TRAVELER MEGAN STEINER TAKES ON AFRICA

FROM SOUTH AFRICA TO JORDAN, IT WAS A YEAR LIKE NO OTHER
When Megan Steiner embarked on her year of solo travel in Africa, she was excited but nervous. Although she had taken two solo trips before, in Western Europe and South America, Africa definitely took her out of her comfort zone.
However, she made the most of it, even during the pandemic. From cage diving with great white sharks in South Africa to feeding wild hyenas in Ethiopia to climbing Mount Kilimanjaro in Tanzania, Megan came back truly empowered.
“GO FOR IT. There’s never a right time. If the seed has been planted within you, start the process. Life is the best teacher.”
Since she was 10 years old, Megan had been fascinated with animals, safaris, and diverse cultures.
Overland backpacking through Africa was always a dream. While researching her potential trip, she found a young female traveler who had backpacked from Cape Town to Cairo over the course of 7-8 months. Her story planted a seed in Megan’s mind.
At the age of 24, in August 2021, Megan took a bold step forward.
The trip began in South Africa, from where Megan took a combination of buses, tuk-tuks, and trains through Mozambique, Malawi, Zambia, Tanzania, Rwanda, Uganda, Kenya, Ethiopia, Sudan, Egypt, Israel/Palestine, and Jordan (from where she flew back to the U.S.). The only time Megan was forced to fly was at the Ethiopian-Sudanese border, which was closed due to unexpected civil conflict.



While traveling solo as a woman in Africa, Megan shattered many perceptions. First, the widely held misperception that Africa is a dangerously barbaric place. “What I thought I’d be afraid of was ongoing wars and conflicts, crime and disease,” she reflects. “But life is a series of calculated risks. I realized that with the proper precautions, I felt super safe. Tribal conflicts were limited to areas which I avoided when I could, and most people were extremely friendly, welcoming, and kind.”
The other kind of perceptions Megan overcame were the ones she had about herself. “Solo travel took me out of my comfort zone. I am an introvert. If I had never pushed myself, I would always live my life in my room because when I get scared, I tend to isolate,” she admits. “Now, I know how to handle different situations and find solutions that I may not have thought of earlier.”
Upon her return, reintegration still took some time. “Africa is vibrant, and most people there live in the moment,” she describes. “The next moment is about survival, not what I can do 10 years from now. The concepts of life and death are taken in stride. Yes, war and poverty are a very real part of life. However, in the evening, I watched villagers come together, singing, dancing, and spending time with family. Everyone looks after each other. Here, there’s an emphasis on structure, deadlines, and pressure all around. Now, being back, it’s hard to care about frivolous things like being late to a meeting. This is not the core of our humanity, and the privilege of being alive came into deep focus for me.”
Megan misses the deep orange sunsets, the bellowing sounds of drums beating in the background, sharing hot tea with friendly families and tribes, and all the raw, vibrant colors of the landscape. Her advice to other fellow travelers considering solo travel is simple: go for it. “There’s never a right time. If the seed has been planted within you, start the process. Life is the best teacher. Throw yourself into it, and you’ll figure your way through as you go.”

CL: WHEN PACKING FOR TRIPS, WHAT DO YOU RECOMMEND CLIENTS PRIORITIZE TO ENSURE SMOOTH TRAVEL FROM START TO FINISH?
Kendra: First of all, you should always plan your outfits ahead of time and align everything with the weather you will encounter. If you are going somewhere with a rainy season, bring a raincoat.
By planning your outfits, you can determine what you can mix and match in your suitcase, which reserves room for extra shopping. Packing cubes are great for organizing a single outfit and its accessories.
Put heavy items in the bottom of your suitcase. I always recommend hard-shell roller bags because soft cases, though great for expansion, are not ideal for weathering and damage protection.
When you go international, always research and bring your international chargers. Make sure you have all your documentation in one place that is easy to reach. Be sure to take photos of all documentation in case you lose it.
Lastly, always research the embassy of your destination and add its contact information to your phone.



CL: WHAT EXPERT TIPS CAN YOU SHARE
WITH OUR READERS?
Kendra: I always tell clients to understand what they consider luxury or relaxation. Whether you crave the serenity of secluded beaches or the thrill of bustling city streets, this information can help you pinpoint your travel must-haves.
If you want to be cost-effective, have your agent look at off-season versus high-season trips.
Let your travel agent book your airlines, rental cars, and hotels directly for you versus going on a secondary site to book.
The reason is that if something happens, you have to go through the secondary vendor to resolve issues. They may have fine print that could incur additional fees for rescheduling or rebooking canceled flights.
Booking packages could be costeffective, but you also face the risk of unforeseen circumstances.
**ALWAYS BOOK TRAVEL INSURANCE**. Life happens—you never know what can happen tomorrow.
Travel agents can help you find the best price while helping you understand each risk.
Another tip: contact the credit card companies you will be traveling with so you won't get stuck unable to use them if they put a security block on them.
If traveling internationally, make sure your cell provider offers the best international rates.

Breathe in the fresh air when visiting Dayspring Nature Preserve. Gravel and paved trails weave through the tranquil area leading visitors to pavilions, picnic tables, open spaces and a playground in the heart of the preserve. Shade structures and tall trees provide a cool environment for the playground area featuring a tunnel, swings, climbing features and slides. With Watters Trail nearby, exploration is ideal both on and off the playground. 01
COUNTRY MEADOWS PARK
Prepare to take flight at the newest park playground in Allen. This hot-air balloon themed playground debuted at Country Meadows Park in early 2024. The play zone includes a shade structure, swings, slides and plenty of climbing features for all ages. Located in northeast Allen, Country Meadows Park features a hike and bike loop trail, pavilion, picnic tables and plenty of open space for frisbees and flying kites.
A trip to Spirit Park is always a home run! This large park spans over 70 acres and includes softball fields, a cricket field, fitness stations, restrooms, picnic tables, tons of open space and easy access to trails nearby. An expansive hideout-themed playground welcomes kids of all ages and includes playful features on which to slide, spin and swing.

Travel along the Cottonwood Trail and you’ll come across Heritage Park. Nestled between a neighborhood and nearby nature, the playground is a real crowd-pleaser. With its pavilion, drinking fountain and benches, this park is the perfect place to stop along the trail for rest or play.

Remember the time when your family went to Hawaii for a reunion, and grandma did the hula dance? Or when your son graduated? Or the 10th Disney trip you made that you were still excited about? Capturing memories is an art. In today’s digital world, most of us rely on our phones to snap hundreds of pictures in a matter of minutes. But then what happens? You’re back at home, and you think of that one special moment, but now can’t find it without scrolling through a zillion other photos.
Fortunately, there are non-traditional ways to both preserve memories and show them off. They can be weaved into a blanket or quilt, a wall poster or memory box; a cup or hardcover book or even a puzzle with photos from your favorite trip, interspersed with meaningful quotes. When we display our memories in a way where we can touch and see them, it brings joy and can spark meaningful conversations with family and friends.
According to Carey Lynn Zarate, owner of Artistic Endeavors, there’s no limit on how to showcase your memories in a way that’s special; memories that “come to life” and are appreciated and discussed for generations to come. However, for many, creating a personal memoir is overwhelming. “The task becomes easier if you break it into chunks,” advises Carey. “Start with folders that help you separate different adventures. Go through those and mark the ones that bring a smile to your face when you look at them.” “In the notes for the image, write what you were thinking of. Use tags and color codes to help you easily find these images later. And always, back up, back up, back up! Not only to the cloud but also to external storage devices. Use full resolution for your original, especially if you want to print something from it.”

Officer Graves - a Very Special First Responder
He’s Dedicated His Career to Serving Those Who Are Overlooked
When you see a police officer, you envision strength and poise, maybe even a little fear if they’re in your rearview mirror accompanied by flashing lights. When you see Officer Graves, though, you can’t help but notice that he’s extraordinary. “The moment I decided to become a policeman was when one came to my mom’s hair salon. He talked to me like I was his equal. I knew that I wanted to make other people feel like that one day. Like they’re seen and protected, no matter their skin color or their physical limitations.”


That’s exactly what Officer Graves has been able to do during his 18-year stint in the Allen Police Department. “I remember growing up in Blue Ridge there was a classmate of mine who was wheelchair-bound. I remember how hard his mom worked to take care of him and give him a normal life. I thought people like BJ and his mom needed to be celebrated.”
So, in his line of work, he makes sure that his department gives back by participating in Special Olympics events like the Law Enforcement Torch Run, Tip-a-Cop, and Gold Cornhole Tournament. All proceeds go to supporting the athletes and their families through the Special Olympics. “I do this work every day because it’s important for me to give back to my community. My wife, Sara, takes care of our two boys while I’m away working 10-plus hour shifts. Without her, none of the work I do would be possible.”

English Rhubarb Crumble

Take Your Tastebuds Across the Pond
Ingredients:
• 8 cups chopped fresh or frozen rhubarb
• 1-1/4 cups sugar, divided
• 2-1/2 cups all-purpose flour
• 1/4 cup packed brown sugar
• 1/4 cup quick-cooking oats
• 1 cup cold butter
Custard Sauce:
• 6 large egg yolks
• 1/2 cup sugar
• 2 cups heavy whipping cream
• 1-1/4 teaspoons vanilla extract
Directions:
Step 1. In a saucepan, combine rhubarb and 3/4 cup sugar. Cover and cook over medium heat, stirring occasionally, until the rhubarb is tender, about 10 minutes. Pour into a greased 13x9-in. baking dish.
Step 2. In a bowl, combine flour, brown sugar, oats and remaining sugar. Cut in butter until crumbly; sprinkle over rhubarb. Bake at 400° for 30 minutes.
Step 3. Meanwhile, in a saucepan, whisk the egg yolks and sugar; stir in cream. Cook and stir over low heat until a thermometer reads 160° and mixture thickens, 15-20 minutes. Remove from the heat; stir in vanilla. Serve warm over rhubarb crumble.

Being selected as the Student of the Month is always a momentous occasion. This month, the honor goes to an exceptional student at Allen High School, whose journey is as inspiring as it is unique. Anthony Barajas, a talented and determined individual who has Autism Spectrum Disorder (ASD), has risen above challenges and misconceptions to earn this prestigious recognition. This fall, he will embark on a new chapter at Texas Wesleyan University, where he will live on campus and try out for the e-sports team—a pursuit that aligns with his passion for gaming. Success in this audition could secure him a scholarship, further supporting his educational journey. But Anthony's talents are not confined to the digital world. He has a profound love for the fine arts, particularly acting and music. His dedication to these fields culminated in winning Sweepstakes for his choir during his senior year, and he plans to audition for Texas Wesleyan’s choir team. Anthony's involvement at Allen Senior High has been extensive. He has been a key member of the choir, robotics, and AV production teams, even lettering in choir for his contributions. His baritone voice has been a

cornerstone of the choir's success, and his passion for music and acting is evident in everything he does. As Anthony prepares for his next steps, his story serves as an inspiration to his peers and the broader community. His achievements remind us that, even with the challenges of a student with ASD, anything is possible. We celebrate Anthony not just for being Student of the Month, but for being a remarkable individual who embodies the spirit of perseverance and excellence.
















NEED A BREAK FROM THE BACKYARD BLUES?

A Little Creative Landscaping, Lighting May Put Your Wanderlust to Bed Once and for All

The pandemic left people no choice but to make do with a staycation, but now that the friendly skies once again beckon, many folks are still staying put.
In turn, this trend has fueled the latest craze in backyard makeovers. After all, why not take the $6,000 Americans typically shell out for a vacation and instead invest it in turning your backyard into its own exotic destination replete with amenities you cannot otherwise afford?
Once you factor in convenience and the dollars you save long term, making your backyard staycation-worthy makes good sense.
Joshua Koehn, Owner of Pristine Landscape and Lighting, says his crews have never been busier.
According to Koehn, the most popular upgrades today involve AstroTurf.
“There’s no maintenance with AstroTurf,” Koehn says. “And it always provides a nice, clean, perfect look.”
Koehn says outdoor kitchens, pergolas, and privacy walls are also in high demand. But back to AstroTurf. In keeping with the current allure of staycations, Koehn says there has been a dramatic uptick in putting-green installations.
“One of the coolest things I've seen is several neighbors getting together to create a high-end miniature golf course. On the weekends, they go backyard to backyard playing 18 holes.”
The most elaborate backyard makeover Koehn has ever seen transformed a couple of acres into a sports complex with a swimming pool, putting green, batting cages, jogging trails, and tennis and basketball courts.
And one of Koehn’s current projects involves the installation of a rather posh pavilion that will double as a music venue.
“It’s not all about staycations,” Koehn says. “A lot of our clients are wanting to create outdoor spaces that will give them an excuse to have friends over instead of meeting up at a restaurant.”
Whatever course you take, it is important to know the dos and don’ts of contracting backyard makeovers.
Several red flags signal trouble, Koehn says.
“For starters, you want someone who shows up on time and communicates well. If they’re late in meeting you to give a quote, then there’s a good chance they’re probably not going to do much better when money’s involved.”
Secondly, you should always ask contractors to provide photos of previous projects.
“If they don’t have photos, they likely have no experience,” Koehn adds. “Either that, or they’ve not done anything they’re proud of.”
Thirdly, you should always expect to receive a quote on the spot even if it’s a pricey project.
“Again, this tips you off as to whether you’re dealing with someone who has experience,” Koehn says.

In lieu of CAD, Koehn says he can take pictures of the property and use overlays to give the customer a rough idea of what to expect.

MATERIALS:
• 10 drops lemon essential oil
• 10 drops lemongrass essential oil
• 8 drops lavender essential oil
• 8 drops eucalyptus essential oil
• 1.5 ounces distilled water (minus 1 teaspoon to make room for the essential oils in the bottle)
• .5 ounce 95% proof grain alcohol*
INSTRUCTIONS:
In a 2-ounce spray bottle, add the grain alcohol (or Solubol) and drop in essential oils. Swirl to combine. Place the cap back on the bottle. Allow the oils to disperse in the alcohol for about 1 hour, then add distilled water, swirling again to combine.

While there can be concern about citrus oils on the skin when exposed to sunlight, lemongrass isn’t a photosensitive oil, and if lemon essential oil is steam-distilled rather than cold-pressed (Oui Fresh essential oils are cold-pressed) it can be used on the skin. So just make sure to note which one your lemon oil is and only spray on clothes if you don’t have a skin-safe lemon oil (which is an application method a lot of people prefer anyway if they are more sensitive to oils).
