “I’d go to work at The Loveless, then change into my cheerleading uniform and go cheer (for the Hilltoppers),” she says.
That was just as The Loveless was undergoing a remarkable transformation. Buttrey recalls those days vividly, especially the two nights of trial runs prior to the official reopening.
“There was a lot of energy; a little of everything: excitement, fear, hope and

encouragement,” she says. “I remember how relieved and happy management was after those two shifts. They were like, ‘Wow, this food is great, and we have a great team in place!’
“It was such a great environment for a high school student. (Management) understood student life and the need to be nurturing but flexible. They embraced and celebrated the high school journey. The Loveless wasn’t just a place to make some money; it became a second home.”
The experience made an indelible impression on the young high school
student. So much so that she continued to work weekend shifts not only while attending MTSU, but after graduating and landing a job as a producer and assignment manager at WSMV-TV in Nashville.
Eventually, she resigned from her media job in favor of a career at The Loveless because hospitality is innate to her.
“I love hosting,” she says. “For a couple of years before my two little ones, I would host almost 30 people in my house for Thanksgiving, with linens and my grandmother’s China. I love the chaos. Those who work in the hospitality industry have that in them.”

No matter the occasion, Buttrey and her Loveless teammates bring that spirit with them whether it’s welcoming a first-time visitor from a foreign country or hosting an event for up to 900 people in The Loveless Barn.
“I returned to The Loveless because I missed working on events,” she says. “We’re helping people celebrate and we’re also here when they experience the lowest of lows, such as the passing of a loved one. It’s humbling to know that people think of The Loveless Cafe for their most meaningful occasions.”
And about those biscuits ...
Biscuit makers are always busy at The Loveless Cafe. It’s not unusual for them to bake 10,000 in a single day, each made according to Annie's original recipe from 1951. The recipe was included as part of the original real estate transaction and all biscuit makers must sign a confidentiality agreement.
“If folks want that experience at home, we can ship the biscuit mix, or frozen biscuits, to them,” says Buttrey. “It might be a little bit of a mess to make but it’s really easy.”
The shipped biscuits are the closest thing to the real thing served at The Loveless Cafe. In addition, hundreds of recipes are available at no charge on the Loveless website, which also includes a link to the online store.

Enjoy an autumn afternoon shopping for locally-sourced food at The Bellevue Farmers Market
Farmers markets have been going strong in Nashville for more than 200 years. It was in 1801 that farmers first brought their goods to the bustling and dusty city center. Today’s downtown market is a direct descendant of that enterprise.
Markets operate in virtually every sector of the city, including Bellevue’s Red Caboose Park. That’s where The Bellevue Farmers Market takes place every Thursday, May through October, from 4 to 7 p.m.
The popularity of the market soars during the final month of the season as it’s the time of year when milder days and bountiful harvests intersect.
“I think the popularity of farmers markets in general is due to people trying to buy local and eat healthier,” says Jeremy Blount, who has been operating The Bellevue Farmers Market for 10 years. “Vendors tell me they love this market because everyone seems to enjoy being with each other.”
To be sure, there are larger farmers markets in the area, including some that operate all year long. But if you’re a farmers market rookie, the Bellevue market is a great place to begin your journey. A “starter's market,” if you will.
It boasts the same caliber of goods as larger markets but with the smaller scale, it’s easier to navigate. And, with the adjacent, recently renovated playground, the Bellevue market is perhaps the best option in town for families with young children. Special promotions are planned throughout October as well.
“That’s been my goal with this market,” says Blount. “It’s about more than just buying produce; I wanted to create something where people could come and hangout for 45 minutes or an hour and just enjoy their time here. And the more people that support this in Bellevue, the more we can do.”

Apples are the trademark fruit of fall, and with the many varieties to choose from, there is an apple that is sure to please any palate. They can be included in both sweet and savory dishes and are delicious and incredibly healthful. We all have heard the saying, “An apple a day keeps the doctor away.” While they aren’t a cureall, apples are packed full of polyphenols, antioxidants, vitamin C, B vitamins and fiber. Make the most of autumn’s best produce and the flavors of fall with these simple recipes.
CULINARY CREATIONS | FOOD + BEVERAGE 40
APPLE GALETTE WITH CARAMEL DRIZZLE
Easier than pie but with all the same textures, this gooey warm dessert is sure to please. For simplicity, this can be made with a premade crust.
INGREDIENTS: INSTRUCTIONS:
Crust:
• 1 1/2 cups flour
• 1/4 cup sugar
• 1/4 teaspoon salt
• 1 stick cold unsalted butter, cubed
• 1/4 cup iced cold water
Filling:
• 2 apples, peeled and sliced into thin slices
• 1/4 cup packed dark brown sugar
• 1 1/2 tablespoons flour
• 1 1/2 teaspoons lemon juice
• 1 teaspoon cinnamon
• 1/4 teaspoon ground nutmeg
• Caramel sauce
• Optional: 1/4 chopped walnuts or pecans
Crust:
(Note: If running short on time, store bought crust works great, too.)
Mix flour, salt and sugar together in a bowl. Cut in the butter. Add water and mix until moistened. Lightly knead the dough and then form into a ball. Next, flatten dough into a thick circular form and refrigerate for one hour.
Filling:
Mix the apples, flour, lemon juice, cinnamon, nutmeg and brown sugar together in a bowl.
Assemble and Bake:
Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Roll the dough into a circle and set on parchment paper. Arrange apples in center of dough, leaving about one inch of space for the edges. Fold crust over the apples and press to seal edges. Drizzle with caramel sauce and sprinkle with pecans or walnuts. Bake for 35 minutes. Serve with caramel sauce and ice-cream.

ELEVATED GRILLED CHEESE
This take on the classic grilled cheese is sure to satisfy your fall cravings. With the combined flavors of savory and sweet, it packs a punch for your taste buds.
INGREDIENTS: INSTRUCTIONS:
• 1/4 red onion, sliced
• 2 tablespoons brown sugar
• 1 tablespoon olive oil
• Sliced sourdough bread
• 1-2 tablespoons butter
• 4 ounces Brie, sliced
• Fig jam, or preferred choice of jam
• 1 Granny smith apple, sliced
• Arugula
• Thinly sliced ham, optional
Heat olive oil in the skillet and add sliced onions. Cook for a few minutes and then add brown sugar. Sauté until soft. Set aside. Butter the outside of the sourdough bread. Next, spread jam on the inside of both slices. Add cheese, apples, onions and arugula. If using meat, add as well. Top with slice of bread and grill on skillet until both sides are toasted and cheese is melted. Serve and enjoy!
APPLE CHUTNEY
This Indian-inspired dish is the perfect fall topping for pork chops and also pairs nicely with ham. This is so easy to make and will fill your kitchen with the aroma of fall.
INGREDIENTS:
• 4 tablespoons butter
• 2 cups Granny Smith apple, chopped
• ¼ cup pecans or walnuts
• 1/3 cup apple juice
• 3 tablespoons brown sugar
• 3 tablespoons dried cranberries
• 1 teaspoon lemon juice
• ¾ teaspoon cinnamon
• ½ teaspoon nutmeg
INSTRUCTIONS:
Heat butter in saucepan, then add remaining ingredients. Cook over medium heat until the sauce has cooked down and the apples are tender. Serve over pork chops. Enjoy!

When it comes to retirement, most people view it as a time to relax and spend their newfound free time pursuing their hobbies. For Keith Simpkins, he chose to take a different approach to his golden years and dove headfirst into launching a brand-new career by opening Café 100 in Bellevue.
“I was inspired to open Café 100 because I had a passion for cooking and I also wanted a place nearby where people can hang out, have a nice drink, and a great meal,” says Simpkins.
After Simpkins retired from his career in medical sales, he found himself reveling in having the extra time to be a restaurant patron and the community that he found with it— so much so that he eventually decided to open his own restaurant.
“Before I got into this business, I sold medical equipment and was in the business for a long time,” he explains. “Then I retired and went to a local place a few times and met a few people and started to really enjoy going to a neighborhood spot … I chose this place because I used to be a patron of the restaurant (Bria Bistro) that was here before I opened (Café 100) and just enjoyed coming and meeting new people and enjoying good food.”
His wife, Amy Marsalis, former WTVF Channel 5 news anchor, is supportive of her husband’s new path in life and even helps with the restaurant’s social media accounts.
Café 100 features a seasonally changing menu, along with occasional specials. No matter the season, Simpkins describes his rather upscale menu as “a nice variety of dishes made with lots of extra love and care.” Of these dishes, some of his personal favorites of the restaurant’s offerings include their fine cuts of meat and delectable sides.
“My favorite items are the filet with those amazing, smashed potatoes and the tomahawk pork chop,” he shares. “That is absolutely perfect. It comes with mac and cheese that has this little kick. Amazing!”
The restaurant’s head chef Steven De Vellis is the master behind bringing these dishes to life. “Chef De Vellis came to Nashville a few years ago as the executive chef of Deacon’s New South and then was also the executive chef of E3 Chophouse,” explains Simpkins. “He has fallen in love with Nashville.”

There's also a new weekend brunch menu with egg white omelets and monkey bread, made with the chef's homemade biscuits and cinnamon glaze. All bakery items, including cakes and cookies, are made in-house daily.
Café 100’s décor is rooted in American heritage as well as history that is personal to Simpkins. “The vibe and feel is an American industrial feel,” he shares. “Our giant American flag draped my grandfather’s casket and as a veteran myself, I wanted to honor him. I have an incredible friend who is a big supporter who donated the other flags to go with our theme.”
At the end of the day, Simpkins hopes to create a spot in Bellevue where people can foster connection and community all while enjoying delicious food and drinks.
“I wanted to bring a new place to Bellevue that was a little upscale, with good food, cold drinks, and lots of laughs and good times,” says Simpkins. “Our general manager, Margaret Torres, and Chef Steven have made this a dream-come-true and a reality. The best part has been the incredible community, the amazing support and all the love that we have received has just blown me away."
