Perfect Potato Salad
5 lb. russet potatoes (about 8 medium potatoes) 1/2 tsp. black pepper
1 1/2 cups mayonnaise, plus more as needed 1/2 tsp. paprika (optional)
4 Tbsp. mustard (yellow, dijon, or a mixture of both), plus more as needed
5 green onions, sliced 4 slices bacon, fried and crumbled
1 tsp. kosher salt, plus more to taste 4 hard-boiled eggs, roughly chopped
8 small sweet pickles, chopped (may use dill if that's more up your alley)
Gather all ingredients. Preheat the oven to 350 degrees F. Grease a 12-cup muffin tin with cooking spray. Place bell peppers and green onions into a large bowl. Add eggs, bacon, milk, garlic powder, onion powder, salt, and pepper. Sprinkle Cheddar cheese into the bowl and whisk until incorporated. Pour mixture equally into the prepared muffin cups. Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, about 30 minutes. Let cool slightly before serving.

More calls are made on Mother's Day than any other day of the year.
Reportedly there are approximately 122 million calls made on the second Sunday of May every year.
Normally, Mother's Day is the busiest day of the year for restaurants.
According to a survey by the National Restaurant Association, last year 48% of people made plans to go to a restaurant for Mother's Day.
The moniker “Mom” comes from babies.

The very first thing most babies can vocalize is the 'ma' sound, which is why in almost every language the word for mother begins with the letter 'M' or some variation of the 'ma' sound.

After Anna Jarvis created the Mother's Day International Association in 1868, in order to streamline the intimate day of observance to the second Sunday in May, Woodrow Wilson legitimized the celebration as a nationwide holiday. The first official Mother’s Day was celebrated in 1908.
